Abstract
Flaxseed cake contains high levels of phenolic compounds, which have numerous biological activities, as well as a considerable amount of omega-3 fatty acids, such as α-linolenic acid, which remains after oil extraction. In this study, we examined the effects of flaxseed cake meal (FSCM) on the antioxidative status, lipid metabolism, egg fatty acid profile, and egg health index of white-egg laying hens. A total of 63 Hisex White laying hens were divided into three experimental treatment groups and fed diets containing 0, 5, or 10% FSCM from 48 to 58 weeks of age. Feeding with 5 and 10% FSCM did not significantly (p>0.05) influence total lipid, triglyceride, total cholesterol, very low-density lipoprotein-cholesterol, or low-density lipoprotein-cholesterol concentrations, or the high-/low-density lipoprotein ratio in the serum and egg yolk; however, 10% FSCM significantly (P<0.05) increased serum high-density lipoprotein. Dietary FSCM also did not affect (P>0.05) antioxidant markers in the eggs and blood plasma. Notably, dietary inclusion of FSCM significantly increased (P<0.05) total n-3 polyunsaturated fatty acids (PUFAs), α-linolenic acid, docosahexaenoic acid, and eicosapentaenoic acid levels in egg yolk, whereas the n-6:n-3 PUFAs ratio was markedly (P<0.05) decreased in a dose-dependent manner. Moreover, including 5-10% FSCM improved (P<0.05) egg health indices, with 10% being the most beneficial. Together, these findings indicated that the inclusion of up to 10% FSCM in laying hen diets improved egg yolk lipid and fatty acid profiles, as well as egg quality and nutritional and metabolic indices.

Abstract
The aim of the study was to compare carcass composition and physicochemical and sensory attributes of breast and leg meat from native Mexican guajolote (Meleagris g. gallopavo) as influenced by sex. For this, slaughter weight and carcass characteristics of male (n = 8 ) and female (n = 8 ) guajolotes raised traditionally under extensive systems with similar housing and feeding conditions were recorded. Also, physical characteristics, proximate composition, the fatty acid profile, and sensory attributes were determined in breast and leg meat using standard procedures. The results showed that males had higher (P < 0.001 ) slaughter weight, hot and cold carcass weights, and dressing percentage, as well as carcass part weights, while females had higher (P < 0.001 ) abdominal fat weights than males. The lightness (L * ), yellowness (b * ), and drip loss values of breast meat, as well as redness (a * ) and water-holding capacity values of leg meat, were significantly (P < 0.05 ) influenced by sex. Male breast meat had higher (P < 0.05 ) moisture content, crude protein, erucic acid (C22:1n9), ∑ MUFAs (total monounsaturated fatty acids), ∑ UFAs (unsaturated fatty acids), ∑ DFAs (desirable fatty acids), ∑ UFA / ∑ SFA (total saturated fatty acid) ratio, ∑ PUFA (total polyunsaturated fatty acid) / ∑ SFA ratio, and chewiness scores than females. Likewise, leg meat from males showed higher (P < 0.05 ) ash content, myristic acid (C14:0), palmitic acid (C16:0), stearic acid (C18:0), oleic acid (C18:1n9c), palmitoleic acid (C16:1n7), ∑ SFAs, ∑ OFAs (odd fatty acids), thrombogenic index, and atherogenic index, whereas females had high fat content. In conclusion, it would be suggested that, from a nutritional point of view, the meat from male guajolotes was preferable to the meat from females.

Abstract
Poultry meat is an important part of the human diet, and the valorisation of autochthonous breeds is a determinant for the sustainability of the rural areas. The increasing demand for niche products demands for better knowledge of the carcass characteristics and meat quality of these local populations. The present study aims to characterise the roosters' meat from the "Branca" (BR), "Amarela" (AM), "Pedrês Portuguesa" (PP), and "Preta Lusitânica" (PL) breeds. A total of 80 birds (n = 20 per breed) between 38 and 42 weeks old were slaughtered. The physicochemical and nutritional composition were determined in the breast and drumstick meat. The meat of the PL breed had a higher (p ≤ 0.05) pH value, the AM meat revealed a water-holding capacity (WHC) of superior value and moisture content (p ≤ 0.05), while the BR breed had the highest (p ≤ 0.05) ash content. On the other hand, it was observed that the PP meat had a higher (p ≤ 0.05) yellowness index (b*). The breast meat exhibited, in all breeds, a lower pH value, WHC, redness (a*), and lipid content and greater (p ≤ 0.05) lightness (L*), b*, moisture, and ash and protein contents compared to the drumstick. Furthermore, it presented higher (p ≤ 0.05) K, P, and Mg contents and a superior proportion of total and sensorial relevant amino acids. Regarding the fatty acid profile, the breed differences were more significant in the drumstick, with the AM breed lipids presenting a higher (p ≤ 0.05) percentage of MUFAs in the fat, a lower atherogenic index, and a higher (p ≤ 0.05) value for the hypocholesterolemic/hypercholesterolemic fatty acids ratio, while the BR breed lipids presented a higher (p ≤ 0.05) percentage of PUFAs and PUFAs/SFAs ratio and a lower n-6/n-3 ratio. Considering the results obtained, it can be concluded that the meat from these breeds is a wholesome dietary option, distinguished by a favourable overall nutritional composition marked by elevated protein content, reduced lipid amounts, and amino and fatty acid profiles with desirable nutritional indices.

Abstract
Modifying the composition of a sow's milk could be a strategy to improve the intestinal health and growth of her piglet during the first weeks of life. This study evaluated how dietary supplementation of vitamin E (VE), hydroxytyrosol (HXT) or VE+HXT given to Iberian sows from late gestation affected the colostrum and milk composition, lipid stability and their relationship with the piglet's oxidative status. Colostrum from VE-supplemented sows had greater C18:1n-7 than non-supplemented sows, whereas HXT increased polyunsaturated (∑PUFAs), ∑n-6 and ∑n-3 fatty acids. In 7-day milk, the main effects were induced by VE supplementation that decreased ∑PUFAs, ∑n-6 and ∑n-3 and increased the Δ-6-desaturase activity. The VE+HXT supplementation resulted in lower desaturase capacity in 20-day milk. Positive correlations were observed between the estimated mean milk energy output and the desaturation capacity of sows. The lowest concentration of malondialdehyde (MDA) in milk was observed in VE-supplemented groups, whereas HXT supplementation increased oxidation. Milk lipid oxidation was negatively correlated with the sow's plasma oxidative status and to a great extent with the oxidative status of piglets after weaning. Maternal VE supplementation produced a more beneficial milk composition to improve the oxidative status of piglets, which could promote gut health and piglet growth during the first weeks, but more research is needed to clarify this.

Effect of botanical composition of free-range areas on production results and selected meat quality parameters of organic Yellowleg Partridge chickens. ANNALS OF ANIMAL SCIENCE 2023. Abstract
Abstract
The aim of the conducted research was to assess the impact of the botanical composition of free-range areas on the production results and selected quality parameters of the meat of fattening chickens of the Polish Yellowleg Partridge (Ż-33) breed in organic farming. Three hundred mixed-sex Ż-33 chicks were assigned to three groups: RP1 – free-range area with natural meadow vegetation, RP2 – free-range area sown with a mixture of plants containing ingredients stimulating growth, RP3 – free-range area sown with a mixture of plants rich in carotene. During the experiment, the production results (the weight of the birds, feed consumption, feed conversion ratio per g of weight gain, and mortality) were monitored. Observations were also performed on the behaviour in the free-range areas. On the 140th day of the experiment, a simplified slaughter analysis was carried out, the meat pH was measured, the colour of the muscles was also determined, as well as the water holding capacity and drip loss of the meat. In the meat samples, the content of nutrients and fatty acids was determined, and the peroxidizability index (PI) was calculated. Birds feeding in the RP2 free-range areas were characterised by higher body weight, better feed conversion, and higher dressing percentage compared to birds having access to the RP1 and RP3 free-range areas. On the other hand, the RP3 group Ż-33 chickens were characterised by a higher share of leg muscles and a tendency towards lower fat content in the carcass. It was also found that the meat of birds from the RP2 and RP3 groups was characterised by a higher pH24 compared to Ż-33 chickens from the RP1 group. Access to the RP2 free-range area modified the fatty acid profile, mainly in the leg muscles, reducing the palmitic acid and MUFA content and increasing the PUFA content. It can therefore be assumed that the plant species sown in the RP2 free-range area positively influenced the production results and the quality of the meat of fattening chickens feeding on them. It is therefore appropriate to carry out further studies on the type of vegetation sown in free-range areas in order to improve the efficiency and quality of the meat of organic fattening chickens.

Abstract
Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Abstract
An extensive rearing system (ERS) for poultry requires an outdoor run, which enhances the foraging activity of chickens. Slow-growing (SG) strains are more adapted to ERS than fast-growing (FG); and generally, have higher levels of bioactive compounds in their meat. The aim of this paper was to assess the storage efficiency of n-3 and n-6 polyunsaturated fatty acids (PUFA), tocols and carotenes in the meat of seven commercial SG genotypes (SG1-7). One hundred SG chicks/strain of both sexes were included and their walking activity (High- or Low-W) was classified: SG1-4, HW comprised more than 10% of the time budget, and SG5-7, less than 10% (LW). Chickens were reared in pens (4 pens/strain) with indoor (0.10 m2/bird) and outdoor (4 m2/bird) areas, and they were fed the same diet ad libitum (starter feed for 1-21 d, grower feed from 22 d to slaughter at 81 d). The chickens were weighed weekly; feed consumption and grass intake were also estimated. At 81 days of age, 32 chickens/genotype were selected on the basis of the average weight (1:1, M:F) and slaughtered. The breast, thigh and drumstick meat were excised from 30 carcasses/genotype, sampled and stored at -20°C until analysis. Nutrients (e.g., n-3, n-6, carotenes and tocols) of feed, grass and meat were analyzed. The storage efficiency of nutrients was estimated as the ratio between the amount deposited in the body muscles (OUT) and the dietary intake (feed and grass, IN). The genotype affected chickens foraging behavior and the intake of nutrients. For SG1, SG2 and SG3, more than 50% of the intake of n-3 came from grass, whereas in the other genotypes, less than 20%. Accordingly, chickens that foraged more showed better meat nutritional profiles (less fat, more n-3 and antioxidants), which, in ERS, was ascribed to grass ingestion. However, the storage efficiency of nutrients into meat was inversely correlated with the grass intake: strains with higher grass intake (SG1, SG2, and SG3) had lower storage rates. Several hypotheses were proposed to explain these trends.

Abstract
Simple Summary Local breeds play a crucial role in the rural economies of many countries, as a considerable valuable genetic resource and, well adapted to the environment, their production can reduce the negative impact of intensive production systems. Portuguese chicken breeds are almost extinct, with the “Branca” population presenting the most worrying situation. Bred as a dual-purpose breed, the characterization of meat quality is fundamental to the conservation and promotion of this population., by increasing the value on these small-scale farms production. The carcass characteristics and meat quality of the “Branca” breed were evaluated, showing an interesting physicochemical profile, with good proportion of minerals, essential fatty acids (EFA) and n-3-PUFAs (docosapentanoic (C22:5n-3, DPA), and docosahexaenoic (C22:6n-3, DHA) acids), ensuring that consumers receive a highly nutritional and differentiated product. Abstract The “Branca” breed is a dual-purpose Portuguese autochthonous chicken breed, produced in extensive systems and in small flocks, especially in the Entre Douro and Minho regions. A total of 40 birds (n = 20/sex) were slaughtered between 38 and 42 weeks (males) and 110 and 120 weeks (females), and carcass and meat quality parameters were evaluated. The results showed significantly higher weights and differences for males between sexes and pieces (p ≤ 0.05) in the meat physicochemical composition. Water holding capacity (WRC), moisture and ash contents were influenced by sex. They were higher in males in the breast and drumstick and lightness (L*) and lipid content were higher in females (p ≤ 0.05). The breast meat presented greater lightness, moisture, ash and protein contents, while the drumstick showed a higher pH value, redness (a*) and lipid content, in both sexes (p ≤ 0.05). Regarding the nutritional properties, “Branca” meat revealed a good proportion of minerals and the female meat showed, in both pieces (p ≤ 0.05), significantly lower values for total saturated fatty acids (SFAs) and higher values for monounsaturated fatty acids (MUFAs). Breast meat was richer in n-3-PUFAs (C22:5n-3 and C22:6n-3) in both sexes (p ≤ 0.05). Considering the results obtained, it can be concluded that “Branca” breed meat is a healthy food characterized by a good general nutritional profile.

Abstract
Selenium is an essential element that is important for many metabolic processes. Feed components used in chicken nutrition, especially cereals, may be deficient in selenium, hence selenium supplementation is necessary. Taking into account the progress in breeding, and thus the higher demand of birds for this element, it seems obvious to investigate an increased selenium dose in the diet of chickens. The aim of the study was to evaluate the effect of feed enriched with different forms of selenium at an increased dose of 0.5 mg/kg feed on the profile and metabolism of fatty acids in the breast muscle and liver of chickens. The study was conducted on 300 Ross 308 chickens reared for 42 days under standard conditions. The control group received feed supplemented with sodium selenite at a dose of 0.3 mg/kg feed. The research groups received different forms of selenium (sodium selenate, selenised yeast, nano-selenium) at an increased dose of 0.5 mg/kg feed. The study showed that the administration of different forms of selenium in the feed affected its concentration in the breast muscle and liver (p ≤ 0.01). Nano-selenium was found to have a high bioavailability, but also a lower risk of toxicity compared to other forms of selenium. Using different forms of selenium (p ≤ 0.01) at a dose of 0.5 mg/kg feed can significantly modify the fatty acid profile, lipid and enzymatic indices of fatty acid metabolism in breast muscle and liver.

Abstract
Chicken meat is becoming the most consumed in the world for both economic and nutritional reasons; regarding the latter, the lipid profile may play positive or negative roles in the prevention and treatment of diseases. In this study, we define the state of the art of lipid-based nutritional indexes and used the lipid content and fatty acid profile (both qualitative and quantitative) of breast meat of two poultry genotypes with different growth rates and meat traits. Further, we summarize and review the definitions, implications, and applications of nutritional indexes used in recent years and others of our own design to provide a useful tool to researchers working in the field of meat quality (not only in poultry) to select the most appropriate index for their own scientific purposes. All indexes show advantages and disadvantages; hence, a rational choice should be applied to consider the nutritional effect of meat on human health and for a possible assessment of the most suitable rearing systems (genotype, feeding, farming system or postmortem handling).

Abstract
The disparity in fatty acids (FA) composition exhibits a significant impact on meat quality, however, the molecular regulatory mechanisms underlying this trait in chicken are far from clear. In this study, a total of 45 female Beijing-You chicken (BYC) hens, fed on the same diet, were collected at the slaughter age of 150, 300, or 450 days (D150, D300, and D450) from sexual maturation stage to culling stage (15 birds per age). Gas chromatography-mass spectrometry (GC-MS) and tandem mass tag labeling technology based on liquid chromatography mass spectrometry (TMT-LC-MS/MS) analysis strategies were applied to profile FA compositions and to compare differential expressed proteins (DEPs) between these different slaughter ages, respectively. The FA profiling showed that increasing hen ages resulted in increased contents of both saturated and unsaturated fatty acids. Proteomic analyses showed a total of 4,935 proteins in chicken breast muscle with the false discovery rate (FDR) < 1% and 664 of them were differentially expressed (fold change > 1.50 or < 0.67 and P < 0.01). There were 410 up- and 116 down-regulated proteins in D150 vs. D300 group, 32 up- and 20 down-regulated in D150 vs. D450 group, and 72 up- and 241 down-regulated in D300 vs. D450 group. A total of 57 DEPs related to FA/lipid-related metabolisms were obtained according to the enrichment analysis of Gene Ontology (GO) and Kyoto Encyclopedia of Genes and Genomes (KEGG). These DEPs were involved in 21 significantly enriched (P < 0.05) pathways, including well-known pathways for FA synthesis (metabolism, desaturation, and elongation) and the signaling pathways for lipid metabolism (PPAR, adipocytokine, calcium, VEGF, MAPK, and Wnt). In addition, there existed several representative DEPs (FABP, FABP3, apoA-I, apoA-IV, apoC-III, apoB, VTG1, and VTG2) involved in the regulation of FA/lipid transportation. The construction of the interaction networks indicated that HADH, ACAA2, HADHA, ACSL1, CD36, CPT1A, PPP3R1, and SPHK1 were the key core nodes. Finally, eight DEPs were quantified using parallel reaction monitoring (PRM) to validate the results from TMT analysis. These results expanded our understanding of how the laying age affects the FA compositions and metabolism in hen breast meat.

Abstract
Simple Summary Organic poultry shows an increasing productive trend, rising from 3% in 2017 to 8% in 2019. Regulation EU 848/2018 puts great emphasis on the ability of broilers to adapt to outdoor systems as being essential for organic production. Organic poultry operators meet with regulatory constraints, consumer concerns, and challenges in terms of nutrition, welfare, health, and sustainability. The present commentary considers recent studies on and innovations in these topics that can affect organic production in addition to recent studies on animal adaptability to this production system. It reflects on the concept of broiler adaptability to organic systems not only as a classic genotype–environment interaction but as a necessary prerequisite for facing these relevant challenges. Abstract As organic and conventional poultry production increased in the last decade, so did consumers’ concerns, sustainability requirements, and animal welfare as well as health issues. According to Reg. EU 848/2008 on organic production, poultry must be adapted to organic outdoor systems and cope with all the regulatory constraints in terms of nutrition, health, and welfare. Adaptability must take into account the above challenges, constraints, and concerns. Chicken adaptability should not only mean being able to use pasture and outdoor areas, but also mean being able to overcome, or be resilient to, the challenges of organic farming without compromising welfare, performance, and product quality. This commentary identifies solutions to the new challenges that organic poultry chains must face in future productive scenarios, detects consumer viewpoints to provide a perspective on organic poultry production, and summarizes as well as defines chicken adaptability to organic production, assessing the main factors of chicken adaptability.

Abstract
The beneficial effects of n-3 long-chain polyunsaturated fatty acids (n-3 LC-PUFA) on human health are widely known. Humans are rather inefficient in synthesizing n-3 LC-PUFA; thus, these compounds should be supplemented in the diet. However, most Western human diets have unbalanced n-6/n-3 ratios resulting from eating habits and the fact that fish sources (rich in n-3 LC-PUFA) are not sufficient (worldwide deficit ~347,956 t/y) to meet the world requirements. In this context, it is necessary to find new and sustainable sources of n-3 LC-PUFA. Poultry products can provide humans n-3 LC-PUFA due to physiological characteristics and the wide consumption of meat and eggs. The present work aims to provide a general overview of the main strategies that should be adopted during rearing and postproduction to enrich and preserve n-3 LC-PUFA in poultry products. The strategies include dietary supplementation of α-Linolenic acid (ALA) or n-3 LC-PUFA, or enhancing n-3 LC-PUFA by improving the LA (Linoleic acid)/ALA ratio and antioxidant concentrations. Moreover, factors such as genotype, rearing system, transport, and cooking processes can impact the n-3 LC-PUFA in poultry products. The use of a multifactorial view in the entire production chain allows the relevant enrichment and preservation of n-3 LC-PUFA in poultry products.

Abstract
The effect of dietary enrichment with flaxseed, selenium and vitamin E, and market class on the nutritional and functional value of breast meat was evaluated. A completely randomized block design was set up, where the experimental unit (n = 6000 birds) received conventional or enriched diet and was slaughtered at 37 (light class), 47 (medium class), or 57 (heavy class) days of life. Hence, functional and standard Pectoralis major muscles from every market class were analyzed for FA composition, inorganic elements and vitamin E. Lipid metabolism indices and health lipid indicators were assessed along with the nutritional value. A multiple linear model revealed that in breasts, the dietary treatment significantly influenced (p < 0.05) the FA profile, lipid metabolism and health lipid indices, while the slaughtering weight was related (p < 0.05) to most of elements (e.g., Na, Mg, K, Mn, and Se) and vitamin E. The interdependence of the two factors had strong relations (p < 0.05) with total PUFAs, including linolenic acid, desaturase activities, health lipid indices, trace essential elements and vitamin E. Consequently, enriched meat from heavy chickens showed the best functional and nutritional traits. Overall, the study pointed out that both market class and dietary manipulation are two relevant factors to consider for producing breast meat with higher nutritional and functional value.

Abstract
Simple Summary Bionda Piemontese and Bianca di Saluzzo are two slow growing breeds from northwest Italy, specifically from the Piedmont region. Their low input requirements make them suitable in organic and free-range rearing contexts for both meat and egg production. This research, part of a conservation program for these two breeds, aims to define the meat properties and qualitative attributes of these two breeds, comparing them at different slaughter ages in order to identify the most profitable slaughter period. The results show significant benefits associated with slaughtering at 7 months of age, which outperformed the shorter rearing periods in terms of both better slaughter performances and meat properties. Abstract The slaughter performance and meat quality of two native Italian chicken breeds, Bionda Piemontese (BP, n = 64) and Bianca di Saluzzo (BS, n = 64), were investigated. Two-way ANOVA, considering breed, sex, and their interaction, was used to compare the properties of birds slaughtered at 5, 6, 7, and 8 months of age. Subsequently, data were analyzed using one-way ANOVA and the Duncan test to evaluate the differences between slaughter ages. The BP breed produced a better carcass yield than BS at 5, 7, and 8 months of age (p < 0.05). Breast moisture and crude protein contents were influenced by gender, and were higher in males than in females (p < 0.05). By contrast, the crude fat content was higher in females than in males (p < 0.05). The saturated fatty acid content of breast meat increased as the birds aged in both breeds (p < 0.05). The polyunsaturated fatty acid content of both breast and thigh meat was higher in males than in females (p < 0.001 and p < 0.05, respectively). In general, slaughtering at 7 months was associated with the best slaughter and meat quality characteristics in both breeds. Moreover, from a nutritional point of view, the characteristics of the meat from male birds were preferable to those of meat from females.

Abstract
Humans and mammalian species are unable to synthesize significant amounts of polyunsaturated fatty acids (PUFA), which therefore must be introduced with the diet. In birds, lipogenesis takes place primarily in the liver, whereas adipose tissue serves as the storage site for triacylglycerols (TG, composed by 80-85% esterified fatty acids). However, both the nature (unsaturation level, n-3, or n-6 series) and the allocation (such as constituents of complexed lipids) of PUFA are very important to evaluate their function in lipid metabolism. The objective of the present investigation was to study the liver lipid metabolism, with particular attention to non-esterified fatty acids (NEFA), TG, phospholipids (PL), FADS2 gene expression, and Δ6-desaturase activity of three chicken genotypes, Leghorn (Leg), Ross 308 (Ross), and their crossbreed (LxR), by LC/MS analysis. The concentration of single fatty acids in muscle was quantified by GC-FID. The results showed that the Ross has a lipid metabolism related mainly to storage and structural roles, exhibiting higher levels of TG, phosphatidylethanolamine (PE) and phosphatidylcholine (PC) that are largely unsaturated. Meanwhile Leg showed a relevant amount of n-3 NEFA characterized by a higher phosphatidylserine (PS) unsaturation level, FADS2 gene expression and enzyme activity. The LxR seem to have a moderate trend: n-6 and n-3 NEFA showed intermediate values compared with that of the Ross and Leg and the TG trend was similar to that of the Ross, while PE and PC were largely unsaturated (mainly 6 and 7 UNS most of the metabolic energy for storage fatty acids in their tissues (TG) whereas, the Leg birds were characterized by different lipid metabolism showing in their liver a higher content of n-3 NEFA and higher unsaturation level in PS. Furthers details are needed to better attribute the lipid energy to the different metabolic portion.

Abstract
This study investigated the role of dietary prebiotic mannan-oligosaccharides (MOS), and probiotic Bifidobacterium bifidum (BFD) in lipid metabolism, deposition, and consequent health indices in broiler chicken. The supplementation of 0.2% MOS along with either 106 or 107 CFU BFD/g feed resulted in downregulation of Acetyl-CoA carboxylase, fatty acid synthase, sterolregulatory element binding protein-1, and apolipoprotein B100; and up-regulation of peroxisome proliferator activated receptor-α AMP-activated protein kinase α-1, and stearoyl CoA (∆9) desaturase-1 hepatic expression in broiler chicken. The birds supplemented with 0.2% MOS along with either 106 or 107 CFU BFD/g feed depicted lower body fat percentage, palmitic acid, stearic acid, and saturated fatty acid contents, whereas, higher palmitoleic acid, oleic acid, and MUFA contents were observed. The ∆9-desaturase indices of chicken meat have shown higher values; and elongase index (only thigh) and thioesterase index have shown lower values in birds supplemented with 0.2% MOS along with either 106 or 107 CFU BFD/g feed. The meat health indices such as Polyunsaturated fatty acids (PUFA)/Saturated fatty acids (SFA) ratio, Mono-saturated fatty acids (MUFA)/SFA ratio, unsaturated fatty acids (UFA)/SFA ratio, hypocholesterolemic/hypercholesterolemic fatty acid ratio, saturation index, atherogenic index, thrombogenic index, and hypercholesterolemic fatty acid content were positively improved in birds supplemented with 0.2% MOS along with either 106 or 107 CFU BFD/g feed. Similarly, the birds supplemented with 0.2% MOS along with either 106 or 107 CFU BFD/g feed have shown lower serum triglyceride and total cholesterol levels along with higher high density levels and improved serum health indices cardiac risk ratio, atherogenic coefficient, and, atherogenic index of plasma.

Abstract
Fatty acid content and lipid oxidation products were compared in chicken breast and leg meats derived from birds fed on animal-fat- and vegetable-oil-based diets, supplemented with ginseng prong powder. The first experiment examined polyunsaturated fatty acid (PUFA) content and the formation of primary and secondary lipid oxidation products in meats stored at refrigeration temperatures (4 °C) for up to 10 days, while the second experiment examined similar changes in the poultry meats when frozen stored at −18 °C, for up to six months. Results showed that initial lipid hydroperoxide concentrations increased in both breast and leg meat within the first week of refrigerated storage and also was ongoing during the first three to four months of frozen storage. A higher (p < 0.05) PUFA content in leg meat, especially in broilers fed a vegetable-oil-blended diet, corresponded to greater tendency for generation of primary lipid oxidation products after refrigerated and frozen storage (p < 0.05). The inclusion of powdered ginseng prong in broiler diets significantly inhibited (p < 0.05) secondary lipid oxidation products (e.g., malonaldehyde [MDA]) formation in both stored leg and breast meat, compared to controls. Significant interactions (p < 0.05) were obtained for storage time and inclusion of ginseng against production of primary and secondary lipid oxidation in broiler breast and leg meats from broilers fed PUFA-containing diets. We conclude that including ginseng prong in broiler growing diets represents a viable strategy to control lipid oxidation in refrigerated/cold-stored meat products.

Abstract
Simple Summary Spirulina is an alga rich in micronutrients of interest for improving the nutritional value and quality of the products. This study evaluates the transfer of some of these micronutrients (vitamins and fatty acids) in egg yolk when short periods of supplementation are used in hens of two different strains, and its consequent effects on some quality parameters. Short-term spirulina supplementation markedly modified vitamin content and color in yolk. Hen strain mainly affected the fatty acid profile, and a different response to retinol content and fatty acid proportions (mainly monounsaturated and desaturase activity) according to spirulina supplementation and breed of hens was observed. Abstract The aim of the study was to investigate the effect of short-term dietary spirulina supplementation (1% and 3%) and the strain of laying hens (White Leghorn: WL and Rhode Island Red: RIR) on color, nutritional value, and stability of yolk. Egg weight was not affected by any of the studied effects. Yolks from 3%-spirulina supplemented hens had higher retinol and lower α-tocopherol content (p = 0.0001) when compared to control. The supplementation with 1%-spirulina markedly decreased luminosity and increased redness (p = 0.0001) and yellowness (p = 0.0103). Short-term spirulina supplementation slightly modified the fatty acid composition of yolk. The C16-desaturase index increased with the algae, whereas other egg quality indices (hypocholesterolemic, thrombombogenic, n-6/n-3) were not modified. Hen strain mainly affected to the lipid profile. The RIR hens accumulated greater yolk retinol with supplementation doses of 3% (p < 0.05), while the WL hardly suffered changes in the accumulation. Also, yolks from RIR hens had lower C16:0 (p = 0.0001), C18:0 (p = 0.0001), saturated (SAT) (p = 0.0001), and thrombogenic index (p = 0.0001), C20:3n-6 (p = 0.0001), n-6/n-3 ratio (p = 0.003), Δ-6+5-desaturase (p = 0.0005), total elongase indices (p = 0.0001) when compared to WL. Moreover, RIR had higher monounsaturated (MUFA), Δ-9-desaturase and hypocholesterolemic indices (p < 0.05) than WL. A different response to spirulina supplementation was observed for C18:1n-9, MUFA, Δ-9-desaturase and thiesterase indices (p < 0.05) according to hen strain. Yolks from RIR had higher MUFA and Δ-9-desaturase indices than WL at 1%-spirulina supplementation, whereas these parameters were less affected in RIR supplemented with 3%. SAT and Δ-9-desaturase were significantly correlated (r = −0.38 and 0.47, respectively) with retinol content according to a linear adjustment (p < 0.05). Lipid oxidation of yolk was slightly modified by the dietary treatment or hen strain. It was detected a relationship between TBARS and α-tocopherol, C22:5n-3 or C22:6n-3 (p < 0.05). L* and a* were also inversely or positively related with yolk retinol content according to a linear response (p < 0.05). The administration of 1% of spirulina in diets of red hens would be an interesting alternative to get healthier eggs from the nutritional point of view, obtaining an adequate color and without modifications in other yolk quality traits.

How the kinetic behavior of organic chickens affects productive performance and blood and meat oxidative status: a study of six poultry genotypes. Poult Sci 2021; 100:101297. Abstract
The aim of this study was to analyze the relationship between the kinetic behavior, carcass characteristics, oxidative status (blood and meat), and meat fatty acid profiles of 6 organically reared slower growing chicken genotypes (SrG). One hundred male chickens of 6 SrG were used: Ranger Classic (RC), Ranger Gold (RG), Rowan Ranger (RR), RedJA (RJ), CY Gen 5 JA87 (CY), and M22 × JA87 (M). Twenty chickens/genotype were selected to analyze behavior, while, 15 individuals were slaughtered and different traits were analyzed in the blood and drumstick meat. The variables were grouped into different principal components: kinetic activity (PC1, with explorative attitude as the highest score), productive performance (PC2, carcass and head/feet yields), blood (PC3, carbonyls, and TBARS) and meat (PC6, thiols, and TBARS) markers, technological traits (PC4, pH, and color), proximate meat composition (PCA5, moisture, lipids, protein, and ash), fatty acid profile, and nutritional indexes (PC7, IP, and PUFAn-3). Uni- and bivariate analyses showed a strong positive association between kinetic behaviors and blood and meat oxidation and a medium positive association with fatty acid profile and nutritional indexes, whereas a negative association was found between productive performance loads and the technological traits of meat. Generalized linear models showed that all PCs were influenced by genotype. In particular, CY and M resulted as less active genotypes; conversely, RR showed more kinetic activity, whereas RJ, RG, and RC exhibited intermediate levels of activity. Cluster analysis of kinetic behavior and blood or meat oxidative status highlighted 2 groups: nonwalking (NW: CY and M) and walking (W: RC, RG, RR, and RJ) animals. However, in the W group, another was visualized, constituted by genotypes with high kinetic activity resulting in the worst oxidative balance (Walking not trained-genotypes, Wnt: RR and RJ). The present results confirmed that the kinetic behavior of SrG genotypes is negatively correlated with productive performance. Furthermore, a significant association between kinetic behavior and blood (positively correlated) or meat (negatively correlated) oxidative status was noted. Such differences are mainly due to the intrinsic response of the genotypes used (i.e., training-walking capacity).

Abstract
In organic poultry production it is important to rear animals with a dynamic attitude to take advantage of outdoor areas. Farmers are reluctant to use such strains due to their lower productivity and older slaughtering age. However, fast growing lines grown in organic system often suffer poor health and welfare conditions. The kinetic metabolism of chickens is correlated with different types of muscle fiber: type I (in red muscles or oxidative) for prolonged and moderate movement and type II (in white muscles or glycogenic) for fast movements. Red muscle metabolism produces energy mainly by β-oxidation of Highly Unsaturated n-3 Fatty Acids (HUFA). Accordingly, kinetic activity causes higher consume of HUFA in red muscles than in white muscles, so the ratio between n-3 HUFA and their precursor C18:3 n-3 (ALA) is likely to be smaller in red than in white muscles. However, these ratios are highly affected by the environment. To reduce the effect of environmental variables, we propose an "Activity index" as the difference between n-3 HUFA/ALA in white and red muscle within the same bird. This index, measured after slaughtering, should represent the activity performed by the chicken during its life. Given that birds in good health had the possibility of moving, the "Activity index" would measure the activity actually performed by the animals. Should birds of a given strain show a higher activity level, this would be an indication of the suitability of that strain to outdoor systems. This work verified the application of this "Activity index" on 90 birds from 6 genetic strains with known kinetic behavior reared in an experimental farm. The "Activity index" was also tested on chicken strains collected form commercial organic farms. The results confirmed that strains recognized for higher kinetic attitude actually walked more and their behavior was clearly detected by the "Activity index" estimated from their muscles.

Simple Summary The aim of this review paper was to retrace the research journey of the researchers of the Department of Agricultural, Food, and Environmental Science at the University of Perugia, Italy that lasted twenty years and draw updated guidelines regarding the best synergy between chicken type and environment in extensive rearing systems in order to optimize animal welfare, quality, and environmental impact, linked with economical sustainability. Abstract The demand for poultry meat, being cheaper than red meat, will drive worldwide production of this product. Accordingly, an increase in production up to 16% is expected in 2025, most of which will occur in developing countries. Most poultry meat production is realized with intensive production systems, and extensive rearing systems (ERS) of poultry (organic, free-range, and low-input) represent only a small portion of poultry production in the EU (about 5%). However, there is an increasing interest in such rearing systems to maintain the good image of product and environmental sustainability, improved animal welfare, and meat quality with an annual trend of growth of about 10%. The aims of this work were to summarize the activities and the viewpoint of the researchers of the Department of Agricultural, Food, and Environmental Science of the University of Perugia (Italy). One of the most important goals of the research unit was the challenge of identifying the best poultry genotypes for ERS, which are important not only for the food industry but also for the improvement of human nutrition. Only the definition of the best genotypes adapted to ERS through the measurement of a wide panel of traits—genetic, physiologic, and behavior—and not only relying on daily weight gain will allow us to achieve this goal.

Abstract
Simple Summary Expected thermal variations as a consequence of climate change represent a challenge for alternative poultry production because animals graze abroad for long periods of time, where slight variations in ambient temperature may cause negative effects on their productive development. Changes in temperature have been described as factors capable of influencing the development of animals. The objective of this study was to evaluate weather conditions and strain affect the development of slow-medium growing chickens raised in an organic system. No differences were shown between both strains studied; this indicates the high similarity between the strains used. This fact would allow the farmer to include one strain or another in his farm indifferently. Better development was observed in chickens that had been raised under cooler conditions (S1) in organic systems. This fact could be justified by the greater difficulty that chickens find to dissipate heat in warmer environments, which impairs their productive development. In this way, whenever possible, it would be recommended to raise the largest number of chickens during the coldest season. Abstract A total of 160 1-day-old medium-growing male chicks (Gallus gallus domesticus) were raised for 120 days in a certified organic farming system. A total of two strains were studied (Coloryield, CY; RedBro, RB). Overall, two weather periods were considered based on the outdoor temperature, being S1 colder than S2. In total, 40 chicks per strain were assigned to each period (n = 80). Chickens were fed ad libitum with the same organic feeds. In the first month, chickens were kept indoors and, from day 30, they had access to the pasture. Slaughter live weight (LW), average daily gains, (ADG), the feed conversion ratio (FCR), and mortality rates did not differ between the two strains. LW was (p < 0.05) higher in the S1 and a trend (p = 0.084) was observed for ADG, which was higher in S1. No differences were found for feed intake, FCR, and mortality rates between weather periods. There were no differences for coefficient of variation (CV) between the strains studied, nevertheless, CV for LW in S2 was increased. Differences in the productive performance between these strains raised in organic production systems were slight. However, chickens raised in S1 had a better performance. It would be preferable to raise chickens in these weather conditions whenever possible.

Abstract
Simple Summary The ongoing loss of domestic animal breeds around the world is occurring at an alarming rate. Thus, the registration and preservation of native breeds is of great importance. The aim of this study, which forms part of a conservation program, was to provide an overview of the conservation statuses of native Italian poultry breeds being reared by local breeders in Italy. The data collected by means of a census questionnaire demonstrate the low population sizes of these breeds in Italy and highlight the need for campaigns aimed at publicizing and promoting the benefits of native breeds with the goal of increasing population sizes. Identifying strategies to facilitate breeders’ access to pure breed birds is also essential, and would require collaborative efforts of university research centers, public entities, and breeders. Abstract The most reared species of farm animal around the world is the chicken. However, the intensification of livestock systems has led to a gradual increase in the concentration of a limited number of breeds, resulting in substantial erosion to the genetic pool. The initial step of an ‘animal conservation program’ entails establishing the actual conservation statuses of the breeds concerned in a defined area; in this case, in Italy. To this end, a survey of breeds was performed by means of a census questionnaire divided into two parts. The first part collected information on breeds, breeders, housing facilities, and management aspects, the results of which are presented here. The second part of the questionnaire regarded chicken products and their markets, and these data will be reported in a second paper. The breed status of six chicken breeds was shown to be exceptionally worrying, with total numbers ranging from just 18 to 186 birds. Population sizes exceeding 1000 birds was identified for just four breeds, the maximum being 3400. Some improvements in status were noted in relation to breeds which had been the subject of conservation efforts in the past. The two most common breeds reported are the Bionda Piemontese, a double-purpose breed, and the Livorno egg-laying hen. Collo Nudo Italiano, Millefiori Piemontese, Pollo Trentino, and Tirolese chicken breeds and the Castano Precoce turkey breed were not listed by breeders at all. The most reported turkey breeds are the Bronzato Comune and the Ermellinato di Rovigo. The population sizes of native Italian poultry breeds were shown to be generally poor. Italian poultry farmers and the population at large are largely ignorant about indigenous poultry breeds. Thus, promoting the virtues of Italian breeds would help their conservation by encouraging breeders to rear these birds and consumers to buy their products. The identification of strategies to facilitate access to pure breed birds is essential, and will require the collaboration of university research centers, public entities, and breeders. The results presented in this paper constitute the initial part of a more complex conservation program.

Abstract
The aim of this study was to evaluate the effects of genotype, sex, dietary protein level, and their interactions on select carcass characteristics and meat quality of fast- (Ross 308), medium- (Hubbard JA757) and slow-growing (ISA Dual) chickens (n = 2,520). The diet of the low-protein group of chickens had 6% lower CP than the commercial diet fed to the control group. When the chickens reached an average live weight of 2 kg, 10 males and 10 females of each genotype and the diet were selected for slaughter and breast meat–quality analysis. The dressing out and breast percentages were lower in the JA757 (−2.0 and −5.9%, respectively) and ISA Dual chickens (−9.9 and −14.3%, respectively) than those in the Ross 308 chickens. The ISA Dual chickens had higher abdominal fat percentage, higher DM and protein contents and lower ether extract content and shear force value in breast meat than the other genotypes. Significant interaction effects of genotype, sex, and diet were found on the color of breast skin. Among the various combinations of genotype, sex, and diet group, Ross 308 females fed the low-protein diet had the highest redness and yellowness of breast skin, highest pH45 value, and largest fibers, whereas ISA Dual females had the lowest color parameters and pH45 value, and ISA Dual males had the smallest muscle fibers. The low-protein diet was associated with decreased abdominal fat percentage and changes in meat quality parameters, including increased darkness, meat color intensity, drip loss, and muscle fiber area, in all genotypes. The results indicated greater differences in meat quality owing to genotype than to sex or dietary protein level.

Abstract
The aim of the present study was to evaluate the effects of quantitative feed restriction (FR) in fast-, medium-, and slow-growing meat-type male and female chickens on their growth, feed consumption, economic efficiency, carcass composition, and gastrointestinal microbiota. In the experiment, fast-growing Ross 308, medium-growing Hubbard JA 757 and slow-growing ISA Dual chickens of both sexes were exposed to quantitative FR between 14 and 21 d of age. During the FR, restricted chickens received 70% of the amount of feed consumed by the ad libitum (AL) group. Live weight at the end of the experiment was affected by genotype (P < 0.001), sex (P < 0.001), feeding regime (P < 0.001), and their interaction (P < 0.001). The highest final weight was in AL and FR ISA Dual males and the lowest was in AL and FR females of the same genotype. A similar tendency was observed in daily weight gain and feed intake. Carcass traits were predominantly affected by genotype. However, interactions of genotype, sex, and feeding regime were observed in thigh (P < 0.001) and abdominal fat (P < 0.001) proportions. Concerning gastrointestinal microbiota, only Escherichia coli was affected by genotype. Feed restriction in slow-growing dual-purpose chickens might improve economic potential; however, further research is needed to reveal the involvement of variable processes, which are unclear and affect production.

Abstract
Chicken meat is rich in unsaturated fatty acids. Therefore, it is more susceptible to lipid oxidation and production of volatile organic compounds (VOC). In this study, we evaluated the fatty acids, antioxidants, and VOC profiles of raw and cooked meat samples derived from 4 strains of chicken differing in their growth rates, which were as follows: slow-growing (SG, Leghorn), medium-growing (MG, Hubbard and Naked Neck), and fast-growing (FG, Ross). The VOC profile of meat was measured using proton-transfer reaction–mass spectrometry (PTR–MS). The VOC were identified using PTR–time of flight-MS (PTR-ToF-MS). The data were analyzed using both univariate and multivariate models. Twenty main VOC were identified, which were classified into the following chemical categories: aldehydes, alkadienes, alkenes, furans, amides, alcohols, and other compounds. Our results revealed that the chicken genotype and the method of cooking strongly influenced the VOC profile of the meat. Identifying the relationships between these traits allowed us to highlight the trade-off of the main substrates such as n-3 and n-6 polyunsaturated fatty acids (PUFA), protective substances (antioxidants), and degradation products (VOC) of the poultry meat produced during cooking. The extent of VOC production and n-3 loss was found to be higher for the SG genotype. Reduction of n-6 was higher in MG, whereas small losses in antioxidants and PUFA were observed in the FG genotype, consequently, resulting in the lowest production of VOC. The SG and MG are genotypes more active from a kinetic point of view respect to the FG ones. For this reason, in the FG genotypes, the antioxidants are less involved in the oxidative stress induced by the movement; thus, they were available to protect the lipid of the meat during the cooking process. These results suggested that the use of SG and MG genotypes requires a specific dietary protocol (i.e., increasing the antioxidants content) to counteract the lipid oxidations in all the phases: in vivo, postmortem, and during/after cooking.

Abstract
In alterative rearing systems, the use of outdoor space has a crucial role. It is well known that only some commercial poultry genotypes are suitable to be reared in these systems. It is necessary to find a balance between productive performance and adaptability. The aim of this study was to evaluate the productive performance, behavior, and welfare status of six poultry genotypes reared in an organic system. One hundred males/genotype (Hubbard RedJA (A), CY5XJA87 (CY), M22XJA87 (M), Ranger Classic (R1), Ranger Gold (R2), and Rowan Ranger (R3)) were reared from 1 to 81 days of age. The number of culled birds was recorded daily, whereas live weight and feed consumption were recorded weekly. Behavior evaluation was undertaken through a computerized system one week before slaughtering; the breast yield and muscle/bone ratio of the drumstick was also evaluated in refrigerated carcasses. The results showed that A and R3 had good adaptability, showing active behaviors and satisfactory productive performance 3083.6 g and 3022.1 g, respectively. Although CY and M achieved the best productive performance, they did not appear adapted to the organic system due to a higher frequency of static behaviors (rest and roost), mortality, footpad dermatitis, breast blisters, and poor feather condition.

Abstract
Simple Summary One-day-old laying cockerels are killed after hatching because they do not reach the growth rate of broiler chickens, and their fattening would be economically disadvantageous. A possible variant of the use of these cockerels could be organic or free-range farming, where it is desirable that the animals are fattened for a longer period of time, are more physically active, and graze pasture vegetation. Another possibility is dual-purpose genotype breeding, where hens are used for egg production and cockerels are fattened for meat. In the present study, three genotypes of dual-purpose cockerels Dominant were compared. All three genotypes showed the ability to graze with resulting improvements in meat quality. The Dominant 102 cockerels have the greatest prerequisites for use in extensive fattening, mainly due to higher performance, willingness to graze and vitamin E content, which protects the fat from becoming rancid. Abstract The culling of layer cockerels due to economic inefficiency is an ethical problem. Organic or free-range fattening of these cockerels or dual-purpose genotypes breeding is a possible solution to this problem. The aim of the study was to assess the differences in performance and meat quality characteristics in dual-purpose cockerels Dominant of three genotypes (Dominant Sussex D 104, Dominant Brown D 102 and Dominant Tinted D 723, 100 cockerels per genotype) with access to pasture. The cockerels were housed in mobile boxes on the pasture herbage from the 50th to 77th day of age (stocking density: 0.108 m2/bird). The highest body weight on the 77th day of age (p < 0.001) and the nonsignificantly lowest feed conversion was achieved by Dominant Brown D 102 cockerels (1842 g and 2.79, respectively). Non-significantly higher pasture herbage intake on the 70th day of age was recorded in genotype Dominant Brown D 102 (7.41 g dry matter (DM)/bird/day) and Dominant Tinted D 723 (7.52 g DM/bird/day). The pasture herbage contained 56.9 mg/kg DM α-tocopherol, 170.3 mg/kg DM zeaxanthin and 175.0 mg/kg DM lutein and had a favourable n6/n3 ratio (0.26). The boiled meat of cockerels Dominant Tinted D723 showed the highest tenderness based on both the sensory evaluation (p = 0.022) and the value of shear force (p = 0.049). This corresponds with a higher (p < 0.001) cross-sectional area and muscle fibre diameter in these chickens. The highest content of n3 fatty acids (eicosapentaenoic, clupanodonic and docosahexaenoic acids) in breast meat were found in Dominant Sussex D104 chickens (p < 0.001). In contrast, a significantly higher α-tocopherol content (p < 0.001) and higher oxidative stability (p = 0.012) were found in Dominant Brown D102 (4.52 mg/kg and 0.282 mg/kg) and Dominant Tinted D 723 chickens (4.64 mg/kg and 0.273 mg/kg) in comparison with the Dominant Sussex D104 genotype (3.44 mg/kg and 0.313 mg/kg). The values of the atherogenic and thrombogenic indexes were the lowest (p < 0.001) in meat from Dominant Brown D102 chickens. Moreover, a lower cholesterol content (p < 0.001) was recorded from the genotypes Dominant Brown D102 (396 mg/kg) and Dominant Tinted D723 (306 mg/kg) chickens, contrary to the Dominant Sussex D104 cockerels (441 mg/kg). It can be concluded that cockerels Dominant Brown D102 are a suitable genotype for free-range rearing due to higher performance and higher pasture herbage intake, which positively influences meat quality, whereas the meat of Dominant Sussex D104 cockerels shows higher amounts of n3 fatty acids and lower n6/n3 ratios.

Abstract
1. Although fattening dual-purpose types or male layer hybrid chickens appears more ethical than the common practice of culling day-old male layer chicks, the lower feed efficiency of these birds raises concerns. Replacing feed ingredients that compete with food production by those of lower value for human nutrition would be beneficial.2. Lohmann Dual (LD), a modern dual-purpose type, Lohmann Brown (LB), a male layer hybrid, and Hubbard JA 957 (HU), a slow-growing broiler type, were fattened for nine weeks on two diets (control or -20% crude protein; n = 6 × 12 birds). Growth, carcass and meat quality were analysed.3. Growth performance of HU exceeded that of LD and especially of LB. The growth depression caused by the low-protein diet fed to LD (-7%) was only half of that found in HU (-13%). The LD fed the control diet had the same feed efficiency as the HU fed the low-protein diet. Even the LB had a lower performance and feed efficiency with the low-protein diet in growth. There was a gradient in carcass properties (weight, dressing percentage, breast meat yield, breast proportion and breast angle) from HU to LD to LB, with some additional adverse effects of the low-protein diet especially in HU. There were some breed differences in fatty acid profile in the intramuscular fat.4. In conclusion, the dual-purpose type used complied with regulations for Swiss organic poultry systems in terms of growth rate and was found to respond less when fed a low-protein diet than the slow-growing broiler type. The LB males were inferior in all growth and carcass quality traits. Future studies need to determine the exact protein and amino acid requirements of dual-purpose and layer hybrid chickens and the economic feasibility of the systems, especially for organic farming.

Abstract
A study was carried out to assess the efficacy of prebiotic delivered in ovo on performance, carcass traits, meat quality and gut health in the face of a natural coccidiosis infection in Kuroiler chickens. On d 12 of incubation, 150 fertile eggs were divided into a prebiotic group injected with trans-galactooligosaccharides (Bi2tos) and a control group uninjected. Hatched chicks from each group were further divided: One group received antibiotic chick formula while the other was left untreated, giving rise to 4 groups-Control (C), Antibiotic (A), Bi2tos (B), and Bi2tos + Antibiotic (AB). Prebiotic improved growth performance at six weeks of age, AB birds were the heaviest at the end of the rearing period. The highest intestinal lesion scores and oocyst counts were recorded in C birds. B group had a slightly higher carcass weight and cuts yields tended to be higher in treated groups compared to C. Meat from B group displayed a higher amount of polyunsaturated fatty acids compared to C and a positively lower n-6/n-3 ratio compared to C and A. In conclusion, prebiotics with or without antibiotics reduced severity of intestinal lesions and oocyst excretion induced by natural infection with Eimeria, with positive effects on Kuroiler chicken productive traits.

Abstract
The purpose of the present study was to elucidate the effects of feeding flaxseed meal (FSM) and turmeric rhizome powder (TRP) supplementation on tissue lipid profile, lipid metabolism, health indices, oxidative stability, and physical properties of broiler chicken meat. The 100 g FSM along with 10.0 g TRP supplementation significantly increased the ω-3 PUFA, particularly ALA, EPA, DPA, and DHA of broiler chicken meat due to the corresponding increase ∆9 and Δ5 + Δ6 desaturase activities. The increased activities of the desaturases resulted in significantly better health indices of the broiler chicken meat. The feeding of 100 g FSM along with 10.0 g TRP supplementation reduced the atherogenic and thrombogenic indices of broiler chicken meat. The 100 g FSM feeding reduced the oxidative stability, water holding capacity, extract release volume of broiler chicken meat and increased drip loss, whereas, 10.0 g TRP supplementation reversed these negative effects of FSM.

Abstract
The aim of this study was to determine the influence of storage conditions and packaging methods on chicken breast meat chemical composition and fat oxidation. In this study, chicken breasts available in retail sale were used for evaluation. The meat packed by three different methods (air packaging-AP, modified atmosphere packaging-MAP, and vacuum packaging-VP) was stored in a cooling room or a commercial display case for 9 D and tested for basic chemical composition, lipid oxidation (TBARS), and fatty acid composition. Meat in MAP during storage in the cooling room was characterized by higher (P ≤ 0.05) TBARS values as compared to meat packaged in AP and VP, respectively. The highest share in the fatty acid profile in chicken breasts was demonstrated by monounsaturated fatty acid, including cis C18:1 (n9 + n11) acid in the range from 31.86 to 34.66%. A high share of polyunsaturated acids was observed, including linoleic (C18:2 cis, cis) acid from 24.50 to 31.22% of all fatty acids. The simple relationship between the changes in the profile of fatty acids in meat packaged using different methods and in storage time was not determined, likely due to the variability of the composition of fatty acids in chicken breasts depending on the sample and the general low level of fat found in the meat.

RESUMO Objetivou-se avaliar o perfil lipídico da carne de frangos de diferentes genótipos. O delineamento foi inteiramente ao acaso (DIC), disposto em esquema fatorial (5x2), sendo cinco genótipos (New Hampshire ˗ NHS; Gigante Negra de Jersey ˗ GNJ; Índio Gigante ˗ IG; cruzamento entre as raças IG e NHS ˗ IG x NHS; e entre as raças IG e GNJ ˗ IG x GNJ) e dois sexos, com cinco repetições, sendo cada uma representada por três aves, totalizando 150 aves, abatidas aos 105 dias. As análises de perfil lipídico foram realizadas no peito e na coxa. Foram calculadas as estimativas das atividades enzimáticas, os índices de aterogenicidade e de trombogenicidade. Os genótipos IG e IG x NHS apresentaram maiores teores de ácido araquidônico e DHA. Foram observados maiores teores de ácidos graxos saturados e monoinsaturados no peito para os genótipos IG x NHS e NHS, respectivamente. Maiores médias de ácidos graxos poli-insaturados e ômega 3 foram observadas para os genótipos IG e IG x NHS. O genótipo IG x NHS e as fêmeas apresentaram melhores características de qualidade de carne, por oferecerem uma maior fonte de ômega 3.

Abstract
Farm animals raised under free-range (FR) systems are assumed to have improved welfare and higher-quality products that are better to eat than intensively reared animals. However, the modulations are limited in scientific investigations. In this study, we compared 2 rearing systems (FR and cage) and their effects on chickens, including production performance, product quality, body condition, physiological indicators, and gene expression. By using a match-mismatch design in which each treatment was transferred to the other treatment during the last period of the experiment, we aimed to understand the influence of current and former rearing conditions and the ability of individuals to adapt to the current environment. The results indicated that the FR system led to better chicken welfare (e.g., gait score, feather condition, and physiological indicators, P < 0.05) and contributed to higher product quality (P < 0.05), although it resulted in poorer production performance (P < 0.05) and foot pad condition (P < 0.05) than that of the cage rearing system. Additionally, the FR system triggered a series of inner changes and genetic responses in chickens, such as the upregulation of calcium and GnRH signaling, actin and cytoskeleton regulations, immune functions, and developmental processes, and the downregulation of pathological regulations (q-value < 0.05 for all gene ontology terms and P < 0.05 for all Kyoto Encyclopedia of Genes and Genomes (KEGG) pathways). In conclusion, rearing systems alter chicken gene expression patterns, which provide a genetic basis for the adaptability to rearing environments and ultimately affects chicken welfare and products.

Abstract
Simple Summary Poultry meat production is now based on fast-growing strains, with consequences for animal health and welfare. There is also an increasing demand for products from extensive rearing systems; there are, however, several criticisms including the difficulty of slaughtering chickens from a logistic, legislative and economic point of view. A possible solution could be represented by the use a Mobile Poultry Processing Unit (MPPU), which directly reaches the poultry farms. The aim of this review is to analyse the requisites and economic efficiency of a MPPU prototype in Italy; further, the related animal welfare aspects and the qualitative and sanitary implications are discussed. Abstract Nowadays there is an increasing demand for poultry products from alternative rearing systems. These systems, commonly named pastured poultry production (PPP), are more expensive than intensive rearing system but sustain biodiversity, local economies and farm multi-functionality besides providing meat to which consumers attribute high ethical value and quality. PPP generally uses large outdoor runs, small number of animals and requires chickens adapted to natural environment. One of the most relevant obstacles to further development of PPP systems is related to the slaughtering of animals economically and at the same time complying with the sanitary regulations to maintain food safety standards. A possible solution could be represented by a Mobile Poultry Processing Unit (MPPU), which directly reaches the poultry farms. MPPU can consider a good compromise for the niche production providing an opportunity to small farmers to exploit the full potential of their production system. The aim of this review is to analyse the essential requisites and MPPU economic viability in an Italian system. Qualitative, societal aspects are discussed together with bird welfare and hygiene implications. The case study indicates the viability of MPPUs but notes that up scaling to medium sized operations would not be permissible under current EU regulations.

Abstract
In the past years, consumers' concerns about sustainability and animal welfare have increased, strengthening the demand for eggs and meat produced through alternative and extensive farming methods. In addition, producers have also become increasingly interested in the recovery and exploitation of local breeds due to their adaptability to local environmental conditions, to valorize the biodiversity and to provide added value to typical products. Among the Italian local breeds, Romagnola has almost risked extinction and currently is reared in small-scale farms for eggs and meat production. The aim of this study was to characterize the egg quality traits of Romagnola chicken breed (RMG) compared to those obtained by a commercial hybrid (CONV). Ten laying hens of both Romagnola breed and Hy-Line Brown at 40 wk of age were housed in the same outdoor pen and fed the same commercial feed (ME 2,830 kcal/kg, CP 17.2%) for 10 wk. At 5 and 10 wk after housing, all the eggs laid in 4 consecutive days were collected and used for the determination of egg and eggshell characteristics as well as proximate composition and fatty acid profile of egg yolk. As expected, some important productive traits such as egg weight and production resulted higher in CONV chickens. However, eggs from RMG hens presented a higher yolk/egg ratio (31.1 vs. 24.9%; P < 0.01) as well as carotenoids (36.8 vs. 20.2 ppm; P < 0.01) and cholesterol content (12.8 vs. 11.7 mg/g of yolk; P < 0.01) than those laid by the conventional genotype. Moreover, yolks from RMG eggs were characterized by lower polyunsaturated fatty acid (PUFA) n-6 content (22.6 vs. 28.4%; P < 0.01) and PUFA n-6/n-3 ratio (11.3 vs. 13.5; P < 0.01) showing a healthier fatty acids profile than conventional eggs. These results highlighted several valuable egg quality traits of Romagnola chicken breed that might be exploited for the conservation and the development of this underutilized Italian pure breed.

Abstract
Objective The aim of this study was to compare male and female geese of two contrasting genotypes in terms of fatty acid composition, indexes related to human health, lipid metabolism and oxidative stability of the meat. Methods The experiment was carried out on total of 120 geese of two different genotypes; the native breed Czech goose (CG) and commercial hybrid Novohradska goose (NG). One-d-old goslings were divided into 4 groups according to genotype and sex, and 8 birds from each group were slaughtered at 8 weeks of age. Results The effects of the interactions between genotype and sex were observed on growth performance and carcass traits. Final body weight (p<0.001), daily weight gain (p<0.001), daily feed intake (p<0.001), slaughter weight (p<0.001), and cold carcass weight (p<0.001) were highest in NG males and lowest in CG females. The meat fatty acid composition results showed effects of both genotype and sex on the total n-6 and the total polyunsaturated fatty acid (PUFA) content, as well as the PUFA n-6/PUFA n-3 ratio. Regarding genotype, the total n-6, the total PUFA content and the PUFA n-6/PUFA n-3 ratio were higher in CG, and higher values were found in females. In terms of the lipid metabolism, Δ5–Δ6 desaturase (p = 0.006) was higher in males. The meat oxidative stability results revealed an interaction between genotype, sex and storage time (p<0.001). The highest (13.85 mg/kg) malondialdehyde content was measured in the meat of CG females after 5 days of storage and was presumably related to a higher PUFA content. Conclusion NG had a relatively higher growth rate and meat oxidative stability, whereas the advantage of CG meat is its favourable fatty acid profile characterized by a higher PUFA content.

Abstract
The objective of this study was to explore the effects of free-range (FR), part-time free-range (PTFR), and cage system (CS) on behavioral repertoire in Lakha (LK), Mushki (MS), Peshawari (PW), and Sindhi (SN) varieties of Aseel chicken during the growing phase (9 to 18 wk of age). In total, 144 Aseel pullets were allotted to 12 treatment groups in a 3 × 4 (rearing system × Aseel variety) factorial arrangement, according to a randomized complete block design (RCBD). Each treatment group was replicated 3 times with 4 birds in each replicate (12 birds per treatment group). The pullets were randomly marked weekly for identification, and their behavior was observed through the focal animal sampling method. Time spent on different behavioral activities was recorded and converted to a percentage. The data were analyzed using 2-way ANOVA under a factorial arrangement using SAS 9.1, and the behavioral parameters were evaluated. The results indicated greater (P < 0.05) sitting, standing, drinking, preening, and aggressiveness in CS; walking, running, and jumping in PTFR; and foraging and dustbathing in both FR and PTFR, whereas feather pecking was found to be reduced in FR compared with PTFR and CS. Among varieties, PW showed the least feeding/foraging and feather pecking behavior, and greater standing, running, and jumping behavior (P < 0.05). However, SN spent less time in walking and preening, and more time in sitting, drinking, and aggressiveness. Dustbathing was found to be similar in all Aseel varieties (P = 0.135). In conclusion, the PTFR system could be suggested as a substitute for conventional housing systems because it better accommodates normal behavior in Aseel pullets.
