Low prevalence of healthful dietary behaviors in a California agricultural county: emphasis on white and Mexican-American adults

Dietary Intake Patterns and Acculturation Levels of Hispanic Immigrant Men: A Pilot Study

Dietary intake and acculturation were investigated in a nonrandom, cross-sectional study of 106 Hispanic men of Mexican or Central American heritage (1990-1991). The purpose was to profile dietary intake patterns, identify post-migration dietary changes, and determine the contribution of traditional Hispanic foods to the diet. Mean intake levels for all nutrients were at or above 100% of the U.S. Recommended Daily Allowances. Relative to consumption patterns prior to migration, participants reported higher current intakes of prepared foods high in fat and high in sugar; sugared drinks, and poultry and wheat; they reported lower current intakes of lard, margarine, cheese, fish, pork, and poultry skin. Traditional foods contributed almost half of participants'energy intake. Few significant correlations were found between acculturation and nutrient intake.

Correlation of omega-3 fatty acids intakes with acculturation and socioeconomic status in midwestern Latinas

BACKGROUND

Low socioeconomic status (SES) and acculturation of Latino immigrants in the U.S. are linked to a decrease in diet quality.

METHODS

Interviews were conducted with 162 first generation Latinas to examine the association of SES and acculturation with intake of omega-3 (n - 3) fatty acids. Each participant provided dietary intake by use of a validated n - 3 food frequency questionnaire administered twice, 4 weeks apart, three 24-h recalls, sociodemographic information and completed the 5-item Short Acculturation Scale.

RESULTS

Mean intakes of Total n - 3, α-linolenic acid (ALA), eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) (g/d) were 1.2 ± 0.7, 1.1 ± 0.6, and 0.1 ± 0.1, respectively. After adjusting for energy intake, education was significantly correlated with EPA + DHA intakes, and acculturation was significantly correlated with Total n - 3, ALA and EPA + DHA intakes. Foods sources of EPA + DHA eaten by at least 50% of participants were chicken, shrimp, tuna and eggs.

DISCUSSION

Given the beneficial cardiovascular effects of n - 3 fatty acids, it is important to understand sociocultural factors affecting adequate intake towards an improvement in diet quality in minorities.

A systematic review of the relationship between acculturation and diet among Latinos in the United States: implications for future research

Dietary intake is an important determinant of obesity and numerous chronic health conditions. A healthful diet is an essential component of chronic disease self-management. Researchers have indicated that the healthfulness of the Latino diet deteriorates during the acculturation process. However, given the many operationalizations of acculturation, conclusive evidence regarding this relationship is still lacking. This comprehensive and systematic literature review examines the relationship between acculturation and diet by examining national, quantitative, and qualitative studies involving Latinos living in the United States. Studies of diet included those that examined dietary intake using one of several validated measures (eg, food frequency questionnaire, 24-hour dietary recall, or dietary screener) and/or dietary behaviors (eg, away-from-home-eating and fat avoidance). Articles were identified through two independent searches yielding a final sample of 34 articles. Articles were abstracted by two independent reviewers and inter-rater reliability was assessed. Analyses examined the extent to which various measures of acculturation (ie, acculturation score, years in the United States, birthplace, generational status, and language use) were associated with macronutrient intake, micronutrient intake, and dietary behaviors. Several relationships were consistent irrespective of how acculturation was measured: no relationship with intake of dietary fat and percent energy from fat; the less vs more acculturated consumed more fruit, rice, beans, and less sugar and sugar-sweetened beverages. Additional observed relationships depended on the measure of acculturation used in the study. These findings suggest a differential influence of acculturation on diet, requiring greater specificity in our dietary interventions by acculturation status.

Correlates of body mass index and waist-to-hip ratio among Mexican women in the United States: implications for intervention development

INTRODUCTION

This study contributes to our understanding of acculturation and obesity by examining the association between several measures of acculturation, including a bidimensional scale of acculturation, body mass index (BMI), and waist-to-hip ratio (WHR).

METHODS

Exploratory analyses were performed using baseline data from 357 Mexican women recruited into a Spanish-language randomized community trial. The women were randomly sampled by telephone and interviewed in their homes. Women's height, weight, waist, and hip were measured to obtain estimates of their BMI and WHR. A face-to-face interview collected data on dietary intake, physical activity, acculturation, and other demographic and psychosocial variables.

RESULTS

Less than a quarter of the women were normal weight (39% overweight and 41% obese). Univariate analyses revealed that more years living in the United States and less integration into the Anglo culture were associated with a larger BMI and WHR. However, in the multivariate analyses, significant correlates of a larger BMI were less moderate physical activity and unemployment. There were trends linking a larger BMI with older age, no vigorous physical activity, more energy intake, and less integration into the Anglo culture. These same variables plus less household income were associated with a higher WHR. Exploratory analyses on acculturation revealed that bicultural Mexican-American women were more educated, more likely to be employed, reported a higher household income, and perceived fewer barriers to a healthy diet compared with traditional Mexican women.

CONCLUSIONS

Intervention designed to prevent overweight/obesity should consider promoting maintenance of Mexican cultural practices, as well as teach women how to effectively integrate into the Anglo culture.

Correlation of dietary intake and colorectal cancer incidence among Mexican-American migrants: the multiethnic cohort study

Studies of migrants, along with geographic and temporal variations in incidence, indicate that colorectal cancer is especially sensitive to changes in environmental factors, including, most importantly, diet. The goal of this research was to examine the changes in dietary practices that may be consistent with the changing incidence of colorectal cancer in the Los Angeles Mexican-American population. Cancer incidence and dietary intake data were available for over 35,000 Latinos of Mexican national origin currently participating in the prospective Multiethnic Cohort Study, representing the largest sample of Mexican-origin Latinos of any such study in the United States. The dataset is unique in that changes in cancer rates and in dietary behaviors across three generations could be examined. Most of the change in colorectal cancer rates occurred between the first and second generations, and, correspondingly, nearly all the dietary change also occurred between the first and second generations. Although some food traditions were retained by Mexican Americans, the dietary changes due to acculturation were significant and support an association between colorectal cancer risk and certain dietary components, notably, alcohol as a risk factor and nonstarch polysaccharides and vegetables as protective factors.

Environmental changes may be needed for prevention of overweight in minority children

In minority populations, those who do not maintain normal weight outnumber those who do; thus, overweight is often the community norm. Compared to many white populations, minority populations are transitioning from poverty, food scarcity, and jobs that require significant amounts of energy expenditure. This may mean food and activity habits of both black and Latino populations may have been developed during a more physically-active era. Caloric restriction and leisure-time physical activity are not routine in minority communities. In these communities, there are often few supermarkets that carry fresh produce, many fast food establishments and small grocery stores that sell high-fat, energy-dense foods, and high neighborhood crime rates that discourage outdoor activities and limit safe places for walking and bicycling, including school routes. Although specific dietary and activity behaviors related to weight control ultimately are undertaken by individuals, our current environment makes such individual choices difficult when it contains substantial barriers to establishing healthy lifestyles. Substantial environmental changes need to be made, especially in minority communities.
