Abstract
The social and cultural significance of food is woven into every aspect of our dietary behaviour, and it contributes to our complex interaction with food. To find order within this complexity scientists often look for dietary 'universals' - phenomena or basic principles that guide our food choice and meal size, irrespective of wider context. One such idea is that taste characteristics provide a signal for dietary composition (e.g., sweet taste signals carbohydrate). Others have suggested that behaviour is guided by learning and is based on associations that form between the flavour of a food and its post-ingestive effects. Despite a large body of research, evidence supporting both processes is equivocal, leading some to conclude that humans are largely indifferent to food composition. Here, we argue that human abilities to gauge the nutritional composition or value of food have been underestimated, and that they can be exposed by embracing alternative methods, including cross-cultural comparisons, large nutrition surveys, and the use of virtual portion-selection tools. Our group has focused on assessments of food choice and expected satiety, and how comparisons across everyday foods can reveal non-linear relationships with food energy density, and even the potential for sensitivity to micronutrient composition. We suggest that these abilities might reflect a complex form of social learning, in which flavour-nutrient associations are not only formed but communicated and amplified across individuals in the form of a cuisine. Thus, rather than disregarding sociocultural influences as extraneous, we might reimagine their role as central to a process that creates and imbues a 'collective dietary wisdom.' In turn, this raises questions about whether rapid dietary, technological, and cultural change disrupts a fundamental process, such that it no longer guarantees a 'nutritional intelligence' that confers benefits for health.

Abstract
Many reports show that non-human animals have the ability to select foods based on their micronutrient composition. However, it is unclear whether humans also have this ability, and we have lacked appropriate methods to investigate this question. In response to this challenge, we developed an approach that derives evidence from patterns of choices across a range of food images. In two studies (Study 1, N = 45; Study 2, N = 83) adults selected one of two pairs of fruits and vegetables in a series of trials (N = 210). Consistent with variety seeking, they preferred 'varied' over 'monotonous' pairs (same-food pairs were less attractive). However, and even after controlling for explicit nutritional knowledge (Study 2) and food energy density (Study 1 and 2), we observed a significant tendency to select pairings that offered: i) greater total micronutrient intake and ii) greater 'micronutrient complementarity' (MC), i.e., a broader range of micronutrients. In a separate analysis, a similar pattern was observed in two-component meals (e.g., steak and fries) drawn from a large national nutrition survey in the UK (1086 records). Specifically, the MC of these meals was greater than would be predicted by chance (p < .0001) and when a meal provided an excess of micronutrients (>100% daily recommended amount) then this occurred less often than by chance (p < .0001), i.e., 'micronutrient redundancy' was avoided. Together, this work provides new evidence that micronutrient composition influences food choice (a form of 'nutritional wisdom') and it raises questions about whether nutritional requirements are otherwise met through dietary 'variety seeking'. In turn, it also exposes the potential for a complexity in human dietary decision making that has not been recognised previously.

In defense of elemental currencies: can ecological stoichiometry stand as a framework for terrestrial herbivore nutritional ecology? Oecologia 2022; 199:27-38. Abstract
Nutritional ecologists aim to predict population or landscape-level effects of food availability, but the tools to extrapolate nutrition from small to large extents are often lacking. The appropriate nutritional ecology currencies should be able to represent consumer responses to food while simultaneously be simple enough to expand such responses to large spatial extents and link them to ecosystem functioning. Ecological stoichiometry (ES), a framework of nutritional ecology, can meet these demands, but it is typically associated with ecosystem ecology and nutrient cycling, and less often used to study wildlife nutrition. Despite the emerging zoogeochemical evidence that animals, and thus their diets, play critical roles in nutrient movement, wildlife nutritional ecology has not fully embraced ES, and ES has not incorporated nutrition in many wildlife studies. Here, we discuss how elemental currencies are "nutritionally, organismally, and ecologically explicit" in the context of terrestrial herbivore nutritional ecology. We add that ES and elemental currencies offer a means to measure resource quality across landscapes and compare nutrient availability among regions. Further, we discuss ES shortcomings and solutions, and list future directions to advance the field. As ecological studies increasingly grow in spatial extent, and attempt to link multiple levels of biological organization, integrating more simple and unifying currencies into nutritional studies, like elements, is necessary for nutritional ecology to predict herbivore occurrences and abundances across regions.

Abstract
Intraspecific feeding choices comprise a large portion of herbivore foraging decisions. Plant resource quality is heterogeneously distributed, affected by nutrient availability and growing conditions. Herbivores navigate landscapes, foraging not only according to food qualities, but also energetic and nutritional demands. We test three non-exclusive foraging hypotheses using the snowshoe hare (Lepus americanus): (1) herbivore feeding choices and body conditions respond to intraspecific plant quality variation; (2) high energetic demands mitigate feeding responses; and (3) feeding responses are inflated when nutritional demands are high. We measured black spruce (Picea mariana) nitrogen, phosphorus and terpene compositions, as indicators of quality, within a snowshoe hare trapping grid and found plant growing conditions to explain spruce quality variation (R2 < 0.36). We then offered two qualities of spruce (H1) from the trapping grid to hares in cafeteria-style experiments and measured their feeding and body condition responses (n = 75). We proxied energetic demands (H2) with ambient temperature and coat insulation (% white coat) and nutritional demands (H3) with the spruce quality (nitrogen and phosphorus content) in home ranges. Hares with the strongest preference for high-quality spruce lost on average 2.2% less weight than hares who ate the least high-quality spruce relative to low-quality spruce. The results supported our energetic predictions as follows: hares in colder temperatures and with less-insulative coats (lower % white) consumed more spruce and were less selective towards high-quality spruce. Collectively, we found variation in plant growing conditions within herbivore home ranges substantial enough to affect herbivore body conditions, but energetic stats mediate plant-herbivore interactions.

Abstract
We determined whether sheep discriminate among different mineral supplements containing P and Mg and if they modify their selection as a function of the basal diet received. Forty lambs were offered four-way choices among inorganic sources of P and Mg: magnesium oxide in its coarse 1) C-MgO and granular 2) MgO forms and magnesium phosphate: 3) Mag33 (33% Mg and 2.7% P), and 4) MGP (25% Mg and 15% P), and two-way choices between MGP and each of the other minerals, and between MgO and C-MgO (baseline). Subsequently, lambs were randomly assigned to four groups (10 lambs/group) and fed rations such that the levels of Mg and P were low (LMg_LP), adequate (NMg_NP), low in Mg and adequate in P (LMg_NP), or adequate in Mg and low in P (NMg_LP). After 29 d, choice tests (post-deficiency) were repeated. During baseline, lambs ate and preferred Mag33 > C-MgO = MGP > MgO (P < 0.05). This pattern remained during post-deficiency tests, but lambs in LMg_LP and LMg_NP increased their preference for MGP and C-MgO, respectively, whereas lambs in NMg_LP increased their preference for C-MgO and MGP relative to baseline (P < 0.05). The serum concentrations of P and Mg increased after preference tests, and preference for MgO and MGP in low-Mg groups increased as the serum concentration of Mg declined (P < 0.05). Thus, lambs discriminated among different minerals and some groups modified their preferences based on the basal diets received, which rectified mineral imbalances.

This pattern remained during four-way Post-deficiency tests, but lambs in LCa_LP, LCa_NP, and NCa_LP showed increased preference for MCP, MGP, and DCP, respectively, relative to other groups and Baseline (p < .05). Some mineral preference also changed in relation to serum concentration of P and Ca. Thus, lambs discriminated among minerals and some groups modified their preferences from Baseline to Post-deficiency choice tests, likely influenced by mineral needs, which in turn contributed to rectify mineral imbalances.

Abstract
That the perceptual world of human taste is made up of four or five basic taste qualities is commonly accepted in the field of taste perception. Nevertheless, critics identify two issues that challenge this view. First, some argue that the term "basic tastes" cannot be precisely defined and, thus, is scientifically meaningless. Others accept the concept of basic tastes but believe there are many more. I argue here that it is most parsimonious to employ a perceptual definition of basic taste. I conclude that there are indeed four basic tastes (with a potential fifth) that constitute the building blocks of the human taste experience. Evidence cited includes historical writings from Chinese, Indian, and Greek cultures, ethnopharmacological research, and modern biological and psychological investigations. These perceptual "data" provide strong and convincing evidence, collected over thousands of years and from many different cultures, that the human perceptual world consists of the same basic taste qualities.

Abstract
Grazing cattle deficient in phosphorus (P) often seek out and chew bones, apparently to obtain dietary P. To investigate this phenomenon heifers naïve to P deficiency were either fed a P-deficient diet (LowP) or grazed P-adequate pasture (AdeqP), and preference tests examined their attraction to weathered bones or a control of wood. During Phase 1 (Days 1–145), the LowP heifers developed severe P deficiency and pica, but demonstrated little attraction to weathered bones. During Phase 2 (Days 146–155), heifers were allowed to interact with and to chew a variety of weathered bones. After this experience LowP heifers were more attracted to bones during Phase 3 (Days 156–166) than during Phase 1 (P < 0.05), and more attracted than AdeqP heifers during either phase. Subsequently, in Phase 4 (Days 167–171), LowP heifers were more attracted than AdeqP heifers (P < 0.01) to weathered bones than to a control of wood, and in Phase 5 (Days 172–176) to bones with more extended weathering. During Phase 6 (Days 177–182), attraction was reduced when bones were placed inside a cloth bag. The olfactory constituents from weathered bones were dominated by aliphatic aldehydes and ketones, consistent with long-chain fatty acid breakdown. It was concluded that attraction of P-deficient cattle to seek and ingest bones is primarily a learned response. Smell, taste and visual appearance all appear to be important cues for attraction. Pica is likely important in causing P-deficient cattle to investigate unusual materials, including bones, resulting in cattle learning by making an association between bone chewing and P ingestion.

Abstract
Rodents consume solutions of phosphates and pyrophosphates in preference to water. Recently, we found that the preference for trisodium pyrophosphate (Na3HP2O7) was greater in T1R3 knockout (KO) mice than wild-type (WT) controls, suggesting that T1R3 is a pyrophosphate detector. We now show that this heightened Na3HP2O7 preference of T1R3 KO mice extends to disodium phosphate (Na2HPO4), disodium and tetrasodium pyrophosphate (Na2H2PO4 and Na4H2PO4), a tripolyphosphate (Na5P3O10), a non-sodium phosphate [(NH4)2HPO4], and a non-sodium pyrophosphate (K4P2O7) but not to non-P salts with large anions (sodium gluconate, acetate, or propionate). Licking rates for Na3HP2O7 are higher in T1R2 KO mice than WT controls; Na3HP2O7 preference scores are increased even more in T1R2 KO mice and T1R2+T1R3 double KO mice than in T1R3 KO mice; preference scores for Na3HP2O7 are normal in T1R1 KO mice. These results implicate each subunit of the T1R2+T1R3 dimer in the behavioral response to P-containing taste compounds.

Abstract
Feeding behaviour, through both diet selection and food intake, is the predominant way that an animal attempts to fulfil its metabolic requirements and achieve homeostasis. In domestic herbivores across the wide range of production practices, voluntary feed intake is arguably the most important factor in animal production, and a better understanding of systems involved in intake regulation can have important practical implications in terms of performance, health and welfare. In this review, we provide a conceptual framework that highlights the critical involvement and interconnections of two major regulatory systems of feeding behaviour: the reward and the homeostatic systems. A review of the literature on ruminants and rodents provides evidence that feeding behaviour is not only shaped by homeostatic needs but also by hedonic and motivational incentives associated with foods through experiences and expectations of rewards. The different brain structures and neuronal/hormonal pathways involved in these two regulatory systems is evidence of their different influences on feeding behaviours that help explain deviation from behaviour based solely on satisfying nutritional needs, and offers opportunities to influence feeding motivation to meet applied goals in livestock production. This review further highlights the key contribution of experience in the short (behavioural learning) and long term (metabolic learning), including the critical role of fetal environment in shaping feeding behaviour both directly by food cue–consequence pairings and indirectly via modifications of metabolic functioning, with cascading effects on energy balance and body reserves and, consequently, on feeding motivation.

Abstract
Understanding what determines feeding behaviour in herbivores is essential to optimise the use of forages in breeding systems. Herbivores can evaluate foods by associative learning of their pre-ingestive characteristics (taste, odour, etc.) and their post-ingestive consequences. Post-ingestive consequences are acknowledged as influencing intake and food choices, but the role of pre-ingestive characteristics is still being debated. Our experiment was designed to test their separate effects on daily dry matter intake (DMI), intake patterns and short-term choices in sheep by crossing the nature of the hay orally consumed (o) ad libitum, lucerne (L) or grass (G), with the nature of the hay introduced into the rumen (r), L or G, at a rate of half the total amount of hay received the day before. We applied four treatments, Go/Gr, Go/Lr, Lo/Gr and Lo/Lr, to test the effects of (i) post-ingestive consequences with similar pre-ingestive characteristics (Go/Gr v. Go/Lr; Lo/Gr v. Lo/Lr) and (ii) pre-ingestive characteristics with similar post-ingestive consequences at the end of the feeding period (Go/Lr v. Lo/Gr). Six rumen-fistulated sheep underwent all the treatments over 11-day periods in a latin square design. Eating time was restricted to 6 h/day, intraruminal introductions were performed just before food offer and choice tests were conducted after food removal. For similar pre-ingestive characteristics, DMI increased when L hay was introduced into the rumen rather than G (P < 0.05), possibly owing to a lower fill effect of L due to its lower NDF content and higher rumen degradability. The increased DMI resulted from longer eating time when G was orally consumed (149 v. 192 min, P < 0.05), whereas it resulted from higher intake rate with L (4.8 v. 6.1 g/min, P < 0.05). For similar post-ingestive consequences at the end of the feeding period (Go/Lr and Lo/Gr), DMI were similar (P > 0.05). Pre-ingestive characteristics or palatability per se did not therefore influence daily intake, although they influenced eating patterns. Pre-ingestive characteristics also greatly influenced short-term choices in favour of the hay that was not previously consumed, independently of any post-ingestive influence. This study confirms the effects of post-ingestive consequences on daily intake, but demonstrates that these variations are obtained by different behavioural adjustments under the influence of pre-ingestive characteristics. Preference for novelty, regardless of post-ingestive consequences, thus suggests that sheep may seek a diverse diet more for pleasure than for functional purposes, with implications for animal welfare.
