Abstract
BACKGROUND Microgreens constitute dietary sources of bioactive compounds imparting numerous health benefits and enhancing sensory experience. They can be successfully cultivated in soilless systems where biostimulants can be easily integrated as seed-priming and post-germination agents improving the sustainability of a crop's final production. Compared to an untreated control, three priming agents (a commercial legume-derived protein hydrolysate (A250), a novel protein hydrolysate derived from peanut biomass (H250) and hydropriming (H2O)) were applied to Komatsuna and Mibuna seeds grown as microgreens and compared for their effects on yield parameters, mineral composition, ABTS and FRAP antioxidant capacity, carotenoid concentration and phenolic compounds. RESULTS Significant effects of the main experimental factors and their interactions were identified on antioxidant capacity. Compared to the control and hydropriming, the highest ABTS and FRAP values were observed in Mibuna with the A250 and H250 treatments, respectively. Additionally, the H250 treatment increased the total concentrations of phenolic acid derivatives and flavonoid derivatives in Mibuna and Komatsuna, in tune with the levels of total flavonoids. Concerning mineral composition, the highest concentrations in both species were those of phosphorus and nitrate. CONCLUSION These results highlight the potential of select plant-based biostimulants as priming agents to enhance the antioxidant capacity, nutrient content and bioactive compound content, thus further increasing their functional and nutritive quality. In the light of this, the possibility of reducing the application of fertilizers by promoting a green transition for the intensive production of microgreens could subsequently be evaluated. © 2024 Society of Chemical Industry.

Abstract
Introduction Long-duration missions in outer Space will require technologies to regenerate environmental resources such as air and water and to produce food while recycling consumables and waste. Plants are considered the most promising biological regenerators to accomplish these functions, due to their complementary relationship with humans. Plant cultivation for Space starts with small plant growth units to produce fresh food to supplement stowed food for astronauts' onboard spacecrafts and orbital platforms. The choice of crops must be based on limiting factors such as time, energy, and volume. Consequently, small, fast-growing crops are needed to grow in microgravity and to provide astronauts with fresh food rich in functional compounds. Microgreens are functional food crops recently valued for their color and flavor enhancing properties, their rich phytonutrient content and short production cycle. Candidate species of microgreens to be harvested and eaten fresh by crew members, belong to the families Brassicaceae, Asteraceae, Chenopodiaceae, Lamiaceae, Apiaceae, Amarillydaceae, Amaranthaceae, and Cucurbitaceae. Methods In this study we developed and applied an algorithm to objectively compare numerous genotypes of microgreens intending to select those with the best productivity and phytonutrient profile for cultivation in Space. The selection process consisted of two subsequent phases. The first selection was based on literature data including 39 genotypes and 25 parameters related to growth, phytonutrients (e.g., tocopherol, phylloquinone, ascorbic acid, polyphenols, lutein, carotenoids, violaxanthin), and mineral elements. Parameters were implemented in a mathematical model with prioritization criteria to generate a ranking list of microgreens. The second phase was based on germination and cultivation tests specifically designed for this study and performed on the six top species resulting from the first ranking list. For the second selection, experimental data on phytonutrients were expressed as metabolite production per day per square meter. Results and discussion In the final ranking list radish and savoy cabbage resulted with the highest scores based on their productivity and phytonutrient profile. Overall, the algorithm with prioritization criteria allowed us to objectively compare candidate species and obtain a ranking list based on the combination of numerous parameters measured in the different species. This method can be also adapted to new species, parameters, or re-prioritizing the parameters for specific selection purposes.

Abstract
Introduction Originally regarded as garnish greens, microgreens are increasingly valued for their nutritional profile, including their mineral content. Methods A study was conducted under controlled environmental conditions utilizing a selection of seventeen microgreen species belonging to seven different botanical families to investigate the genetic variation of macro- and micro-minerals and nitrate (NO3 -) content. Plants were grown in a soilless system using a natural fiber mat as the substrate. After germination, microgreens were fertigated with a modified half-strength Hoagland solution prepared using deionized water and without adding microelements. At harvest (10 to 19 days after sowing, based on the species), yield components were measured and dry tissue samples were analyzed for the concentration of total nitrogen (N), NO3 -, P, K, Ca, Mg, S, Na, Fe, Zn, Mn, Cu, and B. Results and discussion Genotypic variations were observed for all of the examined parameters. Nitrogen and K were the principal macronutrients accounting for 38.4% and 33.8% of the total macro-minerals concentration, respectively, followed in order by Ca, P, S, and Mg. Except for sunflower (Helianthus annuus L.), all the tested species accumulated high (1,000-2,500 mg kg-1 FW) or very high (>2,500 mg kg-1 FW) NO3 - levels. Eight of the studied species had a K concentration above 300 mg 100 g-1 FW and could be considered as a good dietary source of K. On the other hand, scallion (Allium fistulosum L.), red cabbage (Brassica oleracea L. var. capitata), amaranth (Amaranthus tricolor L.), and Genovese basil (Ocinum basilicum L.) microgreens were a good source of Ca. Among micro-minerals, the most abundant was Fe followed by Zn, Mn, B, and Cu. Sunflower, scallion, and shiso (Perilla frutescens (L.) Britton) were a good source of Cu. Moreover, sunflower was a good source of Zn, whereas none of the other species examined could be considered a good source of Fe and Zn, suggesting that supplementary fertilization may be required to biofortify microgreens with essential microminerals. In conclusion, the tested microgreens can be a good source of minerals showing a high potential to address different dietary needs; however, their yield potential and mineral profile are largely determined by the genotype.

Abstract
Basil is a great source of phytochemicals such as polyphenols, vitamin C, anthocyanin, and flavonoids. In this work, the biochemical compounds, antioxidant capacity, leaf color profile, and yield of 21 cultivars and genotypes of basil microgreen were investigated. Results showed that the highest antioxidant potential composite index (APCI) was measured in Persian Ablagh genotype (70.30). Twenty-one basil genotypes were classified into four clusters, including cluster 1 (lowest antioxidant capacity and total phenolic compounds), cluster 2 (lowest anthocyanin, vitamin C and APCI index), cluster 3 (highest vitamin C, total phenolic compounds, antioxidant capacity and APCI index), and cluster 4 (highest levels of anthocyanin). The principal components analysis (PCA) of basil genotypes showed diversity in terms of phytochemical components, and F1, F2, F3, and F4 explained the variation at the rate of 78.12%. The average annual temperature of the origin of basil seeds plays an important role in the synthesis of antioxidant content. Most of the seeds with moderate origin had a higher APCI index. The Persian Ablagh genotype, Violeto, and Kapoor cultivars can be recommended, according to their APCI index and yield. These cultivars can be used individually or in different ratios to produce different biochemical substances with different concentrations for various purposes.

Abstract
Microgreens are novel foods with high concentrations of bioactive compounds and can be grown easily and sustainably. Among all the microgreens genera produced, Brassicaceae stand out because of the wide evidence about their beneficial effects on human health attributed to phenolic compounds, vitamins, and particularly glucosinolates and their breakdown products, isothiocyanates and indoles. The phytochemical profile of each species is affected by the growing conditions in a different manner. The agronomic practices that involve these factors can be used as tools to modulate and enhance the concentration of certain compounds of interest. In this sense, the present review summarizes the impact of substrates, artificial lighting, and fertilization on bioactive compound profiles among species. Since Brassicaceae microgreens, rich in bioactive compounds, can be considered functional foods, we also included a discussion about the health benefits associated with microgreens' consumption reported in the literature, as well as their bioaccessibility and human absorption. Therefore, the present review aimed to analyze and systematize cultivation conditions of microgreens, in terms of their effects on phytochemical profiles, to provide possible strategies to enhance the functionality and health benefits of Brassicaceae microgreens.

Abstract
Nutrient deficiency has resulted in impaired growth and development of the population globally. Microgreens are considered immature greens (required light for photosynthesis and growing medium) and developed from the seeds of vegetables, legumes, herbs, and cereals. These are considered "living superfood/functional food" due to the presence of chlorophyll, beta carotene, lutein, and minerals like magnesium (Mg), Potassium (K), Phosphorus (P), and Calcium (Ca). Microgreens are rich at the nutritional level and contain several phytoactive compounds (carotenoids, phenols, glucosinolates, polysterols) that are helpful for human health on Earth and in space due to their anti-microbial, anti-inflammatory, antioxidant, and anti-carcinogenic properties. Microgreens can be used as plant-based nutritive vegetarian foods that will be fruitful as a nourishing constituent in the food industryfor garnish purposes, complement flavor, texture, and color to salads, soups, flat-breads, pizzas, and sandwiches (substitute to lettuce in tacos, sandwich, burger). Good handling practices may enhance microgreens'stability, storage, and shelf-life under appropriate conditions, including light, temperature, nutrients, humidity, and substrate. Moreover, the substrate may be a nutritive liquid solution (hydroponic system) or solid medium (coco peat, coconut fiber, coir dust and husks, sand, vermicompost, sugarcane filter cake, etc.) based on a variety of microgreens. However integrated multiomics approaches alongwith nutriomics and foodomics may be explored and utilized to identify and breed most potential microgreen genotypes, biofortify including increasing the nutritional content (macro-elements:K, Ca and Mg; oligo-elements: Fe and Zn and antioxidant activity) and microgreens related other traits viz., fast growth, good nutritional values, high germination percentage, and appropriate shelf-life through the implementation of integrated approaches includes genomics, transcriptomics, sequencing-based approaches, molecular breeding, machine learning, nanoparticles, and seed priming strategiesetc.

Abstract
Inorganic nitrate provided by either nitrate salts or food supplements may improve cardiometabolic health. However, current methods to assess dietary nitrate, nitrite and nitrosamine consumption are inadequate. The purpose of this study was to develop a reference database to estimate the levels of nitrate, nitrite and nitrosamines in the global food supply. A systematic literature search was undertaken; of the 5,747 articles screened, 448 met the inclusion criteria. The final database included data for 1,980 food and beverages from 65 different countries. There were 5,105 unique records for nitrate, 2,707 for nitrite, and 954 for nitrosamine. For ease of use, data were sorted into 12 categories; regarding nitrate and nitrite concentrations in food and beverages, 'vegetables and herbs' were most reported in the literature (n = 3,268 and n = 1,200, respectively). For nitrosamines, 'protein foods of animal origin' were most reported (n = 398 records). This database will allow researchers and practitioners to confidently estimate dietary intake of nitrate, nitrite and nitrosamines. When paired with health data, our database can be used to investigate associations between nitrate intake and health outcomes, and/or exercise performance and could support the development of key dietary nitrate intake guidelines.

Abstract
The hydroponic production of microgreens has potential to develop, at both an industrial, and a family level, due to the improved production platforms. The literature review found numerous studies which recommend procedures, parameters and best intervals for the development of microgreens. This paper aims to develop, based on the review of the literature, a set of procedures and parameters, included in a test protocol, for hydroponically cultivated microgreens. Procedures and parameters proposed to be included in the trial protocol for evaluating platforms for growing microgreens in hydroponic conditions are: (1) different determinations: in controlled settings (setting the optimal ranges) and in operational environments settings (weather conditions in the area/testing period); (2) procedures and parameters related to microgreen growth (obtaining the microgreens seedling, determining microgreen germination, measurements on the morphology of plants, microgreens harvesting); (3) microgreens production and quality (fresh biomass yield, dry matter content, water use efficiency, bioactive compound analysis, statistical analysis). Procedures and parameters proposed in the protocol will provide us with the evaluation information of the hydroponic platforms to ensure: number of growing days to reach desired size; yield per area, crop health, and secondary metabolite accumulation.

Abstract
In hydroponics, a continuous supply of mineral nutrients is essential for plant growth. However, constitutive nutrient-rich conditions also increase the nitrate content in the plants, which can be harmful to human health. Here, we investigated the effect of nutrient deficiency on the growth and component composition of hydroponic radish by changing the timing of nutrient removal from the hydroponic solution. Radish plants that were 14 days old were transferred to four different nutrient conditions for 14 days: nutrient deficiency for 14 days (WW), full nutrient for 14 days (NN), nutrient deficiency for the last 7 days (NW), and nutrient deficiency for the first 7 days (WN). After the treatments, the NW plants had similar taproot growth to NN plants. In contrast, the WN plants significantly reduced taproot growth. The WW plants reduced the shoot and taproot weight and their water contents. The nitrate content in the taproots was reduced in the NW and WW plants. The WW plants contained lower total phenol and higher ascorbic acid and sugar contents. These results suggest that the uptake of nutrient minerals at the young growth stage is important for the growth of radish taproot. Nutrient deficiency management can be one of the most effective tools for regulating radish growth and composition.

Abstract
Neglected and underutilized species (NUS) offer largely unexplored opportunities for providing nutritious plant food, while making agro-ecosystems more diverse and resilient to climate change. The aim of this work was to explore the potential of two typical Mediterranean underutilized species, purslane and borage, as novel vegetable product (microgreens). Micro-scale production of edible plants is spreading due to the simplicity of their management, rapid cycle, harvest index, and phytochemical value of the edible product. Microgreens, therefore, represent an opportunity to link NUS, nutrition, and agricultural and dietary diversification. By analyzing yield, antioxidants activities, mineral composition, and main phenolic acids and flavonoids, our work indicated that the two species provide interesting results when compared with those reported for crops and horticultural species. Specifically, purslane should be considered highly nutritional due to the amount of phenolic compounds and ascorbic acid, and to potential good β-carotene bioavailability. Borage microgreens have a very high fresh yield and a more composite and balanced phenolic profile. In conclusion, our work provided evidence for implementing new ways to expand the NUS market-chains and for developing added-value food products.
