A summary review of carcass cutability data comparing primal value of immunologically and physically castrated barrows

The effects of dietary net energy on grow-finish performance and carcass characteristics of male market pigs managed with immunological castration (Improvest)

The objective was to determine the effects of dietary net energy (NE) during the grow-finish period on live performance and carcass characteristics of intact male pigs managed with immunological castration (Improvest) compared with physically castrated (PC) male pigs. The 101-d study began when 1,008 pigs (504 intact male pigs and 504 PC male pigs; 10 wk old) were allocated by weight to 48 pens with 21 intact males or 21 PC males per pen. Three dietary NE treatments were fed to pigs using five dietary phases (dietary programs were formulated according to standardized ileal digestible lysine requirements of Improvest males or PC males) to provide an average of 2,212 kcal/kg (low NE), 2,337 kcal/kg (medium NE), or 2,462 kcal/kg (high NE). The experiment was designed and analyzed as a 2 × 3 factorial with main effects of Improvest management and NE. For the overall study period, there were no significant interactions between Improvest management and NE (P ≥ 0.19) for average daily feed intake (ADFI), average daily gain (ADG), or gain:feed (G:F). There were also no significant interactions between Improvest management and NE (P ≥ 0.06) for carcass characteristics. Improvest males consumed less feed (5.3% lower ADFI; P < 0.01), grew faster (5.1% greater ADG; P < 0.01), and were more efficient (11.2% greater G:F; P < 0.01) compared with PC males. Hot carcass weight (HCW) did not differ (P = 0.16) between Improvest males and PC males (attributed to 1.6 percentage unit lower dressing percentage for Improvest males; P < 0.01); however, Improvest males were leaner (0.9 mm less backfat and 0.65% greater predicted lean yield; P < 0.01) compared with PC males. For the overall study period, pigs fed low NE and medium NE diets consumed 7.5% and 4.6% more feed (P < 0.01) than pigs fed high NE diets, respectively, and pigs fed low NE diets grew 1.7% slower (P < 0.02) than pigs fed medium NE and high NE diets. This resulted in pigs fed low NE diets having 4.4% lower G:F compared with pigs fed medium NE and 8.6% lower G:F compared with pigs fed high NE diets (P < 0.01). Pigs fed low NE had 3.0 kg lighter (P < 0.01) HCW compared with medium NE, while high NE had intermediate HCW that did not differ from the other two treatments. Overall, typical Improvest response levels for live performance and carcass characteristics when compared with PC males were achieved for each of the NE treatments evaluated in this study.

Effect of immunocastration and housing conditions on pig carcass and meat quality traits

The present study investigated the effects of immunocastration and housing conditions on carcass, meat, and fat quality traits. Immunocastrates (IC, n = 48), entire (EM, n = 48), and surgical castrates (SC, n = 48) male pigs were reared under three different housing conditions. The conditions were standard (n = 36), enriched (n = 36, twice as much space as standard and additional outdoor access), or standard with repeated social mixing (n = 72). Pigs of the IC group were vaccinated at the age of 12 and 22 wk. The animals were slaughtered in four batches, balanced for sex category and housing, at the age of 27 wk reaching 124.7 ± 1.0 kg. Immunocastration led to increased fat deposition (i.e., thicker subcutaneous fat at different anatomical locations, more leaf fat, fatter belly in IC than EM, P < 0.05) but did not affect muscularity traits. As a result, EM exhibited higher and SC lower (P < 0.05) carcass leanness than IC. Fatty acids composition of either subcutaneous or intramuscular fat (IMF) agreed with general adiposity, that is, IC were intermediate between EM and SC exhibiting the lowest and highest fat saturation (P < 0.05), respectively. Compared to SC, EM exhibited higher (P < 0.05) levels of muscle oxidation and collagen content than SC, with IC taking an intermediate position in the case of the level of peroxidation and collagen content, or closer to SC as regards to oxidation of muscle proteins (i.e., carbonyl groups). Meat quality (including marbling score, cooking loss, subjective color redness, and chroma) of IC was similar to EM, and both differed (P < 0.05) from SC. However, IC and SC had less (P < 0.05) tough meat than EM, consistent with protein oxidation. The effect of housing was less evident. Mixing of pigs resulted in lower (P < 0.05) carcass weight and fatness in all sex categories with lower (P < 0.05) oleic and higher (P < 0.05) arachidonic acid in IMF of EM.

TECHNICAL NOTE: A method for detection of differences in cook loss and tenderness of aged pork chops cooked to differing degrees of doneness using sous-vide

The objective was to determine the ability to detect differences in cook loss and Warner-Bratzler shear force (WBSF) values between chops aged for differing time periods and cooked to varying degrees of doneness with in a sous-vide style cooker. Loins from pigs (HCW = 96 kg) humanely slaughtered at the University of Illinois Meat Science Laboratory were separated between the 10th and 11th rib into anterior and posterior sections. The posterior section was cut into 6 separate 2.54-cm-thick chops. The middle 4 chops were randomly designated for aging of 3 d and cooked to 63 °C, aged 7 d and cooked to 63 °C, aged 14 d and cooked to 63 °C, or aged 14 d and cooked to 71 °C. Chops were cooked by placing them in a water bath with an immersion circulator set to the desired end-point temperature for 90 min. Cook loss was calculated for each chop by measuring initial and final weight, and accounting for packaging weight. Four cores measuring 1.25 cm in diameter were cut parallel to the muscle fibers from each chop and analyzed for WBSF. Data were analyzed using a 1-way ANOVA. Least squares means were separated using the probability of difference option in the MIXED procedure of SAS. Among chops cooked to 63 °C, chops aged 3 d has less (P < 0.01) cook loss than those aged 7 d, and chops aged 7 d had less (P < 0.01) cook loss than those aged 14 d. Among chops aged for 14 d, chops cooked to 71 °C had greater (P < 0.001) cook loss than chops cooked to 63 °C. Differences in tenderness were also detected between aging periods. Among chops cooked to 63 °C, chops aged 3 d required more (P = 0.02) force to shear than those aged 7 d, but chops aged 7 d did not differ (P = 0.15) from those aged 14 d. Chops aged 14 d and cooked to 71 °C required (P < 0.0001) more force than those aged 14 d and cooked to 63 °C. Overall, these data indicate that sous-vide is an acceptable cooking method for use in experiments as expected differences in cook loss and WBSF were detected in chops aged to differing time points or cooked to differed degrees of doneness.

Evaluation of alternative fabrication specifications to increase gross value of pork carcasses

Modifying fabrication specifications of domestic pork carcasses to reflect product specifications in key export markets may increase gross value for U.S. pork. Changes in specifications may also yield value-added cuts that increase demand for U.S. pork in both export and domestic markets. The objective was to evaluate differences in value of carcasses fabricated using either typical U.S. cutting specifications, or alternative specifications. Paired left and right sides (30 sides total; n = 15) were weighed and cut into primal and subprimal pieces according North American Meat Institute (NAMP, DOM) or alternative-style specifications (ALT). Alternative-style carcasses were separated into shoulder (4^th/5^th rib separation), loin, belly, and ham (sirloin-on) primals. Alternative-style shoulders were fabricated into a cellar-trimmed (CT) butt, triceps brachii (cushion), boneless picnic, and a brisket. Carcass values for all three pricing scenarios were calculated using the USDA Agriculture Marketing Service Carlot Report values from the weeks of April 5, 2013, to April 7, 2017. Value for the pork brisket was estimated based on relative value of the beef brisket compared to the beef shoulder clod (NAMP #114) resulting in a value of $2.485/kg for the pork brisket. Comparisons between fabrication styles and value of each side were made using a paired T-test. Whole bone-in loin yields of ALT carcasses were 6.23 units less (P < 0.0001) than DOM carcasses. Similarly, yields from trimmed and squared bellies of ALT carcasses were 0.83 units less than (P ≤ 0.01) DOM carcasses. In contrast, trimmed shoulders of ALT carcasses were 3.81 units greater (P < 0.0001) and hams were 3.39 units greater (P < 0.0001) than DOM carcasses. Despite reductions in yield of loins and bellies, ALT carcasses were numerically $1.29 (P = 0.17) and $0.66 (P = 0.56) more valuable than DOM carcasses in the 4 yr average and best pricing scenarios, respectively. Alternative-style carcasses were $1.99 (P = 0.03) more valuable than DOM carcass when using the most depressed pricing scenario. Fabricating pork carcasses using alternative-style specifications reduced the yield, and therefore the value, of the loin and belly compared with DOM carcasses. However, added value from the pork brisket and CT butt recuperated this value. Therefore, alternative-style fabrication methods may increase gross carcass value in some pricing scenarios.
