Abstract
The study examined effects of feeding iso-nutrient (150 g CP, 17.3 MJ ME kg-1) raw (RCP), sprouted (SPC), or roasted (RSCP) cowpea diets to Windsnyer (W), Large White (LW) × Landrace (LR), and the 3-way crossbred (W × LW × LR) growing pigs. Diet dry matter (DM) digestibility was estimated using standard, 3-step (gastric, small intestines, colon) in vitro digestion. Dietary in vivo nutrient digestibility and nitrogen balance were evaluated using 3 weaned pigs of each genotype. Pigs were housed in individual metabolic cages. The diets were assigned to pigs in a 3 × 3 change-over factorial experiment within three balanced, 3 × 3 Latin squares. Feeding periods consisted of 7 days adaption + 5 days' measurement of feed intake, and the total faecal and urine excretions. The SPC diet increased step 3 in vitro DM digestibility compared to RSCP (P < 0.05). Metabolic size-scaled feed consumption was higher on the RCP compared to the RSCP diet (P < 0.05). Cowpea processing reduced apparent DM and ash digestibility (P < 0.05). LW × LR pigs exhibited lower digestibility of ash and acid detergent fiber (ADF) compared to 3-way crossbred pigs (P < 0.05). Significant genotype-diet interactions were observed for nitrogen intake (P < 0.0001), digestible nitrogen (P = 0.043), urinary nitrogen output (P < 0.0001), faecal nitrogen output (P < 0.0001), total nitrogen excretion (P < 0.0001), and nitrogen retention (P < 0.001). The biological value of feed protein was higher for W pigs than 3-way crossbred pigs (P < 0.05). Genotype-diet interactions suggested unique digestive and, or metabolic adaptive traits in the utilization of the differently processed cowpeas, which need further investigation.

Abstract
This study investigated the effects of dietary replacement of soybean meal (SBM) with graded levels of pea seeds (PS) on the gastrointestinal function of turkeys. Seeds of 2 pea varieties, a colored-flowered variety and a white-flowered variety (CFP and WFP, respectively) were fed to 56-d-old birds for 8 wk. A total of 539 female Hybrid turkeys were allocated to 7 groups, each group consisted of 7 pens with 11 birds per pen. The experiment had a 2-factorial design, with 3 dietary inclusion levels of PS (100, 200 and 300 g/kg) and 2 pea varieties (CFP and WFP). The control group (diets without PS) was compared with CFP and WFP treatments by simple contrast analysis. In comparison with CFP seeds, WFP seeds contained 7-fold less tannins (0.67 vs. 4.66 g/kg) and less non-starch polysaccharides (NSP, 117.8 vs. 132.7 g/kg), but more trypsin inhibitors (1.34 vs. 0.98 g/kg) and starch (489 vs. 455 g/kg). A rise in the PS content of diets from 100 to 200 and 300 g/kg increased the weight of the small intestine (P = 0.031) and the dry matter (DM) content of intestinal digesta (P = 0.001), but it had no effect on the pH of digesta. Only the highest PS content differentiated the concentrations of short-chain fatty acids (SCFAs) in the small intestinal digesta (WFP > CFP, P = 0.008), whereas PS did not cause any changes in the morphological parameters of the small intestinal mucosa. The dietary inclusion of PS had no influence on the levels of acetate, butyrate, putrefactive SCFAs or total SCFAs in the cecal contents. Apart from increasing the activities of β-glucosidase (P = 0.017) and β-galactosidase (P = 0.025), pea varieties did not affect the activities of the analyzed cecal microbial enzymes. However, CFP seeds decreased the DM content (P = 0.041) and increased the pH of cecal digesta, compared with WFP seeds (P = 0.013). The results of this study, pointing to a few differences in the functional parameters of the small intestine and cecum, indicate that tannins are not a factor differentiating the suitability of CFP and WFP seeds in the nutrition of finisher turkeys. The inclusion of PS at 200 and 300 g/kg of the diet reduces the content of SBM and wheat in turkey diets, which has a positive effect on gastrointestinal function.

Abstract
Simple Summary Faba beans could be a valuable raw material in pigs’ diets, but the presence of anti-nutritional factors limits their wide use. The aim of the study was to investigate how the extrusion of faba bean seeds and/or the addition of protease to pigs’ diets affected the animals’ growth parameters, digestibility of nutrients, selected physiological parameters of the digestive tract, and biochemical blood parameters. Our research showed that extrusion increased the nutritional value of faba bean seeds, especially by reducing antinutritional factors, but in comparison with raw seeds, it did not improve the pigs’ growth performance, digestibility of nutrients, intestinal structure, and physiology when the content of faba beans in the diet was below 10%. Thanks to protease supplementation in our study, protein and oil levels in the diet were reduced while maintaining the same pigs’ performance, which cut the cost of feeding. The extrusion and enzyme additives did not improve the pigs’ growth performance in this experiment, but protease appears to be highly promising in the commercial nutrition of pigs. Abstract The aim of the study was to investigate how the extrusion of faba bean seeds (var. Albus) and/or the addition of protease to pigs’ diets affected the animals’ growth parameters, digestibility of nutrients, selected physiological parameters of the digestive tract, and biochemical blood parameters. A 28-day experiment was conducted on 32 pigs weighing 9 ± 0.2 kg. The animals were allocated to four treatments in a 2 × 2 factorial arrangement with the main effects of extrusion (raw or extruded) and effects of protease supplementation (0 and 0.05%). Extrusion reduced the levels of neutral detergent fibre, trypsin inhibitor, phytate-P, and resistant starch but did not improve the digestibility of protein and dry matter in faba bean seeds. The pigs’ growth performance, ileal digestibility, enzyme activity, and morphometric parameters of the ileum were not significantly affected by extrusion, except for a higher feed intake between the 15th and 28th day of the experiment. The protease supplementation gave comparable results as the diet without protease, except the feed conversion ratio (in the periods of 15–28th day and 0–28th day), which was higher than in the groups without protease. The extrusion and protease increased acetate and acetoacetate contents in the cecal digesta, but propionate, butyrate, and isovalerate concentrations in the digesta of the pigs in this group were lower. Thanks to protease supplementation, protein and oil levels in the diet were reduced, which cut the cost of feed mixtures. The extrusion and protease additive combined together did not improve the pigs’ growth performance in this experiment.

Abstract
Duck' meat is characterized by good nutritional properties and gaining popularity in the consumer market. Extruded soybean is potentially more digestible than commonly use soybean meal (SBM), and is expected to influence carcass traits and the quality of breast and leg muscles. The study' aim was to compare meat quality from both sexes' ducks fed a diet with extruded soybean (ESB) as a substitute for SBM. Cherry Valley ducks were divided into two groups. The control group (1) was fed an SBM-based diet, and the treatment group (2) with ESB. Each group was divided into sex subgroups with 50 birds in each (5 replicates, 10 ducks each). Dissection and analysis of meats' pH, colour, water-holding capacity (WHC), drip loss and chemical composition of breast and leg muscles were done. Interaction of Diet and Sex was calculated. In group 2 higher carcass weight, dressing percentage, weight of wings, leg muscles, total muscles, and better WHC were found. Dressing percentage, the proportion of neck with skin, breasts' and stomach' weight, and the weight and proportion of fat, and pH45min were higher in females (P < 0.05). The interaction was found for the pre-slaughter body weight, the weight of carcass remains, WHC in breasts (P < 0.05). The ESB feed had no negative effect on the analyzed traits and can be used in the ducks' diet. Improved the WHC indicates the high suitability of meat for processing. A positive effect of diet on the muscles' proportion and dressing percentage was noticed, which is important for consumers' market. The sex-related differences and interactions between variables suggest separate rearing due to sex.

Abstract
BACKGROUND Differences in the composition of the intestinal microbiota and energetic metabolism between lean and obese populations have been described. Legume consumption has been reported to modulate intestinal microbiota composition. However, to the best of our knowledge, no information can be found in the literature on the effects of consumption of diets containing extruded legume plus cereal mixes on the intestinal microbiota composition of rats. Our purpose was to evaluate the effects on lipids profile (see the accompanying paper) and intestinal microbiota composition (current paper) of incorporating this new food ingredient in normocaloric and obesogenic diets. RESULTS Intestinal and fecal qPCR-based microbial composition of rats fed the extruded legumes plus cereal mixes differed (P < 0.05) from controls. Obesogenic diets did not affect bacterial counts. However, the inclusion of the extruded mixes reduced (P < 0.05) log10 counts in some bacterial groups and increased (P < 0.05) counts of Lactobacilli, while others remained unaffected. PCoA at the genus level grouped together Lactobacillus reuteri, Akkermansia miciniphila and species from Parabacteroides, Prevotella, Rikenellaceae, and Lactobacillus with extruded legume plus cereal diets. Feeding on extruded legumes plus cereal mixes was associated with increased mRNA expression of the cytokines IL6 and TNF-α and decreased expression of TLR4. CONCLUSIONS Our results show that the inclusion in the feed of limited amounts of extruded legumes plus cereal mix, providing a diet that is closer to a normal human one, did modulate the intestinal microbiota composition. Taken together, these results point to the protective, health-promoting properties of extruded legume plus cereal mixes.

Abstract
Using alternative feedstuffs can be a feasible measure to reduce swine production cost. GuarPro F-71 (GP71), a newly developed guar meal product, is considered as a potential protein source for pigs. This preliminary study was conducted to evaluate the effects of GP71 inclusion in feed on growth performance and nutrient metabolism of growing pigs. Sixty crossbred barrows (31.9±1.84 kg body weight (BW)) were allotted to one of five dietary treatments in a completely randomised experiment design, with four pens/treatment and three pigs/pen. Diet 1 was a maize- and soybean-based basal control diet formulated to meet NRC recommendations. GP71 was used to replace 25, 50, 75, and 100% soybean meal in diet 1 (on an equivalent crude protein (CP) basis) to generate diets 2, 3, 4, and 5, respectively. Crystalline amino acids were used to balance the essential amino acid concentrations across the five diets. Inclusion of GP71 quadratically reduced average daily feed intake (ADFI) (P=0.01) with no observed clinical signs of unhealthiness of pigs. The blood plasma concentrations of six metabolites, including urea nitrogen, total protein, albumin, glucose, total cholesterol and total triglycerides, were not affected (P>0.30), indicating that the pigs’ metabolic utilisation of nutrients was not compromised. The cubic effect (P<0.05) of dietary GP71 inclusion on G:F ratio suggested that the level of soybean meal replacement (up to 75% soybean meal) did not negatively affect feed efficiency in pigs. In short, the feed intake reduction due to the dietary GP71 inclusion was, if not solely, responsible for the average daily gain (ADG) and final BW reduction. This study suggested that using GP71 to replace soybean meal up to 75% (on an equivalent CP basis) can negatively affect ADFI and ADG, but not feed efficiency, in growing pigs. The reasons for the ADFI and ADG reduction need to be understood in future research.

Abstract
Proteins are essential macronutrients for the human diet. They are the primary source of nitrogen and are fundamental for body structure and functions. The plant protein quality (PPQ) refers to the bioavailability, digestibility, and amino acid composition. The digestibility specifies the protein quantity absorbed by an organism relative to the consumed amount and depends on the protein structure, previous processing, and the presence of compounds limiting the digestion. The latter are so-called antinutritional factors (ANF), exemplified by phytates, tannins, trypsin inhibitors, and lectins. Animal proteins are known to have better digestibility than plant proteins due to the presence of ANF in plants. Thus, the inactivation of ANF throughout food processing may increase the PPQ. New food processing, aiming to increase the digestibility of plant proteins, and new sources of proteins are being studied for the animal protein substitution. Here, it is presented the impact of processing on the protein digestibility and reduction of ANF. Several techniques, such as cooking, autoclaving, germination, microwave, irradiation, spray- and freeze-drying, fermentation, and extrusion enhanced the PPQ. The emerging non-thermal technologies impact on protein functionalities but require studies on the protein digestibility. How to accurately determine and how to improve the protein digestibility of a plant source remains a scientific and technological challenge that may be addressed by novel or combining existing processing techniques, as well as by exploring protein-enriched by-products of the food industry.
