Abstract
The study goal was to determine the effects of a fast (FAS) or slow (SLW) incremental rate of concentrate feeding and corn processing method during the early postpartum period on lactational performance, body reserves, blood metabolites, and milk fatty acid (FA) profile. Forty multiparous Holstein cows were used in a randomized block design with a 2 × 2 factorial arrangement of treatments. Treatment diets were either a FAS [1.0 kg of dry matter (DM)/d] or SLW (0.25 kg of DM/d) incremental rate of concentrate feeding (up to 12 kg of DM/d) with either dry ground corn (DGC) or steam-flaked corn (SFC) as the primary starch source in concentrate. Treatments were fed from 5 to 64 d postpartum. The basal diet consisted of forage, soybean meal, and 5 kg/d concentrate in the postpartum period. Throughout the experiment, dry matter intake (DMI) and milk yield were measured daily, and milk components, body condition score, and body weight were recorded at 16-d intervals, whereas blood metabolites and milk FA profile were measured at 16 and 32 d in milk. The incremental rate of concentrate feeding interacted with corn processing method to affect plasma concentration of glucose with greater glucose in SFC treatment compared with DGC in cows fed with the FAS strategy. Cows fed FAS and SFC had a greater total DMI than those fed SLW and DGC counterparts (22.8 versus 22.1 kg and 22.7 versus 22.1 kg, respectively), and also SFC increased yield of actual milk compared with the DGC counterpart (42.7 versus 41.6 kg). The milk fat and energy-corrected milk yields were not different among treatments whereas milk protein yield was greater when SFC was fed. Greater incremental rate of concentrate feeding tended to increase milk lactose yield during the first 64 d of lactation. The loss of body condition score increased when cows were fed SLW for the entire period and plasma nonesterified fatty acids and β-hydroxybutyrate concentrations increased with the SLW strategy. The proportions of total trans 18:1 and trans-11 18:1 FA in milk fat were higher in cows fed FAS. However, feeding SLW enhanced milk de novo and mixed FA proportions compared with FAS, whereas the proportions of milk FA were not affected by corn grain processing method. The incremental rate of concentrate feeding had significant effects on DMI, milk yield, and body reserve changes. Although feeding SFC instead of DGC had benefits on DMI and milk yield at 48 and 64 d postpartum, treatments did not interact to affect production responses when cows were fed with the SLW strategy.

Abstract
Five Holstein cows were distributed in a 5x5 latin square design to assess the effect of replacement levels of dry ground corn grain (DGCG) by high moisture corn silage (HMCS) on intake, total nutrient digestibility and plasma glucose, according to the following treatments: 1) 100% DGCG; 2) 75% DGCG and 25% HMCS; 3) 50% DGCG and 50% HMCS; 4) 25% DGCG and 75% HMCS; 5) 100% HMCS. The experiment lasted 70 days, divided into five phases of 14 days each. The digestibility was obtained using chromic oxide (Cr2O3) as the indicator. Fecal samples were collected twice daily and blood samples were collected on the last day of each period before the first meal (0h) and 2h, 4h, 6h and 12h after the meal. There was no effect (P>0.05) on the intake of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF) and starch. The total apparent digestibility of DM, crude protein (CP), NDF and ADF were not affected (P>0.05) by the treatments, as well as the plasma glucose concentration. However, there was a decreased linear effect (P<0.05) for the protein intake and increased linear effect (P<0.05) for starch digestibility, as the level of HMCS was increased in the diets.

Abstract
Barley grain (Hordeum vulgare L.) is characterized by a thick fibrous coat, a high level of ß-glucans and simply-arranged starch granules. World production of barley is about 30 % of that of corn. In comparison with corn, barley has more protein, methionine, lysine, cysteine and tryptophan. For ruminants, barley is the third most readily degradable cereal behind oats and wheat. Due to its more rapid starch fermentation rate compared with corn, barley also provides a more synchronous release of energy and nitrogen, thereby improving microbial nutrient assimilation. As a result, feeding barley can reduce the need for feeding protected protein sources. However, this benefit is only realized if rumen acidity is maintained within an optimal range (e.g., > 5.8 to 6.0); below this range, microbial maintenance requirements and wastage increase. With a low pH, microbial endotoxines cause pro-inflammatory responses that can weaken immunity and shorten animal longevity. Thus, mismanagement in barley processing and feeding may make a tragedy from this treasure or pearl of cereal grains. Steam-rolling of barley may improve feed efficiency and post-rumen starch digestion. However, it is doubtful if such processing can improve milk production and feed intake. Due to the need to process barley less extensively than other cereals (as long as the pericarp is broken), consistent and global standards for feeding and processing barley could be feasibly established. In high-starch diets, barley feeding reduces the need for capacious small intestinal starch assimilation, subsequently reducing hindgut starch use and fecal nutrient loss. With its nutritional exclusivities underlined, barley use will be a factual art that can either matchlessly profit or harm rumen microbes, cattle production, farm economics and the environment.

Abstract
Ten Holstein cows in midlactation were used in a 5 x 5 replicated Latin square design with 21-d periods to determine the effects of feeding ground or steam-flaked broom sorghum (Sorghum bicolor) and ground barley (Hordeum vulgare L.) on lactation performance and nutrient digestibility. Diets were fed as total mixed ration and consisted of 46% forage and 54% concentrate (DM basis). Treatment diets included ground barley, ground barley plus ground broom sorghum, ground broom sorghum, ground barley plus steam-flaked broom sorghum, and steam-flaked broom sorghum. Yield of fat-corrected milk was 2.3 kg greater for cows fed diets containing steam-flaked broom sorghum than for cows fed its ground form (24.4 vs 22.1 kg) and was 2.8 kg greater for cows fed diets containing a blend of steam-flaked broom sorghum plus ground barley than for cows fed ground sorghum (24.9 vs 22.1 kg). Yields and percentages of milk fat, protein, SNF, total solids, and apparent digestibility of crude protein were greater for cows fed steam-flaked broom sorghum and ground barley vs. ground broom sorghum. Including steam-flaked rather than ground broom sorghum in diets significantly increased fecal pH (7.10 vs 6.87) and improved efficiency of feed conversion (1.26 vs 1.15). Feeding steam-flaked broom sorghum alone or with ground barley compared with ground sorghum or the blend of ground barley and ground broom sorghum decreased plasma urea nitrogen increased glucose in plasma. Results of this study showed that feeding steam-flaked broom sorghum compared with ground broom sorghum could supply a more efficient source of energy for lactating cows.

Abstract
The effect of starch source and phytic acid (PA) supplementation on phosphorus (P) partitioning and ruminal phytase activity was evaluated in eight midlactation cows (four ruminally cannulated). Cows were randomly assigned to treatments in replicated 4 x 4 Latin squares with four 18-d periods. Diets included dry ground corn (DG) or steam-flaked corn (SF), with no supplemental P (L; 0.33% P) or supplemental purified PA (0.44% P) to provide additional P from a nonmineral source. Total collection of milk, urine, and feces was conducted on d 16 to 18 of each period. Ruminal fluid was sampled and ruminal pH measured every 8 h on d 17 and 18. Milk yield was unaffected by starch source, despite lower DMI by cows fed SF. Cows fed SF had increased DM digestibility compared with those fed DG, and tended to have higher efficiency of milk yield (1.40 vs. 1.35 kg of milk/kg of DMI). Intake and fecal excretion of P was lower in cows fed SF than in cows fed DG. In cows fed SF, milk P as a percentage of P intake increased compared with cows fed DG. Ruminal pH was unaffected by diet, but milk fat content was lower for cows fed SF. Milk yield, DMI, and feed to milk ratio were not affected by supplementation with PA. Although cows fed PA had increased P intake compared with cows fed low P diet, increased P excretion resulted in no differences in apparent P digestibility. Phosphorus balance tended to be higher in cows fed PA, but milk P as a percentage of intake was reduced. The interaction of starch source and PA affected ruminal phytase activity. Altering starch source to improve efficiency of milk yield in lactating dairy cows may help reduce P losses from dairy farms.

Abstract
Twenty cows, including five fitted with rumen cannulae, were used to study the influence of corn processing and frequency of feeding on milk yield and ruminal fermentation characteristics. Cows were assigned to five treatments in a 5 x 5 Latin square experiment. Each period was 3 wk. Cows were fed 45% forage and 55% grain in a total mixed ration. Diets contained 35% corn either coarsely ground and fed once a day (1x), finely ground (FGC) fed 1x, steam-flaked (SFC) fed lx, FGC fed four times a day (4x), or SFC fed 4x. Processing of corn and frequency of feeding had no influence on dry matter intake. Digestibility of starch was increased 6 and 3 percentage units by feeding SFC corn compared with coarsely and finely ground corn, respectively. Cows fed SFC or FGC produced 4% more milk with lower fat content compared with coarsely ground corn. Increasing the feeding frequency did not improve milk fat content. The fat-corrected milk yield was not different among treatments. Feeding SFC resulted in a low acetate-to-propionate ratio in the rumen fluid than FGC. Cows fed SFC produced 45 and 115 g more milk protein per cow/d than cows fed FGC or coarse, respectively. With the value of increased milk protein observed in this study, it would be more economical to feed SFC or finely ground corn to dairy cows compared with coarse ground. The breakeven price of flaking corn in this study was $32 and $12/metric tonne compared with coarse and FGC, respectively. Based on a survey conducted by the authors, the price of flaking corn in the United States ranged between $7 to $22/metric tonne during year 2000.

Abstract
Objectives were to determine net release or uptake of a-amino N, ammonia N, and urea N across portal-drained viscera, liver, splanchnic, and mammary tissues of lactating Holstein cows (n = 6; 109 +/- 9 d in milk) fed alfalfa hay-based total mixed rations (TMR) containing 40% steam-rolled or steam-flaked corn grain. The TMR were offered at 12-h intervals in a crossover design. Blood samples were obtained from indwelling catheters in portal, hepatic, and mammary veins and mesenteric or costo abdominal arteries, every 2 h for each cow and diet. Steam-flaked compared with steam-rolled corn greatly increased in vitro starch hydrolysis (56 vs. 34%). Daily intake of dry matter (18.4 +/- 0.4 kg/d), starch, N, and net energy for lactation by cows were not altered by processing corn; neither were daily yield of milk (29.1 +/- 0.7 kg/d), fat-corrected milk, nor fat-corrected milk per dry matter intake. Steam-flaking tended to increase percent milk protein (2.97 vs. 2.82%; P = 0.07), but not yield, and decrease percent lactose (4.83 vs. 4.94) but not yield. Portal and hepatic blood flows were not affected by diet, nor were net absorption of alpha-amino N and ammonia N. Steam-flaking compared with steam-rolling increased urea N cycling to portal-drained viscera (212 vs. 87 g/d) by 140%, estimated mammary uptake and extraction ratio of alpha-amino N. Flaking versus rolling of corn improved N utilization in dairy cows by increasing urea cycling to the gut and uptake of a-amino N by the mammary gland. Higher mammary uptake of alpha-amino N (78 vs. 50 g/d) by dairy cows fed steam-flaked corn tended to increase milk protein content and may explain the previously observed effects of cows fed steam-flaked versus steam-rolled corn.

Abstract
Nineteen lactation trials (43 grain processing comparisons) are summarized, in addition to digestibility and postabsorptive metabolism studies. The net energy for lactation (NEL) of steam-flaked corn or sorghum grain is about 20% greater than the NEL for dry-rolled corn or sorghum. Based on lactational performance, steam-flaked sorghum grain is of equal value to steam-flaked corn, and steam-flaked corn is superior to steam-rolled corn. Steam-flaking of corn or sorghum compared to steam-rolling of corn or dry-rolling of corn or sorghum consistently improves milk production and milk protein yield. This result is because of a much greater proportion of dietary starch fermented in the rumen, enhanced digestibility of the smaller fraction of dietary starch reaching the small intestine, and increased total starch digestion. Steam-flaking increases cycling of urea to the gut, microbial protein flow to the small intestine, and estimated mammary uptake of amino acids. Steam-rolling compared to dry-rolling of barley or wheat did not alter total starch digestibilities in two trials, one with each grain source. Lactation studies with these processing comparisons have not been reported. Most cited studies have been with total mixed rations (TMR) and alfalfa hay as the principal forage. Additional studies are needed with lactating cows fed steam-flaked corn or sorghum in TMR containing alfalfa or corn silage. Optimal flake density of steam-processed corn or sorghum grain appears to be about 360 g/L (approximately 28 lb/bu).

Abstract
Five primiparous Holstein cows (55 d in milk) that were fitted with ruminal and duodenal cannulas were used in a 4 x 5 incomplete Latin square to determine the effects of blends of steam-flaked and dry-rolled corn on site and extent of nutrient digestion and milk yield and composition. Diets were fed as total mixed rations and consisted of 45% forage and 55% concentrate; each diet contained 27% corn grain. Dietary treatments were composed of blends of dry-rolled and steam-flaked corn in ratios of 100:0, 67:33, 33:67, and 0:100. Intake of dry matter; digestibilities of dry matter, organic matter, acid detergent fiber, cellulose, neutral detergent fiber, fatty acids, and N; and microbial efficiency were unaffected by diet. Ruminal, postruminal, and total tract digestion of starch increased linearly, and starch passage to the duodenum decreased linearly, as the proportion of dry-rolled corn in the diet decreased. Ruminal propionate and valerate increased linearly, and acetate, butyrate, isovalerate, and the acetate to propionate ratio decreased linearly, as proportions of dry-rolled corn in the diet decreased; however, no changes in total volatile fatty acid concentrations in ruminal fluid were observed. Ruminal fluid pH was similar across diets. A decrease in dry-rolled corn decreased ruminal ammonia N and plasma urea N linearly. Milk yield and composition, as well as milk N fractions, were similar across diets. Although changes in fatty acid composition of milk fat were small, linear decreases in percentages of trans-C16:1 and cis-9- and cis-10-C18:1, as well as a linear increase in the percentage of C18:2 occurred as the proportion of dry-rolled corn in the diet decreased. An increased proportion of dry-rolled corn in the diet decreased digestion of starch in the rumen, and patterns of volatile fatty acid concentrations shifted accordingly. However, no effects on lactational parameters were observed.

Abstract
Five types of processed corn were compared to determine the effects of processing on lactational performance and nutrient digestibilities in dairy cows. Forty lactating Holstein cows averaging 160 +/- 60 d in milk were randomly divided into five groups on the basis of pretreatment milk yields and were fed diets containing 40% corn grain for 56 d. Treatments were 1) finely ground corn, 2) coarsely ground corn, 3) steam-flaked corn at a low density, 4) steam-flaked corn at a medium density, and 5) steam-rolled corn. Cows fed the diet containing steam-flaked corn at a medium density had a higher milk yield (37.1 kg/d) than did cows fed the diets containing coarsely ground corn, steam-flaked corn at a low density, or steam-rolled corn; cows fed the diet containing finely ground corn had an intermediate milk yield (35.5 kg/d). Efficiency of feed utilization was greater, and dry matter intake was lower, for cows fed the diet containing finely ground corn than for cows fed the other diets. The fat content of milk was higher for cows fed the diets containing coarsely ground corn and steam-rolled corn than for cows fed the diet containing steam-flaked corn at a medium density. Milk protein and SNF contents and yields of protein, lactose, and SNF did not differ among diets. Apparent starch digestibilities in the total digestive tract were lower for diets containing coarsely ground corn (87.4%) and steam-rolled corn (91.3%) than for the other diets (X = 96.3%). Milk yield was highest for cows fed the diet containing steam-flaked corn with a medium density. Fine grinding resulted in the greatest efficiency of feed utilization.

Abstract
The objective of this study was to determine the effects of steam-rolled versus steam-flaked corn in the diet with or without the addition of a culture of Aspergillus oryzae on the performance of high producing dairy cows during hot summer weather. Thirty-two Holstein cows averaging 92 (+/- 60) d in milk were fed a pretreatment diet for 21 d followed by a 70-d experimental period in a completely randomized block design with a 2 x 2 factorial arrangement of treatments. Diets were 1) steam-flaked corn plus 3 g/d of A. oryzae, 2) steam-flaked corn, 3) steam-rolled corn plus 3 g/d of A. oryzae, and 4) steam-rolled corn. Intake was not affected significantly by grain processing or addition of A. oryzae. Compared with effects from steam-rolled corn in the diet, steam-flaked corn increased milk production; percentage of milk protein; yields of milk protein, lactose, and SNF; and the efficiency of conversion of dry matter to fat-corrected milk. Addition of A. oryzae tended to increase protein percentage and increased the percentage of SNF. Changes in body weight and body condition score tended to be higher, and somatic cell count tended to be lower, for cows fed the flaked corn than for cows fed the rolled corn. No interactions were significant. Treatments did not affect rectal temperatures or respiration rates; however, high mean values measured at 1400 h once weekly indicated thermal stress. These data show improved milk production from cows fed steam-flaked corn but not from those fed diets supplemented with A. oryzae.
