Abstract
There have been few investigations into the health benefits and meat quality of supplementing Yangzhou geese with paper mulberry silage. One hundred and twenty 28-day-old Yangzhou geese were selected for the experiment and randomly divided into two groups: a control group (CON) and a paper mulberry silage group (PM), with six replicates in each group. The experiment lasted for a total of 6 weeks. The experiment found that compared with CON, PM had a promoting effect on the average daily weight gain of Yangzhou geese (p = 0.056). Sensory and nutritional analysis of breast muscles revealed a decrease in a* value (p < 0.05) and an increase in protein content (p < 0.05) following PM treatment. Through untargeted metabolomics analysis of breast muscle samples, it was found that 11 different metabolites, including guanidinoacetic acid and other substances, had a positive effect on amino acid metabolism and lipid antioxidant pathways of PM treatment. Overall, the strategy of feeding Yangzhou geese with paper mulberry silage is feasible, which can improve the sensory quality and nutritional value of goose meat. The experiment provides basic data for the application form of goose breeding, so exploring the impact of substances within paper mulberry on goose meat should be focused on in the future.

Abstract
The aim of this work was to study, for the first time, the effects of the rearing management (from birth to slaughter) applied throughout the life of young bulls on carcass and meat quality. Five rearing managements were defined statistically, from a combination of 30 rearing factors, using a hierarchical clustering on principal components. This study considered the individual data of 179 Charolais young bulls from commercial farms. The carcass traits were more sensitive to rearing management than the meat traits. Rearing management had an effect mainly on fat and overall meat grain for the carcass, and on color and tenderness for the longissimus meat. However, it was possible to produce carcass and/or meat with similar properties from different rearing managements. Among the five rearing managements defined in this study, two were identified as allowing the best trade-off to produce simultaneously high carcass and meat quality. The first management was characterized by absence of growth period and a short fattening duration, with a wrapped haylage or corn silage-based diet. The second management was characterized by short pre-weaning and growth periods, and a long fattening period.

Abstract
The present study evaluated the effect of dietary supplementation with fermented-Moutai distillers' grain (FMDG) on the growth performance, meat quality, amino acid composition and blood metabolites of finishing cattle. Thirty cattle (2 years old; 237.55 ± 10.72 kg) were randomly assigned to one of three dietary supplementations: 0% FMDG (control), 15% FMDG (R1) and 30% FMDG (R2) [dry matter (DM) basis]. After 60 days, the inclusion of FMDG had no significant (p > 0.05) effects on the growth performance indices (dry matter intake, average daily gain and feed efficiency), meat quality (cooking yield, shear force, L*, a*, and b* values) or bovine blood biochemical indicators (except albumin and immunoglobulin A). Cattle fed R1 had the lowest (p = 0.001) loin eye area. Supplementation with FMDG significantly (p < 0.05) increased the beef contents of various amino acids (except isoleucine and arginine) compared with the control diet. Specifically, R2 significantly increased (p < 0.05) the total amino acid, essential amino acid, non-essential amino acid and umami amino acid contents in beef, while the difference in bitter amino acid content between different treatments was not significant (p = 0.165). These results suggest that it is feasible to include FMDG at up to 30% DM without affecting the growth performance, meat quality or blood metabolites of finishing cattle.

Abstract
Fifty-nine Angus-cross finishing steers were used to evaluate benzoic acid, active dry yeast (Saccharomyces cerevisiae), or a combination of benzoic acid and active dry yeast when supplemented in a high-grain finishing diet on live animal performance, feeding behavior, and carcass characteristics. Steers were fed a high-grain diet for the final 106 d of finishing. Treatments were as follows: no additional supplementation (CON), 0.5% benzoic acid (ACD), 3 g per head per day active dry S. cerevisiae (YST), or both 0.5% benzoic acid and 3 g/head per day S. cerevisiae (AY). Steers were weighed every 14 d, and ultrasound was performed for rib and rump fat thickness at the beginning (day 1), middle (day 57), and end (day 99) of the experiment. Insert feeding stations were used to collect individual feeding behavior data and DMI daily throughout. Blood samples were collected on days 21 and 22 and days 99-101 to assess plane of nutrition and metabolism. Ruminal fluid samples were collected by oral gavage 4 wk prior to slaughter. Carcass characteristics were examined at a federally inspected slaughter facility. Data were analyzed using PROC GLIMMIX of SAS with initial body weight (BW) as a covariate. Benzoic acid supplementation increased (P = 0.002) overall dry matter intake (DMI) compared to YST and CON steers, which may be due to a faster eating rate (P ≤ 0.008). Animal performance parameters (BW, average daily gain, feed conversion, and ultrasound fat depth) were not different (P ≥ 0.11) among treatment groups. Aspartate aminotransferase concentration was greatest (P ≤ 0.01) for YST steers, which may have been reflected in numerically greater liver abscesses. Carcass traits did not differ (P ≥ 0.33) among treatment groups. Ruminal pH was greater (P = 0.006) for ACD steers than AY steers (pH of 6.16 vs. 5.66, respectively), which indicated that there may be an interactive effect between benzoic acid and active dry yeast. To summarize, steers fed a high-grain finishing diet supplemented with benzoic acid, active dry yeast, or both benzoic acid and active dry yeast had similar growth performance and carcass characteristics compared to those without supplementation. However, the addition of benzoic acid alone increased DMI, variation in DMI, eating rate, and ruminal pH. Future studies are warranted to further investigate the impacts of benzoic acid on the ruminal environment of feedlot cattle.

Abstract
Two experiments were conducted to determine the effects of a fibrolytic enzyme pretreatment on growth performance, apparent total tract digestibility, and ruminal pH throughout the grower and early finisher period (exp. 1), and to examine the impact of Saccharomyces cerevisiae supplementation on intake, performance, and indicators of gut health in the late finisher period (exp. 2). A total of 54 steers were randomly assigned to a subgroup determining experimental treatment groups. In exp. 1, steers were randomized to control (CON1; no enzyme) or enzyme [ENZ; 0.75 mL·kg−1 dry matter (DM) of feed] dietary treatments. Digestibility was improved (P ≤ 0.05) in ENZ steers for DM, crude protein, net energy for gain, and sugars but did not affect (P ≥ 0.12) dry matter intake (DMI), average daily gain (ADG), or reticulo-ruminal pH. In exp. 2, the treatments were control (CON2; no yeast) or yeast (YST; 3.0 g·animal−1 daily) supplemented diets. Rumen papillae were collected for mRNA expression of gut barrier function (OCLN, CLDN, ZO1, and ZO2) and immune response (TLR2, TLR4, and FCAR) genes and histological measurements. Yeast supplementation decreased (P < 0.001) DMI by 31%, reduced variation in DMI, and improved feed conversion ratios but did not impact rumen health mRNA expression or histology measures (P ≥ 0.07). Overall, enzyme supplementation improved the digestibility of some nutrients in the grower period, and yeast supplementation improved feed efficiency, without impacting growth performance or gut health.

Abstract
An experiment was conducted in a completely randomized design to evaluate the effect of including graded levels (0, 20, 30, 40 and 50% of diet) of dried distiller's grains with solubles (DDGS) on growth performance, slaughter parameters, blood serum metabolites and rumen microbiota in weaned Najdi male lambs. Thirty-five lambs, initial body weight of 33.45 ± 0.75 kg, and approximately three-month old were used in a 94-day feeding experiment. Performance measurements were conducted biweekly and blood samples were collected monthly. Inclusion of DDGS in the diets of growing Najdi lambs at levels up to 50% did not affect body weight gain (BWG) compared with the lambs fed the control diet (CON, 0% DDGS). Lambs fed the 50% DDGS diet consumed less feed compared with lambs in other groups (98 vs 112.5 kg DM) but had no adverse effect on BWG. Rumen pH values at 0, 6, 12 and 18 h post feeding and concentrations of blood serum total proteins, glucose, triglycerides, urea-N or albumin were similar across treatments. Slaughter parameters including slaughter weight, hot and cold carcass weights and dressing % (hot and cold carcass) were not affected by the treatments. There was no difference in the weights of full compartmental stomach and intestines, liver, omental fat, Kidney Knob and Channel Fat (KKCF) and tail fat between DDGS treatments and CON. The study concluded that the inclusion of DDGS in the diets of growing Najdi lambs had no adverse effects on growth performance and slaughter parameters. Rumen microbiota was not affected, however, our data suggest significant interactions between DDGS and selected bacterial groups and DDGS driven rearrangement of Prevotella species.

Abstract
One-hundred thirty-two finishing steers (300 ± 2.7 kg body weight [BW]) predominately of Angus, Simmental, and Shorthorn breeding were used to study the effect of metabolizable protein (MP) intake on growth performance, carcass characteristics, and feeding behavior. Steers were stratified by initial BW across five pens and randomly assigned to one of four dietary treatments to supply an average of 626, 906, 1,209, and 1,444 g MP/d (n = 33 per treatment). Feed intake and feeding behavior were measured using radio frequency identification tags and the Insentec feeding system. For feeding behavior, a visit was defined as each time the Insentec system detected a steer at the feed bunk. A meal was defined as eating periods by intervals no longer than 7 min. Steers were fed until they reached an average BW of 598 ± 3.1 kg. Average daily gain (ADG) responded quadratically (P < 0.01) with ADG increasing in steers fed 906 g MP/d and plateauing thereafter. Dry-matter intake (DMI; kg) responded quadratically (P = 0.009) with DMI increasing with MP intake up to 1,209 g/d MP and decreasing thereafter. Gain to feed ratio (G:F) increased linearly (P = 0.04) and tended (P = 0.10) to respond quadratically, as G:F increased up to 906 g MP/d and plateaued thereafter. A quadratic response (P = 0.04 and P = 0.02, respectively) was observed for marbling score and 12th rib subcutaneous fat thickness with steers fed 1,209 g MP/d having the greatest marbling score and back fat thickness. A quadratic effect for visits and meals per day was observed (P < 0.01) with steers fed the 1,209 g MP/d treatment having the least visits and meals per day. In addition, time eating per visit responded quadratically (P = 0.05) with time increasing from 626 to 906 g MP/d. There was a linear increase (P ≤ 0.02) in time eating per meal and per day with increasing MP intake. A quadratic effect (P < 0.03) was observed for DMI per visit, meal, and minute with steers fed 1,209 g MP/d having the greatest DMI. In summary, steers fed 626 g MP/d had increased visits and meals per day. However, DMI per visit, meal, and minute were greater in steers fed 1,209 g MP/d. A day × treatment interaction (P < 0.001) was observed for plasma urea N as concentrations increased to a greater extent over time in the higher MP treatments than in the lower MP treatments. These data indicate that MP supply (from deficient to excess) influences growth performance, carcass characteristics, and feeding behavior of finishing steers.

Abstract
This study was conducted to determine the effects of diet with different proportions of ryegrass on breast meat quality of geese. In total, 240 healthy male Yangzhou geese (28-day-old) with similar body weight were divided randomly into 4 diet groups (control group: fed commercial diets; treatment groups I, II, and III: fed ryegrass and commercial diet in the ratios of 1.5:1, 2:1, and 3:1, respectively), the birds being fed from the age of 29 to 70 D. The results shows that the body weights of 70-day-old geese of treatment groups II and III were lower than those in the control group, whereas those of geese of treatment group I were similar to those of the control group. The contents of flavor amino acid and total (essential) amino acids in treatment groups I and II were higher than those in treatment group III (P < 0.05). In addition, grass supplementation reduced saturated fatty acid content and increased that of omega-3 (n-3) polyunsaturated fatty acids, relative to the control group (P < 0.05). Finally, among the 6 minerals analyzed in breast muscle, differences existed in Zn, Se, and Cu contents among the geese fed with different proportions of ryegrass. Zn content of geese from treatment groups II and III was significantly higher than that of those of the control group; Cu content was lower with grass intake and was significantly higher in the control group than in treatment group III; Se content was significantly higher in the control group than in both groups II and III (all at P < 0.05). The results from this study indicated that geese fed with low proportions of ryegrass (1.5:1 or 2:1) showed good growth performance and increased total (essential) amino acid, flavor amino acid, n-3 polyunsaturated fatty acid, and Zn content in meat, which had a certain guiding value for the production of high-quality goose meat under intensive feeding conditions.

Abstract
Geese are extremely well-adapted to utilizing plant-derived roughage in their diet, so the grass must be added to commercial diets under intensive rearing systems. However, it is unclear whether the gut microbiota will change significantly when adding different proportions of ryegrass. In this study, 240 healthy male Yangzhou geese (28 days old) with similar body weights were randomly divided into four groups and fed different proportions grass (CK, whole commercial diets; EG1, ryegrass: commercial diets = 1.5:1; EG2, ryegrass: commercial diets = 2:1; EG3, ryegrass: commercial diets = 3:1) respectively. When the geese grew to 70 days old, their intestines were collected and high-throughput sequencing technology was performed to investigate the microbial diversity in the caecum of geese with different dietary supplements. There was no obvious change in the alpha diversity of gut microbiota of geese with ryegrass intake (P > 0.05) and the composition of dominant bacterium (including Bacteroidetes and Firmicutes) was also similar. However, the ratio between Firmicutes and Bacteroidetes was remarkably reduced with ryegrass intake (P < 0.05), and the relative abundance of 30 operational taxonomic units (OTUs) significantly differed. Additionally, the content of cellulose-degrading microbiota such as Ruminiclostridium and Ruminococcaceae UCG-010 were significantly increased in geese fed with increasing amounts of grass. Finally, the functional profiles of the goose gut microbiota were explored using the PICRUSt tool. Carbohydrate metabolism and amino acid metabolism were dominant metabolic pathways. Lipid metabolism was significantly increased in EG3 compared that in the CK group (P < 0.05). Interestingly, Turicibacter and Parasutterella may have affected abdominal fat deposition as grass intake increased. Taken together, although the diversity of bacterial communities was similar in geese fed with different proportions of ryegrass, cellulose-degrading microbiota (Ruminiclostridium and Ruminococcaceae UCG-010) were abundant and the lipid metabolic pathway was enriched, which may reduce abdominal fat accumulation in high-ryegrass fed geese.

Abstract
Domestic cattle (Bos taurus taurus) are adapted to digest high-roughage diets, but in confinement they are commonly fed low-roughage, high-energy diets. This practice may leave cattle with an unfulfilled need to consume forage. A way to quantify motivation is to require animals to work to access a resource. Using this method, we evaluated cattle motivation to obtain forage when fed high- or low-roughage diets during and 30 d before the study. Individual heifers were fed Sudan grass (Sorghum × drummondii) hay (high roughage, n = 6) or a diet with 12% forage (as fed, low roughage, n = 6) in an open feed trough. In a second trough, 200 g/d of Sudan grass hay were fed behind a push gate, to which additional weight was added daily until heifers no longer pushed. We predicted heifers would push heavier weights, show a shorter latency, and spend more time pushing the gate when fed a low- vs. high-roughage diet. Indeed, heifers fed a low-roughage diet pushed the gate immediately after hay delivery (1.7 min) and much sooner than those fed a high-roughage diet (75.7 min). On the day before they no longer pushed the gate, latency for heifers in the low-roughage treatment remained only 3.2 min after hay delivery. The suddenness with which they ceased pushing the next day suggests they were unable to move heavier weights to express their motivation. This may explain why maximum weight pushed and time spent pushing the gate did not differ between treatments. The gate pushing by heifers with unrestricted hay access is the first demonstration by cattle of contrafreeloading: performing work to obtain a resource that is simultaneously available for free. In conclusion, consuming forage is important to cattle and is affected by both their primary diet and an internal motivation to work to obtain feed.

Forty-two cross-bred steers (BW=357±5.8 kg) fed whole corn grain-based finishing diets were used in a completely randomized block (60, 120, or 180 d on feed) design (2×3 factorial arrangement of treatments plus control) to determine the effect of inclusion level [0 (control), 16.7, 33.3, and 50% of diet DM) and form (dry (DDGS) or modified wet (MWDGS)] of distillers’ grains plus solubles (DGS) on hepatic and renal glutathione peroxidase (GPx) and hepatic urea cycle enzyme activities. Kidney weight (g kg−1of BW) increased linearly (P=0.004) with increasing inclusion levels of DGS. There were no effects (P≥0.11) of dietary treatment on hepatic and renal GPx activity (U g−1, U mg−1of protein, and kU liver−1). Hepatic carbamoyl phosphate synthetase activity (kU liver−1and U kg−1of BW) tended to linearly increase (P=0.09 and P=0.10, respectively) with increasing inclusion level of DGS. Hepatic ornithine transcarbamoylase and argininosuccinate synthetase activity (kU liver−1and U kg−1of BW) increased linearly (P≤0.05) with increasing inclusion levels of DGS. These data indicate that steers adapt to feeding up to 50% DGS by increasing kidney mass and activity of urea cycle enzymes in liver to allow for clearance of excess nitrogen. Also, hepatic and renal GPx activity, as an indicator of Se status, is not affected when typical finishing diets are fed.

Abstract
The effects of cassava bioethanol by-product (CEP) and crude palm oil (CPO) on feed intake, nutrient digestibility, and growth performance of yearling heifers were investigated in a 150-day feeding trial. Eighteen, crossbred heifers (Brahman x Thai native) were randomly allotted according to 2 × 3 factorial arrangement. Low or high levels of CEP (15 or 30% of concentrate, LCEP, or HCEP) were basal treatments and 0, 2, and 4% CPO were daily top-dressed. Concentrate was supplemented at 1.75% of body weight (BW) and rice straw offered ad libitum. CEP level had no significance on feed intake. CPO increased roughage intake, concentrate intake, and total feed intake when expressed as %BW/d (P < 0.01) and as metabolic BW (kg(0.75)/d, P < 0.05). Intakes of dry matter (DM), organic matter (OM), and crude protein (CP) were similar (P > 0.05). Intake of fat increased with higher levels of CPO (P < 0.001). The DM, OM, CP, and EE digestibility of cattle-fed HCEP was lower than LCEP, but adding 4% CPO increased digestibility. Growth performance was similar for all diets (P > 0.05). We concluded that CEP can be used up to 30% in the diet, with or without additional fat inclusion.

Abstract
To determine the effect of increasing supplementation of corn dried distillers grains plus solubles (DDGS) on growth performance and feeding behavior, 70 steer calves (287 ± 10 kg of BW) were blocked by BW to 3 pens equipped with Insentec feeders. For 84 d, calves were fed medium-quality grass/legume hay offered for ad libitum intake and provided 1 of 3 dietary supplemental treatments (n = 7 or 8 steers per treatment within each pen; n = 23 or 24 per treatment): 1) nothing, 2) DDGS at 0.5% of BW daily (DM basis), and 3) DDGS at 1% of BW daily (DM basis). Hay intake (kg/d and % of BW daily) decreased linearly (P < 0.001) as DDGS supplementation increased. Total DMI (kg/d and % of BW) increased linearly (P < 0.001) with DDGS supplementation. Average daily gain and gain efficiency (G:F) responded quadratically (P ≤ 0.006) as G:F increased to a lesser extent when DDGS supplementation increased from 0.5 to 1% than from 0 to 0.5%. Meals (number per day) and time eating per meal for hay and total diet decreased linearly (P ≤ 0.006) with increasing DDGS supplementation. Time eating per day for hay responded quadratically (P < 0.001) and decreased to a greater extent when increasing from 0 to 0.5% DDGS supplementation than from 0.5 to 1% DDGS. Feed intake per minute (eating rate) for hay and total diet increased linearly (P ≤ 0.05) with increasing DDGS supplementation. On d 84, LM area, back fat thickness, and rump fat thickness increased linearly (P ≤ 0.006) with increasing DDGS supplementation. There were significant day × treatment interactions (P < 0.001) for plasma glucose and urea-N concentrations. Glucose did not change over the feeding period in control steers but increased in both supplemented groups. Urea-N decreased for control steers over the feeding period whereas urea-N increased in supplemented steers. In conclusion, supplementation of DDGS in amounts of 0.5 or 1% of BW daily can be used to reduce hay intake and improve ADG and G:F in growing steers fed medium-quality hay. Additionally, DDGS supplementation alters feeding behavior.

Abstract
There is a global interest to quantify and mitigate greenhouse gas (GHG) (e.g. methane-CH4, nitrous oxide-N2O and carbon dioxide-CO2) emissions in animal feeding operations. The goal of this study was to quantify GHG emissions from the feedlot pen surface under North Dakota climatic conditions. In this study gaseous flux from the pen surfaces was generated using a custom-made wind tunnel at different times of the year (summer, fall, winter and spring). Gaseous fluxes (air samples) were drawn in the Tedlar bags using a vacuum chamber and gas concentrations were measured using a gas chromatograph within 24 h of sampling. The CH4 concentrations and flux rates (FRs) or flux among the months were not significantly different. Overall CH4, CO2 and N2O concentrations over a 7-month period were 2.66, 452 and 0.67 ppm, respectively. Estimated overall CH4, CO and N2O FRs were 1.32, 602 and 0.90 g m(-2) d(-1), respectively. Estimated emission rates using the wind tunnel were 38 g hd(-1) d(-1), 17 kg hd(-1) d(-1) and 26 g hd(-1) d(-1) for CH4, CO2 and N2O, respectively. The emission factors for GHG estimated in the research for North Dakota climate were the first of its kind, and these emission estimates can be used as a basis for planning and implementing management practices to minimize GHG emissions.
