Abstract
An on-line Dual Energy X-ray Absorptiometry (DXA) scanner's tissue composition prediction precision and accuracy was tested across the entire height of the unit's detector, and the hardware was assessed for robustness by measuring X-ray photon intensity throughout production days. There was good precision when predicting the tissue composition of 5 different lamb fat and lean muscle mixtures across 3 different thicknesses (R2 = 0.93 to 0.98, RMSE = 3.18% to 5.83%), however was less precise at the greatest thickness of 200 mm (R2 = 0.59, RMSE = 11.4%). There was no significant difference in the prediction of tissue composition at 8 of the 9 detector positions, however the position at the perpendicular of the X-ray photon beam was significantly different, with a fat prediction error of -4%, although no lamb carcass is detected in this position during normal production. A significant upwards drift in X-ray photon intensity was found over the course of production, especially immediately after restarting the DXA scanner following a period of inactivity. This upwards drift may affect tissue composition predictions over the span of a production day if uncorrected.

Abstract
Microplastics (MPs), recognized as an emerging environmental menace, have been extensively investigated in both marine and terrestrial fauna. This study is comprehensive to investigate how polystyrene (PS) affects ruminant animals. The experimental design comprised 24 individually housed lambs, divided into a CON group (diet without PS) and three PS-exposed (25 μm, 50 μm, 100 μm) groups, each with six lambs, the exposure of PS was 100 mg/day, and the duration of exposure was 60 days. The study yielded noteworthy results: (ⅰ) PS leads to a decrease in average daily gain along with an increase in feed conversion rate. (ⅱ) PS decreases rumen ammonia nitrogen. The rumen microbiota diversity remains consistent. However, the relative abundance of Bacteroidetes and Actinobacteria increased in the PS-exposed groups, while the relative abundance of Coriobacteriales_incertae_Sedis and Prevotellaceae_YAB2003_group decreased. (ⅲ) PS leads to decrease in hemoglobin, thrombocytocrit, and albumin levels in lamb blood, thus triggering oxidative stress accumulation, along with swelling of the kidneys and liver. (ⅳ) PS inflicts severe damage to jejunum, consequently impacting digestion and absorption. (ⅴ) PS reduces meat quality and the nutritional value. In conclusion, PS-exposure inhibited lambs' digestive function, adversely affects blood and organs' health status, reducing average daily gain and negatively influencing meat quality. PS particles of 50-100 μm bring worse damage to lambs. This research aims to fill the knowledge void concerning MPs' influences on ruminant animals, with a specific focus on the meat quality of fattening lambs.

Abstract
The effect of low-voltage electrostatic field (LVEF) assisted -9 °C (LVEF-9) and -12 °C (LVEF-12) frozen, non-LVEF-assisted -9 °C (NLVEF-9) and -12 °C (NLVEF-12) frozen, and conventional frozen (CF-18, -18 °C) storage on the muscle microstructure and the oxidative denaturation of the lamb protein during the subsequent frozen storage process after finishing initial freezing was investigated. Compared with NLVEF-9, LVEF-9, and NLVEF-12, LVEF-12 maintained the better integrity of muscle microstructure, demonstrated by smaller holes, more complete Z-line and M-line, and no significant difference with CF-18 (P > 0.05). Furthermore, LVEF-12 effectively inhibited protein oxidative denaturation as shown by the lower carbonyl content, surface hydrophobicity, and higher total/active sulfhydryl groups and Ca2+-ATPase activity. Moreover, LVEF-12 effectively maintained the integrity of the secondary and tertiary structure of proteins, reduced cross-linking aggregation of proteins, and sustained better functional properties, as shown by higher α-helix content, fluorescence intensity, protein solubility, and lower R-value, disulfide bonds.

Abstract
The study successfully utilized an analytical approach that combined quantitative lipidomics with back-propagation neural networks to identify breed and part source of lamb using small-scale samples. 1230 molecules across 29 lipid classes were identified in longissimus dorsi and knuckle meat of both Tan sheep and Bahan crossbreed sheep. Applying multivariate statistical methods, 12 and 7 lipid molecules were identified as potential markers for breed and part identification, respectively. Stepwise linear discriminant analysis was applied to select 3 and 4 lipid molecules, respectively, for discriminating lamb breed and part sources, achieving correct rates of discrimination of 100 % and 95 %. Additionally, back-propagation neural network proved to be a superior method for identifying sources of lamb meat compared to other machine learning approaches. These findings indicate that integrating lipidomics with back-propagation neural network approach can provide an effective strategy to trace and certify lamb products, ensuring their quality and protecting consumer rights.

Abstract
BACKGROUND Vitamin A and retinoic acid (RA, a metabolite of vitamin A), are inextricably involved to the development of skeletal muscle in animals. However, the mechanisms regulating skeletal muscle development by vitamin A remain poorly reported. The current study designed to investigate the underlying mechanism of vitamin A affecting myogenic differentiation of lamb myoblasts through transcriptome sequencing (RNA-Seq) and gene function validation experiments. It provides a theoretical basis for elucidating the regulation of vitamin A on skeletal muscle development as well as for improving the economic benefits of the mutton sheep industry. RESULTS Newborn lambs were injected with 7,500 IU vitamin A, and longissimus dorsi (LD) muscle tissue was surgically sampled for RNA-Seq analysis and primary myoblasts isolation at 3 weeks of age. The results showed that a total of 14 down-regulated and 3 up-regulated genes, were identified between control and vitamin A groups. Among them, BHLHE40 expression was upregulated in vitamin A group lambs. Furthermore, BHLHE40 expression is significantly increased after initiation of differentiation in myoblasts, and RA addition during differentiation greatly promoted BHLHE40 mRNA expression. In vitro, RA inhibited myoblasts proliferation and promoted myoblasts myogenic differentiation through BHLHE40. Moreover, BHLHE40 was proved to inhibit the expression of the DNA binding inhibitor 3 (ID3), and meanwhile, ID3 could effectively promote myoblasts proliferation and inhibit myoblasts myogenic differentiation. CONCLUSIONS Taken together, our results suggested that vitamin A inhibited myoblasts proliferation and promoted myoblasts myogenic differentiation by inhibiting ID3 expression through BHLHE40.

Abstract
BACKGROUND The function of diverse ruminal microbes is tightly linked to rumen development and host physiology. The system of ruminal microbes is an excellent model to clarify the fundamental ecological relationships among complex nutrient-microbiome-host interactions. Here, neonatal lambs are introduced to different dietary regimes to investigate the influences of early-life crosstalk between nutrients and microbiome on rumen development. RESULTS We find starchy corn-soybean starter-fed lambs exhibit the thickest ruminal epithelia and fiber-rich alfalfa hay-fed lambs have the thickest rumen muscle. Metabolome and metagenome data reveal that indole-3-carboxaldehyde (3-IAld) and prostaglandin D2 (PGD2) are the top characteristic ruminal metabolites associated with ruminal epithelial and muscular development, which depend on the enhanced ruminal microbial synthesis potential of 3-IAld and PGD2. Moreover, microbial culture experiment first demonstrates that Bifidobacterium pseudolongum is able to convert tryptophan into 3-IAld and Candida albicans is a key producer for PGD2. Transcriptome sequencing of the ruminal epithelia and smooth muscle shows that ruminal epithelial and muscular development is accompanied by Wnt and Ca2+ signaling pathway activation. Primary cell cultures further confirm that 3-IAld promotes ruminal epithelial cell proliferation depending on AhR-wnt/β-catenin signaling pathway and PGD2 accelerates ruminal smooth muscle cell proliferation via Ca2+ signaling pathway. Furthermore, we find that 3-IAld and PGD2 infusion promote ruminal epithelial and musculature development in lambs. CONCLUSIONS This study demonstrates that early-life ruminal microbiome-derived 3-IAld and PGD2 are effective promoters of rumen development, which enhances our understanding of nutrient-microbiome-host interactions in early life.

Abstract
This study investigated the potential impact of feeding whole plant basil on sperm quality and the concentration of certain reproductive hormones in male lambs. A total of 18 Zandi male lambs with an initial weight of 28.8 ± 2.03 kg were included in a completely randomized design with three treatments and six repetitions. The experimental treatments included: 1) control (basal diet without basil), 2) diet containing 12.5 % basil, and 3) diet containing 25 % basil. The results showed that feeding basil to male lambs significantly increased testosterone concentration and decreased blood cortisol levels (P < 0.05). Additionally, feeding high levels of basil significantly improved sperm concentration, motility, and viability in the experimental samples, while reducing the level of complete abnormalities and malondialdehyde concentration (P < 0.05). The findings suggest that dietary supplementation of 25 % whole plant basil could be a useful strategy to improve sperm quality and increase testosterone secretion while reducing cortisol levels in male lambs.

Abstract
The aim of this study was to compare the performance, intake, digestibility, ruminal parameters, carcass traits, and the yield of commercial cuts of Santa Ines (SI) and Rabo Largo (RL) breeds fed diets with high or low roughage-to-concentrate ratio (R:C) under a tropical climate. Twenty lambs from each breed were individually housed in covered pens and fed the experimental diets for 58 days. The diets were formulated to meet the growth requirements of lambs with a roughage-to-concentrate ratio of 70:30 and 30:70. Significant interactions of breed × diet for nutrient intake were observed (P < 0.05), with SI lambs fed low R:C diet showing higher intake of dry matter, organic matter, crude protein, and total carbohydrates compared to RL lambs fed the same diet. SI lambs fed high R:C diet had higher intake of neutral detergent fiber than RL lambs (P < 0.05). SI lambs displayed better average daily gain and feed efficiency, regardless of diet (P < 0.05). Carcass traits and gastrointestinal components were influenced by breed and diet (P < 0.05). SI lambs fed low R:C diet showed higher subcutaneous fat thickness and better carcass finishing compared to RL lambs (P < 0.05). SI breed lambs exhibited better growth performance, carcass traits, and gastrointestinal characteristics, even when fed diets with a high roughage-to-concentrate ratio.

Abstract
Under specific agroclimatic conditions, growth is an adaptability parameter resulting in reduced performance with decreasing animal comfort of a sheep breed. In this study, a total of 1011 lambs' live weights (LW) and average daily weight gains (ADG) in 16 different farms between 2018 and 2020 (birth to 18 months) were determined in Akkaraman herds raised in Çankırı Province of Turkey. Comprehensive Climate Index (CCI) was examined to determine the effect of climate. Thermal comfort limits in CCI values were classified as CCI-1.cold (≤ 5 ℃), CCI-2.comfort (5-25 ℃), and CCI-3.warm (≥ 25 ℃). The climatic values that all lambs examined were exposed to according to index value groups in periods from birth to 18 months of age were prepared daily. The lambs were exposed to comfort environment in the majority of the days in the MP0-3 (77.7%) and MP12-18 (50.1%) periods. The lambs mostly in the MP3-6 period (72.2%) were above the warm stress threshold, but in the MP6-12 period, 54.7% were above the cold stress threshold. Overall mean LW of lambs at birth, at 3, 6, 12, and 18 months were 4.29 kg, 35.1 kg, 39.1 kg, 45.4 kg, and 52.6 kg, while the ADG values between birth-3 months, 3-6 months, 6-12 months, and 12-18 months were 341.8 g, 54.5 g, 42.9 g, and 56.8 g respectively. Periodically, CCI values were realized as 10-15, 25-30, and 18-22 in the growth periods of 0-3, 3-6, and 12-18 months, respectively, and ADG values of the lambs were found to be similar within their own periods. However, when the CCI values of the lambs increase to 5 and above in the 06-12-month period, there is a decrease in their live weight. As a result, climatic index values did not have a negative effect on the growth and development values of lambs in cold conditions in general, but warm conditions affected the animals negatively.

Abstract
Shiga toxin-producing Escherichia coli (STEC) is a major cause of foodborne illness, ranging from mild diarrhea to permanent kidney failure. This study summarizes the results of four surveys performed at different time periods, which investigated the occurrence and characteristics of STEC in beef, lamb and leafy greens available in the Swedish retail market. Such data is required when assessing the public health risk of varying types of STEC in different foods, and for establishing risk management measures. Samples from domestic and imported products were collected based on their availability in the retail market. The occurrence of STEC was investigated in 477 samples of beef, 330 samples of lamb and 630 samples of leafy greens. The detection of virulence genes (stx1, stx2, eae) was performed using real-time PCR followed by the isolation of bacteria from stx-positive enriched samples using immunomagnetic separation or an immunoblotting method. All STEC isolated from the food samples was further characterised in terms of stx subtyping and serotyping through whole genome sequencing. STEC was isolated from 2 to 14 % of beef samples and 20 to 61 % of lamb samples, depending on the region of origin. STEC was not isolated from samples of leafy greens, although stx genes were detected in 11 (2 %) of the samples tested. In total, 5 of the 151 sequenced STEC isolates from meat contained stx2 and eae, of which 4 such combinations had the stx2a subtype. The stx2 gene, stx2a in particular, is strongly associated with serious disease in humans, especially in combination with the eae gene. The isolates belonged to 20 different serotypes. Two isolates from beef and one from lamb belonged to the serotype O157:H7 and contained genes for stx2 and eae. Overall, several combinations of stx subtypes were found in isolates from beef, whereas stx1c, either alone or together with stx2b, was the dominant combination found in STEC from lamb. In conclusion, STEC was rare in whole meat samples of domestic beef in the Swedish retail market, whereas such bacteria were frequently found in minced meat and whole meat samples of imported beef and domestic and imported lamb. Although the number of isolates containing genes linked to an increased risk of severe disease was low, beef and lamb in the Swedish retail market is a common source of human exposure to potentially pathogenic STEC.

Abstract
A carcass classification method is expected to effectively categorize carcasses based on both carcass and meat quality criteria. Localisation of adipose tissue on the carcass differs between thin- and fat-tailed sheep breeds, which may influence the effectiveness of the EUROP classification system in distinguishing lamb carcasses. The aim of the study was to investigate the effects of EUROP carcass fatness and conformation classes on carcass characteristics and meat quality in thin-tailed Kivircik and fat-tailed Kangal Akkaraman lambs. Slaughtering, carcass, and meat quality data of 115 lambs (67 Kivircik and 48 Kangal Akkaraman) were examined. Hierarchical cluster analysis yielded 3 clusters in both breeds. Differences among lamb carcasses in different clusters were significant for nearly all carcass characteristics in both breeds. Fatness and conformation classes significantly influenced on most of the carcass characteristics in both breeds. However, the effect of fatness class on percentages of valuable joints, and the effect of conformation class on hind limb tissue composition were not significant in Kangal Akkaraman lambs. As carcass fatness and conformation classes increased in Kivircik lambs, meat colour became darker. In Kangal Akkaraman lambs, fatness class had no influence on meat colour. The effects of fatness and conformation classes on sensory characteristics were not significant in both breeds, except fatness effect on odour intensity in Kangal Akkaraman lambs. In conclusion, the EUROP classification system may not be as effective in distinguishing carcass and meat quality in Kangal Akkaraman lambs as in the Kivircik breed.

Abstract
BACKGROUND Congenital entropion is the most frequent ocular disorder in newborn lambs of certain sheep breeds, which, if not treated, can result in complete blindness and death due to starvation. OBJECTIVES The aims of this study were to compare the spontaneous healing of entropion in two breeds and assess the outcome of cases with and without therapeutic intervention. METHODS A total of 158 entropion cases (119 Ile de France and 39 Romane) were investigated, and swab samples were collected from the cornea and conjunctiva of 73 of the affected lambs for bacteriological investigation. In addition, an ocular intervention was carried out in 123 affected animals. RESULTS The Romane breed developed entropion at an average age of 7 days compared to the Ile de France, which developed it at an average age of 1 day. Likewise, significant differences were found between bilateral and unilateral involvement in both breeds. Meanwhile, 22.1% of cases recovered spontaneously, and the highest rate of spontaneous recovery without intervention was observed in the Romane breed (66%). Bacteria isolated from ocular samples included Staphylococcus spp. (42.5%), Bacillus spp. (21.9%), Trueperella pyogenes (13.7%), Corynebacterium spp. (12.3%) and Escherichia coli (9.6%). CONCLUSIONS The results of the study showed that the onset time of entropion, bilateral involvement, the severity of the process and the need for re-treatment were higher in the Ile de France breed than in the Romane breed. Likewise, the Romane breed showed a higher degree of spontaneous recovery of entropion.

Abstract
In July 2021, Public Health Wales received two notifications of salmonella gastroenteritis. Both cases has attended the same barbecue to celebrate Eid al-Adha, two days earlier. Additional cases attending the same barbecue were found and an outbreak investigation was initiated. The barbecue was attended by a North African community's social network. On same day, smaller lunches were held in three homes in the social network. Many people attended both a lunch and the barbecue. Cases were defined as someone with an epidemiological link to the barbecue and/or lunches with diarrhoea and/or vomiting with date of onset following these events. We undertook a cohort study of 36 people attending the barbecue and/or lunch, and a nested case-control study using Firth logistic regression. A communication campaign, sensitive towards different cultural practices, was developed in collaboration with the affected community. Consumption of a traditional raw liver dish, 'marrara', at the barbecue was the likely vehicle for infection (Firth logistic regression, aOR: 49.99, 95%CI 1.71-1461.54, p = 0.02). Meat and offal came from two local butchers (same supplier) and samples yielded identical whole genome sequences as cases. Future outbreak investigations should be relevant to the community affected by considering dishes beyond those found in routine questionnaires.

Abstract
Fermented soybean grain (FSBG) is considered improper to use as a protein source in animal nutrition, since it is assumed that defects cause changes on its chemical composition and favor mycotoxins production, but chemical composition data does not support this theory and in vivo studies are missing. Thus, this study aimed to evaluate the effects of FSBG in feedlot lamb diets. For that, two types of FSBG (partially fermented and completely fermented, PFSBG and CFSBG) and one standard soybean grain (SSBG) were obtained and evaluated alone or as a component of experimental diets by in vitro and in vivo studies, where FSBG totally replaced SSBG in feedlot lamb diets, which was included in the experimental diets in 17.4% on dry matter basis as protein source. Before the studies, both soybeans were sent to a specialized laboratory where no mycotoxins were detected. As a result, lower DM and carbohydrate contents but higher crude protein, fiber, and indigestible NDF contents were measured in CFSBG than in SSBG. Furthermore, both types of FSBG showed lower digestibility in vitro dry matter (IVDMD) than SSBG when evaluated separately; however, when evaluated in experimental diets, the substitution of SSBG for FSBG did not affect IVDMD. It was also observed that FSBG also had less rumen-degradable protein than SSBG (mean 47.9 vs 86.4%). In the in vivo study, FSBG did not affect nutrient intake, apparent digestibility, or animal performance (i.e., average daily gain and carcass gain). Thus, mycotoxins-free FSBG may be an alternative to totally replace SSBG in feedlot lamb diets.

Abstract
In this study, in order to reveal the immune response against the disease in naturally infected sheep with SPPV, the expressions of various pro- or anti-inflammatory cytokines such as tumour necrosis factor alpha (TNF-α), interferon gamma (IFN-γ), interleukin-1beta (IL-1β), interleukin-2 (IL-2), interleukin-6 (IL-6), interleukin-8 (IL-8), interleukin-10 (IL-10) and interleukin-12 (IL-12) were evaluated immunohistochemically. The material of this study consisted of tissue samples taken from 24 sheep, which were brought as dead for routine histopathological examination to the Department of Pathology. Avidin-biotin-peroxidase method was used for immunohistochemistry. Characteristic pox lesions were observed in the skin, lungs and kidneys. In histopathological examinations, pox cells, which are very characteristic for the diagnosis of the disease, were observed in all three tissues. Capripoxvirus nucleic acid was detected in 8 of the 24 tissues. Samples were sequenced, and a phylogenetic tree was constructed with reference strains from GenBank. Strains from the study clustered with sheeppox virus references. In conclusion, the levels of pro-inflammatory cytokines such as TNF-α, IFN-γ, IL-1β, IL-2, IL-8 and IL12 (Th1) were much more dominant compared to the levels of anti-inflammatory cytokines: IL-10 and IL-6 (Th2). This supported the fact that the cellular immune response is much more effective than the humoral immune response in sheeppox.

Abstract
This study aimed to evaluate protein oxidation and in vitro digestion characteristics of lamb that was grilled from raw to charred (0-30 min). Results showed that protein oxidation was aggravated with the time of grilling, indicated by a significant linear increase in carbonyl groups and a linear decrease in sulfhydryl groups. Proteins had the highest simulated gastric and gastrointestinal digestibility at 10-15 min of grilling. Newly formed specific peptides were continuously released during the grilling process. The identified peptides were mainly derived from creatine kinase, phosphoglycerate kinase, actin and myosin light chain. Protein oxidation was closely related to digestive characteristics, and grilling for >15 min would aggravate protein oxidation and reduce its digestibility. Therefore, at 220 °C lamb should not be grilled for longer than 15 min.

Abstract
Cryptosporidium parvum is the second-most prevalent Cryptosporidium species that infects humans worldwide. In European countries, it is the most prevalent species in sheep, suggesting that these animals are a source of zoonotic infection. Preweaned lambs and goats are particularly susceptible to infection by the parasite and may suffer from severe diarrhea whilst excreting large quantities of infectious oocysts. Fifty fecal samples from preweaned lambs and goats with diarrhea from 35 farms across Israel, found to be Cryptosporidium-positive by microscopy, were tested by PCR and sequence analyses to determine the infective species and subtypes. Cryptosporidium parvum DNA was detected in most samples from both lambs and goats (46/50). Cryptosporidium xiaoi DNA was detected in three samples from kids, with co-infection detected in a single sample. Eleven different C. parvum subtypes were found, 10 in lambs and 5 in goats. All subtypes were from the IIa and IId subtype families, with subtypes IIdA20G1 and IIaA15G2R1 being the most prevalent and widespread. These subtypes were previously found in calves and humans in Israel and are considered the most prevalent C. parvum subtypes in small ruminants globally. These results underline the zoonotic potential of C. parvum from small ruminants and the high subtype diversity compared to previous reports from other Middle Eastern countries. In addition, this is the first report of C. xiaoi in Israel.

Abstract
Vitamin A and its metabolite, retinoic acid (RA) play important roles in regulating skeletal muscle development. This study was conducted to investigate the effects of early intramuscular vitamin A injection on the muscle growth of lambs. A total of 16 newborn lambs were given weekly intramuscular injections of corn oil (control group, n = 8) or 7,500 IU vitamin A palmitate (vitamin A group, n = 8) from birth to 3 wk of age (4 shots in total). At 3 wk of age and weaning, biceps femoris muscle samples were taken to analyze the effects of vitamin A on the myogenic capacity of skeletal muscle cells. All lambs were slaughtered at 8 months of age. The results suggest that vitamin A treatment accelerated the growth rate of lambs and increased the loin eye area (P < 0.05). Consistently, vitamin A increased the diameter of myofibers in longissimus thoracis muscle (P < 0.01) and increased the final body weight of lambs (P < 0.05). Vitamin A injection did not change the protein kinase B/mammalian target of rapamycin and myostatin signaling (P > 0.05). Moreover, vitamin A upregulated the expression of PAX7 (P < 0.05) and the myogenic marker genes including MYOD and MYOG (P < 0.01). The skeletal muscle-derived mononuclear cells from vitamin A-treated lambs showed higher expression of myogenic genes (P < 0.05) and formed more myotubes (P < 0.01) when myogenic differentiation was induced in vitro. In addition, in vitro analysis showed that RA promoted myogenic differentiation of the skeletal muscle-derived mononuclear cells in the first 3 d (P < 0.05) but not at the later stage (P > 0.05) as evidenced by myogenic gene expression and fusion index. Taken together, neonatal intramuscular vitamin A injection promotes lamb muscle growth by promoting the myogenic potential of satellite cells.

Abstract
Twenty Santa Inês male sheep were used in a randomized block design to evaluate the effects of different levels of macauba cake (MC) on nutrient digestibility and the population of microorganism in the rumen. The animals were divided into four groups according to MC levels (0, 10, 20, and 30% of DM) and initial body weight ranging from 32.75 to 52.17 kg. Diets were isonitrogenous and formulated to attend metabolizable energy requirements, and feed intake was regulated with 10% allowance for leftovers. Each experimental period lasted 20 days, with the final 5 days reserved for sample collection. Macauba cake inclusion did not affect the dry matter, organic matter, or crude protein intake but increased the ether extract, neutral detergent fiber, and acid detergent fiber intake, mainly because of changes in the concentrations of these components in diets with a higher level of MC. With MC inclusion, a linear decreasing effect was observed for the dry matter and organic matter digestibility, and a quadratic effect with a maximum point of 21.5% was observed for the acid detergent fiber digestibility. A relative reduction of 73% in anaerobic fungal populations was observed with the lowest level of MC inclusion, and a relative increase of 162% in methanogenic populations was observed with the highest level of MC inclusion. The increasing level of macauba cake up to 30% of the diet of lambs reduced the dry matter digestibility and reduced anaerobic fungi but increased methanogenic population.

Abstract
Consumers demand safe and nutritious foods at accessible prices; where issues associated with adulteration, fraud, and provenance have become important aspects to be considered by the modern food industry. There are many analytical techniques and methods available to determine food composition and quality, including food security. Among them, vibrational spectroscopy techniques are at the first line of defence (near and mid infrared spectroscopy, and Raman spectroscopy). In this study, a portable near infrared (NIR) instrument was evaluated to identify different levels of adulteration between binary mixtures of exotic and traditional meat species. Fresh meat cuts of lamb (Ovis aries), emu (Dromaius novaehollandiae), camel (Camelus dromedarius) and beef (Bos taurus) sourced from a commercial abattoir were used to make different binary mixtures (95 % %w/w, 90 % %w/w, 50 % %w/w, 10 % %w/w and 5 % %w/w) and analysed using a portable NIR instrument. The NIR spectra of the meat mixtures was analysed using principal component analysis (PCA), and partial least squares discriminant analysis (PLS-DA). Two isosbestic points corresponding to absorbances at 1028 nm and 1224 nm were found to be consistent across all the binary mixtures analysed. The coefficient of determination in cross validation (R2) obtained for the determination of the per cent of species in a binary mixture was above 90 % with a standard error in cross validation (SECV) ranging between 12.6 and 15 %w/w. Overall, the results of this study indicate that NIR spectroscopy can determine the level or ratio of adulteration in the binary mixtures of minced meat.

Abstract
The objectives of this experiment were to investigate voluntary intake of stoned olive cake (SOC) in sheep and goats. The feeding experiment was carried out with a total of 10 animals consisting of five Karya yearlings and five Saanen goats (28.0 ± 2.0 and 37.0 ± 2.1 kg initial body weight (BW), respectively). Three feeds were offered as free-choice: alfalfa hay-maize silage mix (40:60 in dry matter basis), pelleted SOC, and ensiled SOC. Goats had higher (P < 0.001) dry matter (DM) and neutral detergent fiber (NDF) intakes than sheep, although digestible DM and NDF intakes were similar. Goats consumed more (P < 0.05) pelleted SOC and ensiled SOC than sheep as a percentage of total intake (29.2 and 22.4%, respectively). Both sheep and goats preferred (P < 0.001) the silage form of SOC compared to the pelleted form of SOC.

Abstract
The inclusion of eating quality traits in sheep genetic improvement programmes is desirable. Intramuscular fat (IMF) plays a key role in ensuring consumer satisfaction when eating lamb, but genetic progress for IMF is constrained by a lack of routine data collection. This study investigated the potential for IMF predictor traits to substitute for measured IMF in genetic improvement programmes. Carcass and predicted IMF (near-infrared estimated IMF and marbling score) data were available on 10,113 New Zealand lambs, 1678 of which also had measured chemical IMF on a slice of M. longissimus lumborum on which the predictions of IMF had been made. Genetic antagonisms were observed between carcass lean traits and IMF. The genetic correlation between the predictors and measured IMF approached one, indicating that predictors of IMF can be used in genetic improvement programmes. Through using selection indexes, simultaneous increases in IMF and the existing terminal selection index are possible, provided all traits are measured. This study highlights the importance and potential of predicted IMF to achieve genetic improvement in traits of importance to consumers.

Abstract
This study aimed to evaluate the inclusion of chromium propionate or calcium salts of palm oil in ewes' diet during the final third of gestation and lactation on progeny performance, carcass characteristics, non-carcass components, and bone density. Forty-three ewe, Santa Inês and Dorper breed, three ± one-year-old, and body weight 57 ± 10 kg were used. The experimental design was in casual blocks in three treatments, CTL treatment (n = 15) with starch from corn; CR (n = 15) diet CTL plus chromium propionate; PF (n = 13) diet CTL plus calcium salts of palm oil. After weaning, 23 male lambs from these ewes were confined in individual stalls, with the same diet for 60 days, slaughtered. The data were analyzed using the SAS program, PROC GLM, and compared the means using Tukey's test at 5% probability. The maternal diet did not alter the dry matter intake, feeding efficiency, and average daily weight gain. Therefore, weights (weaning and slaughter) and carcass yield were higher for CR and PF groups than for CTL (P < 0.05). The treatment did not influence the loin eye area and fat thickness (P > 0.05). The spleen and the respiratory tract were smaller for PF and larger for CTL (P < 0.05). Leg weight was higher for CR. The perimeter and depth of the shank for the CR and PF lambs were higher, indicating an effect of maternal nutrition in this commercial cut. The CR group had a smaller epiphysis measurement and femur length than the CTL group. We concluded that the fetal programming effect in ewes fed with Cr propionate and Ca salts of palm oil benefited the progeny by increasing their body weight, better carcass yield, and a higher proportion of prime cuts.

Abstract
Early feed restriction of lambs promotes a permanent mitochondrial dysfunction that impairs β-oxidation of fatty acids along the whole life. Therefore, dietary l-carnitine might help to improve the mitochondrial function of these lambs, thus modifying lipid metabolism and meat quality traits. In order to test this hypothesis an experiment was carried out with 22 Merino lambs that were subjected to an early feed restriction during the suckling period. Once weaned, the lambs were allocated to a control group (CTRL, n = 11) being fed ad libitum a complete pelleted diet during the fattening phase, whereas the second group (CARN, n = 11) received the same diet formulated with 3 g/kg of l-carnitine. Carcass characteristics were not affected (P > 0.05) by treatment. However, lambs fed l-carnitine showed higher amounts of intramuscular fat (26.5 vs. 33.6 g/kg fresh matter; P = 0.047) with a lower ratio between polyunsaturated and saturated fatty acids (0.425 vs 0.333; P = 0.023) and a higher atherogenic (0.507 vs 0.597; P < 0.001) and thrombogenic index (1.23 vs 1.42; P < 0.001). An increase in lightness (P < 0.05) and a tendency to improved oxidative stability in cooked meat (P = 0.066) were also observed in the CARN group. Consequently, dietary l-carnitine supplied during the fattening period of early feed restricted lambs modifies meat quality traits thus increasing lightness, oxidative stability and intramuscular fat content, but worsening the fatty acid profile.

Abstract
Sheep meat (encompassing lamb, hogget and mutton) is an important source of animal protein in many countries, with a unique flavour and sensory profile compared to other red meats. Flavour, colour and texture are the key quality attributes contributing to consumer liking of sheep meat. Over the last decades, various factors from 'farm to fork', including production system (e.g., age, breed, feeding regimes, sex, pre-slaughter stress, and carcass suspension), post-mortem manipulation and processing (e.g., electrical stimulation, ageing, packaging types, and chilled and frozen storage) have been identified as influencing different aspects of sheep meat quality. However conventional meat-quality assessment tools are not able to elucidate the underlying mechanisms and pathways for quality variations. Advances in broad-based analytical techniques have offered opportunities to obtain deeper insights into the molecular changes of sheep meat which may become biomarkers for specific variations in quality traits and meat authenticity. This review provides an overview on how omics techniques, especially proteomics (including peptidomics) and metabolomics (including lipidomics and volatilomics) are applied to elucidate the variations in sheep meat quality, mainly in loin muscles, focusing on colour, texture and flavour, and as tools for authentication. SIGNIFICANCE: From this review, we observed that attempts have been made to utilise proteomics and metabolomics techniques on sheep meat products for elucidating pathways of quality variations due to various factors. For instance, the improvement of colour stability and tenderness could be associated with the changes to glycolysis, energy metabolism and endogenous antioxidant capacity. Several studies identify proteolysis as being important, but potentially conflicting for quality as the enhanced proteolysis improves tenderness and flavour, while reducing colour stability. The use of multiple analytical methods e.g., lipidomics, metabolomics, and volatilomics, detects a wider range of flavour precursors (including both water and lipid soluble compounds) that underlie the possible pathways for sheep meat flavour evolution. The technological advancement in omics (e.g., direct analysis-mass spectrometry) could make analysis of the proteins, lipids and metabolites in sheep meat routine, as well as enhance the confidence in quality determination and molecular-based assurance of meat authenticity.

Abstract
The purpose of this study is to investigate the quality characteristics and fatty acid composition of meat from male Akkaraman (AKK) and Bafra × Akkaraman B1 (BA B1) lambs slaughtered at different live weights. Thirty-six male lambs (18 AKK and 18 BA B1) were slaughtered at three different slaughter weights (35, 40, and 45 kg) after being fattened intensively. Meat physical quality characteristics and fatty acid profiles were used as response variables. Color parameters (L*, a*, and b*) and pH were not significantly influenced by genotype and slaughter weight (SW). Water-holding capacity (WHC) was significantly affected by SW (P < 0.05), cooking loss (CL) by genotype (P < 0.001). Increasing SW, intramuscular fat of the Longissimus thoracis muscle showed increased total unsaturated fatty acids (TUFA) (P < 0.01) and ratios of TUFA/saturated fatty acids (SFA) (P < 0.01), and decreased thrombogenic and atherogenic indices (P < 0.01). Monounsaturated fatty acids (MUFA) (P < 0.05) and polyunsaturated fatty acids (PUFA) (P < 0.01) varied on with the genotypes. In conclusion, genotype and SW did not greatly affect meat quality; however, MUFA and PUFA mutually changed according to the genotype, and fatty acid percentages improved according to the SW.

Abstract
BACKGROUND Lipid metabolism differs significantly between grazing and stall-feeding lambs, affecting the quality of livestock products. As two critical organs of lipid metabolism, the differences between feeding patterns on rumen and liver metabolism remain unclear. In this study, 16S rRNA, metagenomics, transcriptomics, and untargeted metabolomics were utilized to investigate the key rumen microorganisms and metabolites, as well as liver genes and metabolites associated with fatty acid metabolism under indoor feeding (F) and grazing (G). RESULTS Compared with grazing, indoor feeding increased ruminal propionate content. Using metagenome sequencing in combination with 16S rRNA amplicon sequencing, the results showed that the abundance of propionate-producing Succiniclasticum and hydrogenating bacteria Tenericutes was enriched in the F group. For rumen metabolism, grazing caused up-regulation of EPA, DHA and oleic acid and down-regulation of decanoic acid, as well as, screening for 2-ketobutyric acid as a vital differential metabolite, which was enriched in the propionate metabolism pathway. In the liver, indoor feeding increased 3-hydroxypropanoate and citric acid content, causing changes in propionate metabolism and citrate cycle, while decreasing the ETA content. Then, the liver transcriptome revealed that 11 lipid-related genes were differentially expressed in the two feeding patterns. Correlation analysis showed that the expression of CYP4A6, FADS1, FADS2, ALDH6A1 and CYP2C23 was significantly associated with the propionate metabolism process, suggesting that propionate metabolism may be an important factor mediating the hepatic lipid metabolism. Besides, the unsaturated fatty acids in muscle, rumen and liver also had a close correlation. CONCLUSIONS Overall, our data demonstrated that rumen microbial-driven metabolite from grazing lambs potentially regulates multiple hepatic lipid-related genes, ultimately affecting body fatty acid metabolism.

Abstract
Dry-ageing is a technique for developing characteristic dry-aged flavour through the interplay of dehydration, lipid oxidation and microbial activities. In this study, we tested the hypothesis that the extent of drying influences the metabolite profile and the final flavour of lamb using an "Age-and-Dry" regime; and that Rapid Evaporative Ionisation Mass Spectrometry (REIMS) fingerprinting can be used to discriminate the metabolic fingerprints of lambs due to ageing methods and dehydration levels. Lamb loins (n = 60) were dehydrated with low (12%), medium (17%) and high (22%) weight losses and compared with the wet-aged equivalents using REIMS and evaluated by 12-member sensory panel. Orthogonal projection to latent structures-discriminant analysis (OPLS-DA) models based on 1400 tentatively identified m/z features were obtained for ageing methods (Q2 > 0.95) and dehydration levels (Q2 > 0.82) with high discrimination accuracy. Increased concentrations of dipeptides and metabolites associated with energy metabolism were observed in aged-and-dried lamb meat which supports the umami and savoury taste perceived by the sensory panel. A reduced concentration of polyunsaturated fatty acids with more aldehydes was observed in aged-and-dried lamb meat contributing to the nutty, roasted, and fatty flavour notes detected by the sensory panellists in these samples compared to the wet-aged. SIGNIFICANCE: Outcomes of this study demonstrated that REIMS can be used to accurately discriminate between different ageing methods and dehydration levels of meat, and the compounds that are associated with lamb flavour. The implications of this finding include: (1) the metabolite concentrating effect of dehydration and the associated effect on aged lamb flavour determined in this study could be used to tailor the processing of dry-aged lamb to deliver specific flavour outcomes in an industrial setting; (2) the ability of REIMS to rapidly detect differences in the aged lamb flavour due to dehydration effect would improve the quality of dry-aged meat and the efficiency with which it can be industrially produced. Thus, REIMS can be used as a rapid authentication and quality prediction tool for different ageing regimes and flavour for the meat industry.

Abstract
Thirty-two male Hu lambs (32.31 ± 3.31 kg; 4-months-old) were randomly assigned to four treatments: (1) control (CON), (2) selenium-enriched yeast (SeY, 0.8 mg/kg), (3) selenized glucose (SeGlu, 0.8 mg/kg), and (4) sodium selenite (SS, 0.8 mg/kg) to evaluate their effects on Hu lamb production and slaughter performance, antioxidant capacity, hematological parameters, meat quality and shelf-life. The production and slaughter performances were not different (P > 0.05) among treatments. SeGlu and SeY increased (P < 0.05) the total antioxidant capacity in serum and muscle selenium content while decreasing (P < 0.05) the malondialdehyde (MDA) contents both in serum and muscle. SeGlu extended muscle shelf-life by 7.7 h compared with CON and decreased (P < 0.05) yellowness (b*) and lightness (L*) in meat stored for 24 h. In summary, the effects of SeGlu were similar to those of SeY and better than those of SS in improving serum and muscle antioxidant status, prolonging muscle shelf-life, and increasing selenium deposition in muscle.

Abstract
The aim of this study was to evaluate the changes of ultrasound-assisted thawing on lamb meat quality and differential metabolite profiles during refrigerated storage. Compared with flow water thawing (FW), pH, a*, C*, and sulfhydryl content of lamb were significantly increased, while L*, drip loss and cooking loss were significantly decreased after ultrasound-assisted thawing (UT). On day 1 (UT1 and FW1) and day 7 (UT7 and FW7) in the UT and FW groups, principal component analysis explained 42.22% and 39.25% of the total variance. In this study, 44 (UT1 and FW1) and 47 (UT7 and FW7) differentially expressed metabolites were identified, including amino acids, carbohydrates and their conjugates, nucleic acids, carbonyl compounds and others. The results of this study provide data to clarify the differences between UT and FW, and lay a foundation for the application of ultrasound-assisted thawing in the meat industry.

Abstract
The study aimed to identify the effects of birth time, birth weight, and the time to first grooming on the time to first successful stand up and sucking of the pure and crossbred native lambs. Data were recorded from pure (22 B-Bafra and 20 AKK-Akkaraman) and crossbred (19 BA F1 (B × AKK) and 13 BA B1 (B × F1)) lambs during the first 3 h after delivery. The time to first successful stand up of lambs was significantly affected by the birth time (P = 0.045), the time to first grooming (P = 0.000), and the time to first successful sucking (P = 0.000). Genotype significantly affects the time to first successful stand up of the lambs born at night (P = 0.000), low birth weight (P = 0.042), the time to first grooming (short, P = 0.001, and prolonged, P = 0.019), and the time to first successful sucking (early, P = 0.041, and late, P = 0.005). Data demonstrated that the time to first successful stand up affected the time to first successful sucking. The time to first successful stand up was longer for the lambs born at night, with low birth weight, and was affected by the time to first grooming, especially for the B lambs. Consequently, it should be given particular importance to the care of lambs born at night with low weight and exposed to mismothering.

Abstract
The present study aimed to investigate the effect of dietary supplementation with Allium mongolicum Regel extracts on the 4-alkyl-branched fatty acid deposition and meat quality during storage. Small-tailed Han sheep were divided into four groups (n = 15) and fed for 75 days with a basal diet (CK), CK supplemented with A. mongolicum Regel powder (AMR), A. mongolicum Regel water-soluble extract (AWE), or A. mongolicum Regel ethanol-soluble extract (AFE). The results revealed that both AMR and AWE diets decreased the 4-alkyl-branched fatty acids content in longissimus thoracis. Diet × storage time interactions were observed for acid value (AV), peroxidase (POx), glutathione peroxidase (GSH-Px), and total volatile base nitrogen (TVB-N). Patterns of change for AV, POx, and GSH-Px over time leading to the interactions were not readily apparent and changes were more governed by main effects. Dietary supplementation with AMR and AWE increased the total antioxidant capacity, total superoxide dismutase, and inhibited total bacteria counts compared to those in the CK lambs. The AWE diet also decreased the yellowness and hue angle. Overall, A. mongolicum Regel and its extracts could be used as a source of natural bioactive compounds in the lambs' diet to extend the storage time of their meat.

Abstract
Twenty-two lambs were used to determine their locomotor activity during lactation, and its circadian rhythm, based on data collected by actigraphy; the relationships among lambs were also measured calculating their proximity and distance. Lambs were fitted with Bluetooth-enabled (BT) accelerometers during weeks 1 and 4 of age, and data were downloaded as activity counts at 1-min intervals (Vector Magnitude, VM). Sensors were programmed as receivers and as beacons of the BT signal to calculate proximity (min/h) and distance (m) to another lamb. For each week, mean daily VM was calculated at hourly intervals. Circadian rhythms in VM were graphed by fitting the time-series measurements of each lamb to the cosine curve of a 24-h activity rhythm. Week of lactation and lamb sex had a significant (P < .05) effect on VM. Lambs had a higher (P < .05) VM (counts/min ±S.E.) in week 1 (154 ± 13) than in week 4 (117 ± 4), and female (113 ± 10) were more active (P < .01) than male lambs (113 ± 10). Twin lambs spent more time (P < .001) close to its sibling than to another lambs. Lamb activity followed a 24-h rhythm in week 4, only. In conclusion, actigraphy demonstrated that circadian rhythms in activity were not present in the first week of life, and twin-born lambs had stronger associations with their littermates than did singletons with other lambs, which reflected the strong bond that is established between twin lambs.

Abstract
ABSTRACT Heterocyclic amines (HCAs), which are known carcinogens in thermally processed foods, were investigated in roast lamb patties under various time and temperature conditions. HCAs in lamb products roasted at some temperatures increased with roasting time. An exponential model with a time factor fit well for the production of HCAs. The mean pH and cooking loss at various temperatures were also determined. The mean pH decreased as the temperature increased. Coreopsis extract was added to lamb patties roasted at 230°C for 15 min per side. The amount of coreopsis extract added had a significant effect on HCA development. A weak positive relationship was observed between the antioxidant activity of the lamb patty with the coreopsis extract and the inhibitory effect of coreopsis extract on various HCAs, with a correlation coefficient of 0.14 to 0.44 (P > 0.05). Coreopsis extract containing flavonoids can be a beneficial additive for production of barbecue meat. HIGHLIGHTS

Abstract
The objective of this study is to know the growth and developmental traits of Norduz lambs and to determine the factors influencing the growth and developmental traits and their contribution to this influence. The lambs were weighed at intervals of 30th days to the 180th day after birth. As a result of weighing, the mean values of live weight on the 30th, 60th, 90th, 120th, 150th, and 180th day were obtained: 11.63 ± 0.24, 17.29 ± 0.35, 24.51 ± 0.51, 31.92 ± 0.62, 34.39 ± 0.70, and 36.13 ± 0.80 kg, respectively. According to the results of the GLM analysis, it was found that maternal age had a significant (p < 0.01) effect on live weight on day 60th and a significant (p < 0.05) effect on live weight on days 90th and 180th. It was found that there was a difference between maternal age groups in terms of lamb live weight gain. The influence of birth type on live weight on days 30th and 60th was highly significant (p < 0.001), and the influence on live weight on day 90th was significant (p < 0.01). The effect of sex on live weight was not significant at all ages (p > 0.05). The linear effects of main weight on live weight on day 30th were highly significant (p < 0.001), and on live weight on day 60th were significant (p < 0.01). It was found that the linear effects of lamb birth weight on all ages were highly significant (p < 0.001). In the study, the live weight gains were determined between 0 and 30, 0 and 60, 0 and 90, 0 and 180, and 90 and 180 days. The live weight gains were 236.97 ± 5.77, 212.90 ± 4.87, 222.16 ± 5.02, 175.57 ± 4.12, and 128.96 ± 4.71 g, respectively. It was found that maternal age had a significant effect at the level of p < 0.01 between 0 and 60 days and p < 0.05 between 0 and 90 days. While the effect of mode of birth on live weight gain between 0 and 30 and 0 and 60 days was highly significant (p < 0.001), the effect on live weight gain between 0 and 90 days was found to be significant (p < 0.01). The effect of sex was not significant (p > 0.05) in all ranges.

Abstract
In comparison to more traditional methods of determining food authenticity, such as gas chromatography analysis, the primary advantages of DART-HRMS include its high speed and throughput of analysis. This study used a non-targeted metabolomics method based on real-time high-resolution mass spectrometry combined with chemometric analysis to distinguish lamb samples from four regions. Orthogonal least squares-discriminant analysis revealed a distinct difference between these four lamb regions. The potential markers were chosen based on the variable's importance in projection values, variance, and fold change. A total of 79 markers were identified using the matching chemistry database. These markers differed significantly between lambs in four regions according to heatmap analysis. The linear discriminatory analysis model had an initial classification rate of 100.0% and a cross-validation accuracy of 82.50% on the identified markers. The research demonstrates that DART-HRMS can perform a rapid authentication evaluation of lamb samples.

Abstract
With the aim to define an objective threshold for consumer satisfaction, this study investigated the relationship between lamb particle size data and consumer scores for tenderness, juiciness, flavour and overall liking (sensorial properties). Data were sourced from the longissimus lumborum muscles of 273 Australian Merino lambs, these being aged for 5-d and then analysed for particle size and sensorial properties - the latter using untrained consumer sensory panels. Pearson's correlation and principal component analyses identified no significant relationship between particle size and consumer sensory scores. Linear regression models found the sensorial properties of lamb could not be predicted using particle size, indicating no univariate relationship. Further, a backwards stepwise regression analysis found there to be no multivariate or univariate relationship between the sensorial properties of lamb and its particle size. These findings demonstrate that there is little value in defining a particle size threshold for consumer satisfaction based on the sensorial properties of lamb.

Abstract
Assurance of food quality and allied farming systems is increasingly sought by consumers and food processors. Yet, there are no validated analytical approaches for food-based verification of farming systems. Rapid evaporative ionisation mass spectrometry (REIMS) is an emerging analytical tool that can provide sufficient details to meet this need. M. Longissimus lumborum of 10 groups of lambs (n = 140) from 3 farms, varying by breed, sex, and forage type, were measured using REIMS fingerprinting. Modelling of features detected by REIMS could discriminate for most comparisons of sex (including castration status), breed, and diet. Tentative identification suggested that lipids, hormone-related compounds, amino acids and dipeptides were the main discriminatory features. Several REIMS features were correlated with pH and shear force in Merino lambs. REIMS was able to detect features related to breed, sex and feed in lamb meat, suggesting that these characteristics can be independently measured using rapid metabolic fingerprinting.

Abstract
Understanding the effects of weaning on the changes of digestive function could help to design efficient intervention strategies for promoting the development of the lamb during the early stages of life. In this study, 24 lambs were divided into two groups (control group, lambs were not weaned; and weaning group, lambs were weaned at 21 days of age). The growth, nutrient digestion, gastrointestinal enzyme activity, plasma biochemical indicators, and intestinal microbiota at 7-49 days were determined, as well as the impact of early weaning. The nutrient digestion changed rapidly with age, especially at 14-28 days (p < 0.05). Weaning reduced the dry matter (DM), crude protein (CP), and ether extract (EE) intake and digestion, but increased the starch, neutral detergent fiber (NDF), and acid detergent fiber (ADF) intake and digestion (p < 0.05). Weaning did not affect the overall jejunal microbiota (p > 0.05), but affected the relative abundance of certain bacteria taxa (p < 0.05). Lactic acid-producing bacteria, such as Olsenella, Bacillus, Sharpea, and Bifidobacterium are closely related to CP or EE digestion and growth performance (p < 0.05). In summary, we delineated the pattern of nutrient digestion and intestinal microbiota development in young lambs, and the impact of early weaning.

Abstract
This study aimed to investigate the effect of dietary high doses of chromium-methionine (CrMet) supplementation on blood hemato-biochemical parameters and growth performance of finishing lambs reared under warm condition with average temperature-humidity index (THI) of 85.8 unit. Fifteen male lambs (31.9 ± 1.2 kg) fed with either un-supplemented diet (CON) or supplemented with 1.5 (Cr1.5) and 3 (Cr3) mg of Cr/kg dry matter (DM) for 8 weeks. The results showed that high levels of supplemental Cr had no negative impacts on red (RBC) and white blood cells (WBC). Blood total antioxidant capacity (TAOC) tended to be higher in CrMet-fed lambs than those of CON (P < 0.1). Serum malondialdehyde (MDA), as a lipid peroxidation marker, was, respectively, 20.24 and 22.1%, lower in lambs given 1.5 and 3 mg of chromium comparing those of CON (P < 0.05). Moreover, erythrocyte glutathione peroxidase (GSH-PX, U/dL) displayed higher activity in Cr3 (421.2) group than those of CON (334.6) and Cr1.5 (351.2) groups (P < 0.05). Accordingly, GSH-PX activity per gram hemoglobin (U/gHb) was 45.9% greater in lambs of Cr3 than the CON (P < 0.05). Furthermore, feeding 3 mg of Cr led to increased erythrocyte superoxide dismutase (SOD) activity (P < 0.05): as such, SOD was 1193.1, 1281.5, and 1433.0 U/gHb in CON, Cr1.5, and Cr3, respectively. Chromium supplementation linearly decreased serum iron concentration (P < 0.05), but neither blood calcium, phosphorous, copper, zinc, and glucose concentrations nor aspartate aminotransferase and alanine aminotransferase activities were affected by supplemental CrMet. In comparison with CON (1250), lambs in Cr1.5 (1199) and Cr3 (1192) groups had lower daily feed intake (g/d, P < 0.01). In addition, feed to gain ratio was 21.5% lower in the Cr3 group than the control (P < 0.05). Collectively, these findings suggest that feeding summer-exposed finishing lambs with 3 mg of Cr/kg DM improves blood antioxidant status and feed to gain efficiency without adverse effects on lambs' health and metabolism.

Abstract
Delta-Like Non-Canonical Notch Ligand 1 (DLK1) is one of the key genes involved in the development of muscle, liver, pancreas, and lung cells; adipocytes production; and the improvement of digestion, growth performance, and meat quality. It has been documented that fennel is effective on increasing the DLK1 gene (DLK1) expression in the testis, liver, and muscle tissues, which may consequently have important implications for sheep production. Hence, the aim of the current investigation was to evaluate the fennel seed powder's effect on DLK1 expression in testis, liver, and humeral muscle tissues in growing lambs. For the purpose of this study, 30 male Kermani sheep were fed with three different group of diets (number of animals in each group was 10), including control (without any fennel seed powder), treatment 1 (with 10 g/kg of dry matter (DM) fennel seed powder), and treatment 2 (with 20 g/kg of DM fennel seed powder) during a 3-month period. Thereafter, total RNA was extracted, cDNA was synthesized, and Real-Time PCR was performed. The addition of fennel seed powder (in the treatment 1 and treatment 2 groups) in the growing lambs diets consequently resulted in greater expression of DLK1 in both the liver and humeral muscle tissues compared to the testis tissue (P < 0.05). Furthermore, the increased DLK1 expression was higher in the tissue of humeral muscle (P < 0.05) in comparison to the other two tissues. As well, the concentration of blood testosterone was greater (P < 0.05) for the animals fed with fennel powder compared to growing lambs fed with the control diet. However, the concentrations of blood liver enzymes, including serum glutamic oxaloacetic transaminase (SGOT) and serum glutamic pyruvic transaminase (SGPT), decreased by the addition of 10 g/kg DM fennel to diets of lambs compared to the control diet (no fennel). Therefore, it can be concluded that using fennel seed powder in the diet of growing lamb by affecting the expression of DLK1, can improve the concentrations of blood testosterone, SGOT, SGPT, and muscle structure (increased mass of muscle and size of muscle fiber).

Abstract
The present study aimed to comparatively characterize the ruminal epithelial protein expression profiles in lambs fed ewe milk or milk plus starter diet using proteome analysis. Twenty new-born lambs were randomly divided into a group receiving ewe milk (M, n = 10) and a group receiving milk plus starter diet (M + S, n = 10). From 10 d old, M group lambs remained with the ewe and suckled ewe milk without receiving the starter diet. The lambs in the M + S group were separated from the ewe and received starter feed. All lambs were slaughtered at 56 d old. Eight rumen epithelia samples (4 per group) were collected to characterize their protein expression profiles using proteomic technology. Proteome analysis showed that 31 upregulated proteins and 40 downregulated proteins were identified in the rumen epithelium of lambs in response to starter diet supplementation. The results showed that starter feeding regulates a variety of biological processes in the epithelium, especially blood vessel development and extracellular matrix protein expression. Meanwhile, the expression of proteins associated with synthesis and degradation of ketone bodies, butanoate metabolism, and citrate cycle signaling transduction pathway were upregulated in the group with starter diet supplementation, including 3-hydroxy-3-methylglutaryl coenzyme A synthase (HMGCS2, fold change [FC] = 1.93), 3-hydroxybutyrate dehydrogenase 1 (BDH1, FC = 1.91), and isocitrate dehydrogenase 1 (IDH1, FC = 8.12). The metabolic processes associated with ammonia detoxification and antioxidant stress were also affected by starter diet supplementation, with proteins, microsomal glutathione S-transferase 3 (MGST3, FC = 2.37) and IDH1, linked to the biosynthesis of glutamate and glutathione metabolism pathway being upregulated in the group with starter diet supplementation. In addition, starter feeding decreased the expression of Ras-related protein rap-1A (RAP1A, FC = 0.48) enriched in Rap1 signaling pathway, Ras signaling pathway, cyclic adenosine monophosphate (cAMP) signaling pathway, and mitogen-activated protein kinase (MAPK) signaling pathway. In summary, starter feed supplementation changed the expression of proteins related to energy production, ammonia detoxification, antioxidant stress, and signaling pathways related to proliferation and apoptosis, which facilitates the rumen epithelia development in lambs. The results provide new insights into the molecular adaptation of rumen epithelia in response to starter diet supplementation at the protein level in lambs.

Abstract
This paper focuses on improving the sensory, health attributes and meat yield of beef and lamb meats. Value for meat is defined as the weight of meat × price/kg received with price linked to eating quality. To maximise value across the supply chain, accurate carcass grading systems for eating quality and yield are paramount. Grading data can then be used to target consumers' needs at given price points and then to tailor appropriate production and genetic directions. Both the grading methodologies and key phenotypes are complex and still under intensive research with international collaboration to maximise opportunities. In addition, there is value in promoting the health aspects of red meats served as whole trimmed meats. Typically, the total fat content is relatively low (less than 5%) and for forage systems, they deliver a very significant content of long-chain n-3 fatty acids. Further research is needed to clarify the healthiness or otherwise of ground beef served as burgers given the fat content is typically 20% or more. It is important to continue to improve the feedback to producers regarding the quantity and quality of the products they produce to target new value opportunities in a transparent and quantitative manner.

Abstract
The aim of this study was to evaluate the effects of partial replacement of forage and concentrate with pomegranate pulp silage (PPS) and dried pomegranate seed pulp (PSP) on performance, dry matter intake (DMI), and carcass characteristics of fattening Mehraban lambs. Twenty-four male lambs (mean body weight 27.0 ± 3.5 kg) were fed with three isonitrogenous and isoenergetic diets (n = 8 per diet), consisting of a control diet, a PPS diet containing 27.2% pomegranate pulp silage, and a PSP diet containing 31.4% dried pomegranate seed pulp. The experimental diets were fed ad libitum as total mixed rations for 65-day fattening period, on two meals per day, and then the growth performance, feed intake, and carcass characteristics were determined. The initial BW, final BW, average daily gain (ADG), and feed conversion ratio (FCR) were not different among the experimental diets. The amount of DMI in PSP diet was higher than that in the control diet (P = 0.023) but was not different between the control and PPS diets. There was no significant difference among diets for carcass characteristics. Using PPS and PSP in the diets decreased (P < 0.05) the kidney fat, but had no impact on the heart, liver, kidneys, spleen, and lungs. The results showed that PPS and PSP could be used to replace part of the diet for fattening lambs, while decreasing the dietary cost without having any negative effects on animal performance.

Abstract
The aim of the current study was to evaluate the impact of carnosic acid (CA), selenised yeast (YSe) and selenate (VISe) supplemented to diets, including fish oil (FO) and rapeseed oil (RO), on the content of fatty acids, total cholesterol (TCh), tocopherols and malondialdehyde in the fat located between the thigh muscles and the heart in lambs. Twenty-four male Corriedale lambs were divided into 4 groups of 6 animals. Animals were fed a diet with FO and RO (the control diet) or experimental diets containing RO, FO and CA with/without Se (as YSe or VISe). The experimental diets without/with YSe or VISe changed concentrations of fatty acids in the fat and heart compared to the control. All experimental diets increased the levels of c11c14C20:2, c5c8c11c14C20:4, c5c8c11c14c17C20:5 and the sums of long-chain polyunsaturated fatty acids (LPUFA) and conjugated linoleic acid isomers in the fat compared to the control. The experimental diet containing YSe or VISe increased the content of Se, TCh, c11c14C20:2, c8c11c14C20:3, c5c8c11c14C20:4, c5c8c11c14c17C20:5, c7c10c13c16c19C22:5, c4c7c10c13c16c19C22:6 and the concentration sum of n-3LPUFA, n-6LPUFA and tocopherols in the heart in comparison with the control diet and the diet containing only CA. Experimental diets reduced the concentration of malondialdehyde in the fat and heart in comparison with the control diet. Our dietary intervention has great potential for future practical and commercial implementations.

Abstract
A total of 290 lambs in 29 small flocks were studied from October to January 2020, conducted in a semi-extensive rearing system. The objective was to identify by the microscopic morphology of oocysts the Eimeria species that infect lambs in a steppe region of eastern Algeria, as well as to evaluate on these parasites two clinical indicators of diarrhea (Disco) and anemia (FAMACHA©) used in targeted selective treatments against gastrointestinal nematodes (GIN). This present work completes the previous evaluations carried out in steppe conditions in our laboratory on GIN and cestodes. All these enteric parasites can influence these indicators. They constitute by their morbidity and their presence, alone or concomitantly, a factor determining or aggravating diarrhea, the main problem of sheep farming. The prevalence of Eimeria sp. oocysts was 56.2%. Eight species were identified: E. intricata (50.3%), E. bakuensis (43.6%), E. ovinoidalis (27.6%), E. crandallis (23.9%), E. parva (20.9%), E. weybridgensis (13.5%), E. pallida (9.2%) and E. ashata (6.7%). Unlike GIN and Cestodes where only Disco was affected, E. ovinoidalis was strongly affecting both indicators, while E. crandalis was slightly less affecting. This confirms the pathogenicity of these two species and suggests that their presence should also be taken into consideration.

Abstract
The beneficial effects of polyphenol intake such as improved nitrogen retention make them interesting feed supplements for ruminants. In contrast, dietary polyphenols may have adverse effects on the bioavailability of nutrients and palatability of the feed which might impair growth performance. The beneficial and adverse effects might differ between different ruminant species as well as between direct intake and intake of polyphenol metabolites via suckling when supplemented to lactating dams. This study investigated the effects of maternal and direct polyphenol supplementation via grape seed extract in sheep and goats on growth, slaughter performance, meat quality and fatty acid profile. The diet of lactating East Friesian Dairy sheep (n = 11) and Saanen goats (n = 9) and of their lambs (n = 16) and kids (n = 13), respectively, was supplemented either with grape seed extract (dams: 7.4% and offspring: 5.6%, P) or without (C). This resulted in four groups per species, namely maternalC/offspringC, maternalC/offspringP, maternalP/offspringC, and maternalP/offspringP. In lambs but not in goats, maternalP increased average daily gain and improved slaughter performance whereas offspringP had no effect. Maternal and offspring diet did not affect physicochemical meat quality in lambs, but direct intake of grape seed extract increased rancid aroma of burger patties. In goat kids, both maternal and offspring diets slightly affected meat colour. While groups of meat fatty acids (FAs) were not affected by diet in both species, maternalP in lambs as well as maternalP and offspringP in goat kids increased the meat n-6 to n-3 FA ratio compared to the respective control groups. In goat kid but not in lamb meat, direct intake of polyphenols affected the proportions of several rumen biohydrogenation intermediates. In conclusion, grape seed extract can be applied in both the maternal and offspring diets in sheep and goats while maintaining or even improving offspring growth performance and carcass quality. Only few species-specific effects of grape seed extract supplementation were observed, and additive effects were scarce. Larger studies are required to confirm the observed species-specific growth response to maternalP during lactation. The underlying reasons for this differential response need to be further evaluated.

Abstract
The objective of this study was to determine whether the addition of grape residue flour (GRF) in the diet of suckling lambs would improve their health and consequently enhance their growth. We used 48 lambs, 30 days of age divided into four treatments with four repetitions each, with each repetition consisting of three animals. The groups were identified as follows: G-0%, used as a control (without GRF) and G-0.5%, G-1% and G-2% referring to treatment with grape residue flour in doses of 0.5%, 1%, and 2% of inclusion in the concentrate, respectively. Lambs in groups G-1% and G-2% had higher final body weights, weight gain and average daily gain (ADG) compared to the other groups. GRF dietary supplementation had good antioxidant potential, being able to stimulate glutathione S-transferase (GST) activity and consequently reduce levels of reactive oxygen species (ROS) in lambs that consumed the highest dose of GRF (G-2%). GRF supplementation improved humoral responses, with increased serum levels of heavy-chain and light-chain immunoglobulins; however, there was a reduction in serum ceruloplasmin levels in these lambs. We observed higher concentrations of glucose and triglycerides in lambs in the 2% group. There were lower lymphocyte counts in lambs that received GRF. Lambs supplemented with the highest doses of GRF (G-1% and G-2%) had lower total bacterial counts in the feces. We conclude that the use of GRF in the supplementation of suckling lambs improved animal health, as it stimulated the antioxidant and immune systems and consequently favored their growth.

Abstract
Early weaning is usually applied to improve the reproductive efficiency of sheep in mutton production, while the development of rumen is of vital importance for sheep weaning age. Translationally controlled tumor protein (TCTP) is a highly conserved protein which participates in multiple tissue and organ development. Thus, we hypothesized that TCTP was involved in sheep rumen development. Histological analyses of sheep rumen epithelium showed that the epithelium formed tough shaped papillae without growing from birth to day 15 of age, after which it rapidly developed to functional epithelia on day 45 of age. We then found TCTP expressed in stratum basale, stratum spinosum and stratum granulosum of rumen epithelium. TCTP protein expression remained at a relative low level from day 0 to day 15 of age, it then significantly increased on day 30 (p < 0.05) and gradually decreased until day 60. Furthermore, to explore the role of TCTP in sheep rumen and its regulation, we found the ratio of Ki67 positive cell in stratum basale cells followed the similar pattern as the expression of TCTP. We also found the ratio of acetate:propionate in rumen fluid decreased from day 30 to day 60 of age (p < 0.05). To conclude, our data indicated that TCTP participated in rumen papillae growth by promoting rumen stratum basale cell proliferation.

Abstract
Aim of study was to investigate the relationship of EUROP carcass fatness and conformation classes with carcass and meat quality characteristics in thin-tailed (Kivircik) and a fat-tailed (Kangal Akkaraman) lambs. A total of 96 lamb carcasses (48 Kivircik and 48 Kangal Akkaraman breed) were examined. Distribution of carcasses in conformation and fatness classes were more limited in Kangal Akkaraman carcasses. More accurate predictions were obtained in Kivircik lambs compared to Kangal Akkaraman lambs in terms of backfat thickness, kidney knob and channel fat percentage, longissimus thoracis muscle area, weights of high-value carcass joints, weights of tissues in the hind limb and muscle/bone ratio. EUROP classification system was not appropriate for predicting meat quality in thin-tailed and fat-tailed lambs. The combination of EUROP fatness and conformation classes with cold carcass weight can be used to predict weights of high-value carcass joints and weights of hind limb tissues.
