Food Knowledge for Better Nutrition and Health: A Study among University Students in Portugal

Dietary Salt-Related Knowledge, Attitudes and Behaviors in Healthy and Hypertensive Turkish Adults from Food Choice Perspective

Food choices are influenced by knowledge, attitudes, and behaviors (KABs); therefore, determining KABs regarding salt is a key point for salt reduction, which is a primary public health problem in Turkey. This study aimed to assess salt-related KABs in Turkey. This cross-sectional study was conducted on 415 adults in a hospital in Turkey. A structured questionnaire assessing salt-related KABs was administered, and blood pressure was measured. The majority of participants were aware of the health risks associated with high salt intake. Higher overall attitude scores increased the odds of performing most behaviors to reduce salt, except for checking food labels, using spices instead of salt, and purchasing foods labeled as low-sodium, by almost three-fold. These results suggest that both normotensive and hypertensive adults need to improve their knowledge of the health effects and dietary sources of salt, and how to reduce it. Salt-related KABs were not found to be aligned with all positive attitudes toward salt consumption; this indicates the need for regulations that operate independently of public perceptions, such as policies for reducing salt in the food industry and making reduced-salt products more affordable to encourage healthier food choices.

[Emotional eating in university students: a cross-sectional and comparative study in the Iberian Peninsula]

OBJECTIVE

Although the lack of progress in reducing obesity is a global problem, different places have different contributing factors. One of the factors currently contributing to the increasing prevalence of obesity is emotional eating. The aim of this paper was to describe and compare the level of emotional eating and to analyse which variables and to what extent they affected the other variables.

METHODS

A descriptive cross-sectional study was conducted in students from 3 universities of the Iberian Peninsula (n=1,654) between October 2019 and June 2020. Data were collected through an online self-report questionnaire which included sociodemographic and anthropometric data and validated questionnaires such as: the Emotional Eaters Questionnaire, the ShortForm-36 and the Hospital Anxiety and Depression Questionnaire. Stratified random sampling was performed by faculty, degree, and class groups. For descriptive results, means, standard deviation and relative frequencies of variables were calculated. Student's t-test, chi-square and ANOVA were used to compare means. Simple and multiple linear regressions were performed for both samples.

RESULTS

The mean emotional eating score was 8.77±5.66 for spanish students and 10.02±6.19 for portuguese students, with a difference of 3.62 (<0.001). In Spain, the dependent variable that most affected emotional eating was quality of life (13.8% variance [<0.001]), while in Portugal it was anxiety (10.1% variance [<0.001]).

CONCLUSIONS

Statistically significant differences are found in the level of emotional eating between populations. In addition, there is dissimilarity in the variables influencing the principal in both countries. These findings imply that they should be considered in the design of future research or health interventions.

Exploring eating behaviors, knowledge and attitudes of adolescent Indian girls

Data on the eating behaviors, knowledge, and attitudes of adolescent girls in Visnagar, India, focusing on the prevalence of non-communicable diseases [NCDs] and their association with dietary practices is of interest. Adolescence, a crucial developmental phase, sets the foundation for lifelong health habits, necessitating an understanding of the determinants influencing eating behaviors. The research aims to identify gaps in knowledge, attitudes, and practices [KAP], providing insights for culturally sensitive public health strategies. Through structured questionnaires and Likert scales, data were collected from a purposive sample of adolescent girls [ages 12-18] in a selected school. Descriptive statistics and correlation analyses were employed to assess knowledge, attitudes, and behaviors, considering demographic variables. Non-significant associations were found between these variables and demographics. The mean knowledge score was 25.11, reflecting a moderate level, while the mean attitudes score was 99.54, indicating generally positive attitudes. Adolescent girls demonstrated an overall mean behaviour score of 110.93, with a positive correlation [0.72] between knowledge and behaviors and a stronger correlation [0.99] between attitudes and behaviors. Findings highlight the universal importance of knowledge in influencing eating behaviors and emphasize the need for culturally tailored interventions considering regional influences. The study contributes valuable insights into the interplay of knowledge, attitudes, and behaviors related to eating disorders in adolescent girls, serving as a foundation for targeted public health strategies.
