Abstract
Zinc oxide (ZnO) nanoparticles (NPs) are utilized as a zinc (Zn) fortifier in processed foods where diverse food additives can be present. Among them, additive solvents may strongly interact with ZnO NPs by changing the dispersion stability in food matrices, which may affect physico-chemical and dissolution properties as well as the cytotoxicity of ZnO NPs. In this study, ZnO NP interactions with representative additive solvents (methanol, glycerin, and propylene glycol) were investigated by measuring the hydrodynamic diameters, solubility, and crystallinity of ZnO NPs. The effects of these interactions on cytotoxicity, cellular uptake, and intestinal transport were also evaluated in human intestinal cells and using in vitro human intestinal transport models. The results revealed that the hydrodynamic diameters of ZnO NPs in glycerin or propylene glycol, but not in methanol, were significantly reduced, which is probably related to their high dispersion and increased solubility under these conditions. These interactions also caused high cell proliferation inhibition, membrane damage, reactive oxygen (ROS) generation, cellular uptake, and intestinal transport. However, the crystal structure of ZnO NPs was not affected by the presence of additive solvents. These findings suggest that the interactions between ZnO NPs and additive solvents could increase the dispersion and solubility of ZnO NPs, consequently leading to small hydrodynamic diameters and different biological responses.

Abstract
This study aims to provide information on the behaviour and biopersistence rate (BP) of metallic nanoparticles (Ag-NPs, TiO2-NPs, ZnO-NPs) naturally occurring in canned seafood and subjected to static in vitro digestion. Single particle ICP-MS analysis was performed to determine NPs distribution and concentrations in oral, gastric, and intestinal digests. Depending on the conditions of the digestive phase and the sample matrix, the phenomena of agglomeration and dispersion were highlighted and confirmed by Dynamic Light Scattering (DLS) technique. In standard suspensions, Ag-NPs had lower biopersistence (BP) than ZnO and TiO2-NPs (BP 34%, 89% and >100%, respectively). Among Ag-NPs and TiO2-NPs naturally present in the food matrix, those in canned tuna were more degradable than those in canned clam (BP Ag-NPs 36% vs. > 100%; BP TiO2-NPs 96% vs. > 100%), while BP ZnO-NPs showed high biopersistence in both seafood matrix (>100%). The biopersistence rates were higher than the recommended limit set by European Food Safety Authority (EFSA) (12%), referred to nanotechnologies to be applied in the food and feed chain, thus the investigated naturally occurring NPs cannot be considered readily degradable.

Abstract
Whitening agents, such as hydrogen peroxide and carbamide peroxide, are currently used in clinical applications for dental esthetic and dental care. However, the free radicals generated by whitening agents cause pathological damage; therefore, their safety issues remain controversial. Furthermore, whitening agents are known to be unstable and short-lived. Since 2001, nanoparticles (NPs) have been researched for use in tooth whitening. Importantly, nanoparticles not only function as abrasives but also release reactive oxygen species and help remineralization. This review outlines the historical development of several NPs based on their whitening effects and side effects. NPs can be categorized into metals or metal oxides, ceramic particles, graphene oxide, and piezoelectric particles. Moreover, the status quo and future prospects are discussed, and recent progress in the development of NPs and their applications in various fields requiring tooth whitening is examined. This review promotes the research and development of next-generation NPs for use in tooth whitening.

Abstract
The adsorption of biological molecules to nanomaterials (NMs) will significantly impact NMs' behavior in complex microenvironments. Previously we proposed the need to consider the interactions between food components and NMs for the evaluation of oral toxicity of NMs. This review updated this concept as nutrient molecule corona, that the adsorption of nutrient molecules alters the uptake of nutrient molecules and/or NMs, as well as the signaling pathways to induce a combined toxicity due to the biologically active nature of nutrient molecules. Even with the presence of protein corona, nutrient molecules may still bind to NMs to change the identities of NMs in vivo. Furthermore, this review proposed the binding of excessive nutrient molecules to NMs to induce a combined toxicity under pathological conditions such as metabolic diseases. The structures of nutrient molecules and physicochemical properties of NMs determine nutrient molecule corona formation, and these aspects should be considered to limit the unwanted effects brought by nutrient molecule corona. In conclusion, similar to other biological molecule corona, the formation of nutrient molecule corona due to the presence of food components or excessive nutrient molecules in pathophysiological microenvironments will alter the behaviors of NMs.

Abstract
Food additive zinc oxide (ZnO) nanoparticles (NPs) are widely used as a Zn supplement in the food and agriculture industries. However, ZnO NPs are directly added to complex food-matrices and orally taken through the gastrointestinal (GI) tract where diverse matrices are present. Hence, the dissolution properties, interactions with bio- or food-matrices, and the ionic/particle fates of ZnO NPs in foods and under physiological conditions can be critical factors to understand and predict the biological responses and oral toxicity of ZnO NPs. In this review, the solubility of ZnO NPs associated with their fate in foods and the GI fluids, the qualitative and quantitative determination on the interactions between ZnO NPs and bio- or food-matrices, the approaches for the fate determination of ZnO NPs, and the interaction effects on the cytotoxicity and oral toxicity of ZnO NPs are discussed. This information will be useful for a wide range of ZnO applications in the food industry at safe levels.

Abstract
The interaction between zinc oxide nanoparticles (ZnO NPs) and whey protein (WP) was studied. The gastric epithelial cell line (GES-1) was used to evaluate the toxicity intensity of ZnO NPs. The interaction mechanism of ZnO NPs and WP was studied by spectroscopic techniques. The results showed that the inhibitory effect of ZnO NPs on cells activity could be reduced when added to ZnO NPs at a concentration of 50 µg/ml. The fluorescence quenching mechanism of ZnO NPs on WP is a combination of dynamic and static quenching. The interaction force between ZnO NPs and WP can be considered as H-bond and VdW force, and they have two binding sites. The interaction between WP and ZnO NPs leads to the loosening of the structural skeleton of WP and the extension of peptide chain, which exposes the tyrosine (Tyr) and tryptophan (Trp) hydrophobic groups in the hydrophobic region of protein molecules and reduces the hydrophobicity of the microenvironment. The ZnO NPs might form a complex with WP through H-bond, hydrophobic interactions, and so on, leading to peptide chain rearrangement, and finally causing changes in the secondary structure of α-helix. Practical Application This study provides a theoretical basis for future research on the interaction between food ingredients and nanomaterials, the evaluation of toxicity of nanomaterials and the application scope of nanomaterials in food field.

Abstract
Zinc oxide (ZnO) nanostructures can be synthesized in nanoforms of spheres, rods, flowers, disks, walls, etc., among which nanoflowers have gained special attention due to their versatile biomedical and pollutant remedial applications in waste water and air. ZnO nanoflowers have an ultrasmall size with a huge surface area to volume ratio due to their hexagonal petal structures which render them superior compared to the nanoparticles of other shapes. The ZnO nanoflowers have bandgap energy equivalent to a semiconductor that makes them have unique photophysical properties. We have used the appropriate keywords in Google Scholar and PubMed to obtain the recent publications related to our topic. We have selected the relevant papers and utilized them to write this review. The different methods of synthesis of ZnO nanoflowers are chemical vapor deposition, facile hydrothermal, thermal evaporation, chemical reduction, bio route of synthesis, and solvothermal method, etc. which are mentioned in this review. ZnO nanoparticles are used in paints, cosmetics, and other products due to their high photocatalytic activity. The different applications of ZnO nanoflowers in the diagnosis of disease biomarkers, biosensors, catalysts, and the therapeutic process along with wastewater remediation and gas sensing applications will be discussed in this review.

Abstract
Previously we reported the cytoprotective effects of polyphenols rich in hydroxyl groups against ZnO nanoparticles (NPs). This study used RNA-sequencing to evaluate the toxicity of ZnO NPs and epigallocatechin gallate (EGCG) to 3D Caco-2 spheroids. EGCG altered the colloidal stability of ZnO NPs, shown as the changes of atomic force microscopic height, solubility in cell culture medium, and hydrodynamic sizes. EGCG almost completely reversed ZnO NP-induced cytotoxicity, and consistently, alleviated ZnO NP-induced gene ontology (GO) terms and genes related with apoptosis. EGCG also modestly decreased intracellular Zn ions and changed GO terms and genes related with endocytosis/exocytosis in ZnO NP-exposed spheroids. Meanwhile, EGCG changed ZnO NP-induced alteration of GO terms and genes related with the functions of mitochondria, endoplasmic reticulum and lysosomes. We concluded that EGCG alleviated the cytotoxicity of ZnO NPs to 3D Caco-2 spheroids by altering NPs' colloidal properties and the pathways related with internalization and organelle dysfunction.

Abstract
Zinc oxide (ZnO) nanoparticles (NPs) are used as zinc supplements due to the nutritional value of Zn. The toxicity of ZnO NPs in the food industry is required to be elucidated because they have large surface area and high reactivity compared with bulk-sized materials and have potentials to interact with food matrices, which may lead to different biological responses. In this study, interactions between ZnO NPs and food proteins (albumin, casein, and zein) were evaluated by measuring changes in physicochemical property, fluorescence quenching ratios, and structural protein stability compared with ZnO interaction with glucose, the most interacted saccharide in our previous report. The interaction effects on cytotoxicity, cellular uptake, intestinal transport, toxicokinetics, and acute oral toxicity were also investigated. The results demonstrate that interaction between ZnO and albumin reduced hydrodynamic diameters, but increased cytotoxicity, cellular uptake, and intestinal transport in a similar manner to ZnO interaction with glucose, without affecting primary structural protein stability and toxicokinetic behaviors. Hematological, serum biochemical, and histopathological analysis reveal no toxicological findings after orally administered ZnO NPs interacted with albumin or glucose in rats for 14 consecutive days, suggesting their low oral toxicity. In conclusion, the interactions between ZnO NPs and food proteins modulate in vitro biological responses, but do not affect in vivo acute oral toxicity. Further study is required to ascertain the interaction effects on chronic oral toxicity.

Abstract
In this study, a new series of zinc oxide (ZnO) with high specific surface area and narrow energy band gap are prepared using a facile microwave-induced method. The corresponding formation mechanism is also discussed for the first time. Due to the introduction of C, these ZnO can be excited by long wave temperature light without harmful short wave radiation, and play an efficient photocatalytic activity. This valuable property fundamentally improves the biological safety of its photocatalytic application. Herein, taking teeth whitening as an example, the photocatalytic performance of ZnO is evaluated. The “pure” yellow light-emitting diode (PYLED) with high biological safety is used as the excitation source. It is found that this method could effectively remove pigment on the tooth surface through physical adsorption. In addition, these ZnO could generate active oxygen to degrade the pigment on the tooth surface under the irradiation of yellow light. Some further optimization of these “warm light” responsive ZnO is also discussed in this systematical study, which could open up new opportunities in biomedical field. A series of ZnO (PZCs, ZnO-BC) with high specific surface area and low band gap were synthesized by simple microwave-induced synthesis. The introduction of C or BC can effectively reduce the band gap of ZnO. Long wavelength warm light can effectively stimulate the photocatalytic activity of PZCs and ZnO-BC. Under the yellow light, ZnO can effectively decompose the pigment on the tooth surface. Warm light whitening, from the light source and material two levels to reduce the stimulation of teeth, and no obvious damage to enamel.

Abstract
The use of zinc oxide nanoparticles (ZnO NPs) is expected to increase soil fertility, crop productivity, and food quality. However, the potential effects of ZnO NP utilization should be deeply understood. This review highlights the behavior of ZnO NPs in soil and their interactions with the soil components. The review discusses the potential effects of ZnO NPs on plants and their mechanisms of action on plants and how these mechanisms are related to their physicochemical properties. The impact of current applications of ZnO NPs in the food industry is also discussed. Based on the literature reviewed, soil properties play a vital role in dispersing, aggregation, stability, bioavailability, and transport of ZnO NPs and their release into the soil. The transfer of ZnO NPs into the soil can affect the soil components, and subsequently, the structure of plants. The toxic effects of ZnO NPs on plants and microbes are caused by various mechanisms, mainly through the generation of reactive oxygen species, lysosomal destabilization, DNA damage, and the reduction of oxidative stress through direct penetration/liberation of Zn2+ ions in plant/microbe cells. The integration of ZnO NPs in food processing improves the properties of the relative ZnO NP-based nano-sensing, active packing, and food/feed bioactive ingredients delivery systems, leading to better food quality and safety. The unregulated/unsafe discharge concentrations of ZnO NPs into the soil, edible plant tissues, and processed foods raise environmental/safety concerns and adverse effects. Therefore, the safety issues related to ZnO NP applications in the soil, plants, and food are also discussed.

Abstract
Surfactants, whose existence has been recognized as early as 2800 BC, have had a long history with the development of human civilization. With the rapid development of nanotechnology in the latter half of the 20th century, breakthroughs in nanomedicine and food nanotechnology using nanoparticles have been remarkable, and new applications have been developed. The technology of surfactant-coated nanoparticles, which provides new functions to nanoparticles for use in the fields of nanomedicine and food nanotechnology, is attracting a lot of attention in the fields of basic research and industry. This review systematically describes these "surfactant-coated nanoparticles" through various sections in order: 1) surfactants, 2) surfactant-coated nanoparticles, application of surfactant-coated nanoparticles to 3) nanomedicine, and 4) food nanotechnology. Furthermore, current progress and problems of the technology using surfactant-coated nanoparticles through recent research reports have been discussed.

Abstract
The fast-growing applications of engineered titanium dioxide nanoparticles (e-TiO2-NPs) in the food and pharmaceutical industry in production, packaging, sensors, nutrient delivery systems, and food additives enhance the possibility of oral exposure. Physicochemical transformations may occur when e-TiO2-NPs are incorporated into a food matrix and pass through the human gastrointestinal tract (GIT), which may redefine the toxic effects of the e-TiO2-NPs. In this study, a standardized food model (SFM) and simulated gastrointestinal fluids have been used to study the fate of e-TiO2-NPs following a three-step digestion model in vitro, and a case study was carried out to assess the toxicity of the digested e-TiO2-NPs using an in vitro cellular model. In the absence and presence of the SFM, the transformations of the tristimulus color coordinates, size, agglomeration state, surface charge and solubility of the e-TiO2-NPs in the salivary, gastric and intestinal digestion fluids were compared with those before digestion. The results demonstrate that the presence of the SFM impacted the physicochemical properties of the e-TiO2-NPs significantly. The SFM stabilized the e-TiO2-NP suspensions and acted as a dispersant during each digestive phase. The e-TiO2-NPs showed differentiated transformations of their physicochemical properties after each step of the digestive process. The pH shifts and variable concentrations of enzymes and salts in gastrointestinal fluids induced the transformations of the physicochemical properties of the e-TiO2-NPs. The transformed e-TiO2-NPs could release titanium ion in the gastrointestinal tract. Also, the cell viability induced by e-TiO2-NPs was found to be strongly affected by the presence of the SFM and simulated human GIT fluids. It can be concluded that the physicochemical transformations of the e-TiO2-NPs that were found when they were incorporated into an SFM and passed through the GIT consequently strongly affected the biological effects of the e-TiO2-NPs, which highlights that the toxicity assessment of ingested NPs should use appropriate standardized food models and take realistic physiological conditions into account.

Abstract
Food matrices could affect the physicochemical properties of nanoparticles (NPs) and define the biological effects of NPs via oral exposure compared with the pristine NPs. We established a standardized dietary model based on Chinese dietary reference intakes and Chinese dietary guidelines to mimic the exposure of NPs in real life and to evaluate further the biological effect and toxicity of NPs via oral exposure compared with current models. The standardized dietary model prepared from the primary emulsion was dried into powder using spray drying compared with commercial food powder and then was reconstituted compared with the fresh sample. The average particle size (295.59 nm), potential (-23.78 mV), viscosity (0.04 pa s), and colors (L*, a*, b* = 84.13, -0.116, 8.908) were measured and characterized of the fresh sample. The flowability (repose angle = 37.28° and slide angle = 36.75°), moisture (2.68%), colors (L*, a*, b* = 94.16, -0.27, 3.01), and bulk density (0.45 g/ml) were compared with commercial food powder. The size (310.75 nm), potential (-23.98 mV), and viscosity (0.04 pa s) of reconstituted model were similar to the fresh sample. Results demonstrated that the model was satisfy the characterizations of easy to fabrication, good stability, small particle size, narrow particle size distribution, strong practicability, and good reproducibility similar to most physiological food state and will be used to evaluate NPs' safety.

Abstract
Zinc oxide (ZnO) particles have been used as dietary supplements because zinc is an essential trace element for humans. Along with the rapid development of nanotechnology, the use of ZnO nanoparticles (NPs) is increasing in the food industry, but their oral toxicity potential still remains to be answered. In this study, the effects of particle size and biological fate of ZnO on acute toxicity, toxicokinetics, and gene expression profiles in the livers were investigated after oral administration of ZnO NPs (N-ZnO), bulk-sized ZnO (B-ZnO) or Zn ions in rats. The plasma concentration-time profiles after a single-dose oral administration of ZnOs differed depending on particle/ionic forms and particle size, showing high absorption of Zn ions, followed by N-ZnO and B-ZnO, although in vivo solubility did not differ from particle size. No significant acute toxicity was found after oral administration of ZnOs for 14 days in rats. However, transcriptomic responses in the livers were differently affected, showing that metabolic process and metal biding were up-regulated by Zn ions and N-ZnO, respectively, which were not pronounced in the liver treated with B-ZnO. These findings will be useful to predict the potential oral toxicity of ZnO NPs and further mechanistic and long-term exposure studies are required to assume their safety.

Abstract
(1) Background: Zinc oxide (ZnO) particles are widely used as zinc (Zn) fortifiers, because Zn is essential for various cellular functions. Nanotechnology developments may lead to production of nano-sized ZnO, although nanoparticles (NPs) are not intended to be used as food additives. Current regulations do not specify the size distribution of NPs. Moreover, ZnO is easily dissolved into Zn ions under acidic conditions. However, the fate of ZnO in commercial foods or during intestinal transit is still poorly understood. (2) Methods: We established surfactant-based cloud point extraction (CPE) for ZnO NP detection as intact particle forms using pristine ZnO-NP-spiked powdered or liquid foods. The fate determination and dissolution characterization of ZnO were carried out in commercial foods and human intestinal cells using in vitro intestinal transport and ex vivo small intestine absorption models. (3) Results: The results demonstrated that the CPE can effectively separate ZnO particles and Zn ions in food matrices and cells. The major fate of ZnO in powdered foods was in particle form, in contrast to its ionic fate in liquid beverages. The fate of ZnO was closely related to the extent of its dissolution in food or biomatrices. ZnO NPs were internalized into cells in both particle and ion form, but dissolved into ions with time, probably forming a Zn–ligand complex. ZnO was transported through intestinal barriers and absorbed in the small intestine primarily as Zn ions, but a small amount of ZnO was absorbed as particles. (4) Conclusion: The fate of ZnO is highly dependent on food matrix type, showing particle and ionic fates in powdered foods and liquid beverages, respectively. The major intracellular and intestinal absorption fates of ZnO NPs were Zn ions, but a small portion of ZnO particle fate was also observed after intestinal transit. These findings suggest that the toxicity of ZnO is mainly related to the Zn ion, but potential toxicity resulting from ZnO particles cannot be completely excluded.

Abstract
Zinc oxide nanoparticles (ZnONPs) have been widely used in food storage containers and food additives in daily life. However, the impact of oral intake of ZnONPs on nervous system is extremely limited, especially on children and adolescents. In this study, four weeks old mice were treated with either vehicle or ZnONPs suspension solution at 26 mg/kg by intragastric administration for 30 days. Our results demonstrated that oral ZnONPs exposure could induce pathological changes in gut and abnormal excitement of enteric neurons. Interestingly, we found that ZnONPs caused enhancement of 5-hydroxytryptamine (5-HT) in gut by activation of its biosynthesis, transport and receptors, and subsequently resulting in increased level of 5-HT in brain via gut-brain communication by blood. Our data also showed that there were no apparent changes on the expressions of interleukin (Il)-6, Il-1β, C-C motif chemokine ligand 2 (Ccl2), tumor necrosis factor (Tnf) in gut and zinc chelator Mt2 in gut and cortex. Meanwhile, no significant changes were observed on the expressions of tryptophan hydroxylase type 1, 5-HT receptor 3A (Htr3a) and Htr4 in hippocampus and cortex. Our study indicate that oral ZnONPs exposure causes hyperfunction of 5-HT in gut in young mice which may further spread to brain via gut-brain communication.
