Abstract
Circular feeds, such as grain dry distillers, citrus pulp, cane molasses, and potatoes peels, are co-products of biomass processes. They are currently proposed in animal nutrition to improve the environmental and economic sustainability of the food production chain. In this paper, we report a case study involving fipronil, a pesticide currently not authorized for agriculture within the EU, but used in the Americas, Eastern Europe, and Asia. Fipronil was found at a mean level of 0.49 mg/kg, in a grain dry distiller batch administered to dairy cows. This finding, along with other evidence of potential fipronil presence in feed materials, prompted us to evaluate the risk to food safety and food security from 12 different conventional and sustainable feeding regimens. To this purpose, we considered a fipronil feed-to-milk carry-over rate of 0.52, the tolerance levels in fodders and food from The EU, Codex Alimentarius, and US-EPA, and the Acceptable Daily Intake (ADI) of 0.0002 mg/kg body weight for adverse effects on thyroid function in dairy cows. Under a conservative scenario, fipronil-contaminated potato peels and grain distillers in the feeding regimens may play a pivotal role in exceeding the EU Maximum Residue Level (MRL) in bovine milk and fat (0.005 and 0.030 mg/kg, respectively). Hay-based diets with soybean hulls and cane molasses show negligible risks (Hazard Index ∼ 1). In all cases, the ADI exceedance suggests the need to evaluate thyroid function in dairy cows exposed to fipronil as a food security factor.

Abstract
The chemical composition of Parmigiano Reggiano (PR) hard cheese can be significantly affected by different factors across the dairy supply chain, including ripening, altimetric zone, and rind inclusion levels in grated hard cheeses. The present study proposes an untargeted metabolomics approach combined with machine learning chemometrics to evaluate the combined effect of these three critical parameters. Specifically, ripening was found to exert a pivotal role in defining the signature of PR cheeses, with amino acids and lipid derivatives that exhibited their role as key discriminant compounds. In parallel, a random forest classifier was used to predict the rind inclusion levels (> 18%) in grated cheeses and to authenticate the specific effect of altimetry dairy production, achieving a high prediction ability in both model performances (i.e., ∼60% and > 90%, respectively). Overall, these results open a novel perspective to identifying quality and authenticity markers metabolites in cheese.

Abstract
Poland is one of the leading milk producers in the EU, being the fifth largest after countries such as Germany, France, Italy, and the Netherlands. From Poland's accession to the European Union in 2004 up to 2022, Polish milk production experienced dynamic development. In this, there occurred a strong decline in the number of dairy farms (by -78%) and the number of cows (by -21%), an increase in dairy herd size (3.5 times) and increase in milk production (+60%) and milk yield per cow (by +62%). These were among the highest growth dynamics among the analysed countries. As a result of this significant transformation, Poland maintained an important position in milk exports, with a 31% export share in production in 2022. The scale of milk production was the basic factor determining the efficiency and competitiveness of dairy farms in Poland. Milk yield, farmland productivity, labour productivity, milk price, and the Corrected Competitiveness Index (based on labour and land opportunity costs) all showed a positive relationship with cow herd size on the farm. Milk production is highly uncompetitive for smaller farms (<15 cows). Despite substantial public support, the smaller farms, where subsidies equal up to 47% of total production value, could not earn sufficient income to cover the cost of capital, risk, and management in 2008, and even more so in 2021. This is because the farm income is too small to cover the extremely high opportunity cost of labour. The larger farms (with 30 cows and more) are competitive and responsible for the majority (~60-70%) of milk produced and delivered to the market. The most challenging from the sectoral policy point of view are medium farms (10-29 cows), whose share in production and deliveries is still important. To survive as economically viable units, these farms have to increase in scale and improve productivity. Otherwise, they will be gradually supplanted by larger farms.

Abstract
In modern breeding systems, cows are subjected to many stress factors. Animals fed with a high-grain diet may have a decreased rumen pH, which would lead to subacute ruminal acidosis syndrome. The aim of this study was to investigate the evolution of microbial community composition in cows undergoing a dietary stress challenge. Twelve cows were subjected to a challenge period consisted in a rapid change of ration, from a normal (45.4:54.6 forage: concentrate) to a high-grain content diet (24.8:75.2 forage: concentrate) to induce sub-acute ruminal acidosis. Individual rumen fluid content samples were collected before (T0), and during the challenge (T3, T14, T28). DNA from rumen contents was extracted, purified, and sequenced to evaluate Bacterial populations and sequencing was performed on Illumina MiSeq. The effect of animal conditions on rumen microbial community was quantified through a linear mixed model. The acidogenic diet created 2 main clusters: ruminal hypomotility (RH) and milk fat depression (MFD). The microbial composition did not differ in T0 between the 2 groups, while during the challenge Ruminococcus spp., Treponema spp., Methanobrevibacter spp., and Methanosphaera spp. concentrations increased in RH cows; Succinivibrio spp. and Butyrivibrio spp. concentrations increased in MFD cows. Prevotella spp. and Ruminococcus spp., were negatively correlated, while Christenellaceae family were positively correlated with both Methanobrevibacter spp. and Methanosphaera spp. Moreover, the same diet affected differently cows' microbiota composition, underlying the impact of the host effect. Other studies are necessary to deepen the relationship between microbiota composition and host.

Abstract
Calculating the requirements and predicting the feed digestibility are essential to building robust dairy cattle rationing programmes. In the field, a huge number of in vivo observations are needed to develop accurate equations and reliable predictions. The aim of this study was to develop an equation to estimate total-tract potentially digestible NDF digestibility (TTpdNDFD) for lactating cows fed hay-based rations. Individual data from 11 studies, 69 cows, 35 different treatments, and 1 614 observations were included in this study. To develop the prediction equation, the following traits, descriptors of the total mixed ration, were used: ash, starch, CP, NDF, acid detergent fibre, acid detergent lignin, undegradable NDF and potential degradable NDF. Before building the equation with bidirectional stepwise selection in the JMP software, outliers were removed and multicollinearity was checked for all the predictors of fibre digestibility. The model was trained with 10-folds cross-validation. Results showed an R2 of 0.91 and 0.90, and a RMSE of 2.99 and 3.26 in the model for training and validation, respectively. The promising performance of the model suggested that, the fibre digestibility in lactating dairy cows fed dry-hay-based rations can be accurately predicted in advance just by using the diet characteristics. From the obtained equation, we predicted the weight and slope of the included covariates, and outcomes confirm that in general the TTpdNDFD is reduced as dietary starch and fast-fermentable fibre increase. This study found that the equation extracted from a neural network, when combined with precision farming techniques, can improve the management of lactating cows and optimise feed planning, monitoring, and cost. It can be used in areas where silages are not used in rations. This provides evidence that accurate equations can be developed from historical data for precision feeding implementation. Further research is needed to expand the dataset and develop equations that can be applied on a large scale. Improving accuracy would involve incorporating representative data from other areas with similar diets into the training set.

Abstract
The present study explored the influence of supplemental herbal mixtures on cow milk production, quality, and blood parameters in dairy cows under high ambient temperatures. Thirty Holstein cows were randomly assigned into three experimental groups of 10 each. The first control group was supplied with the commercial basal diet, whereas two treatment groups were provided with the commercial basal diet supplemented with 50 and 100 g/head/day of the herbal mixture, respectively. The results showed that the mixture of herbal supplementation did not influence weekly milk production. Milk total fat, triglyceride, and total protein values were not affected (p < 0.05) in cows fed on basal diets supplemented with herbal mixture; however, milk cholesterol was decreased significantly by 100 mg/head/day of the herbal mixture. On the other hand, lactose has increased significantly by adding 100 mg/head/day of herbal mixture. Furthermore, the total cholesterol level in serum was decreased by adding 100 mg/head/day of the herbal mixture, while plasma prolactin, cortisol, GOT, and GPT were unaffected. Regarding fatty acids (C18, C18:1 (c9), 18:1 (c11), 18:2 (c9, c12), 18:2 (t9, t12), and CLA (c9, t11)), there was no significant variation between the groups. Meanwhile, both C19:00 and 18:3 (c6, c9, and c12) were noticeably higher (p < 0.05) in the group that received 100gm, followed by 50 mg, compared to the control. In conclusion, the supplement with a herbal mixture positively affected milk quality by decreasing total cholesterol and increasing lactose, milk fatty acid profile by increasing unsaturated fatty acids content, and plasma cholesterol levels.

Abstract
This study aimed to compare the feed efficiency (FE) and physiological parameters of Holstein and crossbred Holstein × Simmental cows in a confinement system during winter and summer. The study was conducted in a dairy farm in southern Brazil by including a total of 48 multiparous cows. The cows were studied for 21 days in two periods, summer and winter, and their daily dry matter intake (DMI), milk yield (MY), rectal temperature (RT), respiratory rate (RR), body weight, and body condition score were recorded. An analysis of variance was conducted using the SAS statistical package. The results showed that crossbred Holstein × Simmental cows have a similar FE as Holstein cows in a high-production system (1.83 × 1.81 kg DMI/kg MY, respectively), and they can achieve the same production levels as purebred Holstein cows (43.8 vs. 44.5 milk/cow/day). Our findings indicated a difference for the period as both genetic groups achieved higher FE in winter than in summer (1.98 vs. 1.67 DMI/kg MY, respectively). In addition, we found evidence that crossbred cows are better at dissipating body heat during heat-stress situations, as they have higher RR in summer compared to purebred cows, while Holstein cows have higher RT in summer afternoons than crossbred cows. Therefore, using crossbred Holstein × Simmental cows is an alternative for high-production systems.

Abstract
Aflatoxins (AFs) represent one of the main mycotoxins produced by Aspergillus flavus and Aspergillus parasiticus, with the most prevalent and lethal subtypes being AFB1, AFB2, AFG1, and AFG2. AFs are responsible for causing significant public health issues and economic concerns that affect consumers and farmers globally. Chronic exposure to AFs has been linked to liver cancer, oxidative stress, and fetal growth abnormalities among other health-related risks. Although there are various technologies, such as physical, chemical, and biological controls that have been employed to alleviate the toxic effects of AF, there is still no clearly elucidated universal method available to reduce AF levels in food and feed; the only mitigation is early detection of the toxin in the management of AF contamination. Numerous detection methods, including cultures, molecular techniques, immunochemical, electrochemical immunosensor, chromatographic, and spectroscopic means, are used to determine AF contamination in agricultural products. Recent research has shown that incorporating crops with higher resistance, such as sorghum, into animal feed can reduce the risk of AF contamination in milk and cheese. This review provides a current overview of the health-related risks of chronic dietary AF exposure, recent detection techniques, and management strategies to guide future researchers in developing better detection and management strategies for this toxin.

Abstract
Introduction The aim of this study was the evaluation of nutrient excretion patterns in samples of feces collected every 2 h to define the best sampling protocol for estimation of apparent digestibility. Methods Four multiparous mid-lactation Holstein cows, housed in a tie stall barn and milked twice a day (0800; 1900 h), were enrolled. Dry total mixed ration (TMR) without silages was fed once (0800 h) per day. Feces were sampled every 2 h for 72 h. Each sample was divided in 3 portions: hourly sample sample (8, 10, 12, 14, 16, 18, 20, 22, 00, 2, 4, 6), 8-h composite sample (00-06, 08-14 and 16-22), and a 24-h composite sample. Complete chemical analyses were performed and total tract nutrient digestibility was calculated using undegraded neutral detergent fiber at 240 h of in vitro fermentation (uNDF240h) as a marker. Feeding and rumination patterns were also recorded during the trial. Results and discussion For some parameters, excretion was not constant throughout the day: neutral detergent fiber (aNDFom), undegraded neutral detergent fiber at 24 h of in vitro fermentation (uNDF24h), uDNF240h, total tract crude protein digestibility (TTCPD), total tract neutral detergent fiber digestibility (TTaNDFomD), total tract potentially degraded neutral detergent fiber at 240 h of in vitro fermentation digestibility (TTpdNDF240hD) with minimal values after new TMR delivery and maximal values 12 h after feed delivery. Feeding and ruminating behavior seemed to have an important role in the excretion pattern, due to the pushing and evacuating effect they have. Considering our results, two fecal samples at 12 and 24 h after the TMR delivery are suggested. For one daily sample, 12 h post time of most stable and constant rumination 0000-0600 h, which is also 8 h post feed delivery is suggested.

Abstract
The aim of the present study was to investigate the effect of the substitution, in dairy cow rations, of traditional protein and starch sources with more sustainable "circular" feeds to increase the sustainability of dairy production. For this purpose, eight multiparous mid-lactating cows were blocked and assigned to one of four treatments and were used in a replicated 4 × 4 Latin squares design with 21-days periods (14 days of adaptation and 7 of data collection). Two different circular feedstuffs were tested: a bakery's former foodstuff (FF) and a wheat distiller's grain with solubles (WDGS). These ingredients were used, alone and in combination, in three experimental diets (FF, WDGS; FF + WDGS) and compared to a standard ration (CTR). Dry matter intake and rumination time were not influenced by these diets. Conversely, dietary treatments partially influenced the milk yield, rumen pH, Volatile Fatty Acids (VFA) production, and fibre digestibility. In particular, the combined inclusion of FF and WDGS increased milk production (37.39 vs. 36.92, 35.48, 35.71 kg/day, for FF, WDGS and CTR diets, respectively) and reduced milk urea content (13.14 vs. 16.19, 15.58, 16.95 mg/dL for FF, WDGS, and CTR diets, respectively). No effects of this association were found in the milk composition, acetic and propionic production, and fibre digestibility. These results suggest that the association of former foodstuff and wheat distillers' grains could be safely included in dairy cow rations to increase the sustainability of cow nutrition and improve milk production without impairing animal health, dry matter intake, and fibre digestibility.

Abstract
The aim of this research was to evaluate the effect of the inclusion of Acacia mearnsii (AM) at different levels of inclusion on ruminal digestion and in vitro gas production. A. mearnsii forage was incorporated in the diet at different levels of 0 (AM0), 20 (AM20), and 40 (AM40) %. In situ degradation of dry matter (DM) and organic matter (OM) showed differences between treatments (P < 0.05), obtaining the highest value of the degradation of soluble fraction (A), insoluble but potentially degradable fraction (B), degradation rate in % per hour (c), potential degradation (A + B), and effective degradation for all passage rates in % h (0.02, 0.05, and 0.08) in AM0 with respect to AM20 and AM40. The in vitro digestibility of DM and OM was higher (P < 0.05) in AM0 with approximately 23.6% and 22.8% of DM and OM, respectively, compared to treatments AM20 and AM40. Cumulative gas production (PG) and gas production asymptote (B) were lower at AM0 and AM20 versus AM40; however, gas production rate (c) and total CH4 production were lower at AM40 with about 40.1 mL CH4/0.500 g fermented DM versus AM0 and AM20. Under the conditions of this study, it is concluded that the incorporation of A. mearnsii (20% and 40%) in the feed of ruminants negatively affected the digestion of nutrients; however, it reduced the production of CH4, which may be associated with the low activity of microorganisms toward the substrate due to the possible tannin/nutrient complex. This shows that in animals with little history of consuming plants rich in tannin, more than 3% of tannin could not be incorporated into the diet.

Abstract
Dairy cows are often exposed to multiple stressors in a lactation-cycle, with sub-acute ruminal acidosis (SARA) a frequent example of nutritional stress. SARA affects ruminal and intestinal equilibrium resulting in dysbiosis with localized and systemic inflammation impacting animal health and productivity. OmniGen-AF (OMN, Phibro Animal Health Corporation, Teaneck, NJ, USA) is a feed product recognized for modulating innate immune function, especially during periods of stress. The objective of this study was to determine the effects of OMN in lactating dairy cows fed a high-starch, low-fiber diet. Twenty-four blocked cows were assigned to control or treatment (55 g/d). After the additive adaptation (49 d) cows were fed the challenge diet (28 d). Milk, rumination and pH were continuously recorded; components, rumen fluid, and blood were taken in multiple time-point and analyzed. Results showed that the challenge decreased the rumination, shifted ruminal fluid composition, decreased milk production and the components, and slightly increased the time below pH 5.5, with no differences between groups. The treatment produced greater rumen butyrate and lower lactate, prompter regeneration of red blood cells, increase of neutrophils, lower paraoxonase, gamma-glutamyl-transferase, and β-hydroxybutyrate, with no differences on other tested inflammatory markers. Results show that OMN helps modulating some of the metabolic and immunological responses to SARA.

Abstract
Horses reared for meat production are generally fed a diet rich in starch with the aim of maximizing production performances. This study evaluated the effects of two feeding management systems on horse welfare by analysing the relative time spent engaged in different behavioural activities. Nineteen Bardigiano horses aged 14.3 ± 0.7 months were randomly assigned to one of two group pens: one group was fed high amounts of starch-rich concentrates (HCG; n = 10), the other was fed a fibre-based diet (HFG; n = 9). Behavioural activities performed by each horse were video-recorded over a 96-h period. A scan sampling process (n = 144 scans/horse/day; total n of scans sampled = 10,368) was used, and the scans were analysed according to a specific ethogram. The mean frequency (%/24 h) spent exhibiting each behavioural activity was calculated to obtain the time budget. After checking for normality (Shapiro–Wilk test), Student’s t tests (normally distributed data) and Mann–Whitney tests (not normally distributed data) were used to compare the time budgets of the two groups of horses (HCG vs. HFG). Principal Component Analysis (PCA) was applied to identify the components explaining the variability in behavioural activities between the two groups. K-means cluster analysis subsequently confirmed the PCA results. The behavioural activities associated with feeding horses a fibre-based diet correlated with better horse welfare compared with feeding horses a starch-based diet. Feeding horses a fibre-based diet resulted advantageous from both the welfare and economic perspective; it allowed horses to spend more time expressing feeding behaviours and reduced energy expenditure in the form of excitable, or “fizzy”, behaviours.

Abstract
Dry hay (composed of grass, legumes, or a mixture of the two) provides the primary source of alimentary fiber in stabled horses with limited access to fresh pasture. However, hay can also give rise to health problems in the horse, depending on the quality and quantity of its components. Pathologies may be rooted in biological problems, such as inadequate digestion disturbances, or reflect mechanical difficulties - for example, due to the presence of sharp plant parts that irritate the oral mucosa, or due to physical intake problems that inhibit consumption. Unwanted plants in the hay may cause stomatitis and affect the oral mucosa, resulting in inappetence, hemorrhagic drooling, gingival hyperemia, edema, and ulcerative lesions, as reported in case 1 of the present study. Horse dysphagia, defined as a difficult in ingesting feed through the mouth and esophagus, is another important cause of malnutrition in the horse, and identifying the site of its origin is important in order to provide practical advice for nutritional management, as reported in case 2. Free fecal water syndrome (FFWS) is a condition where the horse exhibits two-phase feces expulsion, with an initial solid phase followed by a liquid phase. Although the etiology of FFWS is still unknown, hay quality seems to play a key role, as the outcome of case 3 suggests. This case series highlights the importance of hay quality and of providing an appropriate and adequate fiber intake. Moreover, good hay management becomes crucial when horses are affected by contextual pathologies, such as stomatitis, dysphagia, or FFWS.

Abstract
Dairy cows are exposed to multiple stressors during the productive cycle, such as metabolic challenges, overcrowding, grouping change, environmental stress and dietary errors. Thus, it is essential to study reliable markers able to detect stress conditions in dairy farms. This study evaluates dairy cows' immunologic and metabolic markers after the sudden and combined exposition to a high-grain diet (75% concentrates) and the abrupt change of the housing system (from free stall to tie stall). A group of twenty-four Holstein cows were enrolled in a challenge study of 28 days duration. Several immunological and metabolic blood markers were evaluated over the trial. Blood samples were taken at day 0 (normal value) and day 1, 3, 7, 14, 21, and 28 (challenge). Data were submitted to a mixed model for repeated measures, including time as fixed and cows as random effects. The nutritional and environmental challenge had heavy effects on animal welfare and cows responded with a dramatic rumination drop. Our results suggest that the most responsive markers after abiotic stressors in cows were as follows: Serum Amyloid A and ROM in the acute response; Ceruloplasmin and GGT in the mid acute and Albumin, Paroxonase and FRAP in the chronic phase. Serum Amyloid A, Ceruloplasmin, Paraoxonase, GGT and ROM resulted as positive phase proteins, while, Albumin and FRAP resulted as negative phase proteins. Preliminary obtained results could concur to develop strategies able to mitigate stressor effects; moreover, the proposed design can be used as a model to test stress nutritional modulators.
