Effect of Yeast Culture (Saccharomyces cerevisiae) on Broilers: A Preliminary Study on the Effective Components of Yeast Culture

The value of yeast culture (YC) as alternative feed additives in poultry farming has been proven. YC is a nutrient-rich and complex micro-ecological fermentation product containing various metabolites. However, the major or specific effective components of YC and their importance in poultry farming are unknown. Herein, we screened the “effective ingredients” of YCs obtained from different fermentation times based on metabolomics and animal feeding experiments. Glycine, fructose, inositol, galactose, and sucrose were identified as potential effective metabolites in YCs. These findings provide an important basis for objective, accurate, and quick evaluation of the quality of YC products, as well as a scientific understanding of their functions.

Abstract

This study was aimed at determining the effective ingredients of yeast culture (YC) for animal breeding. First, the contents of YCs obtained from various fermentation times were detected using gas-chromatography. A total of 85 compounds were identified. Next, 336 Arbor Acres (AA) broilers were randomly divided into seven experimental groups and fed a basal diet, diets supplemented with YCs obtained at various fermentation times, or SZ1 (a commercial YC product). A significant increase in body weight gain (BWG) and a significant decrease in feed conversion ratio (FCR) of AA broiler chicks were observed with YC supplementation. Additionally, most of blood and immunological indices were improved with YC supplementation. According to the production performance and the results of multivariate analysis, glycine, fructose, inositol, galactose, and sucrose were found as the potential effective compounds of YC and were involved in metabolic pathways including glycine, serine, and threonine metabolism. Supplementation with diets based on combinations of effective compounds improved weight gain, feed efficiency, serum immunoglobulin A, and immunoglobulin G, but decreased blood urea concentration. These findings suggest YCs as effective and harmless feed additives with improved nutritional properties for broiler chicks.

Relationships between dietary fatty acid composition and either melting point or fatty acid profile of adipose tissue in broilers

Data on the fatty acid composition of the diet and that of the adipose tissue in broilers were collected from the literature. The linear regression between the dietary and the adipose tissue unsaturated to saturated fatty acids ratio (U/S ratio) was calculated because the U/S ratio of adipose tissue fat determines its melting point, which is an indicator of the consistency of poultry fat. For 54 data points from three different experiments, the linear correlation coefficient of the relationship between dietary and adipose tissue U/S ratio was 0.77. The regression equation for linoleic acid in adipose tissue as a function of dietary linoleic acid was calculated. The linoleic acid content of adipose tissue was expressed as weight percentage of total fatty acids. Intake was expressed as either weight percentage of total fatty acids or as energy percentage of total dietary metabolizable energy. The linear correlation coefficients were 0.68 and 0.78 as based on 116 or 91 data points from 15 or 12 different experiments. Significant correlations were also found for α-linolenic acid. The linoleic acid content of adipose tissue was found to be correlated (r=0.87) for 25 data points with that in consumable broiler meat, which may affect serum cholesterol concentrations in humans. With the help of the regression formulas presented it may be possible to formulate broiler diets in relation to consumer health and product quality.

Comparison of the antioxidant properties of emu oil with other avian oils

The antioxidant properties of emu oil were compared with oils derived from the fat of other avian species. We first examined their free radical scavenging activity against the 2,2-diphenyl-1-picryl hydracyl radical. The concentration of emu oil in the test solution that caused 50% neutralisation (IC50) was variable (24.5 ± 5.9 mg/mL, range 5.3–55.4 mg/mL), but similar to values obtained for other ratites (10.7 ± 5.9 mg/mL). In contrast, the IC50 values for duck and chicken oil were much higher (118.0 ± 8.1 mg/mL). The variability in the radical scavenging activity of emu oil preparations may reflect variations in the diets of the birds, the processing protocol and/or the storage age of the oil. We also evaluated some of the ratite oils for their inhibitory capacity on human erythrocyte membrane oxidation, by measuring the reduction of the thiobarbituric acid-reactive substance (TBAR) production. Emu oil had a greater effect in decreasing TBAR production than either the ostrich or rhea oil, suggesting that it offers more protection than the other ratite oils against oxidative damage. In conclusion, we demonstrated that emu oil has both antioxidant properties in vitro and a protective role against oxidative damage in a model biological membrane system. The antioxidant or radical scavenging properties of emu oil appear to be due to minor constituents in the non-triglyceride fraction of the oil, while its high ratio of unsaturated to saturated fatty acids (UFA : SFA) offers protection against oxidative damage.

Unhydrolyzed vegetable sucrose polyester in broiler diets

Duplicate 42-d broiler studies were conducted in pens with litter on the floor, beginning with 1-d-old chicks obtained from a commercial hatchery. Seven replicate pens, each starting with 12 male and 12 female chicks, received each dietary treatment in a randomized-block design. Dietary treatments comprised 0, 0.5, 1.0, 1.5, 2.0, or 2.5% unhydrolyzed vegetable sucrose polyester (UVSP) added to the starting and finishing diets at the expense of filler. In both studies, up to 2.5% UVSP did not have a significant negative effect on body weights, daily feed intake, feed conversion, or litter moisture. In Experiment 2, average body weights were significantly greater than control for groups that received 0.5, 2.0, or 2.5% UVSP. However, the degree of shank yellowness as measured with a Minolta Chroma-meter was consistently and significantly reduced by 0.5% or more UVSP. Although xanthophyll levels were intentionally lowered somewhat to improve sensitivity (7.9 and 9.6 mg/kg for starter and finished feeds, respectively), it is obvious that the utilization of xanthophyll was reduced somewhat by UVSP. Additional pigment titration trials could provide valuable information about the levels required to overcome this effect.
