Modification of Artichoke Dietary Fiber by Superfine Grinding and High-Pressure Homogenization and Its Protection against Cadmium Poisoning in Rats. Foods 2022; 11:foods11121716. Abstract
This study was carried out to investigate the effects of superfine grinding (SP) and high-pressure homogenization (HPH) on the structural and physicochemical properties of artichoke dietary fiber (ADF), as well as the protective effects against cadmium poisoning in rats. The structural characteristics and physicochemical properties of ADF, HPH-ADF (ADF treated by HPH) and CM-ADF (ADF treated by SP and HPH) were determined, and cadmium chloride (CdCl2) was induced by exposing rats for 7 weeks. The amounts of creatinine and urea; the activities of aspartate aminotransferase (AST) and alanine aminotransferase (ALT) in serum; the quantity of red blood cells, hemoglobin, white blood cells and neutrophil proportion in blood samples; and the activity of glutathione peroxidase (GSH-Px) in liver tissue were analyzed. Hematoxylin-eosin (HE) staining was performed to analyze the tissue structure and pathology of the liver and testis. The results showed that ADF subjected to HPH and SP-HPH exhibited increased content of soluble dietary fiber (SDF) (p < 0.05). HPH and SP-HPH treatments increased oil-holding capacity (OHC), total negative charge (TNC) and heavy metal adsorption capacity (p < 0.05). The CdCl2 intervention led to a significant increase in AST, ALT, creatinine, urea, neutrophil proportion and white blood cell count, as well as a significant decrease in GSH-Px activity, red blood cell count and hemoglobin (HGB) (p < 0.05). In rats fed with ADF, HPH-ADF and CM-ADF significantly reduced creatinine, urea amounts, ALT, AST activity in serum, leukocyte count and the neutrophil ratio in blood and increased GSH-Px activity in the liver, in addition to increasing the erythrocyte count and hemoglobin count in blood (p < 0.05). H&E staining results showed that steatosis in the liver was significantly reduced, whereas testicular tissue edema was improved. These results indicate that ADF exhibited positive activity against cadmium poisoning in rats and that CM-ADF had a better protective effect than ADF and HPH-ADF. ADF has specific potential to be used in health foods or therapeutic drugs, providing a reference for the development and utilization of artichoke waste.

Improving the Antioxidant Activity and Flavor of Faba ( Vicia faba L.) Leaves by Domestic Cooking Methods. Antioxidants (Basel) 2022; 11:antiox11050931. Abstract
Faba leaves are an unusual vegetable which contain not only a range of functional phytochemicals, but also certain undesirable flavors, which limit their consumption. In this study, several cooking methods (microwaving, roasting, steaming, and boiling), which are expected to reduce the odd flavors, were evaluated in terms of both health benefit effects and odd flavor factors, including antioxidant activities and the content of non-volatile and volatile organic compounds (VOCs). A cooking time of 5 min was selected because of the high content of l-dopa (l-3,4-dihydroxyphenylalanine) and aim of reducing the undesirable flavors of the cooked faba leaves. Microwaving and steaming significantly increased the l-dopa content by 24% and 19%, respectively. Roasting specifically increased the content of flavonols, exhibiting a 28% increase of kaempferol-3-O-arabinoside-7-O-rhamnoside, representatively, whereas boiling decreased about 50% of most phytochemicals evaluated. Microwaving and steaming treatments significantly increased the antioxidant activities. The l-dopa content and antioxidant activities of the processed faba leaves were strongly positively correlated with either an R2 = 0.863 of DPPH radical scavenging activity or an R2 = 0.856 value of ABTS radical scavenging activity, showing that l-dopa was a key antioxidant. All cooking methods potentially improved the flavor of the cooked faba leaves compared with that of the fresh leaves, because they significantly reduced the contents of VOCs such as alcohols, aldehydes, and ketones. These VOCs were the main components (>90%) in the fresh leaves. Adverse aromatic hydrocarbons were newly formed by the microwaving treatment, typically producing p-xylene, which is known to be a harmful dose-dependent compound, but they were not detected in leaves processed by the other cooking methods; therefore, although microwaving efficiently increased antioxidant activity, the chemical safety of the aromatic hydrocarbons produced need further study.

Abstract
The agro-biodiversity of vegetables is threatened, posing major concerns for the future of landraces, which are of fundamental importance both for food safety and for assuring an income to small-scale farmers. To counteract such a trend, the Puglia region (southern Italy) set up a plan to recover, characterize and preserve the resources at risk of genetic erosion. In our paper, we present a case study regarding an artichoke landrace, the ‘Carciofo di Lucera’ variety, that encompasses all activities foreseen in the Puglia region’s plan which is the result of the multi-actor project “BiodiverSO”. Such a project allowed us to recover and characterize crop genetic resources and to pave the way for further actions to preserve and valorize the agro-biodiversity of local vegetables that are still present in the Puglia region. Furthermore, we collected some evidence that allowed us to backdate the origin of artichoke cultivation in the Puglia region by about two centuries and, most important of all, to recover some populations of ‘Carciofo di Lucera’. These preliminary phases were followed by the characterization of this local variety, both from the morphological and the molecular point of view, so that we can discriminate this landrace from other artichoke varieties more accurately. Eventually, we collected all the information in electronic databases and data sheets, thus providing a tool for the public administration which will be useful in the in situ conservation phase.

Abstract
The home garden is a unique human-nature interspace that accommodates a diverse spectrum of plant species and provides multiple services to households. One of the most important roles of home gardens is to shelter the agricultural plant diversity that provides for diverse and healthy nutrition, especially in rural communities. While tropical home gardens have received wide recognition due to their provisional function for the local communities, temperate and especially European home gardens have been discussed less frequently as a source of subsistence. The main objectives of the current study were to document plant species grown in Bulgarian rural home gardens and to explore related local knowledge and cultural practices that influence food plant diversity, its selection and preservation. Field work was focused on settlements situated in eight provinces in South and North-West Bulgaria. Participants representing 65 home gardens were approached through semi-structured interviews. Home gardens were found to harbor 145 cultivated and semi-cultivated plant taxa, used as food, medicinal and aromatic plants and as animal fodder. Members of the Rosaceae family were most numerous. The largest part of the garden area was occupied by vegetable crops of Solanaceae and Cucurbitaceae. In 63.1% of the studied households, the food growing area comprised more than 2/3 of the total size of the garden. Most preferred crops reflected the social and cultural importance of food self-provisioning, especially in the rural areas. The provisional role of the home gardens in regard to preparation of traditional foods and the driving forces for seed saving are discussed.

Extraseasonal Production in a Soilless System and Characterisation of Landraces of Carosello and Barattiere (Cucumis melo L.). SUSTAINABILITY 2021. Abstract
Barattiere and Carosello are typical melon (Cucumis melo L.) landraces of Puglia’s (Southern Italy) biodiversity. Their unripe fruits are locally consumed as an alternative to cucumbers (C. sativus L.) and are appreciated for their qualitative profile. Nevertheless, they are underutilized crops. For the high variability and confusing denominations, a morphological characterization is essential to discriminate and valorise landraces; additionally, it is fundamental to implement the agronomic technique to allow the cultivation outside the natural growth period (summer) by soilless cultivation. Two genotypes of Barattiere (‘Allungato’ and ‘Tondo’), two of Carosello (‘Scopatizzo’ and ‘Tomentoso’ (CAT)) and two of cucumber (‘Baby Star’ and ‘Modan’ hybrids) were vertically grown in the winter–spring period in a rockwool soilless system in a glasshouse with supplemental light. Landraces were characterized by morpho-physiological descriptors of melon; fruit biometrics and colour were analysed for all genotypes; productive parameters, leaf fluorescence, and chlorophyll content were measured. Genotypes varied in seeds, stem, leaf, fruit traits and they were andromonoecious; Carosello flowered earlier and produced more than Barattiere; CAT fruits were hairy and elongate, while other genotypes tended to rounder and glabrous fruits. Although landraces grew slower than cucumbers, both produced marketable fruits and the production of Carosello was comparable to cucumbers. In conclusion, Barattiere and Carosello have a productive potential and one vertically trained stem in a soilless system is appropriate for their extra-seasonal production.

Abstract
The leaves and seeds of the faba bean are good sources of L-3,4-dihydroxyphenylalanin (L-dopa), and are usually eaten with thermal cooking methods. However, little information is available on the effect of thermal treatments on their nutritional value. We compared the changes in color, contents of L-dopa, vitamin C (Vc), total phenolics (TP), total flavonoids (TF) and antioxidant activity after dry heating or steaming faba bean leaves and seeds. The young leaves provided higher values of all the estimate factors, regardless of the thermal treatment. Steaming significantly degraded nutritional values of the leaves, but less changed in seeds, whereas dry heat maintained these attributes. The contents of L-dopa, Vc, TP and TF were shown to have strongly positive correlations with antioxidant activity in the leaves, whereas only L-dopa content was positively correlated with antioxidant activity of the seeds. Faba leaves contained relatively high L-dopa which possessed strong antioxidant activity compared to the Vc. As L-dopa is an important contributor to the antioxidant activity of faba leaves and seeds, consuming L-dopa from leaves may provide beneficial effects not only regarding Parkinson's Disease.

Abstract
Some holoparasitic species can become cultivated plants due to their unique chemical composition. A lot of bioactive contents are characteristic for them. Holoparasites of the family Orobanchaceae are known to be an important and rich source of polyphenols, especially metabolites of the phenylethanoid glycosides (PhGs) group. However, only a minority of the species in this family have been phytochemically tested. They are reported to have multiple biological and therapeutic effects and have been used for centuries in traditional Chinese medicine. This is the first study to present phytochemical profiling for a representative of genus Phelypaea. The chemical composition and biological activity in particular organs of the parasite, P. tournefortii, were determined. The interaction with its host, Tanacetum polycephalum (Asteraceae), from different places and altitudes was also studied. We presented the determination of polyphenolic compounds with the UPLC-PDA-MS/MS method, antioxidative effects and inhibitory activities, polyphenols, and nitrates content, ABTS•+, DPPH, FRAP, as well as colour parameters. The polyphenols profile of the parasite and host were different in quality and quantity. Identification of polyphenolic compounds revealed 41 compounds, 15 in the parasite (12 phenylethanoids and 3 anthocyanins), and 26 in the host (mainly flavonoids and phenolic acids). The amount and biological activity of polyphenolic compounds present in Phelypaea was very diverse and depended on the host plant and the parasite’s organs, as well as on population altitude. The results show that P. tournefortii is a potential source of functional and pro-health components. They also direct researchers’ attention to the parasite’s organs, host, and environmental influence.

Abstract
The holoparasitic genus Cistanche (Orobanchaceae) has been the most widely used and well known genus in traditional Chinese medicine for centuries. This is the first study that reports the phytochemical profile of Cistanche armena - an endemic species from Armenia and evaluates the composition and biological activity in relation to specific organs of the parasite (flowers vs stem with tuber) and its interaction with two host species: Alhagi maurorum (Fabaceae) and Salsola dendroides (Chenopodiaceae). We identified polyphenolic compounds using the UPLC-PDA-MS/MS method and quantified the antioxidative effects; inhibitory activities; polyphenol, nitrate III and nitrate V contents; ABTS+, DPPH, and FRAP activities; and colour parameters. A total of 28 polyphenolic compounds were tentatively identified. In C. armena, 9 compounds belonged to the phenylethanoid glycosides, mainly acteoside, B-hydroxyverbascoside and echinacoside, and in its hosts, 19 compounds belonged mainly to hydroxycinnamic acid and the flavanols. The profile of polyphenols in the host species was qualitatively and quantitatively different than the profile of the compounds in the parasite; this indicates the existence of a unique pathway of compound biosynthesis in the parasite. The colour and the amount and bioactivity of the polyphenolic compounds found in Cistanche were very diverse and depended on both the host plant and their location (organs) in the parasite. The stem and tuber of Cistanche hosted by Salsola had the highest polyphenol content, which was approximately 4 times higher than that in the stem and flowers of Cistanche individuals that parasitized A. maurorum. In addition, the stem and tuber of Cistanche that parasitized S. dendroides was characterized by the highest antioxidant activity (ABTS+, DPPH and FRAP) and high inhibitory activities. Conversely, the amount of polyphenols in the host Alhagi was 12 times higher than that in S. dendroides. These results highlight the importance of C. armena as a promising source of functional and bioactive ingredients (harvested from potential cultivation, not from natural endangered localities) and also draws the attention of future researchers to an important aspect regarding the parasite organ and the host's influence on the harvested material of various parasitic herbs.

From by-Product to Unconventional Vegetable: Preliminary Evaluation of Fresh Fava Hulls Highlights Richness in L-Dopa and Low Content of Anti-Nutritional Factor. Foods 2020; 9:foods9020159. Abstract
Faba bean hulls are a by-product, generated from the processing of beans and usually disposed of as waste, utilized in some recipes of Italian traditional cuisine. In this research, a quality evaluation of faba hulls in six genotypes (four local varieties—‘Cegliese’, ‘Iambola’, ‘San Francesco’ and ‘FV5′—and two commercial ones—‘Aguadulce supersimonia’ and ‘Extra-early purple’) of faba bean (Vicia faba L. var. major Harz) for fresh consumption grown with two plant densities (4.16 and 2.08 plants m−2) was carried out. For all the measured parameters, the statistical analysis reveals that the interaction between plant density and genotype was not significant. On the other hand, independently of the genotype, the higher the plant’s density the higher was the pods’ yield per unit area, while the average percentage of hulls was of 75% with little differences between genotypes. All genotypes showed a low content of vicine (12.4 mg 100 g−1 FW), a well know favism-inducing factor, and a very high phenols content (between 443 and 646 mg 100 g−1 FW) and levo-dihydroxy phenylalanine (L-dopa—on average 170 mg 100 g−1 FW), used for the treatment of patients affected by Parkinson’s disease. In conclusion, this study highlights the good potential of faba hulls as unconventional vegetable, suggesting its use as a new functional food in the daily diet and also for patients with Parkinson’s disease.

Abstract
There are about 200 holoparasitic broomrapes (Orobanchaceae) known worldwide, however, only several species have been so far investigated phytochemically. Among Orobanche s.l. are both rare and endangered species, as well as onerous crop pests. This study aims to give a phytochemical description, both qualitative and quantitative, of six broomrape species (Orobanche and Phelipanche taxa) growing in Poland, including species that have not been tested in detail (O. caryophyllacea, O. lutea, O. picridis, and P. arenaria). Sixteen metabolites, including 14 phenylethanoid glycosides (PhGs) and 2 iridoid glycosides (IrGs), were isolated and identified using NMR spectroscopy and hydrolysis, revealing the presence of two previously undescribed PhGs in P. ramosa, named ramoside A and 2'-acetylramoside A. In addition, in the example of O. caryophyllacea, we have reported as the first occurrence of IrGs in broomrapes. Concentrations of phenylethanoids, the main constituents of broomrapes, in the studied plant material (flowering shoots with haustoria) were determined using the UHPLC-PDA method. It was found that P. ramosa has been the richest source of PhGs. In addition, the differences between broomrapes have been visualized using principal component and cluster analysis. The results of the antiradical DPPH test of 13 PhGs confirmed previous findings on the relation of the antioxidant potential with the structure of phenolic moieties - phenolic acid and phenylethanoid unit.

Abstract
The data contained in this article are strictly related to our previous article titled “A Targeted Management of the Nutrient Solution in a Soilless Tomato Crop According to Plant Needs” (Signore, A. et al. 2016). The detailed datasets regards the amount of dry matter (Table 1), the nutrient solution consumption (Table 2) and the mineral composition of plant tissues (Tables 3–7) in a soil-less tomato crop. The information contained in this article are necessary since, unlike the northern European countries, such data are generally missing for the crops in the Mediterranean environment. By correlating the parameters reported above, we were able to provide a more precise management of the nutrient solution, by providing the correct nutrient concentration into the nutrient solution in function of (i) the volume of water absorbed, (ii) the growth rate and (iii) the nutrient concentration in tomato plant. Finally, the more precise management of the nutrient solution allowed discharging a lesser amount of water and nutrients into the environment, improving the sustainability of the crop.
