Abstract
In this work, a novel ultrasensitive aptasensor for deoxynivalenol (DON) detection based on the polyethyleneimine-functionalised porous reduced graphene oxide loaded gold nanowires (PEI-PrGO/AuNWs) and methylene blue (MB)-labelled zeolitic imidazolate framework-8 (ZIF-8) signal amplification strategy was proposed. PEI-PrGO/AuNWs with large surface area and excellent conductivity were used as modification materials on bare gold electrodes, which could increase the combining of complementary strand (cDNA) on the electrode substrate and accelerate the electron transfer efficiency. Furthermore, a novel electrochemical signal probe was synthesized using streptavidin-modified zeolitic imidazolate framework-8 (ZIF-8/SA) as a carrier loaded with MB and reverse complementary chain (sDNA). In the presence of DON, the signal probe was introduced to the electrode surface by Watson-Crick base pairing after specific binding of DON to the aptamer (Apt). As expected, under the optimal conditions, the DON concentration was linearly related to the peak current generated by the prepared aptasensor, and the measured data were combined with theoretical calculations to obtain a detection limit of 2.23 × 10-9 mg/mL.

Abstract
The measurement of food contaminants faces a great challenge owing to the increasing demand for safe food, increasing consumption of fast food, and rapidly changing patterns of human consumption. As different types of contaminants in food products can pose different levels of threat to human health, it is desirable to develop specific and rapid methods for their identification and quantification. During the past few years, metal-organic framework (MOF)-based materials have been extensively explored in the development of food safety sensors. MOFs are porous crystalline materials with tunable composition, dynamic porosity, and facile surface functionalization. The construction of high-performance biosensors for a range of applications (e.g., food safety, environmental monitoring, and biochemical diagnostics) can thus be promoted through the synergistic combination of MOFs with aptamers. Accordingly, this review article delineates recent innovations achieved for the aptamer-functionalized MOFs toward the detection of food contaminants. First, we describe the basic concepts involved in the detection of food contaminants in terms of the advantages and disadvantages of the commonly used analytical methods (e.g., DNA-based methods (PCR/real-time PCR/multiplex PCR/digital PCR) and protein-based methods (enzyme-linked immunosorbent assay/immunochromatography assay/immunosensor/mass spectrometry). Afterward, the progress in aptamer-functionalized MOF biosensors is discussed with respect to the sensing mechanisms (e.g., the role of MOFs as signal probes and carriers for loading signal probes) along with their performance evaluation (e.g., in terms of sensitivity). We finally discuss challenges and opportunities associated with the development of aptamer-functionalized MOFs for the measurement of food contaminants.

Abstract
An electrochemical aptsensor for deoxynivalenol determination was successfully designed and constructed based on a defective bimetallic organic framework (denoted as ZrTi-MOF). The high porosity, large specific surface area, several structural defects, mixed metal clusters, and rich functionality of ZrTi-MOF markedly enhanced its electrochemical activity and facilitated the aptamer immobilization. As a result, the ZrTi-MOF-based aptasensor shows high sensitivity to detect deoxynivalenol via specific recognition between aptamer and deoxynivalenol, as well as the formation of aptamer-deoxynivalenol complex. On this basis, the developed ZrTi-MOF-based impedimetric aptasensor showed a low detection limit of 0.24 fg mL-1 for deoxynivalenol determination in the deoxynivalenol concentration range 1 fg mL-1- 1 ng mL-1 under optimized conditions, which also exhibited satisfactory selectivity, stability, reproducibility, and regenerability. Furthermore, determination of deoxynivalenol was achieved in bread and wheat flour samples via the developed ZrTi-MOF-based deoxynivalenol aptasensor. The result from this study showed that the ZrTi-MOF-based electrochemical aptasensor could become a promising strategy for detecting deoxynivalenol in foodstuffs in the future.

Abstract
The rapid and sensitive detection of food contaminants is becoming increasingly important for timely prevention and treatment of foodborne disease. In this review, we discuss recent developments of electrochemical biosensors as facile, rapid, sensitive, and user-friendly analytical devices and their applications in food safety analysis, owing to the analytical characteristics of electrochemical detection and to advances in the design and production of bioreceptors (antibodies, DNA, aptamers, peptides, molecular imprinted polymers, enzymes, bacteriophages, etc.). They can offer a low limit of detection required for food contaminants such as allergens, pesticides, antibiotic traces, toxins, bacteria, etc. We provide an overview of a broad range of electrochemical biosensing designs and consider future opportunities for this technology in food control.

Abstract
Vomitoxin (DON) residues in grains are of great concern to public health. Herein, a label-free aptasensor was constructed to detect DON distributed in grains. Cerium-based metal-organic framework composite gold nanoparticles (CeMOF@Au) were used as substrate materials to facilitate electron transfer and provided more binding sites for DNA. The separation of DON-aptamer (Apt) complex and cDNA was achieved by magnetic separation technique based on magnetic beads (MBs), ensuring the specificity of the aptasensor. Exonuclease III (Exo III)-assisted cDNA cycling process strategy would be triggered when cDNA was separated and introduced to the sensing interface for further signal amplification. Under optimal conditions, the constructed aptasensor presented a wide detection range from 1 × 10-8 mg·mL-1 to 5 × 10-4 mg·mL-1 for DON, and the detection limit was 1.79 × 10-9 mg·mL-1, including a satisfactory recovery in cornmeal sample spiked with DON. The results showed that the proposed aptasensor had high reliability and promising application potential in detecting DON.

Abstract
Metal-organic framework materials (MOFs) have been widely used in food contamination adsorption and detection due to their large specific surface area, specific pore structure and flexible post-modification. MOFs with specific pore size can be targeted for selective adsorption of some contaminants and can be used as pretreatment and pre-concentration steps to purify samples and enrich target analytes for food contamination detection to improve the detection efficiency. In addition, MOFs, as a new functional material, play an important role in developing new rapid detection methods that are simple, portable, inexpensive and with high sensitivity and accuracy. The aim of this paper is to summarize the latest and insightful research results on MOFs for the adsorption and detection of food contaminants. By summarizing Zn-based, Cu-based and Zr-based MOFs with low cost, easily available raw materials and convenient synthesis conditions, we describe their principles and discuss their applications in chemical and biological contaminant adsorption and sensing detection in terms of stability, adsorption capacity and sensitivity. Finally, we present the limitations and challenges of MOFs in food detection, hoping to provide some ideas for future development.

Abstract
Type B trichothecenes (deoxynivalenol, nivalenol, 3-acetyldeoxynivalenol, 15-acetyldeoxynivalenol) and deoxynivalenol-3-glucoside (DON-3G) are secondary toxic metabolites produced mainly by mycotoxigenic Fusarium fungi and have been recognized as natural contaminants in cereals and cereal-based foods. The latest studies have proven the various negative effects of type B trichothecenes on human health. Due to the widespread occurrence of Fusarium species, contamination by these mycotoxins has become an important aspect for public health and agro-food systems worldwide. Hence, their monitoring and surveillance in various foods have received a significant deal of attention in recent years. In this review, an up-to-date overview of the occurrence profile of major type B trichothecenes and DON-3G in cereal grains and their toxicological implications are outlined. Furthermore, current trends in analytical methodologies for their determination are overviewed. This review also covers the factors affecting the production of these mycotoxins, as well as the management strategies currently employed to mitigate their contamination in foods. Information presented in this review provides good insight into the progress that has been achieved in the last years for monitoring type B trichothecenes and DON-3G, and also would help the researchers in their further investigations on metabolic pathway analysis and toxicological studies of these Fusarium mycotoxins.

Abstract
Pesticide and mycotoxin residues in food are concerning as they are harmful to human health. Traditional methods, such as high-performance liquid chromatography (HPLC) for such detection lack sensitivity and operation convenience. Efficient, accurate detection approaches are needed. With the recent development of nanotechnology, electrochemical biosensors based on nanomaterials have shown solid ability to detect trace pesticides and mycotoxins quickly and accurately. In this review, English articles about electrochemical biosensors in the past 11 years (2011-2022) were collected from PubMed database, and various nanomaterials are discussed, including noble metal nanomaterials, magnetic metal nanoparticles, metal-organic frameworks, carbon nanotubes, as well as graphene and its derivatives. Three main roles of such nanomaterials in the detection process are summarized, including biomolecule immobilization, signal generation, and signal amplification. The detection targets involve two types of pesticides (organophosphorus and carbamate) and six types of mycotoxins (aflatoxin, deoxynivalenol, zearalenone, fumonisin, ochratoxin A, and patulin). Although significant achievements have been made in the evolution of electrochemical nano-biosensors, many challenges remain to be overcome.

Abstract
Mycotoxins in food are hazardous for animal and human health, resulting in food waste and exacerbating the critical global food security situation. In addition, they affect commerce, particularly the incomes of rural farmers. The grave consequences of these contaminants require a comprehensive strategy for their elimination to preserve consumer safety and regulatory compliance. Therefore, developing a policy framework and control strategy for these contaminants is essential to improve food safety. In this context, sensing approaches based on metal-organic frameworks (MOF) offer a unique tool for the quick and effective detection of pathogenic microorganisms, heavy metals, prohibited food additives, persistent organic pollutants (POPs), toxins, veterinary medications, and pesticide residues. This review focuses on the rapid screening of MOF-based sensors to examine food safety by describing the main features and characteristics of MOF-based nanocomposites. In addition, the main prospects of MOF-based sensors are highlighted in this paper. MOF-based sensing approaches can be advantageous for assessing food safety owing to their mobility, affordability, dependability, sensitivity, and stability. We believe this report will assist readers in comprehending the impacts of food jeopardy exposure, the implications on health, and the usage of metal-organic frameworks for detecting and sensing nourishment risks.

Abstract
Mycotoxin contamination in foodstuffs and agricultural products has posed a serious hazard to human health and raised international concern. The progress of cost-effective, facile, rapid and reliable analytical tools for mycotoxin determination is in urgent need. In this regard, the potential utility of metal-organic frameworks (MOFs) as a class of crystalline porous materials has sparked immense attention due to their large specific surface area, adjustable pore size, nanoscale framework structure and good chemical stability. The amalgamation of MOFs with high-affinity aptamers has resulted in the progress of advanced aptasensing methods for clinical and food/water safety diagnosis. Aptamers have many advantages over classical approaches as exceptional molecular recognition constituents for versatile bioassays tools. The excellent sensitivity and selectivity of the MOF-aptamer biocomposite nominate them as efficient lab-on-chip tools for portable, label-free, cost-effective and real-time screening of mycotoxins. Current breakthroughs in the concept, progress and biosensing applications of aptamer functionalized MOFs-derived electrochemical and optical sensors for mycotoxins have been discussed in this study. We first highlighted an overview part, which provides some insights into the functionalization mechanisms of MOFs with aptamers, offering a foundation to create MOFs-based aptasensors. Then, we discuss various strategies to design high-performance MOFs-based aptamer scaffolds, which serve as either signal nanoprobe carriers or signal nanoprobes and their applications. We perceived that applications of optical aptamers are in their infancy in comparison with electrochemical MOFs-derived aptasensors. Finally, current challenges and prospective trends of MOFs-aptamer sensors are discussed.

Abstract
Deoxynivalenol (DON) is a typical mycotoxin in cereals and poses tremendous threats to the ecological environment and public health. Therefore, exploiting sensitive and robust analytical methods for DON is particularly important. Here, we fabricated a CRISPR-Cas12a-mediated luminescence resonance energy transfer (LRET) aptasensor to detect DON by using single-stranded DNA modified upconversion nanoparticles (ssDNA-UCNPs) as anti-interference luminescence labels and gold nanoparticle-decorated Ti3C2Tx MXene nanosheets (MXene-Au) as enhanced quenchers. The DON aptamer can activate the trans-cleavage activity of Cas12a to indiscriminately cut nearby ssDNA-UCNPs into small fragments, which prevents ssDNA-UCNPs from adsorbing onto MXene-Au, and the upconversion luminescence (UCL) remains. Upon the binding of the aptamer with DON, the trans-cleavage activity of Cas12a was suppressed, and the ssDNA-UCNPs were not cleaved and easily adsorbed onto MXene-Au, which caused UCL quenching. Under optimized conditions, the limit of detection was determined to be 0.64 ng/mL with a linear range of 1 - 500 ng/mL. In addition, the sensor was successfully applied to detect DON in corn flour and Tai Lake water with recoveries of 96.2 - 105% and 95.2 - 104%, respectively. This platform achieves a sensitive and specific analysis of DON and greatly broadens the detection range of CRISPR-Cas sensors for non-nucleic acids hazards in the environment and food.

Abstract
Mycotoxins, which are toxic secondary metabolites produced by fungi, are harmful to humans. Mycotoxin-induced contamination has drawn attention worldwide. Consequently, the development of reliable and sensitive detection methods and high-efficiency control strategies for mycotoxins is important to safeguard food industry safety and public health. With the rapid development of nanotechnology, many novel nanomaterials that provide tremendous opportunities for greatly improving the detection and control performance of mycotoxins because of their unique properties have emerged. This review comprehensively summarizes recent trends in the application of nanomaterials for detecting mycotoxins (fluorescence, colorimetric, surface-enhanced Raman scattering, electrochemical, and point-of-care testing) and controlling mycotoxins (inhibition of fungal growth, mycotoxin absorption, and degradation). These detection methods possess the advantages of high sensitivity and selectivity, operational simplicity, and rapidity. With research attention on the control of mycotoxins and the gradual excavation of the properties of nanomaterials, nanomaterials are also employed for the inhibition of fungal growth, mycotoxin absorption, and mycotoxin degradation, and impressive controlling effects are obtained. This review is expected to provide the readers insight into this state-of-the-art area and a reference to design nanomaterials-based schemes for the detection and control of mycotoxins.

Abstract
Mycotoxins are secondary metabolites produced by fungal species, which pose significant risk to humans and livestock. The mycotoxins which are produced from Aspergillus, Penicillium, and Fusarium are considered most important and therefore regulated in food- and feedstuffs. Analyses are predominantly performed by official laboratory methods in centralized labs by expert technicians. There is an urgent demand for new low-cost, easy-to-use, and portable analytical devices for rapid on-site determination. Most significant advances were realized in the field bioanalytical techniques based on molecular recognition. This review aims to discuss recent progress in the generation of native biomolecules and new bioinspired materials towards mycotoxins for the development of reliable bioreceptor-based analytical methods. After brief presentation of basic knowledge regarding characteristics of most important mycotoxins, the generation, benefits, and limitations of present and emerging biorecognition molecules, such as polyclonal (pAb), monoclonal (mAb), recombinant antibodies (rAb), aptamers, short peptides, and molecularly imprinted polymers (MIPs), are discussed. Hereinafter, the use of binders in different areas of application, including sample preparation, microplate- and tube-based assays, lateral flow devices, and biosensors, is highlighted. Special focus, on a global scale, is placed on commercial availability of single receptor molecules, test-kits, and biosensor platforms using multiplexed bead-based suspension assays and planar biochip arrays. Future outlook is given with special emphasis on new challenges, such as increasing use of rAb based on synthetic and naïve antibody libraries to renounce animal immunization, multiple-analyte test-kits and high-throughput multiplexing, and determination of masked mycotoxins, including stereoisomeric degradation products.

Abstract
A simple and low-cost fluorescence aptasensor was developed for rapid and sensitive signal amplification detection of T-2 mycotoxin (T-2). Dual-terminal-fluorescein amidite (FAM)-labeled aptamer (D-aptamer) acted as a recognition element and signal indicator. The metal organic frameworks (MOFs) of N, N'-bis(2-hydroxyethyl)dithiooxamidato copper (II) (H2dtoaCu) were as the quencher. The D-aptamer was initially adsorbed to the surface of H2dtoaCu, leading to efficient quenching of the aptasensor. Upon addition of T-2, the D-aptamer underwent a conformation change to form the T-2/T-2 aptamer complex, which induced the signaling probe to be released from the H2dtoaCu surface. Thus, the fluorescence intensity (FL) of the D-aptamer was recovered. Versus the single-terminal-FAM-labeled aptamer (S-aptamer), the D-aptamer showed a lower detection limit of 0.39 ng/mL. The aptasensor was also successfully applied to detect T-2 in corn and wheat samples with good recoveries.
