Abstract
BACKGROUND/OBJECTIVES Appropriate vitamin D status improves bone health and chronic diseases; it has shown benefits during the coronavirus disease 2019 pandemic. Therefore, assessing vitamin D status is crucial. However, limited research on vitamin D intake among Koreans complicates understanding of its consumption. This study aimed to develop and validate a semi-quantitative food frequency questionnaire (FFQ) to assess vitamin D intake among Koreans. SUBJECTS/METHODS A vitamin D FFQ was developed to include 31 vitamin D source foods from 8 food groups frequently consumed by Korean adults. The study included 152 women residing in a major city in South Korea. From September 2020 to August 2022, intake was surveyed using a 12-day dietary record (12-day DR) across 4 seasons, and 2 vitamin D FFQs were conducted approximately 9-11 months apart (FFQ1 and FFQ2). Reproducibility (FFQ1 vs. FFQ2) and validity (FFQ2 vs. 12-day DR) were verified using Spearman's rank correlation, weighted kappa coefficient, intraclass correlation, and Bland-Altman plots. RESULTS The vitamin D intake of Korean women using the newly developed vitamin D FFQ was higher at FFQ1 (4.90 µg/day) and FFQ2 (4.58 µg/day) compared with the 12-day DR (4.07 µg/day). Additionally, the results for reproducibility and validity were demonstrated through the Spearman's rank correlation coefficient (reproducibility, 0.592; validity, 0.460), weighted kappa coefficient (reproducibility, 0.379; validity, 0.284), intraclass correlation coefficient (reproducibility, 0.599; validity, 0.543), and Bland-Altman plots (reproducibility index, 3.95%; validity index, 3.95%). CONCLUSION This study confirmed the newly developed vitamin D FFQ is reliable and valid for assessing vitamin D intake among Korean women. These results suggest the FFQ is an effective tool for dietary assessment, particularly in large-scale studies where year-round monitoring may not be feasible. Further validation in Korean men is crucial to enhance its applicability, enabling significant contributions to assessing vitamin D intake among Korean adults.

Abstract
We previously demonstrated a beneficial effect of high-dose vitamin D in pregnancy on offspring bone and dental health. Here, we investigated the effect of maternal dietary patterns during pregnancy on the risk of bone fractures, bone mineralization and enamel defects until age 6 years in the offspring. Further, the influence of diet on the effect of high-dose vitamin D was analyzed in the COPSAC2010 mother-child cohort including 623 mother-child pairs. A weighted network analysis on FFQs revealed three specific maternal dietary patterns that associated (Bonferroni p < 0.05) with both offspring bone and dental health. The effect of prenatal high-dose (2800 IU/day) vs. standard-dose (400 IU/day) vitamin D on offspring bone mineral content (adjusted mean difference (aMD): 33.29 g, 95% CI: 14.48-52.09, p < 0.001), bone mineral density (aMD: 0.02 g/cm2 (0.01-0.04), p < 0.001), fracture risk (adjusted incidence rate ratio: 0.36 (0.16-0.84), p = 0.02), and enamel defects in primary (adjusted odds ratio (aOR): 0.13 (0.03-0.58), p < 0.01) and permanent molars (aOR: 0.25; (0.10-0.63), p < 0.01) was most pronounced when mothers had lower intake of fruit, vegetables, meat, eggs, sweets, whole grain, offal and fish. This study suggests that prenatal dietary patterns influence offspring bone and dental development, and should be considered in order to obtain the full benefits of vitamin D to enhance personalized supplementation strategy.

Abstract
This cross-sectional study aimed to develop and validate a vitamin D food frequency questionnaire (VitD-FFQ) to assess vitamin D intake in Moroccan women of reproductive age. Using the method of triads, the VitD-FFQ was validated against seven-day dietary records (7d-FR) and 25-hydroxyvitamin D (25(OH)D) as a biomarker of vitamin D status in 152 women (aged 18-45 years). Participants' sun exposure scores (SES) were assessed using a specific questionnaire (SEQ). Predictors of vitamin D status were identified via linear regression models. Several statistical tests were applied to evaluate the criterion validity of the FFQ against two references methods (7d-FR and the biomarker-serum 25(OH)D). Median (Interquartile range) intakes were 7.10 ± 6.95 µg /day and 6.33 ± 5.02 µg/ day, respectively, for VitD-FFQ and 7d-FR. Vitamin D status was mainly determined by SES (R = 0.47) and vitamin D absolute food intakes derived by the VitD-FFQ (R = 0.56), which demonstrated a more significant prediction ability compared to 7d-FR (R = 0.36). An agreement was observed between the VitD-FFQ and 7d-FR (BA index of 3.29%) with no proportional bias (R2 = 0.002, p = 0.54). <10% of participants were incorrectly classified, and weighted kappa statistics showed that VitD-FFQ had an acceptable ranking ability compared to the 7d-FR and the biomarker. The validity coefficient for the VitD-FFQ was high: ρQR = 0.90 (95%CI: 0.89-0.92), and a range from 0.46 to 0.90. Adjustment for the participants' SES and BMI (body mass index) improved the biomarker's validity coefficient (ρRB 0.63 (95% CI 0.39-0.82). Our results indicate that the VitD-FFQ is valid for estimating absolute vitamin D intake in Moroccan women of reproductive age.

Abstract
OBJECTIVE The relationship between dietary patterns and the prevalence of asthma is not well understood. We aimed to investigate the association between dietary patterns and asthma in adults in Qatar. METHODS In this study, cross-sectional data from the Qatar Biobank were used (n = 986). Participants were Qatari or long-term Qatar residents aged ≥20 years old. A food frequency questionnaire was used to collect dietary intakes. Three dietary patterns were identified using factor analysis. Multivariable logistic regression was used to assess the association between dietary patterns scores and asthma. RESULTS Among 986 eligible participants, 6.6% (n = 65) reported that they were diagnosed with asthma. Three dietary patterns were identified. These were (1) "Traditional" (high intake of rice, chicken/meat/fish, and breads); (2) "Prudent" (high intake of fruits, vegetables, and fish); and (3) "Fast Food/Sweets" (high intake of desserts, fast food, and soft drinks). The fast food/sweet dietary pattern was associated with increased likelihood of having asthma [comparing high vs. low tertile, OR for asthma = 1.25; 95% CI (1.02-1.54); p = 0.035]. Traditional and Prudent dietary patterns were not associated with the prevalence of asthma. CONCLUSION The fast food/sweet dietary pattern was directly associated with the prevalence of asthma among adults in Qatar. Reducing the fast foods and sugary-rich foods may be beneficial for respiratory health.

Abstract
Vitamin D deficiency has been linked to increased adiposity and decreased bone density. It is not known if vitamin D is linked to adiposity measures and bone mass in postmenopausal Qatar women. We investigated an association between serum vitamin D [25-hydroxyvitmain D (25(OH)D)] and adiposity measurements in postmenopausal women using Qatar Biobank data (n = 935). The post-menopausal status was self-reported by participants. Multivariate adjusted regression was applied to determine the association between serum 25(OH)D and body adiposity markers and bone mass. Serum 25(OH)D was significantly, inversely associated with body mass index (p < 0.0005), waist circumference (0.044), fat mass (p < 0.003), gynoid fat (p < 0.001), and android fat (p < 0.009). Serum 25(OH)D appeared to have an inverse 'U' association with several adiposity measures. Overall, body adiposity markers were the lowest in the 4th quartile serum 25(OH)D and significantly lower compared to the 1st quartile serum 25(OH)D. In multivariable adjusted analysis, no association was found between serum 25(OH)D concentration and bone mass when serum 25(OH)D was categorized. In a continuous variable analysis, the association between 25(OH)D and bone mass was significant, non-linear, inverse 'U'. In conclusion, serum 25-hydroxyvitamin D was inversely associated with adiposity measures and non-linearly associated to bone mass in postmenopausal Qatari women.

Abstract
OBJECTIVE The aim of the present study was to develop and validate a vitamin D FFQ for assessment of dietary vitamin D intake in healthy adults in England, UK. DESIGN The current study assessed the agreement between a four-day food diary (4 d-FD) and a new vitamin D FFQ to measure dietary intake of vitamin D. Dietary intake was estimated using Nutritics dietary analysis software, and Spearman's and Bland-Altman tests were utilised to assess correlation and agreement, respectively. Participants also provided a blood sample for plasma analysis of vitamin D concentrations. SETTING Home setting. PARTICIPANTS Fifty participants were recruited to the study from the University of Chester and vicinity. RESULTS Results showed a strong correlation between vitamin D intake recorded by the FFQ and the 4 d-FD (r = 0·609; P < 0·0001) within 95 % limits of agreement. Furthermore, a significant correlation between plasma 25(OH)D concentrations and vitamin D intake measured by the FFQ (r = 0·290, P = 0·041) and the 4 d-FD (r = 0·360, P = 0·01) was observed. CONCLUSION Our analysis suggests this FFQ is a useful and rapid tool for researchers and health professionals to assess vitamin D dietary intakes in healthy adults in the UK.

Abstract
Mushroom irradiation has been considered a sustainable process to generate high amounts of vitamin D2 due to the role of this vitamin for human health and of the global concerns regarding its deficient or inadequate intake. Mushrooms are also receiving increasing interest due to their nutritional and medicinal properties. However, there is still a knowledge gap regarding the effect of UV irradiation on mushroom bioactive compounds. In this study, two of the most cultivated mushroom species worldwide, Agaricus bisporus and Pleurotus ostreatus, were irradiated with UV-B, and the effect of processing was investigated on the contents of vitamin D2 as well as on antioxidant and antiglycation activities. UV irradiation increased vitamin D2 up to 57 µg/g d.w, which is an adequate level for the fortification of a number of target foods. UV irradiation decreased the antioxidant activity when measured by the Folin–Ciocalteu reagent, the 2,2-diphenyl-1-(2,4,6 trinitrophenyl) hydrazyl radical assay and the ferric ion-reducing antioxidant power assay, but did not decrease the mushroom’s ability to inhibit glycation of a target protein. These results open up a new area of investigation aimed at selecting mushroom species with high nutraceutical benefits for irradiation in order to maintain their potential properties to inhibit oxidative and glycation processes responsible for human diseases.

Abstract
Agri-food markets are vital in achieving food security, especially for resource-poor, food-importing countries such as Qatar. The paper provides an overview of the evolution of agri-food markets in Qatar and explores the implications of past and ongoing changes in terms of food security and food system sustainability. In particular, the review analyzes drivers of changes, trends, and challenges as well as policy responses to address the emerging challenges while ensuring the country’s food security. It draws upon a systematic review of scholarly literature indexed in the Web of Science as well as data from gray literature (e.g., reports) and databases (e.g., FAOSTAT). Different drivers (e.g., population growth with huge expatriate inflow, urbanization, income increase) affected the functioning of agri-food markets as well as the structure of the food chain (viz. production, processing, distribution, consumption) in Qatar. In addition to drivers, the food-related trends were also shaped by numerous environmental (e.g., land/water scarcity), economic, health, and trade challenges. To ensure long-term food and nutrition security for its population, Qatar implemented various policies and strategies (e.g., National Food Security Strategy 2018–2023). In this context, agri-food markets, as functional links between production and consumption, can foster transition towards sustainable food consumption and production patterns in Qatar.
