Abstract
Lettuce (Lactuca sativa) germination is sensitive to environmental conditions. Recently, hydrogel has received increased attention as an alternative media to soil for seed germination. Compared to soil seeding, hydrogel-aided germination provides more controlled seeding environments. However, there are still challenges preventing hydrogel-aided seed germination from being widely used in industry production or academic studies, such as hydrogel formulation variations, seeding operation standardization, and germination evaluation. In this study, we tested how the combination of multiple environmental conditions affect lettuce seed germination time, which is measured as the time needed for the first pair of leaves to appear (leaf emergence) or, alternatively, the third leaf to appear (leaf development). We found that germination time and success rate of two lettuce varieties (Iceberg A and Butter Crunch) showed different sensitivities to pH, Hoagland formulations and concentrations, light intensity, and hydrogel content. We have conducted statistical analysis on the correlation between germination time and these environmental conditions.

Exhausted fire-extinguishing powders: A potential source of mineral nutrients for reuse and valorisation in compost enrichment for soilless cultivation. Abstract
Fire-extinguishing powders (FEPs) are constituted by an inner mineral core of (NH4)H2PO4 and (NH4)2SO4 salts (>95 %, by weight) externally coated with Si-based additives, which make problematic reuse after their service life has expired (36 months). This study aimed to assess the feasibility of using the composting process as an environmentally friendly strategy to lyse the external coating and recycle this nutrient-rich solid waste for replacement of inorganic fertilization in soilless cultivation of horticultural crops. A microcosm-scale experiment with lettuce plants grown into a soil/quartz sand mixture under controlled conditions for 28 days was used to investigate plant responses (fresh and dry biomass, chlorophyll fluorescence parameters, root morphology, ash and nutrients content) to amendment with increasing dosages (equivalent at 0, 10, 20 and 30 t ha-1) of an exhausted FEPs-enriched compost. Chemical properties (pH, EC, TOC, TN) and content of soluble nutrients (Na+, K+, Mg2+, Ca2+, NH4+, H2PO4-, SO42-, NO3-, Cl-) released into the growing substrate were also monitored. Non-amended microcosms and non-enriched compost treatments were taken as controls. Results showed, beside the expected rise of phosphate, sulphate and ammonium ions, exhausted FEPs contributed Ca2+, Mg2+ and Na+ content. Whereas compost determined a dose-dependent release of K+, which was particularly useful in maintaining the K/Na ratio in a range not harmful to plant physiology. It was also found that the compost enriched with 5 % (w/w) exhausted FEPs was no phytotoxic to lettuce. On the contrary, it stimulated the plant growth, increased the photosynthetic efficiency and the shoot biomass accumulation, thus incrementing the shoot/root ratio. Moreover, it oriented the root morphology development and promoted the plant uptake of both water and solutes. To sum up, composting represents a suitable alternative to chemical treatment to recover readily available nutrients contained in exhausted FEPs and produce an enriched compost for use in soilless cultivation.

Abstract
The urgent need to increase the sustainability of crop production has pushed the agricultural sector towards the use of biostimulants based on natural products. The current work aimed to determine whether the preharvest application of two commercial formulations, based on a Fabaceae enzymatic hydrolysate or a blend of nitrogen sources including fulvic acids, and two lab-made aqueous extracts from Moringa oleifera leaves (MLEs), could improve yield, quality, and storability of lettuce grown in a hydroponic system, as compared to an untreated control. Lettuce plants treated with the MLEs showed significantly improved quality parameters (leaf number, area, and color), total phenolic content and antioxidant activity, and resistance against the fungal pathogen Botrytis cinerea, comparable to that obtained with commercial formulates, particularly those based on the protein hydrolysate. A difference between the M. oleifera extracts was observed, probably due to the different compositions. Although further large-scale trials are needed, the tested MLEs seem a promising safe and effective preharvest means to improve lettuce agronomic and quality parameters and decrease susceptibility to rots.

Abstract
Inorganic nitrate provided by either nitrate salts or food supplements may improve cardiometabolic health. However, current methods to assess dietary nitrate, nitrite and nitrosamine consumption are inadequate. The purpose of this study was to develop a reference database to estimate the levels of nitrate, nitrite and nitrosamines in the global food supply. A systematic literature search was undertaken; of the 5,747 articles screened, 448 met the inclusion criteria. The final database included data for 1,980 food and beverages from 65 different countries. There were 5,105 unique records for nitrate, 2,707 for nitrite, and 954 for nitrosamine. For ease of use, data were sorted into 12 categories; regarding nitrate and nitrite concentrations in food and beverages, 'vegetables and herbs' were most reported in the literature (n = 3,268 and n = 1,200, respectively). For nitrosamines, 'protein foods of animal origin' were most reported (n = 398 records). This database will allow researchers and practitioners to confidently estimate dietary intake of nitrate, nitrite and nitrosamines. When paired with health data, our database can be used to investigate associations between nitrate intake and health outcomes, and/or exercise performance and could support the development of key dietary nitrate intake guidelines.

Abstract
Ensuring a sustainable supply of food for the world’s fast growing population is a major challenge in today’s economy, as modern lifestyle and increasing consumer concern with maintaining a balanced and nutritious diet is an important challenge for the agricultural sector worldwide. This market niche for healthier products, especially fruits and vegetables, has increased their production, consequently resulting in increased amounts of agri-food surplus, waste, and loss (SWL) generated during crop production, transportation, storage, and processing. Although many of these materials are not utilized, negatively affecting the environmental, economic, and social segments, they are a rich source of valuable compounds that could be used for different purposes, thus preventing the losses of natural resources and boosting a circular economy. This review aimed to give insights on the efficient management of agri-food SWL, considering conventional and emerging recovery and reuse techniques. Particularly, we explored and summarized the chemical composition of three worldwide cultivated and consumed vegetables (carrots, broccoli and lettuce) and evaluate the potential of their residues as a sustainable alternative for extracting value-added ingredients for the development of new biodynamic products.

Abstract
This paper presents complete HPLC profiles and MS spectrometric data of bioactive compounds from four cultivars of red lettuce produced in winter and summer and their antioxidant capacity. The experiment was carried out in a greenhouse, where red curly lettuce was cultivated: Mila, Maira, Carmin and Scarlet. The cultivar and season have not influenced the qualitative profile of carotenoids (CAR) and phenolic compounds (PC) of red lettuce. Instead, the season influenced the concentration of these components in all cultivars. The levels of phenolic compounds were significantly higher in winter, while the levels of carotenoids were higher in summer. Ten anthocyanins were identified (cyanidins and delphinidins). The main carotenoid found was the all-trans-β-carotene (45-48%), followed by lutein (13-20%) and zeaxanthin (11-15%). Major phenolic compounds include 5-caffeoylquinic acid, rutin and amentoflavone. Red lettuce cultivars have their main bioactive compounds described and compared within the variety and within the growing season. Different season and different lettuce cultivars may differ in the content of their bioactive compounds and in their antioxidant capacity.

Abstract
The supplementation of bioactive compounds in astronaut's diets is undeniable, especially in the extreme and inhospitable habitat of future space settlements. This study aims to enhance the Martian and Lunar regolith fertility (testing two commercial simulants) through the provision of organic matter (manure) as established by in situ resource utilization (ISRU) approach. In this perspective, we obtained 8 different substrates after mixing Mojave Mars Simulant (MMS-1) or Lunar Highlands Simulant (LHS-1), with four different rates of manure (0, 10, 30, and 50%, w/w) from monogastric animals. Then, we assessed how these substrates can modulate fresh yield, organic acid, carotenoid content, antioxidant activity, and phenolic profile of lettuce plants (Lactuca sativa L.). Regarding fresh biomass production, MMS-1-amended substrates recorded higher yields than LHS-1-ones; plants grown on a 70:30 MMS-1/manure mixture produced the highest foliar biomass. Moreover, we found an increase in lutein and β-carotene content by + 181 and + 263%, respectively, when applying the highest percentage of manure (50%) compared with pure simulants or less-amended mixtures. The 50:50 MMS-1/manure treatment also contained the highest amounts of individual and total organic acids, especially malate content. The highest antioxidant activity for the ABTS assay was recorded when no manure was added. The highest content of total hydroxycinnamic acids was observed when no manure was added, whereas ferulic acid content (most abundant compound) was the highest in 70:30 simulant/manure treatment, as well as in pure LHS-1 simulant. The flavonoid content was the highest in pure-simulant treatment (for most of the compounds), resulting in the highest total flavonoid and total phenol content. Our findings indicate that the addition of manure at specific rates (30%) may increase the biomass production of lettuce plants cultivated in MMS-1 simulant, while the phytochemical composition is variably affected by manure addition, depending on the stimulant. Therefore, the agronomic practice of manure amendment showed promising results; however, it must be tested with other species or in combination with other factors, such as fertilization rates and biostimulants application, to verify its applicability in space colonies for food production purposes.

High Light Intensity from Blue-Red LEDs Enhance Photosynthetic Performance, Plant Growth, and Optical Properties of Red Lettuce in Controlled Environment. HORTICULTURAE 2022. Abstract
Plant factories using artificial light to produce vegetables have high energy costs due to the high demand for electricity for lighting. Compared to conventional light sources, light-emitting diodes (LEDs) offer the possibility of tailoring the light spectrum and regulating light intensity and are more energy-efficient in terms of energy conversion regardless of the levels of lighting intensity. Optimal light intensity and daily light integral (DLI) requirements are key factors for plant growth; however, their values vary among species and varieties. Our experiment aimed to identify the best light intensity to produce lettuce plants in controlled environment. Lettuce plants of the type Batavia cv ‘Blackhawk’ were grown in plastic pots filled with perlite and peat (20:80 v/v) for 33 days in a growth chamber under blue (B, 20%) and red (R, 80%) LED light at a photosynthetic flux density of 130 µmol m−2 s−1 (BR 130, DLI 7.49 mol m−2 d−1), 259 µmol m−2 s−1 (BR 259, DLI 14.92 mol m−2 d−1), and 389 µmol m−2 s−1 (BR 389, DLI 22.41 mol m−2 d−1). Our results showed that increasing light intensity and DLI promotes net photosynthesis, sustains the electron transport rate (ETR), and stimulates the synthesis of anthocyanins and carotenoids, with positive results for plant photoprotection. Furthermore, the decreases in vegetation indexes (photochemical reflectance index (PRI), greenness, and modified chlorophyll absorption in reflectance index (MCARI1)) also indicate changes in photosynthetic pigment content in response to plant acclimation to different DLIs. Among the three light intensities, 389 µmol m−2 s−1 (DLI 22.41 mol m−2 d−1) gave the best results for growing Batavia red lettuce cv ‘Blackhawk’, since it enhances both production and qualitative traits. These results highlight the importance of a proper light intensity to promote plant growth and qualitative traits and to reach high production targets. Hence, preliminary screening of plant performance under different light treatments is recommended to optimise plant response to artificial lighting.

Abstract
Hydroethanolic extracts of cardoon petioles collected at sixteen growth stages (P1-P16) were characterized in terms of their phenolic composition and bioactive potential (antioxidant, cytotoxic, anti-inflammatory, and antimicrobial activities). Fifteen phenolic compounds were tentatively identified (i.e., ten phenolic acids and five flavonoid glycosides); the main compounds were 5-O-caffeoylquinic and 1,5-di-O-caffeoylquinic acids. Samples collected at early maturity (P1-P4) presented a weak positive correlation between the higher content in polyphenols (P3: 101-mg/g extract) and better inhibition capacity against thiobarbituric acid reactive substance formation (TBARS; P3: IC50 = 5.0 µg/mL). Samples at intermediate maturation stages (P9) presented higher cytotoxic and anti-inflammatory potential. Moreover, immature petioles showed greater antihemolytic (OxHLIA; P4: IC50 = 65 and 180 µg/mL for Δt of 60 and 120 min, respectively) and antibacterial activity. The antifungal activity varied depending on the maturation stage and the fungi strain. In conclusion, the maturation stage may greatly affect the polyphenols composition and content and the bioactive potential of cardoon petioles.

Abstract
Sustainable food security due to climate and social change is more important than ever. This study was conducted to increase plant growth and bioactive contents using intercropping technology in urban agriculture. Tomatoes (Solanum lycopersicum L.) and sunflowers (Helianthus annuus L.) were intercropped in different ratios in outdoor rooftop, and lettuce (Lactuca savita L.) was grown with chicory (Cichorium intybus. L.) in the indoor LED plant growth chambers. Carotenoids in plant foods were analyzed using an ultraperformance liquid chromatography with photodiode array detection. Chlorophyll contents were determined by the soil analysis development chlorophyll meter. Tomatoes planted with sunflowers (3 : 1) had a significantly larger stem diameter (
), a large number of leaves (
), and significantly higher lycopene at d88 (

) as compared to those of monocultured tomatoes. Lettuce planted in a ratio of 1 : 3 with lettuce and chicory had significantly higher contents of chlorophyll (

), than lettuce planted alone. On the other hand, intercropping of chicory and lettuce did not have a beneficial effect on the growth and carotenoid content of chicory. The current study indicates that plant growth and carotenoid content can be substantially modified by cocultivation, and the effects may vary depending on the type of plant and the crop ratio.

Abstract
Biostimulants are a novel and eco-friendly agronomic tool with practical applications in alleviating negative effects of environmental stressors. The present work studied the effects of three biostimulant products (Nomoren (N), Twin-Antistress (TW), and X-Stress (XS)) under normal irrigation (W+) and water deficit irrigation conditions (W−) on the nutritional, chemical composition and bioactive properties of common bean fresh pods. A variable effect of biostimulants and water deficit irrigation was observed on nutritional value parameters, while fructose and sucrose were the main detected sugars, especially in NW+ and CW− treatments. Oxalic, malic, and citric acid were the main detected organic acids, while γ- and total tocopherol content was the highest in TWW+. (+)-Catechin and (−)-epicatechin were the most abundant phenolic compounds, especially in the NW− treatment. A variable antioxidant capacity was observed for the Thiobarbituric Acid Reactive Substances (TBARS) and Oxidative Haemolysis assays (OxHLIA), while TWW+ extracts showed the best overall results against the tested fungi. In conclusion, the tested biostimulants had a positive effect on chemical composition and bioactivities of purple bean depending on the irrigation regime.

Abstract
The management of mineral elements in agriculture is important for their nutritional role for plants and dietary value for humans, sparking interest in strategies that can increase mineral use efficiency and accumulation in plant food. In this work, we evaluated the effects of the isosmotic variations of the concentration on three macrocations (K, Ca, and Mg) in lettuce (Lactuca sativa L.). Our aim was to improve the nutritional components of this valuable dietary source of minerals. Using a full factorial design, we analyzed mineral utilization efficiency (UtE), leaf morphology, gas exchange parameters, phenolic profiles (through ultra-high performance liquid chromatography coupled to a quadrupole-time-of-flight (UHPLC-QTOF) mass spectrometry), and enzymatic activities in two phytochemically diverse butterhead lettuce varieties (red or green). Plants were fed in hydroponics with three nutrient solutions (NSs) with different ratios of K, Ca, and Mg. The variation of these minerals in the edible product was associated with alterations of the morphology and physiology of the leaves, and of the quality and functional properties of lettuce, with a trade-off between total accumulation and mineral UtE. Moreover, in non-limiting conditions of nutrient availability, significant mineral interactions were also present. The flexibility of the plant response to the different ratios of macrocations, and the observed large intraspecific variation, were adequate to provide mineral-specific phytochemical profiles to the edible product. Specifically, the full-red lettuce provided more interesting results in regard to the compositional and functional attributes of the leaves.

Abstract
Growing demand for horticultural products of accentuated sensory, nutritional, and functional quality traits has been driven by the turn observed in affluent societies toward a healthy and sustainable lifestyle relying principally on plant-based food. Growing plants under protected cultivation facilitates more precise and efficient modulation of the plant microenvironment, which is essential for improving vegetable quality. Among the environmental parameters that have been researched for optimization over the past, air relative humidity has always been in the background and it is still unclear if and how it can be modulated to improve plants’ quality. In this respect, two differentially pigmented (green and red) Salanova® cultivars (Lactuca sativa L. var. capitata) were grown under two different Vapor Pressure Deficits (VPDs; 0.69 and 1.76 kPa) in a controlled environment chamber in order to appraise possible changes in mineral and phytochemical composition and in antioxidant capacity. Growth and morpho-physiological parameters were also analyzed to better understand lettuce development and acclimation mechanisms under these two VPD regimes. Results showed that even though Salanova plants grown at low VPD (0.69 kPa) increased their biomass, area, number of leaves and enhanced Fv/Fm ratio, plants at high VPD increased the levels of phytochemicals, especially in the red cultivar. Based on these results, we have discussed the role of high VPD facilitated by controlled environment agriculture as a mild stress aimed to enhance the quality of leafy greens.

The MS/MS analysis allowed the identification of thirty-five phenolic compounds including hydroxybenzoic and hydroxycinnamic acids, flavanones, flavanols and flavanones, many of which are reported here in lamb's lettuce for the first time. Chlorogenic acid was the principal phenolic compound found (57.1% of the total phenolic concentration) followed by its isomer cis-5-caffeoylquinic. Other major phenolic compounds were also hydroxycinnamic acids (coumaroylquinic, dicaffeoylquinic and feruloylquinic acids) as well as the flavones luteolin-7-rutinoside, diosmetin-apiosylglucoside and diosmin. Regarding carotenoids, seven xanthophyll and four carotenes, among which β-carotene and lutein were the major compounds, were detected from their UV-Vis absorption spectrum. In addition, chlorophylls a and b, their isomers and derivatives (pheophytin) were identified. Preharvest factors such as reduced fertilization levels or salinity increased some secondary metabolites, highlighting the importance of these factors on the final nutritional value of plant foods. Lamb's lettuce was seen to be a good potential source of bioactive compounds, and fertilization management might be considered a useful tool for increasing its nutritional interest.

Abstract
Mineral elements are essential for plant growth and development and strongly affect crop yield and quality. To cope with an everchanging environment, plants have developed specific responses to combined nutrient variations. In this work, we investigated the effects of multifactorial treatments with three macrocations (K, Ca, and Mg) on lettuce (Lactuca sativa L.) varieties that strongly diverge in leaf pigmentation (full red or green). Specifically, we monitored main leaf parameters and metabolomics profiles of hydroponically grown plants fed with isosmotic nutrient solutions that have different proportions of macroelements. The result revealed a high biochemical plasticity of lettuce, significantly affected by the genotype, the nutrient solution, and their interaction. Our work also provided evidence and insights into the different intraspecific responses to multifactorial variation of macrocations, with two varieties having distinct strategies to metabolically respond to nutrient variation. Overall, plant adaptive mechanisms increased the phytochemical diversity between the varieties both among and within the main classes of plant secondary metabolites. Finally, our work also implies that the interaction of a pre-existing phytochemical diversity with the management of multiple mineral elements can offer added health-related benefits to the edible product specific to the variety.

Abstract
Basil (Ocimum basilicum L.) is among the most widespread aromatic plants due to its versatility of use and its beneficial health properties. This aromatic plant thrives in hydroponics, which is a valid tool to improve the production and functional quality of crops, but nevertheless, it offers the possibility to de-seasonalize production. A floating raft system was adopted to test the production and quality potential during autumn season of three different genotypes of Genovese basil (Aroma 2, Eleonora and Italiano Classico) grown in three nutrient solutions with crescent electrical conductivity (EC: 1, 2 and 3 dS m-1). The aromatic and phenolic profiles were determined by GC/MS and HPLC analysis, respectively. The combination Aroma 2 and the EC 2 dS m-1 resulted in the highest production, both in terms of fresh weight and dry biomass. The 2 dS m-1 treatment determined the major phenolic content, 44%, compared to the other two EC. Italiano Classico showed a higher total polyphenolic content in addition to a different aromatic profile compared to the other cultivars, characterized by a higher percentage of Eucalyptol (+37%) and Eugenol (+107%) and a lower percentage of linalool (-44%). Correct management of the nutritional solution combined with adequate genetic material managed an improvement in the production and the obtainment of the desired aromatic and phenolic profiles.

Abstract
The study of the relationship between cultivated plants and environmental factors can provide information ranging from a deeper understanding of the plant biological system to the development of more effective management strategies for improving yield, quality, and sustainability of the produce. In this article, we present a comprehensive metabolomics dataset of two phytochemically divergent lettuce (Lactuca sativa L.) butterhead varieties under different growing conditions. Plants were cultivated in hydroponics in a growth chamber with ambient control. The pre-harvest factors that were independently investigated were light intensity (two levels), the ionic strength of the nutrient solutions (three levels), and the molar ratio of three macroelements (K, Mg, and Ca) in the nutrient solution (three levels). We used an untargeted, mass-spectrometry-based approach to characterize the metabolomics profiles of leaves harvested 19 days after transplant. The data revealed the ample impact on both primary and secondary metabolism and its range of variation. Moreover, our dataset is useful for uncovering the complex effects of the genotype, the environmental factor(s), and their interaction, which may deserve further investigation.

Abstract
The environmental burden from crop production byproducts is gradually increasing and necessitates the sustainable management of waste towards a circular economy approach. In the present study, three byproducts (cotton ginning waste (CGW), ground hazelnut husks (GHH) and ground peanut husks (GPH)) were evaluated in lettuce cultivation. For this purpose, the tested materials were incorporated in soil at two different rates (25% and 50% of total substrate volume) while a control treatment (no addition of byproducts) was also considered. Fresh weight per plant and total yield was the highest for the GHH50% treatment. The highest fat, protein, carbohydrates and energy content were observed for the CGW25% treatment. Chemical composition also differed among the tested byproducts where CGW25% treatment had the highest total tocopherols, sugars (sucrose, fructose, trehalose and total sugars) and organic acids content. The most abundant fatty acids were α-linolenic, linoleic and palmitic acid in all the tested treatments, while the highest antioxidant activity was observed for the GHH50% treatment. Regarding polyphenols, phenolic acids content was the highest in the GHH treatments, whereas flavonoids were the highest for the CGW25% treatment. No cytotoxicity against the PLP2 non-tumor cell line was observed, whereas only the GPH50% treatment showed moderate efficacy against HeLa, HepG2 and MCF-7 cell lines. The tested extracts also showed moderate antibacterial activities and only the extracts from the CGW50% treatment were more effective than the positive control against Trichoderma viride. In conclusion, the present results showed the great potential of using the tested byproducts as soil amendments for vegetable crops production, since they may improve the nutritional parameters, the chemical profile and the bioactivities of the final product. The suggested alternative use of the tested byproducts not only will increase the added value of crops but will also alleviate the environmental burden from bulky agroindustry byproducts.

Abstract
Sub-optimal growing conditions have a major effect on plants; therefore, large efforts are devoted to maximizing the availability of agricultural inputs to crops. To increase the sustainable use of non-renewable inputs, attention is currently given to the study of plants under non-optimal conditions. In this work, we investigated the impact of sub-optimal macrocations availability and light intensity in two lettuce varieties that differ for the accumulation of secondary metabolites (i.e., 'Red Salanova' and 'Green Salanova'). Photosynthesis-related measurements and untargeted metabolomics were used to identify responses and pathways involved in stress resilience. The pigmented ('Red') and the non-pigmented ('Green Salanova') lettuce exhibited distinctive responses to sub-optimal conditions. The cultivar specific metabolomic signatures comprised a broad modulation of metabolism, including secondary metabolites, phytohormones, and membrane lipids signaling cascade. Several stress-related metabolites were altered by either treatment, including polyamines (and other nitrogen-containing compounds), phenylpropanoids, and lipids. The metabolomics and physiological response to macrocations availability and light intensity also implies that the effects of low-input sustainable farming systems should be evaluated considering a range of cultivar-specific positive and disadvantageous metabolic effects in addition to yield and other socio-economic parameters.

Abstract
Considering that functional components of plant foods are mainly secondary-metabolism products, we investigated the shaping of health-promoting compounds in hydroponically grown butterhead lettuce (Lactuca sativa L. var. capitata) as a function of the strength of the nutrient solution utilized. To this aim, untargeted metabolomics profiling, in vitro antioxidant capacity (total phenolics, 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS), cupric reducing antioxidant capacity (CUPRAC), and ferric reducing antioxidant power (FRAP) assays), and the inhibition of selected enzyme activities were investigated in two butterhead lettuce cultivars with different pigmentation, i.e., green and red Salanova. Full-strength nutrition, together with half- and quarter-strength solutions of macronutrients, was tested. Our results indicate that by reducing the nutrients strength, we could elicit a distinctive shaping of the phenolic profile of lettuce. It is noteworthy that only specific classes of phenolics (namely, lignans and phenolic acids, followed by flavones and anthocyanins) were modulated by the induction of nutritional eustress (fold-change values in the range between -5 and +11). This indicates that specific responses, rather than a generalized induction of phenolic compounds, could be observed. Nonetheless, a genotype-dependent response could be observed, with the red cultivar being much more responsive to nutritional deprivation than the green Salanova lettuce. Indeed, analysis of variance (ANOVA) confirmed a genotype x nutrition interaction in red Salanova (p < 0.001). As a consequence of the changes in phenolic composition, also the antioxidant capacity (p < 0.001) and amylase inhibition (p < 0.001) properties were affected by the growing conditions. However, the effect on cholinesterase and tyrosinase inhibition was poorly affected by the nutritional strength. Provided that yields are not compromised, the application of a controlled nutritional eustress in hydroponically cultivated lettuce may represent a valuable strategy to produce food with tailored functional features in a sustainable manner.

Abstract
The configuration of a biologically fertile substrate for edible plant growth during long-term manned missions to Mars constitutes one of the main challenges in space research. Mars regolith amendment with compost derived from crew and crop waste in bioregenerative life support systems (BLSS) may generate a substrate able to extend crew autonomy and long-term survival in space. In this context, the aim of our work was threefold: first, to study the geochemistry and mineralogy of Mojave Mars Simulant (MMS-1) and the physico-chemical and hydraulic properties of mixtures obtained by mixing MMS-1 and green compost at varying rates (0:100, 30:70, 70:30, 100:0; v:v); secondly, to evaluate the potential use of MMS-1 as a growing medium of two lettuce (Lactuca sativa L.) cultivars; thirdly, to assess how compost addition may impact on sustainability of space agriculture by exploiting in situ resources. MMS-1 is a coarse-textured alkaline substrate consisting mostly of plagioclase, amorphous material and secondarily of zeolite, hematite and smectites. Although it can be a source of nutrients, it lacks organic matter, nitrogen, phosphorus and sulphur, which may be supplied by compost. Both cultivars grew well on all mixtures for 19 days under fertigation. Red Salanova lettuce produced a statistically higher dry biomass, leaf number and area than Green Salanova. Leaf area and plant dry biomass were the highest on 30:70 simulant:compost mixture. Nevertheless, the 70:30 mixture was the best substrate in terms of pore-size distribution for water-plant relationship and the best compromise for plant growth and sustainable use of compost, a limited resource in BLSS. Many remaining issues warrant further investigation concerning the dynamics of compost production, standardisation of supply during space missions and representativeness of simulants to real Mars regolith.

Abstract
Heavy payloads in future shuttle journeys to Mars present limiting factors, making self-sustenance essential for future colonies. Therefore, in situ resources utilization (ISRU) is the path to successful and feasible space voyages. This research frames the concept of planting leafy vegetables on Mars regolith simulant, ameliorating this substrate’s fertility by the addition of organic residues produced in situ. For this purpose, two butterhead lettuce (Lactuca sativa L. var. capitata) cultivars (green and red Salanova®) were chosen to be cultivated in four different mixtures of MMS-1 Mojave Mars simulant:compost (0:100, 30:70, 70:30 and 100:0; v:v) in a phytotron open gas exchange growth chamber. The impact of compost rate on both crop performance and the nutritive value of green- and red-pigmented cultivars was assessed. The 30:70 mixture proved to be optimal in terms of crop performance, photosynthetic activity, intrinsic water use efficiency and quality traits of lettuce. In particular, red Salanova® showed the best performance in terms of these quality traits, registering 32% more phenolic content in comparison to 100% simulant. Nonetheless, the 70:30 mixture represents a more realistic scenario when taking into consideration the sustainable use of compost as a limited resource in space farming, while still accepting a slight significant decline in yield and quality in comparison to the 30:70 mixture.

Abstract
The data presented in this article were derived from dry and fresh samples of soilless-grown butterhead lettuce (Lactuca sativa L. var. Capitata). Organic acids, total nitrogen, sulphate and total chlorophyll concentrations varied in response to cultivar (red or green butterhead Salanova) and to nutrient solution macrocation ratios (high proportion of K, Ca or Mg). Kjeldahl, spectrophotometry and ion chromatography were the principal employed methods. Data of total nitrogen and sulphate concentrations contribute to the understanding of macrocation uptake by plants and may drive prospective relevant research. Organic acids are indicators of plant tolerance to stress, including nutrient deficiencies, and the variability of their concentrations provide insights to plant stress physiology. The data reported in this paper are related to the research article "The bioactive profile of lettuce produced in a closed soilless system as configured by combinatorial effects of genotype and macrocation supply composition", authored by El-Nakhel et al. Abstract
The current research elucidated the agronomical, physiological, qualitative characteristics and mineral composition of lettuce (Lactuca sativa L. var. longifolia) after treatments with a beneficial fungus Trichoderma virens (TG41) alone or in combination with a vegetal biopolymer-based biostimulant (VBP; ‘Quik-link’). The experiment consisted of lettuce plants grown in three N conditions: sub-optimal (0N kg ha−1), optimal (70N kg ha−1), and supra-optimal (140N kg ha−1) N levels. Lettuce grown under 0N fertilization showed a significant increase in fresh yield when inoculated with TG41 alone (45%) and a greater increase with TG41 + VBP biostimulant (67%). At 48 days after transplanting, both the TG41 alone or TG41+VBP biostimulant induced higher values of CO2 assimilation in comparison to the control. The mineral concentrations in leaf tissues were greater by 10% for K and 12% for Mg with the TG41+VBP treatments compared to the untreated lettuce. The lettuce plants receiving either TG41 alone or TG41+VBP biostimulants had a significantly lower nitrate content than any of the untreated controls. In non-fertilized conditions, plants treated with TG41+VBP biostimulants produced lettuce of higher premium quality as indicated by the higher antioxidant activity, total ascorbic acid (+61%–91%), total phenols (+14%) and lower nitrate content when compared to the untreated lettuce.

Abstract
The current trend for substituting synthetic compounds with natural ones in the design and production of functional and healthy foods has increased the research interest about natural colorants. Although coloring agents from plant origin are already used in the food and beverage industry, the market and consumer demands for novel and diverse food products are increasing and new plant sources are explored. Fresh vegetables are considered a good source of such compounds, especially when considering the great color diversity that exists among the various species or even the cultivars within the same species. In the present review we aim to present the most common species of colored vegetables, focusing on leafy and fruit vegetables, as well as on vegetables where other plant parts are commercially used, with special attention to blue color. The compounds that are responsible for the uncommon colors will be also presented and their beneficial health effects and antioxidant properties will be unraveled.
