Characteristics of developmental changes in the kinetics of glucose and urea in Japanese Black calves: Comparison with Holstein calves1

Beef Nutritional Characteristics, Fat Profile and Blood Metabolic Markers from Purebred Wagyu, Crossbred Wagyu and Crossbred European Steers Raised on a Fattening Farm in Spain

A high intramuscular fat content characterizes Wagyu (WY) cattle breed. Our objective was to compare beef from WY, WY-by-Angus, or Wangus (WN) steers with European, Angus-by-Charolais-Limousine crossbred steers (ACL), considering metabolic biomarkers pre-slaughtering and nutritional characteristics, including health-related indexes of the lipid fraction. The fattening system with olein-rich diets and no exercise restriction included 82 steers, 24 WY, 29 WN, and 29 ACL. The slaughter ages and weights were (median and interquartile range) 38.4 mo.-old (34.9-40.3 mo.) and 840 kg (785-895 kg) for WY; for WN, 30.6 mo. (26.9-36.5 mo.) and 832 kg (802-875 kg), and for ACL steers, 20.3 mo.-old (19.0-22.7 mo.) and 780 kg (715-852 kg). Blood lipid-related metabolites, except for non-esterified fatty acids (NEFA) and low-density level cholesterol (LDL), were higher in WY and WN than in ACL, while glucose was lower in WY and WN. Leptin was higher in WN than in ACL. Pre-slaughtering values of plasma HDL underscored as a possible metabolic biomarker directly related to beef quality. The amino-acid content in beef did not differ among experimental groups, except for more crude protein in ACL. Compared to ACL, WY steers showed higher intramuscular fat in sirloin (51.5 vs. 21.9%) and entrecote (59.6 vs. 27.6%), more unsaturated fatty acids in entrecote (55.8 vs. 53.0%), and more oleic acid in sirloin (46 vs. 41.3%) and entrecote (47.5 vs. 43.3%). Compared to ACL entrecote, WY and WN showed better atherogenic (0.6 and 0.55 vs. 0.69), thrombogenicity (0.82 and 0.92 vs. 1.1), and hypocholesterolemic/hypercholesterolemic index (1.9 and 2.1 vs. 1.7). Therefore, beef's nutritional characteristics depend on breed/crossbred, slaughtering age and cut, with WY and WN entrecote samples showing a healthier lipid fraction.

Effects of Bacillus licheniformis and Combination of Probiotics and Enzymes as Supplements on Growth Performance and Serum Parameters in Early-Weaned Grazing Yak Calves

Early weaning is an effective strategy to improve cow feed utilization and shorten postpartum intervals in cows; however, this may lead to poor performance of the weaned calves. This study was conducted to test the effects of supplementing milk replacer with Bacillus licheniformis and a complex of probiotics and enzyme preparations on body weight (BW), size, and serum biochemical parameters and hormones in early-weaned grazing yak calves. Thirty two-month-old male grazing yaks (38.89 ± 1.45 kg body weight) were fed milk replacer at 3% of their BW and were randomly assigned to three treatments (n = 10, each): T1 (supplementation with 0.15 g/kg Bacillus licheniformis), T2 (supplementation with a 2.4 g/kg combination of probiotics and enzymes), and a control (without supplementation). Compared to the controls, the average daily gain (ADG) from 0 to 60 d was significantly higher in calves administered the T1 and T2 treatments, and that from 30 to 60 d was significantly higher in calves administered the T2 treatment. The ADG from 0 to 60 d was significantly higher in the T2- than in the T1-treated yaks. The concentration of serum growth hormone, insulin growth factor-1, and epidermal growth factor was significantly higher in the T2-treated calves than in the controls. The concentration of serum cortisol was significantly lower in the T1 treatment than in the controls. We concluded that supplementation with probiotics alone or a combination of probiotics and enzymes can improve the ADG of early-weaned grazing yak calves. Supplementation with the combination of probiotics and enzymes had a stronger positive effect on growth and serum hormone levels, compared to the single-probiotic treatment with Bacillus licheniformis, providing a basis for the application of a combination of probiotics and enzymes.

Comparison of Pure and Crossbred Japanese Black Steers in Growth Performance and Metabolic Features from Birth to Slaughter at a Spanish Fattening Farm

Simple Summary

Cattle growth performance is a determinant of beef production. Nowadays, customers demand specialized, high-quality beef products produced according to stringent health and welfare standards. Intramuscular fat, or marbling, improves beef quality, and the Japanese Black (Wagyu) is the breed with the highest rates of marbling. Wagyu steers are reared under specific conditions in Japan, which may differ from the conditions in other countries, and these differences may affect animal well-being and, therefore, growth rates and beef quality. The current study shows that purebred Wagyu and crossbred Wagyu-by-Angus steers that were raised at a cow–calf operation and fattening system in Spain with no exercise restriction, high welfare, and a local diet high in olein content showed appropriate growth and fattening rates, health status, and metabolic development. Wagyu crossbred steers did not show substantially faster growth than purebred Wagyu animals, so they may not be as profitable as purebred Japanese Black in this type of production system.

Abstract

Japanese Black (Wagyu) cattle produce high-quality beef. However, whether Wagyu steers can be profitably raised under conditions different than the traditional Japanese ones remains unclear. From 2018 to 2020, we raised 262 Wagyu purebred steers, 103 Wagyu-by-Angus (Wangus) crossbred steers, and 43 Angus-by-European (ACL) crossbred steers on a Spanish farm with high welfare standards and a locally sourced, high-olein diet. Factors and factors’ interactions impacting steer growth were analyzed using generalized linear models. ACL steers grew faster than the other two groups, with Wangus showing intermediate fattening and muscle development. Average daily weight gains (kg/day) were 0.916 for Wagyu, 1.046 for Wangus, and 1.293 for ACL during the weaning to growing period, and 0.628 for Wagyu, 0.64 for Wangus, and 0.802 for ACL during the growing to fattening phase. ACL showed the lowest marbling rates. Wagyu and Wangus usually showed higher cholesterol, triglycerides, and high-density lipoprotein than ACL. ACL calves may experience greater stress at weaning, as suggested by higher glucose, lactate, and β-hydroxybutyrate than the other groups. The results suggest that Wagyu and Wangus steers showed adequate growth, health, and metabolic development in this type of production system, with Wagyu purebreds probably being more profitable than Wangus crossbreeds.

Influence of body condition score at calving on the metabolic status and production performance of Murrah buffaloes (Bubalus bubalis) during the transition period

Objective

The purpose of this study was to evaluate the influence of body condition score (BCS) at calving on the metabolic status of female Murrah buffaloes in the transition period.

Methods

Thirty-seven pregnant buffaloes (multiparous) were selected and monitored during the transition period based on their body condition score and on the estimated calving date. Two groups were formed: i) buffaloes with a BCS>3.5 (n = 17); this group was classified and named ‘high BCS at calving’ (HBCS); and ii) buffaloes with a BCS≤3.5 (n = 20); this group was classified and named ‘low BCS at calving’ (LBCS). All animals were monitored during the last 30 days of pregnancy and the first 70 days post-calving and kept in the same environment and under the same feeding and management conditions. Mean values for BCS at calving were 2.98±0.9 (mean±standard error of the mean [SEM]) and 4.21±0.9 (mean±SEM) for the HBCS and LBCS groups, respectively.

Results

The HBCS group showed higher milk fat content (p = 0.007) and milk fat yield (p = 0.027) and a higher concentration of milk urea nitrogen (p = 0.001) than LBCS buffaloes, which in turn had a lower urine pH value (p = 0.033) than HBCS buffaloes in the pre-calving period (7.86 for HBCS vs 7.76 for LBCS). The HBCS animals had a higher concentration of erythrocytes (p = 0.001) and hematocrit (p = 0.012) post-calving and a higher hemoglobin concentration (p = 0.004) pre-calving.

Conclusion

Buffaloes during the transition period exhibited some variations in the oxidative stress related to their metabolic status. After calving, buffaloes with a high BCS at calving and greater lipid mobilization have a more marked alteration in oxidative status, but improved production performance.

Desempenho e parâmetros sanguíneos de bezerros em sistema de desaleitamento precoce suplementados com probiótico de bactérias ruminais

RESUMO Vinte bezerros mestiços da raça Holandês x Jersey, distribuídos em blocos completos casualizados, foram utilizados para determinar o efeito do fornecimento de probiótico de bactérias ruminais sobre o desempenho e os parâmetros sanguíneos de bezerros leiteiros em sistema de desaleitamento precoce. Os animais foram submetidos ao tratamento controle ou ao fornecimento via oral de 2g de probiótico/dia durante o aleitamento. Os bezerros receberam 6 litros de sucedâneo lácteo por dia divididos em duas refeições diárias e foram desaleitados de forma gradual na 6ª semana de vida, entretanto, as variáveis foram coletadas até a 10ª semana. O consumo de concentrado inicial e o escore fecal foram registrados diariamente. Semanalmente foram realizadas pesagens e medidas corporais como, altura de cernelha, largura de garupa e perímetro torácico. Foram realizadas colheitas de sangue nas semanas, 2, 4, 6, 8 e 10, 2h após o primeiro aleitamento, para determinação de concentrações plasmáticas de glicose, proteína total, albumina, β-hidroxibutirato e cortisol. A suplementação de probiótico não afetou o consumo de concentrado, o peso, o ganho de peso, e as medidas corporais dos animais. Não houve efeito sobre o escore fecal entre os tratamentos. Os parâmetros sanguíneos não foram alterados em resposta ao fornecimento do probiótico, apenas a concentração de cortisol, que foi maior nos animais suplementados. O fornecimento de probiótico de bactérias ruminais não favorece o desempenho e o metabolismo de bezerros leiteiros em sistema de desaleitamento precoce.

Blood biochemical values in Japanese Black calves in Kagoshima Prefecture, Japan

To obtain blood biochemical basic data of Japanese Black calves in Kagoshima Prefecture, Japan, blood samples were obtained from 582 clinically healthy calves on 27 farms. Calves were divided into three stages: the suckling stage (between 14 and 90 days of age, n=191), the early growing stage (between 91 and 180 days of age, n=200) and the late growing stage (between 181 and 270 days of age, n=191). The mean concentration of total cholesterol, triglyceride, nonesterified fatty acids, calcium and zinc, and the mean activities of γ-glutamyltransferase and alkaine phospatase in the suckling stage were significantly higher than those in the early and late growing stages (P<0.01). The mean concentration of total protein, albumin and globulin increased gradually with growing. The mean concentration of beta-hydroxybutyrate in the suckling stage was below 150 µmol/l, however, it elevated above 400 µmol/l in the early and late growing stages. The mean concentration of copper concentration was above 70 µg/dl in all stages. The mean concentration of zinc was between 90 and 110 µg/dl in all stages. These results suggest that the blood biochemical values of Japanese Black calves vary with growing stages, and the blood parameters obtained in this study are considered useful as indices for health management of Japanese Black calves.

Essential oils for dairy calves: effects on performance, scours, rumen fermentation and intestinal fauna

The first cause of death of dairy calves is often diarrhea which is mainly caused by pathogenic bacteria, which can result in excessive use of antibiotics. However, facing the increase concern by the industry and consumers, the use of antibiotics not only to control pathogens, but also to manipulate growth, has become a challenge. Alternative additives, such essential oils, have the potential to decrease antibiotic use, without reducing performance or increasing mortality of dairy calves. The objective of this study was to evaluate the use of a commercial blend of essential oils, incorporated into the calf starter and/or milk replacer to monitor the effect on overall calf performance, fecal scores and rumen fermentation parameters. A total of 30 Holstein calves received 6 l/day of a liquid diet, consisting of a commercial milk replacer containing 20% CP : 15% fat (EE). Calves had free choice access to water and calf starter. Weaning occurred at week 8, and calves were followed until the 10th week of age. Calves were assigned to one of the three treatment groups in a randomized block design.

TREATMENTS

(1) control without essential oils supplementation (C); (2) essential oils blend in the milk replacer at 400 mg/kg (MR) and (3) essential oils blend in the milk replacer (200 mg/kg) and starter feed (200 mg/kg) (MRS). From the 2nd week, calves were weighed and body measurements were taken, while concentrate intake and fecal scores were monitored daily. Blood samples were drawn weekly for determination of glucose and β-hydroxybutyrate. Fecal samples were collected weekly and analyzed for lactic acid bacteria and Enterobacteria; and ruminal fluid for determination of pH, short chain fatty acids, ammonia-N and counts of amylolytic and cellulolytic bacteria, and protozoa. Performance, fecal scores and intestines microorganisms were not affected by the essential oils supplementation. Ruminal and blood parameters were also not affected, with the exception the rumen ammonia-N concentration, with higher values when essential oils were supplemented in a combination of milk replacer and starter feed. Most of the evaluated parameters were affected by age of calves, mainly as a response to the increase in concentrate intake as animals' aged. Essential oils are promising substitutes for antibiotics. However, the dose and routes of administration deserve further studies, allowing a better animal performance and health to be achieved.

Energy expenditure, urea kinetics, and body weight gain within a segregating resource family population

Beef and dairy cattle represent divergent metabolic types that disseminate nutrients into either meat or milk and differ in nutrient accretion. To investigate nutrient flow and turnover in an animal model combining beef and dairy cattle, a crossbred experiment has been started. An F(2) resource population was generated from Charolais (beef breed) sires and German Holstein (dairy breed) cows as P(0) founders by consistent use of embryo transfer to establish the F(1) and F(2) generations, which accordingly comprised half- and full-sib offspring. In 64 bulls of 5F(2) families, dry matter intake and growth performance were measured monthly, and carcass composition was determined after slaughtering at 18 mo of age. Energy expenditure and urea kinetics were investigated via stable isotope tracer techniques using an intravenous single bolus dose of sodium [(13)C]bicarbonate [2.5 μmol/kg of body weight (BW), 99 atom% (13)C] at 8 and 18 mo of age and of [(15)N]urea (0.28 mg/kg of BW, 99 atom% (15)N) at 8 mo of age, respectively. Insulin responses were measured via glucose tolerances tests at the age of 8 mo. The results revealed significant differences between families for growth performance, energy expenditure, and urea kinetics. In summary, low energy expenditure was associated with high average body mass gain and high insulin response. A greater urea loss was associated with reduced muscle protein in carcass. In addition, corresponding half-sib and full-sib sisters from bulls with highest growth rate indicated highest milk production. In conclusion, we have demonstrated that differences in energy expenditure and urea kinetics result in differences in average daily gain and carcass traits and vice versa in F(2) crossbred bulls with common beef and dairy genetic backgrounds.
