Abstract
The current study was designed to investigate the consequences of rice cooking and soaking of cooked rice (CR) with or without arsenic (As) contaminated water on As and Fe (iron) transfer to the human body along with associated health risk assessment using additive main-effects and multiplicative interaction (AMMI) and Monte Carlo Simulation model. In comparison to raw rice, As content in cooked rice (CR) and soaked cooked rice (SCR) enhanced significantly (at p < 0.05 level), regardless of rice cultivars and locations (at p < 0.05 level) due to the use of As-rich water for cooking and soaking purposes. Whereas As content in CR and SCR was reduced significantly due to the use of As-free water for cooking and soaking purposes. The use of As-free water (AFW) also enhanced the Fe content in CR. The overnight soaking of rice invariably enhanced the Fe content despite the use of As-contaminated water in SCR however, comparatively in lesser amount than As-free rice. In the studied area, due to consumption of As-rich CR and SCR children are more vulnerable to health hazards than adults. Consumption of SCR (prepared with AFW) could be an effective method to minimize As transmission and Fe enrichment among consumers.

Abstract
Rice is one of the major cereal crops in the world, contributing significantly towards the dietary energy and nutrition of more than half of the world's population. However, rice can also be a significant exposure route for inorganic arsenic (iAs). This risk is even greater if rice is cooked with iAs-contaminated water. Here, we quantified the effect of two cooking methods, excess water (EW) and parboiled and absorbed (PBA), on As species and essential nutrient elements (P, K, Mg, Fe, Zn, Mn, Cu, Se and Mo) in white, parboiled and brown rice cooked with As-safe (0.18 μg L-1) and As-spiked (10 and 50 μg L-1) tap water. Furthermore, we calculated the exposure risk using the margin of exposure (MOE) for both low (the UK) and high (Bangladesh) rice per capita consumption scenarios. The total micro and macronutrient content in cooked rice was measured using ICP-MS (Inductively Coupled Plasma Mass Spectrometry). An LC-ICP-MS (liquid chromatography-ICP-MS) method was used to quantify arsenic species. The results demonstrate that EW and PBA methods produced similar efficacy of iAs removal (54-58 %) for white and brown rice. However, the EW method was better at removing iAs from parboiled rice (∼50 %) than PBA (∼39 %). We found that cooked brown rice was superior to other rice types in many essential nutrient elements, and cooking methods significantly affected the loss of K, Fe, Cu and Mo. For both cooking methods, cooking with iAs-spiked water significantly increased iAs in all rice types: white > parboiled > brown. However, when using As-spiked water, the PBA method retained more iAs than EW. Our risk evaluations showed that cooking rice with 50 μg L-1 significantly raises the As-exposure of the Bangladesh population due to the high per capita rice consumption rate, reinforcing the importance of accessing As-safe water for cooking.

Abstract
Heavy metal exposure through rice consumption (Oryza sativa L.) is a human health concern. This systematic review and meta-analysis investigated the association between toxic metals exposure and rice cooking methods. Based on the inclusion and exclusion criteria, fifteen studies were selected as eligible for the meta-analysis. Our results showed a significant decrease in the content of arsenic, lead, and cadmium following the cooking rice (WMD= -0.04 mg/kg, 95% CI: -0.05, -0.03, P = 0.000), (WMD = -0.01 mg/kg, 95% CI: -0.01, -0.01, P = 0.000), and (WMD = -0.01 mg/kg, 95% CI: -0.01, -0.00, P = 0.000), respectively. Furthermore, based on the subgroup analysis the overall rank order of cooking methods in the rice was rinsed > parboiling > Kateh > high-pressure, microwave, and steaming. The findings of this meta-analysis indicate the beneficial effects of cooking on reducing arsenic, lead, and cadmium exposure via rice consumption.

Abstract
Rice (Oryza sativa L.) is particularly susceptible to arsenic (As) accumulation. Currently, to decrease the level of As accumulated in rice, various post-harvest methods, i.e., polishing, parboiling, pH-dependent soaking, washing, and cooking at different rice-to-water ratios (r/w), are being focused, because it removes significant amount of As from rice grain. Depending upon the rice variety and type, i.e., rough (with husk), husked (without husk/brown), or polished rice, these methods can remove 39-54% As by parboiling, 38-55% by polishing, 37-63% by soaking, and 6-80% by washing and cooking. Infants are highly vulnerable to As exposure; thus, these methods can be helpful for the production of rice-based infant foods. Although concern arises during the use of these methods that apart from decreasing the level of As in rice grain, they also lead to a significant loss of nutrients, such as macro- and micro-elements present in rice. Among these discussed methods, parboiling curtails 5-59%, polishing curtails 6-96%, soaking curtails 33-83%, and washing and cooking in different r/w reduce 8-81% of essential nutrients resulting in 2-90% reduction in contribution to the RDI of these nutrients through rice-based diet. Thus, these post-harvest arsenic removal methods, although reduce arsenic induced health hazard, but may also lead to malnutrition and compromised health in the population based on rice diet. There is a need to explore another way to reduce As from rice without compromising the nutrient availability or to supplement these nutrients through grain enrichment or by introducing additional dietary sources by changing eating habits; however, this may impose an extra economic burden on people.

Abstract
Food-chain arsenic (As) contamination is a severe environmental and health problem worldwide, and its intake through rice affects billions of people. In this review, we have summarized the post harvest As removal methods from rice and their efficacy and feasibility. Rice grain subspecies (indica and japonica), size (short, medium and long), type (husked, parboiled or polished), soaking time, temperature and rice to water ratio (r/w) during washing and cooking are the major factors that affect the removal of total arsenic (tAs) from rice grain. The reduction in tAs was greater in japonica than indica rice and was directly proportional to As in husked rice. For the removal of As, a low water volume (1:2 r/w) was more effective during washing due to friction between rice grains, while high water (≥4 times water) during cooking was more effective. Up to 80 % As was removed by cooking in 1:10 (rice: water). Soaking rice in edible acids such as vinegar, acetic and ascorbic acid was not effective, except citric acid, which removes tAs up to 63 %. Human-health risk assessment showed that these post harvest and cooking methods reduce the non-carcinogenic and incremental lifetime cancer risk by up to 5-fold, as calculated on the basis of bioaccessible inorganic As. These post harvest methods also remove nutrient elements and vitamins. The recommended dietary intake (RDI) of Zn and Cu was particularly affected (up to 40 and 83 %). The levels of P, Mo, Mn and Co were still sufficient to meet the RDI through the rice-based diet, while rice is already poor in the RDI of Ca, K, Fe and Se, and their levels were further reduced by 0.22-44 %. In conclusion, these post harvest and cooking methods may significantly reduce As induced health risks; however, other dietary sources of nutrients need to be carefully evaluated and supplemented.

Abstract
Rice arsenic (As) contamination and its consumption poses a significant health threat to humans. The present study focuses on the contribution of arsenic, micronutrients, and associated benefit-risk assessment through cooked rice from rural (exposed and control) and urban (apparently control) populations. The mean decreased percentages of As from uncooked to cooked rice for exposed (Gaighata), apparently control (Kolkata), and control (Pingla) areas are 73.8, 78.5, and 61.3%, respectively. The margin of exposure through cooked rice (MoEcooked rice) < 1 signifies the existence of health risk for all the studied exposed and control age groups. The respective contributions of iAs (inorganic arsenic) in uncooked and cooked rice are nearly 96.6, 94.7, and 100% and 92.2, 90.2, and 94.2% from exposed, apparently control, and control areas. LCR analysis for the exposed, apparently control, and control populations (adult male: 2.1 × 10-3, 2.8 × 10-4, 4.7 × 10-4; adult female: 1.9 × 10-3, 2.1 × 10-4, 4.4 × 10-4; and children: 5.8 × 10-4, 4.9 × 10-5, 1.1 × 10-4) through cooked rice is higher than the recommended value, i.e., 1 × 10-6, respectively, whereas HQ > 1 has been observed for all age groups from the exposed area and adult male group from the control area. Adults and children from rural area showed that ingestion rate (IR) and concentration are the respective influencing factors towards cooked rice As, whereas IR is solely responsible for all age groups from urban area. A vital suggestion is to reduce the IR of cooked rice for control population to avoid the As-induced health risks. The average intake (μg/day) of micronutrients is in the order of Zn > Se for all the studied populations and Se intake is lower for the exposed population (53.9) compared to the apparently control (140) and control (208) populations. Benefit-risk assessment supported that the Se-rich values in cooked rice are effective in avoiding the toxic effect and potential risk from the associated metal (As).

Abstract
Arsenolipids are the primary form of arsenic in the fat of marine organisms. Because seafood is a common source of arsenic exposure and some arsenolipids are toxic, studying the abundance and species of arsenolipids in seafood is crucial for health risk assessment. Current arsenolipid research is confined by analytical techniques and limited to raw seafood analysis, despite the fact that most seafood is ingested cooked. Therefore, the aim of this study is to evaluate which seafood contributes to arsenolipid dietary intake and investigate the changes in arsenolipids before and after cooking. In Chongqing, China, popular seafood such as clam, shrimp, oyster, abalone, hairtail, and yellow croaker were collected. The raw and cooked samples prepared from these seafood products were examined using a non-targeted screening approach established for arsenolipids, which coupled high-performance liquid chromatography with data-independent high-resolution quadrupole-time-of-flight electrospray ionization tandem mass spectrometry. Arsenic-containing hydrocarbons (AsHC330, AsHC332, and AsHC360), arsenic-containing fatty acids (AsFA362, AsFA390, AsFA404, AsFA418, and AsFA422), trimethylarsine oxide, and thiolated trimethylarsinic acid were detected. The species of arsenolipids in each type of seafood remained intact after heating in the microwave oven. In cooked samples, the concentrations of AsFA362 and AsFA390 were significantly lower than in raw samples, whereas the concentrations of other arsenolipids were unchanged. Microwave cooking did not result in the thiolation of the detected arsenolipids. The most detected species in raw and cooked samples were AsFA362, AsFA390, and AsFA418. Most arsenolipid species were found in the highest levels in hairtails and yellow croakers. It is the first time that arsenolipids have been found in the oyster, abalone, abalone liver, and yellow croaker. The present study contributes to a better understanding of arsenolipids exposure from seafood, which is useful for assessing the health risks of arsenic.

Abstract
Twenty-two brown rice varieties available in the Qatari market were analyzed for essential and toxic elements by ICP-MS. Found concentrations (µg/kg) were: As: 171 ± 78 (62-343), Cd: 42 ± 60 (4-253), Cr: 515 ± 69 (401-639), Pb: 6 ± 7 (<MDL-26), and U: 0.1 ± 0.5 (<MDL-2). One third of the samples contained high levels of arsenic. Significant differences (p < 0.008) in concentrations were observed for many elements based on both the grains' country of origin and size. Calculated carcinogenic risk according to published speciation data of inorganic arsenic and chromium(VI) available in the literature for rice is > 1 in million, may possibly be > 1 in 10,000 based on conservatively high brown rice consumption rates of 200 g/d or 400 g/d in Qatar. These elevated risks may be applicable to specific population subgroups with diabetic conditions who consume only brown rice. Abstract
Rice cultivars are major conduit of arsenic (As) poisoning to human. We quantified transferability of fifteen rice cultivars representing three groups i.e., high yielding variety (HYV), local aromatic rice (LAR) and hybrid for As from soil to cooked rice and its ingestion led health risk, elucidating the processes of its unloading at five check points. Conducting a field experiment with those cultivars, we sampled roots and shoots at tillering, booting and maturity (with grains), separated the grains into husk, bran and polished rice, cooked it through different methods and analyzed for As. Of the tested groups, As restriction from root to grain followed the order: LARs (94%) > HYVs (88.3%) > hybrids (87.2%). The low As sequestration by LARs was attributed to their higher root biomass (10.20 g hill-1) and Fe-plaque formation (2421 mg kg-1), and lower As transfer coefficients (0.17), and higher As retention in husk and bran (84%). On average, based on calculated four major risk indices, LARs showed 4.7-6.8 folds less As toxicity than HYVs and hybrids. These insights are helpful in advocating some remedies for As toxicity of the tested rice cultivars.

Abstract
Metals, many of which are potentially toxic, are present in the aquatic environment originated from both natural and anthropogenic sources. In these ecosystems, these elements are mostly deposited in the sediment, followed by water dissolution, potentially contaminating resident biota. Among several aquatic animals, crustaceans are considered excellent bioindicators, as they live in close contact with contaminated sediment. The accumulation of metal, whether they are classified as essential, when in excessive quantities or nonessential, not only cause damage to the health of these animals, but also to the man who consumes seafood. Among the main toxic elements to animal and human health are aluminum, arsenic, cadmium, chromium, copper, lead, mercury, nickel and silver. In this context, this systematic review aimed to investigate the dynamics of these metals in water, the main bioaccumulative tissues in crustaceans, the effects of these contaminants on animal and human health, and the regulatory limits for these metals worldwide. A total of 91 articles were selected for this review, and an additional 68 articles not found in the three assessed databases were considered essential and included, totaling 159 articles published between 2010 and 2020. Our results indicate that both chemical speciation and abiotic factors such as pH, oxygen and salinity in aquatic environments affect element bioavailability, dynamics, and toxicity. Among crustaceans, crabs are considered the main bioindicator biological system, with the hepatopancreas appearing as the main bioaccumulator organ. Studies indicate that exposure to these elements may result in nervous, respiratory, and reproductive system effects in both animals and humans. Finally, many studies indicate that the concentrations of these elements in crustaceans intended for human consumption exceed limits established by international organizations, both with regard to seafood metal contents and well as daily, weekly, or monthly intake limits set for humans, indicating consumer health risks.

Abstract
Arsenic (As) in rice is posing a serious threat worldwide and consumption of As contaminated rice by human is causing health risks. A pot experiment with different levels of sulfate dosage (0, 20, 40, 60 and 80 mg/kg) was set up in this study to explore the influence of sulfate fertilizer on rice plant growth, yield, and As accumulation in rice grain. Apart from As bioaccumulation in rice grains, the As fraction of cooked rice was quantified, and the health risks associated with cooked rice consumption were also investigated. The sulfate application significantly (p ≤ 0.05) enhanced the chlorophyll, tiller number, grains per panicle, grain and biomass yield under As stressed condition. The sulfate application also reduced the oxidative stress and antioxidant activity in rice plants. Sulfate fertigation improved the accumulation of total sulfur (S) and reduced the uptake and translocation of As in rice plants. Arsenic concentration in rice grain was reduced by 50.1% in S80 treatment (80 mg of sulfate/kg of soil) as compared to S0 set. The reduction percentage of As in cooked parboiled and sunned rice with correspond to raw rice ranged from 55.9 to 74% and 40.3-60.7%, respectively. However, the sulfate application and cooking of parboiled rice reduced the potential non-cancer and cancer risk as compared to sunned rice. The S80 treatment and cooking of parboiled rice reduce the As exposure for both children and adults by 51% as compared to cooked sunned rice under S80 treatment and this trend was similar for all treatments. Therefore, sulfate application in soil can be recommended to produce safer rice grains and subsequent cooking of parboiled rice grain with low-As contaminated water need to be done to avoid any potential health risk in As endemic areas.

Abstract
Arsenic (As) contamination and its adverse consequences on rice agroecosystem are well known. Rice has the credit to feed more than 50% of the world population but concurrently, rice accumulates a substantial amount of As, thereby compromising food security. The gravity of the situation lays in the fact that the population in theAs uncontaminated areas may be accidentally exposed to toxic levels of As from rice consumption. In this review, we are trying to summarize the documents on the impact of As contamination and phytotoxicity in past two decades. The unique feature of this attempt is wide spectrum coverages of topics, and that makes it truly an interdisciplinary review. Aprat from the behaviour of As in rice field soil, we have documented the cellular and molecular response of rice plant upon exposure to As. The potential of various mitigation strategies with particular emphasis on using biochar, seed priming technology, irrigation management, transgenic variety development and other agronomic methods have been critically explored. The review attempts to give a comprehensive and multidiciplinary insight into the behaviour of As in Paddy -Water - Soil - Plate prospective from molecular to post-harvest phase. From the comprehensive literature review, we may conclude that considerable emphasis on rice grain, nutritional and anti-nutritional components, and grain quality traits under arsenic stress condition is yet to be given. Besides these, some emerging mitigation options like seed priming technology, adoption of nanotechnological strategies, applications of biochar should be fortified in large scale without interfering with the proper use of biodiversity.

Abstract
Arsenic is a well-known carcinogen with emerging reports showing a range of health outcomes even for low to moderate levels of exposure. This study deals with arsenic exposure and associated increased lifetime cancer risk for populations in arsenic-endemic regions of rural Bengal, where arsenic-safe drinking water is being supplied at present. We found a median total exposure of inorganic arsenic to be 2. 9 μg/Kg BW/day (5th and 95th percentiles were 1.1 μg/Kg BW/day and 7.9 μg/Kg BW/day); with major contribution from cooked rice intake (2.4 µg/Kg BW/day). A significant number of households drank arsenic safe water but used arsenic-rich water for rice cooking. As a result, 67% participants had inorganic arsenic intake above the JEFCA threshold value of 3 μg/Kg BW/day for cancer risk from only rice consumption when arsenic contaminated water was used for cooking (median: 3.5 μg/Kg BW/day) compared to 29% participants that relied on arsenic-free cooking water (median: 1.0 µg/kg BW/day). Arsenic in urine samples of study participants ranged from 31.7 to 520 µg/L and was significantly associated with the arsenic intake (r = 0.76); confirming the preponderance of arsenic exposure from cooked rice. The median arsenic attributable cancer risks from drinking water and cooked rice were estimated to be 2.4 × 10-5 and 2.7 × 10-4 respectively, which further emphasized the importance of arsenic exposure from staple diet. Our results show that any mitigation strategy should include both drinking water and local staple foods in order to minimize the potential health risks of arsenic exposure.

Abstract
Health exposure and perception of risk assessment have been evaluated on the populations exposed to different arsenic levels in drinking water (615, 301, 48, 20 µg/l), rice grain (792, 487, 588, 569 µg/kg) and vegetables (283, 187, 238, 300 µg/kg) from four villages in arsenic endemic Gaighata block, West Bengal. Dietary arsenic intake rates for the studied populations from extremely highly, highly, moderately, and mild arsenic-exposed areas were 56.03, 28.73, 11.30, and 9.13 μg/kg bw/day, respectively. Acute and chronic effects of arsenic toxicity were observed in ascending order from mild to extremely highly exposed populations. Statistical interpretation using 'ANOVA' proves a significant relationship between drinking water and biomarkers, whereas "two-tailed paired t test" justifies that the consumption of arsenic-contaminated dietary intakes is the considerable pathway of health risk exposure. According to the risk thermometer (SAMOE), drinking water belongs to risk class 5 (extremely highly and highly exposed area) and 4 (moderately and mild exposed area) category, whereas rice grain and vegetables belong to risk class 5 and 4, respectively, for all the differently exposed populations. The carcinogenic (ILCR) and non-carcinogenic risks (HQ) through dietary intakes for adults were much higher than the recommended threshold level, compared to the children. Supplementation of arsenic-safe drinking water and nutritional food is strictly recommended to overcome the severe arsenic crisis.

Abstract
Arsenic (carcinogenic) is a global health concern due to its presence in groundwater and subsequent accumulation in cultivated-rice via irrigation. The present work focused on the evaluation of arsenic concentration in groundwater, different cultivated-rice varieties (studied together for the first-time) and related health-risks. Arsenic in groundwater (0.26-0.73 mg/L) exceeded the World Health Organization limit for drinking water (0.01 mg/L). Arsenic concentration in rice-grains was found in the range: < 0.0003-2.6 mg/kg dry-weights, where 42 rice varieties (out of total 44) exceeded the Codex Alimentarius Commission limit of polished-rice (0.2 mg/kg). The variety-specific differential-response of arsenic-accumulation was observed (first-time report), where high yielding rice varieties (HYV) were more prone to accumulate arsenic in comparison to local varieties (LV), however, 'Radhunipagol' (an aromatic LV) exhibited as a moderate arsenic-accumulator (BCF = 2.8). The cumulative estimated-daily-intakes (EDICumulative) of arsenic in central-tendency-exposure were observed to be 0.029, 0.031 and 0.04 mg/kg-day among children, teenagers and adults, respectively. The EDICumulative for possible reasonable-maximum-exposure among the above mentioned subpopulation was 0.038, 0.04 and 0.05 mg/kg-day, respectively. The evaluated Cumulative Hazard Index and Individual Excess Lifetime Cancer Risk values suggested that the studied population is under extremely severe cancerous and noncancerous risks to arsenic co-exposures via drinking water and rice.

Abstract
Arsenic (As) removal is a huge challenge, since several million people are potentially exposed (>10 μg/L World Health Organization guideline limit) through As contaminated drinking water worldwide. Review attempts to address the present situation of As removal, considering key topics on nano-technological and biological process and current progress and future perspectives of possible mitigation options have been evaluated. Different physical, chemical and biological methods are available to remove As from contaminated water/soil/wastes, where removal efficiency mainly depends on absorbent type, initial adsorbate concentration, speciation and interfering species. Oxidation is an important pretreatment step in As removal, which is generally achieved by several media such as O2/O3, HClO, KMnO4 and H2O2. The Fe-based-nanomaterials (α/β/γ-FeOOH, Fe2O3/Fe3O4-γ-Fe2O3), Fe-based-composite-compounds, activated-Al2O3, HFO, Fe-Al2O3, Fe2O3-impregnated-graphene-aerogel, iron-doped-TiO2, aerogel-based- CeTiO2, and iron-oxide-coated-manganese are effective to remove As from contaminated water. Biological processes (phytoremediation/microbiological) are effective and ecofriendly for As removal from water and/or soil environment. Microorganisms remove As from water, sediments and soil by metabolism, detoxification, oxidation-reduction, bio-adsorption, bio-precipitation, and volatilization processes. Ecofriendly As mitigation options can be achieved by utilizing an alternative As-safe-aquifer, surface-water or rainwater-harvesting. Application of hybrid (biological with chemical and physical process) and Best-Available-Technologies (BAT) can be the most effective As removal strategy to remediate As contaminated environments.

Abstract
Inorganic arsenic (iAs) is a group 1 carcinogen, and consumption of rice can be a significant pathway of iAs exposure in the food chain. Although there are regulations in place to control iAs for marketed rice in some countries, additional measures are explored to remove arsenic from rice. Due to the surface-bound and soluble nature of iAs, previous studies have shown that it can be removed to a significant extent using different cooking methods. Towards this goal we modified and tested the absorption method in combination with four home-friendly cooking treatments (UA = unwashed and absorbed, WA = washed and absorbed, PSA = pre-soaked and absorbed, and PBA = parboiled and absorbed) using both brown and white rice (3 types each). The nutrient elements were measured using ICP-MS and arsenic speciation was carried out using LC-ICP-MS. Overall, our results show that PBA was the optimum approach assessed, removing 54% and 73% of inorganic arsenic (iAs) for brown and white rice respectively, raising the margin of exposure (MOE) by 3.7 for white rice and 2.2 times for brown rice, thus allowing the consumption of rice more safely for infants, children and adults. Other cooking treatments were effective in reducing the iAs concentration from white rice only. Here we also report changes in selected nutrient elements (P, K, Mg, Zn and Mn) which are relatively abundant in rice. In general, the treatments retained more nutrients in brown rice than white rice. No significant loss of Zn was observed from both rice types and the loss of other nutrients was similar or less than in comparison to reported losses from rice cooked in excess water in the literature. We conclude that PBA is a promising technique and further research is needed by including different regional rice types and water quality levels.

Abstract
Following an official request to EFSA from the European Commission, EFSA assessed the chronic dietary exposure to inorganic arsenic (iAs) in the European population. A total of 13,608 analytical results on iAs were considered in the current assessment (7,623 corresponding to drinking water and 5,985 to different types of food). Samples were collected across Europe between 2013 and 2018. The highest mean dietary exposure estimates at the lower bound (LB) were in toddlers (0.30 μg/kg body weight (bw) per day), and in both infants and toddlers (0.61 μg/kg bw per day) at the upper bound (UB). At the 95th percentile, the highest exposure estimates (LB-UB) were 0.58 and 1.20 μg/kg bw per day in toddlers and infants, respectively. In general, UB estimates were two to three times higher than LB estimates. The mean dietary exposure estimates (LB) were overall below the range of benchmark dose lower confidence limit (BMDL 01) values of 0.3-8 μg/kg bw per day established by the EFSA Panel on Contaminants in the Food Chain in 2009. However, for the 95th percentile dietary exposure (LB), the maximum estimates for infants, toddlers and other children were within this range of BMDL 01 values. Across the different age classes, the main contributors to the dietary exposure to iAs (LB) were 'Rice', 'Rice-based products', 'Grains and grain-based products (no rice)' and 'Drinking water'. Different ad hoc exposure scenarios (e.g. consumption of rice-based formulae) showed dietary exposure estimates in average and for high consumers close to or within the range of BMDL 01 values. The main uncertainties associated with the dietary exposure estimations refer to the impact of using the substitution method to treat the left-censored data (LB-UB differences), to the lack of information (consumption and occurrence) on some iAs-containing ingredients in specific food groups, and to the effect of food preparation on the iAs levels. Recommendations were addressed to improve future dietary exposure assessments to iAs.

Abstract
The activation of microglia is a hallmark of neuroinflammation and contributes to various neurodegenerative diseases. Chronic inorganic arsenic exposure is associated with impaired cognitive ability and increased risk of neurodegeneration. The present study aimed to investigate whether chronic inorganic arsenic-induced learning and memory impairment was associated with microglial activation, and how organic (DMAV 600 μM, MMAV 0.1 μM) and inorganic arsenic (NaAsO2 0.6 μM) affect the microglia. Male C57BL/6J mice were divided into two groups: a control group and a group exposed to arsenic in their drinking water (50 mg/L NaAsO2 for 24 weeks). The Morris water maze was performed to analyze neuro-behavior and transmission electron microscopy was used to assess alterations in cellular ultra-structures. Hematoxylin-eosin and Nissl staining were used to observe pathological changes in the cerebral cortex and hippocampus. Flow cytometry was used to reveal the polarization of the arsenic-treated microglia phenotype and GC-MS was used to assess metabolomic differences in the in vitro microglia BV-2 cell line model derived from mice. The results showed learning and memory impairments and activation of microglia in the cerebral cortex and dentate gyrus (DG) zone of the hippocampus, in mice chronically exposed to arsenic. Flow cytometry demonstrated that BV-2 cells were activated with the treatment of different arsenic species. The GC-MS data showed three important metabolites to be at different levels according to the different arsenic species used to treat the microglia. These included tyrosine, arachidonic acid, and citric acid. Metabolite pathway analysis showed that a metabolic pathways associated with tyrosine metabolism, the dopaminergic synapse, Parkinson's disease, and the citrate cycle were differentially affected when comparing exposure to organic arsenic and inorganic arsenic. Organic arsenic MMAV was predominantly pro-inflammatory, and inorganic arsenic exposure contributed to energy metabolism disruptions in BV-2 microglia. Our findings provide novel insight into understanding the neurotoxicity mechanisms of chronic arsenic exposure and reveal the changes of the metabolome in response to exposure to different arsenic species in the microglia.

Abstract
Arsenic (As) contaminated water is a major threat to human health when used for drinking, cooking and irrigational purposes. Rice being consumed by 50% of the world's population, supplies considerable amount of As to the human body. Our study provides a detailed understanding of As distribution in each fraction of rice while cooking (viz. uncooked rice, cooking water, cooked rice and gruel/total discarded water), ultimately leading to a better explanation of As movement between rice grain and water. A significant decrease of As was observed in cooked rice (34-89% and 23-84% for sunned and parboiled rice respectively) when cooked with low-As containing water, <3 μg/l and moderate As-contaminated water, 36-58 μg/l (3-50% and 12-61% for sunned and parboiled rice respectively) with increasing selenium (Se) concentration. Movement of As from water to rice grain has been inferred with increasing water As (84-105 μg/l), which results in a significant increase of As in cooked rice (24-337% and 114% for sunned and parboiled rice, respectively) with decreasing Se concentration. Arsenic speciation study emphasizes the fact of similar reduction percentage of As (III), As (V) and total As in wet cooked rice when cooked with low-As containing water. The SAMOE value in 'risk thermometer' supports the higher risk of suffering from wet cooked rice (class 4) with increasing cooking water As concentration (class 3 to class 5).

Abstract
Globally, a large number of school-aged children is suffering from water-borne diseases, particularly in low-income countries. Arsenic (As) is a hazardous and potentially carcinogenic metal(loid) in drinking water. Nowadays, alarming levels of As have been reported in the groundwater of Vehari District, Punjab Pakistan. In this study, drinking water supplies for high and higher secondary schools were examined in Vehari District. A total of 164 water samples were collected from schools and subjected to heavy metal(loid) analysis (As) and basic water physicochemical parameters. The results were analyzed with respect to sampling area, school type, school education level, sources of sample collection, and the depth of the source. The results revealed that As concentration of water samples in boys' and girls' schools was 12.8 μg/L and 9.2 μg/L, respectively. However, when the As concentration in drinking water was evaluated at the school education level, a notable higher concentration of As was observed in the higher secondary schools than the high schools with an average of 19.5 and 9.7 μg/L, respectively. The risk assessment indices were calculated based on education level and different age groups of the children (primary, elementary, high, and higher secondary). High carcinogenic (cancer risk = 0.001) and non-carcinogenic (hazard quotient = 2.0) risks were noted for the children in higher secondary school. The current findings anticipated that the drinking water of schools in Vehari District did not meet the requirement of the World Health Organization (WHO) drinking water quality guidelines. Safe drinking water is crucial for the development and growth of children. Therefore, it is important for educational authorities to take steps for provision of As free safe drinking water to students and local inhabitants.

Abstract
Nano-Fe3O4-modified biochar (BC-Fe) was prepared by the coprecipitation of nano-Fe3O4 on a rice husk biochar surface. The effects of BC-Fe on cadmium (Cd) bioavailability in soil and on Cd accumulation and translocation in rice (Oryza sativa L. cv. 'H You 518') were investigated in a pot experiment with 7 application rates (0.05-1.6%, w/w). BC-Fe increased the biomass of the rice plants except for the roots and affected the concentration and accumulation of Cd and Fe in the plants. The Cd concentrations of brown rice were significantly decreased by 48.9%, 35.6%, and 46.5% by the 0.05%, 0.2%, and 0.4% BC-Fe treatments, respectively. Soil cation exchange capacity (CEC) increased by 9.4%-164.1% in response to the application of BC-Fe (0.05-1.6%), while the soil Cd availability decreased by 6.81%-25.0%. However, 0.8-1.6% BC-Fe treatments promoted Cd transport to leaves, which could increase the risk of Cd accumulation in brown rice. Furthermore, BC-Fe application promoted the formation of iron plaque and enhanced the root interception of Cd. The formation of iron plaque reduced the toxicity of Cd to rice roots, but this barrier effect was limited and had an interval threshold (DCB-Fe: 22.5-27.3 g·kg-1) under BC-Fe treatments.

Abstract
This study assessed the effect of rinsing and boiling on total content of As (tAs) and of its inorganic and organic forms in different types of rice (polished and brown) from Spain and Ecuador. Rice was subjected to five different treatments. The results showed that the treatment consisting of three grain rinsing cycles followed by boiling in excess water showed a significant decrease in tAs content compared with raw rice. Regarding As species, it is worth noting that the different treatments significantly reduced the content of the most toxic forms of As. The estimated lifetime health risks indicate that pre-rinsing alone can reduce the risk by 50%, while combining it with discarding excess water can reduce the risk by 83%; therefore, the latter would be the preferable method.

Abstract
Iron-manganese binary oxides (FeMnOx) can remove contaminants from aqueous solutions with high efficiency, and mesoporous silica (SBA-15) is widely used as a supporting material due to its large specific surface area and good stability. In this study, SBA-15 was used to support FeMnOx in the synthesis of a novel arsenic (As) adsorbent (FeMnOx/SBA-15), and its characteristics under different reaction conditions, such as pH, temperature, presence of competing ions, and humic acid, were tested. The results showed that the contaminant adsorption efficiency of the novel adsorbent was better than that of bare FeMnOx, as the addition of SBA-15 decreased the agglomeration effect of FeMnOx. Additionally, FeMnOx/SBA-15 underwent calcination to further enhance its performance. The state of iron and manganese in FeMnOx/SBA-15 and the corresponding arsenic removal efficiency were improved by calcination at 350 °C with an FeMnOx/SBA-15 mass fraction of approximately 45%. Almost 90% of As (50 mL, 5.0 mg L-1) could be removed by 0.2 g L-1 of FeMnOx/SBA-15 (mass ratio of 45% and calcination temperature of 350 °C). The FeMnOx/SBA-15 could regenerate and still be used after four consecutive cycles. The high As sorption capacity, ability to regenerate, and reusability of FeMnOx/SBA-15 confirmed that this adsorbent is promising for treating As-contaminated drinking water.

Abstract
Arsenic (As) is a highly toxic and carcinogenic element. It has received considerable consideration worldwide in recent years due to its highest toxicity to human, and currently, high concentrations observed in the groundwater. Some recent media and research reports also highlighted possible As contamination of groundwater systems in Pakistan. However, there is a scarcity of data about As contents in groundwater in different areas/regions of the country. Consequently, the current study estimated the As concentration in the groundwater used for drinking purpose in 15 peri-urban sites of district Vehari, Pakistan. In total, 127 groundwater samples were collected and examined for As contents in addition to physicochemical characteristics such as temperature, electrical conductivity, pH, total soluble salts, chloride, carbonates, bicarbonates, sodium, potassium, lithium, calcium and barium. Results indicated that the groundwater samples were not fully fit for drinking purposes with several parameters, especially the alarming levels of As (mean As: 46.9 µg/L). It was found that 83% groundwater samples of peri-urban sites in district Vehari have As concentration greater than WHO lower permissible limit (10 µg/L). The risk assessment parameters (mean hazard quotient: 3.9 and mean cancer risk: 0.0018) also showed possible carcinogenic and non-carcinogenic risks associated with ingestion of As-contaminated groundwater at peri-urban sites. Based on the findings, it is anticipated that special monitoring and management of groundwater is necessary in the studied area in order to curtail the health risks associated with the use of As-contaminated drinking water. Moreover, appropriate remediation and removal of As from groundwater is also imperative for the study area before being used for drinking purpose to avoid As exposure and related risks to the local community.

Abstract
Rice is considered the most main food in Iranian diet. Its chemical contamination with heavy metals can lead to adverse effects to human health. In the present study, 60 imported rice samples from 20 different brands were collected and examined in terms of lead and arsenic levels in Tehran. Besides, point estimation and uncertainty analysis were used to determine the additional risk of carcinogenicity and non-carcinogenicity in raw and as-consumed rice. The results showed that the means of lead and arsenic (mg/kg fresh weight) in raw sampled rice were 0.0352 ± 0.0398 and 0.106 ± 0.049, respectively, and they were 0.0226 ± 0.0360 and 0.0689 ± 0.046 in as-consumed rice, respectively. Additionally, lead and arsenic amounts were 5% and 15% higher than the value set by Institute of Standards and Industrial Research of Iran respectively, while assessment of the non-carcinogenicity risk of lead and arsenic in point estimation and uncertainty analysis showed the hazard quotient and hazard index values were less than 1 and in safe ranges in both raw and as-consumed rice and were not considered a threat to the public health. The additional risk of arsenic carcinogenicity in point estimation and uncertainty analysis in raw and as-consumed rice samples found higher than the 1E-06 EPA's acceptable level of risk. So, these results could be applicable and encourage researchers to perform more detailed studies with more samples for considering by food authorities.

Abstract
Human exposure to arsenic (As) through the consumption of rice (Oryza sativa L.) is a worldwide health concern. In this paper, we evaluated the major causes for high inorganic As levels in cooked rice foods, and the potential of post-harvesting and cooking options for decreasing inorganic As content in cooked rice, focusing particularly on As endemic areas. The key factors for high As concentration in cooked rice in As endemic areas are: (1) rice cultivation on As-contaminated paddy soils; (2) use of raw rice grains which exceed 200 μg kg-1 of inorganic As to cook rice; and (3) use of As-contaminated water for cooking rice. In vitro and in vivo methods can provide useful information regarding the bioaccessibility of As in the gastrointestinal tract. Urinary levels of As can also be used as a valid measure of As exposure in humans. Polishing of raw rice grains has been found to be a method to decrease total As content in cooked rice. Sequential washing of raw rice grains and use of an excess volume of water for cooking also decrease As content in cooked rice. The major concern with those methods (i.e. polishing of raw rice, sequential washing of raw rice, and use of excess volume of water for cooking rice) is the decreased nutrient content in the cooked rice. Cooking rice in percolating water has recently gained significant attention as a way to decrease As content in cooked rice. Introducing and promoting rainwater harvesting systems in As endemic areas may be a sustainable way of reducing the use of As-contaminated water for cooking purposes. In conclusion, post-harvesting methods and changes in cooking practices could reduce As content in cooked rice to a greater extent. Research gaps and directions for future studies in relation to different post-harvesting and cooking practices, and rainwater harvesting systems are also discussed in this review.
