Evaluation of the Content of Minerals, B-Group Vitamins, Tocols, and Carotenoids in Raw and In-House Cooked Wild Edible Plants

Notwithstanding the increased interest in wild edible plants, little is known on how some domestic thermal processes can affect their content. The aim of this study was to investigate the amounts of minerals, B1 and B2 vitamins, tocols, and carotenoids in raw, boiled, and steamed wild edible plants, namely, Sonchus asper (L.) Hill s.l., Sonchus oleraceus L., Cichorium intybus L., and Beta vulgaris L. var cicla. All vegetables were confirmed as high sources of lutein (from 6 to 9 mg/100 g) and β-carotene (from 2 to 5 mg/100 g). Quite high amounts of violaxanthin and neoxanthin were found. Alfa-tocopherol and γ-tocopherol were the main tocols, with same contents in raw and processed vegetables (about 2.5 mg/100 g). The most abundant macro element and trace element were, respectively, potassium and iron. B1 and B2 vitamins were found in low amounts in almost all plants, with the exception of thiamine in Beta vulgaris (about 1.6 mg/100 g). Boiling led to a significant loss of minerals (up to 60%) and B-group vitamins (up to 100%), while, among carotenoids, it only affected violaxanthin levels (up to 90%). Steamed vegetables showed only a slight reduction, about 20%, in β-carotene and lutein, with a marked decrease in violaxanthin and neoxanthin. One hundred grams of all fresh and cooked plants can be claimed as a source of vitamin A and E.

B-Group Vitamins as Potential Prebiotic Candidates: Their Effects on the Human Gut Microbiome

In recent years, thousands of studies have demonstrated the importance of the gut microbiome for human health and its relationship with certain diseases. The search for new gut microbiome modulators has thus become an objective to beneficially alter the gut microbiome composition and/or metabolic activity, which may modify intestinal physiology. Growing evidence has shown that B-group vitamins might be considered as potential candidates as gut microbiome modulators. However, the relationship between the B-group vitamins and the gut microbiome remains largely unexplored. Studies have suggested that non-absorbed B-group vitamins administered orally can reach the distal intestine or even the colon where these vitamins may have potential health benefits for the host. Clinical trials supporting this effect are still limited. In this review, we discuss evidence regarding the modulatory effects of B-group vitamins on the gut microbiome with a focus on their potential role as prebiotic candidates.

Effects of B-Group Vitamin Administration on Daily Change in Urine 2-Oxo Acids in Young Japanese Women

B-group vitamins are required in amino acid catabolism, and recent findings suggest that urine 2-oxo acids, catabolites of amino acid, could be functional biomarkers indicating the nutritional status of B-group vitamins. To clarify the relationship between B-group vitamins and urine 2-oxo acids, we investigated the effects of B-group vitamin administration on daily changes in urinary amounts of 2-oxo acids in humans. Twenty-nine young Japanese women collected 24-h urine samples for 8 d, and took B-group vitamins for 7 d beginning on the second day of urine collection. The participants were divided into three groups on the basis of the amounts of total branched-chain 2-oxo acids, 2-oxoglutaric acid, 2-oxoadipic acid, and pyruvic acid excreted in urine. In the upper tertile, but not the middle and lower tertiles, each urine 2-oxo acid decreased from the first day of vitamin administration, and completely decreased to a normal level on the second day of administration. These results indicate that administration of B-group vitamins immediately affects 2-oxo acid metabolism in some young Japanese women. Thus, urinary 2-oxo acids could be useful and functional biomarkers for B-group vitamin status.
