Transfer behavior of pesticides from honeysuckle into tea infusions: Establishment of an empirical model for transfer rate prediction

Affected by some external conditions and internal factors, pesticides can be transferred from tea into its infusion, causing subsequent damage to humans as tea infusion is generally consumed. This study aimed to explore the inherent regularity in transfer behavior of 23 pesticides belonging to different classes from honeysuckle to its tea infusion, and to understand the effects of external brewing conditions and internal physicochemical parameters of the pesticides on their transfer rates. Results indicated that the transfer rates (Rt) of pesticides from honeysuckle into tea solutions increased with prolonged brewing time, or adding a cover on a container, but decreased with increasing the times of infusion. In addition, the transfer potential of these pesticides greatly depended on their physicochemical properties but not their type. The pesticides with high water solubility and low water partition coefficient (LogKow, e.g., omethoate) were more easily transferred into tea infusions than those with low water solubility and high LogKow (e.g., chlorpyrifos). Compared the tea brewing in a covered container, the empirical models obtained in an uncovered cup predicted the transfer behavior and drinking risk of pesticides potentially introduced into honeysuckle and its tea infusion. The linear equation was as follow: Rt = 10.756 LogWS + 7.517, R = 0.8771. In practice, honeysuckle should be brewed in an uncovered cup within a short brewing time, and the first tea infusion should be abandoned to reduce the transfer percentage of pesticides. This study provided beneficial references for pesticide application in honeysuckle plantation to establish realistic maximum residue limits of multi-pesticides in honeysuckle tea and related products.

Effect of brewing conditions on phytochemicals and sensory profiles of black tea infusions: A primary study on the effects of geraniol and β-ionone on taste perception of black tea infusions

As a worldwide popular drink, black tea has always been one of the main focuses of tea studies. However, few studies have addressed the flavor profiles and related components, and most researches were based on a single factor. This study investigated the effects of multiple brewing conditions (temperature, time, water/tea ratio, and particle size) on the phytochemicals (non-volatile and volatile compounds) and sensory profiles of black tea infusions through response surface methodology. The regression models describing the brewing of detected indexes were significant (p ≤ 0.01) and reliable (R² ≥ 0.902). The particle size led to the greatest variation of non-volatile compounds and presented negative correlations, while the water/tea ratio affected the composition of volatile compounds the most. Meanwhile, through the addition of the selected aroma compounds (geraniol and β-ionone), an enhancement of black tea infusion sweetness was observed, proved the existence of odor-taste interaction in black tea infusions.

Effects of brewing conditions on the phytochemical composition, sensory qualities and antioxidant activity of green tea infusion: A study using response surface methodology

Green tea is a highly consumed beverage, and the phytochemical composition, sensory qualities, and antioxidant activity of tea infusion are significantly affected by brewing conditions. However, the simultaneous effects of brewing conditions on the infusion are unknown. This study aimed to model the effects of brewing conditions (temperature, time, water/tea ratio and particle size) on the phytochemical composition, sensory profiles and antioxidant activity of green tea infusion using response surface methodology. The regression models describing the brewing of detected indexes were significant (p ≤ 0.01) and reliable (R² ≥ 0.854). Particle size had the greatest negative effects on the phytochemical composition and antioxidant activities of tea infusion. Optimization of brewing conditions performed for five types of needs and preferences for consuming were verified to be credible. In particular, optimal conditions of overall acceptance were 82 °C (temperature), 5.7 min (time), 70 mL/g (water/tea ratio), and 1100 µm (particle size).

Effect of brewing time and temperature on antioxidant capacity and phenols of white tea: Relationship with sensory properties

White tea is highly consumed due to its sensory properties and health benefits, although most scientific reports don't include the analysis of both properties. Therefore, the objective of the present study was to unravel the best brewing conditions for optimal extraction of the bioactive compounds and antioxidant capacity, while realising the best sensory properties. Infusions of eighty commercial teas (sold in bags or leaves) were obtained at different time-temperature ratios, studying bioactive compounds (caffeine and individual catechins), antioxidant capacity and sensory analysis. Brewing at 98 °C for 7 min was the best condition to obtain a high content of antioxidant polyphenols and pleasant sensory properties. Those teas sold in bags give rise to tea brews with almost double antioxidant capacity. In conclusion, it is very important to link sensory and chemical data to obtain optimal sensorial quality and the highest healthy properties in white tea infusions.

Effects of brewing conditions on the antioxidant capacity of twenty-four commercial green tea varieties

A novel paper-based Nanoceria Reducing Antioxidant Capacity (NanoCerac) assay for antioxidant detection (Sharpe, Frasco, Andreescu, & Andreescu, 2012), has been adapted for the first time as a high-throughput method, in order to measure the effect of brewing conditions and re-infusion on the antioxidant capacity of twenty-four commercial green teas. The oxygen radical absorbance capacity (ORAC) assay, frequently applied to complex foods and beverages, was used as a comparator measure of antioxidant capacity. A novel measure of sustained antioxidant capacity, the total inherent antioxidant capacity (TI-NanoCerac and TI-ORAC) was measured by infusing each tea six times. Effects of brewing conditions (temperature, brew time, etc.) were assessed using one popular tea as a standard. Both NanoCerac and ORAC assays correlated moderately (R(2) 0.80 ± 0.19). The average first-brew NanoCerac, TI-NanoCerac, first-brew ORAC and TI-ORAC were: 0.73 ± 0.1 GAE/g tea; 2.4 ± 0.70 mmolGAE/g tea; 1.0 ± 0.3 mmolTE/g tea and 2.1 ± 0.71 mmolTE/g tea respectively. Brewing conditions including water temperature and infusion time significantly affected antioxidant capacity. The high-throughput adaptation of the original NanoCerac assay tested here offered advantages over ORAC, including portability and rapid analysis.
