3D printing for space food applications: Advancements, challenges, and prospects

Space foods closely associate with the performance and mental health of astronauts. Over the years, a range of manufacturing technologies have been explored and advancements in food 3D printing can provide answers to certain existing challenges and revolutionize the way foods are prepared for space exploration missions. Apart from the nutrition and satiety perspective, product shelf-life, variety, personalization, and the need for customized diets are critical considerations. In such long-duration human-crewed space missions, under microgravity conditions and exposure to space, psychological factors heavily affect food consumption patterns. Therefore, there has been a surge in research funding for developing products and methods that offer safe, nutritionally balanced, and delightful food options. 3D food printing could be a creative solution for such requirements. While multiple challenges must be addressed, the technology promises waste minimization and the scope for on-site on-demand food preparation. This article begins with fundamental concepts of this subject, provides a timeline of the advancements in the field, and details the futuristic prospects of the technology for long-duration space missions.

Rheological and mechanical properties of edible gel materials for 3D food printing technology

3D food printing sectors require comprehensive knowledge on viscoelastic and mechanical properties of diverse food materials in order to effectively utilize them in rapid and customized 3D production for supply and manufacturing chains. In this work, we present mechanical and rheological properties of Agar and Konjac based edible gels at different Agar and Konjac weight ratio and discuss their 3D printing performance. Gel samples with higher Konjac content positively contributed to the viscoelastic properties of the gel samples which in return has been found viable for extrusion-based 3D printing. By choosing appropriate printing parameters, different shapes are printed to demonstrate printing resolution. We expect, this study will add potential scope for evaluating and optimizing soft-gel materials for 3D food printing sector.

Selective laser broiling of Atlantic salmon

Selective laser broiling is a novel food processing technique that utilizes a 2-axis mirror galvanometer system to direct laser power to cook raw food. Unlike conventional cooking processes, laser cooking benefits from the high spatial and temporal precision of power delivery. In this investigation, we use a trochoidal scanning pattern to optimize the cooking of Atlantic salmon (Salmo salar), which is used as a model food system. We vary geometry of the trochoidal cooking pattern (circle diameter, circle density, and period) as well as the heat flux (2.71 MW/m² and 0.73 MW/m²) and power (2 W and 5 W) of the blue laser and measure the internal temperature and depth of heat penetration via color analysis. Heat generated by blue laser operating at 445 nm has a thermal penetration depth nearing 2 mm in salmon and provide sufficient protein denaturation for cooking thin food layers. We achieve food safe cooking temperatures (>62.8 °C) in the salmon fillets and desirable color and textural changes through the use of high speeds and repetitive exposure. Ultimately, the goal of this study is to explore laser cooking of meat with an eye to applications both in food printing as well as an augmentation of conventional oven cooking.
