Abstract
This study aimed to identify for the first time protein biomarkers of meat quality traits from Longissimus thoracis (LT) muscle of goats (Capra hircus). Male goats of similar age and weight reared under extensive rearing conditions were used to relate the LT muscle proteome with multiple meat quality traits. The early post-mortem muscle proteome analyzed using label-free proteomics was compared among three texture clusters built using hierarchical clustering analysis. Twenty-five proteins were differentially abundant and their mining using bioinformatics revealed three major biological pathways to be involved: 10 muscle structure proteins (MYL1, MYL4, MYLPF, MYL6B, MYH1, MYH2, ACTA1, ACTBL2, FHL1 and MYOZ1); 6 energy metabolism proteins (ALDOA, PGAM2, ATP5F1A, GAPDH, PGM1 and ATP5IF1), and two heat shock proteins: HSPB1 (small) and HSPA8 (large). Seven other miscellaneous proteins belonging to pathways such as regulation, proteolysis, apoptosis, transport and binding, tRNA processing or calmodulin-binding were further identified to play a role in the variability of goat meat quality. The differentially abundant proteins were correlated with the goat meat quality traits in addition to multivariate regression models built to propose the first regression equations of each quality trait. This study is the first to highlight in a multi-trait quality comparison the early post-mortem changes in the goat LT muscle proteome. It also evidenced the mechanisms underpinning the development of several quality traits of interest in goat meat production along the major biochemical pathways at interplay. SIGNIFICANCE: The discovery of protein biomarkers in the field of meat research is an emerging topic. In the case of goat meat quality, very few studies using proteomics have been conducted with the aim of proposing biomarkers. Therefore, this study is the first to quest for biomarkers of goat meat quality using label-free shotgun proteomics with a focus on multiple quality traits. We identified the molecular signatures underlying goat meat texture variation, which were found to belong to muscle structure and related proteins, energy metabolism and heat shock proteins along with other proteins involved in regulation, proteolysis, apoptosis, transport and binding, tRNA processing or calmodulin-binding. We further evaluated the potential of the candidate biomarkers to explain meat quality using the differentially abundant proteins by means of correlation and regression analyses. The results allowed the explanation of the variation in multiple traits such as pH, color, water-holding capacity, drip and cook losses traits and texture.

Abstract
BACKGROUND Two dairy goat farms with high level of lameness in lactating animals were presented for further investigation. Farm 1 and Farm 2 presented with 37 and 67% morbidity, respectively. Both farms had an all year round indoor system, feeding ad libitum concentrate with forage available at all times. CASE PRESENTATION The lameness was found to be based in the foot. Previous treatments consisting of biweekly footbathing with zinc sulphate, spraying lesions with oxytetracycline spray and packing lesions with copper crystals on a single occasion and single injections with long acting oxytetracycline had not been successful. Mild cases had signs of haemorrhaging in the white line or on the sole of the foot. Moderate cases showed under running of the wall horn or small areas of exposed sole corium. Severe cases would consist of horn or wall separation with the corium exposed and infected. In extreme cases only the wall horn of the claw remained, with a large area of necrotic tissue in the centre and no healthy corium visible. Only one animal was seen to have interdigital lesions. Polymerase chain reaction (PCR) and culture of swabs taken from exposed corium and the interdigital space were negative for Dichelobacter nodosus but PCR for treponemes were positive in both the adults and the youngstock tested. Due to the high level of concentrate in the diet of these goats, nutrition was thought to contribute to the problem. Transcutaneous rumen fluid samples were taken and pH was measured on both farms, with 35% of the samples below pH value 5.5. CONCLUSION No definite diagnosis could be made. However, the results suggest both treponemes and nutrition play a role in the aetiology of the lameness. The initial sole or wall horn lesions were thought to be secondarily infected by treponemes. Further investigation is needed to definitively diagnose the cause and contributing factors for this lameness.

Abstract
The effects of 18 essential oils, yeast, Quebracho tannin and Quillaja saponin on ruminal methane and gas production (GP) were studied in vitro. A lactating cow diet was incubated with rumen inoculum. Doses of the additives (mg/L) were: essential oils = 500; tannin = 67; yeast = 8.35 and 16.7; and saponin = 300. Lemongrass, estragole, eugenol, geraniol, limonen, thyme oil and thymol produced less gas (overall mean 33.8 mL/200 mg dry matter (DM)) than control (43.6 mL/200 mg DM; P < 0.001). Methane produced (mL/200 mg DM) by guaiacol (10.7), lemongrass (9.6), limonene (11.4), thyme oil (10.9) and thymol (2.1) was lower than control (12.5) (P < 0.001). Methane percentage on total GP was lower (P < 0.001) for cinnamic alcohol (25.4), guaiacol (24.5), thymol (19.7) and vanillin (26.3) than control (28.8). In a second experiment, thymol, guaiacol and yeast were added to the diet of dry fistulated cows to determine in situ neutral detergent fiber digestibility (NDFD) of six forages and in vivo dietary NDFD. Thymol and yeast decreased in situ NDFD after 24 h (33.9% and 33.5% vs. 38.1%; P = 0.008). Thymol decreased in vivo total tract NDFD (40.8% vs. 51.4%; P = 0.02). Differences in GP and methane levels were registered within classes of additives. A careful selection of additives may allow for the manipulation of ruminal fermentation.

Abstract
The effect of feeding different levels of foliage from Erythrina variegata on the performance of growing goats was studied using a local breed (Ma T'ou) with an average initial body weight of 11.2 kg (SD = 0.9). Twenty-four animals were allocated to a randomized design, with six animals (three males and three females) per treatment. The treatments were four different levels of replacement of the diet crude protein (CP) with CP from Erythrina foliage (EF) at 0 % (E-0), 20 % (E-20), 40 % (E-40), and 60 % (E-60). There were no significant differences in the dry matter (DM) intake between treatments, but total CP intake was significantly higher in the goats fed the diet E-60 compared to E-20 (61.1 and 51.4 g/day, respectively). The average daily liveweight gain of the goats did not differ between treatments and ranged from 51 to 63 g/day. Sixteen animals were kept in metabolism cages for a digestibility study and given with the same four diets as in the main experiment. The digestibility of DM, organic matter, neutral detergent fiber, and acid detergent fiber was significantly higher for diet E-60 than for E-0. Neither the apparent digestibility of CP and N retention nor carcass characteristics (16 animals) differed with an increase in the level of CP from EF in the diets. In conclusion, CP from EF can replace up to 60 % of CP from a mixed diet with soybean meal without any negative effect on the growth in goats.

Abstract
Studies were conducted to determine the effects of feeding regimens on growth and carcass quality of the Creole goat, a genotype indigenous to the Caribbean. Forty kids weighing 9.0 +/- 1.2 kg of BW were reared indoors after weaning. Four supplement amounts were compared (10 kids per treatment): the G0 group received the basal diet (tropical forage, 8.8 MJ of ME and 108 g of CP/kg of DM) without concentrate, whereas the G100, G200, and G300 groups were offered 130, 230, and 310 g/d of concentrate (13.6 MJ of ME and 209 g of CP/kg of DM), respectively, in addition to the basal diet. The kids were slaughtered according to the standard procedure at 22 to 24 kg of BW for assessment of carcass traits and meat quality. Total DMI increased significantly, from 51 to 78 g/kg of BW(0.75), for G0 to G300 kids, whereas their ADG doubled from 42 to 84 g/d (P < 0.01; P < 0.01, respectively). The G:F values reached 125 to 130 for the G200 and G300 diets and were satisfactory compared with literature values. The carcass weight and dressing percentage (P < 0.01) increased from group G0 to G300, from 9 to 13 kg and from 42 to 51%, respectively. The proportions of the different cuts (related to the carcass weight) did not vary by diet. The conformation score increased significantly (P < 0.05) among the 4 groups from an average score of 3.2 to 4.0 (score/5). There was a significant effect (P < 0.01) of supplement amount on the accumulation of internal fat tissues: the kidney fat weight increased from 113 to 253 g from the G0 to the G300 group. Regardless of the feeding level and amount of internal fat, the carcasses had an acceptable fat cover score, which remained less than 2.6 (score/5). A significant effect was not observed for the ultimate pH and the main color variables of the meat. The cooking loss and the shoulder DM content varied (P < 0.05) with the supplement amount. By increasing the nutritional density of the diet, it was possible to obtain well-conformed and heavy carcasses, with no excessive fattening. Indigenous Creole goats have potential as meat animals when fed to gain more than 80 g/d. The optimal supplement supply with good-quality grass would be approximately 3.69 MJ of ME/d in our conditions. Further studies are required on meat sensory parameters and fatty acid profiles.

Abstract
To provide an economically viable and environmentally sound method for disposing of spent laying hens, we manufactured a proteinaceous meal from the hard tissue fraction of mechanically deboned laying hens (primarily feathers, bones, and connective tissue). We hydrolyzed the hard tissue and coextruded it with soybean hulls to create a novel feather and bone meal (FBM) containing 94.2% DM, 23.1% CP, 54.5% NDF, and 7.3% fat (DM basis). We evaluated the FBM in supplements for meat goats in which it provided 0, 20, 40, or 60% of the N added to the supplement compared with a negative control supplement with no added N source. The remainder of the N was contributed by soybean meal (SBM). Supplementation of N resulted in greater DMI than the negative control (P = 0.005), and DMI changed quadratically (P = 0.11) as FBM increased in the supplement. Digestibility of DM was similar in all diets, including the negative control (P > 0.10). Fiber digestibility increased linearly as dietary inclusion of FBM increased (P = 0.04 for NDF, P = 0.05 for ADF), probably as a result of the soybean hulls in the FBM. Nitrogen digestibility declined linearly from 60.5% with 0% FBM to 55.6% with 60% FBM (P = 0.07), but N retention changed by a quadratic function as FBM replaced SBM (P = 0.06). Negative control goats had less N digestibility (P < 0.001) and N retention (P = 0.008) than N-supplemented goats. Feather and bone meal had a greater proportion of ruminally undegradable B(3) protein than SBM (23.1 vs. 0.3% of CP, respectively). Ruminal VFA and pH were unaffected by replacing SBM with FBM, but supplying no source of N in the concentrate resulted in reduced total VFA in ruminal fluid (P = 0.04). Ruminal ammonia concentration increased quadratically (P = 0.07) as FBM increased, reflecting increased intake, and it was much less in unsupplemented goats (P < 0.001). Serum urea had less variation between 0 and 4 h after feeding in goats receiving 40 or 60% of added N as FBM in comparison with those receiving only SBM or 20% FBM. Feather and bone meal promoted a more stable rumen environment, possibly because of reduced rates of protein degradation within the rumen. A palatable by-product meal for ruminants can be made from spent laying hen hard tissue, one that supports N metabolism similar to that of traditional protein sources.

Abstract
Soybean hulls have been successfully fed to ruminant animals as an economical substitute for hay. This feedstuff is a source of highly digestible fiber that does not contain starch. The purpose of this trial was to evaluate soybean hulls as a replacement fiber in horse diets. Four cecally cannulated Quarter Horse geldings, aged 6 to 10 yr and averaging 502 kg, were used in a 4 x 4 Latin square design with 21-d periods. Diets consisted of alfalfa/bromegrass hay (14.4% CP, 58.1% NDF, 39.1% ADF; DM basis) with the replacement of either 0, 25, 50, or 75% (as-fed basis) unpelleted soybean hulls (13.1% CP, 60.6% NDF, 43.7% ADF; DM basis). Diets were offered at 1.8% of BW (DM) daily and body weights were measured weekly. Cecal samples (90 min after feeding) and total fecal collections (3 d) were taken at the end of each treatment period. Fecal collection bags were emptied every 6 h and 10% of the total amount was frozen for later analysis. Total cecal VFA production increased linearly (P = 0.02) from 70 mM to 109 mM as proportions of soybean hulls in diets increased. Proportions of propionate increased linearly (P < 0.01) with means of 15.7, 18.0, 16.6, and 21.9 mol/100 mol total VFA for the 0, 25, 50, and 75% soybean hulls diets respectively. Proportions of butyrate decreased linearly (P < 0.01) from 5.3 to 3.9 mol/100 mol total VFA. The acetate:propionate ratio decreased linearly (P = 0.02) and cubically (P = 0.03) with means of 4.9, 4.2, 4.9, and 3.3. Apparent digestibility of DM (P = 0.95), OM (P = 0.70), NDF (P = 0.34), ADF (P = 0.31), cellulose (P = 0.93), and hemicellulose (P = 0.25) did not differ among treatments. Apparent digestibility of N decreased linearly (P < 0.01) as concentrations of soybean hulls increased in the diet, and this response was associated with increased cecal fermentation and microbial biomass production. Cecal pH decreased linearly (P = 0.01) from 7.00 to 6.45 as the level of soybean hulls increased, but there was no change (P = 0.68 for the linear effect) for cecal ammonia (mean concentration of 3.85 mM). Soybean hulls stimulate cecal fermentation and are a suitable replacement for hay in equine diets.
