Abstract
Deoxynivalenol (DON) is a common mycotoxin in food that mainly pollutes grain crops and feeds, such as barley, wheat and corn. DON has caused widespread concern in the field of food and feed safety. In this study, a colorimetric immunoassay was proposed based on the aggregation of gold nanoparticles (AuNPs) due to the decomposition of Mn2+ from gold-coated manganese dioxide (AuNP@MnO2) nanosheets. In this study, 2-(dihydrogen phosphate)-l-ascorbic acid (AAP) was hydrolyzed by alkaline phosphatase (ALP) and converted to ascorbic acid (AA). Then, AuNP@MnO2 was reduced to Mn2+ and AuNPs aggregation occurred. Using the unique optical characteristics of AuNPs and AuNP@MnO2, visible color changes realized simple detection of DON with high sensitivity and portability. With increasing DON content, the color changed more obviously. To quantitatively detect DON, pictures can be taken and the blue value can be read by a smartphone. The detection limit (Ic10) of this method was 0.098 ng mL-1, which was 326 times higher than that of traditional competitive ELISA, and the detection range was 0.177-6.073 ng mL-1. This method exhibited high specificity with no cross-reaction in other structural analogs. The average recovery rate of DON in corn flour samples was 89.1 %-110.2 %, demonstrating the high accuracy and stability of this assay in actual sample detection. Therefore, the colorimetric immunoassay can be used for DON-related food safety monitoring.

Abstract
Exposure to vomitoxin (DON) can negatively impact the intestinal health of livestock and poultry, leading to compromised nutrient absorption and utilization, resulting in slowed growth and reduced production efficiency. In this study, we synthesized carbonated chitosan montmorillonite intercalation complexes (CCM) through solution precipitation. The successful formation of intercalation complexes was confirmed by examining functional groups and surface features using infrared spectroscopy and scanning electron microscopy. To assess the impact of CCM on DON-infected mice, we established an experimental mouse model of jejunal inflammation induced by DON infection. We analyzed the effects of CCM on blood biochemical and conventional indices, jejunal inflammatory factors, pathological changes, and the expression of proteins in the MAPK pathways in DON-infected mice. Our results indicate that CCM effectively mitigates the adverse effects of DON on growth performance, jejunal injury, and the inflammatory response in mice. CCM supplementation alleviated the negative effects of DON infection on growth performance and reduced intestinal inflammation in mice. Moreover, CCM supplementation successfully inhibited the activation of the mitogen-activated protein kinase (MAPK) signaling pathway induced by DON. These findings suggest that the mitigating effect of CCM on DON-induced inflammatory injury in the murine jejunum is closely linked to the regulation of the MAPK signaling pathway.

Abstract
Poultry meat is becoming one of the most important animal protein sources for human beings in terms of health benefits, cost, and production efficiency. Effective genetic selection and nutritional programs have dramatically increased meat yield and broiler production efficiency. However, modern practices in broiler production result in unfavorable meat quality and body composition due to a diverse range of challenging conditions, including bacterial and parasitic infection, heat stress, and the consumption of mycotoxin and oxidized oils. Numerous studies have demonstrated that appropriate nutritional interventions have improved the meat quality and body composition of broiler chickens. Modulating nutritional composition [e.g., energy and crude protein (CP) levels] and amino acids (AA) levels has altered the meat quality and body composition of broiler chickens. The supplementation of bioactive compounds, such as vitamins, probiotics, prebiotics, exogenous enzymes, plant polyphenol compounds, and organic acids, has improved meat quality and changed the body composition of broiler chickens.

Abstract
In order to reduce the negative effects caused by oxidative stress on broilers, it is particularly important to find ways to alleviate oxidative stress. As a natural plant extract, L-theanine has a variety of biological effects, such as improving antioxidant capacity, promoting growth, and enhancing immunity and antitumor. This trial evaluated the effects of dietary supplementation of L-theanine on growth performance, antioxidation, meat quality, and intestinal microflora in 817 White Feather Broilers. A total of 108 21-day-old 817 broilers with similar body weight (BW) were randomly divided into three groups with six replicates per group and six chickens within each replicate. The three groups were corn-soybean-based diet (NC group); basal diet plus drinking water with 30 mg hydrocortisone/kg (PC group); and basal diet supplemented with 400 mg L-theanine/kg plus drinking water with 30 mg hydrocortisone/kg (LT group). Compared with the NC group, from 21 to 24 days of age, the PC and LT groups had decreased BW, average daily gain (ADG), and average daily feed intake (ADFI), and increased feed to gain ratio (F/G; p < 0.05). At 24 days of age, the LT group had improved superoxide dismutase (SOD) and glutathione peroxidase (GSH-Px) activities in serum as compared to the NC group (p < 0.05). The LT group broilers also had significantly higher concentrations of malondialdehyde (MDA) in serum and liver (p < 0.05). On the 42nd days, the PC group had lower PH45min (p < 0.05) than the NC and LT groups and higher cooking loss and shear force (p < 0.05). Moreover, the villi height of the PC group was significantly lower in jejunum than the NC group (p < 0.05). The LT group had a higher ZO-1 content in duodenum than the NC and PC groups (p < 0.05). The activity of GSH-Px in the liver of the LT group was increased than in the PC group (p < 0.05). The relative abundance of Firmicutes in the LT group was significantly higher than in the NC and PC groups (p < 0.05). These results suggested that the effects of acute oxidative stress on growth performance and meat quality of broilers are continuous, and dietary supplementation of L-theanine could improve the growth performance and meat quality, enhance the intestinal mucosal barrier and antioxidant capacity, and improve the composition of the intestinal flora of broilers caused by acute oxidative stress.

Abstract
Deoxynivalenol (DON), a trichothecene mycotoxin produced by Fusarium species, is the most widespread mycotoxin in poultry feed worldwide. Long term-exposure from low to moderate DON concentrations can produce alteration in growth performance and impairment of the health status of birds. To evaluate the efficacy of mycotoxin-detoxifying agent alleviating the toxic effects of DON, the most relevant biomarkers of toxicity of DON in chickens should be firstly determined. The specific biomarker of exposure of DON in chickens is DON-3 sulphate found in different biological matrices (plasma and excreta). Regarding the nonspecific biomarkers called also biomarkers of effect, the most relevant ones are the impairment of the productive parameters, the intestinal morphology (reduction of villus height) and the enlargement of the gizzard. Moreover, the biomarkers of effect related to physiology (decrease of blood proteins, triglycerides, hemoglobin, erythrocytes, and lymphocytes and the increase of alanine transaminase (ALT)), immunity (response to common vaccines and release of some proinflammatory cytokines) and welfare status of the birds (such as the increase of Thiobarbituric acid reactive substances (TBARS) and the stress index), has been reported. This review highlights the available information regarding both types of biomarkers of DON toxicity in chickens.

Abstract
The mycotoxin deoxynivalenol (DON) contaminates animal feed worldwide, frequently resulting in poor performance and economic losses. Data concerning the effects on poultry health or focusing on intestinal toxicity or the response to oxidative stress are scarce. Also, there is a need for strategies to mitigate the negative effects of DON. This study aimed to investigate the effects of Lactobacillus spp. treatments on the intestine, liver and kidney of poultry fed a DON-contaminated diet. To achieve this aim, histological, morphometrical and histochemical assays were performed. The oxidative stress response was also analyzed by the tests: reduced glutathione, ferric reducing ability, reducing of 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid), nitro blue tetrazolium detection of superoxide anion, and thiobarbituric acid reactive substances. One-day-old broilers chickens (n 50) were submitted to the following treatments: control, DON (19.3 mg kg-1), viable Lactobacillus spp. + DON (VL + DON), heat-inactivated Lactobacillus spp. + DON (HIL + DON), Lactobacillus spp. culture supernatant + DON (LCS + DON). The animals received the contaminated diet for seven days. DON increased the intestinal and liver lesion score, while the Lactobacillus spp. treatments (LT) remained like the control. DON reduced the villi height and increased the crypt depths. The LT showed crypt depths similar to control, and higher villi: crypt ratio in duodenum and jejunum. In the ileum, the LT reduced the goblet cell count in relation to DON group. DON increased the number of intraepithelial lymphocytes (IEL) in jejunum and ileum, while the VL + DON treatment induced a significant decrease in IEL in comparison to DON. DON-diet induced an oxidative stress response in the intestine and liver, and also reduced the antioxidant capacity in these tissues, while LT treatments remained mostly similar to control. DON induced no change in redox balance in the kidney. The LT improved the intestinal health after DON acute exposure, reducing the oxidative stress damage mainly on jejunum and liver.

Abstract
Simple Summary The presence of mycotoxins in products intended for consumption is harmful to the health of both people and animals. One of the most abundant mycotoxins in mink’s feed, often contaminating cereal grains, is a mycotoxin produced by the fungi Fusarium spp. deoxynivalenol (DON). The aim of the study was to investigate whether and how the long-term supply of this mycotoxin in feed influences the skin of adult female minks. An additional objective was to assess the effects of the bentonite additive to feed contaminated by DON, which has the ability to reduce the impact of mycotoxins. The scrapes of the skin were collected from animals after euthanasia and before pelting. After preparing histological slides, samples were examined microscopically. The thickness of the epidermis and dermis was investigated and the presence of elastin and collagen. These parameters determine the quality of the fur skins and economic aspect of this animal husbandry. The results showed that DON causes a decrease in the presence of total collagen and absence of immature collagen, thus reducing the elasticity and flexibility of the skin. The addition the bentonite to feed stimulates the production of collagen, restoring the proper relationship between the tested parameters in mink’s skin. Abstract Deoxynivalenol (DON, vomitoxin) is considered one of the most dangerous mycotoxins contaminating cereal products for food and feed. One of the protective methods against the adverse effect of DON on mink health is to use a component such as bentonite as a feed supplement to allow toxins absorption. The aim of this study was to determine the effect of DON, administered alone or with bentonite, on the histological structure of the skin and the content of collagen and elastin. A multiparous minks from control group (not exposed to DON) and a study groups receiving fed with DON-containing wheat for seven months: I: at a concentration of 1.1 mg/kg of feed, II: at a concentration of 3.7 mg/kg, III: DON at a concentration of 3.7 mg/kg and bentonite at a concentration of 0.5 kg/1000 kg of feed (0.05%) and IV: DON at a concentration of 3.7 mg/kg and bentonite at a concentration 2 kg/1000 kg (0.2%). After performing euthanasia and before pelting, skin samples of 2 cm in diameter were drawn from the multiparous minks from the lateral surface of the right anterior limb. Our obtained results clearly indicate that DON administered for a period of seven months at a dose of 1.1 mg/kg significantly changes the thickness of skin of a multiparous mink. It causes an increase in the percentage of elastin from 5.9% to 9.4% and a decrease in immature collagen, which results in a change in the collagen/elastin ratio from 10/1 to 5/1. A dose of 3.7 mg/kg DON in feed without or with 0.05% bentonite causes the absence of immature collagen in the dermis, but the addition of 0.2% bentonite in the feed reveals the presence of immature collagen and increase the percentage of the elastin.

Abstract
Simple Summary The extensive use of antibiotics in the poultry industry to increase production performance has led to human health hazards. The use of natural herbs as antibiotic substitutes has been reported in the poultry feed industry. Therefore, the objective of this review was to determine the effect of different levels of mushrooms and their extract in diet on laying performance and health status. On the basis of previous findings, dietary supplementation using mushrooms as a natural feed supplement sustained laying performance and improved immunity in laying hens. Abstract Application of different medicinal mushrooms intended to enhance production performance and health status has created an importance demand in poultry production. One goal of using medicinal mushrooms is to get rid of antibiotics in poultry feed without affecting the optimum performance. Increasing concerns about this issue have led to more attention on antibiotic substitutes and a significant demand for them for organic egg production. Thus, supplementation with medicinal mushrooms is a new concept for research in layer production, however, there is still a great deal of confusion about inclusion levels and the mode of action of medicinal mushrooms on production performance and health status in laying hens. Taking this into account, this review outlines the experimental uses of medicinal fungi on the growth performance, laying performance, egg quality, and health status of layer birds based on previous findings to date. Finally, we highlight that supplementation with medicinal fungi can play a role on the immunity, health, and production performance in laying hens.
