Abstract
Although food is essential for the survival of organisms, it can also trigger a variety of adverse reactions, ranging from nutrient intolerances to celiac disease and food allergies. Food not only contains essential nutrients but also includes numerous substances that may have positive or negative effects on the consuming organism. To protect against potentially harmful components, all animals have evolved defense mechanisms, which are similar to antimicrobial defenses but often come at the cost of the organism's health. When these defensive responses are exaggerated or misdirected, they can lead to adverse food reactions, where the costs outweigh the benefits. Furthermore, due to the persistent toxicity of harmful food components, the failure of defense mechanisms can also result in pathological effects triggered by food. This article review presents a food quality control framework that aims to clarify how these reactions relate to normal physiological processes. Organisms utilize several systems to coexist with symbiotic microbes, regulate them, and concurrently avoid, expel, or neutralize harmful pathogens. Similarly, food quality control systems allow organisms to absorb necessary nutrients while defending against low-quality or harmful components in food. Although many microbes are lethal in the absence of antimicrobial defenses, diseases related to microbiome dysregulation, such as inflammatory bowel disease, have significantly increased. Antitoxin defenses also come with costs and may fail due to insufficiencies, exaggerations, or misdirected actions, ultimately leading to adverse food reactions. With the changes in human diet and lifestyle, the failure of defense mechanisms has contributed to the rising incidence of food intolerances. This review explores the mechanisms of antitoxin defenses and analyzes how their failure can lead to adverse food reactions, emphasizing the importance of a comprehensive understanding of food quality control mechanisms for developing more effective treatments for food-triggered diseases.

Abstract
While food is essential for survival, it can also cause a variety of harmful effects, ranging from intolerance to specific nutrients to celiac disease and food allergies. In addition to nutrients, foods contain myriads of substances that can have either beneficial or detrimental effects on the animals consuming them. Consequently, all animals evolved defense mechanisms that protect them from harmful food components. These "antitoxin" defenses have some parallels with antimicrobial defenses and operate at a cost to the animal's fitness. These costs outweigh benefits when defense responses are exaggerated or mistargeted, resulting in adverse reactions to foods. Additionally, pathological effects of foods can stem from insufficient defenses, due to unabated toxicity of harmful food components. We discuss the structure of antitoxin defenses and how their failures can lead to a variety of adverse food reactions.

The deterrent effects of individual monoterpene odours on the dietary decisions of African elephants. Anim Cogn 2023; 26:1049-1063. Abstract
African savanna elephants use pre-ingestive olfactory cues when making dietary choices, and previous research has observed that elephant diet choice is negatively correlated with vegetation species that contain high concentrations of monoterpenes. However, the frequency and concentration of monoterpenes can vary dramatically across plant species. Thus, we aimed to explore the effects that the odours of individual monoterpenes have on elephant diet choice and how these effects vary with concentration. To do this, we conducted three odour-based choice experiments focusing on eight common monoterpenes found in the woody plants in Southern African savannas. In the first experiment, we tested whether elephant diet choice for a frequently consumed plant (Euclea crispa) was influenced by the addition of the odour of an individual monoterpene at a set concentration. In the second experiment, we explored the relative deterrence of each monoterpene. Lastly, we tested how elephant diet choice varied as a function of the addition of individual monoterpene odours at 5%, 10%, and 20% concentrations. We found that the elephants avoided most individual monoterpenes at high concentrations, with the exception being α-pinene. Furthermore, we found that the odours of some individual monoterpenes were, in fact, more deterrent than others. In the third experiment, we found that the elephants avoided β-pinene, limonene, ocimene, γ-terpinene, and terpinolene across all concentrations, but only avoided sabinene and linalool at high concentrations. Ultimately, our results show that the odour of individual monoterpenes may deter elephant consumption, but that this deterrent effect depends on both the monoterpene and its concentration.

Abstract
Understanding immunity in wildlife populations is important from both One Health and conservation perspectives. The constitutive innate immune system is the first line of defence against pathogens, and comparisons among taxa can test the impact of evolution and life history on immune function. We investigated serum bacterial killing ability (BKA) of five marsupial species that employ varying life history strategies, demonstrated to influence immunity in other vertebrates. The brushtail possum and eastern grey kangaroo had the greatest BKA, while ringtail possums and koalas had the least. These differences were independent of social structure, captivity status and phylogeny, but were associated with diet and body size. Sex and disease status had no effect on BKA in koalas, however potential for differences between wild and captive koalas warrants further investigation. The current study has provided a foundation for future investigations into how adaptive and innate immunity interact in marsupials from an eco-evolutionary perspective.

Abstract
Protective immunity is crucial for survival of any species, though the koala as a specialist feeder adapted to an exclusive diet of eucalypts that contain plant secondary metabolites of varying toxicity and of immunomodulatory property. Being constantly exposed to such dietary chemicals it raises the question of their immune effects in a specialist eucalypt feeder. This study demonstrates that natural levels of circulating eucalypt plant secondary metabolites have dose dependent in vitro effects on cytokine expression of koala peripheral blood mononuclear cells, suggesting a potential trade-off of reduced function in multiple arms of the immune system associated with koala's use of its specialized dietary niche.
