Abstract
After verifying productive improvements from the crossbreeding (MB) of Boer males with females of the Murciano-Granadina (MG) breed, the aim of this work was to determine its consequences on the carcass and meat characteristics of suckling kids (9 kg of weight at slaughter) of both sexes. A total of 94 kids (25 purebred MG males, 19 purebred MG females, 25 crossed MB males and 25 crossed MB females) were used. It was found that MB kids reached slaughter weight at a younger age (44 ± 1 vs. 63 ± 1 days, p < 0.001). For carcass yield, the interaction genotype x sex was observed, where MB females presented a higher value (51.71 ± 0.34%) than the rest of the animals (MB males 50.53 ± 0.34, p < 0.05; MG males 50.60 ± 0.34, p < 0.05; MG females 49.62 ± 0.39, p < 0.001). MB kids had greater leg compactness, (36.28 ± 0.27 vs. 34.71 ± 0.29 g/cm, p < 0.001), slightly improved expensive carcass cuts (75.93 ± 0.31 vs. 74.77 ± 0.34%, p = 0.014) and higher muscle/bone (2.93 ± 0.03 vs. 2.76 ± 0.03, p < 0.001) and meat/bone ratios (3.56 ± 0.04 vs. 3.36 ± 0.04, p < 0.001) than MG kids. They also showed a somewhat more intense red colour (8.57 ± 0.25 vs. 7.74 ± 0.27, p = 0.027), higher colour saturation (9.06 ± 0.24 vs. 8.20 ± 0.26, p = 0.016) and less meat firmness (1.95 ± 0.08 vs. 2.23 ± 0.081 kg/cm2, p = 0.021). On the other hand, males had a slightly improved proportion of expensive cuts (75.98 ± 0.31 vs. 74.73 ± 0.34, p = 0.008), but their carcass contained a higher proportion of bone (22.16 ± 0.21 vs. 21.17 ± 0.17%; p < 0.001), a lower proportion of intermuscular fat (9.54 ± 0.24 vs. 10.93 ± 0.24, p < 0.001), a higher muscle/fat ratio (5.01 ± 0.10 vs. 4.41 ± 0.10, p < 0.001) and lower muscle/bone (2.80 ± 0.03 vs. 2.89 ± 0.03%, p = 0.016) and meat/bone ratios (3.36 ± 0.04 vs. 3.56 ± 0.04%, p < 0.001) than females. There were no sensory differences in any case. It is concluded that this crossbreeding strategy also improves the carcass and meat characteristics, making it a valid alternative to improve the productive results of MG dairy goat herds.

Abstract
Context
Goat farming is an important socio-economic activity. The feedlot system allows the finishing of the animals in short periods through use of concentrated diets; however, these diets increase the system’s production costs. Palm kernel cake (PKC) has proved to be a good alternative feed source in diets for cattle and sheep because of its nutritional characteristics and potential to reduce production costs.
Aim
This experiment aimed to evaluate the effect of high-concentrate diets with the inclusion of PKC on carcass traits and meat quality of feedlot goat kids.
Methods
Thirty-two crossbred, castrated Boer goat kids, 4
months old and of average initial body weight 19.65±3.00kg, were used in the study. The animals were assigned to treatments in a completely randomised design, with four experimental diets containing PKC at 0%, 12%, 24%, and 36% on a dry matter basis. Measurements included total weight gain at slaughter, quantitative and sensory meat characteristics, and fatty acid profile.
Key results
A quadratic effect (P<0.05) on total weight gain, and on meat marbling, lightness, and yellowness, was observed. The highest total weight gain and marbling were recorded with the diet containing 12% PKC. Loin eye area was also highest at 12% PKC, then decreased, whereas protein content and shear force increased (P<0.05) at the higher PKC levels. Diet affected (P<0.05) saturated, monounsaturated, and polyunsaturated fatty acids. No effect was observed from the inclusion of PKC on sensory attributes or on nutritional quality of the lipid fraction of the meat.
Conclusion
It is recommended the use up to 12% of this alternative source of nutrients, owing to the higher total weight gain and improved quantitative aspects of the goat kids’ meat such as marbling and loin eye area.
Implications
High-concentrate diets and the use of by-products for animal nutrition have become common in animal production systems. The increasing use of PKC in animal nutrition leads us to determine the best dietary inclusion level, avoiding undesirable production or product quality characteristics.

Abstract
The primary objective of the study was to compare the impact of heat stress on meat production characteristics of Osmanabadi and Salem Black breed goats based on changes in carcass characteristics, meat quality attributes, plasma leptin concentration, skeletal muscle myostatin and heat shock protein 70 (HSP70) gene expression patterns. The goats were randomly distributed into four groups: OSC (n = 6; Osmanabadi Control), OSHS (n = 6; Osmanabadi Heat Stress), SBC (n = 6; Salem Black Control) and SBHS (n = 6; Salem Black Heat Stress). The animals were slaughtered at the end of the study and their meat characteristics were assessed. This study established the impact of heat stress on a wide variety of carcass and meat quality characteristics in OS and SB goat breeds. The results from the study also provided some crucial evidence for a better resilience capacity of Salem Black breed as compared to Osmanabadi goats in maintaining the meat production during heat stress. The study also established plasma leptin and HSP70 genes to be the ideal biomarkers to reflect the impact of heat stress on meat characteristics in indigenous goats.

Abstract
The slaughter and meat quality traits of 20-month-old wool (Merino), dual-purpose (Dohne Merino and South African Mutton Merino [SAMM]) and mutton (Dormer) type sheep were compared. Average live weights of SAMM and Dormer sheep were 23% heavier than those of Dohne Merinos which were 28% heavier than Merinos. Fat depths at the thirteenth rib and lumbar regions of Merino and Dohne Merino sheep were lower than those of SAMM and Dormer sheep. The cooking loss, drip loss and shearing value from the M. longissimus dorsi did not differ between breeds. The initial juiciness and sustained juiciness of meat from Merinos were rated significantly lower by sensory analysis. Meat from Dohne Merino was rated significantly more tender for the attribute first bite. It was demonstrated that Dormer and SAMM sheep had heavier but fatter carcasses than Merinos and Dohne Merinos, with differences in meat quality between breeds.

Abstract
The objectives of this experiment were to determine the effects of 2 different breeds (BR), Boer and Kiko, and 4 post-weaning harvest ages (HA; Days 0, 29, 56, and 85) on growth, carcass traits, blood metabolites, and lipogenic gene expression. Forty-eight goat (Capra hircus) kids (BW = 23.9 ± 1.50 kg; 3 to 4 mo) were used in a 2 × 4 factorial arrangement of treatments. Goats were stratified by BW within BR and randomly assigned to 4 HA. Kids were born between March 15 and April 7 to purebred does, and were represented by at least 3 purebred sires within each BR. They were fed a grain/hay (80:20) diet once per day. At designated HA, randomly pre-assigned goats (n = 6) from each BR were transported to the Meat Science Lab at Mississippi State University, Starkville, MS, and were harvested. There were no interactions (P > 0.10) between BR and HA. Boer tended (P = 0.08) to have greater initial BW, final BW (P = 0.05), and G/F ratio (P = 0.05). Although the 80:20 grain/hay diet was reinforced by adjusting DMI, both BR had similar total DMI, Boer kept that ratio, while Kiko consumed more (P = 0.001) hay (70:30, grain/hay) and had more (P = 0.001) DMI when expressed as g/kg BW. Boer tended to have greater transportation shrink (P = 0.07), HCW (P = 0.08), and cold carcass weights (CCW; P = 0.08), with greater (P = 0.001) carcass fat. No differences (P > 0.10) were observed in carcass shrink, dressing percentage, 12th rib fat thickness, and LM area between the 2 BR. When expressed as percentage empty BW, carcass bone was similar (P = 0.25), whereas muscle percentage (P = 0.02) was greater for Kiko and fat percentage was greater (P = 0.001) for Boer. Fat as a percentage of CCW remained relatively similar (P > 0.10) for both BR for the 2nd and 3rd HA. Differences were more evident (P = 0.01) at the 4th HA. Boer reached targeted harvest weight (29 kg) at the 3rd HA, while fat deposition continued (P = 0.01) during the 4th HA. Breed had no effect (P > 0.10) on meat color (L*, a*, b*) but HA affected (P = 0.001) all color values. Boer had similar 3-hydroxyl-3-methylglutaryl-CoA synthase mRNA abundance, but was greater (P < 0.03) in acetyl CoA carboxylase compared with Kiko. There was no difference (P = 0.52) in total serum fatty acids (FA, mg/mL) between the 2 BR. As animals aged, their total serum FA increased (P < 0.05) and changed to an undesirable profile. Kiko had a greater (P = 0.02) percentage of muscle and less (P = 0.001) fat in the carcass. We concluded that different BR might need different harvest endpoints and feed input according to consumer acceptability.

Abstract
Bucklings (n = 275) from a complete diallel of Boer, Kiko, and Spanish meat goats were slaughtered at 7 mo of age (4 mo postweaning) to evaluate genetic effects on carcass yield. Breed of sire did not affect (P > 0.05) live, carcass, and primal weights. Conversely, breed of dam was a consistently significant source of variation for carcass weight traits. Kiko dams produced kids with heavier (P < 0.05) live, carcass, and primal weights than Boer dams. Weights from Spanish dams were intermediate to Boer and Kiko with the significance of differences varying by trait. Cold carcass dressing percent was affected (P < 0.01) by breeds of sire and dam. Boer sires decreased (P < 0.05) dressing percent compared with Kiko and Spanish sires. Dressing percent was also less (P < 0.01) from Boer dams than from Kiko dams; Spanish dams were intermediate and did not differ (P > 0.05) from Boer or Kiko. Subjective conformation scores for muscularity were affected (P < 0.01) by breeds of sire and dam. Boer-sired kids had better (P < 0.01) live scores than Kiko-sired kids. Progeny of Boer dams had better (P < 0.05) live scores than progeny of Spanish dams. Boer-sired kids also had better carcass scores (P < 0.05) than Kiko-sired and Spanish-sired kids. Breed differences for primal cut proportions were negligible. Proportional boneless meat yields did not vary (P > 0.05) by breeds of sire or dam. Direct effects of Boer were negative for carcass weight, dressing percent, and shoulder weight and positive for proportional leg weight. Direct effects of Kiko were positive for carcass weight and shoulder weight and negative for proportional leg weight. Direct effects of Spanish did not differ (P > 0.10) from 0 for any trait tested. Heterosis levels were similar among breed pairings. Heterosis was substantial (P ≤ 0.05) for live, carcass, and primal weights (5 to 9%) but not for dressing percent, proportional boneless meat yield, or primal weight proportions (<2%). Significant genetic variation was observed among goat breeds for carcass yield traits. Dam breed was more influential than sire breed. Boer germplasm was not superior to Kiko or Spanish germplasm for carcass yield when semi-intensively managed on humid, subtropical pasture. Results emphasize the importance of comparative breed evaluations to provide industry with reliable information on carcass yield among goat genotypes.

Abstract
Carcass data base of 164 Creole male goats was used in order to provide factual data on the carcass conformation. Standardised procedures of carcass measuring and cutting were followed. The European official grid of light lamb is implemented for meat goat in the French West Indies and included five levels. Weights of carcass, cuts and tissues, quality scores and linear measurements were analysed. Feeding system, age at slaughter and weight were taken into account for statistical analysis. There were significant differences among carcass conformation classes (CC) for many traits except for the fat score, leg length and compactness ratio (carcass width on length): 2.2, 34.5 cm and 0.30 on average, respectively. The values of chilled carcass weight and yield and the carcass linear measurements steadily increased until conformation class 4 or 5: 6.7 to 11.2 kg, 49% to 55% and 52.4 to 58.0 cm carcass length. For the weights of carcass cuts, significant differences appeared between two groups: classes 1 and 2 vs. classes 3, 4 and 5. Regardless of the carcass weight, the distribution of prime cuts remained similar. The indices calculated on a weight basis (kg/cm), either for the carcass or the leg, increased significantly (P<0.01): with 54% and 63% difference between the two extreme classes, respectively. The muscle, bone and fat proportions in the shoulder did not vary between CC with 0.72, 0.22 and 0.06, respectively. Corresponding traits in leg were 0.74, 0.23 and 0.03; the last two were different (P<0.05) from class 1 to class 5. The muscle/bone ratios calculated either in shoulder or in leg ranged from 3.1 to 3.6 (P>0.05).

Abstract
Studies were conducted to determine the effects of feeding regimens on growth and carcass quality of the Creole goat, a genotype indigenous to the Caribbean. Forty kids weighing 9.0 +/- 1.2 kg of BW were reared indoors after weaning. Four supplement amounts were compared (10 kids per treatment): the G0 group received the basal diet (tropical forage, 8.8 MJ of ME and 108 g of CP/kg of DM) without concentrate, whereas the G100, G200, and G300 groups were offered 130, 230, and 310 g/d of concentrate (13.6 MJ of ME and 209 g of CP/kg of DM), respectively, in addition to the basal diet. The kids were slaughtered according to the standard procedure at 22 to 24 kg of BW for assessment of carcass traits and meat quality. Total DMI increased significantly, from 51 to 78 g/kg of BW(0.75), for G0 to G300 kids, whereas their ADG doubled from 42 to 84 g/d (P < 0.01; P < 0.01, respectively). The G:F values reached 125 to 130 for the G200 and G300 diets and were satisfactory compared with literature values. The carcass weight and dressing percentage (P < 0.01) increased from group G0 to G300, from 9 to 13 kg and from 42 to 51%, respectively. The proportions of the different cuts (related to the carcass weight) did not vary by diet. The conformation score increased significantly (P < 0.05) among the 4 groups from an average score of 3.2 to 4.0 (score/5). There was a significant effect (P < 0.01) of supplement amount on the accumulation of internal fat tissues: the kidney fat weight increased from 113 to 253 g from the G0 to the G300 group. Regardless of the feeding level and amount of internal fat, the carcasses had an acceptable fat cover score, which remained less than 2.6 (score/5). A significant effect was not observed for the ultimate pH and the main color variables of the meat. The cooking loss and the shoulder DM content varied (P < 0.05) with the supplement amount. By increasing the nutritional density of the diet, it was possible to obtain well-conformed and heavy carcasses, with no excessive fattening. Indigenous Creole goats have potential as meat animals when fed to gain more than 80 g/d. The optimal supplement supply with good-quality grass would be approximately 3.69 MJ of ME/d in our conditions. Further studies are required on meat sensory parameters and fatty acid profiles.

Abstract
This experiment was conducted to determine the effect of high levels of supplemental Cu (as (CuSO4).5H2O) on the serum lipid profile and carcass traits of goat kids. Fifteen Boer x Spanish wether goat kids (BW = 21.3 +/- 0.7 kg) were housed in individual pens and were assigned randomly to 1 of 3 treatments. Treatments consisted of 1) control (no additional supplemental Cu), 2) 100 mg of Cu/d, and 3) 200 mg of Cu/d. Copper sulfate was placed in gelatin capsules and inserted into the esophagus via a balling gun before the morning feeding. Animals were fed a high-concentrate (70:30 grain:hay) diet for 112 d. Serum lipid profile was determined on d 14 and 112, and BW was recorded after 4-h withdrawals from feed and water. After 112 d, animals were slaughtered, and carcass traits were measured. The left half of 12 carcasses and 9th to 11th rib sections from the right side of 15 carcasses were dissected into separable soft tissue and bone portions. The soft tissue portion was analyzed for moisture, ether extract, CP, and ash. Average daily feed intake decreased (linear; P = 0.05), and G:F increased (quadratic; P = 0.02) in the 100 mg of Cu/d group. Serum cholesterol and triglycerides did not change (P > 0.10); however, NEFA decreased (linear; P = 0.01) as supplemental Cu increased. No differences were observed (P > 0.10) in HCW, chilled carcass weight, or kidney and pelvic fat; however, 12th rib fat (linear; P = 0.01) and adjusted fat thickness (linear; P = 0.03) decreased as Cu supplementation increased. No differences (P > 0.10) in LM area were observed; however, percentage of boneless closely trimmed retail cuts increased (linear; P = 0.04) as Cu supplementation increased. The moisture (%) of the 9th to 11th rib sections increased (linear; P = 0.03), ether extract (%) decreased (linear; P = 0.02), and CP and ash (%) tended to increase (linear; P = 0.09 and 0.06, respectively) as Cu supplementation increased. Carcass composition measured using the left half of the carcass confirmed the values obtained through the 9th to 11th rib sections. Results of this study indicate that supplemental Cu can alter the serum lipid profile, carcass characteristics, and carcass composition of goat kids.

Abstract
Crossbred wether goats (n = 24; 50% Boer, 6 per diet) initially averaging 27.4+/-0.4 kg were fed either wheat middlings (wheat midds), soybean hulls (soyhulls), or corn gluten feed at 1% BW (as-fed) along with orchardgrass hay (10.7% CP) offered to ad-libitum consumption for 72 d followed by 5 d total fecal collection. The Control (hay) diet was supplemented with 5.7% soybean meal to bring total dietary protein to 12.5%, by-products were brought to a higher Ca:P ratio with limestone or dicalcium phosphate to make total dietary Ca:P 1.5:1, and soybean meal was added to soyhulls to bring them up to 17% CP (wheat midds = 17% and corn gluten feed = 21% CP). Total DMI (916 g/d+/-57 or 3.2%+/-0.2 BW) did not differ (P > 0.92) among treatments. Initial BW (P = 0.25), final BW (P = 0.48), and ADG (P = 0.56) did not differ for the four treatments. Carcass weight was greater (P = 0.05) for goats fed soyhulls (16.0 kg) or wheat midds (15.6 kg) as compared with goats fed the hay diet (14.5 kg), with carcass weight from goats fed corn gluten feed being intermediate (15.3 kg, SEM = 0.3 kg). Carcass grade did not differ (P = 0.80) and averaged 5.42+/-0.4. Dressing percentage tended (P = 0.12) to be lower for goats fed the hay diet (46.4%) compared with soyhull (48.3%), corn gluten feed (48.3%), or wheat midd (48.8%) diets (SEM = 0.7). Ruminal pH was highest (P < 0.01) for goats fed the hay diet (6.52) and lowest for goats fed wheat midds (6.23) with soyhull (6.41) and corn gluten feed diets (6.35) being intermediate (SEM = 0.05). Digestibility of DM (70.1+/-2.5%), OM (70.3+/-2.6%,), CP (75.5+/-2.0%), GE (68.5+/-2.7%), NDF (68.1+/-3.0%), ADF (65.4+/-3.4%), cellulose (70.1+/-2.9%), and lignin (31.1+/-8.2%) did not differ (P > 0.15). Total ruminal VFA did not differ (86.0+/-6.1 mM, P = 0.59), but acetate:propionate ratio was higher (P < 0.01) for hay (3.1) and soyhull diets (3.3) than for corn gluten feed (2.4) and wheat midd diets (2.4, SEM = 0.11). Ruminal ammonia (mg/100 mL) was lower (P < 0.01) for goats fed hay (15.4) and soyhull diets (11.6) than those fed corn gluten feed (25.2) and wheat midd diets (23.0, SEM = 1.35). Ruminal pH was lower for goats fed the byproducts, but remained above 6. Serum urea nitrogen (mg/100 mL) averaged 21.0+/-1.0 (P = 0.11) with soyhulls tending to be lowest (19.3) and corn gluten feed tending to be highest (22.8). Soyhulls, corn gluten feed, and wheat midds appear to be viable feed ingredients for meat goat diets.
