Abstract
As a cost-effective typical co-product of walnut processing; this study aimed to investigate the effects of feeding poor quality, unsaleable walnut kernel, also known as wasted walnut (WW) kernel, on growth performance, carcass characteristics, meat quality and fatty acid (FA) composition of fattening lambs. The experiment was conducted using 24 fattening lambs (27 ±1.07 kg initial BW) assigned to two total mixed concentrate-based diets, over a 80-day experimental period on a completely randomized design. Dietary treatments were: 1) WW (10% WW), and 2) CON (without WW). Average daily and total gain, and final weight increased with WW inclusion (P < 0.05). Also, a significant enhancement in feed conversion ratio (P < 0.05) and carcass cooler shrink loss (P = 0.03) were observed by feeding WW. Dry matter intake (DMI) was not influenced by feeding WW as did carcass prime cuts, meat, bone and fat-tail; however, the backfat thickness was increased (P = 0.01). WW inclusion reduced cholesterol and increased protein load in muscle tissue (P ≤ 0.05). Moreover, this inclusion led to higher concentration of vaccenic acid (VA), conjugated linoleic acid (CLA) and C20 polyunsaturated FAs (PUFA), total n3 and n6 PUFA in muscle and fat-tail (P ≤ 0.05). Due to enhanced animal performance, also chemical and FA composition of muscle and adipose tissue, WW can be included in fattening lamb diets as a rich source of protein and PUFA.

Abstract
This study investigated the effect of feeding different levels of protected fat (calcium soaps of tallow) on fattening performance, carcass characteristics, meat quality, fatty acid composition of Longissimus Thoracis (LT) muscle and economic evaluation of 45 fat-tailed Morkaraman male lambs. The lambs were randomly divided into three groups including a control diet without protected fat (CON), supplemented with 2% protected fat (group PF2), and supplemented with 4% protected fat (group PF4) during the fattening period. Eight lambs randomly selected from each group were slaughtered to determine carcass characteristics and meat quality. Supplementing protected fat significantly improved the fattening performance and carcass characteristics (p<0.05). The groups were similar in terms of pH, colour, ether extract, dry matter and sensory evaluations, except for the crude protein of group PF2. Myristic acid and stearic acid (p<0.05), which are saturated fatty acids (SFA), were decreased with the supplementation of protected fat, while palmitic acid was increased (p<0.01). The fattening with protected fat had a highly significant positive effect on important unsaturated fatty acids such as oleic acid (p<0.01) and resulted in an increase of approximately 91% in the conjugated linoleic acid (CLA) (p<0.05). SFA was significantly decreased, and health indicators were improved (p<0.01). In conclusion, the supplementation of protected fat had a positive effect on fattening performance, carcass traits, chemical, sensory properties and economic evaluation.

Abstract
We investigated the effects of the partial substitution of corn grain in the diet with beet pulp on growth performance, ruminal fermentation characteristics, microbial profiles, and blood lipogenic parameters in fattening steers. Twelve Korean cattle steers (body weight, 485 ± 19.32 kg; age, 18.0 ± 0.17 months) were equally divided into corn grain (CG) and beet pulp (BP) groups. Approximately 75% of dry matter of the requirement was offered as a concentrate portion, and the remaining 25% was offered as oat straw. Eighty percent of the concentrate portion was provided by a pelleted basal concentrate, and the remaining 20% with corn grain for the CG group, or 18% beet pulp plus 2.0% rumen-protected fat for the BP group, respectively, by top dressing. The experiment was conducted for 14 weeks, including a 2-week acclimation period. Growth rate was not affected by beet pulp feeding (p = 0.55). The molar proportions of ruminal acetate (p < 0.05) on wk 4, the relative abundances of ruminal cellulolytic bacteria, including Fibrobacter succinogenes (p = 0.01) and Ruminococcus albus (p = 0.04) on wk 12, and serum insulin concentrations (p < 0.05) on wk 12 were higher in the BP group than in the CG group, whereas the molar proportions of propionate (p < 0.05) on wks 8 and 12 and serum nonesterified fatty acids (p < 0.05) on wk 12 were lower in the BP group. Beet pulp could be used as a lipogenic energy source without affecting growth performance during the fattening period of cattle.

Abstract
The objective of this study was to evaluate performance, gastrointestinal morphometry, carcass, and non-carcass traits in lambs finished on different levels of canola grain in the diet. Twenty-seven Santa Ines lambs with an average initial weight of 19.33 ± 1.39 kg were given different levels of canola grain in the diet: 0, 8, and 16%. Weights and body condition scores were determined at the beginning, every 14 days and at the end of the experimental period. Animals were slaughtered to assess gastrointestinal morphometry, carcass and non-carcass traits. The statistical design used was completely randomized. The inclusion of canola grain showed a linear effect (0.723) for the width and height of ruminal papillae in the ventral region of the rumen. Intestinal villi and crypts showed a quadratic effect, with peaks of 0.62 µm and 0.43 µm, with the inclusion of 8 and 16%, respectively. When evaluating carcass traits, a decreasing linear effect was found for hot and cold carcass yield with 16% inclusion of canola. Canola grain can be used as an alternative in diets for finishing sheep up to 8% inclusion in the diet without affecting performance, ruminal and intestinal histometry, carcass, and non-carcass traits.

Abstract
Simple Summary This study aims to investigate the carcass and meat quality from lambs fed a dietary treatment including rosemary residues obtained after distillation as cereal substitute in concentrate knowing that cereals are the main component of concentrate. Twenty-four male lambs from local fat-tailed Barbarine breed were allocated into three groups. They received individually oat hay as roughage and as complementation standard concentrate for control group (C) and two concentrate types containing rosemary residues (RR) for the other groups. The protein source was soybean (S) for RRS group while faba bean (F, Vicia Faba) which is a legume was the protein source for RRF group. The results suggest a positive action of rosemary by-products in improving phenolic and tocopherol compounds given their richness in these components. In addition, growth, the non-carcass and carcass traits and the meat physical properties were not altered. Abstract Facing climate change implications on feeds unavailability, unconventional resources are being considered with a growing interest such as aromatic plant distillation residues with a two-fold object, enhancing meat quality by increasing the antioxidant properties and reducing feed prices which are often imported though expensive. Hence, this study aims to assess the effects of rosemary distillation residues (RR) incorporation in concentrate associated to two nitrogen sources as a substitute for standard concentrate on lamb’s growth, carcass traits and meat quality. For this, 24 Barbarine male lambs (3 months old, 17.83 ± 2.6 kg body weight) were divided into three groups. All lambs received individually 600 g of oat hay as roughage and 600 g of standard concentrate for control group, 600 g of concentrate based on RR and soybean meal for RRS group and 600 g of concentrate based on RR and faba bean for RRF group. After 65 days of experiment, all lambs were slaughtered. Phenolic and tocopherol intakes were significantly higher for both RR groups compared to control (p < 0.05). Growth, carcass weights, dressing percentages and non-carcass component weights were unaffected by the diet (p > 0.05). Moreover, regional and tissular compositions and meat physical properties were similar irrespective of the diet (p > 0.05). All color parameters were similar among groups (p > 0.05). However, meat produced by lambs receiving RR-based concentrate was richer on vitamin E and polyphenol contents than control lambs (p < 0.05). Rosemary by-products may substitute the standard concentrate resulting in similar lamb’s growth and carcass traits, while improving meat quality by increasing vitamin E content, which could improve its antioxidant power.

Abstract
The current study was performed in order to evaluate the effect of using argane by-products (oil cake and pulp) as fattening diet of lambs. This was achieved through an experimental lamb fattening investigation using argan by-product as feeding source and the exploration of the fattened lamb performance, carcass characteristics and the chemical fatty acid composition of the quality produced meat. Twenty fattening Sardi lambs (26 ± 0.5 kg body weight and six months old) were divided into two (n = 10) homogenous experimental and control groups. Argane by-products (ABP) and traditional (CF) diets have been used for feeding the experimental and control groups respectively during a period of 75 days. The results obtained for both groups were used to determine the effect of feeding argane by-products on animal weight, average daily gain (ADG), carcass weight, muscle pH values, dressing %, dry matter, ash, ether extract, crude fiber, crude protein, and fatty acid composition. The obtained results showed that the experimental ABP group lambs had higher average daily gain and meat chemical, crude protein and ash and proportion of C18:0 than the control CF group lambs, while the control CF group had a higher feed conversion ratio, ether extract, mesenteric and perirenal fat. The results obtained for pH0 and pH24 were similar for both explored groups. The obtained results showed thus that the use of ABP as a diet to fattening lambs increased their performance and lean meat yield.

Abstract
Functional oils are known for their compounds with antioxidant, antimicrobial and anti-inflammatory properties, and are used in ruminant nutrition as alternatives to chemicals in order to improve performance. This study aimed to compare the influence of castor and cashew nut shell oils with pure organic selenium (hydroxy-selenomethionine) plus vitamin E, which are known and well-stablished antioxidants, on the performance traits, shelf life and microbial quality of the meat, physiological functions and oxidative stress control of lambs. Thirty-two Dorper x Santa Ines lambs (initial bodyweight of 22.42 ± 3.9 kg and 60 days of age) were submitted to a diet consisting of Cynodon dactylon hay (6%) and concentrate (94%). The animals were divided into four treatments: control, without additives; functional oils (FO), 0.50 g/kg DM of castor and cashew nut shell oils; hydroxy-selenomethionine and vitamin E (SeE), 0.50 mg/kg of organic selenium and 100 IU/kg DM of vitamin E; FO plus SeE, at the same doses as the other groups. Blood samples were collected after 1, 30 and 53 days on feed. After 54 days, the lambs were slaughtered and rumen health, carcass and meat traits, shelf life, and microbiological quality were evaluated. There were no differences in performance or carcass traits. A higher muscle and serum Se concentration (p < 0.0001), lower lipid peroxidation in meat during display (p < 0.0001), and a lower count of psychrotrophic microorganisms on day 5 were observed in the SeE and FO plus SeE groups. The treatments reduced the counts of Enterobacteriaceae, and Staphylococcus spp. FO animals showed higher GSH-Px activity on day 30, while the peroxidase activity was higher in FO plus SeE animals (p = 0.035). SeE and FO plus SeE animals had lower serum ALT and AST levels. Functional oils improved the microbiological quality of meat. Hydroxy-selenomethionine and vitamin E prevented oxidative stress, lipid peroxidation, and microbial spoilage.

Abstract
The nutritional requirements can be met, and carcass quality can be achieved by using concentrate supplementation in the diets of grazing
lambs. This study evaluated the effects of different concentrate supplementation rates (0 %, 1.5 %, and 3 % of body weight) and tropical pastures
(Panicum maximum cv. `Aruana' and Brachiaria brizantha cv. `Marandu') on lamb carcass traits. Thirty-six male Suffolk lambs, with an initial body weight
of 22.54 ± 2.72 kg, were evaluated in a 3 × 2 factorial experimental design. The concentrate used consisted of milled
soybean, maize, and oat grains. The pasture species affected empty body weight and commercial cuts. The use of concentrate supplementation affected
carcass weight, yield, indexes, and commercial cuts. Also, the use of concentrate supplementation improved the weight of muscle and fat
content. Based on discriminant analysis it is possible to identify the rearing systems, when all variables where used, or the level of concentrate
supplementation when variables of weight were used. Carcasses of animals on grass-only diets were different and easier to discriminate. The use of
concentrate supplementation on rearing lambs improves the quality of carcass traits. The period of finishing can be shorted with supplementation of
3 % of body weigh in Aruana and Marandu grass. The discriminant analysis can identify the differences between rearing systems based on all
carcass traits. This analysis can be used to develop carcass traceability systems.

Abstract
The correlations between growth and wool traits in response to canola and flaxseed oil supplementation were evaluated in Australian prime lambs. Sixty dual-purpose prime lambs including purebred Merino and crossbred lambs were allocated to one of five treatments of lucerne hay basal diet supplemented with isocaloric and isonitrogenous wheat-based pellets. Treatments were: no oil inclusion (Control); 2.5% canola oil; 5% canola oil; 2.5% flaxseed oil and 5% flaxseed oil, with lamb groups balanced by breed and gender. Each lamb was daily supplemented with 1kg of pellets and had free access to lucerne hay and water throughout the 7-week feeding trial, after a 3-week adaptation. Individual animal basal and supplementary pellet feed intakes were recorded daily, while body conformation traits, body condition scores and liveweights were measured on days 0, 21, 35 and 49. The lambs were dye-banded on the mid-side and shorn before commencing the feeding trial and mid-side wool samples were collected from the same dye-banded area of each lamb at the end of the experiment. Correlations between wool quality traits and lamb performance were non-significant (P>0.05). Oil supplementation had no detrimental effect on lamb growth and wool quality traits (P > 0.05). Gender significantly affected wither height gain and fibre diameter. There were significant interactions between oil supplementation and lamb breed on chest girth. The correlations between clean fleece yield (CFY) and other wool quality traits were moderate ranging from 0.29 to 0.55. Moderate to high correlations between fibre diameter (FD) and other wool quality traits were detected (0.46–0.99) with the strongest relationship between FD and wool spinning fineness (SF). The relationship between CFY and wool comfort factor (CF) were positive, while negative relationships between CFY and the others were observed. A combination of 5% oil supplementation and genetics is an effective and strategic management tool for enhancing feed efficiency and growth performance without negative effects on wool quality in dual-purpose lamb production. This is a good outcome for dual-purpose sheep farmers. It essentially means the absorbed nutrients in supplemented lambs yielded good growth performance without any detrimental impact on wool quality; a win-win case of nutrient partitioning into the synthesis of muscle and wool without compromising either traits.

Abstract
In this report, an overview of the health benefits of omega-3 long-chain (≥C20) polyunsaturated fatty acids (n-3 LC-PUFA) and recent progress in using alpha linolenic acid (ALA) rich sources derived from oilseeds to enhance productive performance, n-3 PUFA profiles and sensory properties of lamb for human consumption is reviewed. Omega-3 LC-PUFA can prevent mental health issues and chronic human disorders including cancer, cardiovascular and inflammatory diseases. The median amount of n-3 LC-PUFA consumption is generally lacking in Western diets. More attention is now being paid to the use of innovative nutritional strategies to improve PUFA content in ruminants, which could subsequently increase the content of health-benefitting n-3 LC-PUFA for human consumption. The richest sources of dietary n-3 LC-PUFA are derived from marine products, while forage and oilseeds such as flaxseed, canola, and their oils are abundant in ALA. Numerous studies have shown that dietary ALA increases n-3 LC-PUFA levels of edible tissues. However, other studies concluded that ALA rich supplementation led to no differences in tissue FA profiles because of extensive biohydrogenation of dietary ALA, limited conversion from ALA to n-3 LC-PUFA and low incorporation of n-3 LC-PUFA into edible tissues. Generally, the inclusion of ALA rich sources in lamb diets potentially increases ALA content in lamb. It is proposed that supplementing ruminants with ALA-rich sources at or below 6% can promote n-3 PUFA profiles in lamb and is unlikely to have negative effects on feed intake, growth, carcass and sensory properties.

Abstract
The objective of this study was to evaluate the effects of different levels of NDF in high-concentrate diets on performance and aspects ruminal, blood, and carcass parameters of finishing lambs. Twenty-four lambs, with initial BW of 24 ± 3 kg, were randomly divided into individual pens, in a completely randomized design, comprising three treatments with eight repetitions each. The treatments consisted of dietary levels of 15%, 20%, and 25% of NDF, based on DM. The diets were composed of corn, soybean meal, minerals, and corn silage and were offered twice a day, with daily control of what was offered and refused, to determine dry matter intake (DMI). The animals were weighed weekly and slaughtered after 50 days of confinement. Performance evaluations, blood parameters, carcass, and ruminal parameters were evaluated. Lambs fed with lower dietary fiber had better carcass yield (P < 0.005). Blood count, blood biochemical parameters, rumen short-chain fatty acid production and protozoan population were not affected by the dietary NDF level. It was concluded that in high-concentrate diets with 15% NDF resulting in better weight gain of the animals in the confinement, good carcass yields without the animal having altered health and ruminal parameters.

Abstract
The aim of this study was to determine the optimum carcass weight for meat quality and fatty acid composition in fat-tailed Chall lambs. Thirty lambs (15 male and 15 female) were allotted to three carcass weight groups: (1) light carcass weight (LCW 10-15 kg), (2) moderate carcass weight (MCW 15-20 kg), and (3) heavy carcass weight (HCW 20-25 kg). Back fat thickness and intramuscular fat (IMF) content were greater (P < 0.05) for HCW and female groups than their counterparts, respectively. Drip loss was lower (P < 0.05) for female and HCW lamb groups than male and LCW group, respectively. Female and LCW lambs had lower (P < 0.05) shear force compared with their corresponding male and HCW groups. Meat from LCW and MCW lambs had higher lightness (L* value; 43.6, 43.5 vs. 39.9), while redness (a* value; 13.6, 13.9 vs. 15.4) was greater for HCW and female (13.7 vs. 14.9) lambs compared with their counterparts (P < 0.05). The MCW lambs produced meat with higher overall acceptability compared with other two groups (P < 0.05). The HCW lambs contained lower polyunsaturated fatty acids (PUFA), polyunsaturated fatty acids to saturated fatty acids (P:S) ratio, and n-3 PUFA compared with LCW group (P < 0.05). Results show that as the animal grow faster and achieved HCW, the IMF content also increased mainly as storage triglyceride, while functional fats consisting long-chain omega-3 did not increase proportionately. In addition, the study also demonstrates that using IMF for predicting or assessing meat quality aspects such as juiciness and flavor or the nutritional value of meat relating to health claimable fatty acids would not be appropriate.
