Abstract
Objectives The rising demand for convenient and nutritious food options, especially among young adults with fast-paced lifestyles, highlights the need for quick energy and protein sources during physical activities and breakfast. Consequently, aimed to formulate and evaluate the nutritional, functional, and glycemic properties of high-protein energy balls using Sukkari date paste a variety of the date palm (Phoenix dactylifera L.) paste, Samh seed (Mesembryanthemum forsskalei Hochst) powder, whey protein concentrate, and camel milk powder. Methods The nutritional value of the formulated balls was evaluated by assessing their chemical composition, dietary fibers, amino acids (AAs), and fatty acids (FAs). Additionally, antioxidant properties were determined using the DPPH method and reducing power assays. In vitro protein digestibility was also measured. Furthermore, the in vitro glycemic index and glycemic load, as well as the human glycemic response for various samples, were examined. Results Samples containing combinations of date paste, Samh seeds, and either camel milk powder (DSC) or whey protein concentrate (DSW) demonstrated high nutritional value, with significant caloric content measured at 352.76 ± 0.125 Kcal/100 g for the first combination and 328.76 ± 0.242 Kcal/100 g for the second. These samples also showed significant (p < 0.05) DPPH radical scavenging activity, with values of 63.78 ± 2.43 μg of ascorbic acid equivalent/g for the date paste and Samh seeds with camel milk powder (DSC) and 59.87 ± 2.61 μg of ascorbic acid equivalent/g for those with whey protein (DSW). Furthermore, the presence of a variety of essential amino acids and fatty acids in DSC and DSW was higher than in the rest of the samples (DS, DW and DC), which is under the current study. Sensory evaluations indicated that all samples were highly accepted. The in vitro study revealed that the degree of protein digestibility was higher in samples that contained both Samh seeds powder and whey protein concentrate or camel milk powder than in the sample that contained Samh alone. Also, all samples exhibited low in vitro glycemic index (<55) and glycemic load (<10). Moreover, the human glycemic response evaluation showed that blood glucose levels gradually declined after 30 min, returning to pre-meal levels by 120 min, indicating no post-meal hyperglycemia, resulting in a normal glycemic response in healthy young adults. Conclusions Combining Samh seed powder with dairy proteins to create protein-energy balls using Sukkari date paste results in nutritious snacks that are rich in amino acids, fatty acids, dietary fibers, and antioxidant compounds. These snacks also have a low glycemic response and high protein digestibility in vitro. Therefore, high-protein energy balls made from date paste enriched with Samh seed powder, along with either camel milk or whey protein powders, are recommended as a protein and energy source for healthy young adults who do not experience post-meal hyperglycemia.

Abstract
The postharvest preservation of fresh produce is crucial for enhancing food sustainability and security. The study investigates the combined effects of coating with gum Arabic (GA), storage temperature, and packaging methods on the quality of Barhi date during storage. In addition, the artificial neural network (ANN) model was used to predict fruit quality parameters, including fruit weight, volume, density, weight loss, hardness, decay percentage, moisture content, pH, Total soluble solid, water activity, color parameters, color difference, and browning index based on the coating and storage conditions and the initial fruit weight, size, moisture content, total soluble solids, and color parameters at the beginning of storage. The findings indicated that vacuum packaging, coating with 10 % GA concentration, and cold storage were the most effective combinations for prolonging shelf life and preserving the quality parameters of stored Barhi dates. The implemented ANN model effectively predicted most fruit quality parameters, closely corresponding with observed data across various storage environments, as indicated by the low values of the evaluation metrics, i.e., mean absolute error, mean absolute percentage error, relative error, and root mean squared error. The R2 values observed for the quality parameters of fruit weight (0.951), volume (0.746), density (0.735), weight loss (0.989), hardness (0.967), decay percentage (0.962), moisture content (0.901), pH (0.965), total soluble solids (0.973) water activity (0.859), and color parameters of L∗ (0.978), a∗ (0.784), b∗, ΔE∗ (0.955), and browning index (0.951), validate the precision and dependability of the ANN models in their ability to predict the quality attributes of Barhi date fruits. The study outcomes contribute to food quality and supply chain management by finding the best combination of edible GA coating and storage conditions. Inaddition, predicting fruit quality during storage helps maintain their quality and reduce postharvest losses.

Abstract
Pomegranate peel powder is used as a functional ingredient in the development of nutritional bars. Pomegranate (Punica granatum) is well known fruit belongs to punicaceae family having multiple health benefits, not only limited to its edible parts but also in its non-edible parts mostly the peel. Fruit wastes are rich source of nutrients, and can be used for the development of functional food products. Pomegranate peel is considered to be beneficial due to its functional and therapeutic properties as it is a source of many biological active components like polyphenols, tannins and flavonoids. Nutrient rich and ready-made foods are the demand of everyone due to their easy availability and cost effectiveness. Among the confectionary products, bars are liked by individuals of different age groups. Hence, nutritional properties of bars can be enhanced by using pomegranate peel powder. The current study was designed to develop bars enriched with pomegranate peel powder as a basic ingredient. Pomegranate peel powder is prepared and analyzed for proximate, mineral, total phenolic content, total flavonoid content and anti-oxidant potential (DPPH). By using pomegranate peel powder, oats and jaggery, bars were prepared. In this research, five treatments T0 (0% pomegranate peel powder and 100% oats). T1 (5% pomegranate peel powder and 95% oats), T2 (10% pomegranate peel powder and 90% oats), T3 (15% pomegranate peel powder and 85% oats) and T4 (20% pomegranate peel powder and 80% oats) were used. The developed product is analyzed for proximate, mineral, total flavonoid contents, total phenolic content and anti-oxidant potential (DPPH). Proximate analysis of bars revealed that moisture, protein, fat, fiber, ash and nitrogen free extract ranges from T0 to T4 (13.38±1.21 to 11.32±1.15, 9.56±0.92 to 8.32±1.14, 9.05±1.21 to 7.93±1.08, 5.23±0.82 to 16.89±0.64, 2.05±0.87 to 2.92±1.25 and 62.51±0.85 to 52.62±0.93 respectively. Phytochemical analysis of bars enriched with pomegranate peel powder revealed that total phenolic content, total flavonoid content and antioxidant potential of bars ranges from T0 to T4 (142.74±0.65 to 211.79±0.63 mg GAE/100g, 129.16±0.64 to 192±0.53 mg QE/100g and 41.35±0.82 to 64.57±0.69%) respectively. Mineral analysis of bars enriched with pomegranate peel powder revealed that calcium, Phosphorus, Potassium, Iron, Magnesium content ranged from T0 to T4 (25.42±0.63 to 31.06±0.58, 51.00±1.01 to 45.05±1.09, 59.46±1.13 to 79.15±0.28, 1.32±1.20 to 1.95±0.83 and 54.17±0.88±0.58 to 57.36±0.68 mg/100g respectively). Sensory evaluation is done for color, aroma, taste, texture overall acceptability. T3 got maximum score. Then, the data obtained were evaluated by CRD design. On the basis of results revealed that treatment T3 with 15% pomegranate peel powder was overall highly acceptable.

Abstract
Foods that support human health and longevity are becoming increasingly relevant as substitutes for or adjuncts to pharmacological drugs, either through direct consumption or incorporation into designer foods fortified with health-promoting ingredients. Date palm (Phoenix dactylifera L.) fruits, seeds, and pollen are a cornerstone of diverse food and medicine traditions. Their reported metabolic activities include anti-inflammatory, antioxidant, antihypertensive, antihyperlipidemic, antidiabetic, antitumor, antianemia, hepatoprotective, antibacterial, and antiviral effects. Beneficial effects on gut health and vascular health, as well as effectiveness in alleviating certain dysfunctions of the reproductive system, have also been noted. The genomic diversity of this versatile tree and the diverse agroecological conditions in which it grows lead to appreciable variations in the occurrence of protective nutrients and other high-value bioactive phytochemicals, including flavonoid and non-flavonoid phenolics, carotenoids, phytosterols, and oxylipins, whose potential remains underutilized in the food sector. As food ingredients, date fruits and their co-products can improve the sensory, nutritional, and nutraceutical qualities of a broad range of dietary items. Their high nutritional density can assist with the design of novel or improved products that meet the demand for healthier foods. This review summarizes the current state of evidence on the potentialities of date palm fruits and co-products in functional food development, focusing on the nutrients and extra-nutritional compounds of interest, their biofunctional activities, and factors that influence their abundance and bioactivity. Proofs of concept across food and beverage categories, new developments, and clinical evidence are discussed, followed by recommendations for addressing research gaps.

Abstract
Daily, more and more people consume snack bars that may have an impact on blood glucose levels. The aim of the present study was to compare the acute effects of a common snack and a plant-based snack bar (PB) that was developed at the University of Thessaly as a functional diabetic snack on blood glucose and insulin in patients with type 2 diabetes mellitus (T2DM). Adults with T2DM (n = 10) treated with oral medications were studied in a randomized, crossover clinical trial. On each trial day, postprandial glucose and insulin levels were measured at 30, 60, 90, and 120 min, and a morning snack containing 25 g of carbohydrate was consumed. The procedure was carried out on 2 days, with one of the test meals being consumed on each day. Consumption of a PB snack bar resulted in a smaller and steeper increase in postprandial glucose and insulin levels compared with the usual snack, and there were significant differences 60 and 90 min after consumption of the two tested snacks. The PB snack bar is rich in protein, fiber, vitamins, and minerals and can therefore be suggested as a nutritious and convenient snack for patients with T2DM. In addition, the extract of the snack bar was tested for its bioactivity in human cell cultures.

Abstract
Background: Neurodegenerative diseases primarily afflict the elderly and are characterized by a progressive loss of neurons. Oxidative stress is intricately linked to the advancement of these conditions. This study focuses on Phoenix dactylifera (P. dactylifera; Family: Arecaceae), commonly known as "Ajwa," a globally cultivated herbal plant renowned for its potent antioxidant properties and reported neuroprotective effects in pharmacological studies. Method: This comprehensive systematic review delves into the antioxidant properties of plant extracts and their phytochemical components, with a particular emphasis on P. dactylifera and its potential neuroprotective benefits. Preferred reporting items for systemic reviews and meta-analysis (PRISMA) were employed to review the articles. Results: The study includes 269 articles published in the literature and 17 were selected after qualitative analysis. The growing body of research underscores the critical role of polyphenolic compounds found in P. dactylifera, which significantly contribute to its neuroprotective effects through antioxidant mechanisms. Despite emerging insights into the antioxidant actions of P. dactylifera, further investigation is essential to fully elucidate the specific pathways through which it confers neuroprotection. Conclusions: Like many other plant-based supplements, P. dactylifera's antioxidant effects are likely mediated by synergistic interactions among its diverse bioactive compounds, rather than by any single constituent alone. Therefore, additional preclinical and clinical studies are necessary to explore P. dactylifera's therapeutic potential comprehensively, especially in terms of its targeted antioxidant activities aimed at mitigating neurodegenerative processes. Such research holds promise for advancing our understanding and potentially harnessing the therapeutic benefits of P. dactylifera in neuroprotection.

Abstract
Nutritional bars (NBs) are gaining popularity among healthy and athletic individuals, but postprandial antioxidative response has not been investigated. Therefore, the current study examined the postprandial alterations in total phenolic content (TPC), total antioxidant capacity (T-AOC), malondialdehyde (MDA), and Superoxide dismutase (SOD) in the plasma of healthy individuals after the ingestion of 140 g (510 Kcal) from formulated date-based bars (DBBs) or fruit-based bars (FBBs). Firstly, the free and bound phenolic contents (PCs) were determined to be 10.15 and 12.98 and 6.19 and 3.57 mg GAE g-1, respectively. FBBs were significantly higher in free PC than DBBs, while DBBs were considerably higher in bound PC than FBBs. Secondly, twenty participants with age, height, weight, body mass index (BMI), fat mass, and fat-free mass averages of 21.4 years, 170.0 cm, 66.3 kg, 22.9 kg m2, 14.5, and 29.2 kg, respectively, were subjected to metabolic experiments (ISRCTN19386758). Ingestion of 140 g of FBB or DBB resulted in 288.50 or 302.14 µg TPC mL-1 blood, respectively. Postprandial TPC content increased with time progression and peaked after 120 min. T-AOC contents averaged 22.63 and 23.61 U mL-1 before ingestion of FBBs or DBBs, respectively. The T-AOC content increased significantly 120 and 180 min after ingestion of DBBs, while no significant change was noted after consuming FBBs. A significant decrease in MDA content was observed 180 min after consuming DBBs, while no significant change was noted after consuming FBBs. SOD concentrations ranged from 193.99 to 201.07 U L-1 in FBBs and DBBs, respectively. No considerable response was noted up to 3 h after ingestion of FBBs. On the contrary, a significant response was found 120 min after consuming DBBs. Pearson's correlation coefficient indicated a highly significant positive correlation coefficient (p < 0.01) between T-AOC and either MDA or SOD, as well as between MDA and SOD. The principal component analysis demonstrated a strong and positive relationship between SOD and TPC at 60 and 120 min after DBB ingestion. In conclusion, the relative changes in postprandial responses in T-AOC and MDA did not significantly (p > 0.05) differ between DBBs and FBBs, except for TPC (p = 0.04, paired t-test) and SOD (p = 0.003, paired t-test). Further studies with an extended experimental time are needed to confirm the current findings.

Abstract
Although Phoenix dactylifera dates are traditionally consumed for their health benefits, no research has been done on the vascular response in hypertensive animals. This study evaluated the vascular relaxation of hydroalcoholic extracts from seeds of three varieties of P. dactylifera; Sukkari seed (SS), Ajwa seed (AS), and Mabroom seed (MS) on L-NAME-induced hypertension and spontaneously hypertensive rats (SHR). Results showed that all extracts (10 µg/mL) caused relaxations higher than 60% in the aortic rings precontracted with 10- 6 M phenylephrine in normotensive rats, the SS extract was the most potent. Endothelial nitric oxide (NO) pathway is involved as significantly reduced vascular relaxation in denuded-endothelium rat aorta and with an inhibitor (10- 4 M L-Nω-Nitro arginine methyl ester; L-NAME) of endothelial nitric oxide synthase (eNOS). Confocal microscopy confirmed that 10 µg/mL SS extract increases NO generation as detected by DAF-FM fluorescence in intact aortic rings. Consistent with these findings, vascular relaxation in intact aortic rings at 10 µg/mL SS extract was significantly decreased in L-NAME-induced hypertensive rats (endothelial dysfunction model), but not in SHR. In both hypertensive models, the denuded endothelium blunted the vascular relaxation. In conclusion, the hydroalcoholic extract of the seed of P. dactylifera (Sukkari, Ajwa and Mabroom varieties) presents a potent endothelium-dependent vascular relaxation, via NO, in normotensive rats as well as in two different models of hypertension. This effect could be mediated by the presence of phenolic compounds identified by UHPLC-ESI-MS/MS, such as protocatechuic acid, and caftaric acid.

Abstract
Dates are the fruits of the date palm belonging to the Arecaceae family; they comprise over 2500 species and 200 genera and constitute an essential part of the daily diet worldwide, with beneficial nutritional, health, and economic values. Several varieties of date palm (Phoenix dactylifera) fruit exist globally, especially in hot and humid regions. This review is an overview of date palms as a significant global food resource, including their historical significance, nutritional composition, cultivation practices, economic importance, and health benefits. The historical journey of dates goes back to ancient civilizations where they were revered for their richness in essential nutrients and natural sweetness. Today, dates are a vital crop in arid regions, contributing substantially to the agricultural economy and livelihoods of communities. This paper further explores the cultivation techniques employed to enhance date production. Furthermore, the nutritional composition of dates is analyzed in detail, highlighting their high content of vitamins, minerals, dietary fibers, and antioxidants. These attributes make dates a delicious treat and a valuable nutritional component, offering numerous health benefits. The potential health effects, including improved digestion, enhanced cardiovascular health, and increased energy levels, are discussed. Additionally, this paper delves into the economic significance of the date industry and its global trade.

Abstract
The current levels of added sugars in processed foods impact dental health and contribute to a range of chronic non-communicable diseases, such as overweight, obesity, metabolic syndrome, type 2 diabetes, and cardiovascular diseases. This review presents sugars and sweeteners used in food processing, the current possibility to replace added sugars, and highlights the benefits of using dates as a new natural, nutritious and healthy alternative to synthetic and non-nutritive sweeteners. In the context of environmental sustainability, palm groves afford a propitious habitat for a diverse array of animal species and assume a pivotal social role by contributing to the provisioning of sustenance and livelihoods for local communities. The available literature shows the date as an alternative to added sugars due to its composition in macro and micronutrients, especially in bioactive components (fiber, polyphenols and minerals). Therefore, dates are presented as a health promoter and a preventative for certain diseases with the consequent added value. The use of damaged or unmarketable dates, due to its limited shelf life, can reduce losses and improve the sustainability of date palm cultivation. This review shows the potential use dates, date by-products and second quality dates as sugar substitutes in the production of sweet and healthier foods, in line with broader sustainability objectives and circular economy principles.

Abstract
With the increasing global nutritional bar market, developing and formulating innovative high-energy and protein bars to compensate for nutrients using date fruits is beneficial for health-conscious individuals. The current research was undertaken to study the composition and physicochemical characteristics of innovative high-energy and high-protein bars using two combinations of Sukkari dates or fruit mixtures as a base. Fifty percent of either Sukkari date paste or dried fruit mixture (25% raisin, 12.5% fig, and 12.5% apricot) combined with other different ingredients was used to produce a date-based bar (DBB) or fruit-based bar (FBB). Proximate composition, sugar content, amino and fatty acid profiles, minerals and vitamins, phytochemicals, antioxidant activity, and visual color parameters of the DBB and the FBB were determined and statistically compared. Proximate analysis revealed higher moisture and fat content in the FBB than the DBB, while ash and crude fiber were higher in the DBB than the FBB. The protein content in the DBB and the FBB was not statistically different. Both prepared bars exuded around 376-378 kcal 100 g-1 fresh weight. Sugar profile analysis of the DBB and the FBB showed dependable changes based on date or fruit content. Fructose, glucose, and maltose contents were higher in the FBB than in the DBB, while sucrose content was higher in the DBB than in the FBB. The DBB showed significantly higher content in Ca, Cu, Fe, Zn, Mn, and Se and significantly lower content in Mg, K, and Na than the FBB, with no variation in phosphorus content. The DBB and the FBB contained both essential (EAA) and non-essential (NEAA) amino acids. The DBB scored higher Lysine, Methionine, Histidine, Threonine, Phenylalanine, Isoleucine, and Cystine contents than the FBB, while the FBB scored only higher Leucine and Valine contents than the DBB. Seventeen saturated fatty acids were identified in the DBB and the FBB, with Palmitic acid (C16:0) as the predominant fatty acid. Oleic acid (C18:1n9c) was predominant among seven determined monounsaturated fatty acids. Linoleic fatty acid (C18:2n6c) was predominant among eight identified polyunsaturated fatty acids. In addition, α-Linolenic (C18:3n3) was detected in a considerable amount. However, in both the DBB and the FBB, the content and distribution of fatty acids were not remarkably changed. Regarding phytochemicals and bioactive compounds, the FBB was significantly higher in total phenolic content (TPC), total flavonoids (TF), and total flavonols (TFL) contents and scavenging activity against DPPH and ABTS free radicals than the DBB. The DBB and the FBB showed positive a* values, indicating a reddish color. The b* values were 27.81 and 28.54 for the DBB and the FBB, respectively. The DBB is affected by the lower L* value and higher browning index (BI) to make its color brownish. Sensory evaluation data showed that panelists significantly preferred the DBB over the FBB. In conclusion, processing and comparing these bars indicated that using Sukkari dates is a nutrient-dense, convenient, economical, and better sugar alternative that helps combat the calorie content. Thus, scaling up the use of dates instead of fruits in producing high-energy and protein bars commercially is highly recommended.

Abstract
Date palm (Phoenix dactylifera L.) fruits contain high concentrations of phenolic compounds, particularly flavonoids and other micronutrients, which impact human health due to their potent antioxidant, anti-inflammatory, and anticancer characteristics. In the present study, the effect of ethyl acetate, hydroethanol, hydromethanol, and aqueous extract from three date palm varieties (i.e., Ajwa, Siwi, and Sukkari) on phytochemical profiles and antioxidant and anticancer activities was investigated. Fruit extracts were screened for their antioxidant activity using the DPPH· method. Phenolic constituents were quantified and identified using HPLC-DAD. Extracts (ethyl acetate, hydroethanol, and hydromethanol) were assessed for cytotoxicity on nine human cancer cell lines, i.e., MG-63, HCT116, MCF7, MDA-MB-231, HEPG2, HUH7, A549, H460, and HFB4, using the sulphorhodamine-B (SRB) assay. Results showed that the ethyl acetate extract of the Sukkari fruits has the greatest antioxidant potential with an IC50 value of 132.4 ± 0.3 μg·mL-1, while the aqueous extract of Ajwa date fruits exhibited the lowest antioxidant effect with an IC50 value of 867.1 ± 0.3 μg·mL-1. The extracts exhibited potent to moderate anticancer activities against the investigated cancer cell line in a source-dependent manner. Methanol extract of Siwi fruits exhibited the most potent anticancer activity (IC50 = 99 ± 1.6 µg·mL-1), followed by the same extract of Sukkari fruits with an IC50 value of 119 ± 3.5 µg·mL-1 against the cell line of human breast cancer (MDA-MB-231). Additionally, principal component analysis (PCA) was investigated to determine the relationship among the investigated traits and treatments. Our findings reveal that date palm fruit-derived extracts are excellent sources of biologically active constituents and substantiate their potential use in new anticancer strategies from natural resources.
