Comprehensive Review of Seven Plant Seed Oils: Chemical Composition, Nutritional Properties, and Biomedical Functions

Ailanthus altissima Seed Oil-A Valuable Source of Lipid-Soluble Components with DNA Protective and Antiproliferative Activities

The present study is focused on the chemical and lipid composition of seed oil of the European ornamental and invasive wood plant Ailanthus altissima (Simaroubaceae). Total lipids, proteins, carbohydrates, ash, and moisture in the seeds were determined. A high yield of glyceride oil (30.7%) was found, as well as a high content of fibers (29.6%) and proteins (18.7%). Physicochemical properties of the oil define it as semi-dry (129.4 g I2/100 g Iodine value) with oxidative stability, refractive index, saponification value, and relative density similar to widely used oils with nutritional value and health benefits. The composition of the seed oil was determined chromatographically. Unsaturated fatty acids (95.3%) predominated in the seed oil, of which linoleic acid (48.6%) and oleic acid (44.8%) were the major ones. The main lipid-soluble bioactive components were β-sitosterol (72.6%), γ-tocopherol (74.6%), phosphatidylinositol (29.5%), and phosphatidic acids (25.7%). The proven in vitro DNA-protective ability of seed oil is reported for the first time. The seed oil exhibited a weak antiproliferative effect on HT-29 and PC3 tumor cell lines and showed no cytotoxicity on the BALB/c 3T3 cell line. In brief, the present study reveals that A. altissima seed oil can be used as a healthy food.

Changes in physicochemical, textural, and sensorial properties of pork meatballs made with the addition of hemp oil during storage

This research aimed to evaluate the quality characteristics of cooked and vacuum-packed meatballs reformulated with cold-pressed hempseed oil as a partial pork substitute (0.8%, 2.5%, 4.2%, and 7.5%) during 12 days of storage. The water activity, cooking, and storage losses increased with a higher content of hemp oil (P < 0.05). The total saturated fatty acids were reduced by 37.6%, whereas the polyunsaturated fatty acids content improved by 96.1%. Hemp oil addition decreased protein and lipid oxidation during the storage period (P < 0.05). The inhibition effect on carbonyl content reached 34.9% and on TBARS values reached 17.5%. Sensory analysis revealed no significant changes to the texture, odour, and taste attributes over 12 days of storage in vacuum packaging. The results indicate that cold-pressed hemp oil can be an alternative ingredient for the production of meat products with improved nutritional value, particularly by enriching them with n-3 α-linolenic fatty acid.

Assessment of Quality and Efficiency of Cold-Pressed Oil from Selected Oilseeds

In this present study, an oil press was used to process 200 g each of sesame, pumpkin, flax, milk thistle, hemp and cumin oilseeds in order to evaluate the amount of oil yield, seedcake, sediments and material losses (oil and sediments). Sesame produced the highest oil yield at 30.60 ± 1.69%, followed by flax (27.73 ± 0.52%), hemp (20.31 ± 0.11%), milk thistle (14.46 ± 0.51%) and pumpkin (13.37 ± 0.35%). Cumin seeds produced the lowest oil yield at 3.46 ± 0.15%. The percentage of sediments in the oil, seedcake and material losses for sesame were 5.15 ± 0.09%, 60.99 ± 0.04% and 3.27 ± 1.56%. Sediments in the oil decreased over longer storage periods, thereby increasing the percentage oil yield. Pumpkin oil had the highest peroxide value at 18.45 ± 0.53 meq O2/kg oil, an acid value of 11.21 ± 0.24 mg KOH/g oil, free fatty acid content of 5.60 ± 0.12 mg KOH/g oil and iodine value of 14.49 ± 0.16 g l/100 g. The univariate ANOVA of the quality parameters against the oilseed type was statistically significant (p-value < 0.05), except for the iodine value, which was not statistically significant (p-value > 0.05). Future studies should analyze the temperature generation, oil recovery efficiency, percentage of residual oil in the seedcake and specific energy consumption of different oilseeds processed using small-large scale presses.

Classification of multi-year and multi-variety pumpkin seeds using hyperspectral imaging technology and three-dimensional convolutional neural network

BACKGROUND

Pumpkin seeds are major oil crops with high nutritional value and high oil content. The collection and identification of different pumpkin germplasm resources play a significant role in the realization of precision breeding and variety improvement. In this research, we collected 75 species of pumpkin from the Zhejiang Province of China. 35,927 near-infrared hyperspectral images of 75 types of pumpkin seeds were used as the research object.

RESULTS

To realize the rapid classification of pumpkin seed varieties, position attention embedded three-dimensional convolutional neural network (PA-3DCNN) was designed based on hyperspectral image technology. The experimental results showed that PA-3DCNN had the best classification effect than other classical machine learning technology. The classification accuracy of 99.14% and 95.20% were severally reached on the training and test sets. We also demonstrated that the PA-3DCNN model performed well in next year's classification with fine-tuning and met with 94.8% accuracy.

CONCLUSIONS

The model performance improved by introducing double convolution and pooling structure and position attention module. Meanwhile, the generalization performance of the model was verified, which can be adopted for the classification of pumpkin seeds in multiple years. This study provided a new strategy and a feasible technical approach for identifying germplasm resources of pumpkin seeds.

Fatty Acid Composition of Pseudocereals and Seeds Used as Functional Food Ingredients

In recent times, the popularity of seeds, other than cereals, in the diet has systematically grown. The fat contained in these products significantly affects their energy value as well as their biological and physicochemical properties, including their susceptibility to oxidation. The objective of this study is to evaluate the fat concentration and fatty acid (FA) composition of popular non-spice seeds used in food as a substitute for cereals or a functional additive. The research material consisted of thirteen groups of seeds derived from the following plants: amaranth, blue poppy, buckwheat, chia, flax, hemp, canihua, milk thistle, pumpkin, plantago, quinoa, sesame, and sunflower. The fat contents and fatty acid profiles differed significantly between the tested products and were dependent on the plant species. In all products, polyunsaturated fatty acids (PUFAs, 40-80% of total FAs) dominated. Linoleic acid was the main FAs in most tested seeds. The exceptions were chia and flax seeds, which were characterized by very high contents of α-linolenic acid, respectively, 62.0 and 51.4% of the total FAs. The share of monounsaturated FAs (mainly oleic acid) in the total FAs content was between 6 and 40%. All tested seeds (especially flax, chia, and hemp) have favorable values for their indexes of atherogenicity and thrombogenicity as well as the hypocholesterolemic/hypercholesterolemic ratio.
