Abstract
Alpha mannose-oligosaccharide (MOS) prebiotics are widely deployed in animal agriculture as immunomodulators as well as to enhance growth and gut health. Their mode of action is thought to be mediated through their impact on host microbial communities and their associated metabolism. Bio-Mos is a commercially available prebiotic currently used in the agri-feed industry, but studies show contrasting results of its effect on fish performance and feed efficiency. Thus, detailed studies are needed to investigate the effect of MOS supplements on the fish microbiome to enhance our understanding of the link between MOS and gut health. To assess Bio-Mos for potential use as a prebiotic growth promoter in salmonid aquaculture, we have modified an established Atlantic salmon in vitro gut model, SalmoSim, to evaluate its impact on the host microbial communities. The microbial communities obtained from ceca compartments from four adult farmed salmon were inoculated in biological triplicate reactors in SalmoSim. Prebiotic treatment was supplemented for 20 days, followed by a 6-day washout period. Inclusion of Bio-Mos in the media resulted in a significant increase in formate (P = 0.001), propionate (P = 0.037) and 3-methyl butanoic acid (P = 0.024) levels, correlated with increased abundances of several, principally, anaerobic microbial genera (Fusobacterium, Agarivorans, Pseudoalteromonas). DNA metabarcoding with the 16S rDNA marker confirmed a significant shift in microbial community composition in response to Bio-Mos supplementation with observed increase in lactic acid producing Carnobacterium. In conjunction with previous in vivo studies linking enhanced volatile fatty acid production alongside MOS supplementation to host growth and performance, our data suggest that Bio-Mos may be of value in salmonid production. Furthermore, our data highlights the potential role of in vitro gut models to complementin vivo trials of microbiome modulators. IMPORTANCE In this paper we report the results of the impact of a prebiotic (alpha-MOS supplementation) on microbial communities, using an in vitro simulator of the gut microbial environment of the Atlantic salmon. Our data suggest that Bio-Mos may be of value in salmonid production as it enhances volatile fatty acid production by the microbiota from salmon pyloric ceca and correlates with a significant shift in microbial community composition with observed increase in lactic acid producing Carnobacterium. In conjunction with previous in vivo studies linking enhanced volatile fatty acid production alongside MOS supplementation to host growth and performance, our data suggest that Bio-Mos may be of value in salmonid production. Furthermore, our data highlights the potential role of in vitro gut models to augment in vivo trials of microbiome modulators.

Abstract
Simple Summary The present study investigated the effect of different levels of red yeast added to the diet of laying hens as a substitute for antibiotics. The aim of this study is to measure growth performance, egg quality, and small intestinal health of hens receiving this supplement at various levels during 22–60 weeks of age. The results indicate that supplementation with dietary red yeast has a positive effect on productivity and gut health; thus, we suggest administration of this additive as a substitute for antibiotics in laying hens. Abstract Nowadays, industrial poultry producers are more focused on the safety of their products, especially contaminants from feedstuffs such as mycotoxin and pesticides. The residue from animal production using antibiotic growth promoters (AGPs) may cause some problems with antimicrobial resistance in human and animals. Red yeast (Sporidiobolus pararoseus) has a cell wall consisting of β-glucan and mannan-oligosaccharides and pigments from carotenoids that may be suitable for use as a substitute for AGPs. The objective was to evaluate the effects of red yeast in laying hen diets on productive performance, egg quality, and duodenal health. A total of 22-week-old laying hens (n = 480) were divided into five groups: control diet (CON), AGP at 4.5 g/kg and red yeast supplementation at 1.0 (RY1.0), 2.0 (RY2.0) and 4.0 g/kg (RY4.0) of diet. The results show that the AGP, RY2.0, and RY4.0 groups had significantly higher final body weight compared with the other groups (p < 0.001). The red yeast supplementation improved the egg shape index (p = 0.025), Haugh unit (p < 0.001), and yolk color (p = 0.037), and decreased yolk cholesterol (p < 0.001). Diet with red yeast supplementation improved villus height to crypt depth ratio and crypt cell proliferations. In conclusion, red yeast supplementation at 2.0 g/kg of diet can substitute AGP in layer diet.

Abstract
Two experiments were carried out to evaluate the effect of mixed cassava pulp and napier grass (MCN) supplemented with multi-component enzymes on the hen performance and egg quality as well as nutrient digestibility. In experiment 1, forty laying hens (Isa Brown) of 34 weeks in age were randomly allotted to 5 groups: control and 5, 10, 15, and 20% MCN for 10 days (one bird per cage, eight cage replicates). The results indicated that dry matter, and organic matter digestibilities, or nitrogen retention (P > 0.05) showed no significant alteration when used MCN up to 20%. In experiment 2, one hundred and eighty Isa Brown laying hens of 67 weeks in age were randomly assigned to 5 groups (control and 4 MCN: 5, 10, 15, and 20%) and raised for 8 weeks. It revealed that the inclusion rate of MCN up to 20% did not affect the productive performance, plasma cholesterol concentration, cecal microbial populations, or ammonia production (P > 0.05). In addition, egg yolk cholesterol was found to be lower in laying hens fed 20% MCN compared to 5% MCN (P < 0.05), but no significant differences compared to the control. In conclusion, it is indicated that MCN can be used as a partial part of an energy source in laying hen diets with no adverse effects on productive performance, nutrient digestibility or egg quality.

Abstract
Herein, we assessed the impact of dietary addition of konjac mannanoligosaccharide (MOS) on the growth, intestinal morphology, serum immune status, and oxidative status in Partridge Shank chickens. For the experiment, one-day-old chicks (n=192) were randomized into six replicates (n=8/replicate) and fed four different diets: a basal diet containing 0 (Control group), 0.5, 1, or 1.5 g MOS per kg of diet (g/kg) for 50 d. Relative to the control, the group fed 0.5 g/kg MOS decreased feed consumption from 22nd to 50th d and 1st to 50th d (P<0.05). By adding MOS, the height of the intestinal villus and the villus height to crypt depth ratio were increased (P<0.05); 1.5 g/kg MOS was the best dosage for these parameters. Jejunal and ileal goblet cell density increased following MOS supplementation at 21 d (P<0.01) and 50 d in the jejunum (P<0.05), respectively. Moreover, adding MOS to the diet increased the contents of IgA and IgM at 21 d (P<0.05) and total antioxidant capacity (P<0.05) at 50 d in the serum but decreased malondialdehyde content (P<0.01) at 21 d in the group fed 0.5 and 1.5 g/kg MOS. The findings suggested that MOS supplementation could affect feed consumption, intestinal health, serous immunity, and antioxidant capacity of Partridge Shank chickens.

Abstract
Heat stress is a major concern in broiler's production, which can damage liver of broilers. This study investigated the protective effects of mannan oligosaccharide (MOS) on heat stress-induced hepatic injury in broilers. A total of 144 day-old male chicks were allocated into three treatment groups. Broilers raised under normal ambient temperature were fed a basal diet (control group), and broilers under heat stress (32-33 °C for 8 h daily) were given the basal diet supplemented without MOS (heat stress group) or with 1 g/kg MOS (MOS group) for 42 days. Compared with the control group, heat stress reduced liver weight, whereas increased aspartate aminotransferase (AST) and alanine aminotransferase (ALT) activities in the serum. It also reduced glutathione peroxidase (GSH-Px) activity in the serum and liver, GSH content, and superoxide dismutase (SOD) activity in the liver, but increased malondialdehyde (MDA) concentration in the serum and liver. Dietary MOS decreased serum ALT activity in heat-stressed broilers. MOS inclusion also decreased serum MDA content, but elevated hepatic GSH-Px and SOD activities, with MDA content and GSH-Px activity still being different from the control group, and SOD activity being similar to the control group. Heat stress increased concentrations of tumor necrosis factor α (TNF-α) in the serum and liver, interleukin-1β (IL-1β) in the liver, and mRNA abundances of HSP70, TLR4, MyD88, TNF-α, and IL-1β in the liver of broilers. Serum TNF-α content and mRNA abundances of hepatic TLR4 and TNF-α in MOS group were lower than the heat stress group, whereas these indexes were still higher than the control group. Our results indicated that dietary MOS ameliorated hepatic damage in heat-stressed broilers through alleviation of oxidative stress and inflammation.

Abstract
Salmonellosis is one of the most important bacterial diseases in poultry, causing heavy economic losses, increased mortality and reduced production. The aim of this study was the comparative efficacy of a commercial probiotic and/or prebiotic with a live attenuated Salmonella Enteritidis (SE) vaccine on the protection of broiler chickens from SE challenge. The efficacy of probiotic or prebiotic products, as well as a live Salmonella Enteritidis (SE) vaccine at the 7th day of age, administered via drinking water, were evaluated for clinical protection and effects on growth performance of broiler chickens experimentally challenged with SE at the 28th day of age. The use of probiotic or prebiotic simultaneously with the live Salmonella vaccine can diminish the negative effect of live vaccine growth performance, reducing mortality rate, fecal shedding, and re-isolation of SE from liver, spleen, heart and cecum. The use of probiotic or prebiotic simultaneously with the application of the live Salmonella vaccine is a good practice to diminish the negative effect of the harmful bacteria and improve the growth performance of broilers. Thus, further studies may be carried out with layers and breeders.

Abstract
This study investigated protective effects of mannan oligosaccharide (MOS) inclusion on growth performance, intestinal oxidative status, and barrier integrity of cyclic heat-stressed broilers. A total of 240 one-day-old chicks were allocated into 3 treatments of 10 replicates each. Control broilers reared at a thermoneutral temperature were fed a basal diet, whereas broilers in heat stress and MOS groups raised at a cyclic high temperature (32 to 33°C for 8 h/d) were given the basal diet supplemented with 0 or 250 mg/kg MOS, respectively. Compared with control group, heat stress decreased (P < 0.05) average daily gain and feed conversion ratio during grower, finisher, and entire periods, average daily feed intake during finisher and entire periods, and ileal superoxide dismutase activity at 42 D, whereas increased (P < 0.05) rectal temperature at 21 and 42 D and jejunal malondialdehyde content at 42 D. Dietary MOS increased (P < 0.05) average daily gain, average daily feed intake, and feed conversion ratio during finisher and entire periods, but decreased (P < 0.05) jejunal malondialdehyde concentration of heat-stressed broilers at 42 D. Heat stress decreased (P < 0.05) jejunal villus height (VH) and claudin-3 gene expression at 21 D, and VH and VH: crypt depth (CD) ratio in jejunum and ileum as well as mRNA abundances of jejunal mucin 2 and occludin, and ileal mucin 2, zonula occludens-1, and occludin, and claudin-3 at 42 D, whereas increased (P < 0.05) serum D-lactate acid content at 21 and 42 D, and serum diamine oxidase activity and jejunal CD at 42 D. The MOS supplementation increased (P < 0.05) jejunal VH at 21 D, VH and VH: CD of jejunum and ileum at 42 D, mRNA abundances of jejunal occludin and ileal mucin 2, zonula occludens-1, and occludin at 42 D, whereas reduced (P < 0.05) ileal CD at 42 D. These results suggested that MOS improved growth performance, and oxidative status and barrier integrity in the intestine of broilers under cyclic heat stress.

Abstract
Mannanoligosaccharides (MOS) can be used in poultry production to modulate immunity and improve growth performance. So, we hypothesized that our enzymatic MOS could achieve the same effects in broilers. To investigate this, a total of 192 one-day-old Partridge Shank chickens were allocated to four dietary treatments consisting of six replicates with eight chicks per replicate, and they were fed a basal diet supplemented with 0, 0.5, 1 and 1.5 g MOS per kg of diet(g/kg) for42 days. Treatments did not affect the growth performance of chickens. Dietary MOS linearly increased the relative weight of the bursa of Fabricius and jejunal immunoglobulin M (IgM) and immunoglobulin G (IgG) content, whereas it linearly decreased cecal Salmonella colonies at 21 days (p < 0.05). The concentration of jejunal secretory immunoglobulin A (sIgA) and IgG at 42 days as well as ileal sIgA, IgG, and IgM at 21 and 42 days were quadratically enhanced by MOS supplementation (p < 0.05). Also, chickens fed MOS exhibited linear and quadratic reduction in jejunal malondialdehyde (MDA) accumulation (p < 0.05). In conclusion, this enzymatic MOS can improve the immune function and intestinal oxidative status of Partridge Shank chickens.

Abstract
BACKGROUND Due to the non-toxicity, abundance and biodegradability, recently more and more attention has been focused on the exploration of hemicellulose as the potential substrate for the production of liquid fuels and other value-added chemicals and materials in different fields. This review aims to summarize the current knowledge on the promising application of nature hemicellulose and its derivative products including its degradation products, its new derivatives and hemicellulosebased medical biodegradable materials in the medical and pharmaceutical field, especially for inmmune regulation, bacteria inhibition, drug release, anti-caries, scaffold materials and anti-tumor. METHODS We searched the related papers about the medical and pharmaceutical application of hemicellulose and its derivative products, and summarized their preparation methods, properties and use effects. RESULTS Two hundred and twenty-seven papers were included in this review. Forty-seven papers introduced the extraction and application in immune regulation of nature hemicellulose, such as xylan, mannan, xyloglucan (XG) and β-glucan. Seventy-seven papers mentioned the preparation and application of degradation products of hemicellulose for adjusting intestinal function, maintaining blood glucose levels, enhancing the immunity and alleviating human fatigue fields such as xylooligosaccharides, xylitol, xylose, arabinose, etc. The preparation of hemicellulose derivatives were described in thirty-two papers such as hemicellulose esters, hemicellulose ethers and their effects on anticoagulants, adsorption of creatinine, the addition of immune cells and the inhibition of harmful bacteria. Finally, the preparations of hemicellulose-based materials such as hydrogels and membrane for the field of drug release, cell immobilization, cancer therapy and wound dressings were presented using fifty-five papers. CONCLUSION The structure of hemicellulose-based products has the significant impact on properties and the use effect for the immunity, and treating various diseases of human. However, some efforts should be made to explore and improve the properties of hemicellulose-based products and design the new materials to broaden hemicellulose applications.

Abstract
Two experiments were conducted to investigate the potential use of dried cassava pulp (DCP) supplemented with enzymes as an alternative feed ingredient in laying hen diets. In experiment 1, 45 laying hens (Isa Brown) aged 45 weeks were placed in individual cages to measure nutrient digestibility for 10 days. Nine dietary treatments were control and DCP as a replacement for corn at 20, 25, 30, and 35% supplemented with mixed enzymes (cellulase, glucanase, and xylanase) at 0.10 and 0.15%. Results showed that the use of DCP at 20-35% added with mixed enzymes had no negative effects on dry matter digestibility, while organic matter digestibility and nitrogen retention decreased with increased DCP up to 30-35% in diets. Both enzyme levels (0.10 and 0.15%) showed similar results on nutrient digestibility and retention. In experiment 2, a total of 336 laying hens aged 32 weeks were randomly allocated to seven dietary treatments (control and DCP-substituted diets at 20, 25, and 30%) supplemented with mixed enzymes (0.10 and 0.15%). Diets incorporated with 20-30% of DCP and supplemented with mixed enzymes at both levels had no significant effects on egg production, egg weight, feed intake, egg mass, feed conversion ratio, protein efficiency ratio, or egg quality, except for egg yolk color being decreased with an increase of DCP in diets (P < 0.05). In conclusion, it is suggested that DCP supplemented with enzymes can be used as an energy source in laying hen diets up to 30% without showing negative effects on nutrient digestibility, productive performance, or egg quality.

Abstract
This study evaluated the effect of yeast-derived products on growth performance, gut lesion score, intestinal population of Clostridium perfringens, and local innate immunity of broiler chickens challenged with C. perfringens. One-day-old broiler chickens were randomly assigned to eight dietary treatments providing six replicate pens of 55 birds each per treatment. Dietary treatments consisted of Control diets without and with C. perfringens challenge, and diets containing bacitracin methylene disalicylate (BMD, 55 g/tonne), nucleotides (150 g/tonne), yeast cell wall (YCW, 300 g/tonne), and a commercial product Maxi-Gen Plus (1 kg/tonne) fed to chickens challenged with C. perfringens. Diets containing 10% distillers dried grains with solubles without and with C. perfringens challenge were also used. Birds were orally challenged with C. perfringens (10(8) colony-forming units (cfu)/bird) on day 14. On day 21, intestinal samples were collected for gene expression analysis. Pathogen challenge significantly (P < 0.05) impaired feed intake, body weight gain, and feed conversion ratio (FCR) shortly after the challenge (14-21 days). Increased C. perfringens counts and intestinal lesion scores were observed for challenged birds except the BMD-containing diet. Over the entire trial (1-35 days), no difference in growth performance was observed except the BMD diet which improved FCR over the Control, challenged group. Birds receiving nucleotides showed increased expression of toll-like receptors and cytokines interleukin (IL)-4 and IL-18 compared to the Control, challenged group. Expression of macrophage mannose receptor and IL-18 was upregulated in birds receiving YCW. Increased expression of cytokines and receptors involved in innate immunity in broilers receiving nucleotides and YCW suggests the immunomodulatory properties of these products under pathogen challenge conditions.

Abstract
The identification of specific bacterial species influenced by mannan oligosaccharide (MOS) supplementation may assist in the formulation of new and improved diets that promote intestinal health and improve bird performance, offering suitable alternatives to antimicrobials in feed for sustainable poultry production. This study has been conducted to evaluate the use of a MOS compound derived from the yeast cell wall of Saccharomyces cerevisiae on turkey performance, bacterial community structure and their phylogenetic associations. A 42-day turkey trial was carried out on birds fed control and MOS-supplemented diets. Bird performance data (weight gains, feed consumption and feed efficiency ratios) were collected, and caecal contents were extracted from randomly caught poults on days 28, 35 and 42 posthatch. Bird performance data showed no improvements as a result of dietary supplementation. Automated ribosomal intergenic spacer analysis (ARISA) revealed the bacterial community structure to be significantly altered on days 28 and 35 posthatch but not day 42 as a result of dietary supplementation. This technique was coupled with 16S rRNA gene sequence analysis to elucidate phylogenetic identities of bacteria. The dominant bacteria of the caecum on all days in both treatment groups were members of phylum Firmicutes, followed by the Bacteroidetes and Proteobacteria phyla, respectively. Statistical analysis of the 16S rRNA gene libraries showed that the composition of the MOS clone library differed significantly to the control on day 35 posthatch. It can be concluded that MOS alters the bacterial community structure in the turkey caecum.

Abstract
This study investigated the effects of dietary supplementation with a prebiotic mannan oligosaccharide (MOS) on broiler performance, bacterial community structure, and phylogenetic populations of cecal contents. Bird performance data were collected, and cecal samples were extracted from randomly caught poults from each treatment group every 7 days from hatching to the age of 42 days. Weight gain, feed consumption, and feed efficiency ratios did not differ significantly between groups. Automated ribosomal intergenic spacer analysis (ARISA) of the bacterial communities in birds receiving MOS-supplemented diets indicated that dietary supplementation with MOS at either of 2 levels significantly altered the bacterial community structure from that of the control group on all sample days. The phylogenetic identities of bacteria contained within the cecum were determined by constructing a 16S rRNA gene clone library. A total of 594 partial 16S rRNA gene sequences from the cecal contents were analyzed and compared for the three dietary treatments. The dominant bacteria of the cecum belonged to three phyla, Firmicutes, Bacteroidetes, and Proteobacteria; of these, Firmicutes were the most dominant in all treatment groups. Statistical analysis of the bacterial 16S rRNA gene clone libraries showed that the compositions of the clone libraries from broilers receiving MOS-supplemented diets were, in most cases, significantly different from that of the control group. It can be concluded that in this trial MOS supplementation significantly altered the cecal bacterial community structure.

Abstract
Foot pad dermatitis (FPD) is very common in turkeys and it is an animal health and welfare issue affecting not only performance and walking ability but also the carcass quality. Thus, there is a great need to find out the preventive measures against this problem. The potential roles of extra dietary biotin, Zn and mannan-oligosaccharides (MOS) in preventing the development of FPD were assessed in this study which was conducted on 2-week-old female turkeys over a period of 4 weeks. The birds were allotted to four groups, with 29 each, and housed on dry wood shavings in floor pens. The turkeys were fed a control (300 μg biotin and 50 mg Zn/kg), high biotin (2000 μg/kg), high Zn (150 mg/kg) or MOS (1%) diet. Half of the turkeys in each group were additionally exposed to wet litter (27% DM) for 8 h daily in adjacent separate boxes. Foot pads of the birds were examined on days 0, 7, 14, 21 and 28 and assessed macroscopically and histopathologically for foot pad lesions. High dietary levels of biotin or Zn significantly reduced the severity of FPD on dry litter (score 1 vs. 2 in control) but not on wet litter. However, MOS did not affect the severity of foot pad lesions either on dry or wet litter. In addition, the severity was overall substantially higher on wet (approximately three times) than on dry litter. The present results suggest that adding high levels of biotin or Zn to the diet could reduce the development and severity of FPD on dry litter but without having any preventive effects on wet litter. Finally, the high litter moisture appears to be the major factor resulting in FPD. Therefore, the litter should be maintained dry to minimize the prevalence and severity of FPD in turkeys.

Abstract
Yeast extracts (YE) contain biological response modifiers that may be useful as alternatives to antibiotics for controlling pathogens in poultry production and mitigating the deleterious effects of production stressors. The objective of the present study was to determine the ability of a commercial dietary YE (Alphamune) to modulate the immune response in male turkey poults challenged with Escherichia coli and subjected to transport stress. Alphamune was added to turkey poult diets at 0, 500, or 1,000 g/ton. Poults were challenged by air sac injection with 60 cfu of E. coli at 1 wk of age. At 3 wk of age, these challenged birds were subjected to transport stress and birds were bled and necropsied the following morning. Blood cell numbers and percentages, hematological parameters, and clinical chemistry values were determined. Oxidative burst activity of isolated heterophils was measured using stimulation with phorbol myristate acetate and a 2',7'-dichlorofluorescein diacetate assay. Data were analyzed using GLM and least squares means procedures of the SAS program. The numbers and percentages of heterophils in peripheral blood were increased and their oxidative burst activity was stimulated by YE. The stress challenge dramatically increased oxidative burst and this increase was significantly modulated by YE treatment. Serum levels of calcium, phosphorus, and triglycerides were decreased and uric acid levels, erythrocyte numbers, hemoglobin, and hematocrit were increased by YE supplementation. Bacteria were isolated from the air sac and liver of a lower percentage of birds provided with YE. These results suggest that dietary YE has potential as a nonantibiotic alternative for decreasing bacterial pathogens in turkey production.

Abstract
1. This study investigated the effects of beta1-4 Mannobiose (MNB)-supplemented feeds on the kinetics of Salmonella enterica serovar Enteritidis (SE) in broilers and the ensuing histopathological changes. D-Mannose (MAN) was used for comparison. The diets supplemented with MNB or MAN were fed during the first two weeks after hatching to investigate any protection against SE infection in growing birds and any immunomodulatory functions in the gut. 2. MNB-supplementation reduced SE organ colonisation, caecal carriage and faecal shedding in a time-dependent manner. The high concentrations and persistency of the SE-specific IgA response in those birds given rations supplemented with MNB or MAN were associated with a decline in SE shedding and caecal carriage in the later stages of infection. MNB was more effective against SE infection than MAN. 3. Histological examination of the caecal wall and caecal tonsils at 23 d post-infection indicated a lesser degree of intestinal pathology. An increased number of intra-epithelial mononuclear cells (mature lymphocytes and macrophages) in the lining epithelium of birds fed on the diet supplemented with MNB was accompanied by an increased number of lamina propria cells. 4. The present study indicates that feeding a diet supplemented with MNB during the first two weeks after hatching reduced susceptibility to SE infection. Supplementing the diet with MNB or MAN increased IgA production and improved SE clearance by acting as immunomodulatory agents that prevented intestinal pathology. Feeding a MNB-supplemented diet to broilers could be used as an alternative to antibiotics, because it has no adverse effects on mortality or weight gain.

Abstract
Alphamune, a yeast extract antibiotic alternative, has been shown to stimulate the immune system, increase BW in pigs, and reduce Salmonella colonization in chickens. The influence of Alphamune on gastrointestinal tract development has not been reported. Two trials were conducted to evaluate the effects of Alphamune on gut maturation of 7- and 21-d-old turkey poults. Poults were fed a standard control unmedicated turkey starter diet or the same diet supplemented with either 1 or 2 lb/ton of Alphamune (n = 18/group). Poults were weighed on d 7 and 21, euthanized, and a 2-cm section was collected from the midpoint of the duodenum, jejunum, and ileum of each bird (9 poults/d per treatment) and fixed in a 10% formalin solution for 72 h and then stained. Twenty measurements of villus height, villus surface area, lamina propria thickness, crypt depth, and density of neutral, sialomucin, and sulfomucin goblet cells were taken per section per poult. On d 7, BW were higher for the poults given the Alphamune treatments compared with control poults; however, no differences were observed on d 21. Alphamune supplementation influenced intestinal morphology differently based on gut location. Ileum villus height, surface area, lamina propria thickness, crypt depth, and neutral, sialomucin, and sulfomucin goblet cell density were enhanced with Alphamune treatments on d 7 and 21 (P < 0.05) and in a dose-dependent manner for many of the parameters evaluated. Jejunum results were mixed. Surface area, crypt depth, and sialomucin and sulfomucin goblet cells were consistently higher for the 2 lb/ton of Alphamune groups compared with the control group on d 7 and 21. Duodenum villus height, surface area, and goblet cell density were higher for the 2 lb/ton of Alphamune groups on d 7; however, intestinal morphology of the duodenum was not different between the control and treated birds on d 21. These results suggest that feed supplemented with Alphamune can accelerate gastrointestinal maturation in turkey poults and is more pronounced in the ileum than in other portions of the small intestine.

Abstract
Two battery experiments were conducted to evaluate a commercial yeast extract feed supplement, Alphamune, in a cold stress-Escherichia coli challenge of 1-wk-old turkeys. Experiment 1 used 1-d-old male poults that were the progeny of 33-wk-old hens in their second week of lay. Experiment 2 used male poults of the same genetic line from 40-wk-old hens in their eighth week of lay. Poults were fed a standard unmedicated turkey starter diet or the same diet with either a low level (504 g/t) or a high level (1,008 g/t) of yeast extract. Challenged birds were exposed to intermittent cold stress during wk 1 to 3 and to a respiratory E. coli challenge at 1 wk of age. In both experiments, BW at wk 1 was increased by feeding yeast extract. In experiment 1, challenged, control-fed birds had decreased BW at wk 3 and feed conversion was protected by both levels of yeast extract supplementation. In experiment 2, challenge had no effect on control-fed birds; however, yeast extract decreased the BW of challenged birds. In experiment 1, total leukocyte numbers were decreased by challenge of control-fed birds only, and there was no effect of challenge on the heterophil/lymphocyte ratio. In experiment 2, total leukocyte numbers were decreased and the heterophil/lymphocyte ratio was increased in challenged, control-fed birds. Percentage mortality was not affected by challenge in experiment 1; however, in experiment 2, mortality was increased by challenge of control-fed birds and those fed the lower level of yeast extract. These results suggest that hen age should be considered when designing studies to evaluate antibiotic alternatives and in making decisions for incorporating such alternatives into production.
