Carcass characteristics, meat quality, sensory palatability and chemical composition of Thai native cattle grazing in lowland and Phu Phan mountain forest

OBJECTIVE

The aim of this study was to assess the effect of Thai native cattle grazing in the lowland or mountain forest on carcass characteristics, meat quality, sensory palatability, and chemical composition.

METHODS

Twelve male Thai native cattle with an average weight of 110±10 kg are allowed to be grazing in the lowland or Phu Phan mountain forest during the rainy season in northeastern Thailand.

RESULTS

The carcass characteristics, meat pH, and meat color were unaffected by treatment (p>0.05). The boiling loss was lower in the cattle grazing on the mountain forest (p = 0.027). The cattle grazing in the mountain forest had increased shear force (p = 0.039), tenderness (p = 0.011), and flavor intensity (p = 0.003). The protein and fat were higher (p<0.001 and p = 0.035, respectively) in cattle grazing in the mountain forest. The different grazing systems of the cattle had no effect (p>0.05) fatty acids in meat, except for capric acid (C10:0) and lauric acid (C12:0), which were higher (p = 0.046 and p = 0.049, respectively) when the cattle were grazing in the mountain forest. The different grazing systems did not influence (p>0.05) the unsaturated fatty acids in meat.

CONCLUSION

Thai native cattle grazing in the Phu Phan mountain forest in the rainy season improves meat quality, sensory evaluation, and chemical composition.

Exploring Consumer Preference towards the On-Farm Slaughtering of Beef in Germany: A Discrete Choice Experiment

Current production standards and communication campaigns about animal welfare in relation to beef strongly emphasise the "humane" rearing of cattle. Aspects such as transport and slaughtering conditions are often overlooked in both production standards and communications with consumers. Long transport routes and conventional slaughtering can cause significant stress to animals and have negative impacts on their welfare and on meat quality. On-farm slaughter can address these criticisms. Communicating the value of low-stress slaughtering conditions like on-farm slaughtering may offer significant sales potential for a premium market segment. In this study, we explore consumers' preferences and willingness to pay for beef that is slaughtered on-farm rather than in conventional abattoirs. We conducted an online survey (n = 400) in 2022, with a sample that is representative of the German population with respect to gender, age, income and education. Our survey included a discrete choice experiment for the purchase of minced beef, incorporating product attributes that influence purchase decisions. These included: price, information on the social, economic and environmental benefits of regional production, different production standards (conventional/organic) and information on on-farm slaughtering. Our findings indicate that consumers derive the highest utility from a low price, followed by information about on-farm slaughtering. Participants indicated a preference for information on high animal welfare over high beef quality. We conclude that highlighting on-farm slaughtering could be a significant benefit in marketing premium beef products.

For a Better Quality of Beef: The Challenge from Growing Livestock on Limited Grasslands with a Production-Consumption Balance Perspective

The growing population, the transition dietary towards animal-based products, and the preference for the brand of grass-feeding livestock are bringing increasing pressure on natural grasslands, especially for dry-land areas. The Xilingol League of China is famous for its free-range livestock product, however, overgrazing and herders' benefits damage are always serious issues for this semi-arid grassland region. This study focuses on the relationship between the supply of natural grassland and the consumption of free-range livestock in the Xilingol League, and this study employed the grassland carrying capacity as the index to judge the sustainability states and its trends of the local grass-feeding system. Satellite data production of net primary production was used for grassland production, statistical livestock data and the consumption model were used for actual forage consumption, and empirical key informant interview data were used to obtain a more comprehensive understanding. The results show that: (1) the natural grassland carrying capacity of the Xilingol League fluctuated, showing improvement from 2000 to 2021; (2) the grassland management needs to be more diversified in different regions with different natural conditions; and (3) while the demand for free-range, high-quality beef is increasing, attention should be paid to the carrying capacity of natural pastures and more consideration should be taken of the benefits of balancing the livelihood of herders, policy strategies, and the customers' preferences. Potential ways of doing this include employing technologies to improve livestock production, and further exploring and promoting the economic value of the free-range livestock and the geographical indication to get the economic-ecological win-win situation. The research framework and results would be beneficial to reveal the potential threats in pastoral areas and provide support for the optimization of the regional grass-feeding breeding system, especially in middle-income countries.

Morphometric and physical characteristics of Indonesian beef cattle

To assess their potential for beef production, this study describes the morphometrics, physical traits, and body weight of 1034 Indonesian beef cattle from eight breeds, namely Bali, Rambon, Madura, Ongole Grade, Kebumen Ongole Grade, Sasra, Jabres, and Pasundan. An analysis of variance in addition to cluster, Euclidean distance, dendrogram, discriminant function, stepwise linear regression, and morphological index analyses were performed to describe the differences in traits among breeds. The morphometric proximity analysis revealed two distinct clusters with a common ancestor, where the first cluster included Jabres, Pasundan, Rambon, Bali, and Madura cattle and the second included Ongole Grade, Kebumen Ongole Grade, and Sasra cattle, with an average suitability value of 93.20 %. This showed that the classification and validation methods can be used to distinguish breeds. The most important factor in estimating body weight was the heart girth circumference. Ongole Grade cattle had the highest cumulative index, followed by Sasra, Kebumen Ongole Grade, Rambon, and Bali cattle. A cumulative index value > 3 can be used as a threshold for determining the type and function of beef cattle.

Linking key husbandry factors to the intrinsic quality of broiler meat

Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Scale Difference from the Impact of Disease Control on Pig Production Efficiency

Simple Summary

This paper uses the data of fixed observation points in the country’s rural areas, the Data Envelopment Analysis model is used to calculate the production efficiency of pig farmers, which shows the efficiency level of pig breeding in the country. Then, the Tobit model is used to analyze that epidemic prevention and control has a positive effect on production efficiency. Finally, the threshold regression model was used to analyze the results: the effect of disease control on production efficiency was different under different breeding scales. When the breeding scale was less than 6.0002, the disease control had a negative impact on the production efficiency. When the breeding scale was greater than 12.9994, the disease control had a positive impact on the production efficiency. The research results of this paper not only help farmers to correctly understand the relationship between epidemic prevention and production efficiency, guide farmers to expand their breeding scale, and actively participate in epidemic prevention and control, but also provide a reference for the government to formulate policies according to different scales to guide farmers to carry out epidemic prevention and control.

Abstract

Epidemic disease prevention plays a critical role in ensuring the healthy development of livestock farming, and the subjective willingness of breeders can be affected by the cost of epidemic disease prevention. To correct the misconception that farmers regard the cost of disease control as an ineffective cost, and to promote the healthy development of the pig breeding industry, our study employed the data envelopment analysis super-efficiency model and panel threshold regression model to evaluate the combination of the cost of epidemic disease prevention and swine productivity using data collected from 1998–2018 across 30 provinces in China. The following results were obtained. (1) The cost of epidemic disease prevention generated a non-linear on swine productivity when the swine farming scale was limited; (2) When the number of animals at the beginning of the year was less than 6.0002, swine productivity was impacted negatively; (3) When the number of animals at the beginning of the year ranged between 6.0002 and 12.9994, the impact was insignificant; (4) A strong correlation was observed between the expenses of epidemic disease prevention and animal productivity when the number of animals at the beginning of the year exceeded 12.9994. These results indicate that publicity should be enhanced to elucidate the combination of epidemic disease prevention and swine productivity among breeders. In addition, the government should introduce relevant policies to encourage the development of large-scale pig farming, such as subsidies for the construction of large-scale farms and insurance.

Consumer Perception of Beef Quality and How to Control, Improve and Predict It? Focus on Eating Quality

Quality refers to the characteristics of products that meet the demands and expectations of the end users. Beef quality is a convergence between product characteristics on one hand and consumers’ experiences and demands on the other. This paper reviews the formation of consumer beef quality perception, the main factors determining beef sensory quality, and how to measure and predict beef eating quality at scientific and industrial levels. Beef quality is of paramount importance to consumers since consumer perception of quality determines the decision to purchase and repeat the purchase. Consumer perception of beef quality undergoes a multi-step process at the time of purchase and consumption in order to achieve an overall value assessment. Beef quality perception is determined by a set of quality attributes, including intrinsic (appearance, safety, technological, sensory and nutritional characteristics, convenience) and extrinsic (price, image, livestock farming systems, commercial strategy, etc.) quality traits. The beef eating qualities that are the most valued by consumers are highly variable and depend mainly on the composition and characteristics of the original muscle and the post-mortem processes involved in the conversion of muscle into meat, the mechanisms of which are summarized in this review. Furthermore, in order to guarantee good quality beef for consumers in advance, the prediction of beef quality by combining different traits in scenarios where the animal, carcass, and muscle cuts can be evaluated is also discussed in the current review.

Is beef quality affected by the inclusion of distiller grains in cattle diets?

This study aimed to analyze the effect of including increasing levels of distiller grains (DG) in beef cattle feeding diets on meat quality from an integral approach. To this end, we analyzed the meat from 36 yearling steers fed with four dietary treatments: 0DG (control corn-based diet), 15DG, 30DG, and 45DG (containing 15%, 30%, or 45% of DG on DM basis). Crude protein, ash, and fat contents of diets increased with DG level. The fatty acid profile of DG diets was reflected in the fatty acid profile of plasma samples. Feeding diets with DG had no effect on the biochemical parameters analyzed in plasma. In addition, it did not influence the water holding capacity, the muscle or fat color at 72 h post mortem or at retail display, or the contents of SFAs, MUFAs, and PUFAs in beef. The DG diets led to lower values of cooking loss. Meat from 15DG and 30DG showed greater percentage of troponin C and fragments of 30 to 27 kDa than meat from 45DG. Also, meat from 30DG showed the lowest values of Warner-Bratzler shear force. Hence, including up to 30% corn DG in beef cattle feeding diets had positive effects on meat quality.

Animal board invited review - Beef for future: technologies for a sustainable and profitable beef industry

The global consumption, notably in developing countries, and production of beef are increasing continuously, and this requires the industry to improve performance and to reduce the environmental impact of the production chain. Since the improvement in efficiency and the highest impacts occur at farm level, it is appropriate to focus on the profitability and environmental sustainability of these enterprises. In many areas of the world, beef production is economically and socially relevant because it accounts for a significant portion of the agricultural production and represents a vital economic activity in mountain and hill districts of many regions, where few alternatives for other agricultural production exist. Due to the important role in the agricultural and food economy worldwide, the future of the beef industry is linked to the reduction of ecological impacts, mainly adopting the agroecological mitigation practices, and the simultaneous improvement of production performances and of product quality. This review analyses the technical and managerial solutions currently available to increase the efficiency of the beef industry and, at the same time, to reduce its environmental impacts in response to the growing concerns and awareness of citizens and consumers.

Review: Improving the nutritional, sensory and market value of meat products from sheep and cattle

This paper focuses on improving the sensory, health attributes and meat yield of beef and lamb meats. Value for meat is defined as the weight of meat × price/kg received with price linked to eating quality. To maximise value across the supply chain, accurate carcass grading systems for eating quality and yield are paramount. Grading data can then be used to target consumers' needs at given price points and then to tailor appropriate production and genetic directions. Both the grading methodologies and key phenotypes are complex and still under intensive research with international collaboration to maximise opportunities. In addition, there is value in promoting the health aspects of red meats served as whole trimmed meats. Typically, the total fat content is relatively low (less than 5%) and for forage systems, they deliver a very significant content of long-chain n-3 fatty acids. Further research is needed to clarify the healthiness or otherwise of ground beef served as burgers given the fat content is typically 20% or more. It is important to continue to improve the feedback to producers regarding the quantity and quality of the products they produce to target new value opportunities in a transparent and quantitative manner.

Associations between gene polymorphisms and selected meat traits in cattle - A review

Maintaining a high level of beef consumption requires paying attention not only to quantitative traits but also to the quality and dietary properties of meat. Growing consumer demands do not leave producers many options for how animals are selected for breeding and animal keeping. Meat and carcass fatness quality traits, which are influenced by multiple genes, are economically important in beef cattle breeding programs. The recent availability of genome sequencing methods and many previously identified molecular markers offer new opportunities for animal breeding, including the use of molecular information in selection programs. Many gene polymorphisms have thus far been analyzed and evaluated as potential candidates for molecular markers of meat quality traits. Knowledge of these markers can be further applied to breeding programs through marker-assisted selection. In this literature review, we discuss the most promising and well-described candidates and their associations with selected beef production traits.

'Rotatinuous' stocking as a climate-smart grazing management strategy for sheep production

We aimed to evaluate the effect of different grazing management strategies on carcass characteristics traits, meat quality and CH₄ intensity and yield of lambs grazing Italian ryegrass pastures in Southern Brazil. A grazing trial was performed (2014 and 2015) in a randomized complete block design with two grazing management targets and four replicates. Treatments were traditional rotational stocking (RT), with pre- and post-grazing sward heights of 25 and 5 cm, respectively, and 'Rotatinuous' stocking (RN), with pre- and post-grazing sward heights of 18 and 11 cm, respectively. Castrated crossbred Texel and Polwarth lambs were used. Results indicated that diet cost per kg of dry matter (p = 0.001) and per hectare (p < 0.001) were lower for RN than for RT treatment. Final live weight (p = 0.022) and hot and cold carcass weight (p = 0.006) were greater for the RN treatment. All commercial cuts were greater for RN than for RT treatment. The RN treatment presented greater (p < 0.001) production of carcass, edible food and crude protein. Feed efficiency and feed cost conversion were better for RN than for RT treatment. CH₄ intensity per kg of carcass, edible food and crude protein gain were 2.6, 2.7 and 2.1 times lower (p < 0.001) for RN. Moreover, CH₄ yield was lower (p = 0.014) for RN than for RT treatment, with an average of 7.6 and 8.3% of the gross energy intake, respectively. We conclude that the 'Rotatinuous' stocking results in a greater carcass production, carcass quality and lower diet cost, and CH₄ intensity and yield of grazing lambs. Adopting this grazing management strategy could enhance both lamb production and mitigation of CH₄ intensity and yield in grazing ecosystems, which could be considered a good example of climate-smart livestock production.

The Welfare of Beef Cattle in the Scientific Literature From 1990 to 2019: A Text Mining Approach

Beef cattle are the third most numerous terrestrial farmed animals worldwide. Factors such as geographical region, animal category, breed, and rearing system pose specific animal welfare challenges that can have an impact on animal and public health. This article uses text mining (TM) and topic analysis (TA) to explore the scientific literature on beef cattle welfare published in English from 1990 to 2019. Our aim was to reveal the main research topics and their evolution over time. Our analysis showed that the three most relevant themes in research since 1990 have to do with calf behaviour and management, efficiency, and environmental sustainability, and the effects of transport and slaughter on meat quality. Topics showing the most marked increase in the number of papers published deal with stakeholders' perceptions and market opportunities for added-value beef products and risk factors for morbidity and mortality, especially in relation to calf health, antimicrobial use, and antimicrobial resistance. The results indicate a particular focus on the welfare of calves, especially in the veal industry. Pain relief during the castration of calves and bulls also featured prominently. Research is also increasingly assessing aspects of beef cattle welfare that are interlinked to meat quality, the social and environmental sustainability of the sector in relation to market opportunities, and public health. The identified topics represent a basic source of information that can be used for further and more detailed analyses (e.g., systematic reviews) focussed on specific research themes or geographical areas.

Collagen, intramuscular fat and proteolysis affect Warner-Bratzler shear-force of muscles from Bos taurus breed types differently at weaning, after backgrounding on pasture, and after feedlotting

Context The texture of beef is highly important for the eating experience, and there is a continued interest in understanding the biochemical basis for the variation in texture between cattle and their meat cuts in order to improve and minimise variation in tenderness due to production and processing factors. Aims The present study aimed to investigate the impact of characteristics of meat on Warner-Bratzler shear-force (WBSF) as an indicator of texture of beef as affected by breed type, age/feeding phase, and muscle. Methods Seventy-five steers of three breed types (Angus, Hereford and Wagyu × Angus) were slaughtered after weaning 6 months old (n = 15), after backgrounding 17 months old (n = 30) and after feedlotting 25 months old (n = 30). At slaughter three muscles (M. supraspinatus, M. semitendinosus and M. longissimus lumborum) were sampled from each steer, and pH, intramuscular fat and collagen content, sarcomere length, and proteolysis (desmin degradation) were measured and used to explain the variation in WBSF after 7 and 14 days of aging. Key results Meat from Hereford and Angus steers had higher WBSF after 7 days of aging compared with Wagyu × Angus steers, but after 14 days of aging there was only a difference between Hereford and Wagyu × Angus in the M. supraspinatus and M. semitendinosus. The WBSF of the young weaned steers and steers slaughtered after backgrounding were dependent on the degree of proteolysis in the muscles, whereas for steers slaughtered after feedlotting the content of collagen was more important for the WBSF. The amount of intramuscular fat had a significant impact on the differences in WBSF within the specific muscle studied. In contrast to the general dogma that WBSF increase with age, WBSF decreased in M. semitendinosus and M. longissimus lumborum from the weaned 6-month-old steers to the 25-month-old steers finished in feed-lot, whereas in M. supraspinatus the older feed-lot finished steers had a higher WBSF. Conclusion The factors contributing to the Warner-Bratzler shear force of beef depends on the age/feeding phase of the animal and the muscle and less on the breed type. Implications Optimisation of texture in beef through breeding and production should address different traits dependent on the age/feeding phase of the slaughter animal.

Can technology help achieve sustainable intensification? Evidence from milk recording on Irish dairy farms

This article explores the potential of a farm technology to simultaneously improve farm efficiency and provide wider environmental and social benefits. Identifying these 'win-win-win' strategies and encouraging their widespread adoption is critical to achieve sustainable intensification. Using a nationally representative sample of 296 Irish dairy farms from 2015, propensity score matching is applied to measure the impact of milk recording on a broad set of farm sustainability indicators. The findings reveal that the technology enhances economic sustainability by increasing dairy gross margin and milk yield per cow. Furthermore, social sustainability is improved through a reduction in milk bulk tank somatic cell count (an indicator of animal health and welfare status). Conversely, milk recording (as it is currently implemented) does not impact farm environmental sustainability, represented by greenhouse gas emission efficiency. While the study shows that milk recording is a 'win-win' strategy, ways of improving current levels of utilisation are discussed so that milk recording achieves its 'win-win-win' potential in the future.

Meat quality traits and feeding distillers grains to cattle: a review

Livestock management and meat production involve a series of steps that affect meat quality. Animal genetics, nutrition and diets, slaughter procedures and meat-preservation conditions are some of the parameters that should be controlled to maintain meat quality. In regard to animal nutrition and diets, novel ingredients are increasingly used, distillers grains (DG) being an example. DG are obtained as a co-product from bioethanol production and comprise the fat, protein, fibre and micronutrient portion of the grains. Many papers have studied the inclusion of DG in finishing diets and their effect on growth performance and meat characteristics, but a review on the effects on meat quality is needed. Feeding with DG influences beef colour; nevertheless, a relationship between the level of inclusion and colour development has not been established yet. In addition, feeding DG-inclusion diets sometimes increases meat discoloration during retail display. Also, the composition of fatty acids is modified since total polyunsaturated fatty acid content in meat increases with the inclusion of DG in finishing diets. This increment in polyunsaturated fatty acid content is likely to contribute to lipid oxidation processes and might be related to meat discoloration due to myoglobin oxidation. However, meat tenderness has not been modified in most of the cases. This review focused on recent studies on DG inclusion, animal performance and meat quality. Key points that need further research are also identified and discussed.

Revisiting cyst burden and risk factors for hepatic hydatid disease (Echinococcus granulosus sensu stricto) in Australian beef cattle

The characteristics and risk factors associated with hepatic Echinococcus granulosus sensu stricto infection (hydatid disease) were investigated in beef cattle slaughtered at an abattoir in eastern Australia. Sampled cattle were sourced from all eastern states, predominantly from regions associated with the Great Dividing Range. Livers and corresponding demographic data were collected from 601 carcasses. Livers were examined for the number, size, viability, and fertility of hydatid cysts. Mixed effects logistic regression was used to evaluate associations of sex, feed-type (grass- or grain-fed), and dentition (age) on hydatid disease. Hydatid cysts were detected in all dentition groups. The most commonly sampled dentition group was zero-tooth cattle (less than 18 months). Twenty-nine percent of infected livers had only one cyst, and 48% of infected livers contained viable cysts. Thirty-seven percent of infected livers had cysts that were 3-10 mm in diameter. The size and number of cysts were positively correlated with age of the animal. Regression analysis showed that the odds of hydatid disease were highest in eight-tooth cattle (>42 months; OR 26.9; 95% CI 11.8-61.6; reference level [ref] zero-tooth). Being grass-fed was also significantly associated with the presence of hydatid disease (total effect; OR 3.0; 95% CI 1.7-5.5; ref grain-fed). Although there was no evidence of a total effect of sex across the study population, males of a given dentition group and feed-type (grass- or grain-fed) were more likely to be infected than respective females. Despite changes in Australian agriculture in the last 30 years, the burden (number, size, and viability of cysts) of hydatid disease in individual infected animals remains similar to previous Australian studies.

Mechanical and Biochemical Methods for Rigor Measurement: Relationship with Eating Quality

Meat quality parameters are affected by a complex series of interacting chemical, biochemical, physical, and physiological components that determine not only the suitability for consumption and the conditions for further processing and storage but also consumer acceptability. Deep understanding and careful manipulation of these intrinsic and extrinsic factors have to be taken in account to ensure high quality of meat, with better technological properties and increased safety for consumers. Among meat quality characteristics, meat tenderness has been perceived as the most important factor governing consumer acceptability. Therefore, being able to early predict meat texture and other related parameters in order to guarantee consistent eating quality to the final consumer is one of the most sought-after goals in the meat industry. Accurate measurements of both the biochemical and mechanical characteristics that underpin muscle and its transformation into meat are key factors to an improved understanding of meat quality, but also this early-stage measurements may be useful to develop methods to predict final meat texture. It is the goal of this review to present the available research literature on the historical and contemporary analyses that could be applied in early postmortem stages (pre-rigor and rigor) to determine the biochemical and physical characteristics of the meat that can potentially impact the eating quality.

Beef tenderness and intramuscular fat proteomic biomarkers: Effect of gender and rearing practices

This study analyzed the effect of gender on the abundances of 20 protein biomarkers of tenderness and/or intramuscular fat content in five muscles: Longissimus thoracis, previously identified as biomarkers of tenderness and/or intramuscular Semimembranosus, Rectus abdominis, Triceps brachii and Semitendinosus, from cows and steers of the Protected Designation Origin Maine Anjou. The protein abundances were quantified using Reverse Phase Protein Array with specific validated antibodies. Among the 20 studied proteins, the abundance of 8 biomarkers involved in energetic metabolism, contraction and cellular stress, was different according to gender. The gender effect was different depending on the muscle type with greater abundances in Semitendinosus, Rectus abdominis and Longissimus thoracis muscles. On the basis of animal characteristics and rearing factors, three rearing practices classes were identified for cows. Among the factors, fattening duration modified the abundance of 12 proteins mainly in Triceps brachii muscle. A positive correlation between the abundance of the small HSP20 and slaughter age was observed in the 5 muscles. Two proteins, Four and a half LIM domains 1 (FHL1) and Glycogen phosphorylase (PYGB) appeared to be muscle, gender and rearing practices independent. These results constitute valuable data to understand how to manage beef quality by controlling these different factors. SIGNIFICANCE: This study is the first to compare the relative abundance of 20 proteins previously identified as biomarkers of tenderness and/or intramuscular fat (IMF) content of beef meat between cows and steers among 5 different muscles. Its originality is in the use of Reverse Phase Protein Array for fast quantification of the proteins and the integration of data from rearing factors, carcass characteristics and biomarkers of meat qualities. The findings provide evidence for modulating biomarker levels by controlling the choice of animal type and rearing factors according to the type of muscle that would produce animals with the desired meat qualities.

Decision tree, a learning tool for the prediction of beef tenderness using rearing factors and carcass characteristics

BACKGROUND

The present study explored the potential use of decision trees on rearing factors (q = 10) and carcass characteristics (q = 12) for the development of prediction model rules of beef tenderness prediction/categorization. Accordingly, 308 young bulls were used by a sensory panel to evaluate the tenderness potential of ribeye steaks grilled at 55 °C. A classification and regression tree method was implemented and allowed the prediction of tenderness using (i) rearing factors, (ii) carcass characteristics or (iii) both.

RESULTS

The resultant tree models yielded predictive accuracies of 70.78% (with four rearing factors: concentrate percentage; fattening duration; initial body weight and dry matter intake); 67.21% (with four carcass characteristics: fatness carcass score; carcass weight; dressing percentage and muscle carcass percentage) and 84.41% (with six rearing factors and carcass characteristics) compared to the k-means clustering of tenderness. In the final and robust regression tree, from the 22 attribute information, two carcass characteristics (fatness carcass score and muscle carcass percentage) and four rearing factors (fattening duration; concentrate percentage; dry matter intake and initial body weight) were retained as predictors. The first splitter of the 308 ribeye steaks in accordance with their tenderness scores was fatness carcass score, followed by fattening duration and concentrate percentage.

CONCLUSION

The trial in the preset study highlights the importance of thresholding approach for efficiently classifying ribeye steaks in accordance with their tenderness potential. The overall prediction model rule was: IF (fatness carcass score ≥ 2.88) AND (concentrate ≥ 82%) [AND (muscle carcass ≥ 71%)] THEN meat was [very] tender. © 2018 Society of Chemical Industry.

Determinants of consumer willingness to pay for quality-graded Australian sheep meat

The present study investigated the influence of a quality-grading system, demographic information and consumption preferences on consumer willingness to pay (WTP) for sheep meat. Eating quality was defined by four grades developed by the Meat Standards Australia (MSA) sheep meat-grading scheme. These grades were based on consumer palatability scores for cooked sheep-meat samples and described as 2-star (‘unsatisfactory’ quality), 3-star (‘good every day’ quality), 4-star (‘better than every day’ quality) and 5-star (‘premium’ quality). Currently, sheep-meat available in Australian retail outlets that meets MSA quality specifications is trademarked as ‘MSA graded’ and consists of lamb that falls into at least the 3-star quality band. There is no distinction made between 3-, 4- and 5-star-graded product. A challenge for marketers would be pricing the product by these three grades should finer-quality differentiation be adopted. The present study evaluated consumer WTP for the MSA quality grades and interactions with consumer demographic factors and consumption preferences. Results clearly showed that consumers were willing to pay less for the 2-star grade and more for 4- and 5-star grades, than for 3-star grade. Robust results for the impact of demographic and consumption preferences on WTP were limited to consumer age, occupation, income level and the interaction between MSA grade and consumer age.

Identification of Biomarkers Associated with the Rearing Practices, Carcass Characteristics, and Beef Quality: An Integrative Approach

Data from birth to slaughter of cull cows allowed using a PCA-based approach coupled with the iterative K-means algorithm the identification of three rearing practices classes. The classes were different in their carcass characteristics. Old cows raised mainly on pasture have better carcass characteristics, while having an equivalent tenderness, juiciness, flavor, intramuscular fat content, and pHu to those fattened with hay or haylage. The Longissimus thoracis muscle of the cows raised on pasture (with high physical activity) showed greater proportions of IIA fibers at the expense of the fast IIX ones. Accordingly, the meat of these animals have better color characteristics. Superoxide dismutase (SOD1) and αB-crystallin quantified by Dot-Blot were the only other biomarkers to be more abundant in "Grass" class compared to "Hay" and "Haylage" classes. The relationships between the biomarkers and the 6 carcass and 11 meat quality traits were investigated using multiple regression analyses per rearing practices. The associations were rearing practice class and phenotype trait-dependent. ICDH and TP53 were common for the three classes, but the direction of their entrance was different. In addition, rearing practices and carcass traits were not related with Hsp70-Grp75 and μ-calpain abundances. The other relationships were specific for two or one rearing practices class. The rearing practices dependency of the relationships was also found with meat quality traits. Certain proteins were for the first time related with some beef quality traits. MyHC-IIx, PGM1, Hsp40, ICDH, and Hsp70-Grp75 were common for the three rearing practices classes and retained to explain at list one beef quality trait. A positive relationship was found between PGM1 and hue angle irrespective of rearing practices class. This study confirms once again that production-related traits in livestock are the result of sophisticated biological processes finely orchestrated during the life of the animal and soon after slaughter.
