Abstract
Modern research in nutrition science is transitioning from classical methodologies to advanced analytical strategies, in which Raman spectroscopy plays a crucial role. Raman spectroscopy and its derived techniques are gaining recognition in nutrition science for their features, such as high-speed, non-destructive analysis, label-free multiple detection and high sensitivity. Raman-enhancing techniques have further improved the sensitivity of Raman spectroscopy and widely extended its detection and imaging applications in nutrient analysis, as well as in ancillary tasks for nutrition research, such as nutrient status evaluation, nutrient interaction and metabolism studies. Further development of Raman-based analytical approaches lies in the improvement of instruments with higher precision, as well as the incorporation of other analytical techniques and advanced data analysis tools. This paper provides a comprehensive review of the application of nanoscience and nanotechnology, with a specific focus on Raman technology, in the field of food and nutrition science research. Instead of delving into the quantitative or qualitative detection capabilities of Raman technology, we highlight the remarkable food analysis and nutrition research methods established by this technology. Generally, this review introduces the characteristics and applications of Raman technology in nutrition analysis and discusses the limitations and future prospects of Raman spectroscopy for nutrition monitoring.

Abstract
This study successfully developed a colorimetric/SERS dual-mode sensor for determining acrylamide in baked goods based on the excellent peroxidase-like activity and Raman activity of Fe-PHS@Au-Ag-Au Janus NPs. In colorimetric mode, the thiol-ene Michael addition between acrylamide (AA) and glutathione (GSH) efficiently eliminates GSH-induced peroxidase-like activity inhibition. The peroxidase-like activity of Fe-PHS@Au-Ag-Au Janus NPs gradually recovered, and the blue color of the solution gradually deepened with the increase in AA dosage. In surface-enhanced Raman spectroscopy (SERS), Apt-Fe-PHS@Au-Ag-Au Janus NPs can selectively capture AA and bind specifically, leading to the dissociation of Apt and Fe-PHS@Au-Ag-Au Janus NPs. The Raman activity of Apt-Fe-PHS@Au-Ag-Au Janus NPs decreases due to the dissociation of Apt. The dual-mode sensor was utilized for the determination of acrylamide in the concentrations range from 0.05 to 20 µg·L-1 with detection limits of 0.06 µg·L-1 (SERS) and 0.01 µg·L-1 (colorimetric). The recovery in baked samples was between 91.0 and 108.0%.

Abstract
Acrylamide (AM) is a recognized carcinogen and neurotoxin, posing a significant threat to food safety and human health. Therefore, developing sensitive and convenient methods for AM detection in food samples is essential. This study responds to the urgent need for sensitive and selective detection of AM, a hidden hazard in food, to safeguard public health and environmental safety. We present the development of a novel two-dimensional ultrasound-synthesized PVP-Gd composite nanosheet platform for precise AM sensing. These self-assembled nanosheets, constructed from gadolinium (Gd) and poly(vinylpyrrolidone) (PVP), exhibit remarkable stability and robust blue fluorescence, with a quantum yield of 45.01% upon excitation at 380 nm. A full factorial design was employed to optimize the synthesis process, revealing significant parameter interactions. The optimized nanosheets demonstrated a strong quenching effect upon acrylamide exposure, resulting in a high-performance acrylamide sensor with an impressively low detection limit (9.4 nM) and a broad linear response range. This innovative sensor platform offers a promising approach for environmental monitoring and food safety applications, effectively addressing the risks associated with acrylamide.

Abstract
The selective detection of acrylamide (AA) is crucial, which is limited by the high background and interferences from food matrix. A room temperature phosphorescence (RTP) assay was developed through modulating its RTP by a stepwise rigidification strategy. The first step rigidification resulted in crosslinking of AA and denser of hydrogen bonding. This prompted the RTP efficiency from <0.1 to 3.8 % and emission lifetime of AA (from 3.0 μs to 0.29 s). Introducing boric acid resulted in the second step rigidification, triggered the formation of rigid matrix and chemical bonding. These synergistic effects prompted the photoluminescence quantum yield to 23.7 % and emission lifetime to 1.20 s. AA was quantitatively detected through monitoring the RTP intensity, with a limit of detection of 0.9 μg/mL. Benefiting from the delayed signal detection, background signal and the interferences from food matrices were eliminated, endowing the detection of AA in practical food samples.

Abstract
Acrylamide (AA), an odorless and colorless organic small-molecule compound found generally in thermally processed foods, possesses potential carcinogenic, neurotoxic, reproductive, and developmental toxicity. Compared with conventional methods for AA detection, bio/chemical sensors have attracted much interest in recent years owing to their reliability, sensitivity, selectivity, convenience, and low cost. This paper provides a comprehensive review of bio/chemical sensors utilized for the detection of AA over the past decade. Specifically, the content is concluded and systematically organized from the perspective of the sensing mechanism, state of selectivity, linear range, detection limits, and robustness. Subsequently, an analysis of the strengths and limitations of diverse analytical technologies ensues, contributing to a thorough discussion about the potential developments in point-of-care (POC) for AA detection in thermally processed foods at the conclusion of this review.

Abstract
In today's fast-paced world, people increasingly rely on a variety of processed foods due to their busy lifestyles. The enhanced flavors, vibrant colors, and ease of accessibility at reasonable prices have made ready-to-eat foods the easiest and simplest choice to satiate hunger, especially those that undergo thermal processing. However, these foods often contain an unsaturated amide called 'Acrylamide', known by its chemical name 2-propenamide, which is a contaminant formed when a carbohydrate- or protein-rich food product is thermally processed at more than 120 °C through methods like frying, baking, or roasting. Consuming foods with elevated levels of acrylamide can induce harmful toxicity such as neurotoxicity, hepatoxicity, cardiovascular toxicity, reproductive toxicity, and prenatal and postnatal toxicity. This review delves into the major pathways and factors influencing acrylamide formation in food, discusses its adverse effects on human health, and explores recent techniques for the detection and mitigation of acrylamide in food. This review could be of interest to a wide audience in the food industry that manufactures processed foods. A multi-faceted strategy is necessary to identify and resolve the factors responsible for the browning of food, ensure safety standards, and preserve essential food quality traits.

Abstract
With the changes of lifestyles and rapid growth of prepared food industry, prepared fried rice that meets the consumption patterns of contemporary young people has become popular in China. Although prepared fried rice is convenient and nutritious, it has the following concerns in the supply chain: (1) susceptible to contamination by microorganisms; (2) rich in starch and prone to stall; and (3) vegetables in the ingredients have the issues of water loss and discoloration, and meat substances are vulnerable to oxidation and deterioration. As different ingredients are used in prepared fried rice, their food processing and quality monitoring techniques are also different. This paper reviews the key factors that cause changes in the quality of prepared fried rice, and the advantages and limitations of technologies in the processing and monitoring processes. The processing technologies for prepared fried rice include irradiation, high-voltage electric field, microwave, radio frequency, and ohmic heating, while the quality monitoring technologies include Raman spectral imaging, near-infrared spectral imaging, and low-field nuclear magnetic resonance technology. These technologies will serve as the foundation for enhancing the quality and safety of prepared fried rice and are essential to the further development of prepared fried rice in the emerging market.

Abstract
Acrylamide (ACR), a neurotoxin with carcinogenic properties that can affect fertility, is commonly found in fried and baked foods such as potato chips. This study was carried out to predict the ACR content in fried and baked potato chips using near-infrared (NIR) spectroscopy. Effective wavenumbers were identified using competitive adaptive reweighted sampling (CARS) and the successive projections algorithm (SPA). Six wavenumbers (12799 cm-1, 12007 cm-1, 10944 cm-1, 10943 cm-1, 5801 cm-1, and 4332 cm-1) were selected using the ratio (λi/λj) and difference (λi-λj) of any two wavenumbers from the CARS and SPA results. First, partial least squares (PLS) models were established based on full spectral wavebands (12799-4000 cm-1), and the prediction models were subsequently redeveloped based on effective wavenumbers to predict ACR content. Results showed that the full and selected wavenumbers-based PLS models obtained the coefficient of determination (R2) of 0.7707 and 0.6670, respectively, and the root mean square errors of prediction (RMSEP) of 53.0442 μg/kg and 64.3810 μg/kg, respectively, in the prediction sets. The results of this work demonstrate the suitability of NIR spectroscopy as a non-destructive method for predicting ACR content in potato chips.

Abstract
Thermal processing is one of the important techniques for most of the plant-based food and herb medicines before consumption and application in order to meet the specific requirement. The plant and herbs are rich in amino acids and reducing sugars, and thermal processing may lead to Maillard reaction, resulting as a high risk of acrylamide pollution. Acrylamide, an organic pollutant that can be absorbed by the body through the respiratory tract, digestive tract, skin and mucous membranes, has potential carcinogenicity, neurological, genetic, reproductive and developmental toxicity. Therefore, it is significant to conduct pollution determination and risk assessment for quality assurance and security of medication. This review demonstrates state-of-the-art research of acrylamide focusing on the toxicity, formation, contamination, determination, and mitigation in taking food and herb medicine, to provide reference for scientific processing and ensure the security of consumers.

Coffee is the third-largest beverage with wide-scale production. It is consumed by a large number of people worldwide. However, acrylamide (AA) is produced during coffee processing, which seriously affects its quality and safety. Coffee beans are rich in asparagine and carbohydrates, which are precursors of the Maillard reaction and AA. AA produced during coffee processing increases the risk of damage to the nervous system, immune system, and genetic makeup of humans. Here, we briefly introduce the formation and harmful effects of AA during coffee processing, with a focus on the research progress of technologies to control or reduce AA generation at different processing stages. Our study aims to provide different strategies for inhibiting AA formation during coffee processing and investigate related inhibition mechanisms.

Abstract
Acrylamide exposure through environment pollution and diet is very common in daily life. With the deepening of the study on the toxicity of acrylamide, it has attracted widespread attention for the effects of acrylamide on multiple organs through affecting a variety of programmed cell death. Multiple studies have shown that acrylamide could exert its toxic effect by inducing programmed cell death, but its specific molecular mechanism is still unclear. In this review, the research on the main forms of programmed cell death (apoptosis, autophagy, and programmed necrosis) induced by acrylamide and their possible mechanisms are reviewed. This review may provide basic data for further research of acrylamide and prevention of its toxicity.

Abstract
Acrylamide is a neurotoxin and carcinogen that forms during the thermal processing of food, inflicting irreversible harm to human health. Herein, a ratiometric fluorescence biosensor based on a 6-carboxyfluorescein-labeled aptamer (FAM-ssDNA) and porphyrin metal-organic framework (PCN-224) was developed. PCN-224 exhibits strong adsorption capacity for FAM-ssDNA and also quenches the fluorescence of FAM-ssDNA via fluorescence resonance energy transfer and photoinduced electron transfer. FAM-ssDNA hybridizes with complementary DNA to form double-stranded DNA (FAM-dsDNA), which is liberated from the PCN-224 surface, resulting in fluorescence recovery. However, the intrinsic fluorescence of the ligand remains unchanged. Acrylamide can create an adduct with FAM-ssDNA and inhibit the hybridization of FAM-dsDNA, thus realizing ratiometric sensing of acrylamide. The proposed biosensor displays excellent detection performance from 10 nM∼0.5 mM with a limit of detection of 1.9 nM. In conclusion, a fabricated biosensor was successfully applied to detect acrylamide in thermally processed food, and the results were consistent with those of high-performance liquid chromatography.

Abstract
As a toxic substance on human health produced in food thermal treatment, simple analytical approaches are highly desired for the detection of acrylamide (ACR) in foods. With the aid of exonuclease III (Exo III), a simple fluorescence sensor was proposed based on carboxyfluorescein-labeled double-stranded DNA (FAM-dsDNA) and a cationic conjugated polymer (PFP). Fluorescence resonance energy transfer (FRET) efficiency between FAM and PFP was changed with and without ACR. When ACR was present, ACR and single-stranded DNA (P1, ssDNA) formed an adduct, allowing free FAM-labeled complementarity strand DNA (P2, FAM-csDNA) to appear in the solution and avoiding the digestion of P2 by Exo III. After the addition of PFP, the interaction of PFP and FAM induced strong FRET. Under optimized conditions, ACR was detected with a limit of detection (LOD) of 0.16 μM. According to this biosensor, a LOD of 1.3 μM in water extract samples was observed with a good recovery rate (95-110 %).

Abstract
Surface-enhanced Raman spectroscopy (SERS) is an emerging technology that combines Raman spectroscopy and nanotechnology with great potential. This technology can accurately characterize molecular adsorption behavior and molecular structure. Moreover, it can provide rapid and sensitive detection of molecules and trace substances. In practical application, SERS has the advantages of portability, no need for sample pretreatment, rapid analysis, high sensitivity, and ‘fingerprint’ recognition. Thus, it has great potential in food safety detection. Alcoholic beverages have a long history of production in the world. Currently, a variety of popular products have been developed. With the continuous development of the alcoholic beverage industry, simple, on-site, and sensitive detection methods are necessary. In this paper, the basic principle, development history, and research progress of SERS are summarized. In view of the chemical composition, the beneficial and toxic components of alcoholic beverages and the practical application of SERS in alcoholic beverage analysis are reviewed. The feasibility and future development of SERS are also summarized and prospected. This review provides data and reference for the future development of SERS technology and its application in food analysis.

Abstract
Acrylamide is prone to misquantification, and critical steps in the analytical procedures need to be identified and controlled to ensure a reliable determination. Four methods were considered to illustrate misquantification issues with acrylamide. For two methods varying by the extent of their sample preparations, cases of overestimation in cocoa samples reaching up to a 20-fold factor are shown. A second example, applied to a variety of food products, includes two other methods varying by their chromatographic conditions. As a follow up of a study conducted in 2020 about the identification of N-acetyl-ß-alanine as an interference of acrylamide in coffee, the extent of this interference was evaluated in a selection of coffee samples, cereal-based products and baby foods. The ultimate objective of this manuscript was to resolve such cases of misquantification and validate a wide scope and robust method allowing an interference free acrylamide analysis. To do so, an extraction procedure based on the EN 16618:2015 standard with water extraction and two consecutive solid phase extraction (SPE) steps was applied with modified liquid chromatographic conditions. The method was validated in coffee, cereals, baby foods, cocoa and pet foods with excellent performance in terms of recovery (97-108%) and precision (RSDr and RSDiR <12 %). The breath of scope was further proved through trueness determination in quality control materials and reference materials including French fries, potato crisps, vegetable crisps, instant coffee, infant food and biscuit (cookie), with trueness values found within a 94-107% range.

Abstract
Surface enhanced Raman spectroscopy (SERS) combined with rapid pretreatment technique was used to determine sulfonamide antibiotics (sulfadiazine and sulfathiazole) residue in swine urine. Au nanoparticles (AuNPs) were synthesized as Raman enhance substrate and the extraction of swine urine was purified with primary secondary amine (PSA), octadecyl silane (C18) and graphitized carbon (GCB) to eliminate the interference of the matrix and different dosages of adsorbents (PSA, C18, GCB) were investigated. The results showed that the treatment with C18 of 150 mg, GCB of 200 mg and PSA of 200 mg were an excellent approach for rapidly detecting sulfonamide antibiotics residue in swine urine. Combined with density functional theory calculation (DFT), Raman characteristic peaks of 819, 1102, 1173, 1588 cm-1 and 825, 1127 cm-1 were selected for qualitative and quantitative assessment of sulfadiazine and sulfathiazole in swine urine, respectively. Based on raman characteristic peak of 819 cm-1, a good linear relationship between sulfadiazine concentration and Raman intensity was developed with R2 = 0.9912, and based on raman characteristic peak of 825 cm-1, a good linear relationship between sulfathiazole concentration and Raman intensity was developed with R2 = 0.9941. And recoveries for five unknown concentration samples predicted were 98.47 ∼ 105.18% with relative standard deviation (RSD) of 1.53% ∼ 5.18%. This study demonstrated that SERS coupled with a quick, easy, cheap, effective, rugged, and safe (QuEChERS) method could be employed to rapidly examine the sulfonamide antibiotics residue in swine urine towards its quality and safety monitoring.

Abstract
The residual of malachite green (MG) in fish is one of the major food safety concerns for consumers. It is important to develop simple and instant analytical methods to identify MG residues in fish. We fabricated flexible cotton surface-enhanced Raman scattering substrate, which offers good flexibility, uniformity and excellent adsorption capability. The UV-vis DRS spectra, transmission electron microscopy and scanning electron elemental mapping images shown that the Ag NPs were closely packed on the surface of cotton fiber. The adsorption feature of cotton fiber could adsorb MG from solution and surface of fish. The Quick Easy Cheap Effective Rugged and Safe (QuEChERS) sample preparation method was used to adsorb MG in fish for SERS sensing. The limit of detection of MG in fish using this developed method was as low as 0.05 ppm. The QuEChERS-SERS analysis method exhibits the capability for multiplex detecting mixture of MG and Dimetridazole at different ratios (5 ppm, 1/400 and 1/4000) from fish. The results indicated that the cotton fiber-Ag composite was suitable employed as SERS substrate for simple and instant detecting trace contaminants in food.

Abstract
Acrylamide is a group 2A carcinogen and potential endocrine disruptor that can enter the ecosystem by various routes and has recently become a dangerous pollutant. This widely used chemical can enter the human body via air inhalation, food or water consumption, or skin contact. In this study, we developed a peptide probe for the detection of acrylamide by matrix-assisted laser desorption ionization time-of-flight mass spectrometry (MALDI-TOF MS) after its micro-tagging with a peptide. Direct detection of acrylamide by MALDI-TOF MS is not feasible due to its poor ionization in the MALDI interface, which hinders its analysis by the technique. After microwave irradiation for 2 min, the formed acrylamide-peptide derivative was detected easily by MALDI-TOF MS without the need for extraction procedures. The procedure does not involve organic solvents and a water-soluble peptide that allows detection of acrylamide in small sample volumes with a limit of detection (LOD) of 0.05 ng/μL. The relative standard deviation (RSD) and relative error (RE) of the measurements were < 6.7% for intra- and inter-day assays. Gel-washing solutions from a polyacrylamide gel experiment were used as a model to study the efficiency of the developed method. Finally, we used the proposed method for the detection of free acrylamide in small volumes of lung epithelial cells (a model to test the air inhalation of acrylamide under a tiny volume of sample) and human urine. The developed method will enable rapid acrylamide detection in environmental and biological samples via a green approach based on microwave-assisted derivatization in water alongside the use of a less toxic derivatization reagent, reusable target plate, and miniaturization protocols.

Abstract
Molybdenum disulfide-graphene oxide composite (MoS2/GO) was synthesized and used as the adsorbent in dispersive solid-phase extraction. Four paraben preservatives, namely, methylparaben, ethylparaben, propylparaben, and butylparaben, were enriched with MoS2/GO and determined by ultra-high-performance liquid chromatography. Molybdenum disulfide was intercalated into graphene oxide layers to reduce self-aggregation by using the solvothermal method. The experimental results indicated that the as-prepared MoS2/GO composite exhibited great enrichment capability toward those four paraben preservatives, and the adsorption time was 10 min and the elution time was as short as 1 min. The mechanism of MoS2/GO composite and parabens is attributed to hydrogen bonding and electrostatic attraction. The relative standard deviation (RSD, n = 9) of this method was below 7.6%. Limits of detection and limits of quantification were in the range 0.4-2.3 ng/mL and 1.4-7.6 ng/mL, respectively. The recoveries obtained from the parabens of cosmetic sample were in the range 91.3-124% with RSDs below 10%. The developed method has great potential for the determination of emerging contaminants with low cost and high sensitivity.

Abstract
Acrylamide, a food processing contaminant with demonstrated genotoxicity, carcinogenicity, and reproductive toxicity, is largely present in numerous prominent and commonly consumed food products that are produced by thermal processing methods. Food regulatory bodies such as the U.S. Food and Drug Administration (U.S. FDA) and European Union Commission regulations have disseminated various acrylamide mitigation strategies in food processing practices. Hence, in the wake of such food and public health safety efforts, there is a rising demand for economic, rapid, and portable detection and quantification methods for these contaminants. Since conventional quantification techniques like liquid chromatography-mass spectrometry (LC-MS) and gas chromatography-mass spectrometry (GC-MS) methods are expensive and have many drawbacks, sensing platforms with various transduction systems have become an efficient alternative tool for quantifying various target molecules in a wide variety of food samples. Therefore, this present review discusses in detail the state of robust, nanomaterials-based and other bio/chemical sensor fabrication techniques, the sensing mechanism, and the selective qualitative and quantitative measurement of acrylamide in various food materials. The discussed sensors use analytical measurements ranging from diverse and disparate optical, electrochemical, as well as piezoelectric methods. Further, discussions about challenges and also the potential development of the lab-on-chip applications for acrylamide detection and quantification are entailed at the end of this review.

Abstract
Acrylamide is the product of the Maillard reaction, which occurs when starchy, asparagine-rich foods including potato or grain products and coffee are fried, baked, roasted, or heated. Studies in rodents provide evidence that acrylamide is carcinogenic and a male reproductive harmful agent when administered in exceedingly high levels. A 2002 study identified acrylamide in popular consumer food and beverage products, stimulating the European Union (EU) and California to legislate public notice of acrylamide presence in fried and baked foods, and coffee products. The regulatory legislation enacted in the EU and California has scientists working to develop foods and processes aimed at reducing acrylamide formation and advancing rapid and accurate analytical methods for the quantitative and qualitative determination of acrylamide in food and beverage products. The purpose of this review is to survey the studies performed on rodents and humans that identified the potential health impact of acrylamide in the human diet, and provide insight into established and emerging analytical methods used to detect acrylamide in blood, aqueous samples, and food.

Abstract
Zika virus (ZIKV) has emerged as a particularly notorious mosquito-borne flavivirus, which can lead to a devastating congenital syndrome in the fetuses of pregnant mothers (e.g., microcephaly, spasticity, craniofacial disproportion, miscarriage, and ocular abnormalities) and cause the autoimmune disorder Guillain-Barre' syndrome of adults. Due to its severity and rapid dispersal over several continents, ZIKV has been acknowledged to be a global health concern by the World Health Organization. Unfortunately, the ZIKV has recently resurged in India with the potential for devastating effects. Researchers from all around the world have worked tirelessly to develop effective detection strategies and vaccines for the prevention and control of ZIKV infection. In this review, we comprehensively summarize the most recent research into ZIKV, including the structural biology and evolution, historical overview, pathogenesis, symptoms, and transmission. We then focus on the detection strategies for ZIKV, including viral isolation, serological assays, molecular assays, sensing methods, reverse transcription loop mediated isothermal amplification, transcription-mediated amplification technology, reverse transcription strand invasion based amplification, bioplasmonic paper-based device, and reverse transcription isothermal recombinase polymerase amplification. To conclude, we examine the limitations of currently available strategies for the detection of ZIKV, and outline future opportunities and research challenges.

Abstract
Acrylamide (ACR) is generated during thermal processing of carbohydrate-rich foods at high temperature and can directly enter the body through ingestion, inhalation and skin contact. The toxicity of ACR has been widely studied. The main results of these studies show that exposure to ACR can cause neurotoxicity in both animals and humans, and show reproductive toxicity and carcinogenicity in rodent animal models. However, the mechanism of toxicity of ACR has not been studied by metabolomics approaches, and the effect of ACR on autophagy remains unknown. Here, U2OS cell were treated with ACR 6 and 24 h and collected for further study. We have demonstrated that ACR inhibited autophagic flux, and increased ROS content. Accumulation of ROS resulted in increase of apoptosis rates and secretion of inflammatory factors. In addition, significant differences in metabolic profiles were observed between ACR treated and control cells according to multiple analysis models. A total of 73 key differential metabolites were identified. They were involved in multiple metabolic pathways. Among them, exposure to ACR caused glycolysis/gluconeogenesis attenuation by decreasing levels of glycolytic intermediates, reduced the rate of the TCA cycle, while elevating levels of several amino acid metabolites and lipid metabolites. In summary, our study provides useful evidence of cytotoxicity caused by ACR via metabolomics and multiple bioanalytic methods.

Abstract
Highly selective separation of trace bio-toxins in food samples has long been a hot topic pursued by analytical chemists. In this paper, chitosan nanofibers prepared by freeze-drying were modified with aptamers for dispersive solid phase extraction (dSPE) of trace zearalenone. The morphology of achieved chitosan nanofibers was found to be uniform and continuous, and the length was at the micron level with about a 400 nm diameter. The immobilization capacity of the aptamer was as high as 10.1 μg on 5 mg chitosan nanofibers with good stability and repeatability, owing to the high specific surface area of nanofibers. The aptamer modified chitosan nanofibers (Apt-CNFs) showed specific selectivity to zearalenone with a selectivity coefficient of 2.65 compared to the scrambled oligonucleotide functionalized CNFs, and the selectivity factors over other analogs and reference compounds were from 1.57 to 50.0. After the optimization of extraction conditions, the Apt-CNF based dSPE was coupled with high-performance liquid chromatography for zearalenone monitoring, and a good linear range of 0.06-10.0 μg L-1 was achieved with a detection limit of 18.0 ng L-1. The spiking recoveries of 101-108%, 100-110%, and 98.3-101% were achieved for trace zearalenone in corn, wheat, and beer samples, respectively. The residual zearalenone was detected in corn and wheat with a content of 0.365 and 0.0775 μg g-1, respectively.

Abstract
Salmonella, a typical foodborne pathogen, always seriously threatens the health and even life of both humans and animals. However, highly sensitive and fast quantitative methods for its detection are remaining to be challenged. Herein, we presented an efficient method with dual signal amplification strategy by combining immune hybridization chain reaction (HCR) with surface enhanced Raman scattering (SERS) to high sensitively detect Salmonella typhimurium in food. After sample preparation, S. typhimurium were specifically captured by immunomagnetic beads (IMBs), then aptamers and hairpin-probes were added to trigger HCR to form nicked dsDNA, finally 4',6-Diamidino-2-phenylindole dihydrochloride (DAPI) was incubated with HCR products and then the whole system was mixed with AgNP colloid to detect the SERS intensity at 1610 cm-1. As a result, a good linear relationship was achieved between SERS intensities and corresponding concentrations of S. typhimurium ranging from 10 to 105 CFU/mL, with a limit of detection (LOD) of 6 CFU/mL in 3.5 h. The proposed method has been successfully applied to capture and detect the S. typhimurium in spiked milk samples, and the results were consistent with those of the traditional plate counting method. The method, with combination of HCR and SERS, achieves double amplification of the detection signal and significantly improves the detection sensitivity of S. typhimurium. And it also shows good application potential for the highly sensitive detection of other contaminants in food.

Abstract
Polycyclic aromatic hydrocarbons (PAHs), due to their high hydrophobicity, have low affinity for metallic SERS-active surfaces, which leads to their low SERS detection sensitivity. Various functional groups have been used to improve the affinity of metallic substrates towards the target PAHs. However, a large portion of the signals generated from the “first-layer effect” of the functionalized substrates may complicate the spectrum, leading to a distortion in the assignment of the intrinsic SERS fingerprints of PAHs. In this study, a SERS sensor composed of Au nanoparticles (AuNPs) and reoxidized graphene oxide (rGO) was developed for the simultaneous determination of 16 EPA priority PAHs. The synthesis of the rGO/AuNP substrate can be realized without a complicated modification process. All the 16 PAHs could be identified based on their characteristic peaks in the presence of the composited substrate, with estimated LOD as low as 0.2–2 ng·mL−1. The binary linear regression was optimized as the fitting model for all PAHs except for benzo(k)fluoranthene, with the linear correlation coefficient ranging from 0.9889 to 0.9997. Based on the developed SERS substrates and sample pretreatment, the characteristic SERS peaks of four PAHs in Chinese traditional fried food (youtiao) were identified without any background interference. The whole detection process only takes approximately 15 minutes. The results demonstrate the potential of the multicomponent on-field detection of PAHs.

Abstract
We aimed to establish an automated versatile sample preconcentration method based on the modified immunomagnetic beads, which was utilized to enrich for aflatoxin B1 from the matrices. The critical main parameters affecting the extraction efficiency, such as usage amount of immunomagnetic beads, reaction time, elution time, and blending way were investigated. Under the optimized conditions, the content of aflatoxin B1 was analyzed by high-performance liquid chromatography, the mobile phase consists of water-acetonitrile-methanol (42:18:10, v/v/v), and fluorescence detection was performed with excitation and emission wavelengths at 360 and 440 nm, respectively. Moreover, the performance of preconcentration method was compared with the conventional method based on the immunoaffinity column. The accuracy of two clean-up methods was within the error range. In addition, the stability and recyclability of the immunomagnetic beads was studied by recycling them five times. The results for the respective analysis in various samples demonstrated that the developed extraction platform provides a promising approach that is simple, rapid, sensitive, and easy to use.
