Abstract
In ovo feeding (IOF) of nutrients is a viable method for increasing muscle mass through hyperplasia and hypertrophy. The objective of this study was to evaluate the effects of IOF of L-arginine (Arg) on breast muscle weight, muscle morphology, amino acid profile, and gene expression of muscle development in slow-growing chickens. Four hundred eighty fertilized eggs were randomly divided into two groups: the first group was the non-injected control group, and the second group was the Arg group, injected with 1% Arg (0.5 mL) into the amnion on day 18 of incubation. After hatching, 160 birds from each group were randomly divided into four replicates of 40 birds each. This experiment lasted for 63 days. The results showed that IOF of Arg did not affect (P > 0.05) breast muscle weight, muscle morphology, and mRNA expression of mammalian target of rapamycin (mTOR) signaling pathway in slow-growing chickens. However, the amino acid profile of breast muscle was altered (P < 0.05) on the day of hatching (DOH), day 21 (D21), and day 42 (D42) post-hatch, respectively. Myogenic factor 5 (Myf5) mRNA expression was upregulated (P < 0.05) on D21 post-hatch. Myogenic regulator 4 (MRF4) mRNA expression was increased (P < 0.05) on DOH. And myogenin (MyoG) was increased (P < 0.05) on DOH and D21 post-hatch, in the Arg group compared to the control group. Overall, IOF of 1% Arg improved the expression of myogenic genes but did not influence muscle morphology and BMW. These results indicate that in ovo Arg dosage (0.5 mL/egg) has no adverse effect on breast muscle development of slow-growing chickens.

Abstract
1. Korat (KR) chicken is a new meat-type chicken breed established with the purpose of developing Small and Micro Community Enterprise Production. This slow-growing chicken has been recognised for its good texture and flavour, but its low feed efficiency is associated with high cost of production which can hamper the development of local production. This has highlighted the importance of studying the trade-off between feed efficiency and meat quality in KR chicken.2. This study investigated the phenotypic correlations between feed efficiency, growth performance, and meat quality in KR chicken. Individual body weight and feed intake were recorded weekly for 75 male KR chickens for the calculation of feed conversion ratio (FCR) and residual feed intake (RFI). The growth curve was modelled by Gompertz function and meat quality evaluated at 10 weeks of age, through the measurement of pH (pHu), water-holding capacity (WHC) and drip loss (DL) in breast and thigh muscle.3. Faster growth rate at young age appeared favourable, regarding feed efficiency, since a moderate negative correlation was found between FCR and initial growth rate. Chickens with a higher initial growth and maturation rates were characterised by lower water-holding capacity in meat. This was not associated with acidic meat, since a higher speed of growth (especially in the first weeks) was positively associated with final pH in breast meat. Relationships between RFI and meat quality traits appeared to be weak. While better FCR could be achieved by increased initial growth rate, this seemed to negatively impact water-holding capacity of the meat.4. RFI appeared as an interesting alternative as a compromise between FCR and meat quality.

Abstract
This research evaluated the properties of cured chicken breasts of broiler chicken with different marketing ages (28, 30, 32, and 34 day). The water contents in the proximate compositions of the samples tended to decrease with increasing marketing age, while the protein content increased. The samples’ uncooked and cooked pH values, WHC, and cooking yield increased with increasing marketing age; however, the WHC and cooking yield were not significantly different between the 32 and 34 day samples (p > 0.05). In the case of the color, the 34 day samples were significantly lower in terms of lightness, but significantly higher in redness and yellowness compared to the other samples (p < 0.05). Although the shear forces of the 28–32 day samples were not significantly different (p > 0.05), those of the 28 and 30 day samples were significantly lower than those of the 34 day sample (p < 0.05). Furthermore, the aromatic profile (determined by principal component analysis) of the 34 day sample differed from that of the 28–32 day samples. Flavor evaluation of the cooked 30 and 32 day samples showed significant differences compared to the 28 and 34 day samples (p < 0.05), and the texture evaluation showed that the 34 day sample obtained a significantly lower score than the 28 day sample (p < 0.05). Overall, these results suggest that the current broiler marketing age of 32 day results in suitable quality properties for broiler cured chicken breast.

Abstract
Poultry meat mainly comes from standard production system using high growth rate strains reared under indoor intensive conditions. However, it is possible to find also different alternative systems using outdoor extensive rearing conditions and slow-growing lines. These different production systems can affect carcass and meat quality. In this review, quality has been broken down into six properties: commercial, organoleptic, nutritional, technological, sanitary and image, the latter covering the ethical, cultural and environmental dimensions associated with the way the meat is produced, as well as its origin and being particularly valued in many quality labels. The quality of meat is built and can deteriorate along the continuum from the conception of the animal to the fork. Our review details the different factors implicated in the determinism of poultry meat properties and pinpoints critical periods, such as the preslaughter and slaughter periods, and key factors, such as the feeding regimen, via its direct effect on the fatty acid profile, the antioxidant and volatile compound contents, and indirect effects mediated via the growth rate of the bird. Our review also highlights potential antagonisms between different dimensions of quality. The genetic selection for breast meat yield, for example, has been effective in producing carcasses with higher meat yield, but resulting since a decade in the increased occurrence of quality defects and myopathies (white striping, wooden breast, spaghetti meat and deep pectoral disease). Outdoor access has positive effects on the image and nutritional properties (through its effect on the fatty acid profile of meat lipids), but it increases the exposition risk to environmental contaminants and pathologies (parasites, virus, bacteria); it also increases the variability in meat quality linked to the variability of animal performance and slaughter age. The orientation towards more agro-ecological low-input farming systems may present benefits for the image and nutritional properties, but also risks for the commercial (low carcass weight and low breast yield, irregularity in supply), organoleptic (stronger flavour, less tender and darker colour of the meat) and in terms of variability of the different properties that constitute quality. Efforts should be made in the future to better take into account the various dimensions of quality, in consumer information, payment to farmers and genetic selection.

Abstract
1. The aim of the present study was to investigate increasing amount of n-3 fatty acids (FA) in common edible chicken meat cuts by testing different levels of extruded linseeds (LS) and rapeseed oil in growing and finishing diets. Another challenge was to replace a part of soybean meal by faba beans.2. For that purpose, 3168, one-day-old Hubbard JV15 strain chickens were distributed into six groups: R1 = control diet, R2 = 3% then 5% LS, R3 = 4% then 6% LS, R4 = 5% then 7% LS, R5 = 3% then 5% LS and a low amount of soybean meal in the finishing diet and R6 = 3% then 5% LS and no soybean meal in the finishing diet. The growing performance was recorded throughout the trial. At 30 days of age, all chickens were slaughtered in a commercial slaughter plant at an average weight of 1322 g, to mirror the production of low body weight 'broiler griller' birds commonly available for export markets. Thirty carcases per group were processed to determine cut yields. The edible parts from each half carcase were removed to determine the chemical composition and fatty acid composition of meat with skin. The sensorial quality of thighs was evaluated for 20 carcases per group, after roasting. The environmental and economic impacts of the feeding programmes were further evaluated.3. This study showed that it was possible to replace a part of the soybean meal in finishing diet by faba beans and to enrich meat with n-3 FA of broiler meat portions without altering growth performance, carcase composition and sensorial quality of meat. The environmental impact was reduced by these dietary interventions, whereby climate change parameters, expressed as kg CO2 eq./T, and phosphorus and fossil energy consumption were lower, but the land occupation was increased. The extra feed cost was +3 to +8% for groups fed R2 to R6 compared to the control group R1.

Abstract
Slow-growing broilers offer differentiation in the chicken meat market for consumers who have distinct preferences based on perceived higher welfare indices and willingness to pay a higher price for the product. Although breeding for slow-growing broilers is relatively advanced in Europe and the United States, it is limited in Australia. Crossbreeding is one of the approaches taken to developing slow-growing broiler strains. Thus, the aim of this study was to compare performance, immune response, leg health, carcass characteristics, and meat quality of a novel crossbred slow-growing broiler breed (SGB) with the conventional, fast-growing Cobb 500 broiler (CB) to assess their suitability as an alternative for chicken meat production in Australia. A total of 236 one-day-old broiler chicks (116 SGB and 120 fast-growing CB) were reared on standard commercial diet in an intensive production system. Birds and feed were weighed on a weekly basis and feed intake and feed conversion ratio calculated. At 21 d of age, a 2% suspension of sheep red blood cells was injected subcutaneously into 8 broilers of each breed to compare their antibody response. Birds from both breeds were grown to a final live weight of 2.0–2.2 kg, before a latency-to-lie (LTL) test, carcass analysis and apparent metabolizable energy (AME) assay were performed. The SGB reached the target weight at 55 d of age compared with 32 d in CB. However, SGB stood for longer during LTL, had higher thigh, drumstick, and wing yields (as a percentage of carcass weight) as well as darker and redder meat in comparison with the CB. The CB had better feed conversion efficiency, higher antibody (IgM) production, higher AME, heavier breast yield, and lower meat drip loss than the SGB. Although fast-growing CB outperformed the SGB for traditional performance parameters, the crossbred in this study was comparable with other slow-growing broiler breeds and strains across different countries and is thus a suitable candidate for a slow-growing alternative in Australia.

Abstract
Meat tenderness is considered as the most important criterion for meat quality by consumers and can be improved by the actions of endogenous proteases, mainly calpains, during postmortem storage at 0-5°C. The purpose of this study, therefore, was to examine the postmortem calpain activation and proteolysis in breast (BM) and leg and thigh (LM) muscles of White Roman goose. BM and LM were taken from goose carcasses (n = 15) at 0 (10-15 min postmortem), 1, 3, and 7 days of storage at 5°C. The decrease in postmortem pH, calpain-1 and -11 activities, and contents of the calpain-1 80 kDa subunit and desmin was more rapid (p < .05) in BM than in LM. Our results show that postmortem proteolysis was more extensive in BM than in LM of White Roman goose, not only because the difference in fiber type composition between two muscles, but because the rate and extent of calpain activation were greater in BM as well. These results may provide useful information to optimize meat processing for different muscles in goose industry.

Abstract
Simple Summary One-day-old laying cockerels are killed after hatching because they do not reach the growth rate of broiler chickens, and their fattening would be economically disadvantageous. A possible variant of the use of these cockerels could be organic or free-range farming, where it is desirable that the animals are fattened for a longer period of time, are more physically active, and graze pasture vegetation. Another possibility is dual-purpose genotype breeding, where hens are used for egg production and cockerels are fattened for meat. In the present study, three genotypes of dual-purpose cockerels Dominant were compared. All three genotypes showed the ability to graze with resulting improvements in meat quality. The Dominant 102 cockerels have the greatest prerequisites for use in extensive fattening, mainly due to higher performance, willingness to graze and vitamin E content, which protects the fat from becoming rancid. Abstract The culling of layer cockerels due to economic inefficiency is an ethical problem. Organic or free-range fattening of these cockerels or dual-purpose genotypes breeding is a possible solution to this problem. The aim of the study was to assess the differences in performance and meat quality characteristics in dual-purpose cockerels Dominant of three genotypes (Dominant Sussex D 104, Dominant Brown D 102 and Dominant Tinted D 723, 100 cockerels per genotype) with access to pasture. The cockerels were housed in mobile boxes on the pasture herbage from the 50th to 77th day of age (stocking density: 0.108 m2/bird). The highest body weight on the 77th day of age (p < 0.001) and the nonsignificantly lowest feed conversion was achieved by Dominant Brown D 102 cockerels (1842 g and 2.79, respectively). Non-significantly higher pasture herbage intake on the 70th day of age was recorded in genotype Dominant Brown D 102 (7.41 g dry matter (DM)/bird/day) and Dominant Tinted D 723 (7.52 g DM/bird/day). The pasture herbage contained 56.9 mg/kg DM α-tocopherol, 170.3 mg/kg DM zeaxanthin and 175.0 mg/kg DM lutein and had a favourable n6/n3 ratio (0.26). The boiled meat of cockerels Dominant Tinted D723 showed the highest tenderness based on both the sensory evaluation (p = 0.022) and the value of shear force (p = 0.049). This corresponds with a higher (p < 0.001) cross-sectional area and muscle fibre diameter in these chickens. The highest content of n3 fatty acids (eicosapentaenoic, clupanodonic and docosahexaenoic acids) in breast meat were found in Dominant Sussex D104 chickens (p < 0.001). In contrast, a significantly higher α-tocopherol content (p < 0.001) and higher oxidative stability (p = 0.012) were found in Dominant Brown D102 (4.52 mg/kg and 0.282 mg/kg) and Dominant Tinted D 723 chickens (4.64 mg/kg and 0.273 mg/kg) in comparison with the Dominant Sussex D104 genotype (3.44 mg/kg and 0.313 mg/kg). The values of the atherogenic and thrombogenic indexes were the lowest (p < 0.001) in meat from Dominant Brown D102 chickens. Moreover, a lower cholesterol content (p < 0.001) was recorded from the genotypes Dominant Brown D102 (396 mg/kg) and Dominant Tinted D723 (306 mg/kg) chickens, contrary to the Dominant Sussex D104 cockerels (441 mg/kg). It can be concluded that cockerels Dominant Brown D102 are a suitable genotype for free-range rearing due to higher performance and higher pasture herbage intake, which positively influences meat quality, whereas the meat of Dominant Sussex D104 cockerels shows higher amounts of n3 fatty acids and lower n6/n3 ratios.

Abstract
Slow-growing chicken lines are valuable genetic resources for the development of well-perceived alternative free-range production. While there is no constraint on increasing growth rate, breeding programs have to evolve in order to include new traits improving the positioning of such lines in the growing market for parts and processed products. In this study, we used dense genotyping to fine map QTL for chicken growth, body composition, and meat quality traits in view of developing new tools for selection of a slow-growing line. The dataset included a total of 836 birds (10 sires, 87 dams, 739 descendants) and 40,203 SNP. QTL for the 15 traits analyzed were detected by 3 different methods, i.e., linkage and linkage disequilibrium haplotype-based analysis (LDLA), family-based single marker association (FASTA), and Bayesian multi-marker regression (Bayes Cπ). After filtering for QTL redundancy, we found 16, 16, and 9 QTL when using the FASTA, LDLA, and Bayes Cπ methods, respectively, with a threshold of 2.49 × 10-5 for FASTA and LDLA, and a Bayes factor of 150 for the Bayes Cπ analysis. They comprised 17 QTL for body weight, 9 QTL for body composition, and 15 QTL for breast meat quality or behavior at slaughter. The 3 methods agreed in the detection of highly significant QTL such as that detected on GGA24 for body weight at 3, 6, and 9 wk, and the 2 QTL detected on GGA17 and GGA18 for breast meat yield. Several significant QTL were also detected for the different components of breast meat quality. This study provided new locations for investigation in order to improve our understanding of the genetic architecture of growth, carcass composition, and meat quality in the chicken and to develop molecular tools for the selection of these traits in a slow-growing line.

Abstract
The aim of this study was to determine the effect of herbal feed additive on
growth performance, carcass characteristics, the chemical composition of
breast muscles and selected meat quality parameters in broiler chickens. The
experiment was performed on 1080 Ross 308 chickens, which were randomly
divided into six groups with six replicates per group. In experimental groups,
dietary energy concentration was reduced by 0.10 or 0.25 MJ kg-1, and
the diets were or were not supplemented with the Superliv herbal formula at
500 g t-1 of diet. A statistical analysis revealed that Superliv had a
beneficial influence on the final body weights (BWs) of birds, average daily
gain (ADG), feed conversion ratio (FCR), European Efficiency Index (EEI) and
the proportion of heart relative to total carcass weight. However, meat
acidity measured 15 min post mortem was higher in experimental groups. A
decrease in dietary energy concentration contributed to a highly significant
increase in the water-holding capacity (WHC) of meat and natural drip loss,
an increase in pH15, an increase in color lightness, a
decrease in redness, an increase in the fat content of meat, and a decrease
in malondialdehyde (MDA) concentration.

Abstract
The technological, nutritional, and sensorial quality of breasts and thighs with drumsticks of turkey male and female breeders was characterized by comparison with breasts and thighs with drumsticks of growing male and female turkeys from the Grademaker line (hybrid turkeys, n = 20 birds per sex and per physiological stage). The breeder turkeys were slaughtered at 397 and 410 days of age and 10.42 and 32.67 kg of body weight for the females and males, respectively. The standard turkeys were slaughtered at 75 and 103 days of age and 5.89 and 13.48 kg of body weight for the females and males, respectively. The differences observed between males and females on one hand and between standard and breeder turkeys on the other hand were mainly induced by differences in slaughter ages and sexual dimorphism on body weight. The meat of female breeders had characteristics close to those of female and male standard turkeys, whereas the meat of male breeders was clearly distinguishable, particularly by displaying lower tenderness and water holding capacity.

Abstract
Over 40 million day-old layer line cockerels are culled in Germany each year, due to economic reasons, leading to a recently instigated research focus on the potential of dual-purpose breeds as an alternative to conventional poultry husbandry, especially the practice of culling. This paper aims to explore and assess the dual-purpose chicken breed “Lohmann Dual” (LD) performance (n = 30) and sensory characteristics (n = 48). Carcass and meat quality traits are evaluated, and descriptive sensory analysis of breast muscles is conducted. To define the scope of characteristics, a market sample of “Ross” Line (n = 35) is adducted. LD carcasses are characterized by higher leg than breast yield; carcass, breast and leg weights are higher in Ross. LD meat has a lower pH, differs in color, has higher drip and thawing losses, but lower cooking loss. LD breast muscles are firmer as indicated by shear force measurements, which is confirmed through the sensory analysis. Appearance, odor and flavor differ between the lines. Overall, distinguishable differences are found between both breeds. Further research should focus on the marketing aspect of the dual-purpose line, as some characteristics could draw consumers to this product. Animal welfare and ethical concerns should further be considered when considering dual-purpose breeds as a feasible alternative to culling.

Abstract
Abstract. The results of this study constitute a part of a project aiming at developing a cross-breed suitable for an extensive rearing system, utilising local biodiversity. Hybrids from mating a commercial broiler's male component (C) with Green-legged Partridgenous (GP) or Sussex (Sx) hens were compared with Cobb broilers. The study included 720 chickens of 3 genetic groups. Up to the third week of age, all birds were fed with balanced mixtures recommended for broiler chickens. From the fourth week, the mixture was weekly reduced by 10 % for the birds kept extensively (E). The deducted part was replaced with wheat bran, and from the seventh week with wheat. E groups had access to runs and received green fodder. Birds were slaughtered in 12th week of life. Carcass yield, giblets and proportion of carcass elements were estimated along with meat traits. The body weight at the 6th, 9th, 12th week of rearing and dissection results indicated a good suitability of Cobb chickens for an extensive rearing system. Hybrids were characterised by a considerably smaller proportion of breast muscle and slightly bigger of thighs and drumsticks, compared with Cobb, which could result from their greater motor activity. Results obtained by C × Sx and C × GP chickens, such as final body weight, proportions of abdominal fat and carcass elements, and appropriate value of meat traits, point at the usefulness of these hybrids as a meat-type chicken under extensive housing conditions. Darker colour of chicken meat, derived from C cocks and Sx or GP hens crossbred, can constitute an indicator for their carcasses' identification on the market.

Abstract
The characteristics of meat quality, chemical and fatty acid composition, from fast-growing (FG) and medium-growing (MG) meat-type and slow-growing (SG) egg-type chickens reared under organic conditions were compared. Three-hundred and sixty 1-day-old male chicks, equally divided into three experimental groups represented by strains (FG: Cobb 700, MG: Naked neck Kabir and SG: Brown Classic Lohman) were housed into three poultry houses with outdoor pasture availability of 10 m(2)/bird located in the same Research Centre of the University of Perugia. All the birds were fed ad libitum the same diets formulated according to the European Union (EU) Regulations by using organic raw materials. Birds from the FG and MG groups were raised until 81 days, whereas birds from the SG group were raised until 96 days in order to achieve an acceptable market live weight. SG birds showed significantly (P < 0.01) higher breast meat drip and cook losses, Allo-Kramer shear values and collagen content. In comparison with FG and SG, MG exhibited a higher breast meat pH (5.86% v. 5.79% and 5.78%, respectively; P < 0.01) and a lower lightness (54.88% v. 57.81% and 56.98%, respectively; P < 0.05). Genotype dramatically affected the lipid content as well as the fatty acid composition of both breast and thigh meat. SG exhibited the lowest content of lipid, both in breast and in thigh meat, the lowest proportions of monounsaturated fatty acids (MUFA) and the highest proportions of polyunsaturated fatty acids (PUFA). The total n-3 PUFA of SG breast meat was double that of FG meat and intermediate with respect to MG birds (8.07% v. 4.07% v. 5.14% total fatty acids; P < 0.01). The fatty acid composition of thigh meat is similar to that of breast meat, but the differences among genotypes are less pronounced. Total saturated fatty acids were not affected by the genotype. In conclusion, meat functional properties of FG and MG strains appeared much more attractive both for industry and consumer (lower drip and cook losses and higher tenderness), whereas from a nutritional point of view, meat from SG appeared healthier (less fat and higher content of n-3 PUFA) and thus might better fit with the consumer's expectations of organic products.

Abstract
A multistrain experiment was conducted to quantify the extent of genetic differences in carcass and muscle yields, muscle quality, support organs, and taste panel assessments of cooked breast muscle of 296 birds from 37 lines of commercial broiler, layer, and traditional chickens. The birds were reared as broilers and 4 males from each line were slaughtered at 6 and 10 wk of age. The extent of genetic variation was measured as the intraclass correlation. The intraclass correlation for live weight; carcass yields; breast, drum, and wing portions; and associated muscle yields were high, whereas those for the thigh portion and yield were low. Broilers had more breast and thigh muscle but similar drum muscle as a proportion of carcass weight compared with layer and traditional lines. Genetic variation for muscle quality (plasma creatine kinase activity) was high; that for muscle color (L, a, and b) and hemorrhage score were moderate in size and were greater at 10 than at 6 wk of age. Broiler lines had greater creatine kinase activity indicative of greater muscle pathology; breast muscle was lighter, less red and yellow in color, and had a greater hemorrhage score than muscle from layer and traditional lines, which were similar. Intraclass correlations for taste panel scores were low and generally not significant except for texture, chicken flavor intensity, flavor liking, and overall liking at 6 wk of age. Significantly greater scores from broiler compared with layer and traditional lines for texture, chicken flavor intensity, and overall liking were observed. At 10 wk of age, chicken flavor intensity did not differ between broiler or layer birds but was significantly greater in both groups than traditional birds. Genetic variation for relative weight of abdominal fat, spleen, and heart was moderately high and greater at 10 than at 6 wk of age. Broiler carcasses had a relatively high proportion of abdominal fat and smaller spleen and heart weights.

Abstract
Egg and production traits are of considerable economic importance in chickens. Using a White Leghorn x red junglefowl F(2) intercross, standard production measures of liver weight and colour, egg size, eggshell thickness, egg taste and meat quality were taken. A total of 160 markers covering 29 autosomes and the Z chromosome were genotyped on 175-243 individuals, depending on the trait under consideration. A total of nine significant quantitative trait loci (QTL) and three suggestive QTL were found on chicken chromosomes 1, 2, 4, 5, 7, 8, 10, 12, E47W24 and E22C19W28.

Abstract
1. Pectoralis major (P. major) muscle pH and meat quality traits were studied in relation to bird response to ante-mortem stress in three chicken lines: a fast-growing standard line (FGL), a slow-growing French 'Label Rouge' line (SGL) and a heavy line (HL). Ninety-nine birds of the three genetic types were slaughtered at their usual marketing age (6, 12 and 6 weeks for FGL, SGL and HL birds, respectively) on the same day. The birds of each line were divided into three different ante-mortem treatment groups: minimum stress (shackling for 10 s) (C), shackling for 2 min (SH) and acute heat plus shackling stress (exposure to 35 degrees C for 3.5 h and shackling for 2 min before stunning) (H + SH). 2. Regardless of chicken line, wing flapping duration (WFD) between hanging and stunning was strongly negatively related to P. major muscle pH at 15 min post-mortem. It was also moderately negatively related to P. major muscle glycolytic potential (GP), which represents glycogen level at death. Increasing WFD induced an increased ultimate pH (pHu) only in HL. The consequences of increased WFD for breast meat traits were dependent on the chicken line: it induced lower L* and b* and higher a* and drip loss in SGL while it only increased breast a* in HL birds. By contrast, WFD variations did not alter breast meat quality traits of FGL birds. Regardless of the chicken line, increased GP was associated with lower pHu and higher L* and drip loss. In SGL, it also increased b* and decreased curing-cooking yield of breast meat. 3. Struggling activity on the shackle line and muscle glycogen content at death could partly explain line and pre-slaughter variations in breast meat pH and quality traits. The water holding capacity of the raw and cooked meat was impaired by long shackling in the case of SGL birds while it was barely affected by ante-mortem conditions in the two standard lines. In conditions which minimised bird struggling (C), SGL and FGL birds had meat with a better water holding ability than that of broilers from the heavy line. However, when broilers were subjected to SH or H + SH conditions, the breast meat water holding capacity of SGL birds was lowered to the same level as that of the heavy line birds.
