Abstract
Polyphenols, as important active ingredients in edible fungi, have many beneficial functions. As rare edible fungi, Morchella spp., are highly popular due to their nutritional value and unique flavor. However, most Morchella have not yet been artificially cultivated due to their special biological characteristics, resulting in limited research on polyphenols in artificially cultivated Morchella. In this study, the extraction parameters of polyphenols from artificially cultivated Morchella sextelata were optimized using response surface methodology, the polyphenol components were analyzed via UPLC‒tandem mass spectrometry, and their antioxidant properties were determined in vitro. The optimal extraction process parameters were as follows: ethanol concentration, 43%; solid‒liquid ratio, 1:41 g mL-1; extraction temperature, 52°C; extraction time, 2 h; rotation speed, 180 r min-1; and extraction frequency, twice. The optimized extraction parameters resulted in a polyphenol yield of 4.82 mg g-1, a 69.97% increase. Fourteen phenolic compounds were identified: gallic acid, protocatechuic acid, dl-4-hydroxyphenyllactic acid, methyl 2,4-dihydroxyphenylacetate, salicylic acid, 4-hydroxybenzaldehyde, 4-hydroxyacetophenone, eucommiol, luteolin, ethylparaben, hinokiflavone, amentoflavone, propyl 4-hydroxybenzoate, and 2,6-di-tert-butylphenol. The EC50 values of 1,1-diphenyl-2-picrylhydrazyl (DPPH)· scavenging ability, reducing power and ferrous ion chelating ability of polyphenols were 2.70, 30.98, and 72.06 µg mL-1, respectively. These findings indicated that polyphenols had a significantly stronger ability to scavenge DPPH· compared with their reducing power and ability to chelate ferrous ions. The results of this study provide a solid foundation for the subsequent study of function of M. sextelata polyphenols as well as a theoretical basis for the further development and utilization of M. sextelata, which will help promote healthy development of Morchella industry. PRACTICAL APPLICATION: The extraction, composition, and antioxidant properties of polyphenols from Morchella sextelata were identified, which provides a theoretical basis for better utilization of Morchella resources.

Abstract
The crude Hedysarum polysaccharides (HPS: HPS-50 and HPS-80) obtained from Radix Hedysari exhibited great pharmacological activities in our previous research. This study investigated the effects of HPS on lipopolysaccharide (LPS)/D-galactosamine (D-GalN)-induced acute liver injury (ALI) in mice and LPS-induced injury in LO2 cells, as well as the relationship between structural characteristics and hepatoprotective activities. The in vivo results showed that compared with HPS-80, HPS-50 showed stronger hepatoprotection, which improved histopathological changes to normal levels. HPS-50 significantly decreased the levels of ALT, AST, MPO, and MDA, increased the activities of SOD, CAT, and GSH, and suppressed the LPS/D-GalN-triggered production of TNF-α, IL-1β, and IL-6 (p < .05). The results in vitro showed that HPS-50-P (HPS-50-1, HPS-50-2, and HPS-50-3) purified from HPS-50 played significant protective roles against LPS-induced injury in LO2 cells by reducing cell apoptosis and relieving cell cycle arrest. HPS-50-2 restored the percentage of normal cells from 54.8% to 94.7%, and reduced the S phase cells from 59.40% to 47.05% (p < .01). By analyzing the structure of HPS-50-P, including monosaccharide composition, molecular weight, chain conformation, and surface morphology, we speculated that the best protective effect of HPS-50-2 might be attributed to its beta configuration, highest molecular weight, and high glucose and galactose contents. These findings indicate that HPS-50 might be a promising source of functional foods for the protection and prevention of ALI. PRACTICAL APPLICATIONS: In this study, the protective effect of HPS on ALI was evaluated from multiple perspectives, and HPS-50-2 was screened as a potential active ingredient. This study has two practical applications. First, it provides a new way to improve ALI, and a new option for patients to prevent and treat ALI. Second, this work also complements the pharmacological activity of Radix Hedysari and provides a basis for the development of Radix Hedysari as a functional food.

Abstract
Morchella esculenta (M. esculenta) is a delicious edible mushroom prized for its special flavor and strong health promoting abilities. Several bioactive ingredients including polysaccharides, polyphenolic compounds, proteins, and protein hydrolysates all contribute to the biological activities of M. esculenta. Different polysaccharides could be extracted and purified depending on the extraction methods and M. esculenta studied. Monosaccharide composition of M. esculenta polysaccharides (MEP) generally includes mannose, galactose, and glucose, etc. MEP possess multiple bioactivities such as antioxidant, anti-inflammation, immunoregulation, hypoglycemic activity, atherosclerosis prevention and antitumor ability. Other components like polyphenols, protein hydrolysates, and several crude extracts are also reported with strong bioactivities. In terms of potential applications of M. esculenta and its metabolites as nutritional supplements and drug supplements, this review aims to comprehensively summarize the structural characteristics, biological activities, research progress, and research trends of the active ingredients produced by M. esculenta. Among the various biological activities, the substances extracted from both natural collected and submerged fermented M. esculenta are promising for antioxidants, immunomodulation, anti-cancer and anti-inflammatory applications. However, further researches on the extraction conditions and chemical structure of bioactive compounds produced by M. esculenta still need investigations.

Abstract
This study investigated the effects of Momordica charantia (M. charantia) extract in obesity and abnormal lipid metabolism in mice fed high fat diet (HFD). Fruit, root, stem, and leaf extracts of M. charantia were obtained using distilled water, 70% ethanol and 95% hexane. M. charantia leaf distilled water extract (MCLW) showed the highest antioxidant activity in both 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity tests and reducing power. Metabolite profiles of M. charantia leaf extracts were analyzed for identification of bioactive compounds. HFD-fed mice were treated with MCLW (oral dose of 200 mg/kg/d) for 4 weeks. MCLW reduced lipid accumulation, body weight, organ weight, and adipose tissue volume and significantly improved glucose tolerance and insulin resistance in HFD mice. Furthermore, MCLW administration reduced serum total cholesterol and low-density lipoprotein cholesterol, and increased serum high-density lipoprotein cholesterol compared with HFD mice. Moreover, MCLW significantly reduced the levels of serum urea nitrogen, alanine aminotransferase, alkaline phosphatase, and aspartate aminotransferase; alleviated liver and kidney injury. MCLW decreases expression of genes that fatty acid synthesis; increase the expression of catabolic-related genes. These results indicate that MCLW has an inhibitory effect on obese induced by high fat diet intake, and the mechanism may be related to the regulation of abnormal lipid metabolism in liver and adipose tissue, suggesting that MCLW may be a suitable candidate for the treatment of obesity.
