Abstract
Red cabbage, a highly nutritious cool-season cruciferous vegetable, is rich in anthocyanins; however, the instability of anthocyanins during processing and storage poses challenges. This study aimed to optimize the foam-mat drying process of red cabbage juice (RCJ) with a high anthocyanin content using a hybrid microwave hot air-drying system (MW-HAD) as a dehydration method compared to conventional techniques (HAD) using response surface methodology (RSM). Additionally, the produced red cabbage juice powder (RCJP) was used to enrich the pancake formulation. The developed model exhibited a high degree of reliability with optimal conditions and was determined for microwave power, temperature, foaming agent carboxymethylcellulose (CMC), and egg white protein (EWP) as 360 W, 60°C, 0.3%, and 1.2%, respectively. Moisture content (%) was decreased from 93.47 to 8.62 at optimum process conditions. In comparison to the control (60°C), foam mat drying with the MW-HAD hybrid system reduced the drying time (DT) by more than 90.9% due to the higher drying rate, while many physicochemical properties, especially total anthocyanin content (TAC), were better preserved. Utilization of RCJP in the production of anthocyanin-rich functional pancakes resulted in enhanced nutritional qualities compared to control pancakes with increased protein (35.07%), total phenolic (75.8%), dietary fiber (82.9%), and anthocyanin content (100%). In conclusion, MW-HAD demonstrates significant potential as a promising drying method to reduce the DT and preserve the physicochemical properties of RCJP. Furthermore, the application of the optimized RCJP in anthocyanin-rich functional pancakes highlights improved nutritional qualities, making a substantial contribution to the advancement of functional foods.

Abstract
Membrane separation technologies have attracted great attentions in chemical engineering, food science, analytical science, and environmental science. Compared to traditional membrane separation techniques like reverse osmosis (RO), ultrafiltration (UF), electrodialysis (ED) and others, pervaporation (PV)-based membrane separation shows not only mutual advantages such as small floor area, simplicity, and flexibility, but also unique characteristics including low cost as well as high energy and separation efficiency. Recently, different polymer, ceramic and composite membranes have shown promising separation applications through the PV-based techniques. To show the importance of PV for membrane separation applications, we present recent advances in the fabrication, properties and performances of polymeric membranes for PV separation of various chemicals in petrochemical, desalination, medicine, food, environmental protection, and other industrial fields. To promote the easy understanding of readers, the preparation methods and the PV separation mechanisms of various polymer membranes are introduced and discussed in detail. This work will be helpful for developing novel functional polymer-based membranes and facile techniques to promote the applications of PV techniques in different fields.

Abstract
The structure and transport properties of alginate/chitosan microparticle membranes used in ethanol dehydration processes were investigated. The membranes were characterized based on images obtained from high-resolution microscopy. The following parameters were determined: the observed total amount of void space, the average size of the void domains, their length and diameter, the fractal dimension, and the generalized stochastic fractal parameters. The total amount of void space was determined to be between 54% and 64%. The average size of the void domains is smaller for alginate membranes containing neat (CS) and phosphorylated (CS-P) chitosan particles when compared to those membranes filled with glycidol-modified (CS-G) and glutaraldehyde crosslinked (CS-GA) chitosan particles. Furthermore, the transport of ethanol and water particles through the studied membranes was modelled using a random walk framework. It was observed that the results from the theoretical and experimental studies are directly correlated. The smallest values of water to ethanol diffusion coefficient ratios (i.e., 14) were obtained for Alg (sodium alginate) membranes loaded with the CS and CS-P particles, respectively. Significantly larger values (27 and 19) were noted for membranes filled with CS-G and CS-GA particles, respectively. The simulation results show that the size of channels which develop in the alginate matrix is less suited for ethanol molecules compared to water molecules because of their larger size. Such a situation facilitates the separation of water from ethanol. The comparison of the structural analysis of the membranes and random walk simulations allows one to understand the factors that influence the transport phenomena, in the studied membranes, and comment on the effect of the length, diameter, number of channels, and variations in the pore diameters on these transport parameters.

Abstract
Sage (Salvia officinalis L.) is a good source of antioxidant compounds, carnosic acid and carnosol being the prominent ones. Both are soluble in CO2, and our goal was to investigate the application of supercritical CO2 extraction to obtain sage extracts rich in these compounds. The effect of pressure, temperature, and CO2 flow rate on the carnosic acid and carnosol yield was studied. These variables were optimized by response surface methodology (RSM). The pressure significantly affected carnosol extraction, while the extraction of carnosic acid was affected by the pressure, temperature, and CO2 flow rate. Carnosic acid content varied from 0.29–120.0 µg mg−1, and carnosol content from 0.46–65.5 µg mg−1. The optimal conditions according to RSM were a pressure of 29.5 MPa, a temperature of 49.1 °C, and a CO2 flow rate of 3 kg h−1, and the sage extract yield was calculated to be 6.54%, carnosic acid content 105 µg mg−1, and carnosol content 56.3 µg mg−1. The antioxidant activities of the sage extracts were evaluated by the scavenging activities of 2,2-diphenyl-1-picrylhydrazyl (DPPH). Sage extract obtained at 30 MPa and 40 °C with 2 kg h−1 CO2 flow rate with a carnosic acid content of 72 µg mg−1 and carnosol content of 55 µg mg−1 exhibited the highest antioxidant activity (80.0 ± 0.68%) amongst the investigated supercritical fluid extracts at 25 µg mL−1 concentration. The antimicrobial properties of extracts were tested on four bacterial strains: Escherichia coli, Pseudomonas aeruginosa, Bacillus subtilis, and Staphylococcus aureus. The extract with a carnosic acid content of 116 µg mg−1 and a carnosol content of 60.6 µg mg−1 was found to be the most potent agent against B. subtilis.

Abstract
Groundwater quality significantly affects public health. In order to better understand groundwater suitability, a total of 887 shallow groundwater samples were collected from the Hetao Plain (HP), Inner Mongolia, China; the maximum and minimum health guideline values of each element were established in this work. Subsequently, the desirability functions (DFs) theory was employed to evaluate the human health risk of groundwater. The results indicate that 780 of the samples were unsuitable for drinking purposes due to the iron, total dissolved solids (TDS), arsenic, strontium, fluoride, and manganese concentrations present, all of which exceeded their maximum guideline value (MaGV). Only 107 samples were suitable for drinking use; however, these samples also have adverse effects on human health to some extent, due to the extremely lower concentrations of nutrient elements and existence of non-nutrient elements. Based on the observed results, groundwater that is unsuitable for drinking use must undergo bacteriological treatment prior to consumption. It was necessary for residents in the western, central, and northeastern parts of the study area are required to be supplied with certain nutrient elements, such as iron, iodine, molybdenum, manganese, and lithium. According to the human health risk assessment of groundwater, the general public can safely and reasonably consume the groundwater for drinking, agriculture irrigation, and industrial purposes.
