Abstract
BACKGROUND Nitrite has been involved in many food processing techniques and its excessive consumption is closely related to the development of different diseases. Therefore, highly sensitive detection of nitrite is significant to ensure food safety. RESULT This study presents a simple and novel strategy for the highly sensitive detection of nitrite in food using paper-based analytical devices (PADs). In this proposed strategy, the nitrite present in the sample undergoes efficient diazotization when initially mixed with sulfanilamide solution before reacting with N-(1-naphthyl) ethylenediamine dihydrochloride (NED) coated on the detection region of the PAD, leading to the maximum production of colored azo compounds. Specifically, within the concentration range of 0.1-20 mg/L, the LOD and LOQ for the nitrite assay using the premixing strategy are determined as 0.053 mg/L and 0.18 mg/L, respectively which significantly surpass the corresponding values of 0.18 mg/L (LOD) and 0.61 mg/L (LOQ) achieved with the regular Griess reagent analysis. SIGNIFICANCE The study highlights the critical importance of the premixing strategy in nitrite detection. Under optimized conditions, the strategy demonstrates an excellent limit of detection (LOD) and limit of quantification (LOQ) for nitrite detection in eight different meat samples. In addition to its high precision, the strategy is applicable in the field of nitrite analysis. This strategy could facilitate rapid and cost-effective nitrite analysis in real food samples, ensuring food safety and quality analysis.

Abstract
In this paper, highly fluorescent carbon dots were synthesized from sodium ascorbate and polyethyleneimine at room temperature (R-CDs). The proposed green synthesis method was energy-saving, environmentally friendly and easy online. R-CDs exhibit an optimal emission peak of 490 nm under excitation at 380 nm with a quantum yield of 32 %. R-CDs morphology, composition, and properties were characterized using TEM, FTIR, XPS, UV-vis and fluorescence spectroscopy. The study revealed that nitrite quenched the fluorescence of R-CDs under acidic conditions. Subsequently, this discovered reaction of R-CDs and nitrite was combined with flow-injection technology, and a simple, precise and automatic fluorescence strategy for nitrite determination was accomplished. The response to nitrite was linear in 5-300 μg·L-1 concentration range and the limit of detection was 2.85 μg·L-1 (3.3 S/k). This method was applied to nitrite determination in Sichuan pickles during the pickling process and results were consistent with the standard method, demonstrating its feasibility in practical applications.

Abstract
In this study, a screen-printed electrode (SPE) modified with cobalt oxide nanoparticles (Co3O4 NPs) was used to create an all-solid-state ion-selective electrode used as a potentiometric ion sensor for determining nitrate ion (NO3-) concentrations in aquaculture water. The effects of the Co3O4 NPs on the characterization parameters of the solid-contact nitrate ion-selective electrodes (SC-NO3--ISEs) were investigated. The morphology, physical properties and analytical performance of the proposed NO3--ion selective membrane (ISM)/Co3O4 NPs/SPEs were studied by X-ray diffraction (XRD), energy-dispersive spectroscopy (EDS), transmission electron microscopy (TEM), scanning electron microscopy (SEM), electrochemical impedance spectroscopy (EIS), cyclic voltammetry (CV), potentiometric measurements, and potentiometric water layer tests. Once all conditions were optimized, it was confirmed that the screen-printed electrochemical sensor had high potential stability, anti-interference performance, good reproducibility, and no water layer formation between the selective membrane and the working electrode. The developed NO3--ISM/Co3O4 NPs/SPE showed a Nernstian slope of -56.78 mV/decade for NO3- detection with a wide range of 10-7-10-2 M and a quick response time of 5.7 s. The sensors were successfully used to measure NO3- concentrations in aquaculture water. Therefore, the electrodes have potential for use in aquaponic nutrient solution applications with precise detection of NO3- in a complicated matrix and can easily be used to monitor other ions in aquaculture water.

Abstract
Various techniques for the determination of nitrite and/or nitrate developed during the past 15 years were reviewed in this article. 169 references were covered. The detection principles and analytical parameters such as matrix, detection limits and detection range of each method were tabulated. The advantages and disadvantages of various methods were evaluated. In comparison to other methods, spectrofluorimetric methods have become more attractive due to its facility availability, high sensitivity and selectivity, low limits of detection and low-cost.

Abstract
A new kinetic method has been developed for the determination of nitrite in fruit juice samples. The method is based on the catalytic effect of nitrite with the oxidation of Nile Blue A (NBA) by KBrO(3) in the sulfuric acid medium. The optimum conditions obtained are 1.2 mM sulfuric acid, 0.034 mM of NBA, 2.8 × 10(-3) M KBrO(3), reaction temperature of 20 °C, and reaction time of 100 s at 595.5 nm. Under the optimized conditions, the method allowed the quantification of nitrite in a range of 0.2-800 μg/mL with a detection limit of 0.02 μg/mL. The method was applied to the determination of nitrite in 15 brands of fruit juice samples.

Abstract
A simple, rapid, low cost and accurate determination using flow injection spectrophotometry with a home made flow cell detector, in combination with green LED and photodiode, had been developed for nitrite based on the Griess-Saltzman reaction, measuring the absorbance at 525 nm. The proposed system is able to monitor nitrite in freshwater samples at a throughput of 60 samples per hour with a relative standard deviation (%RSD) of less than 2.4% and a detection limit of <7 microg dm(-3). The calibration graph was linear between 0.010 - 1.0 mg dm(-3).

Abstract
A nitrate-selective electrode based on a recently synthesized bis(2-hydroxyanil)acetylacetone lead(II) complex [(haacac)Pb] has been developed. Among different compositions studied, a membrane containing 30.7% poly(vinyl chloride) (PVC), 61.3% dibutyl phthalate (DBP) as a plasticizer, 3% methyltrioctylammonium chloride (MTOAC) as a cationic additive and 5% ionophore (all w/w) exhibited the best potentiometric response toward nitrate ion in aqueous solutions. The potentiometric response of the electrode was linear with a Nernstian slope of -58.8 mV decade(-1) within the NO3- concentration range of 2 x 10(-5)-1 x 10(-1) mol dm(-3). The response time of the electrode was < or =10 s over the entire linear concentration range of the calibration plot. The electrode is suitable for use within the pH range of 5.3-11. The selectivity coefficients for the proposed electrode were improved for some interferences, when compared with those of commercially available nitrate-selective electrodes.
