Abstract
Milk-type beverages are popular vegan products requiring iron and calcium fortification to improve their nutritional value, as iron deficiency is the world's most prevalent nutritional problem. This research aimed to develop and characterize an extruded common bean (Phaseolus vulgaris L.)-based milk-type beverage added with bean protein isolate and iron. The formulations included flavors (non-flavored, vanilla, and nut) and two iron concentrations (2 and 3 mg FeSO4/100 mL). Extrusion increased the beverages' protein (+17.38 %) and starch digestibility, and reduced their antinutritional compounds (trypsin inhibitors, condensed tannins, and carbonates). Developed beverages' formulations differed from a commercial soybean beverage in their physicochemical properties but were more nutritious (protein: 3.33-3.44 %; fiber: 3.43-4.08 %). Iron-added beverages displayed a medium sensory acceptance (best overall likeness: 5.3-6.2). The developed beverage is a suitable, sensory-accepted, and nutritious bean-based beverage, suggesting novel research lines improving vegan beverage formulations to increase average daily iron intake.

Abstract
Legumes are widely appreciated for their abundant reserves of insoluble dietary fiber, which are characterized by their high fiber content and diverse bioactive compounds. Insoluble dietary fiber in leguminous crops is primarily localized in the structural cell walls and outer integument and exhibits strong hydrophilic properties that enable water absorption and volumetric expansion, resulting in increased food bulk and viscosity. This contributes to enhanced satiety and accelerated gastrointestinal transit. The benefits of legume insoluble dietary fiber extend to its notable antioxidant, anti-inflammatory, and anti-cancer properties, as well as its ability to modulate the composition of the intestinal microbiota, promoting the growth of beneficial bacteria while suppressing the proliferation of harmful pathogens, thereby promoting optimal intestinal health. It is highly valued as a valuable thickening agent, stabilizer, and emulsifier, contributing to the texture and stability of a wide range of food products.

Abstract
Consumption of fiber-rich foods is linked to beneficial effects on chronic diseases and gut health, while implications towards improving satiety and parameters of well-being remain unclear. A randomized placebo-controlled intervention study was conducted to compare the effects of fiber-enriched foods to their non-enriched counterparts in adults over a 12-week period on selected clinical parameters-satiety, quality of life, body sensation, and life satisfaction-subjective health status, and importance of diet for well-being. Quality of life (QOL) differed significantly between intervention and control groups at baseline, throughout, and at the end of the study. No effects on satiety, satisfaction with life, or the importance of diet for well-being could be shown between groups. With higher fiber intake, body sensation ratings increased. A higher BMI was significantly associated with lower-body sensation, subjective health status and quality of life. Fiber-enriched foods do not seem to affect feeling of satiety or parameters of well-being. Larger samples and additional methods are necessary to fully explore the effect of increased fiber intake on patient-related outcomes in more detail.

Abstract
Fiber intake may be associated with lower risk of metabolic syndrome (MetS) but data from metabolically unhealthy African American women is sparse. We examined the association of dietary fiber intake and MetS among postmenopausal African American women with obesity. Baseline cross-sectional data from the Focused Intervention on Exercise to Reduce CancEr (FIERCE) trial of 213 women (mean age 58.3 years) were used. Dietary intake was assessed by Food Frequency Questionnaires (FFQs). Multivariate linear and logistic regressions were performed to estimate associations of MetS with fiber intake and adherence to dietary fiber intake guidelines, respectively. Mean daily fiber intake was (10.33 g/1000kcal) in women with impaired metabolic health. We observed an inverse association of total fiber intake with MetS. One unit increase in energy-adjusted fiber intake was associated with a 0.10 unit decrease in the MetS z-score (p = 0.02). Similar results were obtained for both soluble and insoluble fiber. In multivariate-adjusted analyses, participants not adherent to fiber intake recommendations were more likely to have MetS as compared to those reporting intakes in the recommended range (adjusted odds ratio 4.24, 95% CI: 1.75, 10.30). Of the MetS components, high fasting glucose and high triglycerides were all associated with lower intake of fiber. Study participants who consumed a higher amount of fiber had a better overall metabolic profile and were less likely to have MetS in our cross-sectional analysis of postmenopausal African American women with obesity and unhealthy metabolic profiles.

Abstract
The agro-food industry generates a large volume of by-products, whose revaluation is essential for the circular economy. From these by-products, dietary fibre concentrates (DFCs) can be obtained. Therefore, the objective of this study was to characterise (a) the proximal composition by analysing soluble, insoluble and total Dietary Fibre (DF), (b) the physicochemical properties, and (c) the phenolic profile of artichoke, red pepper, carrot, and cucumber DFCs. In addition, the bioaccessibility of phenolic compounds was also evaluated after in vitro gastrointestinal and colonic digestions. The results showed that the DFCs had more than 30 g/100 g dw. The water holding and retention capacity of the DFCs ranges from 9.4 to 18.7 g of water/g. Artichoke DFC presented high concentration of phenolic compounds (8340.7 mg/kg) compared to the red pepper (304.4 mg/kg), carrot (217.4 mg/kg) and cucumber DFCs (195.7 mg/kg). During in vitro gastrointestinal digestion, soluble phenolic compounds were released from the food matrix, chlorogenic acid, the principal compound in artichoke and carrot DFCs, and hesperetin-7-rutinoside in red pepper cucumber DFCs. Total phenolic content decreased after in vitro colonic digestion hence the chemical transformation of the phenolic compounds by gut microbiota. Based on the results, DFCs could be good functional ingredients to develop DF-enriched food, reducing food waste.

Abstract
BACKGROUND Melon Manis Terengganu (MMT) peel has a high dietary fiber content, but there is no data examining its health benefits in adults at risk of type 2 diabetes. The objective of the study was to evaluate whether consumption of MMT peel powder improves glycemic response, satiety, and food intake in adults at risk of type 2 diabetes. METHODS An open-label, randomized, placebo-controlled, crossover design trial was conducted among adults (n = 30, ages 18-59 y) at risk of type 2 diabetes. They consumed Formulation 3 (formulated MMT peel powder) [A] and control (glucose) [B] with study breakfast based on randomly assigned treatment sequences (AB, BA) established by Research Randomizer ( www.randomizer.org ). Capillary blood glucose and perceived satiety were determined at baseline (0 min), 30, 60, 90 and 120 min, followed by a post-intervention food intake measurement. RESULTS The repeated measures analysis of variance (ANOVA) revealed significant time (F = 84.37, p < 0.001, ηp2 = 0.744), condition (F = 22.89, p < 0.001, ηp2 = 0.441), and time*condition effects (F = 24.40, p < 0.001, ηp2 = 0.457) in blood glucose levels. Respondents (n = 30) who consumed Formulation 3 also had a significantly lower blood glucose 2-hour incremental area under the curve (iAUC) of 134.65 ± 44.51 mmol/L*min and maximum concentration (CMax) of 7.20 (7.10, 8.20) mmol/L with relative reduction of 26.8 and 13.3% respectively, when compared with control (p < 0.001). Besides, significantly greater perceived satiety, lower energy and fat intake as well as higher dietary fiber intake were also observed in the intervention group compared with the placebo group (p < 0.05). There were no marked side effects associated with the ingestion of the test products. CONCLUSIONS Short-term consumption of formulated MMT peel powder may improve glycemic response, increase perceived satiety and reduce food intake in adults at risk of type 2 diabetes with the potential to be utilized as a functional beverage. Medium-to long-term clinical trial is warranted to determine whether taking this formulated MMT peel powder on a daily basis has an influence on health outcomes. Abstract
Consumption of whole grain has been associated with lower incidence of type-2 diabetes, cardiovascular disease and their risk factors including improved glycemic control. In comparison with other whole grain products, rye bread has been shown to induce lower insulin response in the postprandial phase, without affecting the glucose response. This phenomenon has been referred to as the “rye factor” and is being explored in this review where we summarize the findings from meal and extended meal studies including rye-based foods. Overall, results from intervention studies showed that rye-based foods vs. (wheat) control foods had positive effect on both insulin and glucose responses in the postprandial phase, rather than on insulin alone. Mechanistic studies have shown that the rye factor phenomenon might be due to slowing of the glucose uptake in the intestine. However, this has also been shown for wheat-based bread and is likely an effect of structural properties of the investigated foods rather than the rye per se. More carefully controlled studies where standardized structural properties of different cereals are linked to the postprandial response are needed to further elucidate the underlying mechanisms and determinants for the effect of specific cereals and product traits on postprandial glycemic control.

Abstract
AIMS As the first long-term RCT on insoluble cereal fibre, the optimal fibre trial demonstrated glycometabolic benefits, confirming cohort studies. The combined study intervention of lifestyle recommendations and supplementation with insoluble oat hulls fibre allows to clarify, which amount of fibre is required for a beneficial effect. METHODS One hundred and eighty participants with impaired glucose tolerance underwent the one-year PREDIAS lifestyle programme and received a blinded, randomized fibre or placebo supplement for two years. We conducted a regression analyses and cut-off-based tertile comparisons in subjects with full data on dietary compliance (food records and accounted supplement; n = 120) after one year, investigating effects on fasting blood parameters, oral glucose tolerance test and anthropometry. RESULTS We found a nonlinear inverse relation between fibre intake and change in postprandial 2-h glucose levels, showing a metabolic benefit beyond 14 g and a plateau beyond 25 g of total insoluble fibre per day. 2-h glucose levels improved significantly stronger in both upper tertiles (-0.9 [-1.6;-0.2] mmol/l, p = 0.047, and -0.6 [-1.6;0.3] mmol/l, p = 0.010) compared to the lowest tertile (0.1 [-1.2;1.1] mmol/l), also when adjusted for changes in bodyweight. Subjects with the highest fibre intake showed superior effects on fasting and postprandial insulin resistance, hepatic insulin clearance, leucocyte count and fatty liver index. CONCLUSIONS Extending the knowledge on the benefits of insoluble oat hulls fibre, our post hoc analysis demonstrates a dose effect for glycaemia and associated metabolic markers. Further research is needed in order to replicate our findings in larger trials.

Abstract
Diets supplemented with protein and fiber are well known to reduce food intake and weight gain; however, less is known about the combined effects of protein and prebiotic fiber on energy balance and gut microbiota composition. We compared effects of diets containing high egg or whey protein with cellulose or prebiotic (inulin) fiber on energy balance, gut microbiota, hormones, and metabolites. Male obese rats (n=8/group) were allocated to four diets: Egg albumen+Cellulose (EC), Egg albumen+Inulin (EI), Whey protein+Cellulose (WC), and Whey protein+Inulin (WI). Results revealed that diet-induced hypophagia was transient with EC and prolonged with EI and WI, compared to WC. Importantly, CCK-1 receptor antagonist (Devazepide) attenuated the hypophagic effects of EC, EI, and WI. Further, EC, EI and WI decreased respiratory quotient, energy expenditure, weight and adiposity gains, and improved glycemia, relative to WC. Propranolol (β1-β2-receptor blocker) attenuated diet-induced changes in energy expenditure. Transcript abundance of thermogenic markers in brown adipose tissue, plasma hormones, and metabolites especially acyl-carnitines and glycerophospholipids, were differentially altered by diets. Diet explained 25% of compositional differences in cecal microbiomes, but diets with same fiber type did not differ. Microbiota differing between groups also strongly correlated with gut hormones and metabolites. Species most strongly correlated to a marker for butyrate production were in highest abundance in inulin diets. Together, these findings indicate that inulin enriched diets containing egg or whey protein improved energy balance, decreased adiposity, and modulated gut microbiota and metabolites, with CCK signaling partly mediating the satiety effects of diets.

Abstract
Latar Belakang: Belum banyak penelitian yang membandingkan pengaruh diet tinggi serat larut air dan diet tinggi serat tidak larut air terhadap tingkat satiety.Tujuan:Menganalisis pengaruh pemberian diet isokalori tinggi serat terhadap tingkat satiety pada kelompok usia dewasa awal status gizi normal.Metode: Penelitian eksperimentaldengan rancangan pre-post group design. Subjek penelitian adalah 16 orang dewasa awal usia 20-23 tahun (10 perempuan dan 6 laki-laki) yang diambil secara consecutive sampling. Semua subjek diberikan 2 jenis diet isokalori dengan rasio serat larut air : serat tidak larut air sebesar 3:2 dan 1:3 dengan masing-masing wash out period selama 1 hari. Energi yang diberikan sebesar 20% dari total kebutuhan masing-masing subjek. Variabel yang diukur adalah tingkat satiety yang terdiri dari tingkat desire to eat, hunger, fullness dan prospective food consumption/PFC menggunakan kuesioner Visual Analogue Scale. Analisis statistik menggunakan paired t-test, wilcoxon, mann-whitney dan independent t-test.Hasil: Diet tinggi serat larut air memiliki efek lebih lama 1 jam dalam menekan hunger dan desire to eat dan memiliki efek lebih lama 30 menit dalam menekan PFC dibandingkan diet tinggi serat tidak larut air, namun kedua diet tersebut sama-sama baik dalam meningkatkan fullness hingga 3 jam setelah intervensi.Kesimpulan: Pemberian diet tinggi serat dapat menekan tingkat desire to eat, hunger, PFC dan meningkatkan fullness. Diet tinggi serat larut air mempunyai efek lebih lama terhadap tingkat satiety dibandingkan diet tinggi serat tidak larut air.

Abstract
Apple peel, a food industry by-product, is rich in fibre, polyphenols and minerals, and is a potentially attractive ingredient for bakery products. To evaluate the effect of wheat cookies enrichment with apple peel powder six types of cookies with increasing apple peel powder percentage (0%, 4%, 8%, 16%, 24% and 32%) were produced. The traits analysed were: pasting parameters; chemical properties (moisture, ash, lipid, protein, fibre and total polyphenols content); antioxidant capacity (2,2-diphenyl-1-picrylhydrazyl and ferric reducing antioxidant power methods); physical attributes (width, thickness, volume and CIE lab colour); and sensory characteristics (external appearance, internal structure, texture, odour, taste and aroma). Statistical analysis included analysis of variance followed by Fisher's least significant difference test (p < 0.05). The apple peel powder-enriched cookies had significantly higher moisture, ash, lipid, fibre, total polyphenols and antioxidant capacity than the control bread wheat cookies. The addition of apple peel powder did not modify the physical characteristics and improved the sensorial quality of the products. The addition of 24% apple peel powder gave the cookies with the best overall quality.

Fruits come in a wide variety of colors, shapes, and flavors. This chapter will cover selected fruits that are known to be healthy and highly nutritious. These fruits were chosen due to their common usage and availability. Since it is not possible to cover all health benefits or essential nutrients and important phytochemicals of the fruit composition, this chapter will focus on the key valuable constituents and their potential health effects.

Abstract
Little is known about the effects of manipulating sequence of fruit consumption during a meal in suppressing an individual’s appetite. Therefore, we investigate the effects of the sequence of fruit intake on satiety and blood glucose in a group of 17 healthy, young male adults. This intervention study repeatedly measured the effects of fruit intake (120 g red apple) before and after a meal and control (no fruit). Ad libitum test meal was weighed before and after a meal. Subjective appetite rating and appetite-related hormones were assessed at regular time intervals. The satiety score was significantly higher for fruit intake before a meal followed by after a meal and control (p < 0.05). Eating fruit before a meal reduced 18.5% (166 kcal) subsequent energy intake compared to control (p < 0.05). Fruit intake before a meal had a significantly higher incremental area under the curve (iAUC) of Glucagon-like peptide 1 (GLP-1), compared to after a meal (p < 0.05). There were no differences in plasma changes of ghrelin, Cholecystokinin 8 (CCK8), or blood glucose in all sessions. Consuming fruit before a meal potentially enhanced satiety. Further research is required to confirm both short- and long-term effects of the sequence of fruit intake on appetite regulation in a wider population.

Abstract
Background: One of the efforts to reduce the prevalence of obesity is by increasing the consumption of dietary fiber. Dietary fiber can reduce weight, because it can enhance satiety and prevent excessive calorie consumption. Banana and Modified Cassava Flour (mocaf) are source of fiber . The substitution of banana blossom and mocaf in the meatball-one of favorite food is expected to be one of alternative solution of a healthy and fiber-rich food to reduce the prevalence of obesity. Objective: The purpose of this research was to determine the acceptability , and Satiety study of banana blossom and mocaf meatball .Methods: The first stage of the study using a factorial crossed design, 3 best formulas were selected from 7 formulas by 3 professional panelists, then the best 3 formulas were selected by 25 untrained panelists. At the satiety test stage using a cross-over trial design. Subjects were students Universitas Airlangga Students, age criteria 12-25 years, BMI 18.5-28 kg.Results: The best formula was F3 in terms of acceptance value and dietary fiber content. There was no significant difference in hunger after meal (p=0.122) on both test foods. There was no significant difference in satiety feeling after meals (p=0.080).Conclusion: There was no significant difference for hunger and satiety between the F3 meatballs substituted with 20% banana blossom and 10% mocaf with control meatballs. This is due to insufficient fiber content to give a satiety effect.ABSTRAKLatar Belakang: Salah satu upaya untuk menurunkan prevalensi obesitas adalah dengan peningkatan konsumsi serat pangan yang dapat meningkatkan kekenyangan dan mencegah konsumsi kalori berlebih. Subtitusi jantung pisang dan tepung mocaf yang kaya serat pada bakso yang digemari masyarakat, diharapkan bisa menjadi alternatif makanan yang sehat dan kaya serat untuk mengurangi prevalensi obesitas.Tujuan: Mengetahui daya terima, dan uji kekenyangan terhadap produk bakso Jantung Pisang dan tepung mocafMetode: Penelitian tahap pertama menggunakan rancangan percobaan faktorial menyilang, 3 formula terbaik dipilih dari 7 formula oleh 3 panelis terlatih, selanjutnya 3 formula terbaik dipilih oleh 25 panelis tidak terlatih. Pada tahap uji satiety menggunakan desain cross-over trial. Subjek adalah mahasiswa Universitas Airlangga, umur 12-25 tahun, IMT antara 18,5-28 kg/m2. Penelitian cross-over trial dilakukan pada 14 subjek yang sehat yang memenuhi kriteria. Masing-masing 200 g Bakso biasa (F0) dan bakso modifikasi diberikan saat waktu sarapan pada hari yang berbeda. Penilaian hunger dan satiety diambil dengan kuisioner Visual Analog Scale (VAS).Hasil: Formula terbaik adalah F3 ditinjau dari daya terima dan kandungan serat. Tidak ada perbedaan yang signifikan dalam rasa lapar setelah makan (p=0,122) pada kedua makanan uji. Tidak terdapat perbedaan signifikan rasa kenyang setelah makan (p=0,080).Kesimpulan : Tidak ada perbedaan yang signifikan untuk rasa lapar dan rasa kenyang antara Bakso F3 yang disubtitusi 20 % jantung pisang dan tepung 10 % tepung mocaf dengan bakso kontrol. Hal ini terkait kandungan serat pada bakso modifikasi (F3) yang tidak cukup untuk memberikan efek kekenyangan.

Abstract
Hypercholesterolemia is one of primary risk factors of cardiovascular disease, together with metabolic syndrome, hypertension and diabetes. Although progress has been made, the search for novel methods of preventing and treating dyslipidemia is ongoing and current therapies for cardiovascular disease induce various side effects. β-glucans are linear unbranched polysaccharides found in various natural sources, such as mushrooms. Due to their structure they are able to interact with innate immunity receptors, however they also act as dietary fibers in the digestive tract. As there are two forms of β-glucans, insoluble and soluble forms, they are able to interact with lipids and biliary salts in the bowel and consequently reduce cholesterol levels. Therefore, they may be developed as a suitable therapeutic option to treat patients with dyslipidemia, as they are natural molecules that do not induce any significant side effects. The current review discusses the evidence supporting the effects of β-glucans on cholesterol levels.
