Abstract
Prolonged physical exercise has the risk of increasing free radicals which will affect the breakdown of red blood cells and promote the risk of decreased hemoglobin. Adolescent female athletes have a risk of decreasing hemoglobin due to menstruation. This situation can get worse if the athletes have iron defi-ciency or anemia as the result of poor diet choice. Increased radicals and anemia affect the amount of oxygen carried to the tissues and the maximum volume of oxygen an individual can use to produce energy (VO2 max). Beets have benefits for athlete's performance and have been developed into an instant drink. The purpose of this study was to determine the effect of an instant FeSO4 fortified beet juice (BeeFe juice) in overcoming anemia on female adolescent athletes. This research using an experimental study with controlled trial pre-posttest design. Twenty-nine adolescent female athletes, aged 13-19 years, were divided into two groups. Fe tablet supplementation (containing Fe 60 mg) was given to 15 athletes in the control group and BeeFe juice (containing Fe 17 mg) was given to 14 athletes in the treatment group du-ring the luteal and menstruation phase (±14 days). Hemoglobin levels, Malondialdehyde (MDA) and maxi-mal oxygen volume (VO2 max) were examined before and after the intervention. Data were analyzed using paired t-test and independent t-test IBM SPSS version 22. This research has obtained Ethical Appro-val with number KE/FK/0633/EC/2018 from the Ethical Commission of FKKMK UGM. The results showed no significant difference between the group given Fe tablets and the group given BeeFe juice on hemo-globin levels (P>0.05), MDA levels (P>0.05), and VO2 max levels (P>0.05) in the menstrual and luteal phases of menstruation. It can be concluded that BeeFe juice has the same effectiveness as commercial Fe tablets. BeeFe juice can be an alternative food ingredient in iron supplementation.

Abstract
Previously, beetroot is mainly consumed as a food additive. In recent years, the beetroot, especially the betalains (betanin) and nitrates it contains, now has received increasing attention for their effective biological activity. Betalains have been proven to eliminate oxidative and nitrative stress by scavenging DPPH, preventing DNA damage, and reducing LDL. It also has been found to exert antitumor activity by inhibiting cell proliferation, angiogenesis, inducing cell apoptosis, and autophagy. In some chronic diseases, nitrate is the main component for lowing blood lipids, glucose, and pressure, while its role in treating hypertension and hyperglycemia has not been clearly stated. Moreover, the intake of nitrate-rich beetroot could enhance athletic performance and attenuate muscle soreness in certain types of exercise. The objective of this review is to provide sufficient evidence for the clarification of health benefits of beetroot, especially in the aspect of biooxidation, neoplastic diseases, some chronic diseases, and energy supplementation.

Influence of Supplementation of Lactoferrin, Melittin and Cecropin A to Rat Diet on Changes in Faecal Ammonia Concentrations, Short-Chain Fatty Acid Concentrations and Activities of Bacterial Enzymes. Abstract
Simple Summary In the present study conducted on Wistar laboratory rats, the effects of two selected insect antimicrobial peptides (AMPs), melittin and cecropin A, were investigated and compared to those attributed to well-known antibacterial action of lactoferrin. It was hypothesised that the dietary presence of lactoferrin, melittin or cecropin A strongly affects the rat large gut microbial activity at the time of protein/peptide administration and the durability of the effects may differ after their withdrawal from a diet. The experiment was conducted on living animals (without their euthanasia) and the dynamics of changes in pH, microbial enzyme activity, ammonia and short-chain fatty acids concentrations were investigated in the faeces during and after the dietary treatments with lactoferrin, melittin or cecropin A. The results suggested that the faecal intensity of microbial fermentation processes in rats was quickly reduced upon dietary addition of two AMPs and lactoferrin after two days of treatment, on average. The strongest suppression effect was observed on the 5th day of treatment and persisted on days 5–8. The changes caused by the supplemented lactoferrin and AMPs were reversible after 15 days, i.e., 10 days after the withdrawal of lactoferrin, melittin and cecropin A from the diet. Abstract We hypothesised that the dietary addition of the bioactive antimicrobial protein lactoferrin (LF) and peptides melittin (MT) or cecropin A (CR) at a dosage of 100 mg/kg to the diet of Wistar rats would result in strong modulatory effects on faecal microbial enzymatic activity, short-chain fatty acid and ammonia concentrations. To date, the changes in bacterial extracellular and intracellular enzymatic activities upon addition of dietary AMPs have not yet been studied. This experiment lasted 15 days; during the first 5 day period, the rats were fed the control diet (S) and diets supplemented with LF, MT or CR. On days 6–15, all rats were fed the control S diet. The faecal fermentation processes were substantially stopped after two days of treatment, on average, in all rats receiving LF and two AMPs. The deepest suppression effect was observed on the last day of treatment (day 5) and persisted through days 5–8. The highest decreases in faecal bacterial β-glucosidase and β-glucuronidase activities as well as in SCFA and ammonia concentrations were observed in the rats fed the CR diet. Only in the CR animals did the mechanism of suppressed microbial fermentation involve diminished enzyme release from bacterial cells to the digesta.

Abstract
Beetroot is a good source of minerals, fibers, and bioactive components. The present research work was conducted to evaluate the nutritional quality of beetroots (juice, peels, leaves and pomace) enhancing the extracted bioactive components, and developing a functional probiotic beverage. Chemical composition and minerals content of beetroot parts were estimated. The bioactive components were extracted by instant extraction method (IEM) and overnight extraction method (at -20°C) (OEM) to determine total phenolics, flavonoids, and DPPH inhibition ratio. The extracted beetroot juice was mixed with milk for valorization of the beverage nutritional value and fermented with LA-5 and ABT-5 cultures to create a novel functional beverage. Chemical composition, minerals content, and bioactive components of beverages were estimated. The leaves exhibited the highest calcium content (1200 mg/100g). Juice showed the highest amount of all minerals except for calcium and magnesium. Overnight extraction method (OEM) increased the antioxidant activity in peels and stems. Natural juice exhibited the highest activity compared to extracts. Fermentation of beet-milk beverage with LA-5 and ABT-5 cultures enhanced the beverage taste, flavor, and antioxidant capacity. Beetroot wastes and juice comprise a valuable nutritional source. Fermentation improved the nutritional value of beetroot and the acceptability of the product.

Abstract
BACKGROUND 2-Amino-1-methyl-6-phenylimidazo[4,5-b]pyrimidine (PhIP), one of the most abundant heterocyclic aromatic amines (HAA) formed by cooking meat at high temperatures, may modify humans and rodents through the metabolic process prior to affecting nervous system development. In humans and rodents may be modified by metabolic processes and then affecting nervous system development. METHODS In this paper, PhIP was used to prepare a chicken embryo model with abnormal embryonic nervous system defects. Sulforaphane (SFN) is a derivative of a glucosinolate, which is abundant in cruciferous vegetables, and can pass through the placental barrier. Moreover, SFN has antioxidant and anti-apoptotic functions and is considered as a bioactive antioxidant with significant neuroprotective effects. Nano-sulforaphane (Nano-SFN, sulforaphane nanoparticles) was prepared by self-assembly using biocompatible, biodegradable methoxy polyethylene glycol 5000-b-polyglutamic acid 10,000 (mPEG5K-PGA10K) as the substrate, to explore the new application of Nano-SFN and its modified compounds as leading compounds in protecting against the abnormal development of the embryonic nervous system. RESULTS The results show that Nano-SFN could protect against PhIP-induced central nervous system (CNS, derived from neural tube) and peripheral nervous system (PNS, derived from neural crest cells, NCCs) defects and neural tube defects (NTDs), and increase the embryo survival rate. CONCLUSIONS This study indicates that Nano-SFN can effectively alleviate the developmental defects of embryonic nervous system induced by PhIP in the microenvironment and has a protective effect on embryonic development. It not only helps with expanding the application of SFN and improving its medicinal value, but also provides a possibility of SFN being developed as a novel drug for neuroprotection.

Abstract
The goal of our investigation is to evaluate the potential protective efficacy of red beetroot extract (RBR) against testicular toxicity produced by CPF in rats. CPF exposure decreased the weight of testis and the levels of luteinizing hormone, follicle stimulating hormone and testosterone. CPF impaired also the oxidative status in favor of pro-oxidant molecules in the testicular tissue. Additionally, CPF stimulated the production of pro-inflammatory cytokines and their gene expression. Concomitantly, an apoptotic cascade has been observed upon CPF intoxication. However, RBR administration protected the testis tissue through modulating the hormonal level, inhibiting the oxidative damage, inflammation and the apoptotic responses following CPF intoxication. The obtained data recommend the use of RBR to prevent CPF-induced testicular damage via antioxidant, anti-inflammatory, and anti-apoptotic pathways.

Abstract
An objective of this work was to assess the biological activity of beetroot juice (Chrobry variety, Beta vulgaris L. ssp. vulgaris), which was lactofermented by probiotic bacteria Lactobacillus brevis 0944 and Lactobacillus paracasei 0920. The oxidative status of blood serum, kidneys, and liver of rats consuming the fermented beetroot juice were determined. The experimental rats were divided into four groups on diet type: Basal diet, basal diet supplemented with fermented beetroot juice, basal diet and N-nitroso-N-methylurea treatment, and basal diet supplemented with fermented beetroot juice and N-nitroso-N-methylurea treatment. Mutagen N-nitroso-N-methylurea, which was added to diet in order to induce aberrant oxidative and biochemical processes and disadvantageous changes in the count and metabolic activity of the gut epithelium microbiota. The nutritional in vivo study showed that supplementing the diet of the rats with the lactofermented beetroot juice reduced the level of ammonia by 17% in the group treated with N-nitroso-N-methylurea. Furthermore, the positive modulation of the gut microflora and its metabolic activity was observed in groups of rats fed with the diet supplemented with the fermented beetroot juice. A concomitant decrease in the b-glucuronidase activity was a consequence of the gut epithelium microbiota modulation. The antioxidant capacity of blood serum aqueous fraction was increased by about 69% in the group of rats treated N-nitroso-N-methylurea mixed with the fermented beetroot juice and N-nitroso-N-methylurea versus to the N-nitroso-N-methylurea treatment, whereas the antioxidant parameters of the blood serum lipid fraction, kidneys, and liver remained unchanged.

Abstract
Heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) have been established as carcinogenic chemicals in Western diet. This study was performed to estimate HCA exposure levels in Korean daily life and to assess the ability of Chlorella vulgaris to detoxify carcinogenic HCAs in a randomized, double blind, placebo-controlled crossover study with chlorella supplement (N=6, all females, age: 27.17±7.73yr) for 2 weeks. We analyzed HCAs in hydrolyzed urine specimens using LC/TOF-MS. As results, urinary levels of MeIQx, PhIP, and IQx-8-COOH were 323.36±220.11ng/L, 351.59±254.93ng/L, and 130.85±83.22ng/L, respectively. Effects of chlorella to reduce urinary MeIQx were marginally significant (before, 430±226.86pg/mL vs. after, 174.45±101.65pg/mL: 0.05<p<0.1). However, urinary levels of PhIP or IQx-8-COOH, a major metabolite of MeIQx, were not changed by chlorella supplementation. In conclusion, our study demonstrates that current daily levels of HCA exposure in Korean young adults are not lower than those in the Western world. In addition, the effects of chlorella's to detoxify HCAs likely occur by interfering e with absorption or metabolism.

Abstract
The aim of the study was to assess the genotoxicity of fecal water (FW) and the activity of fecal enzymes (β-glucuronidase and β-glucosidase) after incubation with 2-amino-3-methyl-3H-imidazo[4,5-f]quinoline (IQ) and probiotic lactobacilli: Lb. casei 0900, Lb. casei 0908, and Lb. paracasei 0919. Our results show that the carcinogen IQ greatly increased FW genotoxicity (up to 16.92 ± 3.03 U/mg) and the activity of fecal enzymes (up to even 1.4 ± 0.16 U/mg) in 15 individuals (children, adults and elderly). After incubation with IQ, the activity of β-glucuronidase was reduced by Lactobacillus bacteria by 76.0% (Lb. paracasei 0908) in the FW of children, and by 82.0% (Lb. paracasei 0919) in the elderly; while that of β-glucosidase was reduced by 55.0% in children (Lb. casei 0908) and 90.0% (Lb. paracasei 0919) in elderly subjects. Lactobacilli decreased the genotoxicity of FW after incubation with IQ to the greatest extent in adults (by 64.5%). Probiotic lactobacilli, in the presence of IQ, efficiently inhibits activity of fecal enzymes to the level of control. Genotoxicity inhibition depends on the person's age, its individual microbiota and diet.

Abstract
UNLABELLED Red beetroot contains a specific class of antioxidants collectively named betalains, which have been shown to have anticarcinogenic and anti-inflamatory potential. We investigated the effect of beetroot juice on the hepatic and mammary gland carcinogen metabolizing enzymes, DNA damage and liver injury, altered by 7,12-dimethylbenz[a]anthracene (DMBA). In the liver, pretreatment with beetroot juice significantly decreased levels and activities of the majority of tested biochemical parameters, elevated by DMBA. Feeding with beetroot juice decreased the activities of CYP1A1 and 1A2 and increased phase II enzymes. The activities of all enzymes tested were enhanced in the animals treated with DMBA alone and in combination with beetroot juice. The most significant changes in the level of the enzymes tested were observed for NAD(P)H quinone oxidoreductase-1. In mammary gland, beetroot juice induced the level of glutathione S-transferase pi, enzyme involved in active metabolites of DMBA detoxification. The final effects of beetroot juice are tissue specific and depend on the class of carcinogen.
