Physiological Changes of Bamboo (Fargesia yunnanensis) Shoots During Storage and the Related Cold Storage Mechanisms

How lignocellulose degradation can promote the quality and function of dietary fiber from bamboo shoot residue by Inonotus obliquus fermentation

Lignocellulose constitutes the primary component of dietary fiber. We assessed how fermenting bamboo shoot residue with the medicinal white-rot fungus Inonotus obliquus affected the yield, composition, and functional attributes of dietary fiber by altering bamboo shoot residue lignocellulose's spatial structure and composition. I. obliquus secretes lignocellulolytic enzymes, which effectively enhance the degradation of holocellulose and lignin by 87.8% and 25.5%, respectively. Fermentation led to a more porous structure and reduced crystallinity. The yield of soluble dietary fiber increased from 5.1 g/100 g raw BSR to 7.1 g/100 g 9-day-fermented bamboo shoot residue. The total soluble sugar content of dietary fiber significantly increased from 9.2% to 13.8%, which improved the hydration, oil holding capacity, in vitro cholesterol, sodium cholate, and nitrite adsorption properties of dietary fiber from bamboo shoot residue. These findings confirm that I. obliquus biotransformation is promising for enhancing dietary fiber yield and quality.

Influence of flowering on the anatomical structure, chemical components and carbohydrate metabolism of Bambusa tuldoides culms at different ages

Bamboo forests, which have come to occupy large areas in recent years, naturally undergo the process of blooming. However, bamboo culms and rhizomes degenerate after the plants bloom, resulting in widespread loss of raw materials. Systematic research on the properties and physiology of bamboo culms after flowering is lacking, and whether flowering bamboo culms could be used as raw materials in industry is unclear. In this paper, we compared and measured the fiber morphology, chemical components, and sugar metabolism indexes of non-flowering and flowering Bambusa tuldoides culms at different ages. The results showed that the fibers in the middle internodes of both non-flowering and flowering B. tuldoides culms had the longest length. The fibers completed their elongation within 1 year, but the fiber walls were continually deposited with age. The levels of the chemical components in the nonflowering culms also continually increased with age. The nonstructural carbohydrate (NSC) content and sugar metabolism indexes showed the highest levels in the 2-year culms and then declined in the 3-year culms. Compared to young culms that had not yet flowered, the 3-month-old and 1-year-old flowering culms had a significant decrease in the fiber length and tangential diameter, and their holocellulose and lignin levels also decreased, while the levels of ash, SiO2, 1% NaOH extractives, and benzene-ethanol extractives increased. A correlation analysis showed that sugar catabolism was accelerated in the flowering cluster, which could lead to "starvation death" in bamboo and which had a significant negative impact on the anatomical and chemical properties of the bamboo culms. Generally, the flowering bamboo culms had shorter fibers, higher levels of extractives and ash, and lower holocellulose content, which indicated that bamboo flowering has an adverse effect on the application of such components in the production of pulp, in papermaking, and in other processing and utilization activities. This study revealed the physiological changes in flowering B. tuldoides culms and provided a theoretical basis to inform the utilization of culms in this species.

Effect of Composite Edible Coatings Combined with Modified Atmosphere Packaging on the Storage Quality and Microbiological Properties of Fresh-Cut Pineapple

This study investigated the effect of edible coating (EC), modified atmosphere packaging (MAP), and edible coating + modified atmosphere packaging (EC + MAP) treatments on the quality of fresh-cut pineapples during storage at 4 °C. The quality differences were analyzed by measuring the quality, physiological indicators, and total microbial counts. After 8 d of storage, the brightness (L*) values of the EC + MAP and control samples were 72.76 and 60.83, respectively. The water loss and respiratory rate of the EC + MAP were significantly inhibited from 0% and 29.33 mg CO₂ kg^-1 h^-1 to 4.13% and 43.84 mg CO₂ kg^-1 h^-1, respectively. Furthermore, the fresh-cut pineapples treated with EC + MAP presented a good appearance, with lower total soluble solids (TSS) and relative conductivity and higher titratable acid (TA), ascorbic acid (AA), total phenol content, and firmness compared to the other treatment groups. At the end of storage, the EC + MAP samples exhibited the lowest polyphenol oxidase (PPO) activity, peroxidase (POD) activity, and malondialdehyde (MDA) content at 28.53 U, 60.37 U, and 1.47 nmol·g^-1, respectively. Furthermore, the efficiency of EC + MAP treatment exceeded that of EC or MAP alone, preventing key problems involving the surface browning and microbiological safety of the fresh-cut pineapples. The results showed that EC + MAP treatment was more successful in maintaining the storage quality and extending the shelf life of fresh-cut pineapples.

First report on metagenomics and their predictive functional analysis of fermented bamboo shoot food of Tripura, North East India

Moiya pansung, mileye amileye, moiya koshak, and midukeye are naturally fermented bamboo shoot foods of Tripura. The present study aimed to reveal the whole microbial community structure of naturally fermented moiya pangsung, mileye amileye, moiya koshak, and midukeye along with the prediction of microbial functional profiles by shotgun metagenomic sequence analysis. The metataxonomic profile of moiya pangsung, mileye amileye, moiya koshak, and midukeye samples showed different domains, viz., bacteria (97.70%) followed by the virus (0.76%), unclassified (0.09%), eukaryotes (1.46%) and archaea (0.05%). Overall, 49 phyla, 409 families, 841 genera, and 1,799 species were found in all the fermented bamboo shoot samples collected from different places of Tripura. Firmicutes was the most abundant phylum (89.28%) followed by Proteobacteria (5.13%), Bacteroidetes (4.38%), Actinobacteria (1.02%), and Fusobacteria (0.17%). Lactiplantibacillus plantarum was the most abundant species in moiya pangsung, mileye amileye, moiya koshak, and midukeye followed by Lactococcus lactis, Levilactobacillus brevis, Leuconostoc mesenteroides, Weissella paramesenteroides, Leuconostoc kimchii, Pediococcus pentosaceus, Leuconostoc gasicomitatum, and Lacticaseibacillus casei. A few phyla of fungus were found, viz., Ascomycota, Basidiomycota, and Glomeromycota, where Ascomycota was present in high abundance. Functional analysis of moiya pangsung, mileye amileye, moiya koshak, and midukeye metagenome revealed the genes for the synthesis and metabolism of a wide range of bioactive compounds including, various essential amino acids, and conjugated amino acids. The abundance profile and predictive analysis of fermented bamboo shoots revealed a huge plethora of essential microorganisms and KEGG analysis revealed genes for amino acid metabolism, pectin degradation, lipid metabolism, and many other essential pathways that can be essential for the improvement of nutritional and sensory qualities of the fermented bamboo shoot products.

Multifaceted analyses reveal carbohydrate metabolism mainly affecting the quality of postharvest bamboo shoots

Bamboo shoot is one of nutritious vegetables in China. However, the edible quality of fresh bamboo shoots deteriorates easily after harvest. Here, morphological, physiological, transcriptomic and microRNA sequencing analyses were conducted to investigate the postharvest characteristics of moso bamboo (Phyllostachys edulis) shoots. Rapid decreases of soluble sugars, structural polysaccharides and hydrolyzed tannins, and increases of lignin and condensed tannins were observed in the postharvest bamboo shoots. Differentially expressed genes (DEGs) and miRNAs with opposite trends were mainly enriched in structural polysaccharide metabolism, starch and sucrose metabolism and glycolysis pathways, which were consistent with the changes of carbohydrates. A co-expression network of carbohydrate metabolism was constructed, which was verified by qPCR and yeast one-hybrid (Y1H) assay. Furthermore, the function of one hub glycosyltransferase gene was validated in Arabidopsis, which confirmed that it was involved in xylan biosynthesis. These results are of great significance for revealing the carbohydrate metabolism mechanisms of postharvest bamboo shoots and provide a potential candidate gene for molecular breeding related to xylan in the future.
