Abstract
Selenium is an essential trace mineral for dairy cattle and can be provided in the diet in various forms that may differ in bioavailability. The objective of this study was to determine how source of Se affects animal performance, Se status, retention, and apparent and true absorption. Multiparous Holstein cows (n = 24; 597 ± 49 kg of BW) were blocked by DIM (161 ± 18) and randomly assigned to receive 0.3 mg Se/kg of DM (100% of National Academies of Sciences, Engineering, and Medicine requirements) of either organic Se (ORG; selenized yeast) or inorganic Se (INO; sodium selenite). The Se premix was top dressed on a common TMR fed daily and mixed into the top 15 cm directly before feeding. Following an 11-wk adaptation period, cows received simultaneous infusions of an intraruminal isotope dose of 77Se in the same chemical form as the premix, and an intravenous dose of 82Se in an inorganic form. Infusions were followed by a 4-d period of blood and rumen fluid sampling, and total collection of feces, urine, and milk. Daily DMI (23 ± 0.6 kg), milk yield (35 ± 1.2 kg), and serum Se (0.11 ± 0.003 µg/g) were not different between treatments during the adaptation period, but milk Se concentrations were greater for ORG compared with INO. Serum 77Se maximum concentration and area under the curve (AUC) were not different between treatments for 72 h following infusion, but rumen fluid 77Se AUC was higher for ORG than INO. Apparent absorption (64% ± 1.4%), and retention (44% ± 1.5%) of the 77Se dose did not differ between treatments. True absorption was calculated using 82Se enrichment in serum and feces and was determined to be 69% ± 1.3% and did not differ between treatments. Fecal excretion of the 77Se dose was not different between treatments (36% ± 1.4%), but ORG had lower urinary excretion and higher milk excretion compared with INO. These results indicate that organic Se resulted in greater Se concentration of milk and lower urinary Se excretion into the environment, but absorption, Se status, and performance of the cow were not affected by Se source at this supplementation level.

Abstract
Selenium (Se) is an essential nutrient with multiple health benefits to humans and animals. Cattle generally require dietary Se supplementation to meet their daily requirements. The two main forms of dietary Se in cattle are organic Se and inorganic Se. Data comparing the health and productivity effects of organic Se and inorganic Se on cattle are still insufficient, and it is necessary to conduct more research to evaluate the bioavailability, nutritional value, deposition, and body functions of Se sources in different breeds and physiological stages of cattle raised in areas with different Se levels. The objectives of this study were to determine the effects of organic and inorganic sources of Se on plasma biochemical indices, Se bioavailability, deposition in body tissues and organs, growth performance, antioxidant capacity and meat quality of beef cattle raised in Se-deficient areas. Fifteen Chinese Xiangzhong Black beef cattle with an average weight of 254.5 ± 8.85 kg were assigned to three dietary groups. The three groups were fed the same basal ration and supplemented with either an inorganic [sodium selenite (SS)] or organic [selenomethionine (SM) or Se-enriched yeast (SY)] source of Se (0.1 mg/kg dry matter) for 60 days. At the end of the experiment, three cattle from each group were randomly selected and slaughtered, and samples were collected from tissues and organs for analysis. The results revealed that growth performance, slaughter performance, Se content of tissues and organs, meat quality characteristics including chemical composition, pH45min, pH24h, drip loss, and cooking losses did not differ (p > 0.05) due to supplementation of the different organic and inorganic sources of Se. SM and SY were more effective in increasing (p < 0.05) immunoglobulin M (IgM) concentrations in the blood and reducing (p < 0.05) malondialdehyde (MDA) content in the longissimus dorsi than SS. In conclusion, organic Se is more effective than inorganic Se in improving the immune and antioxidant capacity of Chinese Xiangzhong Black beef cattle.

Abstract
The experiments were to study the effects of Se-yeast on immune and antioxidant in Selenium(Se)-deprived Pishan red sheep in Southern Xinjiang, China. The samples of soil, forage, and animal tissues were collected, and used for measuring mineral content, physiological parameter, and biochemical values. These findings showed that the Se contents in affected soil and forage were markedly lower than those from unaffected soil and forage (P < 0.01). Se in affected blood and wool were also extremely lower than those from healthy Pishan red sheep (P < 0.01). The hemoglobin, packed cell volume, platelet count, Glutathione peroxidase, and total antioxidant capacity in the affected Pishan red sheep were markedly lower than those from healthy ones too (P < 0.01). The levels of malondialdehyde, total nitric oxide synthase, and lipid peroxide in Pishan red sheep from affected pastures were extremely higher than those from healthy ones (P < 0.01). The levels of interleukin (IL)-1β, Interleukin-2, tumor necrosis factor-α and interleukin-6 from serum were markedly decreased in affected Pishan red sheep(P < 0.01). The Pishan red sheep in Se-deprived pasture were treated by orally with Se-yeast, the amount of Se in the blood markedly increased in treated animals. Meanwhile, the immune and antioxidant indicator was returned to the healthy values. Consequently, our findings were indicated that Se-deprived forage caused oxidative damage, and a serious threat to the immune function in animals. The Se-yeast is more effective in the Se-deficient Pishan red sheep including blood Se content, immune function and the antioxidant capacity.

Abstract
The objective of this study was to observe the effects of selenium-yeast (SY) on growth performance, muscle antioxidant activity, meat quality, fatty acid and amino acid profiles in growing goats. A total of 18 Qianbei-pockmarked goats were assigned to three groups (six duplicates per group) by body weight (25.75 ± 1.75 kg; mean ± standard deviation) according to a completely randomized design: (1) basal diet (CON); (2) CON with 2.4 mg/kg SY (LS); and (3) CON with 4.8 mg/kg SY (HS). The results indicated that goats receiving SY did not show any differences (P > 0.05) in terms of dry matter intake, growth performance, or muscle chemical composition. In addition, dietary treatment did not affect (P > 0.05) the pH values (pH45min and pH24h), percentage of water loss, drip loss, or cooking loss. The HS group showed a significant increase (P < 0.05) in the dressing percentage, eye muscle area and meat color, as well as muscle total antioxidant capacity, glutathione peroxidase and 2,2-diphenyl-1-picrylhydrazyl scavenging activity levels, whereas it showed a significant drop (P < 0.05) in shear force and muscle malondialdehyde levels relative to the control. Feeding 4.8 mg/kg SY led to a significant (P < 0.05) decrease in the levels of C8:0, C14:0, C15:0, C16:0, C17:0, C18:0, C20:0 and total saturated fatty acids, whereas it led to a significant (P < 0.05) increase in C15:1 in comparison with that of the control group. Goats receiving 2.4 mg/kg SY had significantly (P < 0.05) increased C16:1, C17:1, C18:1n7, C18:2n6, C18:3n3, C20:4n6, C22:1n9, and PUFA relative to the control group. Compared with the control group, the treatment groups had higher (P < 0.05) levels of C18:1n9, C22:4, and monounsaturated fatty acids. The inclusion of 2.4 mg/kg SY induced significant (P < 0.05) increases in 4-aminobutyric acid, glutamic acid and umami amino acid concentrations compared to the control. In addition, the feeding of 4.8 mg/kg SY had significantly higher (P < 0.05) muscle serine, valine, isoleucine, leucine, ornithine hydrochloride, methionine, and tyrosine levels than the control group. Collectively, Se supplementation in the diet did not affect growth performance, muscle chemical composition, whereas it could improve meat quality, muscle antioxidant activity, fatty acid and amino acid profiles in Qianbei-pockmarked goats. This showed that the optimal accession SY level was 4.8 mg/kg under the experimental conditions of this study.

Abstract
Simple Summary Maintaining high productivity in small ruminants is hindered by infection with the parasitic gastrointestinal nematode (GIN) Haemonchus contortus. There is an increasing interest to find alternative treatments for controlling GINs due to the rapid development of resistance to synthetic anthelmintics. Supplementary feeding of plant nutraceuticals or mineral supplements may contribute to improving the resilience of lambs. The trace element selenium and vitamin E act synergistically as antioxidants in circulation, but the natural occurrence of selenium is very low in the soil, grain, and roughage. The aim of this study was therefore to determine the long-term effects of medicinal plants and organic selenium in lambs experimentally infected with H. contortus. The results indicated that both supplements favorably affected the infected lambs and may provide a new approach to controlling haemonchosis in small ruminants. Abstract The objective of this study was to determine the effect of traditional medicinal plants typical to Central Europe as well as organic selenium on increasing the resistance of lambs to gastrointestinal nematode (GIN) infection with Haemonchus contortus. 21 female lambs were infected with third-stage larvae of H. contortus on the day (D) 0 and re-infected on D49 and D77. The animals were divided into three groups based on a treatment diet: a basal diet (control), a diet enriched with dry plants (Herbmix), and a diet enriched with selenized yeast (Selplex). The number of eggs per gram (EPG) of feces was quantified on D21, D28, D35, D42, D49, D56, D63, D70, D77, D84, D91, D98, D105, D112, and D119. The mean reductions in EPG on D28 were 43.4 and 28.6% for Selplex and Herbmix, respectively. The reduction in egg output was nearly uniform throughout the experiment for Selplex. However, for Herbmix the mean reduction was only 19.8% up to D91 and 46.1% after D91. Glutathione peroxidase activity in the blood from D35 to D98 was two to three-fold higher for Selplex than the other groups. Both supplements slowed the dynamics of GIN infection and gradually increased the resistance of lambs against ovine haemonchosis.

Abstract
This study aimed to investigate the effect of dietary selenium supplementation of Friesian cows on chemical-nutritional and volatile fraction of caciocavallo cheese. A sample of 32 Friesian cows, balanced for parity, milk production, and days in milk, were randomly assigned to 2 groups. The control group (CG) was fed with a conventional feeding strategy, while the experimental group (SeG) received a daily selenomethionine supplementation of 0.45 mg/kg in total mixed ration. During the experimental period, milk yield was monitored, and samples of milk and caciocavallo cheese were collected and analyzed to obtain information on chemical-nutritional composition and volatile compounds profile. Dietary Se integration did not induce variations on milk yield or composition but significantly lowered the somatic cell count (SCC). In both milk and cheese, samples from SeG were characterized by a lower concentration of saturated fatty acids (SFA) and increases in linoleic and rumenic acids. The volatile compounds profile of dairy products was also positively affected by dietary Se intake, with an increase in concentration of free fatty acids, esters, and aldehydes. These results suggest that Se plays a positive role in improving bovine mammary gland functionality and the nutraceutical properties of milk and caciocavallo cheese made therefrom. Such findings could contribute to the production of cheeses with interesting organoleptic properties, although further sensorial evaluations should be performed to deeply investigate these changes and confirm consumer acceptability.

Abstract
The objective of this experiment was to investigate the effects of feed supplementation with equivalent doses of selenium from sodium selenite (SS) or selenized yeast (SY) on Se deposition, selenoenzyme activity and lipid peroxidation in tissues as well as in bacterial and protozoal fractions of rumen contents in sheep. The phagocytic activity of monocytes and neutrophils in whole blood was also assessed after 3 months of dietary treatment. While animals in the control group were fed with unsupplemented basal diet (BD) containing only background Se (0.16 mg/kg DM), the diet of the other two groups (n = 6) consisted of identical BD enriched with 0.4 mg Se/kg DM either from SS or SY. Concentrations of Se in blood and tissues were found to be significantly increased in both supplemented groups. No response in Se deposition was recorded in the musculus longissimus dorsi of sheep given dietary SS. The intake of SY resulted in a significantly higher Se level in the blood, kidney medulla, skeletal muscles, heart, intestinal and ruminal mucosa than in the case of SS supplementation. No differences appeared between tissue Se contents in the liver and kidney cortex due to the source of added Se. Regardless of source, Se supplementation to feeds significantly increased the glutathione peroxidase (GPx) activity in blood and tissues except the kidney medulla and jejunal mucosa. Supplementation with SY resulted in significantly higher activity of thioredoxin reductase in the liver and ileal mucosa, and also reduced malondialdehyde content in the liver and duodenal mucosa. Dietary Se intake increased Se concentrations in the total rumen contents and bacterial and protozoal fractions. The accumulation of Se in rumen microbiota was associated with increased GPx activity. Phagocytic cell activity was enhanced by Se supplementation. Our results indicate that Se from both sources has beneficial effects on antioxidant status in sheep and can be utilized by rumen microflora.

Abstract
This study focuses on the effect of parenteral administration of Selenium (Se) and vitamin E on concentration of Se in plasma and the activity of glutathione peroxidase (GPx) in the blood of dairy cows during peripartal period and their effect on the reduction of clinical mastitis. From a 220 individuals Holstein herd in a two-four lactation-gestation cycle the control group (C), 1st (D1) and 2nd (D2) experimental group were selected. Every group consisted of 15 cows in the last phase of the pregnancy. All cows were fed with the diet containing 0.1 mg of Se per kg/DM. The blood samples from vena jugularis were collected approximately 21 days before calving (control sampling), 3 days, 12 days and 21 days after calving. On the day of control sampling and 12 days before calving in D1 group, cows were injected subcutaneously in the sprescapular region with preparation Selevit inj. a.u.v. at the doses of 48.4 mg/head of Se, and 550 IU/head of alpha-Tocoferol (alpha-Toc). In D2 group, cows were injected by the same preparation only on 21th day before calving with the same doses of Se and alpha-Toc. The increase in the concentration of Se in the plasma and activity GPx in blood in D1 group on the 3rd day and 12th day after calving were determined. Increase in plasmatic concentrations alpha-Toc on 3rd day after calving and reduction of occurrence of clinical mastitis (13.3%) as compared with control group were found.
