Barley grain for ruminants: A global treasure or tragedy

Barley grain (Hordeum vulgare L.) is characterized by a thick fibrous coat, a high level of ß-glucans and simply-arranged starch granules. World production of barley is about 30 % of that of corn. In comparison with corn, barley has more protein, methionine, lysine, cysteine and tryptophan. For ruminants, barley is the third most readily degradable cereal behind oats and wheat. Due to its more rapid starch fermentation rate compared with corn, barley also provides a more synchronous release of energy and nitrogen, thereby improving microbial nutrient assimilation. As a result, feeding barley can reduce the need for feeding protected protein sources. However, this benefit is only realized if rumen acidity is maintained within an optimal range (e.g., > 5.8 to 6.0); below this range, microbial maintenance requirements and wastage increase. With a low pH, microbial endotoxines cause pro-inflammatory responses that can weaken immunity and shorten animal longevity. Thus, mismanagement in barley processing and feeding may make a tragedy from this treasure or pearl of cereal grains. Steam-rolling of barley may improve feed efficiency and post-rumen starch digestion. However, it is doubtful if such processing can improve milk production and feed intake. Due to the need to process barley less extensively than other cereals (as long as the pericarp is broken), consistent and global standards for feeding and processing barley could be feasibly established. In high-starch diets, barley feeding reduces the need for capacious small intestinal starch assimilation, subsequently reducing hindgut starch use and fecal nutrient loss. With its nutritional exclusivities underlined, barley use will be a factual art that can either matchlessly profit or harm rumen microbes, cattle production, farm economics and the environment.

Comparative life cycle assessment of three biohydrogen pathways

A life cycle assessment was performed to quantify and compare the energetic and environmental performances of hydrogen from wheat straw (WS-H(2)), sweet sorghum stalk (SSS-H(2)), and steam potato peels (SPP-H(2)). Inventory data were derived from a pilot plant. Impacts were assessed using the impact 2002+ method. When co-product was not considered, the greenhouse gas (GHG) emissions were 5.60 kg CO(2eq) kg(-1) H(2) for WS-H(2), 5.32 kg CO(2eq) kg(-1) H(2) for SSS-H(2), and 5.18 kg CO(2eq) kg(-1) H(2) for SPP-H(2). BioH(2) pathways reduced GHG emissions by 52-56% compared to diesel and by 54-57% compared to steam methane reforming production of H(2). The energy ratios (ER) were also comparable: 1.08 for WS-H(2), 1.14 for SSS-H(2) and 1.17 for SPP-H(2). A shift from SPP-H(2) to WS-H(2) would therefore not affect the ER and GHG emissions of these BioH(2) pathways. When co-product was considered, a shift from SPP-H(2) to WS-H(2) or SSS-H(2) decreased the ER, while increasing the GHG emissions significantly. Co-product yield should be considered when selecting BioH(2) feedstocks.

Effects of supplemental fat on growth performance and quality of beef from steers fed barley-potato product finishing diets: I. Feedlot performance, carcass traits, appearance, water binding, retail storage, and palatability attributes

To measure the effects of dietary fat on feedlot performance, carcass characteristics, and beef appearance, moisture binding, shelf life, and palatability, 168 crossbred beef steers (317 +/- 1.0 kg) were allotted randomly, within weight blocks, to a randomized complete block design with a 3 x2 + 1 factorial arrangement of dietary treatments. Main effects were level of yellow restaurant grease (RG; 0, 3, or 6%) and level of alfalfa hay (AH; 3.5 or 7%), with the added treatment of 6% tallow and 7% AH in barley-based diets containing 15% potato by-product and 7% supplement fed for 165 d (all dietary levels on a DM basis). Dietary treatment did not (P >0.10) affect DMI, LM area, beef brightness, or beef texture. Level of RG linearly increased (P <0.05) ADG from 1.48 to 1.60 kg/d, diet NE(m) from 2.4 to 2.6 Mcal/kg, diet NE(g) from 1.7 to 1.9 Mcal/kg, and internal fat from 2.1 to 2.4%. Level of RG linearly increased (P <0.05) G:F from 0.184 to 0.202, but decreased (P <0.05) beef firmness score from 3.0 to 2.8 and fat luster score from 3.1 to 2.8. Level of AH did not (P >0.10) affect any of the measurements; however, AH interacted with level of RG on fat thickness and yield grade (linear; P <0.05), as well as marbling score and percentage of carcasses grading USDA Choice (quadratic; P <0.05). Fat thickness and yield grade increased with increasing RG level in 3.5%, but not in 7%, AH diets. In steers fed 3.5% RG, marbling scores and percentage of carcasses grading Choice were greatest when fed with 3.5% AH, and least when fed 7% AH. Steers fed tallow had lower marbling scores (P = 0.01) and percentage of carcasses grading Choice (P = 0.066) than those fed RG. Retail storage attributes, including visual and instrumental color, decreased during storage (P <0.01), but were not (P >0.10) affected by diet. Trained sensory panel scores for initial tenderness increased quadratically (P = 0.07) as dietary RG increased, but diet did not (P >0.10) affect drip loss, cooking loss, or trained sensory panel scores for sustained tenderness, initial and sustained juiciness, and beef flavor. Therefore, RG increased diet energy, improved performance, and increased carcass fatness; however, dietary fat and AH did not affect most measurements of water retention, color stability, or palatability of beef.

Escherichia coli O157:H7 excretion by commercial feedlot cattle fed either barley- or corn-based finishing diets

Effective preharvest control measures for Escherichia coli O157:H7 in cattle may significantly reduce the incidence of human disease caused by this organism. The prevalence and magnitude of fecal E. coli O157:H7 excretion was evaluated in 15 pens (300 to 500 cattle per pen) of commercial feedlot cattle fed a barley-based finishing ration and compared with that in 15 pens of cattle fed a corn-based ration. Average E. coli O157:H7 prevalence was 2.4% in barley-fed cattle and 1.3% in the corn-fed cattle (P < 0.05), and average magnitude of fecal E. coli O157:H7 excretion was 3.3 log CFU/g in the barley-fed cattle and 3.0 log CFU/g in the corn-fed cattle (P < 0.01). Corn-fed cattle had lower average fecal pH values (5.85) than did barley-fed cattle (6.51) (P < 0.01), and the average total generic fecal E. coli concentration in this group of animals (6.24 log CFU/g) was greater than that in the barley-fed cattle (5.55 log CFU/g) (P < 0.01). Specific feed ingredients may impact the frequency and magnitude of fecal excretion of E. coli O157:H7 by cattle.
