Abstract
The aim of the study was to determine the effect of linseed cake supplementation during the winter period as a factor influencing the level of some bioactive components (milk composition, fatty-acid profile, and fat-soluble vitamins) in the milk fat fraction in cows kept on an organic farm. Forty multiparous (second and third lactation) Holstein-Friesian cows were selected that had 81 ± 12 days in milk and produced 15.08 ± 1.20 kg of milk/day. Two groups were created for the experiment: control (CTL; n = 20) and experimental (LC; n = 20). The experiment was divided into two periods: an initial period lasting 7 days in which the experimental group was habituated to the new supplement in their diet; the proper experimental phase, lasting 6 weeks, in which the cows in the experimental group received an individual daily dose of linseed cake (300 g/day/cow). Linseed cake supplementation had a positive impact on the levels of bioactive components (fatty-acid profile and fat-soluble vitamins) in the milk fat fraction. At the end of the trial, the concentration of C18:2 cis9 trans11, C18:1 trans11, α-retinol, α-tocopherol, and total antioxidant status increased 1.59-, 1.94-, 3.12-, 3.38-, and 3.09-fold, respectively, relative to the control levels. The use of linseed cake in winter on organic farms makes it possible to increase the antioxidant potential of milk, thereby eliminating the disparity in the quality of milk from the summer season compared to the winter season.

Abstract
Background Although bovine milk is regarded as healthy and nutritious, its high content of saturated fatty acids (FA) may be harmful to cardiovascular health. Palmitic acid (C16:0) is the predominant saturated FA in milk with adverse health effects that could be countered by substituting it with higher levels of unsaturated FA, such as oleic acid (C18:1cis-9). In this work, we performed genome-wide association analyses for milk fatty acids predicted from FTIR spectroscopy data using 1811 Norwegian Red cattle genotyped and imputed to a high-density 777k single nucleotide polymorphism (SNP)-array. In a follow-up analysis, we used imputed whole-genome sequence data to detect genetic variants that are involved in FTIR-predicted levels of C16:0 and C18:1cis-9 and explore the transcript profile and protein level of candidate genes. Results Genome-wise significant associations were detected for C16:0 on Bos taurus (BTA) autosomes 11, 16 and 27, and for C18:1cis-9 on BTA5, 13 and 19. Closer examination of a significant locus on BTA11 identified the PAEP gene, which encodes the milk protein β-lactoglobulin, as a particularly attractive positional candidate gene. At this locus, we discovered a tightly linked cluster of genetic variants in coding and regulatory sequences that have opposing effects on the levels of C16:0 and C18:1cis-9. The favourable haplotype, linked to reduced levels of C16:0 and increased levels of C18:1cis-9 was also associated with a marked reduction in PAEP expression and β-lactoglobulin protein levels. β-lactoglobulin is the most abundant whey protein in milk and lower levels are associated with important dairy production parameters such as improved cheese yield. Conclusions The genetic variants detected in this study may be used in breeding to produce milk with an improved FA health-profile and enhanced cheese-making properties. Abstract
β-lactoglobulin is one of the most abundant milk whey proteins in many mammal species, including the domestic horse. The aim of this study was to screen for polymorphism in the equine LGB1 and LGB2 gene sequences (all exons, introns, and 5’-flanking region) and to assess potential relationship of particular genotypes with gene expression levels (measured in milk somatic cells) and milk composition traits (protein, fat, lactose, and total β-lactoglobulin content). Direct DNA sequencing analysis was performed for twelve horse breeds: Polish Primitive Horse (PPH), Polish Coldblood Horse (PCH), Polish Warmblood Horse (PWH), Silesian, Hucul, Fjording, Haflinger, Shetland Pony, Welsh Pony, Arabian, Thoroughbred, and Percheron—and revealed the presence of 83 polymorphic sites (47 and 36 for LGB1 and LGB2 genes, respectively), including eight that were previously unknown. Association analysis of the selected polymorphisms, gene expression, and milk composition traits (conducted for the PPH, PCH, and PWH breeds) showed several statistically significant relationships; for example, the two linked LGB1 SNPs (rs1143515669 and rs1144647991) were associated with total milk protein content (p < 0.01). Our study also confirmed that horse breed had significant impact on both gene transcript levels (p < 0.01) and on milk LGB content (p < 0.05), whereas an influence of lactation period was seen only for gene relative mRNA abundances (p < 0.01).

Abstract
Cow milk and dairy products have a good nutritional value that could be improved by increasing the concentrations of several compounds such as carotenoids and liposoluble vitamins A and E. Their concentrations in milk are dependent on their respective dietary intakes, but the transfer from feeds to milk seems to be limited by dietary, digestive, or metabolic factors linked to lipids that could differ between dairy breeds. The effect of dietary fat supplement (provided as extruded linseed) on carotenoid, vitamin E, and vitamin A status as well as their transfer from diet to milk were explored in mid-lactating dairy cows (Holstein or Montbéliarde breed) receiving either corn silage or hay as the main forage. Carotenoid and tocopherol status were higher in cows fed hay than in those fed corn silage, both at the plasma and milk level. The transfer rate for carotenoids was the same regardless of forage, whereas the transfer rate for tocopherols was greater (1.71 vs. 1.20%, respectively) for cows fed hay compared with corn silage. Cows fed extruded linseed had greater plasma concentrations of tocopherols (+25%) compared with those that did not, regardless of forage, but linseed treatment only changed xanthophyll (+35%) concentrations. This would suggest that the lipid supplement increased the availability of xanthophylls and tocopherols for the cows. However, carotenoid transfer into milk remained low and unaffected by the lipid supplement, whatever the forage nature, suggesting a limiting unknown process. Carotenoid status was marginally different between breeds because plasma concentrations were higher in Montbéliarde cows besides lower intakes. In milk, 13-E-β-carotene concentration was also higher for Montbéliarde cows because of a 2-fold higher transfer rate than for Holstein cows. In contrast, Holstein cows had higher transfer rates of α-tocopherol and vitamin A activity, linked to higher milk fat yield. For the first time, this study proposed an evaluation of the transfer rate of lipid micronutrients from diet to milk in cows. The study highlighted that these compounds follow distinct patterns of regulation during their transfer. However, in these experimental conditions, it was not possible to show that a dietary fat supplement could increase the concentration of these compounds in milk fat.

Abstract
BACKGROUND Recent data indicate that almost 60% of colostrum samples do not have enough antibodies to provide adequate protection for the calf. Thus, the aim of this study was to determine the influence of the level of production of cows on the content of immunostimulating components of protein fraction of colostrum. The observations were conducted on two farms that keep dairy cows. One of the farms was selected to represent a typical performance level for the mass population of dairy cows in Poland, about 5500 kg of milk per cow per year (LI) and the second one was characterized by a higher level of production, about 8000 kg (HI). RESULTS Based on the data obtained, 100% of the samples collected from LI had an immunoglobulin G (IgG) content >50 gL-1 , in the first collection. In the case of HI, 63% of the samples had an IgG content >50 gL-1 , with a distribution in the range of 10.7 to 72.7 gL-1 . The colostrum of LI cows was characterized by a higher content of lactoferrin, lysozyme, α-lactalbumin, and β-lactoglobulin compared to the milk of HI cows. CONCLUSIONS The immunostimulating components of colostrum declined rapidly in subsequent milkings or with the increased productivity of the cows. The concentration of IgG was negatively correlated with the performance level of cows, which means that high-producing cows had colostrum with a low concentration of IgG. © 2018 Society of Chemical Industry.

Abstract
Lipid peroxidation can be described as a process under which free radicals attack carbon double bonds of omega-3 and omega-6 fatty acids. Whereas the end products of this process are reactive aldehydes, such as malondialdehyde (MDA). Lipid peroxidation leads to adverse changes in the nutritional value of milk; therefore, higher degree of antioxidant protection (DAP) ensures higher stability of dairy products by effecting their high antioxidative potential. Therefore, the purpose of this study was to demonstrate the relationship between the DAP and the level of MDA in high-performance Polish Holstein-Friesian cows in peak of lactation. Sixty-three Polish Holstein-Friesian cows were selected to the experiment according to: parity (all in the 2nd lactation), phase of lactation (peak of lactation), cytological quality of milk (somatic cell count < 150 thousand/ml) and without diagnosed metabolic diseases. The data obtained were analyzed statistically by two-way ANOVA, and Tukey's post-hoc test. After analysis of performance the cows were divided into 3 groups (twenty one cows in each group) based on milk yield and MDA concentration. The study revealed a significant effect of the lactation performance of cows on MDA levels in milk (P ≤ 0.01). The highest concentration of MDA (61.137 nM/mL) was shown in milk of cows yielding between 50.00 and 55.80 kg/day. The highest concentration of fat was found in milk in which the MDA level ranged from 48 to 86 nM/mL. Whereas, the inverse relationship was demonstrated in case of protein concentration. The highest level of protein was found in cows with MDA levels in the range of 18-28 nM/mL (P ≤ 0.01). The lowest MDA level (in the range of 18-28 nM/mL) was associated with the highest concentration of vitamin E, β-carotene, total antioxidant status (TAS) and DAP, measured in both milk and plasma. The obtained results show that lipid peroxidation leads to adverse changes in the nutritional value of milk; the highest DAP (7.89 x 10-3) was found in the cows with the lowest MDA concentration in milk.

Abstract
BACKGROUND Equine milk is considered to be an interesting product for human nutrition, mainly owing to its low allergenicity and significant amounts of bioactive proteins, including lysozyme (LYZ) and lactoferrin (LTF). The present study assessed the effect of genetic factors on LYZ and LTF concentration variability in mare's milk. RESULTS Significant effects of horse breed and lactation stage on milk LYZ and LTF contents were observed. The highest level of LTF and the lowest concentration of LYZ were recorded for the Polish Warmblood Horse breed. The highest amounts of both proteins were found for the earliest investigated time point of lactation (5th week). Altogether 13 (nine novel) polymorphisms were found in the 5'-flanking regions of both genes, but they showed no significant relationship with milk LYZ and LTF contents. Several associations were found between selected SNPs and the LYZ gene relative transcript level. CONCLUSION While the present study indicated the existence of intra- and interbreed variability of LYZ and LTF contents in mare's milk, this variation is rather unrelated to the 5'-flanking variants of genes encoding both proteins. This study is a good introduction for broader investigations focused on the genetic background for variability of bioactive protein contents in mare's milk. © 2016 Society of Chemical Industry.

Abstract
The aim of this study was to determine the nutritional value of organic milk in Poland, investigate the influence of diet on antioxidant capacity and degree of antioxidant protection (DAP), and to examine the effect of season on the bioactive properties of milk from organic farms. From 2014 to 2015, 820 milk samples were collected from 6 organic farms during indoor feeding season (IDS) and pasture feeding season (PS). Pasture feeding season + corn grain (PSCG) cows' daily ration during pasture feeding season was enriched with 4 kg a day of corn to improve dietary energy balance. Milk obtained during PS was found to have a higher fat content, slight but significantly lower protein content compared with milk from IDS. The study showed that the content of monounsaturated fatty acids (MUFA) in milk fat was strongly linked to the concentration of polyunsaturated fatty acids (PUFA) and, to a lesser extent, on the supply of MUFA. The IDS data (concentration of vitamin E, A, and β-carotene) showed the lowest values compared with the PS and PSCG groups. Total antioxidant status (TAS) and DAP showed an increasing trend in organic milk. PSCG was associated with highest level of DAP (9% higher than PS and 79% higher than IDS) and TAS (37% higher than PS and 79% higher than IDS). The results obtained show that supplementation of the basic ration with corn grain improved both TAS and DAP. The higher DAP and TAS value is responsible for product stability, considering the risk factor related to levels of cholesterol-oxide intake in humans.

Abstract
The objective of this study was to evaluate the status of the markers related to inflammation in db/db mice fed black raspberry seed (BRS) oil, which is rich in α-linolenic acid. Mice were divided into four groups: (1) C57BL/6 mice fed 16 % calories from soybean oil (normal CON); (2) C57BL/KsJ-db/db mice fed 16 % calories from soybean oil (CON); (3) C57BL/KsJ-db/db mice fed 8 % calories from soybean and 8 % calories from BRS oil (BRS 50 %); and (4) C57BL/KsJ-db/db mice fed 16 % calories from BRS oil (BRS 100 %). After 10 weeks, n-6/n-3 fatty acid ratios were significantly (P < 0.05) lower in the livers and epididymal adipose tissues of the BRS 50 % and BRS 100 % mice than in the CON. Serum TNFα and IL-6 were significantly (P < 0.05) lower in the BRS 50 % and BRS 100 % than in the CON. Serum IL-10 was significantly (P < 0.05) higher in the BRS 100 % than the CON. In the liver and epididymal adipose tissue, mRNA levels of pro-inflammatory markers in the BRS 50 % and BRS 100 % were lower than in the CON. Anti-inflammatory markers were higher in the epididymal adipose tissues of the BRS 50 % and BRS 100 % than in the CON. In the epididymal adipose tissue, macrophage infiltration markers (F4/80 and CD68) and leptin mRNA were significantly (P < 0.05) lower in the BRS 50 % and BRS 100 % than in the CON. Results of this study suggest that BRS oil may have anti-inflammatory effects in obese diabetic mice by ameliorating inflammatory responses.

Abstract
Abstract. Studies regarding the composition of milk fat are mostly conducted on dairy breeds. The aim of our studies was to evaluate the fatty acid, cholesterol and phospholipid amount in the milk of two non-dairy sheep breeds. The study was conducted on 60 ewes (Żelaźnieńska strain of Polish Lowland sheep – 30 ewes; Wrzosówka breed – 30 ewes) from one flock which were kept under the same conditions and maintenance. There were no differences in the amount of the basic components of milk in these two breeds. In the lipid fraction of Wrzosówka sheep (a more primitive breed), higher amounts of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) (P ≤ 0.05), a higher amount of polyunsaturated fatty acids (PUFAs) n-3 (P ≤ 0.01) and a lower ratio of n-6 / n-3 (P ≤ 0.01) were recorded compared to Żelaźnieńska sheep. The milk of Żelaźnieńska sheep had a higher amount of cholesterol (P ≤ 0.05). There were no differences in concentrations of phospholipids. With regard to the two non-dairy sheep breeds, a higher amount of PUFAs n-3 and a more favorable ratio of n-6 / n-3 was observed in the milk of the more primitive breed (i.e., Wrzosówka sheep).
