Abstract
This study aimed to investigate the effects of dietary supplementation with fermented soybean meal (FSM) or fermented miscellaneous meal (FMM, cottonseed meal: coconut meal = at a 1:1 ratio) on the intestinal health, laying performance, egg quality, and follicle development of laying hens. A total of 1,008 54-wk-old laying hens were randomly divided into 7 treatment groups and fed a corn-soybean base diet in addition to 2%, 4%, and 8% FSM or FMM. The results showed that fermentation increased the contents of crude protein, amino acids (Ser, Gly, Cys, Leu, Lys, His, and Arg), and organic acids (butyric acid, citric acid, succinic acid) and decreased the contents of neutral and acid detergent fiber in the soybean and miscellaneous meals (P < 0.05). Compared with the results found for the control group, feeding with 4% FSM increased the egg production, egg mass and average daily feed intake (ADFI), and feeding with 4% FMM increased the ADFI of laying hens (P < 0.05). Furthermore, feeding with 8% FMM reduced the productive performance and laying performance, supplementation with 4% FSM increased the eggshell strength and weight, and 2 to 4% FSM increased the egg albumen height and Haugh unit (P < 0.05). Moreover, 2 to 8% FSM or 2 to 4% FMM enhanced the apparent digestibility of dry matter, crude protein, and NDF for laying hens (P < 0.05). The relative weight, villus height, crypt depth, and villus:crypt ratio of the jejunum were higher in the 4% FSM- and FMM-fed groups (P < 0.05). Moreover, diamine oxidase (DAO) activity, transepithelial electrical resistance (TEER), and the expression of tight junction proteins (ZO-1, Occluding, and Claudin1), the intestinal stem cell marker Lgr5, and the proliferation cell marker proliferating cell nuclear antigen (PCNA) was upregulated in the jejunum of laying hens fed 4% FSM and FMM (P < 0.05). The relative weight of the ovaries, and the number of small yellow follicles and large white follicles were elevated after 4% FSM or FMM supplementation. Furthermore, the levels of serum follicle-stimulating hormone and luteinizing hormone were increased in the 4% FSM and FMM groups (P < 0.05). In conclusion, the supplementation of laying hen feed with FSM and FMM improved the laying performance, egg quality, intestinal barrier function, and follicle development of aged laying hens, and 4% FSM supplementation was optimal.

Abstract
Epidemiological investigations have shown that consumption of soybeans or soy foods reduces the risk of the development of cardiovascular disease, cancer and osteoporosis. The aim of this study was to determine the associations between different soy foods and inflammatory markers, including high-sensitivity C-reactive protein (hs-CRP), interleukin (IL)-6, and IL-18, in Japanese workers. The cross-sectional study included 1,426 Japanese workers (1,053 men and 373 women) aged 20 to 64 years. Intake of 12 soy foods was estimated by a validated food frequency questionnaire. Associations of total soy foods, fermented soy food, non-fermented soy food, soy isoflavone with hs-CRP, IL-6, and IL-18 levels were examined by general linear model regression analysis. We found that total fermented soy food intake was inversely associated with multivariable-adjusted geometric concentration of IL-6 in men (Q1:1.03 pg/mL, Q5:0.94 pg /mL;P for trend = 0.031). Furthermore, it was shown that IL-6 concentrations were inversely associated with miso intake (β = -0.068;p = 0.034) and soy sauce intake in men (β = -0.074;p = 0.018). This study suggests that intake of total fermented soy food, miso and soy sauce be associated with IL-6 concentrations in Japanese men. J. Med. Invest. 65:74-80, February, 2018.

Abstract
In order to increase nutritive values of soybean meal (SBM), 3 species of microbes were used to ferment SBM. Through a 3 × 3 orthogonal design and parameter measurements of soybean peptide and anti-nutritional factor contents in the fermented soybean meal (FSBM), it was estimated that the best microbial proportion of Bacillus subtilis, Hansenula anomala and Lactobacillus casei was 2:1:2 for SBM fermentation (P < 0.05). The further piglet feeding experiment showed that 10% FSBM substitute for SBM had no significant effect on growth performance of suckling piglets (d 7-28) (P > 0.05). However, newly-weaned piglets (d 28-38) fed 10% FSBM and different levels of plasma protein obtained higher average daily gain (ADG) and feed conversion ratio (FCR), compared with those without FSBM but with 6% plasma protein (P < 0.05). Piglets (d 38-68) fed diets supplemented with FSBM and soybean protein concentrate (SBPC) at 3.75% and 7.5% respectively increased nutrient digestibility, fecal enzyme activity and lactic acid bacteria counts, and decreased fecal Escherichia coli counts (P < 0.05), compared with the control. These data indicated that FSBM had positive effects on nutrient digestibility and fecal microflora for piglets.

Abstract
1-Deoxynojirimycin (DNJ) is widely used for the treatment of diabetes mellitus as an inhibitor of intestinal α-glucosidase. However, there are few reports about its effect on insulin sensitivity improvement. The aim of the present study was to investigate whether DNJ decreased hyperglycemia by improving insulin sensitivity. An economical method was established to prepare large amounts of DNJ. Then, db/db mice were treated with DNJ intravenously (20, 40 and 80 mg·kg(-1)·day(-1)) for four weeks. Blood glucose and biochemical analyses were conducted to evaluate the therapeutic effects on hyperglycemia and the related molecular mechanisms in skeletal muscle were explored. DNJ significantly reduced body weight, blood glucose and serum insulin levels. DNJ treatment also improved glucose tolerance and insulin tolerance. Moreover, although expressions of total protein kinase B (AKT), phosphatidylinositol 3 kinase (PI3K), insulin receptor beta (IR-β), insulin receptor substrate-1 (IRS1) and glucose transporter 4 (GLUT4) in skeletal muscle were not affected, GLUT4 translocation and phosphorylation of Ser473-AKT, p85-PI3K, Tyr1361-IR-β and Tyr612-IRS1 were significantly increased by DNJ treatment. These results indicate that DNJ significantly improved insulin sensitivity via activating insulin signaling PI3K/AKT pathway in skeletal muscle of db/db mice.
