Abstract
Edible algae are a natural source of nutrients, including iodine, and can also contain nitrogen in the form of nitrate (NO3-) and nitrite (NO2-) as they can fix nitrogen from seawater. This study aimed to analyse the NO3-, NO2-, and iodine concentrations in eighteen macroalgae and five microalgae species commercially available in the United Kingdom. NO3- and NO2- concentrations were measured using high-performance liquid chromatography (HPLC), and iodine was determined using inductively coupled plasma mass spectrometry (ICP-MS). NO3- and iodine concentrations in macroalgae (NO3-: 4050.13 ± 1925.01 mg/kg; iodine: 1925.01 ± 1455.80 mg/kg) were significantly higher than in microalgae species (NO3-: 55.73 ± 93.69 mg/kg; iodine: 17.61 ± 34.87 mg/kg; p < 0.001 for both). In the macroalgae group, nori had the highest NO3- (17,191.33 ± 980.89 mg/kg) and NO2- (3.64 ± 2.38 mg/kg) content, as well as the highest iodine content. Among microalgae, Dunaliella salina had the highest concentration of NO3- (223.00 ± 21.93 mg/kg) and iodine (79.97 ± 0.76 mg/kg), while Spirulina had the highest concentration of NO2- (7.02 ± 0.13 mg/kg). These results indicate that commercially available edible algae, particularly macroalgae species, could be a relevant dietary source of NO3- and iodine.

Abstract
BACKGROUND The large amounts of iodine in brown seaweeds may contribute towards an adequate iodine intake, but also pose a food safety risk. In the current work we estimate the maximum amount of the cultivated brown seaweeds Saccharina latissima and Alaria esculenta (blanched and non-blanched) that can be added to white loaf-type wheat-bread so European consumers are protected against excessive chronic intakes. We use data for high-level consumers of bread with special ingredients added from the EFSA comprehensive European food consumption database to construct a conservative risk management model. We bake prototype seaweed bread and use the output from the model to assess exposure to iodine and trace metals. We also assess some bread quality parameters such as sensory characteristics, crumb firmness and specific volume. RESULTS The maximum level of iodine in bread that would mitigate the European consumer from excess intakes was 857 μg I kg-1 bread. Assuming a typical 60% wheat flour per kilogram of bread, a maximum amount of 11.3 g of dried blanched A. esculenta (115 mg I kg-1 dry weight) could be incorporated per kilogram of wheat flour into the bread recipe whilst for non-blanched S. latissima, which contained 3500 mg I kg-1 dry weight, only a minuscule 350 mg of seaweed was the limit. For prototype breads, seaweed addition had no significant impact on the specific volume and crumb firmness. Levels of cadmium and arsenic in the bread were also of low toxicological concern. CONCLUSION A maximum 1-2% brown seaweed of total flour weight could be added to bread to contribute towards European consumers' adequate iodine intake without overexposure. © 2024 The Author(s). Abstract
Algae are a booming resource in the food industry due to their several health benefits. This study assesses the impact of the combined use of selected macro- and microalgae to improve the nutritional profile and the labeling of a vegetable cream by the introduction of nutrition and health claims. As macroalgae, two Ascophyllum nodosum L., one natural (An) and one smoked (AnS), were selected for their high iodine concentration and flavor notes. A new strain of Chlorella vulgaris, golden (CvG), was selected as the microalgae, which is rich in proteins and has a neutral sensorial profile (golden color and mild flavor). In this study, two vegetable creams were compared. The control (CTRL) versus one enriched with a mixture of macroalgae and microalgae (CV-AN). Sensory, physicochemical, and functional properties of both vegetable creams were evaluated. The bioactivity assessed was the effect of iodine as a health claim and antioxidant and antihypertensive properties. CV-AN vegetable cream showed significantly higher values (p < 0.05) for protein content, iodine value, and antioxidant activity, with no significant differences (p > 0.05) in antihypertensive activity or sensory panel. The incorporation of these algae resulted in a vegetable cream with a better nutritional profile and sensory acceptability comparable to the control, offering protein and iodine source claims in the labeling.

Abstract
Human urine is rich in nitrogen and phosphorus, and the presence of these elements in wastewater significantly disrupts the biogeochemical cycle. Meanwhile, green algal biomass cultivation is unfeasible without these nutrients. Hence, the present study integrates wastewater treatment and algae cultivation to extract biodiesel and improve its performance through fuel modification. Chlorella vulgaris algae was cultivated in different dilution ratios of water and urine, and the nutrient removal rate was analyzed. Chlorella vulgaris algae biodiesel (CAB) was derived through Bligh and Dyer's method followed by transesterification, and its functional and elemental groups were analyzed. The various volume concentrations of CAB were blended with regular diesel fuel (RDF), and 10% water was added to a 30% CAB blended RDF to evaluate the combustion performance and environmental impacts. The results of the experiments demonstrated that the algae cultivation effectively removed the wastewater nutrients. The functional and elemental groups of CAB are identical to those of RDF. The engine characteristics of test fuels report that the CAB-blend RDF fuel mixtures generate low carbon footprints, whereas negative impacts have been drawn for performance metrics and oxides of nitrogen emissions. The water-emulsified fuel outweighed the unfavorable effects and promoted more efficient and cleaner combustion.

Abstract
Driven by a surge in global interest in natural products, macroalgae or seaweed, has emerged as a prime source for nutraceuticals and pharmaceutical applications. Characterized by remarkable genetic diversity and a crucial role in marine ecosystems, these organisms offer not only substantial nutritional value in proteins, fibers, vitamins, and minerals, but also a diverse array of bioactive molecules with promising pharmaceutical properties. Furthermore, macroalgae produce approximately 80% of the oxygen in the atmosphere, highlighting their ecological significance. The unique combination of nutritional and bioactive attributes positions macroalgae as an ideal resource for food and medicine in various regions worldwide. This comprehensive review consolidates the latest advancements in the field, elucidating the potential applications of macroalgae in developing nutraceuticals and therapeutics. The review emphasizes the pivotal role of omics approaches in deepening our understanding of macroalgae's physiological and molecular characteristics. By highlighting the importance of omics, this review also advocates for continued exploration and utilization of these extraordinary marine organisms in diverse domains, including drug discovery, functional foods, and other industrial applications. The multifaceted potential of macroalgae warrants further research and development to unlock their full benefits and contribute to advancing global health and sustainable industries.

Abstract
BACKGROUND About 35-45% of the global population is affected by iodine deficiency. Iodine intake can be increased through the consumption of biofortified vegetables. Given the increasing interest in wild edible species of new leafy vegetables due to their high nutritional content, this study aimed to evaluate the suitability of Swiss chard (Beta vulgaris ssp. vulgaris var. cicla) and its wild ancestor sea beet (Beta vulgaris ssp. maritima) to be fortified with iodine. Plants were cultivated hydroponically in a nutrient solution enriched with four different concentrations of iodine (0, 0.5, 1.0, and 1.5 mg L-1 ), and the production and quality of baby leaves were determined. RESULTS Sea beet accumulated more iodine than Swiss chard. In both subspecies, increasing the iodine concentration in the nutrient solution improved leaf quality as a result of greater antioxidant capacity - the ferric reducing ability of plasma (FRAP) index increased by 17% and 28%, at 0.5 and 1.5 mg L-1 iodine, respectively - the content of flavonoids (+31 and + 26%, at 1 and 1.5 mg L-1 of iodine, respectively), and the lower content of nitrate (-38% at 1.5 mg L-1 of iodine) and oxalate (-36% at 0.5 mg L-1 of iodine). In sea beet, however, iodine levels in the nutrient solution higher than 0.5 mg L-1 reduced crop yield significantly. CONCLUSIONS Both subspecies were found to be suitable for producing iodine-enriched baby leaves. The optimal iodine levels in the nutrient solution were 1.0 in Swiss chard and 0.5 mg L-1 in sea beet, as crop yield was not affected at these concentrations and leaves contained enough iodine to satisfy an adequate daily intake with a serving of 100 g. © 2023 Society of Chemical Industry.

Abstract
Objective To promote the development and therapeutic application of new medications, it is crucial to conduct a thorough investigation into the mechanism by which the traditional Chinese herb pair of Haizao-Kunbu (HK) treats Graves' disease (GD). Materials and methods Chemical ingredients of HK, putative target genes, and GD-associated genes were retrieved from online public databases. Using Cytoscape 3.9.1, a compound-gene target network was established to explore the association between prosperous ingredients and targets. STRING, Gene Ontology, and Kyoto Encyclopedia of Genes and Genomes pathway analyses visualized core targets and disease pathways. Additionally, we conducted a refined analysis of the binding interactions between active ingredients and their respective targets. To visualize these findings, we employed precise molecular docking techniques. Furthermore, we carried out molecular dynamics simulations to gain insights into the formation of more tightly bound complexes. Results We found that there were nine key active ingredients in HK, which mainly acted on 21 targets. These targets primarily regulated several biological processes such as cell population proliferation, protein phosphorylation, and regulation of kinase activity, and acted on PI3K-AKT and MAPK pathways to treat GD. Analysis of the molecular interaction simulation under computer technology revealed that the key targets exhibited strong binding activity to active ingredients, and Fucosterol-AKT1 and Isofucosterol-AKT1 complexes were highly stable in humans. Conclusion This study demonstrates that HK exerts therapeutic effects on GD in a multi-component, multi-target, and multi-pathway manner by regulating cell proliferation, differentiation, inflammation, and immunomodulatory-related targets. This study provides a theoretical foundation for further investigation into GD.

Abstract
The seaweed Saccharina latissima is often blanched to lower iodine levels, however, it is not known how blanching affects protein extraction. We assessed the effect of blanching or soaking (80/45/12 °C, 2 min) on protein yield and protein extract characteristics after pH-shift processing of S. latissima. Average protein yields and extract amino acid levels ranked treatments as follows: blanching-45 °C ∼ control > soaking ∼ blanching-80 °C. Although blanching-45 °C decreased protein solubilization yield at pH 12, it increased isoelectric protein precipitation yield at pH 2 (p < 0.05). The former could be explained by a higher ratio of large peptides/proteins in the blanched biomass as shown by HP-SEC, whereas the latter by blanching-induced lowering of ionic strength, as verified by a dialysis model. Moreover, blanching-45 °C yielded a protein extract with 49 % less iodine compared with the control extract. We recommend blanching-45 °C since it is effective at removing iodine and does not compromise total protein extraction yield.

Abstract
The aim of this research was to estimate the effect of a vegan diet on the Recommended Dietary Allowance (RDA) coverage for iodine in people from Poland. It was hypothesized that the problem of iodine deficiency is a concern, especially among vegans. The survey study was conducted in the years 2021-2022 on 2200 people aged 18-80 with omnivore and vegan diets. The exclusion criteria in the study were pregnancy and lactation. The study found that the coverage of RDA for iodine among people with a vegan diet was lower than among people with an omnivore diet (p < 0.05); 90% of the participants with a vegan diet had an iodine intake below 150 µg/day. Plant-based dairy and meat analogs were consumed by vegans frequently and in large portions, but none were fortified with iodine. It was found that iodized salt was each group's primary source of iodine. However, it was observed that the iodine supply from this source was limited among vegans, especially in female subjects, who consumed less salt and smaller portions of meals. That is why consideration should be given to the iodine fortification of plant-based foods commonly consumed by vegans.

Abstract
EFSA assessed the relevance of seaweed and halophyte consumption to the dietary exposure to heavy metals (arsenic, cadmium, lead and mercury) and the iodine intake in the European population. Based on sampling years 2011-2021, there were 2,093 analytical data available on cadmium, 1,988 on lead, 1,934 on total arsenic, 920 on inorganic arsenic (iAs), 1,499 on total mercury and 1,002 on iodine. A total of 697 eating occasions on halophytes, seaweeds and seaweed-related products were identified in the EFSA Comprehensive European Food Consumption Database (468 subjects, 19 European countries). From seaweed consumption, exposure estimates for cadmium in adult 'consumers only' are within the range of previous exposure estimates considering the whole diet, while for iAs and lead the exposure estimates represent between 10% and 30% of previous exposures from the whole diet for the adult population. Seaweeds were also identified as important sources of total arsenic that mainly refers, with some exceptions, to organic arsenic. As regards iodine, from seaweed consumption, mean intakes above 20 μg/kg body weight per day were identified among 'consumers only' of Kombu and Laver algae. The impact of a future increase in seaweed consumption ('per capita') on the dietary exposure to heavy metals and on iodine intake will strongly depend on the seaweeds consumed. The exposure estimates of heavy metals and iodine intakes in 'consumers only' of seaweeds were similar to those estimated in a replacement scenario with selected seaweed-based foods in the whole population. These results underline the relevance of the current consumption of seaweeds in the overall exposure to different heavy metals and in the intake of iodine. Recommendations are provided for further work needed on different areas to better understand the relationship between seaweed consumption and exposure to heavy metals and iodine intake.

Abstract
Suboptimal iodine status is a prominent public health issue in several European coun-tries. Brown algae have a high iodine content that, upon intake, may exceed the recommended dietary intake level, but iodine bioavailability has been reported to be lower than from potassium iodide (KI) and highly depends on algae species. Further, potential negative effects from other components in algae, such as cadmium (Cd) and arsenic (As), have also been addressed. In this study, we observed a lower bioavailability of iodine from farmed sugar kelp (Saccharina latissima) than from KI in female Wistar IGS rats. Urinary iodine excretion was 94-95% in rats fed KI and 73-81% in rats fed sugar kelp, followed by increased faecal iodine levels in rats fed sugar kelp. No effects on body weight, feed efficiency, or plasma markers for liver or kidney damage were detected. The highest dose of iodine reduced plasma free thyroxine (fT4) and total T4 levels, but no significant effects on circulating levels of thyroid-stimulating hormone (TSH) and free triiodo-thyronine (fT3) were detected. Faeces and urine measurements indicate that 60-80% of total As and 93% of Cd ingested were excreted in rats fed 0.5 and 5% kelp. Liver metabolomic profiling demonstrates that a high inclusion of sugar kelp in the diet for 13 weeks of feeding modulates metabolites with potential antioxidant activity and phytosterols.

Abstract
An important challenge for mankind today is to find a plant-based source of iodine, instead of table salt, which would provide the recommended daily dosage of iodine. The aim of this work was to study the accumulation of iodine and the physiochemical changes in bean (Phaseolus vulgaris L.) and pea (Pisum sativum L.) irrigated with iodine-containing water. Applying iodine at concentration of 0.5 mg L-1 resulted 51, 18, and 35% decrement in biomass of bean fruit, while in pea fruit, a 13% reduction and a 3 and 2% increment were observed when the plants were cultivated in sand, sandy silt, and silt, respectively. The highest iodine concentrations in the bean and pea fruits were detected in plants cultivated in silt soil with concentration of 0.5 mg I- L-1 and amounted to 1.6 and 0.4 mg kg-1, respectively. In presence of iodine at concentration of 0.5 mg L-1, the concentration of magnesium, phosphorous, manganese and iron increased in the bean fruit, while in the case of pea, at iodine concentration above 0.1 mg L-1 the uptake of these nutrients were hampered. Based on these facts, the iodized bean can be recommended as a possible food source to enhance the iodine intake.
