Abstract
This work aimed to study the effect of three drying methods, namely sun-drying (SD) (T = 32 °C), continuous convective drying (CCD) (T = 35 ± 2 °C) and interval starting accessibility Drying (ISAD) (T = 35 ± 2 °C) with an active time of 30 s (ton) and a tempering time of 60 s (toff), on selected quality characteristics of a traditional dry-salted meat product known as "kaddid". The analyses of chemical composition, lipid oxidation and fatty acid profile of kaddid were carried out before and after 45 days of storage (t = 0 vs. t = 45) at ambient temperature. Chemical composition and lipid oxidation (TBARS) of kaddid were affected by the drying methods. The CCD samples showed the lowest level of lipid oxidation. Protein content was better preserved via the ISAD method (7.27 g/kg DM). The fatty acid profile revealed the lowest mono-unsaturated fatty acid content in the ISAD samples; however, no significant difference was observed between the drying processes for the total poly-unsaturated fatty acid content. The storage period led to a significant decrease in the SFA values of CCD and ISAD samples against an increase in the MUFA ones. ISAD appeared to be a promising drying mode with a lower effective drying time and a good product quality preservation.

Abstract
This study evaluated, through meta-analysis, the effect of distillers' grains (DG) supplementation to beef cattle on their performance, carcass parameters, and meat fatty acid profile. Eighty-one peer-reviewed publications with 439 treatments means were included in the data set. The effects of DG supplementation to beef cattle were evaluated using weighted mean differences (WMD) between the control group (diets with no DG) and DG group (diets with DG). Heterogeneity was explored by meta-regression and subgroup analysis using genetic type, treatment period, DG type, amount of DG in diet (g DG/kg DM), sulfur in diet (g S/kg DM), ether extract in diet (g EE/kg DM), feed systems (pasture or total mixed ration), and concentrate level in the diet (g/kg DM). Meat fatty acid profile was more affected when DG was fed to crossbreed animals. In Angus animals, DG inclusion to the diets had little effect on meat fatty acid profile whereas, a pronounced reduction was reported in meat omega-6/omega-3 ratio. In response to DG inclusion to the diets, an increase in diet sulfur content up to 6.0 g/kg and ether extract content up to 110 g/kg had no adverse effects on performance, carcass parameters, and meat physicochemical characteristics. Distillers' grains inclusions in amounts between 500 and 600 g DG/kg provided the greatest responses when evaluating carcass parameters and meat fatty acid profile. Increased CLA c9 t11, linolenic acid, and total PUFA and reduced myristic acid concentration in meat were reported when animals were fed diets containing DG.

Abstract
This study aimed to investigate the effects of replacing alfalfa with native grass on growth performance, meat quality, and rumen microbiota of lambs. Forty-five 6-month-old Ujimqin lambs with live body weight (BW) of 29.50 ± 0.26 kg were used for the experiment, and the lambs were assigned to three diet treatments (three pens per treatment and five lambs per pen) with 30 square meters per pen in semi-open housing based on similar BW. The lambs have received 30% alfalfa (HA, high alfalfa percentage group), 20% alfalfa (MA, moderate alfalfa percentage group), and 10% alfalfa (LA, low alfalfa percentage group) diets, respectively (dry matter basis). The diet treatments had a significant (P < 0.05) influence on the dry matter intake of lambs and the dry matter intake increased with the increasing percentages of native grass hay, while the significantly (P < 0.05) lower final BW and average daily gain were observed in the MA and LA groups compared with that in the HA group. The diet had a significant (P < 0.05) difference in meat pH value, water loss rate, cooked meat rate, moisture, and intramuscular fat, while no significant (P > 0.05) difference was found in protein. As native grass hay percentages increased in the diet, the contents of palmitic (C16:0) and palmitoleic (C16:1 cis-9) in the HA and MA groups were significantly (P < 0.05) lower than that in the LA groups, and compared with the HA group, the contents of elaidic (C18:1 trans-9), oleic (C18:1 cis-9), and linoleic (C18:2 cis-9–cis-12) were significantly (P < 0.05) increased in the MA and LA groups. The content of α-linolenic (C18:3n3) was significantly (P < 0.05) higher in the LA group than that in the HA and MA groups. The principal coordinate analysis profile displayed that the composition of the bacterial community of these groups was distinctly separated from each other. No significant (P > 0.05) difference was observed in the dominant rumen bacteria at the phyla and genus levels. In conclusion, the meat quality and fatty acid profile analysis revealed that replacing alfalfa hay with native grass hay is more beneficial for Mongolian lambs, and the meat from LA diet treatment is better than the others. In addition, correlation analysis of the association of rumen microbiome with growth performance, meat quality, and fatty acid profile provides us with a comprehensive understanding of the composition and function of rumen microbiota. These findings could provide knowledge of how the diet affects the animal performance, meat quality of lambs, and microbiota of the rumen, laying a theoretical basis for replacing alfalfa with native grass.

Effect of Diet and Essential Oils on the Fatty Acid Composition, Oxidative Stability and Microbiological Profile of Marchigiana Burgers. Antioxidants (Basel) 2022; 11:antiox11050827. Abstract
The objective of this study is to evaluate the effects of including linseed (L) or linseed plus vitamin E (LE) in the diet of Marchigiana young bulls on the oxidative stability, color measurements, microbiological profile and fatty acid composition (FA) of burgers treated with and without a blend of essential oils (Rosmarinus officinalis and Origanum vulgare var. hirtum) (EOs). For this aim, the burgers were analysed for pH, thiobarbituric-acid-reactive substance (TBARS) content, Ferric Reducing/Antioxidant Power Assay (FRAP), vitamin E and colour measurements (L, a*, b) at 3, 6, 9, 12 days of storage: the TBARs were the highest in group L compared to C and LE after 12 days of storage (0.98, 0.73, and 0.63 mg MDA/kg, respectively). The TBARS content was also influenced by the use of EO compared to burgers not treated with EO (p < 0.05). The vitamin E content was influenced by the diet (p < 0.01), but not by the EO. The meat of the L group showed the lowest value of redness (a*) compared to C and LE (p < 0.01), while the use of EO did not affect colour parameters. The microbiological profile of the burgers showed a lower Pseudomonas count for L and LE at T0 (2.82 ± 0.30 and 2.30 ± 0.52 Log CFU/g, respectively) compared to C (3.90 ± 0.38 Log CFU/g), while the EO did not influence the microbiological profile. The FA composition was analysed at 0 and 12 days. The burgers from the LE group showed the highest value of polyunsaturated FA compared to the L and C groups (p < 0.05). Our findings suggest that the inclusion of vitamin E in a concentrate rich in polyunsaturated fatty acids is useful to limit intramuscular fat oxidation and to preserve the colour stability of burgers from young Marchigiana bulls enriched with healthy fatty acids. Moreover, linseed and vitamin E had a positive effect on microbial loads and growth dynamics, containing microbial development through time.

The effect of dietary inclusion of crude glycerin on performance, ruminal fermentation, meat quality and fatty acid profile of beef cattle: Meta-analysis. Res Vet Sci 2021; 140:171-184. Abstract
This meta-analysis was carried to evaluate the effect of the use of crude glycerin in diets for beef cattle on the ruminal fermentation, animal performance, physical and chemical characteristics, and fatty acid profile of meat through meta-analysis. Data from forty-eight peer-reviewed publications with 170 treatments means was included in the data set. The effect glycerin in diet were evaluated by examining the weighted mean differences (WMD) between glycerin treatment (diets with crude glycerin) and control diet (without crude glycerin). Heterogeneity was explored by meta-regression and subgroup analysis using genetic type, treatment period, crude glycerin in the diet (g/kg DM), feed systems (pasture or total mixed ration), and concentrate in the diet (g/kg DM). The inclusion of crude glycerin had no effect on the average daily gain, but increased feed efficiency by 3.15% while reducing subcutaneous fat thickness by 3.13%. Inclusion of crude glycerin reduced meat cholesterol by 9.13%, and total saturated fatty acids by 1.05%, and increased total unsaturated (2.02%), monounsaturated (3.17%) fatty acids. However, it did not affect the concentrations of conjugated linoleic acid and omega-3. Crude glycerin inclusions up to 200 g/kg DM did not promote a negative effect on animal performance, carcass and physical-chemical characteristics of meat, and supported an increase in total monounsaturated (1.73%), oleic acid (12.29 mg) and palmitoleic acid (1.24 mg), while reducing myristic acid (3.08 mg), stearic acid (12.00 mg) in beef cattle meat.

Abstract
There is growing interest in increasing omega-3 fatty acid (FA) contents in ruminant meat by means of dietary manipulation, but the effects of such manipulation on productive results and meat quality need to be ascertained. The aim of the present study was to assess the effects of supplementing lambs with competent reticular groove reflex (RGR) with marine algae as a source of omega-3 fatty acids on growth performance, carcass traits, and meat quality characteristics. Forty-eight feedlot lambs were distributed into three equal groups: the control group neither consumed marine algae nor had competent RGR, the second group received daily 2.5% of algae meal mixed in the concentrate, and the last group consumed the same amount of algae meal, but emulsified in a milk replacer and bottle-fed. Lambs in the second and third groups had competent RGR. There were not any negative effects on performance, carcass or meat quality parameters with algae supplementation. However, the results of the oxidative stability parameters were not conclusive. Ageing for 6 days improved meat tenderness and color, and increased lipid oxidation. In conclusion, algae meal inclusion in the diet of fattening lambs with competent RGR has no detrimental effects on animal performance, carcass traits or meat quality characteristics.

Abstract
Simple Summary The aim of the authors is to make a summary of the possible applications of molasses in animal nutrition, how to improve hays and silage qualities for beef and dairy cattle; to enhance industrial byproducts values by liquid feed in swine production; and to improve with feed blocks the extensive livestock production efficiency (cows, buffaloes, sheep, goats and pigs). Focus is both on characteristics feed based on molasses and on ruminal fermentation: the techniques of production, conservation and administration to animals have been widely described as being capable of positively influencing animal performance, milk and meat quality, as well as animal welfare. Abstract In the past fifty years, agriculture, and particularly livestock production, has become more resource-intensive, with negative implications regarding world environmental status. Currently, the circular economy 3R principles (to reduce, reuse and recycle materials) can offer many opportunities for the agri-food industry to become more resource-efficient. The closed-loop agri-food supply chain has the great potential of reducing environmental and economic costs, which result from food waste disposal. To meet these principles, the use of crop byproducts, such as molasses, in animal nutrition improves the nutritive value of coarse and poorly desired feedstuff, which could present a real opportunity. The aims of this study were to summarize the possible applications of molasses for animal nutrition, to improve hay and silage quality for beef and dairy cattle, to enhance industrial byproduct values using liquid feed in swine production, and to improve extensive livestock production with feed blocks. The study focused on both feed characteristics, based on molasses, and on ruminal fermentation of its carbohydrates; the techniques of the production, conservation and administration of molasses to animals have been widely described as being capable of positively influencing animal performance, milk and meat quality.

Abstract
Various supplementations in animal feeding have been investigate in order to enrich food of animal origin with n-3 fatty acids. Although the effects of flaxseeds inclusion in diets for lactating dairy have already been assessed, few studies have focused on this n-3 source supplementation during the transition period. The aim of this work was to evaluate the effects of flacked flaxseed (200 g/head/day; 2.13% DM) dietary treatment during the dry period on milk yield and quality in the 30 days after calving. In addition, the enterolactone content in plasma (before and after calving) and in milk of cows fed diets supplemented or not with flaxseed was considered. The study demonstrated that the carry-over effect on the milk profile of C18:2, C18:3 n-3, and C20:5 n-3 was significantly higher in flaxseed diet than in the control one at 4th day of lactation. A significant increase of enterolactone on milk from flaxseed fed cows was observed only at 15 sampling day. The quick modification in fatty acid (FA) profile of the milk in the first few days of lactation suggests that the carry over effect from pre-calving flaxseed feeding at this concentration was very short lasting.

Abstract
The primary aim of this paper is to determine the influence of two organic production systems, organic grass-fed (OG) and organic concentrate-fed (OC), vs. a conventional concentrate-fed (CC) system; the second aim is to determine the influence of the ageing period on the physical parameters and texture properties of beef from the Retinta breed. Muscle samples from Longissimus thoracis were stored at 2-4 ± 1 °C for 0, 7, 14, and 21 days for the purposes of ageing. Analyses of pH, water losses (drip loss and cooking loss), Warner-Bratzler shear force, texture profile analysis (TPA), and histological analysis of muscle fibre were carried out. The results revealed that organic meat experienced lower drip loss and higher cooking loss than conventional meat. Although the meat of organic grass-fed animals was tougher initially, it showed a higher tenderisation speed in the first ageing days than OC and CC meats. The sarcomere length increased during the ageing period, which showed a negative correlation to shear force. According to its texture characteristics, the Retinta meat produced in organic systems could be recommended by its quality.
