Abstract
Minerals are essential for crustacean growth, development, and reproduction. This study investigated fluctuations in concentrations of twelve minerals in the hepatopancreas, ovary, and muscle of adult female Chinese mitten crabs (Eriocheir sinensis) throughout ovarian maturation (stages II-V), and explored potential mineral transfers between tissues and associated mineral-related gene expression patterns. Results showed a significant increase in five macro-minerals (Na, K, Ca, P, Mg) and most trace minerals (except Fe, Co, Mo) in the ovary (P < 0.05). In contrast, most minerals in the hepatopancreas, including Ca, P, Zn, Mn, Se, Co, and Mo, decreased significantly, while Fe and Cu concentrations increased markedly (P < 0.05). Muscular minerals exhibited varied trends, with Na, K, and Mg increasing significantly (P < 0.05). Ovarian mineral concentrations were positively correlated with the gonadosomatic index (GSI) (P < 0.001), while most hepatopancreatic minerals exhibited a negative correlation with GSI (P < 0.001). Significant correlations were also observed between different minerals in the hepatopancreas, ovary, or muscle (P < 0.05). Additionally, mineral-related genes mt-1β (metallothionein-1β-like) and fer (ferritin-like) were upregulated in both the ovaries and hepatopancreas, showing negative correlations with Ca, P, Mg, Zn, and Mn in the hepatopancreas (P < 0.05) and positive correlations with K, Ca, P, Mg, Cu, Zn, Mn, and Se in the ovary (P < 0.01). In conclusion, the major findings suggest that most minerals are dynamically accumulated in ovary and muscle during the ovarian maturation cycle of E. sinensis, with a potential mineral accumulation and transfer mechanism from the hepatopancreas to the ovary.

Abstract
The swimming crab, Portunus trituberculatus, supports the world's largest crab fishery. Hard-shell crabs have fully developed exoskeletons and are rich in meat, while soft-shell crabs, which have recently molted, contain less meat. To determine their nutritional status and feeding behavior, we measured amino acids (AAs), organic carbon (OC), δ13C, δ15N, and 210Po in the muscle of hard- and soft-shell crabs collected from the eastern Yellow Sea in May 2024. The concentrations of total AAs (TAAs) and OC were approximately 1.4 and 1.3 times higher, respectively, in hard-shell crabs than in soft-shell crabs. A significant positive correlation between TAAs and OC (r2 = 0.74, p < 0.05) suggests that hard-shell crabs have a better nutritional status, due to the consumption of higher-quality food. Hard-shell crabs also exhibited significantly higher δ13C values and 210Po activities than soft-shell crabs, whereas δ15N values showed no significant difference between the two groups. These results indicate that hard-shell crabs primarily consume higher trophic-level prey compared with soft-shell crabs, despite both occupying the same trophic position. Thus, this difference in food sources may be influenced by post-molt hiding behavior in soft-shell crabs, which limits access to high-trophic prey, or alternatively, by competition for food in coastal waters.

Abstract
In order to study the pattern of changes in quality of marinated Chinese mitten crabs (Eriocheir sinensis) during cold storage, three aspects of sensory, taste and odor were investigated. Sensory evaluation and total volatile basic nitrogen (TVB-N) were measured in viscera and abdomen muscle at 0, 7, 15 and 30 days of storage at 4°C. Sensory scores significantly declined at 15 d, coinciding with TVB-N levels exceeding 25 mg N/100 g. Taste profiling demonstrated distinct changes over the storage period. Arginine (Arg) in viscera and abdomen muscle decreased by 18.16 % and 43.26 %, respectively, while adenosine monophosphate (AMP) dropped to 48.46 and 22.22 mg/100 g after 15 days, contributing to loss of umami. Based on the correlation analysis, it was known that bitterness was related to freshness, with tyrosine (Tyr), phenylalanine (Phe), hypoxanthine (Hx) and hypoxanthine riboside (HxR) being more significant contributors to the bitterness. Gas chromatography-ion mobility spectrometry (GC-IMS) analysis attributed late-stage undesirable odors to the production of aldehydes and ketones, particularly heptanone, 3-hydroxy-2-butanone, heptanal and glutaraldehyde. This study provided valuable guide for improving the flavor quality of Chinese mitten crabs in the field of prepared dish.

Abstract
Taihe black-boned silky fowl (TS) is a native chicken breed in China with more than 2000 years of history. The present study aimed to characterize and evaluate the physical, nutritional, and flavor properties of TS eggs with a comparison to two other commercial breeds. Eggs from TS (n = 60) crossbred black-boned silky fowl (CB, n = 60) and Hy-line Brown (HL, n = 60) were used for physicochemical analysis. The evaluation system was divided into four parts based on nutrient and flavor profiles: protein and amino acids, lipids and fatty acids, mineral elements, and flavor-related amino acids and volatile compounds. Results showed that TS eggs were typically associated with the lowest egg weight and the highest yolk color, as compared with CB and HL eggs. No differences were found in crude protein, crude fat, triglycerides, and cholesterol content between eggs from the different breeds, but these eggs were distinct in terms of the amino acid, fatty acid, and volatile flavor compound profiles. Moreover, the differences in amino acid and fatty acid profiles might contribute to the specific flavor of TS eggs. Evaluation results indicated that TS egg whites may be suitable as a protein source for premature infants and young children under three years old and TS egg yolks could be considered a beneficial dietary lipid source due to their potential anti-cardiovascular properties. Additionally, TS whole eggs could serve as a valuable source of selenium (Se), molybdenum (Mo), zinc (Zn), and phosphorus (P) for adults aged 18 to 65. However, TS and CB eggs showed inferior Haugh units, eggshell quality, and essential amino acid compositions for older children, adolescents, and adults. These findings provide a better insight into the health benefits of TS eggs and contribute to the breeding and nutrition regulation of TS breeds.

Abstract
In this study, we investigated the body characteristics, carotenoid composition, and nutritional quality of Eriocheir sinensis with different hepatopancreas redness (a*). We distributed the crabs into two groups based on the hepatopancreas a* values and compared their body characteristics, chroma, carotenoid composition, and protein, lipid, total sugar, amino acid, and fatty acid content via paired t-test. The results revealed that the relationships between hepatopancreas a* values and crab quality are sex specific. In female crabs, the differences in nutritional characteristics were evident mainly in the hepatopancreases and ovaries. In the redder hepatopancreases, the content of zeaxanthin and β-carotene increased, and the levels of C22:6n3 and C20:5n3 decreased (p < 0.05). In the ovaries, the content of astaxanthin, canthaxanthin, β-carotene, umami, and sweet amino acids were lower in the redder hepatopancreas crabs (p < 0.05). In male crabs, there were positive relationships between hepatopancreas a* and amino acid and fatty acid content. The content of leucine, arginine, and total umami amino acids in muscles and of unsaturated fatty acids and n-6 polyunsaturated fatty acids in hepatopancreases and testicles increased with increasing hepatopancreas a* values (p < 0.05). Therefore, the redder the hepatopancreas, the higher the nutritional quality of male crabs.

Abstract
The nutritional quality of three edible parts (gonads, hepatopancreas and muscles) of Chinese mitten crabs (CMCs) from rice field culture and pond culture was firstly compared in our current study. It was found that the contents of mineral elements and volatile compounds in rice CMCs were superior to those in pond CMCs, and the antioxidant enzyme activities of rice CMCs were markedly higher than those of pond CMCs. Besides, the total free amino acid levels in the edible parts of pond CMCs were higher than those of rice CMCs. Compared with other tissues, the nucleotide and equivalent umami concentrations of the gonads in female rice CMCs were the maximum. Overall, both types of crabs demonstrated good nutritional quality, which met human nutrition and dietary needs. In comparison, the quality of rice CMCs was better than that of pond CMCs.

Abstract
Yellow oil mud crab (YOC) is a new variant of mud crab (Scylla paramamosain), which was attracted much attention in recent years due to its high level of nutrition. However, the nutritive values and the physiological changes in YOC have not been clearly understood. In this study, we aimed to identify the nutrient compositions (including total carotenoid content (TCC), total lipid content (TLC), total antioxidant capacity (TAC), and fatty acids) and differences in genes related to the biosynthesis of fatty acids using transcriptome analysis in YOC in comparison with those of normal mud crabs. As a result, observations on the morphological characteristics showed that the YOC exhibits a difference in the color of the muscle, gills (orange-yellow), and hemolymph (yellow) compared with the normal female crabs (NFC) (blue or nattier blue). The TCC and TLC (84.96 ± 9.65 μg/g in muscle and 1.39 ± 0.10 μg/mL in hemolymph) or TAC (1.52 ± 0.17 mM in hemolymph) of YOC were higher than that of NFC and normal male crab (NMC). YOC had lower saturated fatty acids, but higher unsaturated fatty acids, as well as the ratio of n-3/n-6 of fatty acids in muscle and hemolymph, compared with those of NFC and NMC. Furthermore, the transcriptome profile revealed that the unigenes in YOC were enriched in the synthesis of n-3 fatty acids. Furthermore, more unigenes related to 'Biosynthesis of unsaturated fatty acids' were identified in muscle and hemocytes, while fewer were in the gonads of YOC. Additionally, the positive (in muscle and hemocytes) and a negative correlation (in gonads) between expressions of unigenes and contents of TLC, TCC, and UFA were found, indicating a better synthesis ability of fatty acids in the muscle and hemocytes of YOC. Overall, compared to NFC and NMC, YOC has higher nutrients and is a better food nutrient source for humans.

Abstract
The Chinese mitten crab (Eriocheir sinensis) is recognized as an invasive species in Europe but increasing fishing efforts may hold economic benefits and yield positive ecological and nutritional outcomes. The objective of this study was to determine the yield of edible parts and the compositional and nutritional characteristics of this crab, especially as a source of n-3 PUFA. The overall yield of edible parts amounted to 38.09%, with males (27.72%) exhibiting a higher meat content compared to females (25.30%). The gonads displayed the highest protein content (24.12%), while the hepatopancreas (11.67%) showcased the highest fat content. Furthermore, the fatty acid composition varied depending on the distribution within different crab segments and gender and individual size. Notably, the gonad lipids contained the most nutritionally valuable n-3 fatty acids, followed by muscle and hepatopancreas lipids. The determined index of atherogenicity (IA) from 0.2 for gonadal lipids to 0.42 for hepatopancreas lipids, index of thrombogenicity (IT) in the range of 0.10 for gonads to 0.41 for hepatopancreas, and flesh lipid quality (FLQ) from 6.9 for hepatopancreas to 23 for muscle lipids indicate their pro-health properties. The ratio of n-3 to n-6 fatty acids showed Chinese mitten crab as an excellent source of oil that can be used for food fortification and dietary supplement production.

Abstract
E. sinensis, normally harvested in October and November, is an economic aquatic product in China. Pond culture has been widely applied for the production of E. sinensis, wherein a stable food supply for crabs is provided. In order to improve the nutritional quality of E. sinensis products, this study evaluated the effect of the local pond culture on the nutritive profiles of E. sinensis and screened out the best harvest time for the nutrient-rich crabs, thereby guiding the local crab industry to improve its aquaculture mode and harvest strategy. The results indicated that pond culture enhanced the levels of protein, amino acids, and specific organic acid derivatives, and reduced the levels of peptides and polyunsaturated fatty acids (PUFAs). Compared with E. sinensis harvested in October, peptide levels were significantly increased, whereas sugar, phenolic acid, and nucleotide levels were decreased in those harvested in November. Overall, the study revealed that the nutritive profile of the pond-reared E. sinensis was significantly modulated by a high-protein diet, thus lacking the diversity of metabolites. Additionally, October could be more appropriate for harvesting E. sinensis than November.

Abstract
Edible brachyurans are recognized as a popular source of food due to their delicious taste and nutritional quality. This study investigated the nutrient compositional variation and interrelationship in the muscle of wild and plastic-reared Cardisoma armatum. The plastic-reared crab had 27.81 ± 2.29 g 100 g-1 protein while crab from the wild contained 22.45 ± 2.65 g 100 g-1 protein. The difference in protein content of plastic-reared and its counterpart from the mangrove swamp was not significantly different (p > 0.05). This is also true of other proximate composition except that wild crabs were slightly higher in both crude fat (2.68 ± 0.35 g 100 g-1) and carbohydrate (5.89 ± 3.05 g 100 g-1). Generally, the total energy contributed due to protein, carbohydrate and fat in the tissues of both wild and plastic-reared C. armatum are similar. In the wild crab, contents of calcium (16083.27 ± 2127.90 mg 100 g-1) and phosphorus (1191.42 ± 199.21) were relatively higher, while contents of magnesium (368.69 ± 111.05 mg 100 g-1), sodium (125.30 ± 11.18 mg 100 g-1) and potassium (87.36 ± 7.27 mg 100 g-1) were relatively higher in plastic-reared crabs. All significant mineral ratios in wild and plastic-reared C. amartum fall within acceptable range. The positive relationship in the nutritional quality indicates that changes in proximate composition are associated with changes in mineral contents of the crab tissue.

Abstract
The biochemical composition of the muscle in Arctic graylings at three age stages was evaluated and compared. For conventional biochemical composition, there was no significant difference in the crude protein content among the three age stages, but the crude fat content in the 1 year old was significantly lower than that of the others (P < 0.05). For amino acids composition, there was no significant difference in the content of essential amino acids and delicious amino acids among the three age stages, but the essential amino acid index of the 2 year old was the highest (72.205), indicating that its essential amino acid composition was more suitable for human needs. For fatty acids composition, the content of monounsaturated fatty acids (2.759 mg/g) and polyunsaturated fatty acids (3.422 mg/g) of the 3 year old was significantly higher than that of the others (P < 0.05), and it also had relatively lowest atherogenicity index (0.419) and thrombogenicity index (0.179) and the highest hypocholesterolemic/hypercholesterolemic fatty acid ratio (2.404), indicating that its fatty acid composition was healthier and more beneficial to the prevention of human cardiovascular and cerebrovascular diseases. For minerals composition, the contents of iron, zinc, and copper increased with age, while the contents of selenium and manganese decreased with age, with the highest selenium content in the 1 year old (1.522 mg/kg). The chromium, arsenic, lead, and cadmium contents were all lower than the Chinese national standard. In conclusion, the nutritional composition of Arctic graylings variated with age and consumers could select suitable Arctic graylings based on their nutritional needs. PRACTICAL APPLICATION: This work analyzed the nutritional components in the muscle of Arctic graylings at different ages, which can provide an effective reference for consumers when purchasing Arctic graylings.

Abstract
Depending on the presence and activities of the front-end fatty acyl desaturases and elongation of very long-chain fatty acid (Elovl) enzymes, animals have different capacities for long-chain (≥C20) polyunsaturated fatty acids (LC-PUFA) biosynthesis. Successful land colonisation in brachyuran crabs requires a shift towards terrestrial food chain with limited LC-PUFA availability. We cloned and functionally characterised two elovl genes from the purple land crab Gecarcoidea lalandii. The two Elovl contained all the necessary motifs of a typical polyunsaturated fatty acids (PUFA) Elovl and phylogenetically clustered in the Elovl1 and Elovl6 clades, respectively. The G. lalandii Elovl1 elongated saturated fatty acids, with low activities towards C20 and C22 PUFA substrates. Moreover, the G. lalandii Elovl6 was particularly active in the elongation of C18 PUFA, although it also recognised monounsaturated fatty acids as substrates for elongation. Collectively, the herein characterised G. lalandii elovl paralogues fulfil all the elongation steps involved in the LC-PUFA biosynthetic pathways. Tissue distribution of the G. lalandii elovl genes, along with the FA composition analyses, suggest the hepatopancreas and gill as key metabolic sites for fatty acid elongation. However, current data suggest that G. lalandii is unable to rely solely on biosynthesis to fulfil LC-PUFA requirements, since front-end desaturase appears to be absent in this species and other decapods.

Abstract
Farming operation and amino acid profiles of pond-reared Chinese mitten crabs, Eriocheir sinensis (Milne Edwards, 1853), collected from different areas in Jiangsu Province, China were investigated and compared with the aim to elucidate how farming practices affected the nutritional values of three edible tissues (muscle, hepatopancreas and gonad) of crab. The crab pond aquaculture practices including snail input, macrophytes coverage, total commercial feed, the ratio of trash fish to total feed, were much higher in Gaochun and Jintan than that in other sites (having larger pond size), which leads to higher average individual body weight and commercial yields. Further, the mean body weight, muscle weight, carapace length and width, and the ratio of gonad to hepatopancreas were significantly higher in Jintan, Suzhou and Gaochun areas than in other regions. Amino acid assessment showed that all crabs collected delivered high-quality protein (Amino acid score >1 except Valine), the main amino acids being glutamic acid, aspartic acid, and alanine. Significant differences in amino acid profiles were observed between sites, tissues and sexes. Muscles were rich in total amino acids, essential amino acids, and delicious amino acids, followed by gonads and hepatopancreas. The contents of essential amino acids in crab muscles from Gaochun, Jintan, Suzhou and Guannan were significantly higher than those from Suqian, Sihong and Xinghua. All the amino acids except Serine and Glycine were significantly higher in gonads from males than from females. The redundancy analysis revealed that the snail input, trash fish ratio to the total feed, macrophytes coverage and total trash fish supply explained 84.3% of the variation in the amino acid content and structure in crabs from Gaochun, Jintan and Suzhou. Overall, our results show that mitten crabs collected in Jiangsu province had good nutritional quality suitable for human dietary needs, and that farming practices, especially degree of fish-source protein feeding, influence the amino acids composition of crabs.

Abstract
Despite being highly appreciated and consumed, the nutritional value of Chaceon maritae from Namibe (Angola) had never been studied. In the present work, edible tissues (muscle, ovaries, and hepatopancreas) of boiled female C. maritae caught off Namibe coast in two distinct seasons were analyzed in terms of proximate chemical composition (fat, ash, protein, and moisture), fatty acid and amino acid profiles, cholesterol, essential minerals (macro and trace) and toxic elements. Results showed that, in both seasons, C. maritae muscle was a valuable source of protein, essential amino acids, polyunsaturated fatty acids, and essential elements, especially zinc, selenium, iodine, and copper. Ovaries and hepatopancreas are also good sources of protein, but were richer in fat, particularly when caught in October. Ovarian fat is rich in polyunsaturated fatty acids and that of hepatopancreas has higher values of monounsaturated and saturated fatty acids. Hepatopancreas and ovaries are also good sources of copper and, especially ovaries, of zinc. Moreover, in both seasons, all the edible tissues of C. maritae analyzed presented very low contents of heavy metals (mercury, cadmium, lead, and arsenic).

Abstract
Five different diets with different ratio of fish oil to vegetable oil were prepared. The biological index and proximate composition of Eriocheir sinensis fed with different diets were compared, and then sensory analysis, electronic nose (E-nose) and headspace-solid phase micro-extraction combined with gas chromatography-mass spectrometer (HS-SPME-GC-MS) analysis were applied to determine the odor profile of E. sinensis. The results showed that partial replacement (50%-75%) of fish oil by vegetable oil (FO/VO) was beneficial to the weight increment, nutrition accumulation, and odor-active compounds (OACs) formation of E. sinensis. A total of 7 and 11 OACs were detected in the hepatopancreas and gonad, respectively, these OACs contributed greatly to the overall odor profiles of E. sinensis when the dietary replacement levels were at 50% and 75%, respectively. The results could provide the guide for dietary fish oil replacement as well as improving the odor quality of E. sinensis. Practical application The objective of this research is to compare the effects of dietary replacement of fish oil by vegetable oil on proximate composition and odor profiles of E.sinensis. The results obtained from this study would not only chose an optimal dietary replacement level and serve as a useful database for the odor of female and crabs, but also provide some guide for the improvement of Chinese mitten crab aquaculture.
