Abstract
As the demand for poultry meat continues to rise, industry production is constantly challenged with obtaining consumer needs. Integrators have answered this increasing demand by improving the growth rate of broilers allowing for increased production efficiently. The resulting broiler produces higher yields and a larger quantity of fresh poultry to satisfy consumer needs. However, this increase in efficiency has cost integrators as new quality issues continue to manifest through global production. Therefore, the objective of the current experiment was to evaluate the effect of genetic strain (standard and high yielding) and target weight on meat quality attributes such as pH, water holding capacity (WHC), and tenderness, alongside meat quality defects such as breast and tender myopathies. In the current study, 1,800 broilers from 4 commercial strains (2 high breast yielding (HY) and 2 standard yielding (SY) were raised sex separate to evaluate meat quality trends over time at 6 previously defined market weights. Birds were processed at weights ranging from 2,043 to 4,313 g in 454 g increments. HY strains produced higher breast and tender yields than those of SY strains (P < 0.05). There was an increase in breast and tender yield as target weight increased (P < 0.05) for both HY and SY strains. Differences were observed between strains for all fillet dimensions (P < 0.05); however, these measurements increased as target weight increased as expected. Woody breast (WB) had a higher severity (P < 0.05) in HY strains over SY strains, for both males and females. Differences were observed in white striping (WS; P < 0.05) for females in both strains, but no differences were observed in males. A main effect of target was noticed for both WB and WS (P < 0.05), expressing increased severity as target weight increased. Shear values were influenced more by target weight (P < 0.05), but inconsistent differences were observed between HY and SY groups. Meullenet-Owens Razor Shear (MORS) energy values increased slightly as target weights increased (P < 0.05) from 2,951 to 4,313 g in both males and females, but differences were minor and inconsistent with the smaller carcass weights. The MORS peak counts generally increased as target weight increased for both sexes. While strain had minimal effects on meat quality attributes, processing weight had a greater influence on quality, specifically muscle myopathies, WHC, and shear properties.

Meat quality attributes of male and female broilers from 4 commercial strains processed for 2 market programs. Poult Sci 2023; 102:102570. Abstract
In recent times, meat quality has become a key aspect of poultry production. In the current study, 2,400 sex separate broilers from 4 commercial strains were placed in 6 replications to evaluate various meat quality characteristics when grown to 2 market weights. Broilers were fed 1 of 2 diets with varying degrees of amino acid inclusion to evaluate meat quality of broiler raised on varying planes of nutrition. Birds were processed to meet 2 specified target weights (2.5 and 3.8 kg) representing small bird and big bird debone markets in the United States, respectively. Birds were processed using commercial methods, deboned at 3-h postmortem, and meat quality was assessed. Myopathies (woody breast, white striping, spaghetti meat, along with tenderloin quality), fillet dimensions, color, water-holding capacity (e.g., drip loss, cook loss), and Meullenet Owens Razor Shear was determined. Data were analyzed using the Mixed Model platform of JMP Pro 15.2 (SAS Institute, Cary, NC). Diet had no effect (P > 0.05) on the key quality responses; data were then pooled resulting in main effects of sex, strain, and target weight (noted as carcass size). On the day of processing, high yielding (HY) strains produced higher breast and tender yields (P < 0.05) when compared to standard yielding (SY) strains. In addition, and as expected, females exhibited higher breast and tender yields (P < 0.05) than males. However, males had significantly thicker (P < 0.05) and longer (P < 0.05) fillets, higher incidences (P < 0.05) of white striping, and higher (P < 0.05) cook loss when compared to females. Differences were also observed in tenderness as SY strain A produced the lowest shear values, whereas SY strain B produced the highest shear values across parameters (P < 0.05). SY strains in the small bird (SB) market performed better than SY strains in the big bird (BB) market as indicated by lower incidences of breast and tender myopathies white striping, woody breast, spaghetti meat, woody-like tender, and tender feathering and improved quality attributes (P < 0.05). Similar trends were observed (P < 0.05) in HY strains as SB carcasses produced a better overall product than BB. Differences in carcass size directly impacted quality (P < 0.05) as SB markets showed improvements in most parameters assessed, but broilers representing BB markets had greater breast yield. Although strain had minimal impacts on quality measures, carcass size, and sex had a greater impact on muscle myopathies, water-holding capacity, and shear properties.

Abstract
Male and female broiler chickens differ in their growth performance, carcass part weights and nutrient requirements. The potential reasons for these differences have been explored by looking at differences in nutrient digestibility, nutrient transporter gene expression as well as gut microbiota populations between male and female birds. Studies have shown that male broilers have higher crude protein requirements compared to female broilers. The expression of monosaccharide and amino acid transporters show conflicting results as expression depends on the interactions between sex and bird age and breed as well as which tissue is sampled. Differences in microbiota populations between the genders were reported which may contribute towards performance differences, however research in this area is limited. The differences observed between the sexes contribute to increased variation in nutrition trials, and the potential to rear birds as equally mixed-sex becomes an option to reduce the variation introduced by the sex effect. Difference in rearing options obviously would only be feasible provided a quick, practical and cost-effective method of sexing birds is available, a topic that is also discussed in this review.

Abstract
With known variation in performance between male and female broilers and the fact that sourcing single-sex birds for use in research is becoming increasingly difficult, it becomes important to determine the effect of rearing method with male and female broilers on between-pen variation and body weight (BW) uniformity. We evaluated the performance response of broilers reared as single or mixed-sex to standard and reduced crude protein (CP) diets. The study was designed as a 2 × 3 factorial arrangement of treatments consisting of 672 Cobb-500 broilers assigned to 48 floor pens with 6 treatments, 8 replicates, and 14 birds per pen. The factors were rearing method (male single-sex, female single-sex, or equally mixed-sex) and dietary CP level (standard or reduced). For the overall period of the trial (d 0–35) there was a significant effect (P < 0.001) of rearing method and CP level on feed intake (FI) and feed conversion ratio (FCR). There was also a significant interaction between rearing method and CP level for BWG during d 0 to 35 (P < 0.01). There was a significant interaction between CP level and sex on d 34 BW (P < 0.01) where the reduced CP diet decreased the BW of both males and females, but to a greater extent the BW of the female birds. Dietary CP level had a significant effect on relative breast and drumstick weights with birds fed the reduced CP diet having significantly lower breast weights (P < 0.001) and higher drumstick weights (P < 0.01).This study suggests that male and female broilers have different CP requirements, and rearing birds as equally mixed-sex results in the lowest CV% for performance parameters and best BW uniformity compared to single-sex birds. Furthermore, when low CP diets are fed to broilers, they will prioritize the growth of more important body parts such as the legs.

Abstract
Antibiotics (Oxytetracycline & Enrofloxacin) residual levels in raw and layered samples are to be quantified using RP-HPLC. The antibiotic (oxytetracycline and enrofloxacin) residual levels in raw and layers hen egg samples were evaluated qualitatively by high performance liquid chromatography in this investigation, which used one hundred randomly selected samples (HPLC). C18 (Hypersil ODS-BPS, 250 4.6mm; 5) was used for the separation at a flow rate of 1 ml/min in a mobile phase of 0.1 percent formic acid: acetonitrile (50:50, v/v). At a detection wavelength of 350 nm, the residues were measured. Found oxytetracycline residues, which indicate widespread usage of antibiotics on farms and a lack of application of required withdrawal durations, were detected in samples. Because of this, the antibiotic residues found in broiler hen eggs have been reduced. Restrictive methods and stricter restrictions should be implemented to prevent the presence of abuse residues prior to marketing, according to these findings.

Abstract
Selection for accelerated growth rate and high breast yield in broiler chickens have been associated with an increase in myopathies, including wooden breast (WB) and white striping (WS). To investigate effects of growth rate on carcass traits and incidence of myopathies, 14 strains were evaluated, encompassing 2 conventional (CONV; strains B and C: ADG0-48 > 60 g/d) and 12 slower-growing (SL) strains. The latter were categorized based on growth rate: FAST (strains F, G, I and M; ADG0-62=53-55 g/d), MOD (strains E, H, O and S; ADG0-62=50-51 g/d), and SLOW (strains D, J, K and N; ADG0-62<50 g/d). In a randomized incomplete block design, 7,216 mixed-sex birds were equally allocated into 164 pens (44 birds/pen; 30 kg/m2), with each strain represented in 8 to 12 pens over 2 to 3 production cycles. From each pen, 4 males and 4 females were processed at 2 Target Weights (TWs) based on their expected time to reach 2.1 kg BW (TW 1: 34 d for CONV; 48 d for SL strains) and 3.2 kg BW (TW 2: 48 d for CONV; 62 d for SL strains). Weights and yields for the carcass, breast, drumsticks, thighs, and wings were obtained; breast fillets were assessed to determine the presence and severity of WB and WS. At both TWs, breast yield was higher as growth rate increased (P < 0.001), with CONV having greater breast yield than other categories. Strain F had the greatest breast yield at both TWs (P < 0.001) within the FAST category. At TW 2, CONV had the greatest incidence of WB and WS (P < 0.001). However, within FAST, strain F had the greatest incidence of myopathies (P < 0.001) at both TWs, exhibiting values as high or as greater than CONV birds. The incidence of WB and WS in strains with differing growth rates but high breast meat yield suggests that the latter may play a major role in the occurrence of these myopathies.

Abstract
Broiler growth performance can be influenced by maternal BW, maternal age, and sex. The present study evaluated broiler growth and efficiency in response to increased maternal BW (relaxed level of maternal feed restriction). It was hypothesized that BW and fatness would increase, and efficiency would be reduced as maternal BW increased. Ten BW trajectories were applied to precision-fed Ross 708 female broiler breeders (n = 30) from 2 to 42 wk of age. Trajectories varied in prepubertal and pubertal growth phases from 2.5 to 22.5% above the recommended BW target. Additional unrestricted breeders (n = 6) were not limited to a maximum BW (fed ad libitum). Two 35 d experiments were conducted with precision-fed broilers from these breeders at 35 and 42 wk of age. Two analyses (full and restricted analysis scopes) were performed to evaluate broiler BW, feed conversion ratio (FCR) and carcass traits with maternal BW at photostimulation (22 wk of age) as a continuous effect, and maternal age and sex as discrete effects. The full scope included broilers from all hens (feed restricted and unrestricted). The restricted scope excluded broilers from unrestricted hens. Differences were reported at P ≤ 0.05. For every kilogram increase in maternal BW, cumulative FCR increased by 0.235 and 0.471 g:g for broilers from all and feed restricted hens, respectively. Proportional gut weight of broilers from feed restricted hens decreased by 0.8244% per kilogram increase in maternal BW. Males were heavier than females on day 28 and 35, and broilers from 42-wk-old breeders were heavier than broilers from 35-wk-old breeders on day 0 and 35. Males from all hens were more feed efficient (1.318 g:g) than females (1.335 g:g) from day 29 to 35. Females from all and feed restricted hens had a greater proportional fat pad and breast muscle weight than males, and proportional breast muscle yield of broilers from 42-wk-old breeders was on average 1.04 times greater than that of broilers from 35-wk-old breeders. Maternal BW did not affect offspring BW, reduced cumulative FCR, and reduced gut weight in the restricted analysis scope.

Abstract
The aim of the study was to assess the influence of sex, including caponization, on selected physiological and productive traits of Greenleg partridge (GP) birds. The study material consisted of 120 GP chicks (40 females and 80 males), divided into 3 equal groups (4 replication in each) and kept in litter system and fed ad libitum. A total of 40 cocks have been surgically castrated. The body weight (BW) of birds were measured biweekly. At the age of 24 weeks 8 birds/group were slaughtered, their carcasses were subjected to simplified dissection. Blood samples were collected and among others biochemical profile of serum was established. The lowest BW, regardless of age, had hens. From 18th week capons had the highest BW and finally it was similar to cocks. Cocks demonstrated, significantly, the highest carcass yield, however, the biggest proportion of breast muscles were stated in capons carcasses. The effect of sex is very clear in case of abdominal fat pad. The highest proportion of it was found in females but the lack of sex hormones in capons also contributed to a higher fat accumulation. The serum profile showed that the sexual maturity of hens increased lipids content (cholesterol, trigliceroles) caused by laying production.

Abstract
This study aimed to investigate the effect of using breeder parents (434-days-old) and broiler chickens (37 D of age) from Ross 308 on meat quality parameters and carcass characteristics; sex and muscle type were also estimated. Carcass assessment involved hot carcass weight, carcass yield, and cuts (breast, legs, wings, back, and shoulder). A total of 120 birds were divided into 2 groups (60 birds from each stock), each stock contain equal number of sexes (30 males and 30 females), and further divided into 6 replicates, so that there were 5 birds in each replicate. The birds were fed ad libitum. A sample of 30 birds (male, n = 15 and female, n = 15) from each group was slaughtered for assessing carcass and physical characteristics. Sensory analysis was carried out on each group after boiling or roasting the bird. Live weight, carcass weight and yield, breast weight, legs, wings, and back weights and yield were higher (P < 0.001) for breeder parents when compared to broilers, with the exception of breast percentage. Moreover, better carcass characteristics were observed in males than in females. Parent stock had better water-holding capacity and myofibrillar fragmentation whereas broilers had more tender meat than breeders. Moreover, cooking loss and other sensory characters were not significant between the two groups; however, females had more tender pectoral muscles and more myofibrillar fragmentation than males. We concluded that parent breeders had better carcass characteristics than broiler chickens. The broiler chickens of Ross 308 and female birds had better meat quality than parent breeders.

Abstract
The objective of this work was the evaluation of the meat production and laying performances, and the meat and egg quality of two breeds of Vietnamese broiler chickens, Ho and Dong Tao, fed on a commercial diet. In a survey, we continuously recorded for 28 weeks, the data on the production performance and meat quality of 250 chicks from each breed. We investigated egg laying and egg quality using 36 Ho and 32 Dong Tao hens during 52 weeks of laying. The growth patterns were similar for the two breeds. Feed conversion ratios were also similar, and demonstrated the low efficiency of these two breeds when compared to commercial broilers. Slaughter age proved to affect several carcass yield characteristics, showing that slaughtering between 16 and 20 weeks might be better than at the usual age of 28 weeks. Yield, carcass composition and meat quality differed between the two studied breeds. The eggs production and number of embryonated eggs were low for the two breeds when compared to other breeds, with a lower hatching performance in Ho than in Dong Tao. In summary, the production performances of Ho and Dong Tao chickens were low, even when birds were fed a commercial diet. The study demonstrates the need to find ways to improve the production and reproduction performances of these animals, in order to contribute to the program of conservation and exploitation of these two breeds.

Abstract
A precision feeding (PF) system was developed to increase broiler breeder lifetime reproductive performance through improved flock uniformity. The current study consisted of 2 rearing and 3 laying treatments. From 0 to 22 wk of age, 480 Cobb male grandparent line pullets and 80 Cobb MX males were fed once daily as a group (CON), or individually with a PF system. Pullets were housed in 6 replicate pens of 40 birds, and cockerels in one pen per treatment. During lay, CON and PF treatments continued, and a third treatment was added, where PF-reared birds were transitioned to conventional feeding (PFCON; n = 3 pens). At photostimulation (22 wk of age), all pens had 24 hens and 2 roosters. Birds were allowed to mate naturally to 52 wk. Analysis of variance was conducted, and Tukey-adjusted means were reported as different where P ≤ 0.05. Mean BW was near the target BW in all treatments. At photostimulation, PF pullet BW CV was 2% vs 14% in CON pullets. Cumulative feed conversion ratio during rearing was lower in PF treatment pullets, which ate 3% less than CON pullets. Pullets in the PF treatment received 10 meals spread throughout each day, compared with one meal per day in the CON treatment. Increased feeding frequency would reduce diurnal fluctuations in nutrient supply, which may explain why PF pullets had 1.2 times the breast muscle weight of CON pullets at 22 wk. There was no treatment difference in abdominal fatpad weight at 22 wk. The PF treatment had 3.8% higher fertility and 1.3% lower egg weight CV compared with the CON treatment. Egg production in PF and PFCON treatments was 0.73 and 0.89 times that of the CON treatment, respectively. It is hypothesized that metabolic changes in PF pullets provided an insufficient metabolic trigger for sexual maturation. It follows that relaxing feed restriction may increase fat deposition and egg production in PF broiler breeders.

Abstract
Objective This study was conducted to assess the effect of potassium humate and enzymes (Xylanase+Amylase+Protease) inclusion in diets on carcass characteristics, meat quality and fatty acid profiles of broilers fed canola-based diets. Methods Two hundred and twenty broilers randomly allotted to 5 dietary treatments: the control (commercial broiler diet); CM (17.5% canola meal inclusion); CMEnz (17.5% CM inclusion+0.3 g/kg Axtra XAP); CMPh (17.5% CM inclusion+1.5% Potassium Humate, PH); and CMEnzPh (17.5% CM inclusion+1.5% PH+0.3 g/kg Axtra XAP) were slaughtered at day 42 for assessment of carcass and meat quality parameters. Results Diet had no effect on carcass traits apart from breast muscle weight and breast muscle index. The highest breast muscle weight was observed in broilers fed CMEnz (487.6±17.5 g) followed by those fed the control diet (474.37±17.5 g). Diet also had no significant dietary effect on pH, temperature, drip loss and shear force values of the breast muscle. However, diet significantly affected meat colour and water-holding capacity. Broilers in the control and CMPh groups (52.94±0.67 and 52.91±0.67) had the highest (p<0.05) values for lightness (L*), whilst those fed CMEnzPh had the lowest value (47.94±0.67). In contrast, CM group had the lowest (p<0.05) value for redness (a*) with CMEnzPh group having the highest values. The proportion of polyunsaturated fatty acids (PUFAs), n-6 and n-3 fatty acids and the PUFA/saturated fatty acid ratio were increased in CM-based diets containing enzymes and humic acid. Conclusion It can, therefore, be concluded that CM can be included in broiler diets in the presence of enzymes and humic acid with positive effects on meat quality and important fatty acids that are beneficial to the health of consumers.

Abstract
Responses to changes in dietary Lys and other essential amino acid (AA) concentrations were evaluated in 480 male and female broilers originating from two lines divergently selected for high (pHu+) or low (pHu-) ultimate pH (pHu) of breast muscle. The two genetic lines were fed with two grower isoenergetic diets differing in both true digestible Lys (control=10.2 g/kg and experimental=7.0 g/kg) and amounts of other essential AA calculated in relation to Lys, which were sufficient for the control diet or in excess for the experimental diet. There were six repetitions per treatment. Birds were weighed individually at days 0, 21, 28 and 43. Feed consumption was recorded per pen and feed conversion was calculated over the growing period. The physical activity and walking ability of broilers were recorded during the whole rearing period. Breast and leg yield, and abdominal fat percentage were measured at 43 days of age, as were pHu, color, drip and cooking loss, Warner-Bratzler shear force, and curing-cooking yield of the breast Pectoralis major and pHu of the thigh Sartorius muscle. Divergent selection greatly affected most breast meat quality traits without significantly changing growth rate or feed efficiency. When subjected to a variation in dietary intake of AA, birds from the two genotypes responded in a similar way in terms of animal's growth, feed efficiency, body composition and meat quality traits. Although line and diet did not affect physical or feeding activities of the broilers, a significant effect of line-by-diet interaction was observed on gait score. Contrary to the pHu- birds, the walking ability of pHu+ birds was impaired when fed the control diet that favored growth and breast muscle development and limited storage of carbohydrate in muscle.

Abstract
1. A study was conducted to evaluate the carcass composition of 1083 live birds using ultrasonic and morphological measurements and to estimate the genetic relationship between predicted and dissected carcass composition in Japanese quail. 2. Birds were reared for 35 d, and morphological measurements consisting of the length and width of breast muscle were recorded for all birds using a digital caliper. After slaughtering, the weight and percentage of carcass traits were measured on chilled carcasses. The dimensions of breast muscle were measured in 638 birds with an ultrasound scanner before slaughter at 35 d of age. 3. Genetic parameters from univariate and bivariate analyses were obtained by restricted maximum likelihood using ASREML software. 4. Genetic correlations between body weight at 35 d (BW35) and the percentage of carcass traits were low. Therefore, selection for BW35 may not effectively improve the yield of carcass components in Japanese quail. 5. High genetic correlations between carcass traits and ultrasonic measurements compared to morphological measurements suggest that the ultrasonic technique is a better method to improve breast weight and yield in Japanese quail.

Abstract
The present study was conducted to compare the growth performance, carcass characteristics, and meat quality of the egg-type male growing chicken (EM), white-mini broiler (WB), and commercial broiler (Ross 308, CB). A total of 360 1-d-old chicks were reared together using a completely randomized design with 4 replicates for each group under the identical feeding and rearing conditions. The ADG and gain:feed were the highest in CB, intermediate in WB, and the lowest in EM (p<0.05), and the live and carcass weights of CB and EM were significantly higher than those of WB (p<0.05). The pH of breast meat from WB and CB was significantly higher (p<0.05) than that from EM with a similar body weight. The EM had the lowest moisture (p<0.05) and the highest protein content (p<0.05), whereas the fat and ash contents were not different among groups. The mystiric acid (C14:0), palmitoleic acid (C16:1 ω7), and oleic acid (C18:1 ω9) levels were significantly higher in breast meat from CB (p<0.05). The monounsaturated fatty acid (MUFA) content showed the highest (p<0.05) levels in CB. In contrast, the polyunsaturated fatty acid (PUFA) contents of breast meat, including linoleic acid (C18:2 ω6) and arachidonic acid (C20:4 ω6), were higher (p<0.05) in EM and WB than in CB. In conclusion, the EM and WB had less growth performances in comparison with CB, but they each had some unique features (taste, flavor, and physiological characteristics) when raised under the identical rearing and feeding conditions.

The effect of commercial selection on the growth, efficiency, and yield of broilers was studied using 2 University of Alberta Meat Control strains unselected since 1957 and 1978, and a commercial Ross 308 strain (2005). Mixed-sex chicks (n = 180 per strain) were placed into 4 replicate pens per strain, and grown on a current nutritional program to 56 d of age. Weekly front and side profile photographs of 8 birds per strain were collected. Growth rate, feed intake, and measures of feed efficiency including feed conversion ratio, residual feed intake, and residual maintenance energy requirements were characterized. A nonlinear mixed Gompertz growth model was used to predict BW and BW variation, useful for subsequent stochastic growth simulation. Dissections were conducted on 8 birds per strain semiweekly from 21 to 56 d of age to characterize allometric growth of pectoralis muscles, leg meat, abdominal fat pad, liver, gut, and heart. A novel nonlinear analysis of covariance was used to test the hypothesis that allometric growth patterns have changed as a result of commercial selection pressure. From 1957 to 2005, broiler growth increased by over 400%, with a concurrent 50% reduction in feed conversion ratio, corresponding to a compound annual rate of increase in 42 d live BW of 3.30%. Forty-two-day FCR decreased by 2.55% each year over the same 48-yr period. Pectoralis major growth potential increased, whereas abdominal fat decreased due to genetic selection pressure over the same time period. From 1957 to 2005, pectoralis minor yield at 42 d of age was 30% higher in males and 37% higher in females; pectoralis major yield increased by 79% in males and 85% in females. Over almost 50 yr of commercial quantitative genetic selection pressure, intended beneficial changes have been achieved. Unintended changes such as enhanced sexual dimorphism are likely inconsequential, though musculoskeletal, immune function, and parent stock management challenges may require additional attention in future selection programs.

Abstract
This study was conducted to compare growth performance, carcass characteristics and meat quality of 4 breeds of local chicken. A total of 480 1-d-old chicks were distributed to 16 pens, with 4 treatments of breed, 4 replicates and 30 chicks per pen. Three Korean local breeds of white-mini broiler, Hanhyup-3-ho, and Woorimatdag, and a breed of silky fowl were raised under identical rearing and feeding conditions for 31-d, 37-d, 36-d, and 59-d, respectively. The BW and feed consumption on a pen basis were weekly measured for all pens, and ADFI, ADG and gain:feed were calculated for each pen. The ADFI and ADG of 3 breeds of Korean local chicken were greater than those of silky fowl (p<0.05). Within the Korean local breeds, ADFI of white-mini broiler was the highest (p<0.05), and ADG of Hanhyup-3-ho and white-mini broiler was the highest (p<0.05). Gain:feed of silky fowl was less than that of the 3 breeds of Korean local chicken. The carcass and breast yield of white-mini broiler were the greater than those of other breeds (p<0.05). The breast meat color (CIE L*, a*, and b*) of 3 breeds of Korean local chicken were higher than that of silky fowl (p<0.05). The breast meat of Hanhyup-3-ho had greater cooking loss (p<0.05), whereas water holding capacity and pH were less than those of other breeds (p<0.05). The color score of 3 breeds of Korean local chicken was higher than that of silky fowl (p<0.05). Woorimatdag had a higher score on tenderness (p<0.05), whereas flavor score was less than that of other breeds (p<0.05). In conclusion, 4 local breeds of chicken have some unique features and seem to have more advantages, and this information can help consumers who prefer healthy and premium chicken meat.

Abstract
Broiler breast fillets are sometimes characterized grossly by white parallel striations in the direction of the muscle fibers, and the condition is referred to as white striping. Depending on the severity of white striping, fillets can be classified as normal (NORM), moderate (MOD), or severe (SEV). The present study was intended to determine the factors associated with the occurrence of white striping in broiler breast fillets. Broiler birds (59 to 63 d) of 4 different commercial high-yielding strains (both males and females) fed with industrial type or phase-feeding regimens, were processed and ready-to-cook carcass weight was recorded. The carcasses were deboned at either 4 or 6 h postmortem. Fillets were scored for the degree of white striping at 24 h postmortem, and dimensions of fillets (length, width, cranial thickness, and caudal thickness), pH, color (L*, a* and b* values), cook loss, and Meullenet-Owens razor shear energy (MORSE) values were determined. About 55.8% of the birds used in the study showed some degree of white striping with MOD and SEV categories as 47.5 and 8.3%, respectively. Higher degrees of white striping were significantly (P < 0.05) related to higher cranial fillet thickness and ready-to-cook weights. The occurrence of SEV degrees of white striping was accompanied with increased b* values or yellowness of the meat. The growth differences in strains could influence the incidence of this condition, but feeding regimens and chill hour during processing did not. In addition, the degree of white striping did not show any significant (P > 0.05) relationship between various meat quality parameters such as pH, L*, a*, cook loss, and MORSE. In conclusion, the results of this study suggest that there is a greater chance of higher degrees of white striping associated with heavier birds, but the condition is not related to any major changes in cooked meat quality.

Abstract
Current research was conducted to estimate heritability and genetic correlations for carcass composition and fat deposition in Japanese quail at 42 and 91 d of age. Studied traits were BW at 42 and 91 d of age (BW42, BW91), carcass weight and percentage, breast meat weight and percentage, thigh weight and percentage, abdominal fat weight and abdominal fat percentage (AFP), skin weight and skin percentage (SP) as a measure of subcutaneous fat, and the percentage of breast intramuscular fat (IFP). Genetic parameters were estimated by restricted maximum likelihood using ASREML software. The heritability estimates of BW and the weight of carcass traits were higher (from 0.45 for BW42 to 0.63 for breast meat weight) than the percentage of carcass traits (from 0.11 for thigh percentage to 0.19 for breast meat percentage). The heritability estimates for SP, AFP, and IFP as fat deposition tissues were 0.17, 0.26, and 0.20, respectively. There were high genetic correlations between BW42 with the weight and percentage of carcass components (from 0.65 to 0.98). Body weight at 42 d of age also showed positive genetic correlations with skin weight and SP (0.80 and 0.23, respectively), abdominal fat weight and AFP (0.44 and 0.21, respectively), and IFP (0.28). A positive genetic correlation between SP and AFP (0.51) was observed. Present results indicated that the percentage of breast intramuscular fat is a heritable trait and selection for increasing BW and decreasing abdominal and subcutaneous fats will improve carcass composition and breast meat quality in Japanese quail. In addition, selection against abdominal and subcutaneous fat does not change intramuscular fat and the quality of breast meat.

Abstract
A randomized complete block design within a factorial arrangement of treatments was used to evaluate the effect of strain and sex on carcass characteristics, meat quality, and sensory acceptability. Two broiler strains were reared: a commercially available strain (strain A) and a strain currently in the test phase (strain B) that has been genetically selected to maximize breast yield. Broilers were harvested in a pilot scale processing plant using commercial prototype equipment at 42 d of age. Carcasses were deboned at 4 h postmortem. The left half of each breast was evaluated for pH, color, cooking loss, shear force, and proximate analysis. The right side of each breast was used for consumer acceptability testing. Thigh meat was evaluated for proximate composition. No interactions were observed throughout the study. Male broilers had a higher (P < 0.05) live BW, carcass weight, and breast weight and lower (P < 0.05) dressing percentage and breast meat yield when compared with females. Broilers from strain B presented a higher (P < 0.05) breast yield and dressing percentage than those broilers corresponding to the commercially available broiler strain. At 24 h postmortem, female broilers presented a lower ultimate pH and higher Commission internationale de l'éclairage yellowness values (ventral side of the pectoralis major) when compared with male broilers. On average, no differences existed (P > 0.05) among treatments with respect to pH decline, cooking loss, shear values, and proximate composition. In addition, no differences (P > 0.05) existed among breast meat from the different strains with respect to consumer acceptability of appearance, texture, flavor, and overall acceptability, but breast meat from strain B was slightly preferred (P < 0.05) over that of strain A with respect to aroma. However, breast meat from both strains received scores in the range of "like slightly to like moderately." Overall data suggest that all treatments yielded high quality breast and thigh meat and strain cross did not present variability in terms of consumer acceptability.

Abstract
Event DAS-40278-9 maize grain (containing the aryloxyalkanoate dioxygenase-1 protein), a non-transgenic near-isogenic maize grain, or one of three commercial maize grains were included in the diets of broiler chickens for six weeks. Growth, feed conversion, and carcass measurements indicated no significant difference between the groups fed the diets containing the DAS-40278-9 maize grain and those fed diets containing the matched control grain. The absence of adverse effects in this study supports the dietary safety of the AAD-1 protein expressed in event DAS-40278-9 maize.

Abstract
The effect of age and housing system on genetic parameters for BW and carcass traits was investigated. Traits were measured on broilers of different ages (48, 63, and 70 d). Birds in the 48 and 70 d groups were raised in group housing, whereas birds in the 63 d group were raised in the same housing up to 22 d and in individual cages between 22 and 63 d. Each group consisted of approximately 2,000 individuals from a single group of parents. Carcass, breast meat, abdominal fat, and back half were expressed as percentage of BW. The heritabilities of BW at 48, 63, and 70 d were 0.31, 0.26, and 0.19, respectively, and the heritabilities of back half percentage at 48, 63, and 70 d were 0.42, 0.38, and 0.21, respectively. For other carcass traits, heritabilities were in the same range in different age groups. A positive genetic correlation was found between BW and valuable parts of carcass (breast meat and back half) at 48 d; these relationships were negative at 70 d. The genetic correlation between BW and abdominal fat percentage at 70 d was higher than at 48 d. The increase in growth at 48 d was accompanied by increase in valuable parts; at 70 d it was accompanied by an increase in abdominal fat percentage. The genetic correlation of BW at 48 d between individual cage and group housing demonstrated a genotype by environment interaction for performance of birds, which has consequences for design of breeding schemes.

Abstract
Consumer interest in organic and free-range poultry production is growing. An experiment was conducted to assess the impact of genotype and outdoor access on growth rate and carcass yield. One slow-growing genotype (S), 2 medium-growing genotypes (M1 and M2), and a commercial fast-growing genotype (F) were raised (straight-run) for 81, 67, and 53 d, respectively. The placement date was staggered in order to achieve a similar final body weight and each genotype was processed on the same day. Each genotype was assigned to 3 pens of 24 birds each and raised in indoor floor pens in a curtain-sided house with ventilation fans; the S and F genotypes were also assigned to 2 floor pens with outdoor access (during daylight hours) containing 36 birds each. All birds were provided with the same starter, grower, and finisher feeds, and birds were commercially processed. Weight gain was similar (P > 0.05) among genotypes, but males gained more weight (P < 0.05) than females. The S and F genotypes had the highest and lowest (P < 0.05) feed intakes and, consequently, the lowest and highest (P < 0.05) feed efficiencies, respectively. The F genotype had the greatest (P < 0.05) breast yield (%) and the lowest (P < 0.05) wing yield (%). The S genotype exhibited the lowest (P < 0.05) breast yield (%) and the greatest leg quarter yield (%). Birds given outdoor access had greater (P < 0.05) bone strength in the tibia, and the F genotype had highest (P < 0.05) bone strength. These data indicate that substantial growth performance and yield differences exist among genotypes in alternative poultry systems.

Abstract
The objective of this study was to evaluate effects of storage and cutting on moisture retention by air- and water-chilled broiler chickens. Sixty-four broilers were slaughtered, chilled by cold air or immersion in water, stored over night, cut into fore- and hindquarters, and then stored an additional 24 h. Air chilling conditions were 4 degrees C with air velocity of 2.2 m3/min. Water chilling conditions were 1 degree C with mechanical agitation. Moisture absorption and retention were observed as weight changes throughout the process. Air-chilled carcasses lost an average of 0.68% of their postslaughter weight in storage prior to cutting but lost no more during cutting or postcutting storage. The water-chilled carcasses absorbed 11.7% moisture in chilling but retained 6.98% through precutting storage, 6.00% through cutting and 3.90% through postcutting storage. These data offer baseline values for use in complying with new USDA processing standards.

Abstract
Two studies were conducted to measure the effects of dietary amino acid regimens (high, medium, low) and gender on Arbor Acres Plus broilers. Body weight, feed conversion, mortality, carcass yields, and uniformity served as criteria evaluated. Growth and feed conversion were improved in broilers fed diets with high amino acid concentration until 35 days of age. Yields of some carcass parts were improved up to 35 days of age as diet concentration was increased. Flock uniformity was decreased when dietary amino acid concentration was reduced. Male broilers exhibited faster growth rate, whereas females had improved feed conversion at 28 and 35 days of age, but no differences were observed at 14 and 49 days of age. Male broilers had lower breast meat yield and relative abdominal fat than females. Variability within females was lower than in males. Results indicate that when high dietary amino acid concentration was provided at an earlier age, reducing concentration at later feeding phases did not compromise growth or carcass yields. Furthermore, moderate to high dietary amino acid levels may help reduce variability within flocks.

Abstract
Breast fillet quality was evaluated from 37-, 39-, 42-, 44-, 46-, 49-, and 51-d-old broilers after post-chill (PC) aging of the carcass 0, 2, 4, or 6 h and deboning. Fillets were vacuum sealed in cooking bags and heated to an internal temperature of 72 C by submersion in a 95 C water bath. Cook yield was determined as the weight percentage of the fillet remaining after cooking. Texture of the cooked fillets was measured using a Warner-Bratzler (W-B) shear device. Fillet cook yield and shear force values were significantly affected by bird age at slaughter, and PC carcass aging duration before deboning. Bird gender significantly affected cook yield, whereas the interaction between age and PC aging duration significantly affected W-B shear. Fluid lost during cooking was greater for fillets aged 0 h PC and decreased when PC aging was 2 h or greater. Overall, W-B shear values decreased (more tender) when fillets were aged on the carcass at least 2 h PC, with the exception of fillets from 51-d-old broilers. After 2 h of PC aging on the carcass, shear force values for fillets from older broilers (49- and 51-d-old) were in the "very tough" portion of a texture scale (>12.60 kg), whereas textures of fillets from 42- and 44-d-old broilers were in the "slightly tough to slightly tender" portion of the scale (8.5 and 7.2 kg, respectively). These data show that if poultry processors harvest fillets earlier than usual (<2 h PC aging), the fillet texture will be more tender if it originates from younger broilers (42- or 44-d-old) instead of older broilers (49- or 51-d-old).
