Abstract
Collagen peptides play an important role in the increasing use of collagen peptides as dietary supplements in food and beverages and as bioactive ingredients in cosmetics, healthcare, and pharmaceuticals. Collagenase enzymatically cleaves gelatin to produce collagen polypeptides. However, the enzymatic activity of collagenase is very low (25900 U) and does not allow for adequate enzymatic digestion. Therefore, proteases are used to assist in enzymatic digestion. Porcine gelatin, bovine gelatin, and fish protein gum were enzymatically digested, and the content of collagen peptides in the enzymatically digested lyophilized powder was identified by high-performance liquid chromatography and mass spectrometry, and then the content of the desired collagen peptides was increased by isolation and purification, and the result of the determination was that the content of collagen peptides was the highest after enzymatic digestion and isolation and purification with the use of porcine gelatin as the raw material, and the content of the collagen peptides was about 45.47%. β-nicotinamide mononucleotide (NMN) was mixed with the prepared samples to determine its antioxidant properties and ability to promote the growth of human dermal fibroblasts. The results showed that the antioxidant capacity was enhanced with the increase of collagen polypeptide content, and NMN could promote the scavenging of DPPH• and •OH free radicals by collagen polypeptides. The ability to promote the growth of human dermal fibroblasts was enhanced with the increase of collagen polypeptide content. This paper aimed to prepare a high content of collagen polypeptides from three raw materials, porcine gelatin, bovine gelatin, and fish protein gum, and further to determine the biological activities.

Abstract
Marigold (Tagetes spp.) flower petals are the most vital sources of carotenoids, especially lutein esters, for the production of natural lutein to use for food, feed, and pharmaceutical industries. Several marigold cultivars are cultivated globally; however, their lutein ester composition and contents have not been widely investigated. Considering this, this study aimed to identify and quantify prominent carotenoid esters from the flower petals of ten marigold cultivars by liquid chromatography (LC)-diode-array detection (DAD)-mass spectrometry (MS). In addition, tocopherols, phytosterols, and fatty acids were analyzed by gas chromatography (GC)-flame ionization detection (FID) and GC-MS. Furthermore, the 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid (ABTS•+) and 2,2-diphenyl-1-picrylhydrazyl (DPPH•) radical scavenging abilities of lipophilic extracts were determined. The total carotenoid contents varied significantly (p < 0. 05, Tukey HSD) among cultivars, ranging from 25.62 (cv. Alaska)-2723.11 µg/g fresh weight (cv. Superboy Orange). Among the five major lutein-diesters, (all-E)-lutein-3-O-myristate-3'-O-palmitate and lutein dipalmitate were predominant. Among the studied cultivars, α-tocopherol was recorded, ranging from 167.91 (cv. Superboy Yellow) to 338.50 µg/g FW (cv. Taishan Orange). Among phytosterols, β-sitosterol was the most prevalent phytosterol, ranging between 127.08 (cv. Superboy Yellow) and 191.99 µg/g FW (cv. Taishan Yellow). Palmitic acid (C16:0; 33.36-47.43%) was the most dominant among the fatty acids. In this study, the highest contents of lutein were recorded from cv. Superboy Orange; however, due to the substantially higher flower petal yield, the cv. Durango Red can produce the highest lutein yield of 94.45 kg/ha. These observations suggest that cv. Durango Red and cv. Superboy Orange are the ideal candidates for lutein fortification in foods and also for commercial lutein extraction.

Abstract
Plant primary and secondary metabolites are a significant source for many applications, including extractions of functional components, green synthesis development, and producing higher-added value products. However, in the variety of botanicals, Aralia cordata Thunb. plant is getting attention for its similarity to ginseng. This study comprehensively examines the biochemical and phytochemical profiles of different A. cordata morphological parts: root, stem, leaf, inflorescence, berry, and seed. Additionally, the establishment of total phenolic content and quantitative analysis of powerful antioxidants such as chlorophyll, carotenoids (zeaxanthin, lutein, and β-carotene), proanthocyanidins, and anthocyanins content were evaluated. The results indicated that A. cordata stem and berries are an excellent source of anthocyanins in the range from 18.27 to 78.54 mg/100 g DW. Meanwhile, the antioxidant activity was evaluated using three different methods based on the capacity to scavenge: DPPH• scavenging capacity, ABTS•+ radical cation assay, and ferric reducing antioxidant power (FRAP) and ranged from 27 to 168 µmol TE/g DW, 8 to 117 µmol TE/g DW, and 18 to 157 µmol TE/g DW, respectively. This study proposes a novel competitive plant for many health-promoting applications in the nutraceutical, pharmaceutical, material, and food industries.

Abstract
The present study was aimed to exploit the haloarchaeon Haloferax alexandrinus GUSF-1 (KF796625) for the presence of biomolecules possessing antioxidant activity. The culture produced a bright orange pigment when grown aerobically in nutrient rich medium with 25% crude solar salt. Biomolecules from cell-free supernatant and from the cells of the culture were individually extracted through the assistance of solvents of different polarities, such as ethanol, methanol and hexane, and monitored for scavenging of stable free radicals. Each of the extracts showed varying capacities to scavenge DPPH•(20, 31, and 80% DPPH• RSA; 160.19, 248.29 and 640.76 AAE µg g-1 of cells) at 1 mg mL-1. The extracellular ethanolic extract was polysaccharide in nature, equivalent to 47 µg mL-1 of glucose when assayed with the phenol-sulfuric acid method. The Fourier Transform-Infra Red spectroscopy confirmed the characteristic glycosidic peaks between 2000 and 1000 cm-1. Similarly, the glycerol diether moiety separated from hydroxylated methanolysates through thin-layer chromatography scavenged free radicals (10.47% DPPH• RSA; 80.03 AAE µg g-1 of cells). Further, the hexanolic extract exhibited spectral characteristics of red carotenoids and resolved into distinct compounds when separated by thin-layer chromatography using different developing systems. All separated compounds were positive for the DPPH• reaction (13-30% DPPH• RSA; 100-240 AAE µg g-1). Chemical profiling of the hexanolic extract using the high resolution-liquid chromatography-mass spectroscopy-diode array detector analysis confirmed the presence of different carbon length isoprenoids; C30: tetrahydrosqualene, C40: 3-hydroxyechinenone, astaxanthin, canthaxanthin, lycopene, phytofluene, phytoene and C50: bisanhydrobacterioruberin, monoanhydrobacterioruberin, bacterioruberin and haloxanthin. Thus, we conclude that the synergistic actions of all these components contribute to the antioxidant activity of the culture and that the antioxidant activity of the exopolysaccharide, glycerol dither moiety, tetrahydrosqualene, haloxanthin and 3-hydroxyechinenone is recorded as the first report for Haloferax alexandrinus GUSF-1 (KF796625). Abstract
The aim of this work was to develop a programmable flow system for rapid assessment of total antioxidant capacity (TAC). Novel features of the prototype include a single pressure-driven source, versatile manipulation of fluid flows, ability to adapt to different TAC assays, and compatibility with microfluidic design. Antioxidant activity was determined by electrochemical measurement of residual 2,2-diphenyl-2-picrylhydrayl hydrate (DPPH•) free radicals in the solution. The overall performance of the device was validated by the spectrophotometric method. The results indicated that dosing of reagents and samples could be controlled by pressure (R2 = 0.992) and time (R2 = 0.999) with high accuracy, and the mixing uniformity of the device was equivalent to that of the batch mixing (R2 = 0.994). TAC assays of a standard antioxidant, ascorbic acid, as well as selected samples such as orange and pomegranate juices, white wine, and green tea by the device were comparable to traditional measurement techniques. Due to the short incubation time, the approach may be more suitable for fast, rather than slow reacting antioxidant compounds. The developed system could be used for rapid TAC screening of food and biological samples.

Abstract
The antioxidant and antimicrobial components of honey vary based on sourced of nectar. Medicinal plants with the therapeutic value have potential to produce honey with greater bioactivity. The aim of the present study was to characterize the physico-chemical and antioxidant capacities of Agastache honey produced from Agastache rugosa and compare them with other popular commercial honeys sold in Australia. The total phenolics, total flavonoids, moisture content, colour, pH, protein content and antioxidant capacity were evaluated for Agastache, Manuka, Jelly bush, Tea tree, Super manuka and Jarrah honeys. The results reveal that the moisture content ranged from 17-21%, pH ranged from 3.8-4.3 and estimated protein content ranged from 900-2200 µg/g. The DPPH•, ABTS•+, ORAC and FRAP methods were used to measure the antioxidant capacity of the honey samples. The DPPH• % inhibition, ABTS•+, ORAC and FRAP values for Agastache honey were 9.85 (±1.98 µmol TE/g), 26.88 (±0.32 µmol TE/g), 19.78 (±1.1 µmol TE/g) and 3.61 (±0.02 µmol TE/g) whereas the highest antioxidant capacity values obtained were 18.69 (±0.9 µmol TE/g), 30.72 (±0.27 µmol TE/g), 26.95 (±0.9 µmol TE/g) and 3.68 (±0.04 µmol TE/g), respectively. There was a positive correlation between colour, total phenolic content and DPPH• scavenging activity for most of the honeys except Tea tree honey. However, there was no clear correlation with ABTS•+, ORAC and FRAP values. The measured antioxidant capacity of samples varied with the assays used. The DPPH• assay clearly indicated that the phenolic compounds contribute to the scavenging activity of the honeys. Nevertheless, all assays confirm that Agastache honey has significant antioxidant capacity. Therefore, Agastache honey can be important to human nutrition and health.

Abstract
A quantitative structure-activity relationship (QSAR) study of the 2,2-diphenyl-l-picrylhydrazyl (DPPH•) radical scavenging ability of 1373 chemical compounds, using DRAGON molecular descriptors (MD) and the neural network technique, a technique based on the multilayer multilayer perceptron (MLP), was developed. The built model demonstrated a satisfactory performance for the training (R2=0.713) and test set (Qext2=0.654), respectively. To gain greater insight on the relevance of the MD contained in the MLP model, sensitivity and principal component analyses were performed. Moreover, structural and mechanistic interpretation was carried out to comprehend the relationship of the variables in the model with the modeled property. The constructed MLP model was employed to predict the radical scavenging ability for a group of coumarin-type compounds. Finally, in order to validate the model’s predictions, an in vitro assay for one of the compounds (4-hydroxycoumarin) was performed, showing a satisfactory proximity between the experimental and predicted pIC50 values.

Abstract
Microalgae are well known for their biotechnological potential, namely with regard to bioactive lipidic components-especially carotenoids and polyunsaturated fatty acids (PUFA), well-known for therapeutic applications based on their antioxidant capacity. The aim of this work was to evaluate the influence of four distinct food-grade solvents upon extractability of specific lipidic components, and on the antioxidant capacity exhibited against both synthetic (2,2-diphenyl-1-picrylhydrazyl (DPPH(•)) and 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid (ABTS(+•))) and biological reactive species (O₂(•)⁻ and (•)NO⁻). A eukaryotic microalga (Scenedesmus obliquus (M2-1)) and a prokaryotic one (Gloeothece sp.) were used as case studies. Concerning total antioxidant capacity, the hexane:isopropanol (3:2) and acetone extracts of Sc. obliquus (M2-1) were the most effective against DPPH(•) and ABTS(+•), respectively. Gloeothece sp. ethanol extracts were the most interesting scavengers of O₂(•)⁻, probably due the high content of linolenic acid. On the other hand, acetone and hexane:isopropanol (3:2) extracts were the most interesting ones in (•)NO⁻ assay. Acetone extract exhibited the best results for the ABTS assay, likely associated to its content of carotenoids, in both microalgae. Otherwise, ethanol stood out in PUFA extraction. Therefore, profiles of lipidic components extracted are critical for evaluating the antioxidant performance-which appears to hinge, in particular, on the balance between carotenoids and PUFAs.

Abstract
Polyphenolic compounds affect the color, odor and taste of numerous food products of plant origin. In addition to the visual and gustatory properties, they serve as radical scavengers and have antioxidant effects. Polyphenols, especially resveratrol in red wine, have gained increasing scientific and public interest due to their presumptive beneficial impact on human health. Enzymatic oxidation of phenolic compounds takes place under the influence of polyphenol oxidases (PPO), including tyrosinase and laccase. Several studies have demonstrated the radical scavenger effect of plants, food products and individual polyphenols in vitro, but, apart from resveratrol, such impact has not been proved in physiological test systems. Furthermore, only a few data exist on the antioxidant capacities of the enzymatic oxidation products of phenolic compounds generated by PPO. We report here first results about the antioxidant effects of phenolic substances, before and after oxidation by fungal model tyrosinase and laccase. In general, the common chemical 2,2-diphenyl-1-picrylhydrazyl assay and the biological tests using two different types of cell cultures (monocytes and endothelial cells) delivered similar results. The phenols tested showed significant differences with respect to their antioxidant activity in all test systems. Their antioxidant capacities after enzymatic conversion decreased or increased depending on the individual PPO used.

Abstract
Differently colored lettuce (Lactuca sativa L.) cultivars (green, green/red, and red) were studied to correlate their phenolic composition with their antioxidant kinetic behavior. Electron paramagnetic resonance (EPR) was employed to monitor decay kinetics of 1,1-diphenyl-2-picrylhydrazyl (DPPH(•)), which allowed the identification of three differently paced antioxidants. The results showed that as long as lettuce had higher red pigmentation, the hydrophilic antioxidant capacity increased together with the contents in free and conjugated phenolic acids, free and conjugated flavonoids, and anthocyanins. EPR allowed the identification of slow-rate antioxidants in green and green/red cultivars, intermediate-rate antioxidants in green, green/red, and red cultivars, and fast-rate antioxidants in green/red and red cultivars. At present, the different kinetic behaviors cannot be attributed to a specific antioxidant, but it is suggested that the flavonoid quercetin accounted for the majority of the intermediate-rate antioxidants, whereas the anthocyanins accounted for the majority of the fast-rate antioxidants.

Abstract
This study aimed to analyze the proximate composition of seeds from some non-conventional Brazilian fruits, as well as to evaluate the antioxidant activity through DPPH(•) free radical and to quantify the total phenolic compounds. To obtain the extracts, dried and crushed seeds were extracted with ethanol for 30 min, in a ratio of 1:3 (seeds:ethyl alcohol), under continuous agitation, at room temperature. Then, the mixtures were filtered and the supernatants were subjected to rotary evaporator under pressure reduced to 40 °C. The results report that the seeds of non-conventional fruits are remarkable sources of lipids, and the extraction of oil from these seeds could be an alternative for the commercial utilization of waste. They also presented significant percentages of protein and carbohydrates. Ethanol extracts of seeds from non-conventional Brazilian fruits showed relevant antioxidant activity and high amount of phenolic compounds. Therefore Brazilian non-conventional fruits can be used as functional food products or feed.

Abstract
Epidemiological studies on the effects of green tea consumption (Camellia sinensis) have demonstrated a reduction for the risk of age-related diseases. The investigation of the in vivo and in vitro antioxidant properties of an aqueous extract of green tea (GTE) was the aim of the current study. 2,2-Diphenyl-1-picrylhydrazyl (DPPH(•)) and superoxide anion radical (O₂(•-)) assays were used to estimate the GTE antioxidant activity. To investigate the protective effects of GTE against oxidative stress, wild-type N2 and transgenic strains (TJ374, hsp-16.2/GFP) of the model organism, Caenorhabditis elegans (C. elegans), were chosen. In the current study, the following catechins were identified by LC/ESI-MS: catechin, epicatechin, epicatechin gallate, gallocatechin, epigallocatechin and epigallocatechin gallate. GTE exhibited a free radical scavenging activity of DPPH(•) and O₂(•-) with IC50 8.37 and 91.34 µg/mL, respectively. In the C. elegans strain (TJ374, hsp-16.2/GFP), the expression of hsp-16.2/GFP was induced by a nonlethal dose of juglone, and the fluorescence density of hsp-16.2/GFP was measured. The hsp-16.2/GFP was reduced by 68.43% in the worms pretreated with 100 µg/mL GTE. N2 worms pretreated with 100 µg/mL GTE exhibited an increased survival rate of 48.31% after a lethal dose application of juglone. The results suggest that some green tea constituents are absorbed by the worms and play a substantial role to enhance oxidative stress resistance in C. elegans.

Abstract
An activity-guided isolation and purification process was used to identify the l,l-diphenyl-2-picrylhydrazyl (DPPH) free radical-scavenging components of the food plant (Terminalia arjuna) of Antheraea mylitta. Dry leaves of T. arjuna were extracted with different solvents and tested for their antioxidant activity against DPPH(•). The acetone-water (8:2) extract expressed strong DPPH radical-scavenging activity, and was subjected to column chromatography over silica gel. Gallic acid, apigenin, luteolin, quercetin, epicatechin, ellagic acid and 1-O-β-galloyl glucose were isolated as active components and characterised by using different spectroscopic techniques.
