Abstract
Cereal (1,3)(1,4)-β-d-glucans, known as β-d-glucans, are cell wall polysaccharides observed in selected plants of grasses, and oats and barley are their good natural sources. Thanks to their physicochemical properties β-d-glucans have therapeutic and nutritional potential and a specific place for their functional characteristics in diverse food formulations. They can function as thickeners, stabilizers, emulsifiers, and textural and gelation agents in beverages, bakery, meat, and extruded products. The objective of this review is to describe the primary procedures for the production of β-d-glucans from cereal grains, to define the processing factors influencing their properties, and to summarize their current use in the production of novel cereal-based foods. Additionally, the study delves into the utilization of β-d-glucans in the rapidly evolving field of nanotechnology, exploring potential applications within this technological realm.

Abstract
Phenolic amides contained in oats (Avenanthramides; AVNs) are biologically active substances with strong antioxidant activity. In this paper, we evaluated efficiency of three C18 chromatographic columns (Symmetry, XBridge, Cortecs) with different particle technology and particle sizes for the separation of three major avenanthramides (AVN A, AVN B, AVN C). We compared columns in terms of retention times, retention factors of AVNs and in terms of other parameters such as number of theoretical plates, height equivalent to a theoretical plate, reduced plate height, resolution and in terms of peak symmetry, respectively. Limits of detection and limits of quantification of AVNs on all columns were calculated. Retention results of AVNs on individual columns showed a significant reduction in retention times of AVNs on solid core column with a particle size 2.7 μm compared to columns with particle size 3.5 μm. Within columns with 3.5 μm particles, separation on Symmetry C18 column appeared to be more efficient than on the XBridge C18 column. In general, results achieved on Cortecs C18 column can be considered as the best in terms of both separation efficiency and retention times.

Abstract
Oat is an important natural source of β-D-glucan. This polysaccharide of the cell wall of selected cereals is known for a number of health-promoting effects, such as reducing the level of cholesterol in the blood serum, stabilizing the level of blood glucose, or enhancing immunity. β-D-glucan has positive effects in the plant itself. There is a lack of information available, but the storage capacity of the polysaccharide and its importance as a protective substance in the plant during mild forms of biotic and abiotic stress are described. The accumulation of β-D-glucan during the ontogenetic development of oats (Avena sativa L.) was determined in the present work. Two naked (Valentin, Vaclav) and two hulled (Hronec, Tatran) oat varieties were used. Samples of each plant (root, stem, leaf, panicle) were collected in four stages of the plant’s development (BBCH 13, 30, 55, 71). The average content of the biopolymer was 0.29 ± 0.14% in roots, 0.32 ± 0.11% in stems, 0.48 ± 0.13% in leaves and 1.28 ± 0.79% in panicles, respectively. For root and panicle, in both hulled and naked oat varieties, sampling date was the factor of variability in the content of β-D-glucan. In stems in hulled varieties and leaves in naked varieties, neither the sampling date nor variety influenced the polysaccharide content. The content of β-D-glucan in the leaves of hulled and naked varieties decreased during the first three stages of plant development, but in the stage of milk ripeness the amount increased. The decreasing trend during milk ripeness, was also observed in the roots of both hulled and naked oats. However, in the panicle of hulled and naked oat varieties, the content of β-D-glucan increased during plant growth. Due to practical applications of natural resources of β-D-glucan and isolated β-D-glucan is useful to know the factors influencing its content as well as to ascertain the behavior of the polysaccharide during plant development.

Abstract
The present article aimed to study the effects of four selected concentrations (1%, 2%, 5%, and 10%) of apple pomace powder (APP), obtained from juice production, on the nutritional value and selected physico-chemical, antioxidant, and sensory properties of wheat bread. We have found that the ash and total carbohydrate contents, total polyphenols content, and antioxidant activity of the supplemented bread loaves were markedly higher (p < 0.05) as compared to the control ones. On the other hand, values for protein and fat contents and loaf volume in APP-containing bread samples were statistically lower (p < 0.05). Finally, sensory evaluation revealed no significant differences in all tested attributes between the investigated groups of bread samples. The current results suggest that 10% APP addition appears to be an attractive ingredient applied to bread formulation to obtain a bakery product with high nutritional value and required qualitative and sensory properties. In such a manner, apple pomace as by-products from apple juice processing can be efficiently utilized in an eco-friendly way by the food industry to decrease unnecessary waste and environmental pollution.

Abstract
An evaluation of polymorphism at the microsatellite loci was applied in distinguishing 85 oat (Avena sativa L.) genotypes selected from the collection of genetic resources. The set of genotypes included oats with white, yellow, and brown seeds as well as a subgroup of naked oat (Avena sativa var. nuda Koern). Variation at these loci was used to form potential heterotic groups potentially used in the oat breeding program. Seven from 20 analyzed microsatellite loci revealed polymorphism. Altogether, 35 microsatellite alleles were detected (2–10 per locus). Polymorphic patterns completely differentiated all genotypes within the subgroups of white, brown, and naked oats, respectively. Only within the greatest subgroup of yellow genotypes, four pairs of genotypes remained unseparated. Genetic differentiation between the oat subgroups allowed the formation of seven potential heterotic groups using the STRUCTURE analysis. The overall value of the fixation index (Fst) suggested a high genetic differentiation between the subgroups and validated a heterotic grouping. This approach can be implemented as a simple predictor of heterosis in parental crosses prior to extensive field testing or development and implementation of more accurate genomic selection.

Abstract
Adverse environmental conditions, such as various biotic and abiotic stresses, are the primary reason for decreased crop productivity. Oat, as one of the world's major crops, is an important cereal in human nutrition. The aim of this work was to analyze the effect of inoculation with two species of the genus Fusarium on the selected qualitative parameters of oat grain intended for the food industry. Artificial inoculation caused a statistically significant decrease in the content of starch, oleic, linoleic, and α-linolenic acids in oat grains compared to the control. Moreover, artificial inoculation had no statistically significant effect on the content of β-D-glucans, total dietary fiber, total lipids, palmitic, stearic, and cis-vaccenic acids. An increase in the content of polyunsaturated fatty acids in oat grains was observed after inoculation. The most important indicator of Fusarium infection was the presence of the mycotoxin deoxynivalenol in the grain. The content of β-D-glucans, as a possible protective barrier in the cell wall, did not have a statistically significant effect on the inoculation manifestation in the grain.

Abstract
In human nutrition, oats (Avena sativa L.) are mainly used for their dietary fiber, β-D-glucans and protein content. The content of β-D-glucans in oat grain is 2-7% and is influenced by genetic and/or environmental factors. High levels of this cell walls polysaccharide are observed in naked grains of cultivated oat. It the work, the relationship between the content of β-D-glucans in oat grain and the infection with Fusarium graminearum (FG) and Fusarium culmorum (FC) was analyzed. The hypothesis was that oats with higher content of β-D-glucans are better protected and the manifestation of artificial inoculation with Fusarium strains is weaker. In the 22 oat samples analyzed, the content of β-D-glucans was 0.71-5.06%. In controls, the average content was 2.15% for hulled and 3.25% for naked grains of cultivated oats. After the infection, a decrease was observed in all, naked, hulled and wild oats. As an evidence of lower rate of infection, statistically significant lower percentage of pathogen DNA (0.39%) and less deoxynivalenol (DON) mycotoxin (FC infection 10.66 mg/kg and FG 4.92 mg/kg) were observed in naked grains compared to hulled where the level of pathogen DNA was 2.09% and the average DON level was 21.95 mg/kg (FC) and 5.52 mg/kg (FG).

Abstract
Euonymus species from the Celastraceae family are considered as a source of unusual genes modifying the oil content and fatty acid composition of vegetable oils. Due to the possession of genes encoding enzyme diacylglycerol acetyltransferase (DAcT), Euonymus plants can synthesize and accumulate acetylated triacyglycerols. The gene from Euonymus europaeus (EeDAcT) encoding the DAcT was identified, isolated, characterized, and modified for cloning and genetic transformation of plants. This gene has a unique nucleotide sequence and amino acid composition, different from orthologous genes from other Euonymus species. Nucleotide sequence of original EeDAcT gene was modified, cloned into transformation vector, and introduced into tobacco plants. Overexpression of EeDAcT gene was confirmed, and transgenic host plants produced and accumulated acetylated triacylglycerols (TAGs) in immature seeds. Individual transgenic plants showed difference in amounts of synthesized acetylTAGs and also in fatty acid composition of acetylTAGs.

Abstract
AbstractThe rye flour is, together with the wheat flour, the basic ingredient used in traditional bread baking. The rye grain contains many compounds with significant impacts on the consumer. Considering that, various biologically active phytochemicals were determined in extracts from mature grains of 19 rye genotypes (Secale cereale L.). The content of total phenols, flavonoids, phenolic acids and thiols, as well as antioxidant activities and inhibitory activities against trypsin, thrombin, and urokinase were analyzed by spectrophotometric methods. The vanillic acid, vanillin, p-coumaric acid, and t-ferulic acid were analyzed in particular by high performance liquid chromatography (HPLC). The observed differences in the amounts and activities between rye genotypes reflected variations in their genetic background. Rye grain is a remarkable source of specific phytochemicals. Genetic diversity in rye makes it possible to identify individual genotypes that have a unique content and biological activity of compounds deposited in mature grains. One subgroup of rye genotypes had higher values of antioxidant properties and concentrations of polyphenols. Other sub-group had higher proteinase inhibitory activities and contents of polyphenols. The third sub-group contained as though the universal genotypes, i.e. genotypes with average values in nearly all the measured parameters.

Abstract
AbstractPlants have evolved to live in environments where they are often exposed to different stress factors. Being sessile, they have developed specific mechanisms that allow them to detect precisely environmental changes and respond to complex conditions, minimizing damage while conserving valuable resources for growth and reproduction. The cell wall polysaccharide β-D-glucan observed in some species of Poales can determine responses to various environmental factors in specific plant developmental stages. It is located in the outer epidermal layer, at the place of stress attack and therefore its metabolism could relate to response of plant to environmental factors within moderate, physiological range. Putative protective role of β-D-glucan during heat stress was indicated through naked oats with higher content of β-D-glucan. It appeared that oats with higher β-D-glucan content are better adapted to stress conditions. The presented article discusses the β-D-glucan as a possible protective mechanism in oat during (heat) stress conditions.
