Abstract
Public concern over drug resistance has led to governmental regulations banning the use of antibiotics as growth promoters, stimulating interest in developing complementary strategies to maintain animal production, mitigate infections, and enhance muscle characteristics and quality parameters, especially in meat-producing animals. Probiotics are recognized as a potential strategy for improving growth, primarily by promoting intestinal homeostasis. These microorganisms are suggested to modulate gut microbiota, preserving their ecosystem and influencing secondary metabolite production, which can directly or indirectly regulate skeletal muscle metabolism by influencing the expression of key muscle-related genes and the activity of various signaling factors. Several studies have documented the potential benefits of various strains of Bacillus, Enterococcus, and members of the Lactobacillaceae family on muscle characteristics. These studies have shown that probiotics not only modulated myogenic factors but also influenced proteins and enzymes involved in signaling pathways related to carbon metabolism, inflammatory response, mitochondrial dynamics, and antioxidant activity. These effects have been associated with improvements in meat quality parameters and enhanced growth performance. This manuscript seeks to present a brief overview of the impact of probiotic supplementation on muscle health and the quality of meat in broiler chickens.

Abstract
1. This study evaluated the effects of cyclic eggshell temperature between 10 and 14 d of embryogenesis on traits viz. the expression of MYOZ2, PPARγ and GPx7 in breast muscle, meat quality and incidence of white striping at slaughter age.2. Eggs were obtained from Cobb and Ross broiler breeders to investigate the response of breeds to eggshell temperature, which regulated air temperature. A total of 784 eggs were incubated at either the control eggshell temperature (37.8°C) from 0 to 18 d or exposed to cyclic high eggshell temperature (CHT) at 38.8°C for 6 h/d between 10 and 14 d of incubation. The temperature was 36.8°C between 18 and 21 d. Hatched chicks were reared under optimum rearing conditions. The birds were sampled at 19 d of incubation, at hatch and at 42 d post-hatch.3. There was no effect of eggshell temperature on yolk-free body weight and residual yolk sac weight. The CHT chicks had wider breasts on the day of hatching.4. At hatch and 42d post-hatch, PPARγ expression in Cobb-CHT was upregulated 4.78-fold and downregulated 3.28-fold, respectively, compared to the Cobb-control. At slaughter age, chickens from Ross-CHT had 1.98- and 2.33-fold upregulated PPARγ and GPX7 expressions, respectively, compared to Ross-control. The CHT increased GPx7 expression in the Cobb-CHT day-old chicks compared to the Cobb-control. On ED19, MYOZ2 expression was upregulated in Cobb and downregulated in Ross by CHT.5. The effects of breed and eggshell temperature on pH15, L*, a*, expressible juice and cooking loss were not significant. The CHT increased the incidence of severe white striping lesions in Ross chickens.6. It was concluded eggshell temperature modulated embryo development, incidence of white striping and expression of related genes differently in the two commercial breeds.

This review examines both direct and indirect factors that compromise poultry meat quality in intensive farming systems. It highlights the integration of rapid and micro-testing with traditional methods to assess meat safety. The paper advocates for adopting probiotics, prebiotics, and plant extracts to improve poultry meat quality.

Abstract
Due to high environmental temperatures and climate change, heat stress is a severe concern for poultry health and production, increasing the propensity for food insecurity. With climate change causing higher temperatures and erratic weather patterns in recent years, poultry are increasingly vulnerable to this environmental stressor. To mitigate heat stress, nutritional, genetic, and managerial strategies have been implemented with some success. However, these strategies did not adequately and sustainably reduce the heat stress. Therefore, it is crucial to take proactive measures to mitigate the effects of heat stress on poultry, ensuring optimal production and promoting poultry well-being. Embryonic thermal manipulation (TM) involves manipulating the embryonic environment's temperature to enhance broilers' thermotolerance and growth performance. One of the most significant benefits of this approach is its cost-effectiveness and saving time associated with traditional management practices. Given its numerous advantages, embryonic TM is a promising strategy for enhancing broiler production and profitability in the poultry industry. TM increases the standard incubation temperature in the mid or late embryonic stage to induce epigenetic thermal adaption and embryonic metabolism. Therefore, this review aims to summarize the available literature and scientific evidence of the beneficial effect of pre-hatch thermal manipulation on broiler health and performance.

Abstract
The current commercial broiler embryo experiences a rapid metabolism and growth rate and may produce more heat than those of the past. Consequently, it may be beneficial to lower standard incubation temperature for commercial broiler hatching eggs. The purpose of this experiment was to determine if lowering incubation temperature at 12 d of incubation (DOI) would affect embryo temperature (ET) in embryonated Ross 708 broiler hatching eggs. From 0 to 12 DOI, eggs were incubated under standard conditions (37.50°C dry bulb, 29.76°C wet bulb). At 12 DOI, temperature transponders were aseptically placed on the inner air cell membrane to measure air cell temperature (ACT) as an estimate of ET in 120 eggs. The eggs were then randomly assigned to 4 separate still-air incubators, each containing 30 eggs. Two replicate incubators were maintained at a standard (STRT; 37.5°C) or low (LTRT; 35.6°C) temperature treatment between 12 and 21 DOI. A significant positive correlation existed between incubator air temperature (IAT) and ACT across temperature treatment and in the STRT. However, IAT was not significantly correlated with ACT in the LTRT. A significantly higher ACT was observed in the STRT than in the LTRT for 88% of the readings taken between 12 and 21 DOI. Percent egg weight loss (PEWL) between 13 and 17 DOI did not significantly differ between temperature treatments. From 13 to 17 DOI, there was a significant positive correlation between PEWL and ACT in the STRT, however, no significant correlation occurred between PEWL and ACT in the LTRT. Percent hatch of fertile eggs containing live embryos at 12 DOI was 93.3% in the STRT and 100% in the LTRT. However, time of hatch occurred 14 to 19 h later and hatchling BW was lower in the LTRT than in the STRT. Although lowering IAT at 12 DOI may improve hatchability, an associated delay in hatch and a decrease in hatchling BW may not be commercially acceptable.

Abstract
Background and Aim: Pelung cockerels (Gallus gallus gallusGallus gallus gallus [Linnaeus, 1758]) are different from other native cockerels in that they have a long and unique voice, in addition to their tall, large, and sturdy body with a relatively heavy body weight (BW). The sound quality of pelung cockerels is affected by the structure of the syrinx and their large and strong chest muscles. The performance of the chest muscles, and subsequently its voice, is influenced by the hormone testosterone. The shell of blood clams (Anadara granosa Linnaeus, 1758), a saltwater bivalve is known to contain a natural aromatase blocker (NAB) capable of blocking the aromatase enzyme from converting testosterone to estradiol. This generates consistently high levels of testosterone. This study aimed to determine the effect of blood clam shell powder (BCSP) as an NAB on the growth, pectoralis muscle performance, and testes of pelung cockerels.
Materials and Methods: The study design was a completely randomized design, with 16 pelung cockerels aged 40–56 weeks divided into four treatment groups: T0 (control); T1 (BCSP [A. granosa] 0.9 mg/kg BW); T2 (zinc sulfate [ZnSO4] 0.9 mg/kg BW); and T3 (testosterone 3 mg/day). The animals were acclimatized for 7 days and then given dietary treatments for 56 days. The measurement of the comb, wattle, and chest circumference (CC) of pelung cockerels was performed on days 0, 14, 28, 42, and 56. At the end of the treatment, the pelung cockerels were sacrificed and the data of the pectoralis muscle weight (PMW), testis weight (TW), and area of the pectoralis muscle (APM) were measured. Samples of pectoralis muscle and testes were taken and fixed in 10% neutral buffer formalin for histology. The proliferating cell nuclear antigen (PCNA) was identified by immunohistochemical staining. To measure fascicle area (FA), myofiber area (MA), and enumerate, the fascicle myofibers (NM) histology preparations were stained with hematoxylin and eosin (H and E). Testicular preparations were stained with H and E to measure the diameter of the seminiferous tubules (DST) using ImageJ software.
Results: The growth performance on day 56 showed significantly (p < 0.05) higher differences of CC in T1 compared to T2 and T0, in T1 and T3 compared to T0, and in T3 and T2 compared to T0. Pectoralis muscle results, that is, FA, NM, MA, and PCNA-positive cells, showed that cockerels on treatment T3 had significantly higher results than other treatments, T1 was significantly different from T2 and T0, and T2 was significantly different from T0. In addition, the TW and DST measurement of cockerels on treatment T3 were significantly reduced (p < 0.05) than the other treatment groups.
Conclusion: The oral administration of BCSP in the role of a NAB at a dose of 0.9 mg/kg BW for 56 days improved the growth performance and pectoralis muscle, especially the CC, FA, NM, MA, and PCNA-positive cells parameters, but did not affect the PMW, APM, and testis of pelung cockerels. The administration of testosterone at 3 mg/day for 56 days contributed to the decrease in TW and DST, as well as atrophy of the seminiferous tubules of pelung cockerels.

Abstract
Muscle is the most abundant edible tissue in table poultry, which serves as an important source of high protein for humans. Poultry myofiber originates in the early embryogenic stage, and the overall muscle fiber number is almost determined before hatching. Muscle development in the embryonic stage is critical to the posthatch muscle growth and final meat yield and quality. Incubation conditions including temperature, humidity, oxygen density, ventilation and lighting may substantially affect the number, shape and structure of the muscle fiber, which may produce long-lasting effect on the postnatal muscle growth and meat quality. Suboptimal incubation conditions can induce the onset of myopathies. Early exposure to suitable hatching conditions may modify the muscle histomorphology posthatch and the final muscle mass of the birds by regulating embryonic hormone levels and benefit the muscle cell activity. The elucidation of the muscle development at the embryonic stage would facilitate the modulation of poultry muscle quantity and meat quality. This review starts from the physical and biochemical characteristics of poultry myofiber formation, and brings together recent advances of incubation conditions on satellite cell migration, fiber development and transformation, and subsequent muscle myopathies and other meat quality defects. The underlying molecular and cellular mechanisms for the induced muscle growth and meat quality traits are also discussed. The future studies on the effects of external incubation conditions on the regulation of muscle cell proliferation and meat quality are suggested. This review may broaden our knowledge on the regulation of incubation conditions on poultry muscle development, and provide more informative decisions for hatchery in the selection of hatching parameter for pursuit of more large muscle size and superior meat quality.

Abstract
Spaghetti meat (SM), woody breast (WB), and white striping (WS) are myopathies that affect the pectoral muscle of fast-growing broiler chickens. The prevalence and possible risk factors of these myopathies have been reported in other countries, but not yet in Canada. Thus, the objective of this study was to assess the prevalence and risk factors associated with these myopathies in a representative population of Canadian broilers. From May 2019 to March 2020, 250 random breast fillets from each of 37 flocks (total, 9,250) were obtained from two processing plants and assessed for the presence and severity of myopathies. Demographic data (e.g., sex and average live weight), environmental conditions during the grow-out period (e.g., temperature), and husbandry parameters (e.g., vaccination) were collected for each flock. Associations between these factors and the myopathies were tested using logistic regression analyses. The prevalence of SM, severe WB, and mild or moderate WS was 36.3% (95% CI: 35.3-37.3), 11.8% (95% CI: 11.2-12.5), and 96.0% (95% CI: 95.6-96.4), respectively. Most (85.1%) of the fillets showed multiple myopathies. Regression analyses showed that the odds of SM increased with live weight (OR = 1.30, 95% CI 1.01-1.69) and higher environmental temperature during the grow-out period (OR = 1.75, 95% CI 1.31-2.34). The odds of WB increased with live weight (OR = 1.23, 95% CI 1.03-1.47) and when flocks were not vaccinated against coccidia (OR = 1.86, 95% CI 1.51-2.29). This study documents for the first time a high prevalence of myopathies in Ontario broilers, and suggests that these lesions may have a significant economic impact on the Canadian poultry industry. Our results indicate that environmental conditions and husbandry are associated with the development of breast myopathies, in agreement with the current literature. Future studies are needed to determine how risk factors can promote the occurrence of these conditions, in order to implement possible mitigating strategies.

Abstract
This study investigated the effects of broiler chick hatching time and pull time on subsequent live performance. Hatching eggs were obtained from commercial broiler breeder flocks of Ross 308 at 29 and 30 wk of age in trials 1 and 2, respectively. Eggs were incubated in 2 identical setters on 2 consecutive days. In both trials, portion of the eggs (9,600), incubated on the first day of set, were assigned to delayed-pull (DP) treatment, and the other portion of the eggs (9,600), incubated on the second day of set, were assigned to normal-pull (NP) treatment. The hatching period was divided into 3 hatching time groups, and chicks were classified as hatching in the early (478 to 490 h), middle (490 to 496 h), or late period (496 to 510 h of incubation). At 510 h of incubation based on the NP set date, all chicks were transferred to a broiler research house. A total of 7,200 and 8,400 chicks within 2 chick pull time treatments × 3 hatching time groups were raised in trials 1 and 2, respectively. The primary difference between the DP and NP treatments was an additional 24 h holding period in the hatcher for the DP group. Therefore, chick BW was higher at placement in the NP treatment than in the DP treatment (P < 0.001). However, this advantage disappeared by 7 d, and the average BW did not differ between the DP and NP treatments at 41 d. Chick pull time did not affect feed consumption or feed conversion ratio (FCR) at 41 d. Similar to pull time, hatching time did not impact BW, feed consumption or FCR at 41 d. However, for mortality and European Production Efficiency Index (EPEI) at 41 d, a hatching time × pull time interaction was observed (P < 0.001). Mortality was higher and EPEI was lower in late hatch chicks than in chicks hatched early and middle in the NP treatment, whereas for chicks in the DP treatment, mortality and EPEI did not differ among the hatching time groups. These data indicated that the DP treatment, which held the chicks for an additional 24 h in the hatcher under optimum conditions, produced a lower initial BW accompanied by a period of compensatory weight gain through 41 d, and no differences (P > 0.05) in live performance occurred due to the holding time in the hatcher. Overall, sending the late hatched chicks to the broiler house shortly after hatching increased their mortality and negatively affected their live performance (as measured by EPEI), unlike holding early hatched chicks for a relatively long time after hatching (50 h) in the hatcher.

Abstract
Almost a decade ago, the sudden rise of breast muscle defects in fast-growing commercial broiler breeds challenged the broiler production industry and meat scientists to address the issue of these novel muscle abnormalities. After that, a widespread hypothesis showing a correlation between high muscle yield and incidence of these muscle myopathies got much acceptance from the research community. Increased muscle hypertrophy and unbalanced growth of connective tissues lead to an inadequate blood supply that ultimately causes hypoxia in muscle fibers. Reduced blood vascular density in muscle fibers induces oxidative stress and mitochondrial dysfunction, leading to muscle fibrosis, lipidosis and myodegeneration. Along with physical changes, the myopathic muscles exhibit poor sensory properties, abnormal texture properties and a low nutritional profile. As these myopathies alter meat’s physical appearance, they have a negative impact on customer’s behavior and preference. A better production environment with proper dietary supplementation with balanced breeding strategies can minimize the incidence of muscle myopathies in broiler chicken. This review aims to address the underlying mechanism behind these myopathies and their impact on poultry meat quality, including nutritional value and consumer behavior. It describes the link between genetic and non-genetic elements influencing myopathies, along with the strategies to minimize the occurrence of breast muscle myopathies.

Abstract
Selection for accelerated growth rate and high breast yield in broiler chickens have been associated with an increase in myopathies, including wooden breast (WB) and white striping (WS). To investigate effects of growth rate on carcass traits and incidence of myopathies, 14 strains were evaluated, encompassing 2 conventional (CONV; strains B and C: ADG0-48 > 60 g/d) and 12 slower-growing (SL) strains. The latter were categorized based on growth rate: FAST (strains F, G, I and M; ADG0-62=53-55 g/d), MOD (strains E, H, O and S; ADG0-62=50-51 g/d), and SLOW (strains D, J, K and N; ADG0-62<50 g/d). In a randomized incomplete block design, 7,216 mixed-sex birds were equally allocated into 164 pens (44 birds/pen; 30 kg/m2), with each strain represented in 8 to 12 pens over 2 to 3 production cycles. From each pen, 4 males and 4 females were processed at 2 Target Weights (TWs) based on their expected time to reach 2.1 kg BW (TW 1: 34 d for CONV; 48 d for SL strains) and 3.2 kg BW (TW 2: 48 d for CONV; 62 d for SL strains). Weights and yields for the carcass, breast, drumsticks, thighs, and wings were obtained; breast fillets were assessed to determine the presence and severity of WB and WS. At both TWs, breast yield was higher as growth rate increased (P < 0.001), with CONV having greater breast yield than other categories. Strain F had the greatest breast yield at both TWs (P < 0.001) within the FAST category. At TW 2, CONV had the greatest incidence of WB and WS (P < 0.001). However, within FAST, strain F had the greatest incidence of myopathies (P < 0.001) at both TWs, exhibiting values as high or as greater than CONV birds. The incidence of WB and WS in strains with differing growth rates but high breast meat yield suggests that the latter may play a major role in the occurrence of these myopathies.

Abstract
1. This study evaluated the effect of a higher incubation temperature on body weight, plasma profile, histology and expression of myogenin (MYOG), insulin-like growth factor-I (IGF-I) and vascular endothelial growth factor A (VEGFA) genes in breast muscle of embryos and broilers from two commercial strains.2. A total of 784 eggs from Ross 308 and Cobb 500 broiler breeder flocks were used. Half of the eggs per strain were incubated at control temperature (37.8°C), whereas the other half were exposed to heat treatment (HT) of 38.8°C between embryonic day (ED) 10 and 14, for 6 h/day. Embryos and chicks were sampled on ED 19 and at hatch. A total of 480, one-day-old chicks per strain and incubation temperature were reared up to 42 d post-hatch.3. The HT increased hatch weight of Ross chicks and 42-d body weight of broilers from both strains. Lower plasma triacylglycerol levels were measured for HT embryos and broilers on ED 19 and 42 d post-hatch, respectively. HT reduced plasma T3 levels in Ross embryos and broilers for the same periods. Hepatic TBARS concentrations were elevated by HT compared to the control incubation.4. The HT reduced breast muscle VEGFA gene expression of Cobb embryos on ED 19, whereas expression was stimulated in day-old chicks. At 42 d post-hatch, fibre area was increased by HT regardless of strain. Compared to the control incubation, HT increased the breast yield of Ross broilers and leg yield of Cobb. Ross-HT broilers had a higher pH at 24 h after slaughter and better water holding capacity than Cobb-HT broilers.5. These results suggested that HT increased body weight, fibre area, IGF-I gene expression and lowered plasma triacylglycerol levels of broiler chickens from both strains at 42 d. However, HT influenced the expression of VEGF-A and MYOG genes and meat quality differently between the broiler strains.

Abstract
The effects of hatch window and hatching basket nutrient availability on organ weights, performance, and processing yield of broilers were investigated. Eggs were hatched in illuminated hatchers. At the end of each hatch window period (HWP), hatched chicks were placed into control (CTL) hatching baskets with no nutrients or baskets providing access to feed and water (FAW). This resulted in 6 treatments in a factorial arrangement of 3 HWP (early, middle, or late) and 2 basket types (CTL or FAW). Chicks remained in experimental baskets until 504 h and were then subjected to a 4 h holding period at the hatchery without nutrient access. Subsequently, 1,500 hatched chicks were reared in floor pens for 42 d with 5 replicate pens per treatment. Common diets and water were provided ad libitum. Bird weights and feed consumption were recorded weekly. Individual bird weights were taken at 21 and 42 d. At 43 d, 14 males from each pen were processed. There was an interaction between HWP and basket type on placement BW (P = 0.028) and BW change in the hatcher (P < 0.001). The HWP influenced BW at hatch (P = 0.007), 7 d (P < 0.001), and 14 d (P < 0.001) and FI at 7 d (P < 0.001) and 14 d (P = 0.002). Chicks from FAW baskets were heavier (P < 0.001) than those from CTL baskets at 7 d; afterward, they were similar (P > 0.05) in BW. Yolk and liver weights were similar (P > 0.05) between basket treatments at 3 d posthatch. No differences (P > 0.05) in FCR, mortality, or processing were observed between basket treatments. Interestingly, early hatching chicks were lightest at hatch but subsequently had higher FI and BWG. These findings indicate that hatcher nutrient access may reduce weight loss in the hatcher, especially for early hatching chicks, but had no influence on subsequent performance or processing yields beyond 7 d.

Abstract
Large variations in hatching egg incubation temperatures have been previously shown to negatively impact posthatch growth in broiler chickens. The objective was to determine whether small incubation temperature variations owing to incubator tray location (LOC) could alter posthatch female and male broiler growth performance and carcass characteristics. Broiler hatching eggs were obtained from a 40-week-old commercial broiler breeder flock and incubated in trays placed in the bottom (BOT), middle (MID), and top (TOP) thirds of the racks (n = 4 racks per incubator tray LOC) in a single-stage incubator in a commercial hatchery. Chicks hatched from the 3 LOC (n = 720 per LOC) were vent sexed, vaccinated, and separate-sex reared with 12 birds per pen in a floor-pen facility and fed a common corn and soybean meal-based diet for 41 d. At day 41, all birds (n = 720) were processed to determine carcass and carcass part yields and incidence and severity of the meat quality defects wooden breast (WB) and white striping (WS). No LOC × Sex interactions were observed (P > 0.05). Growth performance and incidence and severity of WB and WS were similar among LOC (P > 0.05). However, broilers from BOT trays had heavier tender and breast weights than broilers from warmer MID trays (P < 0.05). Broilers from the BOT trays had higher breast meat yield as a proportion of carcass weight (25.00%) than warmer MID (24.54%) broilers (P < 0.05). However, broilers from warmer MID trays had greater carcass yield than those from cooler TOP trays (P < 0.05). As expected, male broilers had heavier carcass, breast, tender, wings, drumsticks and thighs weights and were more severely affected by WB than females (P < 0.05). Overall, these data indicate that the inherent differences in environmental factors among incubation LOC can impact broiler carcass and breast meat yields.

Abstract
White striping, wooden breast, and spaghetti muscle have become common myopathies in broilers worldwide. Several research reports have indicated that the origin of these lesions is metabolic disorders. These failures in normal metabolism can start very early in life, and suboptimal incubation conditions may trigger some of the key alterations on muscle metabolism. Incubation conditions affect the development of muscle and can be associated with the onset of myopathies. A series of experiments conducted with broilers, turkeys, and ducks are discussed to overview primary information showing the main changes in breast muscle histomorphology, metabolism, and physiology caused by suboptimal incubation conditions. These modifications may be associated with current myopathies. Those effects of incubation on myopathy occurrence and severity have also been confirmed at slaughter age. The impact of egg storage, temperature profiles, oxygen concentrations, and time of hatch have been evaluated. The effects have been observed in diverse species, genetic lines, and both genders. Histological and muscle evaluations have detected that myopathies could be induced by extended hypoxia and high temperatures, and those effects depend on the genetic line. Thus, these modifications in muscle metabolic responses may make hatchlings more susceptible to develop myopathies during grow out due to thermal stress, high-density diets, and fast growth rates.

Abstract
Wooden breast (WB) has arisen primarily in the breast muscle of commercial broilers. It is characterized by palpation of a rigid pectoralis major (p. major) muscle and is under severe oxidative stress and inflammation. Previous studies have shown that vitamin E (VE) has antioxidant properties and omega-3 (n-3) fatty acids have an anti-inflammatory effect. The objectives of this study were to identify the effects of VE and n-3 fatty acids on the severity of WB, morphological structure of the p. major muscle, expression of genes likely associated with WB and to determine the most beneficial supplementation period. A total of 210 Ross 708 broilers were randomly assigned into 7 treatments with 10 replicates of 3 birds each. The control group received a corn–soybean meal basal diet during the entire study (0–58 d). Supplementation of VE (200 IU/kg), n-3 fatty acids (n-6/n-3 ratio of 3.2:1), or combination of both were fed during the starter phase (0–10 d) or grower phase (11–24 d). All broilers were harvested at 58 d of age. Morphological assessment of the p. major muscle included myofiber width, perimysial and endomysial connective tissue space, overall morphological structure, and scoring of WB microscopically. Gene expression was measured using nanostring analysis. Genes associated with muscle development and growth factors, inflammation, extracellular matrix, and glucose metabolism were differentially expressed in the p. major muscle of the broilers supplemented with VE in the grower diet. Greater than 2 times more giant myofibers (≥70 μm) were found in the group supplemented with VE and n-3 fatty acids in the starter diet compared with the group fed VE in the grower diet (P = 0.02). Microscopic evaluation showed that VE supplementation in the grower diet had a 16.19% increase in muscle with no WB compared with the control group (P = 0.05). These data suggest that supplementation of VE during the grower phase may reduce the severity of WB in broilers.

Abstract
Cold stimulations during egg incubation were reported to limit the occurrence of ascites in broilers subjected to cold temperature after 14 d of age. However, data are lacking on the impacts of such strategy in case of cold temperature conditions at start. This study aimed to evaluate the effects of incubation and posthatch cold challenge on performance, breast muscle integrity, and meat processing quality in broiler chickens. Ross 308 eggs were incubated under control temperature (I0, 37.6°C) or subjected to 15°C during 30 min on day 18 and 19 of incubation (I1). Chicks from each group were reared in floor pens either at standard rearing temperature (T0), from 32°C at 0 d to 21°C at 21 d of age, or exposed to colder rearing temperature (T1), from 29°C at 0 to 21°C at 21 d of age. All birds were then kept at 21°C until slaughter (day 40), when body weights (BW), feed conversion ratio (FCR), breast muscle yield, meat processing quality, and the occurrences of meat defects, hock burns, and pododermatitis were recorded. No significant impact of incubation conditions on hatchability was observed. At day 40, BW was more under T1 than under T0 conditions, with T0 females (but not males) presenting more BW after I1 than after I0 conditions. In the whole period, T1 chickens presented lower FCR than T0 chickens and higher breast meat yields at day 40. The occurrence of white striping was more in I1T1 males than in all other groups, except for the I0T1 males. Hock burns were more frequent in I1T1 males than in all females and I0T0 males, whereas the occurrence of pododermatitis was lower in T0 males than in other groups. Despite some positive effects of I1 incubation on growth after starting under low ambient temperature, this study reveals the limits of such strategy concerning chicken health and welfare, demonstrating that early thermal environment is a major component of the quality and sustainability of chicken meat production.

Abstract
Adult myoblasts, satellite cells, will proliferate, and differentiate into myotubes in vitro. However, changes in environmental and nutritional conditions will result in the satellite cells differentiating into adipocyte-like cells synthesizing lipids. Prior research has shown that levels of N-glycosylation and heparan sulfate can promote or prevent the adipogenic conversion of myogenic satellite cells. Syndecan-4, an N-glycosylated heparan sulfate proteoglycan, has been shown to play key roles in satellite cell proliferation and migration. The objective of the current study was to determine if syndecan-4, and syndecan-4 N-glycosylation and heparan sulfate chain levels altered the conversion of satellite cells to an adipogenic cell fate and if growth selection affected the response of the satellite cells. Over-expression of syndecan-4, syndecan-4 without N-glycosylated chains but with its heparan sulfate chains attached, syndecan-4 without heparan sulfate chains with its N-glycosylation chains, and syndecan-4 without N-glycosylation and heparan sulfate chains was measured for lipid accumulation in pectoralis major muscle satellite cells isolated from the Randombred Control line 2 (RBC2) and 16 wk body weight (F line) turkeys. The F line was selected from the RBC2 line for only 16 wk body weight. Results from this study demonstrated that wild type levels of syndecan-4 and its covalently attached N-glycosylation chains play a key role in regulating the conversion of pectoralis major muscle satellite cells to an adipogenic lineage while selection for body weight was not a major contributing factor in this conversion.

Abstract
Wooden Breast Disease (WBD) is a novel myopathy affecting the pectoralis major muscle of modern broiler chickens. The etiology of WBD is not currently known, but has been linked to increased feed efficiency, growth rate, and muscle yield in broiler chickens. Differential effect of WBD has been detected between regions of the P. major and between sexes of broilers-male birds and the cranial aspect of the muscle tend to be more severely affected by the disease than females and the caudal aspect. This study aimed to characterize biological differences in the P. major between regions of the muscle and sexes of birds. Samples were taken from the cranial and caudal aspects of P. major muscles of 3-week-old, unaffected male and female birds for RNA sequencing. RNA was extracted and used for preparation of cDNA libraries, which were sequenced by the Delaware Biotechnology Institute (DBI) using HiSeq2500. Sequence reads were aligned to the chicken reference genome with HISAT, and genes were analyzed for differential expression between regions of the breast muscle and sexes of birds using CuffDiff. Functional analysis was performed on differentially expressed genes (DEGs) between sex groups using DAVID and Ingenuity Pathway Analysis (IPA). There were 12 DEGs between cranial and caudal samples, and 260 between male and female birds. Out of the 260 genes differentially expressed between sexes, 189 were upregulated in males. Of this subset, 103 genes (55%) were located on the Z-chromosome. There was increased expression of genes involved in fat metabolism and oxidative stress responses in the cranial region of the P. major muscle, as well as increased expression of fat metabolism, oxidative stress response, antiangiogenesis, and connective tissue proliferation genes in male broilers. These results support the hypothesis that there are biological characteristics in male broilers and the cranial region of the breast muscle that may make them more susceptible to WBD, as well as raising the possibility of a metabolic switch in modern broiler chickens that may be more prominent in males.

Abstract
Ten years ago, the occurrence of macroscopic defects in breasts muscles from fast-growing broilers challenged producers and animal scientists to label and characterize myopathies wholly unknown. The distinctive white striations in breasts affected by white striping disorder, the presence of out-bulging and pale areas of hardened consistency in the so-called wooden breast, and the separation of the fiber bundles in breasts labelled as spaghetti meat, made these myopathies easily identified in chicken carcasses. Yet, the high incidence of these myopathies and the increasing concern by producers and retailers led to an unprecedented flood of questions on the causes and consequences of these abnormal chicken breasts. This review comprehensively collects the most relevant information from studies aimed to understand the pathological mechanisms of these myopathies, their physicochemical and histological characterization and their impact on meat quality and consumer's preferences. Today, it is known that the occurrence is linked to fast-growth rates of the birds and their large breast muscles. The muscle hypertrophy along with an unbalanced growth of supportive connective tissue leads to a compromised blood supply and hypoxia. The occurrence of oxidative stress and mitochondrial dysfunction leads to lipidosis, fibrosis, and overall myodegeneration. Along with the altered appearance, breast muscles affected by the myopathies display poor technological properties, impaired texture properties, and reduced nutritional value. As consumer's awareness on the occurrence of these abnormalities and the concerns on animal welfare arise, efforts are made to inhibit the onset of the myopathies or alleviate the severity of the symptoms. The lack of fully effective dietary strategies leads scientists to propose whether "slow" production systems may alternatively provide with poultry meat free of these myopathies.
